Cinco de Maddox Rancho Santa Margarita’s Arroyo Vista School gave new meaning to the 5th of May
Maddox gives this event two thumbs up for success.
Instead of celebrating Cinco de Mayo, their student council turned the day into “Cinco de Maddox.” Maddox is a first grader at Arroyo Vista with a condition called NF, or Neurofibromatosis. NF causes tumors to grow throughout his body, which can lead to many complications and debilitating pain. There is no

cure or treatment, so his family and community raise awareness and funding for research with the Children’s Tumor Foundation (CTF.) May is NF Awareness, so Team Maddox has been working extra hard this month to highlight NF. Cinco de Maddox was a oneday change drive for Arroyo Vista’s students. They were asked to
bring “cinco” (five) coins to donate. Students dressed in NF colors, blue and green, and came to school with bags of coins and envelopes with dollars. Student council members, along with Maddox’s former teacher, Ms. Baron, collected these donations. Friends of Maddox generously donated their time to count the money. The Cinco de Maddox change
drive collected $1449.00! Donations are still rolling in, and Maddox couldn’t be happier! He is so happy to donate this money to the Children’s Tumor Foundation. Memorial Day Table Setting Ideas Memorial Day is great time to celebrate and have fun! We often gather for and plan parties, lunches, events or dinners on this wonderful occasion. It is nice to present our food and drinks on a wonderfully decorated table. If you are hosting such an event, here are some great tips for decorating your table on Memorial Day! My first and favorite choice is the red, white and blue table setting. This is a pretty and colorful way to show your Memorial Day spirit! This table setting idea has many variations that you can choose from! You can use a red table cloth, blue table cloth or white table cloth for this table setting. My favorite is the red table cloth. It does not show spills and stands out. I like to use white plates. If it is an informal gathering or party, white paper plates can be used, though I recommend the plastic plates or sturdiest plates you can find. This will make your guests more comfortable and they will be less likely to spill their plate. Use white napkins. This can be paper napkins or cloth ones. Serve the beverages in blue cups. They can be blue plastic cups or blue glasses. The effect of the white plates, white napkins and blue cups look very nice on a red tablecloth. Add a beautiful basket or vase of red, white and blue carnations in the center of the table. I like to use silk flowers. If you like, you can use real red and white carnations. For an added touch, place small flags in the vase or basket, among the flowers! If you decide to use a blue table cloth, use red or white plates, white napkins and blue or red plastic cups or clear cups or clear glasses. If you use a white table cloth, red plates, white napkins and blue cups or glasses look wonderful. For silverware, any type can go with this idea,
even white plastic. This Memorial Day table setting is easy to set up and very affordable. It looks great! For a Spring like look that is festive and very pretty, use a flowered table cloth. For plates, the color choice is white, napkins can be white and the beverages can be served in clear plastic cups or clear glasses. Use silverware or white plastic ware. A large vase of all different types and colors of flowers look great in the center of this table setting. You can also just use white carnations in a basket. This table setting is colorful, attractive and very easy to do. It is very nice and makes a great Memorial Day table setting, if you do not wish to use the red, white and blue color theme. For an outdoor gathering, a red and white checkered table cloth looks very festive with white plates, white napkins, white plastic ware and red or blue cups or glasses. My preference is using red cups or glasses. I like keeping to the red and white theme on
this idea. It looks fancy, yet simple. I add a basket or vase of red and white carnations to the center of the table and it gives the table setting a fun and fancy look. This Memorial Day table setting is sure to please! Depending on how much money you want to spend, you can find many Memorial Day themed table cloths to buy. Some are flag themed and some are red, white and blue checkers, stripes or a mix. If you use these, use white napkins, white plates, white plastic ware or silverware, and blue cups or blue glasses. Place a basket or vase of white carnations in the center of the table. You can also place small flags in the flower arrangement. This table setting idea is creative and looks great! These Memorial Day table setting ideas are sure to make your holiday table look special. They are very easy to do and cost very little. Your table will look beautiful, festive and fun!

