Orange county resident commands one of Navy’s most versatile combat ships
By Petty Officer 3rd Class Abigail Rader, Navy Public Affairs Support Element A 1987 Newport Harbor High School graduate and San Clemente, California, native is serving in the U.S. Navy as part of a team supporting one of the country’s most versatile combat ships. Command Master Chief Thomas Metcalf is a member of Commander, LCS Squadron One which supports both variants of littoral combat ships based in San Diego. As a Navy command master chief he is responsible for leading 3,500 sailors who serve aboard six operational warships and eight ships in construction. These sailors make up 25 different LCS crews. He is also responsible for the sailors care, development, and training, as well as mentoring and developing the senior enlisted leaders. “I get the opportunity to help human beings develop their life skills,” said Metcalf. “I am able to have a part in making them into better human beings.” The LCS platform has a unique manning concept called “3-2-1,” where three crews serve aboard two different littoral combat ships, one of which is deployed. This innovative manning concept allows the LCS to spend more time forward deployed without overtaxing the crew, according to Navy officials. Designed to defeat threats such as mines, quiet diesel submarines and fast surface craft,
littoral combat ships are a bold departure from traditional Navy shipbuilding programs. The LCS sustainment strategy was developed to take into account the unique design and manning of LCS and its associated mission modules. “I enjoy developing the most professional, genuine chief petty officers in the fleet,” said Metcalf. “The sailors in this command are the most positive and enjoyable to work with.” According to Navy officials, the path to becoming an LCS sailor is a long one. Following an 18-month training pipeline, sailors have to qualify on a simulator that is nearly identical to the ship. This intense and realistic training pipeline allows sailors to execute their roles and responsibilities immediately upon stepping onboard. “Sailors that work aboard this platform are expected to be capable of performing a variety of tasks to assist in the completion of the LCS mission,” said Capt. Warren R Buller, Commander, LCS Squadron One. “The training that is required of our sailors is rigorous and difficult. This ensures that they are mission ready to defend and protect America at all times.” As a service member supporting the LCS mission, Metcalf explained they are building a legacy that will last beyond their lifetimes. Sailors know how important it is for the Navy to develop new war fighting capabilities to continue their success on the world’s oceans. “The Navy saved my life,” added Metcalf. “It

Backyard bounty: Vegetables are nature’s original nutritional powerhouses

The seniors were honored for their service to the community and their contributions to the Assisteens chapter. The Spirit of Assisteens award recognizes a member who exemplifies volunteerism and has served as a role model to younger members. This year’s recipient is Lauren White. Each Assisteen member serves at least forty hours in the community each year. Collectively, the Assisteens earned over 3,000 service hours last year, helping deliver meals to homebound seniors, serving at soup kitchens, entertaining assisted living seniors and providing other much-needed services in Saddleback Valley. Assisteens is effective because the diverse network of girls is self-governed and able to experience the full cycle of philanthropy, from fundraising through hands-on contact with recipients of the aid. S e n at e C o m m i t t e e D e f e at s B at e s ’ B i l l to E m p o w e r Locals to Regulate Sober Living Homes The Senate Health Committee defeated Senate Bill 1283 by Senator Patricia Bates (R-Laguna Niguel) that would have allowed a city or county to craft health and safety standards for sober living homes. The bill received only two “aye” votes out of the nine member committee. Six members abstained with one voting against. “It’s disappointing that the Senate Health Committee did not heed the voices of thousands of residents concerned about the proliferation of sober living homes in their communities,” said Bates. “The failure of some of these homes to meet the needs of their residents and ensure a decent standard of care demands a solution. The least the Legislature can do is empower local governments to take additional steps to ensure these homes and surrounding communities are safe.” SB 1283 would have authorized a city or county to adopt health and safety standards for structured sober living homes that comply with state and federal housing laws and the federal Americans with Disabilities Act. A structured sober living home is a place that provides alcohol-free or drug-free housing and provides structured activities for a group of unrelated adults who are recovering from drug or alcohol addiction. This measure is modeled after legislation that recently advanced
