Local gymnast wins Regional Titles

By Irene Palatics Olympica Gymnastics sent their top qualifiers to Reno Nevada April 13-15th to compete against the top gymnasts from California, Nevada, Utah, and Arizona. Ladera Ranch’ Level 8 gymnast, Sarah Quan became the Region 1 Champion on bars with a score of 9.700, her 6th gold of the season on bars. She was also crowned the Regional Champion on beam with a gold medal score of 9.650. Quan took silver on floor (9.500) and finished second in the All Around competition with a 38.000. Teammate Allison Karner (Laguna Niguel) won silver medals on vault (9.500) and the All Around (37.925) along with bronze on bars (9.600). San Clemente’s Abby Howard secured bronze on vault with a score of 9.475. Dana Point’s Natalie Bray won a coveted spot on the Southern California combined Level 8 team thanks to her previous State Championship wins on floor and the All Around. The top 12 gymnasts in the State competed together, and Bray contributed to the team’s gold medal win. Level 9 gymnast, Anna Vultaggio (Coto de Caza) scored 35.350, taking 7th place in the All Around to secure her spot at the upcoming Western National Championships in Salt Lake City, Utah where she will face off against the best gymnasts from 25 States. These wins add to Olympica’s Level 7 – 10 teams’ record breaking year of 30 bronze, 47 silver, Sarah Quan is the Region 1 Level 8 Bars and Anna Vultaggio advances to the Western and 40 gold medal wins in the 7 meet season. 3 expert tips for starting a s u c c e s s f u l v e g e t a bl e g a r d e n Warm weather begs green thumbs across the country to break out their gardening gloves and till the soil for the season’s plantings. Whether this is your first year tending a home garden or it’s something you’ve been doing for decades, gardening offers many rewards, including time spent outdoors, the ability to feel closer to Mother Nature, and of course, the fresh fare plucked just steps from your kitchen. Anyone can have a successful home garden no matter where they live by following a few steps from professional gardeners. Consider these three important tips for starting your garden right so you can enjoy fresh produce faster, thanks to the experts at Outdoor Essentials makers of garden beds, compost bins and other gardening necessities. Step 1: Research appropriate early plantings Springtime is ideal garden time thanks to milder weather, and a good place to start is by researching proper plants for your region’s early season. If you have questions, consult your local nursery or call your local extension office for specialized advice. In general, good early plantings include brassicas, a family of plants that includes kale, broccoli, cauliflower, Brussels sprouts and cabbages. Additional cool-season crops to consider include radishes, beets, peas, potatoes and carrots. These plants will thrive early in the season and produce yields quickly. In addition to quick-producing plants, the early season is the best time to plant other varieties that take a long time to mature. Onions, for example, require a lengthy growing season and should be planted early so that in late summer, gardeners can enjoy the maximum yield possible. Want produce quicker? Consider

purchasing starter plants, also called plant starts, rather than relying on packets of seeds. These are the small plants that have already germinated and have a basic root system. These are easy to transfer to your own garden and, with proper tending, will grow quickly and produce fruit faster. Step 2: Prepare garden spaces for accelerated growth After months of not being used, your garden’s soil is likely compact and will require some tilling to loosen the dirt and encourage plant growth. You can do this with a garden rake; for large gardens, some people prefer to rent a power tiller. People who live in smaller homes, a townhouse or condo might prefer to use raised garden beds. Raised garden beds can be used virtually anywhere outdoors, including on a deck or patio, and they can be moved, too, if necessary. As fruit and vegetables mature, it’s time to enjoy the season’s first harvest. The healthy fresh fare tastes even better knowing you grew it yourself, plus it cuts down on grocery bills. If you find you have too much of one type of produce at once, share with neighbors, coworkers and friends - everyone loves fresh garden delights. Keep in mind that as plants grow, you need to make sure they don’t overcrowd each other. This can limit growth and yield production. If your garden starts to look overgrown, you may need to pluck out a few plants to open up space and encourage proper growth and healthy root systems. Spring to it! The mild, moist weather and longer days of the early gardening season make the conditions ideal for plant growth. 3 Ways Pups Can Improve Seniors’ Health

