Senate Committee Approves Senator Patricia Bates’ B i l l t o H e l p H o m e l e ss A d u lt s a n d C h i l d r e n The Senate Human Services Committee today approved Senate Bill 232 by Senate Republican Leader Patricia Bates (R-Laguna Niguel) to help move families out of poverty through a holistic approach that addresses the root problems of their individual circumstances. “I am encouraged by the committee’s approval of my bill to help anti-poverty organizations that want to make their clients self-sufficient,” said Bates, a former social worker. “My bill ensures needed accountability for people seeking to make their lives better for themselves and their families. In many instances, sobriety is the key factor in order to reunify families and begin their path to success. There is no reason why the state should not fund programs that ask their clients to strive towards sobriety.” SB 232 would require the California Department of Social Services, in consultation with the County Welfare Directors Association of California (CWDA), to design and implement a five-year pilot project to provide grants to private organizations that assist individuals receiving CalWORKs benefits to achieve economic independence, and to evaluate the effectiveness of the grant-funded programs. It would allocate $50 million from the state’s General Fund over five years. Bates’ bill is supported by organizations including the CWDA and the National Association of Social Workers – California Chapter. The bill would fund successful programs similar to Esplanade House in Chico and Saint John’s Program for Real Change in Sacramento. These programs require commitment to clean
and sober living in exchange for housing, as opposed to “Housing First” programs that provide housing without conditions, such as sobriety, addiction treatment or service participation. In its supplemental poverty measure report for 2015, the U.S. Census Bureau reported California’s poverty rate to be more than 20 percent – the nation’s highest. Bates believes that the state needs to try something different to make real life long change in people’s lives. SB 232 is similar to Bates’ SB 659 last year, which failed to pass out of the Senate Human Services Committee. The editorial page editor of the Sacramento Bee called SB 659 “one of the more interesting bills” on homelessness in a 2015 article. In a 2016 editorial, the Bee’s editorial board wrote: “Democrats would do well to listen to Sen. Pat Bates, R-Laguna Niguel. Bates sees a need – as does The Sacramento Bee’s editorial board – to spend some money on housing that caters to formerly homeless people who seek drug- and alcohol-free housing.” In support of SB 232, participants from Sacramento’s Saint John’s Program for Real Change testified today about how that program helped them to stay sober and get back on track. They said that alcohol and drug testing were integral to their recovery as it helped to keep them accountable and able to provide for their children. She nursed you through countless cases of childhood sniffles, taught you to tie your shoes and make a mean omelet, and she’s still your goto source for good advice and your favorite home-baked cookies. Are you really going to just give Mom a pair of socks and some flowers for Mother’s Day? You can do better than that. In the tradition of a current popculture meme, here’s a “give this, not that” list of Mother’s Day ideas: Give: Your time. Last year, 44 percent of mothers surveyed by online deal site PriceGrabber said they wanted quality time with their family for Mother’s Day. Whether your family includes adult children who live and work far from their childhood home (and Mom) or a busy family with young children, it can be hard to find time to spend with each other on a regular basis. On Mother’s Day, make a point of devoting the day to Mom. Whatever you choose to do together - dine out, visit a botanical garden or just hang out at home - you’ll be giving her the gift she wants most: time with you. Don’t give: Stuff. There’s a difference between a thoughtful gift that has meaning to the recipient, and something clearly bought out of desperation just so the giver has something to hand over on Mother’s Day. Moms know the difference. Things like cowboy boots, sunglasses and even designer purses were among the items mothers said they didn’t want in a survey by Ebates. Don’t wait until the last minute to buy something she may not want. Put some thought into the gift a week or two before the big day so you can be sure you’re giving her something she
