Coto resident, Emma Kang, wins 2017 Southern California Intercollegiate Athletic Conference Women’s Golf Championship Emma Kang led the CMS Athenas Women’s Golf Team to its fourth Southern California Intercollegiate Athletic Conference (SCIAC) women’s golf title at the Los Serranos Country Club. Kang, a freshman at Claremont McKenna College, was also the individual champion by shooting a 221 (75-74-72) over the three day tournament. CMS (Claremont-Mudd-Scripps) is composed of student athletes from three of the Claremont Colleges: Claremont Mckenna College, Harvey Mudd College, and Scripps College, and compete in various sports at the NCAA Division III level. The Athenas, currently ranked 8th in the nation by Golfstats for Division III Women’s Golf, beat its nearest competitor Redlands by 24 strokes at the SCIAC Championships. Kang sat in second place at the start of the third and final round. She quickly dropped to third as she shot +4 on her font nine, her highest nine hole score in the entire tournament. However, she regrouped to shoot -4 on the back nine with birdies at holes 13, 15, 16, and 17 to take a 3 shot lead over the field. “I felt really good
with my irons starting with 13 when I hit to 1 foot (of the hole). After that, everything up to hole 17, it seemed like I didn’t have a putt past 6 feet,” said Kang. On hole 18, not knowing that she had a 3-shot lead at that point, Kang hit a poor drive in the trees, but did well to hit a 170 yard shot through a clearing that landed 40 feet from the hole. She lagged a putt to 2 feet, and putted out for a final round 72. In second place was Caroline Ordian from Redlands, the defending 2016 NCAA Individual Champion, who shot 224 (74-80-70). Kang proceeded to hug and thank her coaches and teammates. “Coach (Jodie) Burton and my teammates were so supportive throughout my round. Coach just kept telling me I could do it and I trusted her.” said Kang. Kang is a graduate of Tesoro HS, Class of 2016, where she played Varsity Golf all four years, winning the South Coast League title in Fall 2014. By winning the SCIAC Championship, the CMS Athenas Women’s Golf Team advances to the NCAA Division III Championship held Emma Kang wins medalist honors at 2017 Southern California at Bay Oaks Country Club in Houston, Intercollegiate Athletic Conference. Texas on May 9-12.

CAMP PENDLETON MARINES TURN THE TABLES ON ELKS VOLUNTEERS By Andy Costello Members of the Mission Viejo / Saddleback Valley Elks #2444 traveled south to Camp Pendleton. Their mission was to present an Elks Certificate of Appreciation to Command Team Advisor CLB11, Mary Reynolds at the 2017 MCCS Camp Pendleton Volunteer Recognition Ceremony, on base at Camp Pendleton, Oceanside, CA. The Pacific Views Event Center was full-to-capacity as the award was made. Elks Past District Deputy (PDDGER) Harvey Boelts thanked Command Team Advisor Reynolds for her husband’s service, Lt. Col Patrick J. Reynolds and said, “The Mission Viejo Saddleback Valley Elks will always be here for your Team and look forward to a lasting relationship”. The Marines then presented awards for Volunteers of the Year: Youth, Civilian, Military, Team, Small Unit and Large Unit. The Mission Viejo Elks were surprised and honored with Certificates of Recognition for their continuing support of Marines and their families, for serving breakfast to over 300 Marines prior to their deployment one early morning, to hosting a steak dinner for the spouses of the deployed at the “Tacky Ball”.

Warren Buffett’s Beach House! Turned down by Harvard? Don’t feel bad. So was Warren Buffett. But it wasn’t a death knell to his spirit or cause him to realign his goals. Like most successful people, he forged ahead. While most people never have the epiphany that tells us what to do with our lives, Warren Buffett’s light bulb came on at the age of ten. While at lunch with his father who was a member of the New York Stock Exchange, something in their conversation lit that elusive spark that made young Buffett realize that his goal would revolve around money. By the time he was eleven and his classmates’ main concern was who would be first up to bat at the recess baseball game, Warren made his first investment in shares of Cities Service Preferred at $38 each. Never wavering from his goal, he was bringing in almost $200 a month as a teenager in the 1940s (more than his teachers were making) by working every job he could find, including door-to-door sales and cleaning cars, for more investment money. He figured out that saving money was like making money, a revelation that resulted in a lifestyle of frugality. Success inspired more success and today, often referred to as the “Oracle of Omaha,” he is the third richest person in the world. Worth $78.8 billion and only taking a base salary of $100,000 a year, Buffett’s frugality is legend. It is well known that despite his mega billions, he has continued to live in the same Omaha house he purchased in 1958 for $31,500. But few probably knew that in 1971 he also purchased a house in Laguna Beach for $150,000 - before the area was so highly developed and expensive. Today, his beach house is in an exclusive gated community that sports multiple tennis courts, swimming pool and beach volleyball courts among other amenities. He and his wife, Susan, enjoyed entertaining their friends at the house but found that there were so many visiting that he also bought a house next door and built a stairway to connect the two. After his wife died