Furry friends can play a significant role in pet owners’ lives. The old saying goes, “dogs are man’s best friend,” and research shows they may be more than that. In fact, they just might be the key to keeping seniors active. According to a study conducted by the University of Lincoln and Glasgow Caledonian University in collaboration with Mars Petcare Waltham Centre for Pet Nutrition, dog owners 65 and older were found to walk over 20 minutes more a day than seniors who did not have canine companions at home. The study documented three key conclusions: Dog owners walked further and for longer than non-dog owners. Dog owners were more likely to reach recommended activity levels. Dog owners had fewer periods of sitting down. “Older adult dog owners are more active than those without dogs and are also more likely to meet government recommendations for daily physical activity,” said Nancy Gee, human animal interaction researcher at Waltham. “We are learning more every day about the important roles pets play in our lives, so it’s no surprise that pets are now in more than 84 million households. It’s great to recognize how pets can help improve seniors’ lives.” Walking with your pup can help both the pet and owner get in shape. Pets can keep older adults active and even help them meet the recommended public health guidelines for weekly physical activity. According to the study, on average, dog owners more often participated in 30 minutes a day of

moderate physical activity and achieved 2,760 additional steps. However, the benefits of pet ownership go beyond physical activity. It’s no secret that pets provide companionship. From reducing rates of stress, depression and feelings of social isolation, pets can play a significant role in improving people’s lives, which ultimately can make pet owners happier and healthier. Not only do pets serve as companions in their own right, studies have shown that dog owners can get to know their neighbors through their pets. Pets can even help facilitate the initial meeting and

conversation, which may come as no surprise for many dog owners who have chatted with others while walking their dogs. For older adults who live alone or in a group facility, having a pet is also a great way to build relationships with others. As senior citizens are celebrated on upcoming days that acknowledge older adults, it turns out living with a pet can be a healthy choice for seniors in more ways than one. Coto Equestrian Preserves Newest Little Gems Miniature Horses Captivate Coto de Caza Community By: Karean Levi Chapman Among 40 mini horses brought into the Auction Yard in Texas, November 2017, one stood out amongst them all and captured the heart of Tobi Coate. Tobi is a resident of Coto de Caza and found her little gem on Facebook after a friend tagged her in a post on the Auction Yard page. Tobi knew she had to rescue and save at least one of these precious, mini horses, but which one would she choose? Looking through all the photos and underneath the dirty, ungroomed, scruffy coats, Tobi found one that she felt was in need of her love the most. A cute little palomino colored mini she’d name, “Pearl.” Pearl’s journey to the Coto Equestrian Preserve from Texas was not an easy one. It took about three weeks to have Pearl hauled over and when she arrived her coat was in desperate need of some clipping and grooming. Tobi put Pearl on a diet and gave her a few days to settle in before tackling the job of getting her washed, clipped and groomed. Tobi soon thought to herself that perhaps Pearl was not overweight but pregnant. She called her Veterinarian to come check Pearl and, without a doubt, Pearl was pregnant. They didn’t know how far along the baby was so it became a guessing game to when she’d foal. March 19th, 2018 at 11:25 AM, Pearl gave birth to a beautiful tiny foal that resembled her momma remarkably. A tiny, palomino filly of a mini whom has stolen the hearts of everyone at the barn. Due to this joyful occurrence, the Coto Equestrian Preserve gained two precious gems: Pearl and her baby, Diamond. In speaking with Tobi, she remarked, “Since Diamond’s birth, she has been the talk of the town and has had so many visitors.” Karean and Shayna Chapman received a special treat when visiting Pearl and Diamond and said, “It was a bucket list item to get to cuddle with Diamond and her mama Pearl. Diamond gave us so many kisses. Both mama and baby were gentle and incredibly friendly. Tobi’s story warmed our hearts and