really wants, like a piece of unique jewelry, her favorite bath products, or an attractive scarf. Give: A great meal out. It’s easy to understand why dining out was on the list of most-wanted gifts for mothers in every geographic area surveyed by Ebates. What could make Mom happier than enjoying a great meal with her family? Not having to cook it herself or clean up afterward! Taking Mom out for meal is a time-honored Mother’s Day tradition and restaurants can be busy on the first Sunday of May. In fact, Chris Ciavarra, senior vice president of marketing for Cracker Barrel Old Country Store, reports that Mother’s Day is one of the busiest days of the year for their restaurant locations across the country. When choosing a place to take Mom, look for a place that will please her palate with familiar flavors, good food and the kind of warm, comforting ambience she creates in her own dining room or kitchen. Family-style restaurants like Cracker Barrel are a good choice for Mother’s Day because there’s something on the menu for everyone. Plus, when Mom’s done with her meal, she can pick out the perfect gift from the store’s collection of nostalgic items. Don’t give: Practical kitchen items. No matter how much Mom says she wants a new electric can opener or how much she needs a new set of pots and pans, don’t give these items on Mother’s Day. Moms are more than just the sum of the time they spend in the kitchen. If she really needs and wants those things, why not give them to her at some other time of year, for no other reason
than she’s a great mother? Or, if you must give something kitchenrelated for Mother’s Day, consider something that’s pretty and fun, too, like decorative serve ware. Buy from a store that offers free gift wrapping services - like Cracker Barrel - and it’s even easier to give a good-looking gift. Give: Gift cards. A gift card to her favorite store was another popular selection of moms surveyed by Ebates. But don’t think giving her a gift card is all you have to do. Research to find just the right card for her, and then offer to accompany her on a shopping excursion to her favorite store. That way, you’ll be giving her two things she wants most - a gift card and time spent with you. Don’t give: Technology. Do you really want to give Mom a smartphone that will be obsolete by next Mother’s Day? Or a tablet so complicated she’ll never figure out how to use it on her own? If your mother’s digitally inclined, chances are she already has the tech she needs and wants. And if she doesn’t, trying to choose it for her can be like trying to pick a pet for someone else - never a good idea. Instead, keep gift items simple, personal and nostalgic. Millennial moms and baby boomers approach pregnancy very differently The millennial mom-to-be uses an app to track her fertility and pregnancy progress, pins nursery ideas on Pinterest and researches baby gear on YouTube. She reads online advice on everything from what to eat (or not), to when to talk to a doctor about prescription prenatal vitamins and what to do with the placenta after delivering. Never without a smartphone in hand, armed with an app for everything, always connected or “on,” millennials were born in an era of emerging technology between 1980 and 1995, and have grown up in an ever-increasing digitally enhanced environment. But what does this over-abundance of connectivity and information mean for the digital-savvy millennial momto-be? For nearly 60 percent it means there is too much conflicting advice on tips for a healthy pregnancy, according to a recent poll. 500 millennials and 500 baby boomers were asked to reveal details on their approach to pregnancy in the poll by Exeltis, which produces the number one doctor recommended prescription prenatal vitamin, Vitafol. While sifting through all the information available today was overwhelming to expectant millennials, only 36.2 percent of baby
boomer moms, whose pregnancies were “pre-Google” and social media, felt this way. In addition, in our constantly connected world it’s common for people to dispense unsolicited advice to expectant moms. Twice as many millennial moms report they received advice while they were pregnant that they disregarded or didn’t agree with as compared to baby boomer moms. That’s why it’s no surprise that with so much (often conflicting) soughtout and unsolicited information and advice, 51.8 percent of millennials said they had a hard time deciding which pregnancy advice to believe. “We have so much more information than they did years ago,” said one millennial in the study. “I feel like millennial moms have a lot more pressure placed on them to do everything ‘right.’” Thus, despite the advances in technology that make their pregnancies different (or perhaps, more likely, because of it), millennial moms are turning to their own mothers for advice, even more than their mothers turned to the generation before them. Millennials are using the “Grandma Filter” to essentially qualify and validate information that they are receiving from other sources.