in the Arizona Legislature. SB 1283 specifies that an ordinance authorized under these provisions shall include, but not be limited to: mandatory registration requirements, including the name and address of the home, the owner’s name, address, and contact telephone number, and a copy of the lease; in-home supervision requirements for the residents; and an operating plan that addresses maintenance of the property and noise abatement. The proliferation of unlicensed and unregulated sober living homes has created concerns in many communities statewide. Group homes, including alcoholism or drug abuse recovery or treatment facilities, are licensed by the state. Sober living homes that do not provide services that alcoholism or drug abuse recovery or treatment facilities provide are not licensed by the state. Some local governments have adopted ordinances, but protracted and expensive litigation has created uncertainty. Legislators have also authored three other bills this year to address sober living homes. Yesterday, the Assembly Health Committee approved two of those measures: AB 2255 by Assembly Member Melissa Melendez (R-Lake Elsinore) would allow cities and counties
to require drug and alcohol free residences to be certified under operating standards, and allow them to monitor those residences through a good neighbor policy that addresses neighborhood concerns and complaints. The California Department of Health Care Services would be authorized to investigate complaints, and to impose sanctions and commence disciplinary actions, including revocation of the certification of a residence as a drug and alcohol free residence. Bates is a co-author of this measure. AB 2403 by Assembly Member Richard Bloom (D-Santa Monica) would allow cities and counties to request the denial of a new alcoholism or drug abuse recovery or treatment facility license, and would authorize the California Department of Health Care Services to deny a license if its proximity to an existing facility would result in overconcentration. Bates supports this bill. Both AB 2255 and AB 2403 will head to the Assembly Appropriations Committee for its consideration. The third bill in the Assembly, AB 2772 by Assembly Member Ling Ling Chang (R-Diamond Bar), would have required a person who has to participate in a drug treatment program to seek treatment only from a treatment facility licensed by the California Department of Health
California 36th District Senator Pat Bates Care Services. The Assembly Public Safety Committee rejected the bill on a partisan vote yesterday. Bates was a co-author of that measure. Bates remarked, “While I wanted to see a different outcome for my legislation today that would have empowered locals, there is hope that the Legislature could take some steps this year to provide oversight for sober living homes. If enacted, the legislation by Assembly Members Melendez and Bloom would be an improvement over the status quo.” Senator Patricia Bates (R-Laguna Niguel) represents the 36th Senate District in the California Legislature, which covers South Orange County, North San Diego County and Marine Corps Base Camp Pendleton.
Local Volunteers Assemble 200,000 Meals to Fight Hunger by Melanie Jacobson Over 1000 neighbors from Coto de Caza, Trabuco Canyon, Rancho Santa Margarita, Mission Viejo and Lake Forest joined funds and forces on Saturday, April 16 to provide more than 200,000 meals for hungry people locally and in the Philippines. Wearing hair nets and smiles, they worked with Harvest Pack, a meal-packaging organization that provides nutritionenriched meals for hunger victims. When the presidency of the Santa Margarita Stake of the Church of Jesus Christ of Latter Day Saints
realized it costs only $.25 to provide a meal, they set a goal to raise $50,000 from local church and community members, a number they felt could make a real impact on hunger. The community rallied and surpassed it, raising $55, 448. Some families came up with their donation by discussing what they could give up, like a weekly pizza night, and used the money for Harvest Pack instead. Others, like Piper Brown, 7, and Avery Brewster, 10, worked with their younger brothers to create a lemonade stand and got their neighborhood in on the act. They raised $44, enough to make almost 200 meals. Volunteers filled the gym of the Santa Margarita Stake Center to assemble and pack the meals. Every six seconds, someone in the world dies of hunger. Even in Orange County, 20% of children suffer from food insecurity, meaning that they don’t know on a daily basis where their next meal will come from. Elsie Rudge, 7, said of the event, “It made me feel good to help because they don’t get healthy food, and I like making it for them.” The meals are carefully balanced
with the optimum ratio of protein, carbohydrates, and healthy fats, then supplemented with additional nutrients and vitamins. Each meal only requires heat and water to prepare and hungry families can make sure that at least for that day, their children are getting the nutrition they need. By the end of the day, volunteers had logged over 2,302 hours of combined service, but most significantly, had packed 106,488 meals for hunger victims in the Philippines and 98,880 meals to fight hunger right here in Orange County.