made us wish we could adopt sweet little mini horses one day.” All the children at the barn are over the moon about the pair. Even Fabio, ESI Training Stables’ new mascot Rooster, seems to have taken a liking to the mini’s as well. Pearl’s arrival has shown and taught the children how a once neglected rescue mini horse can blossom into a beautiful, healthy, shiny and vibrant mini horse. Some had the incredible and magical experience of witnessing the birth of Pearl’s foal and how a mare takes Pearl and Diamond enjoying the grass and sunsine. care of her baby. Soon after Diamond was born, she began showing off her natural instincts of standing on her own four hooves and nuzzled her momma Pearl for milk. It only took a short time before Diamond was dashing around her stall, throwing tiny bucks and jumping about in excitement of her new surroundings outside her momma’s belly. Diamond will stay with her momma for a few months until she is old enough to separate from Pearl. She will then begin eating grass and grain instead of milk, as well as Coto Equestrian Preserve kids welcoming baby Diamond. become more independent. Everyone at the barn is enjoying Pearl and Diamonds gentle nature and friendly disposition. This is a very common trait in miniature horses and why they make such wonderful therapy animals. Mini horses seem to enjoy the company of humans. Cuddling and petting Pearl and Diamond is irresistible. Diamond is as curious about her visitors as her visitors are about her. Their small size make them much easier to handle then the full sized horses at the barn. It’s no secret that Pearl and Diamond are part of the Coto Equestrian Preserve’s family. Pearl and Diamond continue to charm everyone at the barn providing both the children and adult riders, as well as visitors a unique, special, fun and satisfying experience that stays in their hearts even when it’s time to leave. OCSA Celebrates HULLABALOO BY THE BAYOU; Raises $2 Million Adrienne Brandes and RJ Brandes Photos by: Yunuen Bonaparte More than 600 guests stood in roaring applause to celebrate a thrilling evening of captivating performances and extraordinary generosity that led Orange County School of the Arts (OCSA) to raise more than $2 million in support of its tuition-free arts and academic programs. For OCSA’s Gala 2018 “Big Time in the Big Easy,” Hotel Irvine was transformed into the enchanting city of New Orleans as ladies and gentlemen were entertained by jazz artistry, fine French Creole cuisine, indulgent live and silent auctions, and a three-act production staged by more than 200 of OCSA’s talented students. Co-chaired by Lisa Argyros and John Massa and Devon and Kevin Martin, the black-tie affair far surpassed its fundraising goal, raising a net of $1.6 million. Unique to OCSA’s Gala, the costs associated also include the elaborate performance, which provides students from all 14 arts conservatories with real-world experience and professional mentorship. “OCSA’s Gala truly gives its students the opportunity to shine, not only in the awe-inspiring performances by singers, dancers and musicians onstage, but also as gracious greeters, stage managers and crew, visual artists and culinary support,” said Devon Martin. Much like voodoo queen Marie Laveau, “Big Time in the Big Easy” cast a spell on Gala attendees, bewitching them with a mesmerizing experience Brianna and Teren Shaffer from beginning to end. As soon as guests arrived, they were delighted by OCSA students, who acted as entertaining street performers. Artists sketched and painted their masterpieces, writers created thought-provoking poetry and improvisational dancers tapped their feet to the sounds of rollicking jazz music. Guests were handed delicious peach cocktails and tray-passed hors d’oeuvres as they strolled up the purple carpet to the French Quarter Pavilion tent, where they placed their bids on an extraordinary selection of silent and “Almost Live!” auction items. A second-line parade then led them through an ornate floral iron gate into the Grand Ballroom, where dinner was served under market lights. Producer’s Circle ($30,000) tables were adorned in apple green velvet brocade linens with golden lantern and orchid centerpieces and surrounded by gold infinity chairs backed with extravagant royal purple cloth flowers. During Act I, guests enjoyed a Louisiana crab salad with okra, and a mizuna, poblano and corn relish, herb-crusted filet mignon, Cajun-blackened redfish served with a blue cheese and sweet potato gratin, asparagus, andouille-roasted corn and sauce ravigote. Dessert featured a chocolate banana cream pie and family-style beignets with caramel rum sauce. An exciting live auction raised a total of $94,000. The “P!NK VIP Concert Experience” donated by Farmers & Merchants Bank went to Tristy Patterson and Eric Choi. “Greetings from NOLA,” donated by the Emeril Lagasse Sherry and Ralph Opacic Foundation, Pacific Hospitality Group, and the New Orleans Center for the Arts will be enjoyed by Martha Duque and Nimesh Davé. The “Paradise in the Pacific” trip to Maui generated such interest that Montage Hotels & Resorts offered to provide two six-night packages, which were taken home by Julie and Doug Garn; and Kathi and Steve Wagner, Cynthia and Martin Howard and Vicki Foley and Tom Brennan. Suzi Lyons won her choice from a collection of five exquisite jewelry pieces by Twila True Fine Jewelry as part of the opportunity drawing that raised $11,200. An inspiring video, a testimonial by OCSA alumnus Lorenzo RangelSantos, and a moving speech from Dr. Mohamed El-Erian about the importance of education, diversity and opportunity for all students. When his challenge match of $300,000 was announced, paddles flew up in support of the Artist Scholar Sponsorship Program, which helps to provide financial assistance to students’ families who live below the national poverty level. The generosity soared to another level when Julia Argyros and Honorary Gala Co-Chair Lisa Argyros stood and surprised the crowd with a $500,000 gift from the Argryos Family Foundation. “As the students were singing ‘What a Wonderful World,’ all I could think about was the fact that these kids - our OCSA kids – are the future,” said Founder and Executive Director Ralph Opacic, Ed.D. “They can and will change the world. Exciting Event at Tutto Fresco to provide Support for Children’s Cerebral Palsy on Saturday April 28 A Child’s Dream. A Mother’s Love. Life Change Awaits…Doing Good Never Tasted So Good!