When it comes to preparing for parenting, millennials turn to their mother/mother figure more than any other resource on a variety of topics, including emotional/family concerns, relationship advice and determining what to register for. And, millennial moms turn to their mother nearly three times more often than baby boomer moms would have regarding financial concerns in preparing for a new baby. Still, there are some elements of pregnancy that have remained unchanged. More than half of all millennial and baby boomer mothers
polled prepared for pregnancy by taking a childbirth class. More than 97 percent of millennial moms and 92 percent of boomer moms took prenatal vitamins. In addition, 80 percent of both groups recognize prescription prenatal vitamins are the right choice for any pregnant mother. Which all indicates that regardless of when they are pregnant, moms ultimately want what is best for her baby, but deciding what that is might best be determined with a slight tweak to the adage. Rick and Christine Atwood and John Joseph MacPherson of Mission Viejo were initiated into the Order as were Jack Songer of Trabuco Canyon and Heather Paige of Laguna Niguel. Rick and Christine Atwood joined the increasing number of husband and wife couples who have become Elks members. The popular sentiment expressed by many new Elks couples is that they wanted to give back to the community by engaging in some type of charitable work, and they hoped to be able to do it together. They have found a perfect fit with the Elks because both men and women are able to work together in all Elks charity projects. Six Speedy Competitors Win Veredus Leading Jumper Rider Awards

Part of the closing celebrations included the Veredus Leading Jumper Rider Awards, presented to the riders who accumulated the most points on their highest placing
finish during the Spring Classic II in the $25,000 Markel Insurance Grand Prix, plus another blue and other solid placings in the Spring Classic III Open Welcome and Speed Derby, put her squarely at the top of the professional leader board with an unbeatable total of 31 points. “The horses had some super results this Spring,” Parker said. “Doriena won her first grand prix, Vancouver won and Cupilor was second in a 1.40m Jumper Classic, Caramel and El Guapo each won a class and the young horses did well. I have them to thank for helping me win the Leading Pro Award, and Veredus to thank for presenting.” It was Natalie Dean who topped the field of riders in the 1.40m Jr/ AO Jumper division with 36 points. Dean won all three classes during the Spring Classic IV and finished third in the classic. She secured the Veredus 1.40m Leading Jr/AO Jumper Rider Award for her efforts. “I am honored to win this award and I am very grateful to Veredus for sponsoring it,” Dean said. “My horse, Mary Poppins, jumped her heart out in every class we did last week and I feel very fortunate to be able to ride such an amazing horse.” In the 1.30m Jr/AO Jumper division, Hannah Loly emerged victorious with a total of 32 points accumulated throughout Spring Classics I and II. Loly impressively earned the Veredus 1.30m Leading Jr/AO Jumper Rider Award at just fourteen years old. “I’m excited for a great summer of showing, I had a blast this Spring!” Loly exclaimed. “It’s fun to earn a Leading Jumper Rider award, the recognition and prizes mean a lot.” Natalie Dean won the Veredus 1.40m Leading Jr/AO Jumper Rider Award The Veredus 1.20m Leading Jr/ Page 8

Moms in training: 3 sanity-saving tips for new mothers From feeding to diaper changing, new moms and dads are flooded with information to learn and decisions to make for their new bundles of joy. A recent survey conducted by Harris Interactive found that nearly 75 percent of moms plan to return to work post-maternity leave. What many new moms may not yet fully realize is that becoming a mother is a full time job in and of itself. Like any profession, new moms deserve training, breaks and lots of support! Tammy Gold, parenting expert and author of the new book “Secrets of the Nanny Whisperer,” shares some easy tips mothers can use to help ease the transition into their new parenting role: Fill yourself up “No mother can give 100 percent of herself, 100 percent of the time, to her children or her partner,” Gold says. “Mom needs to remember what makes her who she is and what she needs emotionally and physically to live a complete life.” Filling yourself up can come from work, volunteering, taking classes, joining online groups, being in a book club, reading, hiking, walking or working out. Do whatever it takes to “fill you up” emotionally, mentally and