Why Do We Celebrate Memorial Day? The History of Memorial Day
by Amanda Austin Memorial Day is more than just a weekend off from work, an excuse to throw a picnic, or a reason to take a weekend trip, it is a national holiday. The history behind Memorial Day seems to have gotten lost in the shuffle throughout the years. With May 27th growing closer, take time to familiarize yourself with the history of Memorial Day, and why we celebrate this holiday. Memorial Day, originally known as “Decoration Day,” was established on May 5 1868 by General John Logan, the national commander of the Grand Army of the Republic. The first observation of Memorial Day took place on May 30th 1868, by decorating the graves of fallen Union and Confederate soldiers in Arlington National Cemetery. Here is an excerpt from General Logan’s “General Orders No. 11,” officially declaring “Decoration Day.” “The 30th day of May, 1868, is designated for the purpose of strewing with flowers or otherwise decorating the graves of comrades who died in defense of their country during the late rebellion, and whose bodies now lie in almost every city, village, and hamlet church-yard in the land. In this observance no form of ceremony is prescribed, but posts and comrades will in their own way arrange such fitting services and testimonials of re-
spect as circumstances may permit.” New York was the first state to officially recognize Memorial Day as a Holiday in 1873, and all of the Northern states had followed suit by 1890. The Southern states didn’t recognize Memorial Day until after World War 1 when it was changed from recognizing soldiers who lost their lives fighting in the Civil War, to soldiers who lost their lives fighting in any war America participated in. The reason that students and employees are given the day off on
Memorial Day, is so they can properly observe the holiday. When the holiday was originally established nationally it was intended to give patrons the opportunity to visit the graves of our fallen soldiers, attend memorials, fly the American flag at half staff until noon, and acknowledge the “National Moment of Remembrance” at 3:00 PM. The “National Moment of Remembrance” is when everyone has a moment of silence and if you are in a public place “Taps” is played. So, this year on Memorial weekend
take a moment to remember why you don’t have to go to work or school. If you are taking a trip with your family, make your rest stop at a memorial or Veteran’s cemetery and observe the men who have fought for our country. If you are having a get together at your home, or attend one at someone else’s home, give a little speech at 3:00 and call for a moment of silence to remind your friends and family why you are all able to get together that weekend.

“Carly and the CHOCO Factory” - CHOC Follies Raises Nearly $700,000 for CHOC Children’s Photos by: Carla Rhea, Peggy O’Donnell and Travis Compton A mysterious and magical chocolate factory set the stage for the CHOC Follies XIX’s original production of the “Carly and the CHOCO Factory, An Orange County Musical of Sweethearts, Swindlers and Swashbucklers” as more than 2400 people enjoyed the three days of performances while raising nearly $700,000 for CHOC Children’s. With a dream and an idea, Gloria Zigner founded the fundraiser 19 years ago and looking at the numbers, more than 1500 cast members (me being one of them!) have entertained folks with 75 performances which has netted over $8 million for CHOC. Not bad for Orange County’s professional and business folks who have some theater in them! This year’s productions showcased the talents of 88 of Orange County’s prominent business and civic leaders who took to the stage while the audience members cheered them on. Some actually jumped up from their seats and danced during several musical numbers in the production. Carly and the Choco Factory!” showed a loving spoof of the classic “Charlie and the Chocolate Factory”. Featuring a sweet, single Orange County girl, Carly (played by Samantha Meyers), lives with her large family and dreams of visiting the magical factory where CHOCO, the mascot of CHOC Children’s Hospital resides. In the CHOCO factory on Catalina Island, dreams turn into realities, if only for the time you visit. The factory is run by none other than Millie Zonka (played by Diane Marshall), who secretly guards the magic that transforms the dreams. For the first time ever, seven lucky winners will receive a special ticket to visit the factory! Through song and dance, led by the factory’s “Mova Groovas,” you journey through this special place with Carly and a motley mixture of other winners. But look out for complications, for a band of crazy pirates blown in on the winds of El Nino arrive to bring zany complications to the proceedings! “I want to thank our dedicated and loyal sponsors for supporting the CHOC Follies for so many years,” said Executive Producer Gloria Zigner. “and I am deeply grateful for the amazing contributions of our co-producer, Lois Augustine; our co-chairs, Sandy Segerstrom Daniels, Dale Skiles and SueAnn Cross; and our wonderful artistic team of all 19 years, director John Vaughan; music director Doug Austin and choreographer Lee Martino. And, I certainly can’t thank enough our cast of thousands of talented Orange County community members, who have performed over the years.” Local dignitaries, major donors and other VIPs were invited to the cast party featuring a food buffet provided by the students of the culinary school at Orange Coast College. Buffet stations included: A variety of sushi rolls: ahi tuna, vegetarian and California with wasabi, pickled ginger and soy sauce; Selection of International and domestic cheeses with assorted nuts and berries; Petite chopped salad: shaved Brussel sprout salad with hazelnuts; Kale salad with pomegranate and butternut squash with blueberry vinaigrette; Variety of Tortilla rolls including turkey cranberry cream cheese, Boursin and sundried tomato, roast beef and horseradish cream cheese; Mini shepherds pies with chocolate stout braised lamb; Crudite display; Desert tables including chocolate fountain with selection of dipping fruits, pretzels, rice crispy treats and a selection of dessert bites; and a delicious S’mores station. For the third consecutive year, proceeds of the CHOC Follies will support the hospital’s music therapy program, which applies the clinical and evidencebased use of musical interventions to help patients reach various goals. Named one of the best children’s hospitals by U.S. News and World Report (2015-2016) and a 2015 Leapfrog Top Hospital for the highest quality of care, CHOC Children’s is exclusively committed to the health and well-being of children through clinical expertise, advocacy, outreach and research that brings advanced treatment to pediatric patients. The Philharmonic Society of Orange County is proud to present its 24TH Philharmonic House of Design in the oceanfront community of The Strand at Headlands in Dana Point. The Strand at Headlands epitomizes luxurious beachfront living at its finest, and the House features stunning panoramic views of the Pacific from nearly every room. Fifteen acclaimed interior designers from across Southern California will transform the 8,656 sq. ft. home into a Coastal Mediterranean masterpiece. Proceeds benefit the Philharmonic Society’s nationally recognized Youth Music Education Programs. The roster of carefully selected interior designers from Los Angeles and Orange County includes Barbara McLane (By Design Kitchens), Deirdre Eagles (Deirdre Eagles Interior Design), Elisabeth D’Angelo (Zerae Design Inc.), Frank Pitman (Frank Pitman Designs, Inc), Gary Finley (Gary Finley Interiors), Students from IDI (Interior Designers Institute), John Benecke (John Wallace Benecke Interiors), Judy Ziccardi (Lighting Innovation/Metamorphosis Designs), Julia Caro (Steve Alt Design Group), Michele Prata (Prata Studio Interiors), Nancy Del Santo (ask Decor), Nazgol