Dan Johns, Maddie Fragner & Steve White By Michael Ashley 1 in 323 children are born with Cerebral Palsy, a motor disability that impairs muscle movement, muscle control, and motor function. Despite such prevalence, there is no known cure and innovations for improving care have stalled due to the little dedicated federal funding for public research and rehabilitation. Debbie Fragner, mother of Maddie, an elevenyear-old-girl diagnosed with Cerebral Palsy, is fighting to change the status quo with her nonprofit organization, Children’s Cerebral Palsy Movement. On Saturday, April 28th, they will collaborate with RSM’s Tutto Fresco for “A Recipe for Caring” to raise funds for innovative, community-based programs to address the quality of life and long-term functioning of CP children and their families. Events like “A Recipe for Caring” are so critical to the CP community. The fact is, the undue stress involved in raising a child with CP leads to divorce rates above 90%. It’s no wonder why. Medical costs alone for children with CP are nearly ten times higher than the cost of caring for a child without a disability, and yet most CP households have single wage earners. Such events help families like Fragner’s who carry such a heavy financial and personal burden. She reminds us that when we help children with Cerebral Palsy in the race for a better future, we all win. “The people who’ve contributed see the smiles; they see the children experiencing joy and a higher quality of life that leads to brighter futures. They know they’ve made a difference.” By partnering with organizations such as Tutto Fresco, Fragner hopes

to further challenge expectations of children with CP. Interestingly, the first person to change Fragner’s expectations was her own daughter. Passionate about pursuing a “fun, normal” life, Maddie told her mother she wanted to try ballet. Inspired, Fragner conducted a pilot study addressing the correlation between CP symptom improvement when applying classical ballet technique and physical therapy in the presence of live music. Children in the study showed significant improvements. Combined with access to other therapies like therapeutic horseback riding, Maddie was soon able to walk independently for short distances. Unfortunately, the medical community has still been hesitant to accept new treatment forms. Fragner experienced this firsthand when taking Maddie to an orthopedic surgeon who predicted her “exercise as medicine” approach would prove unsuccessful. Undaunted, the Fragners forged ahead, trying innovative treatments and programs, including Ability Ballet, dedicated to helping children with CP learn to dance while improving the quality of their movements. Over time, the surgeon had to acknowledge Maddie’s improvement. “He said he watched the thorough research behind every decision I made, and the success it yielded in Maddie’s life,” Fragner says. “And all of that transformed the way he practiced medicine and how he intended to treat every family with Cerebral Palsy going forward.” Just as Fragner’s own daughter transformed her expectations of what is possible with CP, Fragner strives to challenge the expectations of the