CASA Celebration of Children Nets Over 1 Million Dollars Photos by: John Watkins Photography Court Appointed Special Advocates (CASA), held their annual Celebration of Children: Black & White Ball, which took place at The Ritz-Carlton, Laguna Niguel, in Dana Point. Over 400 guests were in attendance to support CASA’s mission of serving abused, abandoned, and neglected children in Orange County with a trained and supported volunteer advocate that helped contribute to a net of over $1,050,000 for CASA’s largest fundraiser of all time. The stunningly beautiful evening was Co-Chaired by Lourdes Nark, Kay Patel, Urvashi Patel and Wendy Tenebaum. Evening festivities began with a cocktail reception and silent auction featuring 115 captivating items. Former USC Quarterback and NFL Quarterback to the Cleveland Browns and Dallas Cowboys, Paul McDonald, served as Master of Ceremonies for the second year in a row, and former foster youth and current State Coordinator for Colorado CASA, Lauren Leeman, served as the Keynote Speaker. Kylie Schuyler and Douglas M. Hodge received CASA’s highest given award, “Children’s Champion”, for their many years of support and personal dedication to children’s well-being while in the foster care system. Applied Medical was honored as “Outstanding Corporation” for their commitment to ensuring growth and success for children in care and also for the CASA agency as a whole through their support of the annual CASA Camp for foster youth, and for their tremendous efforts in overhauling and updating the computer system at the CASA offices. Anaheim Hills resident, Janice Jefferson, was honored as “Advocate of the Year” for her amazing work in successfully advocating for the deaf child she is matched with to receive a sign language interpreter in school. Janice told a silent audience about how her CASA child was misdiagnosed with Echolalia, when in actuality, no one had taken the time to figure out how to properly communicate with him. Janice’s work in advocating for resources for this young boy who only knew how to sign 30 words when first matched, led to him learning how to sign and spell thousands of words and gave him confidence to excel in life. Keynote speaker, Lauren Leeman, was able to inspire the audience as she discussed her time in the foster care system and how her CASA helped to make the difference of her not ending up as another sobering statistic for so many that are forced into the foster care system. The live auction included a Dream Vacation Home Experience in Phuket, Thailand; Earring’s from Lugano Diamonds that feature Black & White Pave Diamonds 6.65 Cts of Collection VS Diamonds, set in 18K White & Black Gold and 8.86 Cts of Black Diamonds valued at $25,000; a Chanel Dinner, where 20 couples will experience a lavish 5-course meal with wine pairings hosted by Chanel and held at the Patel Estate in Newport Coast. The evening also had two opportunity ticket drawing items – 2 tickets to see season 11 of The Voice including gift certificates from Your Car, Our Driver, and also to The Castaway Restaurant in Burbank, and the second item being 3 center stage tickets to see Beyoncé – the Formation World Tour in Santa Clara. Former American Idol winners, Ruben Studdard and surprise guest, Candace Glover, closed out the evening’s program and began the magnificent after-party with their soulful croons that left the crowd truly mesmerized. Court Appointed Special Advocates (CASA) of Orange County is a privately-funded non-profit organization that serves severely abused, neglected and abandoned children through the recruitment, training and continued support of volunteers who advocate and mentor these children, representing their best interest in the courtroom and other settings. Founded in 1985, with major support from the Junior League of Orange County, they serve annually approximately 1,000 of the children who move through the court system as a direct cause of abuse and neglect. They are able to serve these children through the generous support of those who donate to CASA as well as the immeasurable compassion and commitment of their CASA advocates. Celebrate Cinco de Mayo at