Successful Launch for the Blenheim EquiSports Ch i p I n F o r Ch a r i t y P r o g r a m

Along with congratulating all the award winners, Blenheim was pleased to launch the new Chip In For Charity program, where every blue ribbon class winner received a “chip” that could be used to donate to one of four charities. Truly excited for the opportunity to give back to worthy causes, the horse show community responded with exuberance. Uryadi’s Village, an organization that works to support vulnerable children and their families, is one of the program’s recipients. “What an amazing opportunity the Chip in For Charity program offers
us,” explained Jennifer Crooks, Executive Director of Uryadi’s Village. “We not only raised funds, we raised awareness! People whom I may never have been in contact with generously donated.” Crooks was impressed with the support from show management as well. “Blenheim also invited us to do some innovative fundraising. In the grand prix, we had ‘Jump for the Village’ - every time a rider cleared the Uryadi’s Village jump, people could offer a donation amount. We also had a silent auction,” she explained. “Overall, we raised almost $20,000. To top it off, a donor sponsored a hut in the village for an additional $20,000. We’re looking forward to the rest of the show season!”

Top Memorial Day Recipes Start the Summer Right with these Great Recipes By Derrick Riches It’s called the unofficial start of summer and this Memorial Day gives you the opportunity to break out the grill or smoker to start the summer right. These recipes were the most popular for Memorial Day last year and they are a great start to your summer barbecue season.
Kansas City Rib Rub In Kansas City they know BBQ ribs. This is the barbecue rub recipe for traditional Kansas City-Style Ribs. Finish these ribs off with a good barbecue sauce and you’ll have a fantastic meal. Prep Time: 10 minutes Total Time: 10 minutes Yield: Makes a little more than 1 cup Ingredients: 1/2 cup brown sugar 1/4 cup paprika 1 tablespoon black pepper 1 tablespoon salt 1 tablespoon chili powder 1 tablespoon garlic powder 1 tablespoon onion powder 1 teaspoon cayenne Preparation: Combine all ingredients together and transfer to an air tight container. Maybe stored up to six months.
Fresh Corn on the Cob This is the general method for grilling corn on the cob. Remember not to remove the husks, they will hold in the moisture and keep the corn from burning. You might want to pull out as much silk as you can before hand Prep Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes Ingredients: corn on the cob, husks intact Page 24
butter herbs Preparation: DO NOT REMOVE HUSKS. Do remove the silk. Soak in water for at least 15 to 20 minutes. Remove from water and pull down husks carefully -- DO NOT REMOVE -- and coat with herbal butter (made from adding your favorite fresh herbs to softened butter). Put the husks back up covering the corn and tie with a thin piece of husk at the top. Place on grill for about 15 minutes, turning.
BBQ Beef Ribs This is an easy way to prepare delicious, sticky beef ribs on your grill. Remember that the secret to indirect grilling is to make sure that the food doesn’t get any direct heat at all. You will need to rotate the ribs occasionally to evenly cook them. Prep Time: 20 minutes Cook Time: 3 hours, 30 minutes Total Time: 3 hours, 50 minutes Yield: Serves 4 Ingredients: 4 to 5 pounds beef back ribs (about 10 ribs) 1/2 cup ketchup 1/2 cup honey 1 4 ounce can green chilies, diced 1 large onion, chopped 4 cloves garlic, minced 1 teaspoon cayenne 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon dry mustard Preparation: Trim excess fat from beef ribs. Combine salt, pepper and cayenne. Rub over the ribs. Preheat grill and prepare for indirect grilling with a drip pan. Place ribs on grill over drip pan and close the lid. Cook for about 3 to 3 1/2 hours over a medium low, indirect heat (try to keep the temperature under 265 degrees F.). To prepare sauce combine onion, honey, ketchup, chili peppers, garlic and mustard in a sauce pan. Heat over a low temperature, stirring until even and warm. When the ribs are nearly finished begin brushing the sauce on them until you get a thick