medical and therapeutic community. However, funding new therapeutic programming can be quite costly. Events, like the upcoming “A Recipe for Caring” at Tutto Fresco, have proven to be crucial for CP families. Not only do they raise funds for important therapeutic programming, education, and support groups, they connect families in similar situations. “At the heart of this organization is that we just really want to form a community of families with Cerebral Palsy,” Fragner explains. “We want to help bring these families out of isolation and into community. We want to love and support each other.” Fragner believes to build this type of community, we must educate the whole child—cognitively, socially, and emotionally—and their caregivers. To accomplish this, she is initiating a Cerebral Palsy-focused tutoring program and other gender-neutral therapeutic programming, like Ability Ballet. Among other improvements, each provides CP children the ability to learn and develop social skills, culminating in increased selfconfidence, resilience, and emotional management. When it comes to supporting the caregivers in this endeavor, Fragner is developing face-to-face and online resources as well as professionally facilitated support groups. Topics will include Whole Body Approach to Healing, Nutrition, Caring for the Caregiver, and Ways to Successfully Interface with the School System. To ensure she is meeting the demands of CP families, Fragner intends to continue to survey the needs of the community, identify helpful professionals, and to raise awareness

through events like “A Recipe for Caring.” The funds raised will help underwrite many supportive community programs while boosting awareness. Attendees can expect to enjoy an afternoon of authentic Italian food, a silent auction, access to influential business leaders, and the opportunity to discover firsthand the difference one can make. Fragner and Tutto Fresco are particularly excited about the silent auction selections, which shall include a personal tour of General William Lyon’s Private Classic Auto Museum, exclusive chef-led dinner parties at both Tutto Fresco and True Foods, a plethora of fine wine options and many other unique experiences to indulge one’s senses. Ultimately, whether it’s helping a child with Cerebral Palsy achieve a new physical milestone, achieve greater academic success, make a new friend, break through a finish line, pair with a community partner, or teach an eager student how to do pliés, Fragner knows her organization can enact change. But it all starts with the children, the parents, community leaders, and finally, the medical and therapeutic professionals. By changing the expectations of communities, more and more families can benefit from alternative treatment options. Children with CP can realize their full potential, surpassing expectations by walking, running, dancing, and experiencing a higher quality of life. As Fragner says, “When we invest in children that have Cerebral Palsy, we all succeed.” This fundraiser will occur Saturday, April 28 at Tutto Fresco (22332 El Paseo, Rancho Santa Margarita, CA).

OLIVE CREST AT-RISK CHILDREN AND FAMILIES RECEIVE GIFTS, FOOD, AND CARE DURING THE 2017 “BE THE MIRACLE” HOLIDAY CAMPAIGN

Christmas 2017 was a joy-filled holiday for 834 abused, neglected, and at-risk children and teens in Orange County. Olive Crest’s annual “Be the Miracle” gift drive was bigger than ever. Generous donors in the community contributed hundreds of gifts, food, and other necessities throughout November and December, ensuring a bright and cheerful Christmas for kids who may have never before received a present during the holidays! With childhoods shattered by abuse, many kids at Olive Crest have never grown up in joyful expectation of the holidays. Olive Crest wants to change that experience and create happy memories. On an annual basis, we enlist the local community’s support,” stated Tim Bauer, Executive Director of Development for Olive Crest Orange County. “Our “Be The Miracle” campaign ensures that each and every child’s wish does indeed come true! With most other children receiving gifts at home during the holidays, Olive Crest strives to allow the same experience for our kids. The invaluable smile on a child’s face reflects the purpose and warmth of the holiday spirit. Every contribution, no matter how large or small, will allow these children to experience happy memories, and will help remind them that they are truly valued, remembered, and special this holiday season,” Bauer continued. One little three-year old boy named Josh was especially grateful for a brand new pillow and bed this year. He had been used to sleeping on the floor, with a “pillow” he had made of dirty old batting stuffed into a plastic bag. While he also received toys and a bike among the donations, he cried tears of joy and excitement when he saw his new bed and cuddled up with a brand new pillow for the first time in his life! Many of the children Olive Crest