physically - apart from your children and family. Remember: happy mommy equals a happy baby! Crack the crying code When your baby cries, it can frustrate you, prevent you from sleeping, or even make you feel like crying yourself. Figuring out why your newborn is crying can ease a lot of stress. The main causes for infant crying typically include a dirty diaper, hunger, fatigue or being too hot. However, if these are not the issues, your baby could be suffering from gas, colic or reflux. Switching to the right baby formula or modifying your own diet if breastfeeding can fix all these issues. If you’re formula feeding, try switching your baby’s formula to a “sensitive” or “gentle” type formula. These formulas have less lactose and can help to reduce gas and colic. Remember: the Food and Drug Administration (FDA) strictly regulates infant formula to keep all babies safe. The Mission Viejo Animal Services Center on Tuesday, May 16 will host its next low-cost pet vaccination clinic for Mission Viejo, Laguna Niguel, Aliso Viejo, Rancho Santa Margarita and Laguna Hills residents. The good news is that vaccines can help protect children from some of these diseases. As National Infant Immunization Week (NIIW) approaches, it is timely to remember the role that vaccinations can play in helping to prevent certain diseases among infants. According to the Centers for Disease Control and Prevention (CDC), it is estimated that routine vaccination of the nearly 4 million babies born in the US each year may help to prevent about 20 million cases of diseases that they could develop over their lifetime. In fact, over time, successful vaccination campaigns have contributed to the near elimination or elimination of some diseases in the U.S., like polio. Vaccination is considered to be one of the greatest public health achievements since 1900. NIIW, which is held April 22 - 29 this year, highlights the importance of helping to protect infants from diseases for which there are vaccines and celebrates the achievements of vaccination programs in helping to promote healthy communities. “Today vaccines can help to protect Page 14

Timothy Mangan, Appointed to Newly Created Position a s W r i t e r - i n - R e s i d e n c e w i t h Pa c i f i c S y m p h o n y Pacific Symphony announced the appointment of Timothy Mangan, former classical music critic and founder of the blog ClassicalLife. net (created in 2006 to cover Pacific Symphony’s European tour), to the newly created position of writer-inresidence. Mangan is an awardwinning nationally renowned journalist who has an established reputation as a cultural thought leader and writes about music with deep knowledge and passion. Symphony President John Forsyte says, “As writer-in-residence, Tim Mangan will be a collaborative partner in engaging current and new cultureseekers in innovative ways. He is well respected on the Southern California cultural scene and, in fact, on the national scene as well. Spring Vegetable and Chevre Tart Recipe courtesy of Courtney O’Dell of Sweet C’s Designs 1 package (2 sheets) puff pastry 1 cup chevre, divided 1 large beefsteak tomato, thinly sliced 8 ounces thin green beans 2 beets, thinly sliced 4 mini zucchinis, thinly sliced
1 egg white, beaten until slightly foamy Heat oven to 350 F. On well-greased baking sheet, arrange one puff pastry sheet. Crumble chevre across pastry. Lay tomato slices then green beans, zucchini and beets over chevre, leaving a 1-inch border around all edges. Crumble second half of chevre on top. Lightly wet edges of pastry. Slice four 1-inch strips of second sheet of pastry and lay over edges of bottom sheet. (Optional: create basketweave pattern with remaining pastry dough). Brush pastry with egg white and bake until pastry is deep golden brown, about 35 minutes. Serve immediately. Pinot Noir Rosemary Butter Recipe courtesy of Erin Kennedy of My Thirty Spot Blog 1 cup salted homemade whipped butter (recipe below) 3/4 cup Cambria Benchbreak Pinot Noir 1 tablespoon fresh rosemary Fill shallow saucepan with wine and simmer until consistency becomes syrupy (reducing to about 1/8 cup). Let syrup cool completely. Add syrup and rosemary to whipped butter and mix. Serve chilled. Homemade Whipped Butter
1/2 quart heavy cream 1/2 teaspoon salt (up to 3/4 teaspoon, to taste) In food processor, mix butter until cream turns to consistency of cottage cheese and starts to separate from buttermilk, about 3-5 minutes of constant mixing. Strain butter from buttermilk. Use wooden spoon to knead butter in water (just like dough) to remove all remaining buttermilk. Drain and repeat until water is clear. Remaining whipped butter is ready to serve or for adding flavoring ingredients.