Segerstrom Center for the Arts with the Renowned Mariachi Sol De México Mariachi Sol De México under the musical direction of José Hernández makes its Segerstrom Center for the Arts debut on Thursday, May 5 at 8 p.m. in the Renée and Henry Segerstrom Concert Hall. Orange County audiences will enjoy traditional Mexican folk, classical and pop music with Hernandez’ vivid and graceful compositions. He has shared the stage with his five brothers since the age of three. His fluent mastery of the medium has led him to assist in many film scores. He has participated in more than 20 Hollywood soundtracks including Rango, Seabiscuit, Don Juan De Marco and A Million to Juan. In 1981, at the age of 23, Hernández founded Mariachi Sol de Mexico® in Los Angeles. As true representatives of a treasured musical heritage, the 35-year-old Mariachi Sol de México has grown to become a dynamic team and has accepted the mantel as the nation’s mariachi ambassadors. It is one of the finest mariachi ensembles to be found both in Mexico and the United States. More than any American citizen, Hernández is responsible for the recognition that this musical tradition is receiving throughout the world. His 13-member ensemble brings together refined vocal power and superb musicianship. Their eighth CD was nominated for a Grammy in 2001 (Tequila con Limon con El Mariachi Sol de México). This nomination made them the first mariachi ensemble to receive such an honor. Their 13th CD, 25 Anniversario José Hernández y Su Mariachi Sol de México, was also nominated for a Grammy in 2007. Total time: 9 minutes 1/2 pound ground beef sirloin 2 teaspoons minced garlic 1 cup chunky salsa, divided 2 cups cooked brown or white rice 6 whole wheat flour tortillas (9 inches) 1 can (15 ounces) black beans, drained and rinsed, divided 1 can (11 ounces) corn kernels, drained, divided 2 cups shredded pepper jack cheese, divided sliced green onion, including green tops In medium nonstick skillet, brown ground beef and garlic over medium heat, breaking beef mixture into smaller chunks with spoon. Drain fat and stir in 1/2 cup salsa; set aside. Spread 1/3 cup rice in center of tortilla, leaving a 1/2-inch border. Scatter about 2 tablespoons of beans and 11/2 tablespoons corn over rice. Spread 1/3 cup beef mixture and 1/4 cup cheese over corn. Top with 2 teaspoons salsa and a few pieces of green onion. Fold in two opposite edges of tortilla 1 inch each and roll up. Place, seam side down, on microwave-safe dish. Repeat with remaining tortillas.
Place burritos in microwave and heat 1 minute, or until heated through. Serve with remaining salsa. Hot and Sweet Grilled Cheese Servings: 4 Total time: 16 minutes Peach Jalapeno Jam 3 tablespoons peach preserves 1/2 fresh jalapeno, seeded and finely chopped (about 2 teaspoons) Grilled Cheese 1 1/2 tablespoons unsalted butter softened 4 slices 12-grain bread, divided 2 slices white cheddar cheese, divided 2 slices pepper jack cheese, divided 2 slices smoked Gouda cheese, divided 1/2 small avocado, thinly sliced, divided To make peach jalapeno jam: in small saucepan over medium heat, combine peach preserves and jalapeno. Stir mixture constantly until preserves are melted. Remove from heat and set aside. To make sandwiches; heat large nonstick or cast iron skillet over medium heat for about 2 minutes. Butter one side each of 2 slices of bread. Turn buttered slices over,
buttered side down and spread peach jalapeno jam over second side of each bread slice. On top of jam side of each bread slice, layer 1 slice cheddar cheese, 1 slice pepper jack cheese, half the slices of avocado and 1 slice of Gouda. Spread jam on remaining slices of bread and place jam side on cheese. Spread remainder of butter on bread on top of sandwiches. Place sandwiches buttered side down in pan. Partially cover with lid, allowing steam to escape, and cook for 1 1/2-2 minutes, or until bread is toasted and browned. Flip sandwiches over with spatula. Partially cover with lid and cook for additional 1 1/2-2 minutes, watching carefully for bread to brown and cheese to melt. Remove lid and check for doneness. Remove sandwiches from heat and cut in half. Serve warm.