coating. B i g D a dd y ’ s C a r o l i n a S t y l e Barbecue Sauce Big Daddy says, “This is Carolina style barbecue sauce.” This means that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid and southwest. The combination of sweet and tangy flavors brings out the absolute best in grilled or smoked pork or chicken. Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Yield: Makes about 2 1/4 cups Ingredients: 1 cup prepared yellow mustard 1/2 cup sugar 1/4 cup light brown sugar 3/4 cup cider vinegar 1/4 cup water 2 tablespoons chili powder 1 teaspoon black pepper 1 teaspoon white pepper 1/4 teaspoon cayenne 1/2 teaspoon soy sauce 2 tablespoons butter 1 tablespoon liquid smoke (hickory flavoring) Preparation: Mix all except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes. Grilled Sweet Potatoes It doesn’t take a lot to make delicious sweet potatoes. These grilled sweet potato slices get a quick blanch in hot water and then hit the grill to cook up hot and fast. Best part is that most of the preparation can be done in advance. Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes Yield: Serves 4 to 6 Ingredients: 4 medium sweet potatoes 1/2 cup melted butter 3 tablespoons brown sugar 1 teaspoon ground cinnamon Preparation: Cup sweet potatoes into 3/4 inch slices. Bring 3 quarts of water to a boil and add potatoes. Boil until potatoes are just starting to soften. Cool and peal. Combine butter, brown sugar and cinnamon, brush over potatoes. Place Potato slices on preheated grill over a medium low heat and cook
for about 10 to 15 minutes, turning once. When the sweet potatoes as soft through the middle and browned on the surface they are ready. A Carolina BBQ Rub Chuck Ozburn sent me this fantastic, classic-style Carolina barbecue rub recipe. Try this rub next time you want to make a traditional Carolina Pulled Pork. Prep Time: 10 minutes Total Time: 10 minutes Yield: Makes about 1 cup Ingredients: 2 tablespoons salt 2 tablespoons sugar 2 tablespoons brown sugar 2 tablespoons ground cumin 2 tablespoons chili powder 2 tablespoons freshly ground black pepper 1 tablespoon cayenne pepper 1/4 cup paprika Preparation: Combine all ingredients in a small bowl and mix well; use as a dry rub
on beef, chicken, lamb or pork. Grilled Tri-Tip Roast This simple beef tri-tip roast is perfect for many uses. Grill it up, low and slow, and serve it as it is, or cut it up for fajitas, tacos, enchiladas or anything else that calls for a flavorful meat. Prep Time: 15 minutes Cook Time: 1 hour Total Time: 1 hour, 15 minutes Yield: Serves 4 Ingredients: 2 pounds tri-tip roast 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon ground black pepper 1 teaspoon salt Preparation: Lightly oil the cooking grate on your grill. Preheat grill and prepare for indirect grilling. Combine garlic powder, onion powder, pepper and salt. Rub it over the surface of the tritip roast. Place tri-tip on grill, fat side up. You can place a drip pan under it to catch the drips which will make a great gravy later. With the grill on low cook for about 1 hours or until it reaches your desires doneness.