“J a m e s B o n d ” Th e m e d C A S A Celebration Gala Raises over 1 Million Dana Chou, with Susan Leibel and Michelle Fisher Photos by: John Watkins Court Appointed Special Advocates (CASA) of Orange County, held their annual Celebration of Children: Black & White Ball at The Island Hotel in Newport Beach with 370 guests who together raised a net of $1,049,000. This serves as the third year in a row that CASA has netted over 1 million dollars at this signature fundraiser. The amazingly beautiful and elegant evening was co-chaired by three supportive couples to CASA: Dana and Tom Chou of Irvine, Michelle and David Fisher of Laguna Beach and Susan and Dennis Leibel of Irvine. The evening festivities began with a 007-themed cocktail reception featuring a silent auction with 97 appealing items and casino games that guests were able to win tickets for an opportunity to win a $10,000 and $5,000 gift certificate to Lugano Diamonds. KTLA 5 Morning News’ meteorologist and sportscaster, Henry DiCarlo, served as Master of Ceremonies and kicked off the energetic program for the evening. Longtime CASA supporters, Lourdes and Ted Nark and Wendy and Larry Tenebaum received CASA’s highest given award, “Children’s Champion”, for their many years of personal dedication to the agency. Patty Juarez, National Diverse Segments Director at Wells Fargo (and CASA Board Member) accepted the honor for “Outstanding Corporation” on behalf of Wells Fargo for their commitment to ensuring growth and success for children in foster care and helping to make our community a better place for everyone. Laguna Beach resident, Andrea Schoembs, was honored as “Advocate of the Year” for her astounding work as a CASA volunteer. Andrea shared a moving speech with the audience detailing the mental health problems that her nine-year-old CASA child faces (PTSD, ADHD, Depression, and Mood Disorder) with a balance of expressing that the child “is awesome, bright, curious, and funny and honestly one of the bravest people I know”. Auctioneer Rick Werner revved up the crowd for the annual Fund the Mission which hauled in over $500,000 with donations from the guests ranging from $100,000 to $500. The live auction included a Dream Vacation Home Experience at the Villa Verai in Phuket, Thailand, that fetched a $35,000 donation and Pink Sapphire Earring’s from Lugano Diamonds that were valued at $24,800. Following the successful program portion of the Gala, the reception area was turned into an after party featuring a DJ, dancefloor, photo booth and snacks for the guests. Court Appointed Special Advocates of Orange County is a privatelyfunded non-profit organization that serves severely abused, neglected and abandoned children through the recruitment, training and continued support of volunteers who advocate and mentor these children, representing their best interest in the courtroom and other settings. Founded in 1985, with major support from the Junior League of Orange County, they serve annually approximately 750 of the children who move through the court system as a direct cause of abuse and neglect. They are able to serve these children through the generous support of those who donate to CASA as well as the immeasurable compassion and commitment of CASA advocates. PA C I F I C S YMP H ONY W EL C OMEs K EY B OARD W ONDER ORLI SHAHAM FOR MOZART’S PIANO CONCERTO NO. 17 While many have been enchanted by the captivating talents of Orli Shaham, pianist and curator for Pacific Symphony’s cherished Café Ludwig chamber series performed in the intimate Samueli Theater—the upcoming Classical series concert offers a chance to hear her virtuosity in the center of the acoustical wonder of the Renée and Henry Segerstrom Concert Hall. Shaham, a “first-rate Mozartean” according to the Chicago Tribune, joins the full orchestra to perform the composer’s sunny Piano Concerto No. 17, with the famous third movement theme inspired by Mozart’s melodic pet starling. Opening the program is Ravel’s “Alborada del gracioso,” incorporating mesmerizing Spanish musical themes. And to conclude the evening is Strauss’ tone poem “Don Quixote,” inspired by the Cervantes novel, with the solo cello—the Symphony’s own Timothy Landauer—starring as the “ingenious gentleman,” Don Quixote de la Mancha. The experience is enhanced by image magnification on the big screens throughout the performance for a closer look at the soloists, Music Director Carl St.Clair and the musicians of Pacific Symphony. Entitled “Mozart & Don Quixote,” the concert takes place Thursday through Saturday, May 18-20, at 8 p.m., in the Renée and Henry Segerstrom Concert Hall. The concert’s centerpiece is one of Mozart’s many piano concertos, his 17th, which displays a breathof-fresh-air charm expressed in the opening theme of the work’s first movement and in the elegant passagework heard from the piano. However simple the theme may seem at first, it leads to a flourish of intricate finger work that builds toward a big cadence and obligatory trill, and also contains a short phase that is dark and romantic, with daring arpeggios in the piano against slower chord progressions in the winds and strings. It is music of technical genius, but also, in Mozart’s own words, “written in such a way that the less learned cannot fail to be pleased, though without knowing why.” Oh, and it was in some part, thanks to a little bird. In May 1784, Mozart bought a pet starling that learned to whistle the first five measures of the composer’s 17th Piano Concerto finale. There is an argument as to which came