With Seven Wines, Exploring Burgundy’s Côte d’Or

By David White At an auction this month in Hong Kong, a single case of wine from Henri Jayer, the legendary Burgundian vintner who passed away in 2006, sold for $83,000. Not all wine from Burgundy is that expensive, of course. But numbers like these terrify wine enthusiasts, budding and experienced alike. How is someone supposed to learn about Burgundy with prices seeming to reach new heights each week? Sure, affordable options abound in lesser-known appellations in southern Burgundy, like Rully, Mercurey, and Givry. The most distinctive Chardonnay in the world comes from Chablis, where even humble wines from top producers are charming. Beaujolais offers the greatest value in the wine world. But Beaujolais offers Gamay, not Pinot Noir. Chablis is geographically separated from the rest of Burgundy
by about 60 miles and the soils and climate have more in common with Champagne than Burgundy. Southern Burgundy’s offerings are bountiful and often delicious but at best, the wines give a sense of Burgundy’s aspirations. The heart of Burgundy is in the north, where the Côte de Nuits and the Côte de Beaune together comprise the Côte d’Or. So when my brother asked me to teach him and some friends about “serious” Burgundy, I was worried. How could I possibly walk them through the Côte d’Or without bankrupting the family? Th e f i r s t s t e p ? E x p l a i n i n g Burgundy’s classification system. About 800 years ago, Cistercian monks in the region began observing different sites and the quality of the resulting wines. An informal, three-tier classification of vineyards emerged over time. The French government formalized that system in 1936. The first classification level is “village,” a designation that’s only granted to Burgundy’s top communes. About 37 percent of Burgundy’s production is classified here. If a wine is adorned with a village name -- e.g., Gevrey Chambertin -- it’s produced entirely from grapes grown in that village. The next level is “Premier Cru.” Almost 600 vineyards in Burgundy have this status, and most are in the Côte d’Or. Premier cru wines aren’t necessarily from a single vineyard,
though. So wines from these sites always feature the village name prominently and the vineyard name if the grapes come from a single site. Together, these vineyards account for about 10 percent of Burgundy’s production. The top 32 vineyards the “Grand Crus” produce Burgundy’s most storied wines. Twenty-four of these sites are in the Côte de Nuits, all of which are dedicated to Pinot Noir. Eight of these sites are in the Côte de Beaune, seven of which are dedicated to Chardonnay. In the hands of a skilled winemaker, the grapes from these sites are able to translate both time and place. These wines are always expensive together, the Grand Cru vineyards account for less than 1.5 percent of Burgundy’s production but the experiences they offer can be spiritual. Wines from outside these classified areas but within Burgundy’s boundaries and wines blended from different classified areas are generally labeled as “Bourgogne.” (There are many confusing exceptions to this broad generalization.) The second step? Helping my brother and his friends distinguish between the Côte de Nuits and the Côte de Beaune. Pinot Noir fares excellently in both. But broadly speaking, wines from the Côte de Nuits are richer, more structured, and more complex than their Côte de Beaune counterparts. Finally, I wanted to stress the
importance of skilled winemaking. Sure, it’d be difficult to make a bad Chardonnay from a Grand Cru like Montrachet or a bad Pinot Noir from a Grand Cru like RomanéeConti. To start, two whites: a young, basic Bourgogne from Dominique Lafon and a 10-year-old Grand Cru from Louis Jadot’s holdings in BienvenuesBâtard-Montrachet. Then, four young reds: two village wines from the Côte de Nuits and two Premier Cru wines from the Côte de Beaune. From the Côte de Nuits, I selected a Gevrey Chambertin from Marc Roy and a Chambolle-Musigny from Bruno Clair. From the Côte de Beaune, I selected Savigny-lèsBeaune Premier Cru from Simon Bize and a Volnay Premier Cru from Pousse d’Or. To finish? A 20-year-old, Grand Cru red from Méo-Camuzet’s Clos de Vougeot holdings. All the wines came from