The Kentucky Derby, presented by Woodford Reserve, is a top rank, Grade I stakes race for 3 year old Thoroughbred horses. The race distance is one and one-quarter miles long, and it is run on the dirt racetrack at Churchill Downs in Louisville, Kentucky. Colts and geldings in the race carry 126 pounds (57 kg), and fillies in the race carry 121 pounds (55 kg). 20 horses compete in the Kentucky Derby, which is a larger field size than most horse races; where on average 8 horses race against one another. The 20 horses racing in the Kentucky Derby must first travel along the Road to the Kentucky Derby, which is a series of 35 races taking place at tracks across the country and the world. Points are awarded to the top 4 horses that finish in each of those 35 races, and the 20 horses with the most points earn a spot in the starting gate in the Kentucky Derby race. The Kentucky Derby winning purse is $2 million. The Kentucky Derby takes place on the first Saturday in May every year, and typically draws a crowd of 155,000 people. It is the longest continually held sporting event in America, and it is one of the

Visitors this year may tour inspiring designer decor in the living room and dining rooms, bedrooms, his and her closets, office space, den, library and other spaces throughout the oceanfront mansion from May 8 to June 3, 2018 and appreciate the showcase presentations of fourteen of Southern California’s top interior designers. After touring the property, House of Design guests may enjoy a wine bar and light refreshments and browse through boutiques with unique home accessories, clothing and jewelry. Opportunity prizes are also part of the tour festivities. Free parking is available at the Strand Vista Park 34111 Selva Rd. Tom Petty’s Lake House!

It never occurred to Tom Petty that gathering a group of friends to play music wouldn’t make them big stars. After meeting Elvis at the age of 10 and later watching the Beatles, he knew he was meant to be a musician and approached it with laser focus. In the late 60s at age 17, Tom put his theory into practice gathering several buddies, took guitar lessons, added a few more instruments to the mix and was soon on his way to stardom. Nothing deterred him or slowed him down, even the disapproval of his father who was disappointed that his son would take the artistic route rather than what he considered a more masculine sports-oriented road into adulthood. Tom’s first band, the Epics, started out in his hometown Gainesville, Florida playing locally between odd jobs to keep them financially afloat until they hit the big time, which he knew in his heart was just a matter of time. The Epics evolved into Mudcrutch, a popular band at the Gainesville University of Florida area bars, but failed to get outside attention. His next band, the Heartbreakers, quickly turned things around making it to the top in

1976 with their hit song Breakdown. Tom and the Heartbreakers never looked back producing classics such as American Girl, Free Falling, and I Won’t Back Down. A career that lasted over 45 years. Music poured out of Tom Petty like a fast moving river producing hit after hit, many used for movie theme songs and sound tracks. Just as he imagined as a young boy, Tom and the Heartbreakers became one of the most popular American bands in history, garnering virtually every important award in the music industry and a star on the Hollywood Walk of Fame. Petty died in October at age 66 and now his much-loved Lake Sherwood getaway near Malibu and nine miles to the Pacific Ocean is for sale. Built in 1931 with walls of local fieldstone, Petty’s retreat has mountain and water views across the natural lake from almost every room and 125feet of shorefront. Deceptively large at 5,300 square feet, the house has three bedrooms and three baths and underwent an expansion in 2004. If you were anywhere near Mission Viejo on Saturday afternoon and were puzzled by the wonderful aroma of simmering onions, chopped garlic and hot chilies filling the air, the delightful fragrance was wafting from the backyard of the Mission Viejo, Saddleback Valley Elks Lodge. Nine cooking teams competed for medals and bragging rights in the Lodge’s annual Chili Cook-Off. The well attended event for members and guests was again a big success and raised funds for Elks Charities. Teams competing this year were: Sven Akesson and his team cooking Vietnam Vets Jungle Chili, Dave and Kim Perry cooking Dutch Oven Chili, Dennis Boelts, John Feitz, and Kevin Lindley with their Hi-Octane, PER Dave McLeod and Exalted Ruler Mike Klinger cooking Two Amigos, John Mathers, cooking Fabulous Shrimp Chili, Roger Dietterle and his Albino Chili, Gary Schmitt cooking Buffalo Hot Chili, Dennis Lumley cooking Molly’s Magnificent Chili, and Tom Hass, Steve & Barbara Darke, and Chuck & Jean Chapman cooking Run-A-Ways Sole Cleaner Chili. A sea of white canopies provided the shade on the Elks patio, and the warm sunny afternoon provided the perfect venue for the event. Members and guests filled picnic tables enjoying cooked-to-order burgers & hot dogs along with their favorite beverage. They tasted chili samples and enjoyed the music of DJ Roy Southerland. Then the time came for the arrival of the big red fire truck from Mission Viejo Station Engine 24. Luckily on this Saturday afternoon, the usually busy Firefighters & Paramedics of Station 24 had just enough of a break between calls to make their annual stop at the Lodge to judge the waiting chili entries. Orange County Fire Authority Capt Rich Sandford,