first—the bird or the tune. But since starlings are virtuoso mimics, have an uncanny ear for musical patterns, and Mozart indicated his concerto was finished (having entered it in his catalog) before he bought the bird— it’s likely that it was the composer who taught the tune to the starling, and not the other way around! One way or another, Mozart and his little feathered friend landed on the 17note theme for this concerto’s finale with only minor incidents—the bird always sang one note sharp and held another too long. (When the bird died in 1787, Mozart administered last rites, read a poem he had written in its honor, and buried it with great solemnity in his garden.) Mozart’s 17th is one of three piano concertos composed in the same month in spring 1784. It was written for one of his most gifted students, Barbara Ployer, who paid him generously for it. As noted, it is music of enormous complexity, yet it manages to be beautifully transparent and a little something else... The main key, G major, was one in which Mozart set some of his most lyrical and innocent comedy. The graceful first movement not only opens with an abundance of inventive melodies but also flourishes of Mozart’s lighter, more humorous side. Joining Mozart’s concerto on the Symphony’s program is a little Spanish jewel by Ravel with its own sparkle of humor. The title of the piece is “Alborada del gracioso,” which is most often translated as “Morning Song of the Jester.” But at the time it was written, it caused some confusion as to what it really meant. Literally, an alborada is a song sung at dawn, and a gracioso is a funny or amusing person. In 1907, asked about the meaning of the title, Ravel responded: “I understand your bafflement over how to translate the title ‘Alborada del gracioso.’ That is precisely why I decided not to translate it. The fact is that the gracioso of Spanish comedy is a rather special character and one, which, so far as I know, is not found in any other theatrical tradition. We do have an equivalent, though, in the French theater: Beaumarchais’ ‘Figaro.’ But he’s more philosophical, less well-meaning than his Spanish ancestor.” Ravel’s “Morning Song” started out as a piano piece, the fourth number in the composer’s “Miroirs.” The set bridges the composer’s years as an up-and-comer and those he lived after gaining celebrity. He wrote the “Alborada” in 1905, and orchestrated
Orli Shaham, pianist the movement in 1918; it premiered the following year in Paris. Pizzicato violins and harps set a Spanish scene for this petite beauty, eight minutes in length. A long bassoon solo begins the jester’s earnest but awkward serenade, with rhythmic punctuations framed by a seguidilla (a Spanish dance traditionally accompanied by guitar). As for “Don Quixote,” Strauss admitted that his imagination was often inspired by stories. Program music—instrumental music that makes specific references to episodes in a literary text—was popular but quite controversial in the late-19th century. The Symphony’s concert ends with this magnificent tone poem based on the novel “Don Quixote” by Miguel de Cervantes, composed in Munich in 1897. Subtitled “Fantastic Variations for Large Orchestra on a Theme of Knightly Character“—“Don Quixote” features the solo cello as the main character, Quixote, and the solo viola as his sidekick Sancho Panza. It consists of an introduction, 10 variations and a finale. Each variation is based on a chapter from Cervante’s novel, although not in the order they were originally written.
Strauss’ “Don Quixote” was composed in a theme and variations form. It begins with the hero, who in an effort to escape the harsh realities of life has lost himself (and his mind) by reading too many novels. “Finally, from so little sleeping and so much reading, his brain dried up and he went completely out of his mind,” wrote Cervantes. The errant knight is a tremendously kind and sincere soul and also hyperconscientious—his heart bleeds for beggars, mothers in mourning, the underdogs of the world and all those who go unloved. He also yearns to amend for his own misdeeds. Quixote follows his dreams, determined to create a vision of the world as a better place. Now imagine all this grand and dramatic story set to music. In 1897, Strauss said of “Don Quixote”: “Too much sanity may be madness. Spinach and bacon-stuffed mushrooms Ingredients 1 package-(16 ounces) baby portabella mushrooms (about 20 baby bellas) 1 1/4 cups plain nonfat Greek yogurt4 tablespoons-turkey bacon, cooked and crumbled (about four slices) 4 tablespoons-finely shredded 2 percent milk Colby Jack cheese 1 package-Simply Organic Zesty Spinach Dip Mix 1 1/2 teaspoons-fine bread crumbs Directions Preheat oven to 350 degrees and spray a large glass baking dish with nonstick cooking spray. Remove stems and scrape out gills of mushrooms with a spoon, being careful not to puncture caps of mushrooms. In a large bowl, combine yogurt,