top producers. All were delicious. It wasn’t a cheap night; together, our group split a $900 tab. As the last of three in the jump-off, Canadian Brenda Riddell and Silverstar Farms, Ltd.’s Dutch Amouretta were the only pair to produce a double clean effort to take the top prize. Veteran FEI course designer Leopoldo Palacios (VEN) designed a track that asked a variety of difficult questions for the collection of riders to answer without a rail, refusal or time faults. Of the sixteen efforts on course, Palacios had a water or square oxer option as the third effort leading to a sharp left turn to a vertical-vertical one stride combination. Another difficult question followed, with a right roll back turn to a square oxer set right along the fence line just past the ingate, which came down for over a third of the class. A number of competitors had rails at this point, only six efforts into the round. Fence 8, the Interactive Mortgage oxer set at the opposite end of the field, also caused a rail for a third of the horses. The final five fences included a solid wall in a tight line to an oxer, leading to the last oxer-vertical combination in a line to the final vertical with a liverpool below. Notably more than half of the competitors stopped the clock past the allotted time of 81 seconds. Two of those rode the track without a rail. Clocking in at 81.38, Nicole Haunert and NJK No Regret (owned by NJK Show Jumpers, Inc.) finished with one time fault, ultimately fourth place.

Last week’s grand prix winner, Lane Clarke and Georgy Maskrey-Segesman’s Balu U, were the first clean and the only male representatives vying for the win. Last to go, Riddell knew exactly what she had to do. “I just had to jump clean, but I was also worried about time faults, because you never know with Leopoldo,” the winner noted when asked about her strategy. She achieved the task and happily topped a tough class. Of her mare, Dutch Amouretta, Riddell said, “I have had her for three years and she’s a horse of a lifetime. She’s eleven years old now and she’s just an amazing horse!” Vani Khosla and Billy Mexico Win the Interactive Mortgage U25 Developing Rider Series Qualifier With a new format this season, the Interactive Mortgage U25 Developing Rider Series offers 10 qualifiers, run in conjunction with and over the same track as the Markel Insurance 1.40m Grand Prix. After nineteen competed, three tied with a score of just four faults. With those riders jumping off for the blue, it was first to go Vani Khosla aboard her own Billy Mexico that set the pace for a well-deserved win. Once again, it was the women who dominated in the $5,000 Interactive Mortgage U25 Qualifier. Khosla led the pack and set a solid time, clean in 43.03. Next in, Sydney Hutchins and Zorlando had an unfortunate refusal. Last to go, Nicolette Hirt and Hot Blooded were clean but just a touch too slow in 43.53 for second place. It is interesting to note that with the
two classes running concurrently, the U25 riders have the option to compete in just the Interactive Mortgage U25 class or in both the U25 and the Markel Insurance Grand Prix. Khosla chose to enter both classes today, earning her a win in the U25 and sixth in the Markel as the fastest four-fault ride. Khosla stuck to her plan with the 11-year-old Billy Mexico. “I know that he can be very fast across the ground without having to go that fast. I just had to be really tidy, clean, and smooth, and he would take care of the rest for me.” At the end of the qualifying season, twenty-five riders will be invited to the new $25,000 Series Final at The Las Vegas National in November. The host of showcase events continue this week during Spring Classic IV. Friday morning the hunters will compete in the $10,000 USHJA International Derby on the grand prix field. The jumper highlights include the second Interactive Mortgage Horses 10&U Futurity qualifier and the $50,000 Spring Classic IV Grand Prix, presented by Davidson Communities, on Saturday, April 16th. The afternoon will include opening ceremonies by the Shea Therapeutic Riding Center and a special naming of the grass field that has hosted years of great sport. And as a final celebration, Leading Rider Awards will be presented to wrap up the Blenheim Spring Series on Sunday.