Alex Swanson, and Paramedics Mike Curtis and Oscar Avila did this year’s honors. The Engine 24 chili experts tasted the nine entries along with plenty of ice water to put out the fires in their mouths between spoonfuls. Meanwhile, members and guests finished their samplings and cast their ballots for the People’s Choice Award. The moment of truth arrived and the firefighters were center stage as event Chairman Andy Costello announced the winners of the Bronze, Silver and Gold medals and the People’s Choice award. Exalted Ruler Mike Klinger presented the Sven Akesson & his team of Vietnam Vets Jungle Chili cookers Bronze medal to Tom Haas, Steve Darke and Chuck & Jean Chapman for their Run-A-Ways Sole Cleaner Chili. The Silver Medal went to Dave& Kim Perry for their Dutch Oven Chili, and the Gold Medal went to repeat winner Dave McLeod and ER Mike Klinger for their Two Amigos Chili. The People’s Choice award also went to Two Amigos Chili. Chairman Costello thanked all who participated on cooking teams and those who helped with the setup and cleanup. They included: Jack& Sandy Jacobs, PER Mike and Vicky Long, Temple Liebmann, Larry Colgan, Chuck & Jean Chapman, Past Exalted Ruler Dave McLeod & Exalted Ruler Mike Klinger, of Two Sven Akesson, PER Dave McLeod, Amigos Chili took home two awards - winners of both Gold Medal and ER Mike Klinger & Judy, Tom Haas, People’s Choice judging. Lodge Secretary Laura Lumley, Lodge Innerguard Steve Cagnacci& Barbara Coppola, Gail Patti, Mary Ann Costello, Ken Eilers, Harvey Ohman, and Pam Mackay. Lodge #2444 is celebrating 49 years of service to Saddleback Valley Communities. It is one of 8 lodges in the Orange Coast District of the Benevolent and Protective Order of Elks (BPOE) whose headquarters is in Chicago, Illinois. Traditions of the Annual Kentucky Derby Kentucky has been home to horse racing of one kind or another since the late 1700’s. When the Kentucky Derby first began in 1875, America had not yet discovered the automobile. Horse-and-buggy was the popular mode of transportation. Today, the Kentucky Derby is the longest running sporting event in America. Along the way, traditions developed that give the race its own unique flavor. Every year thousands of people attend the annual “run for the roses” held at Churchill Downs while millions of others sit glued to their television sets. Kentucky Derby Tradition #1: Fashionable Hats

To attend the Kentucky Derby, it is traditional for women to wear hats the more outlandish the better. This tradition is a throw-back to England’s Royal Ascot traditions as embodied

arrangement. It began in 1896 with an arrangement of pink and white roses being presented to the year’s winner. In 1904 the roses’ official color became red and current garland arrangement was adopted in 1932. In 1925, a columnist tagged the race “The Run for the Roses” and it has been referred to as such ever since. Kentucky Derby Tradition #4: Waiting for the Next Triple Crown Winner With the Kentucky Derby being the first of three races in the Triple Crown series, high hopes are on the winner of this race. Only 11 horses The Mint Julep has been the have succeeded in winning the Triple traditional beverage of the Kentucky Derby for nearly 100 years. A mixture of 2 cups water and 2 cups of sugar heated to boiling for 5 minutes. Add 6-8 sprigs of fresh mint and refrigerate, covered, overnight. Mix one tablespoon of the mint syrup with 2 shots of your favorite Kentucky bourbon and pour over crushed ice. Add a fresh mint leaf for garnish. Now you’re ready to watch the race. Kentucky Derby Tradition #3: The Garland of Roses Winning the Kentucky Derby entitles the winner to the now infamous floral by Audrey Hepburn in My Fair Lady. Wide-brimmed, gaudily adorned, the hats are a mainstay of the race. Kentucky Derby Tradition #2: The Mint Julep