serves struggle to know what to wish for, as they haven’t even had basic essentials, let alone toys and things to entertain them. For Andre, an 11 year old who loves soccer, new cleats was the only thing he could think of to request; something he had never imagined he would possess. With only memories of abuse, constant moves, and dashed dreams, Olive Crest staff remarked “we could tell he wasn’t holding out much hope for the cleats.” But, when he received them along with other Christmas presents, he was so overjoyed that he wore them all day and wouldn’t take them off. Every day during the campaign, individuals, families, and companies were dropping off their contributions, packing the shelves of Olive Crest’s “Santa’s Workshop” to capacity. “These individuals are genuine Olive Crest heroes,” stated Kyle Houlton, Community Involvement Coordinator for Olive Crest Orange County. “To those who donated goods, funds, and helped receive and distribute donations to our kids and families, we are most grateful,” he continued. Donations this year included: Over 8,000 Christmas Gifts 27 Christmas Trees to help families decorate Over 1,100 stockings filled with goodies 265 Holiday Meals for families in need 13 fun-filled Christmas Parties for Olive Crest kids and families A Shopping Spree at H & M for group home youth A new Car for transporting transitional aged youth A new Chevrolet Truck to help deliver goods and donations And so much more! Reprinted with permission from the American Institute for Cancer Research Servings: 12 Dough: 1 cup whole-wheat flour 1 cup all-purpose flour, divided 1 package (1/4 ounce) quick-rise yeast 1 teaspoon salt 1 cup warm water, 125-130 F 1 tablespoon canola oil Topping: 7 medium fresh mushrooms, sliced 3 plum tomatoes, chopped 1 small green bell pepper, slivered 1/2 cup sliced black olives 1/4 cup chopped red onion 2 tablespoons olive oil 2 teaspoons apple cider vinegar 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried oregano 1/4 teaspoon thyme 1/4 teaspoon basil 1/4 teaspoon garlic powder nonstick cooking spray 2 teaspoons cornmeal Heat oven to 475 F. To make dough: In mixing bowl, combine whole-wheat flour, 1/2 cup allpurpose flour, yeast and salt. Add water and oil. Beat until smooth. Stir in remaining all-purpose flour to form soft dough. Place onto floured surface and knead by hand until consistent and elastic, about 4 minutes. Cover and let stand 15 minutes. To make topping: In bowl, combine mushrooms, tomatoes, green bell pepper, olives, onion, oil, vinegar, salt, pepper, oregano, thyme, basil and garlic powder. Coat 15-by-10-by-1-inch baking pan with nonstick cooking spray. Sprinkle with cornmeal. Gently press dough into pan. With fork, generously prick dough. Bake 10 minutes, or until lightly browned. Cover dough with topping mixture. Bake additional 10 minutes, or until edges are golden brown.

Heat oven to 350 F. Place crust on baking sheet and bake 8 minutes, or until golden and fragrant. Transfer to wire rack and cool completely. Place cream cheese, sour cream, sugar, lemon zest and vanilla in small bowl. Using hand mixer on medium speed or wooden spoon, blend until combined and smooth. Spread cheese mixture evenly over bottom of pie crust. Refrigerate until set, 1-2 hours. Before serving, cut off tops of strawberries. Halve largest ones and place in bowl. Cut remaining berries lengthwise in quarters and place in another bowl. Melt fruit spread in bowl in microwave or in small saucepan over medium heat, stirring often. Mix in lemon juice, if using, and divide hot fruit spread between two bowls of berries. Using fork, toss until fruit is coated. Spoon quartered fruit into center of pie, turning most pieces cut-side down. Arrange larger halves in circle around edge of pie with flat side facing rim of crust and pointing toward center of pie. Fill open spaces with any remaining fruit spread. Serve pie within 1 hour.

1/2 teaspoon McCormick Garlic Powder 1/4 teaspoon McCormick Crushed Red Pepper 1/4 teaspoon McCormick Pure Lime Extract 1 pound large shrimp, peeled and deveined 1 small zucchini, cut into thin noodles with spiralizer 1 medium yellow squash, cut into thin noodles with spiralizer 1 medium carrot, cut into thin noodles with spiralizer 2 tablespoons oil 1/2 teaspoon salt 1/4 teaspoon McCormick Ground Black Pepper Heat oven to 375 F. In large, re-sealable plastic bag, mix together coconut milk, ginger, garlic powder, crushed red pepper and lime extract. Add shrimp; turn to coat well. Refrigerate 15-30 minutes. Remove shrimp from marinade. Discard any remaining marinade. In center of large, shallow, foil-lined baking pan, arrange shrimp in single layer. In large bowl, toss vegetable noodles and oil. Sprinkle with salt and pepper; toss to coat well. Spread noodles around shrimp in pan. Bake 10-15 minutes, or until shrimp turn pink and are cooked through and noodles are tender.