bacon, cheese and dip mix until evenly mixed. Stuff mushroom caps with yogurt mixture, and sprinkle with bread crumbs. Entrees and sides Think of all the dishes that call for sour cream, milk, heavy cream or regular plain yogurt. From mashed potatoes and chicken salad to soups and marinades for meats, Greek yogurt can replace those less healthful ingredients, allowing you to reap its health benefits while making the flavor subtle (or even undetectable) and enjoyable. And you don’t need to confine yourself to Greek recipes; Greek yogurt works regardless of a dish’s ethnic origins. Here’s a recipe from Simply Organic in which Greek yogurt cuts the fat in a traditional Hungarian classic: Smoky chicken paprikash Ingredients 2 -8-ounce chicken breasts, skinless and boneless 2 tablespoons-ground flax seed 1 tablespoon-all-purpose flour 1/4 teaspoon-smoked salt 1/8 teaspoon-cayenne 1/4 teaspoon-finely ground black pepper 1 tablespoon-smoked paprika, divided 1/2 teaspoon-garlic granules 1/2 -white onion, chopped 1/2 -red bell pepper, chopped 1/2 -yellow bell pepper, chopped 1/2 cup-sliced mushrooms 1 -tomato, chopped 1/2 cup-chicken broth (made with chicken flavored broth powder) 3/4 cup-non-fat plain Greek yogurt 1/2 teaspoon-lemon juice 1/4 teaspoon-cornstarch
Directions Preheat oven to 375 degrees and spray an 11-by-7-inch baking dish with non-stick spray. Combine ground flax seed, flour, salt, cayenne, black pepper, 1 teaspoon smoked paprika and garlic granules in a small bowl. Dredge chicken pieces in dry mixture and place in non-stick pan. Surround chicken breasts with onion, red bell pepper, yellow bell pepper, mushrooms and tomato. Pour chicken broth over chicken and vegetables, then evenly sprinkle vegetables and chicken with remaining smoked paprika. Cover baking dish with aluminum foil and bake for about 30 to 35 minutes or until done. Chicken’s internal temperature should be at least 165 degrees when done. Combine Greek yogurt and lemon juice in a saucepan. In a small bowl, whisk together cornstarch and 1/2 cup liquid mixture from baking dish. Stir into yogurt and lemon juice and cook, stirring constantly, until slightly thickened, about five minutes. Pour yogurt sauce over chicken and vegetables. Desserts Cakes, bread puddings, pies - even cookies - practically any holiday dessert can work with Greek yogurt as an ingredient. Vegetarians and vegans have been replacing eggs with regular yogurt for years, and Greek yogurt is an even healthier substitution. Generally, if your recipe calls for a cup of creme fraiche, sour cream, mayonnaise or cream cheese, you can substitute a cup of Greek yogurt. Be A ‘Roll’ Model: Orange County Sheriff’s Department encourages safety, awareness for National Bicycle Safety Month The Orange County Sheriff’s Department and the California Office of Traffic Safety (OTS) call upon bicycle riders and motorists to be cautious during May’s National Bicycle Safety Month, and every other month during the year. For riders and drivers, being a “Roll Model” means actively decreasing the risks of traffic crashes, preventable injuries and deaths. The National Highway Traffic Safety Administration (NHTSA) reports that 818 bicyclists died and more than 45,000 were injured in crashes in 2015, with deaths rising more than 12 percent from 2014. Over a 10-year period from 2006 to 2015, the average age of cyclists killed in motor vehicle crashes increased from 41 to 45. Alcohol involvement – either for the motor vehicle operator or for the cyclist – was reported in 37 percent of all fatal cyclist crashes in 2015. “Spring has arrived after a wet winter season, which makes it a great time for family and friends to strap on a helmet, hop on a bike and see just how fun and welcoming our community’s streets and bike paths are,” said OCSD Traffic Sgt. Brian Sims. “Whether a person rides or
drives, everyone should know about bicycle safety now more than ever.” California has the Move Over Law requiring motorist to share the road and pass bike riders with at least a 3- foot cushion. Support community efforts in your community, be involved in bicycle safety, whether while riding a bike, or driving a vehicle. Officers will focus on violations observed by both motorist and cyclist.