Crown while 45 have won 2 out of the 3. Of those 45, a scant 21 actually won the first two races, the Kentucky Derby and the Preakness, making them viable contenders to go all the way only to lose the final race, the Belmont. Horseracing is full of time-honored traditions and the Kentucky Derby exemplifies the best of these. Child help charity event R a is e s O v e r $ 3 7 5 , 0 0 0 The Orange County Chapter of Childhelp hosted its 32nd Annual “For the Love of a Child” Fashion Show and Luncheon at the Fashion Island Hotel in Newport Beach with close to 400 attendees. The event Co-Chairs Linda Burns and Tami Smith anticipate raising over $375,000. Guests were treated to a full runway fashion show by South Coast Plaza which featured the latest fashion trends from Escada, Intermix, M Missoni, Maje, Max Mara, Saks Fifth Avenue, Sandro, Ted Baker London, Weeked Max Mara, Wolford, David Yurman, Bally and Diane von Furstenberg. At the end of the show, Kathryn Cenci of SCP was applauded and received a bouquet of flowers from one of the gentlemen models for her continued support of the Orange County Chapter of Childhelp. The décor was simple yet elegant. The centerpieces created by Devynn’s Garden were a golden vessel filled with a beautiful garden bloom of tulips, stock, hydrangeas and spider mums in various shades of lavender, purple and soft pink. They were truly stunning and one guest at each table had the opportunity to take it home. Every place setting had a box of Godiva Chocolates along with a beautiful program book which was filled with family photos and sentiments placed by Childhelp Members and Donors. The lunch began with an Arugula and Frisse Salad with Marcona Almonds, dried Tart Cherries and roasted Pears, shaved Manchego with Sherry Vinaigrette; Baked Salmon on Squash Risotto, deconstructed Ratatouille with a Lemon Buerre Blanc; alternating desserts of chocolate cake and chocolate cup with fresh berries and raspberry coulis topped with freshly whipped cream. It was a crowd pleaser! Orange County Chapter President, Julie Adams welcomed the National Board Members, attending Past Awardees and luncheon guests. Carol Packard and Dale San Filippo presented the Children’s Friend Award to Tilly Levine. Tilly spoke of her commitment to empowering teens through Tilly’s Life Center (TLC). Her dream is to see all teens across the nation benefit from life skills gained through TLC. She was truly honored to receive this award given to “a person or persons who have demonstrated their love, compassion and dedication to abused and neglected children.” Honorary Chair and National Board Member, Patti Edwards, thanked the incredible Honorary Committee “My heart aches knowing that there are children whose lives have been forever altered by violence, exploitation or neglect. I’m blessed to be part of a mission that not only gives these children the healing and hope they deserve, but also works to prevent abuse from taking place,” said Edwards The Inspirational Award was presented to Beverly Cohen, not only for being a humanitarian and philanthropist, but also her unwavering support of the less fortunate and the most vulnerable. She has given her time, energy and resources for over 30 years to benefit Childhelp’s treatment programs and facilities. Beverly’s memorable acceptance speech was mixed with humor and hope for the underprivileged children in our care. Her fervent belief that everyone can do more and give more to ensure that all children are loved and cared for, was clear as she pleaded to the audience to “do what you can to help.” The lucky winners for the fantastic Opportunity Prizes were announced while the guests were finishing lunch. Kentucky Derby 2018 | Seeing celebrities is an old Derby Day tradition One of the first celebrity sightings dates to 1877 when famed Polish actress Helena Modjeska attended the third running of the Kentucky Derby. In the 1945 book, Down the Stretch, it was noted that Modjeska was impressed by the Kentucky Derby but even more charmed by the mint julep to which she was introduced by Churchill Downs founder M. Lewis Clark following the race. Over the years, a stream of celebrities from film, television, music, sports, politics, publishing, fashion and corporate America have been drawn to the Kentucky Derby. On at least one occasion, a celebrity with a more notorious background was the talk of the Derby. The 15th renewal in 1889 brought bank and train robber Frank James to Louisville. The brother of famed outlaw Jesse James and a leader in their outlaw gang, Frank was on hand to watch Spokane take the victory over favored Proctor Knott. In 2007, Churchill Downs initiated a new Kentucky Derby tradition with a celebrity focus by creating a special Red Carpet entrance for VIP attendees and their guests. Kentucky Derby broadcast partner NBC provided televised coverage of the Derby Red Carpet arrivals, giving fans around the globe a chance to see the rich and famous make their way into the world’s most legendary racetrack. Royalty As a direct descendent of England’s Epsom Derby, Churchill Downs’ Kentucky Derby has played host to British Royalty on four different occasions. In 1930, Edward George Villiers Stanley, the 17th Earl of Derby, from whose family name the term “Derby” was derived, became the first English nobleman to attend. Prohibition was in effect at the time and Lord Derby stated his disappointment in not being able to sample a mint julep. “You have a great many advantages I should like to copy for England,” Derby said, “but prohibition is not one of them.”

The Earl of Derby was followed in 1951 by the Duke of Windsor, who had renounced the British throne in 1936 so he could wed the American divorcee Wallace Simpson. The 100th running of the Kentucky Derby in 1974 brought Her Royal Highness The Princess Margaret and her husband Lord Snowden. Princess Margaret, the sister of the Queen of England, took part in the trophy presentation and awarded winning owner John Olin a specially crafted trophy for the milestone victory. In 2007, Queen Elizabeth II and Prince Philip attended the 133rd Kentucky Derby and watched Street Sense win the “Run for the Roses.” Her Majesty, who wore a lime green wool coat with a matching silk dress and lime green hat with fuchsia trim, arrived two hours before the Kentucky Derby and enjoyed a view of the race and the spectacle surrounding it from a table in Churchill Downs’ Stakes Room, located within the fourth-floor clubhouse. on to become president of the United State have watched the classic race and witnessed the electricity and excitement of the Kentucky Derby. Harry S. Truman was reported as the first and was followed in 1952 by Lyndon Johnson who attended while a Texas senator. Richard M. Nixon is the only president to have attended while already serving in office. He visited in 1968 as guest of Kentucky Governor Louie B. Nunn and commented that if he were elected president he would return to the 1969 Derby. 1969 also attracted two future presidents, Gerald R. Ford and Ronald Reagan. No other president has witnessed more Kentucky Derbys than Ford. Beginning in 1977, Ford and his wife Betty attended almost every Kentucky Derby for 10 years as guests of longtime friend John Galbreath, a former Churchill Downs chairman of the board. In 1983, for the 109th Derby, two past presidents and one future president were in attendance. Ford was joined by Jimmy Carter, the

democrat who had defeated him in 1976, and Vice President George Bush, who would win the 1988 election. Other vice presidents who’ve attended include Charles Curtis, 1931, and John Nance Garner, 1937. Celebrity Owners Although most of the rich and famous who attend are guests of prominent ticket holders, the Derby has also attracted an impressive roster of celebrity horse owners. Since 1990, this group of celebrity owners has grown to include musician Hammer (1992 - Dance Floor, 3rd); composer Burt Bacharach (1994 - Soul of the Matter, 5th & 1995 - Afternoon Deelites, 8th); music producer Barry Gordy (1994 - Powis Castle, 8th); film producer Albert Broccoli (1994 - Brocco, 4th); New York Yankee owner George Steinbrenner (1997 - Concerto, 9th and 2005 - Belamy Road, 7th); University of Louisville coach Rick Pitino (1998 - Hallory Hunter, 4th); and movie director Steven Speilberg (2003 - Atswhatimtalknbout, 4th).

PACIFIC SYMPHONY ANNOUNCES FIRST-EVER TOUR TO CHINA

Music Director Carl St.Clair to Conduct Symphony in Five Cultural Centers, May 9-15, 2018

Carl St.Clair Pacific Symphony today announced the details of its first-ever tour to China and first international tour since the Symphony toured European capitals in 2006. The five-city tour launches May 9, 2018 with a concert at the Shanghai Poly Grand Theatre, followed by performances in Hefei (capital of Anhui province), Wuxi (Jiangsu province), Chongqing (major city in southwest China), and Beijing. The final concert takes place at the National Centre for the Performing Arts, colloquially known as “The Giant Egg” due to its distinctive dome-shaped, titanium and glass architecture. The Symphony’s tour will include works by Leonard Bernstein in celebration of his centennial, as well as Ravel’s Daphnis and Chloe, Suite No. 2; Pictures at an Exhibition by Mussorgsky (arranged by Ravel); and Mozart’s Violin Concerto No. 3, featuring soloist Pinchas Zukerman. The visit to China follows another important tour this season to New York City for the Orchestra’s Carnegie Hall debut on April 21, 2018. “We are gratified to represent Southern California on this highly anticipated tour,” says Pacific Symphony Music Director Carl St.Clair. “This is an artistic milestone

5 parent tips for picking the right video games

Armed with new game consoles and mobile devices, plus a pocket full of gift cards, kids everywhere are hoping to add a few new video games to their library with some fun post-holiday shopping. With so many choices, parents can sometimes feel a little overwhelmed trying to decide which games are appropriate for their children to play. The Entertainment Software Rating Board (ESRB), the non-profit organization that assigns age and content ratings for video games, is an excellent resource for helping parents navigate both the real and virtual game aisles. The familiar ESRB ratings including E (Everyone), T (Teen) or M (Mature) are now also assigned to downloadable games and apps in Google Play, Microsoft’s Xbox Live store, Nintendo eShop and the PlayStation Store. ESRB offers the following tips for parents looking for the console games or mobile apps that are perfectly suited to their family: 1. Check the rating. Start with the recommended age rating. ESRB assigns E (Everyone), E10+ (Everyone 10 and older), T (Teen), M (Mature) and AO (Adults Only), which are clearly labeled on video game boxes or on the game’s page prior to downloading from an online

or mobile storefront. 2. Review the content descriptors. ESRB uses about 30 different content descriptors for depictions involving violence, suggestive or sexual themes, language, controlled substances and other types of content to help parents understand what may have triggered a particular age rating. 3. Look for interactive elements. Interactive elements describe certain aspects of a game or app that may be of interest to many parents and consumers, and can be assigned to downloadable games and apps. These include the sharing of the user’s location, if the game or app enables the purchase of digital goods, if users can interact and/ or if unrestricted internet access is provided. 4. Set parental controls. Today’s gaming devices have parental controls built in, which allow parents to block titles by age rating, ensuring children can access only age-appropriate games and apps. National forest ‘fee free’ days in 2018

Visitors to San Bernardino National Forest will be able to enjoy picnic areas, trailheads and recreational day-use sites without having to purchase an Adventure Pass on six days this year. These “fee free” days are offered across the country by the U.S. Forest Service: • June 9: National Get Outdoors Day • Sept. 22: National Public Lands Day • Nov. 11 - 12: Veterans Day Weekend “From Wrightwood to Idyllwild, the San Bernardino National Forest offers a variety of rich experiences for visitors,” said Forest Supervisor Jody Noiron. “You can play in snow, hike the tallest peaks in Southern California, explore hundreds of miles of dirt roads and immerse yourself in nature.” For non-fee free days, the Adventure Pass costs $5 for a day pass and $30 for an annual one. Funds raised go back in to recreation sites for maintenance of parking lots, bathrooms, trash cans, signage, trailheads and other recreation facilities. Visitors who inadvertently commit a daily Adventure Pass on “fee free”

Be prepared: Red Cross urges blood and platelet donation Because emergency situations are unpredictable, the American Red Cross needs regular donations to help ensure that blood products are available for patients at a moment’s notice. You can help ensure a sufficient supply for accident victims and others with serious medical conditions. This May, the American Red Cross is calling for donors to give blood and platelets regularly to be prepared to meet the needs of patients in emergency situations. According to the National Trauma Institute, trauma accounts for approximately 41 million emergency department visits and 2 million hospital admissions each year. In March 2015, Kevin Frame suffered life-threatening injuries in a head-on collision during spring break. He received blood products to treat internal injuries immediately after the accident and during multiple surgeries while recovering. “Without the blood and plasma products made available from donations, I would not be alive today to continue my rehabilitation journey,” said Frame, who had to relearn to swallow, speak and walk after the accident. Regular blood, platelet and plasma donations help ensure that blood is available at a moment’s notice. In fact, it is the blood on the shelves that is used to help save lives at the time of an accident or sudden illness. In trauma situations, when there’s no time to check a patient’s blood type, emergency personnel reach for type O negative red blood cells and type AB plasma because they can be transfused to any patient, regardless of blood type. Less than 7 percent of the population has type O negative blood, and only about 4 percent of the population has type AB blood. Platelets may also be needed to help with clotting in cases of massive bleeding. Because platelets must be transfused within five days of donation, there is a constant – often critical – need to keep up with hospital demand. Donors of all blood types are urged to roll up a sleeve this May to help meet the needs of trauma patients and others with serious medical conditions. embrace European traditions to create authentic cuisine Not long ago, adding international flair to your foods simply meant incorporating a dash of spice or trying a new cooking method. Today, Americans expect more out of their food, and the newest culinary trends are inspired by European traditions in order to create delicious, unique cuisine closer to home. As more people seek the high quality and craftsmanship they’ve come to expect in European products, U.S. restaurants and food makers are creating American originals based on international customs, and the results are surpassing expectations. Keep an eye out for these top food trends: 1. Icelandic skyr You can’t go to a grocery store today and not see shelves stocked with Greek yogurt made domestically, the perfect example of how Americans have adopted an international food and made it their own. While it’s dominated the yogurt market for the last couple of years, another yogurttype food is making a splash in the U.S.: Icelandic skyr. Traditionally used as a way to preserve fresh milk, skyr is made from skimmed milk with the cream removed. The straining process gives it a creamy texture. It’s also low in fat and sugar, plus skyr is higher in protein than its Greek counterpart. Look for U.S.-made skyr at your local grocer - some foodies deem it to be the next Greek yogurt, so if your supermarket doesn’t yet have it, it likely will by the end of the year. 2. Artisan cheeses Europe is well-known for having some of the best cheeses in the world. But you no longer have to travel overseas to find expert cheese-makers who create these

decadent delights. For example, cheesemaking traditions in the Alpine region of Switzerland have been used for centuries to craft quality cheeses, but today the same techniques are followed in the creation of Roth Grand Cru Alpine style cheese created in Wisconsin. Made with fresh milk in large imported copper vats and aged a minimum of four months, the resulting cheese is mild, nutty and smooth, earning numerous awards. It’s easy to jazz up your favorite dishes with international flavor by swapping out your standard go-to cheeses with this versatile variety. Try adding Roth Grand Grand Cru to potatoes gratin, Panini sandwiches or as the base for your next fondue. To create an artisan cheese plate,

pair it with fresh apples and pears, almonds and figs for a fantastic blend of flavors guaranteed to delight the taste buds. 3. Neapolitan pizza Forget thick crusts and loads of toppings, Americans today are looking for more out of their pizza pies. The rise in the popularity of Neapolitan pizzas is evident in restaurants across the country, giving Americans a unique taste of this traditional Italian dish. What makes a pizza Neapolitan style? Originating from Naples, Italy, a Neapolitan pizza features a thinner crust that is baked quickly at high temperatures, typically in a wood or stone oven. The toppings are minimal with the sauce often being the dominating feature. The classic pizza Napoletana margharita - created in1889 as a tribute to the queen of Italy - simply includes tomatoes, mozzarella and crust made from wheat flour. 4. Fine chocolates Chocolate lovers agree that your common milk chocolate candy bar found on convenience store shelves doesn’t hold a flame to fine European chocolates. But thanks to a growing interest in dark chocolate and high-end desserts, American chocolatiers are giving their international counterparts a run for their money. Creating premium chocolate is considered an art form where expert chocolatiers use only the finest cocoa to create indulgent treats. Whether it’s a dark chocolate bar of 85 percent cocoa, a smooth and creamy truffle or a decadent chocolate covered caramel, the

passion for fine chocolate is alive and well in the U.S. The confections can be found at specialty stores and even the candy aisle at your local grocer. If you have a taste for international flavors, you don’t have to look beyond our borders to find the finest foods. From rich cheeses to fine chocolate treats, European traditions are thriving in the U.S. as food experts adopt these methods and make them their own. Grand Cru Grilled Potatoes Ingredients: 2 teaspoons unsalted butter 1 1/2 pounds baby gold or red potatoes, thick sliced 2 small Vidalia onions, chopped 3 green onions, chopped 1 teaspoon chives, diced 2 cloves garlic, chopped 6 slices bacon, fully cooked, chopped 1/4 teaspoon black pepper 5 ounces Grand Cru Original, shredded and divided 1 sprig rosemary, stem removed Directions: Preheat grill to medium. Cut butter into small pieces and place in bottom of 8-by-8-inch disposable foil pan. Layer potatoes, Vidalia onions, green onions, chives and garlic in pan. Top potatoes with bacon, then cover with half of Grand Cru Original. Season with black pepper and rosemary; cover pan with aluminum foil. Place potatoes onto grill and cook for approximately 45 minutes or until potatoes are tender. Remove foil, top with remaining Grand Cru and continue to grill until cheese is fully melted and browned. (To prepare in the oven: preheat oven to 400 F and bake for at least 1 1/4 hours.)