in 2004, Warren rarely used the home and sold the connecting property in 2005. Now after updating the beach house, Buffett has put it on the market. At 3,588 square feet, the Laguna Beach house is much different than his traditional home in Omaha that is valued at about $600,000. Warren’s California home is very contemporary with six bedrooms and seven baths, big windows, sculptured ceilings and recessed lighting to spotlight the home’s modern art, a long fireplace and multiple built-ins. Two of the bedrooms have private entrances so guests can come and go without disturbing others. All rooms, including the large family room and decks, have ocean and beach views and the rock cliffs spilling onto the beach of Emerald Bay. Calling local filmmakers for 2nd annual Film Festival Filmmakers are sought to submit their family-friendly short films by May 12 for the 2nd annual Mission Viejo Film Festival. The Mission Viejo Film Festival is a showcase for impassioned filmmakers throughout Orange County that supports a great cause. Proceeds benefit City of Hope. This year’s categories include Young Filmmakers: Exploring Mission Viejo; Music Videos; High School; and College-Indie. Submit your film to http://missionviejofilmfestival.com by May 12. Awards will be handed out during the festival that takes place from 12:30 p.m. to 8 p.m. Saturday, June 3 at Saddleback College’s McKinney Theater. Proceeds from the festival will support pediatric cancer research and treatments. The entry fee is $25 and is tax deductible. Sponsorship opportunities are available for this annual event and contribute to the City of Hope fundraising efforts. 2017 Blenheim Spring Series Romfh Leading Hunter Rider Awards Photos by: McCool Another exceptional way to celebrate a top-notch Spring Series was to congratulate all the Leading Hunter Riders from the four weeks with awards presented by Romfh Equestrian Apparel. Seven riders were recognized in eight categories for their outstanding achievements in the hunter ring this spring. On Thursday, John French was awarded the Romfh Equestrian Apparel Leading Professional Hunter Rider Award for accumulating the most points in the professional hunter sections. Well-deserved, French was in the saddle quite a bit during the three weeks he competed, and also often lead the jog. In those three weeks, he won over 50 classes and picked up numerous tri-color ribbons. “It’s nice to be recognized for all the horses successes,” said French. “It was a great Spring Series, especially WCHR week. I had the opportunity to do some catch rides on some wonderful horses. Thanks to ROMFH, Blenheim EquiSports, and all the horse owners.” After a 20-year hiatus from the show ring, Christina Smith is making a name for herself in the Adult Amateur Hunter division. Returning with aplomb, Smith claimed the Romfh Equestrian Apparel Leading Adult Hunter Rider Award. Over three weeks of competing she took home a bucket full of blue ribbons, including an Adult Classic win.

OC Childhelp Celebrates “For the Love of a Child” Fashion Show The Orange County Chapter of Childhelp hosted its 31st Annual “For the Love of a Child” Fashion Show and Luncheon at the Island Hotel in Newport Beach. The event Co-Chairs, Katherine Meredith and Diana Miner anticipate raising nearly $300,000 and are thrilled that the event drew in close to 400 attendees. The event opened with Orange County Chapter President, Christine Bren, welcoming everyone and introducing the Celebrity Guest, Shenae GrimesBeech who is best known for her leading role on 90210. Her husband, Josh Beech, who is a model and musician, joined the charming actress. The Chairwomen then thanked their committee that included Joyce Simon, Jennifer Kite, Mary Allyn Dexter, Susan Earlabaugh, Linda Burns, Jill Glick, Tami Smith, Pam Pharris, Debra Violette, Joy Whitlock-Estrada and Dale San Filippo. Mary Allyn Dexter and Dale San Filippo presented the Children’s Friend Award to Lisa Castetter, Founder and CEO of Teen Leadership Foundation. Lisa spoke of the difficult issues that face foster youth and how she has dedicated herself to implementing innovative programs that empower transitional age foster teens and emancipated youth. She was truly honored to receive this award given to “a person or persons who have demonstrated their love, compassion and dedication to abused and neglected children.” The Inspirational Award was presented to Julia Argyros, not only for her leadership and generous philanthropy, but also through her service as a volunteer, board member and fundraiser; and her roles as a mother, wife and friend. Her gracious acceptance speech will be long remembered by all in attendance. Honorary Chair and National Board Member, Patti Edwards, thanked the incredible Honorary Committee that included Olivia Abel, Zee Allred, Lisa Argyros, Stephanie Argyros, Cleo Bluth, Jacquie Casey, Donna Clark, Beverly Cohen, Catherine Emmi, JoAnn Fanticola, Marie Gray, Wendy Hales, Cate Heck, Priscilla “Bo” Marconi, Rebecca McLarand, Deborah Nesbitt, Janet Ronnenberg, Eve Ruffato, Jennifer Segerstrom, Sandi Simon and Valaree Wahler. Many were in attendance that morning for a VIP donor reception with hors d oeuvres and informal modeling by CH Carolina Herrera and David Yurman. Guests were treated to a full runway fashion show by South Coast Plaza which featured the latest fashion trends from Anne Fontaine, Bally, DKNY, Diane von Furstenberg, Intermix, M Missoni, Maje, Max Mara, Saks Fifth Avenue, Sandro, Stuart Weitzman, Ted Baker London and Weekend Max Mara. At the end of the show, Kathryn Cenci of SCP was applauded and received a bouquet of flowers from one of the gentlemen models for her continued support of the Orange County Chapter of Childhelp. The lucky winners for the fantastic Opportunity Prizes were announced while the guests were finishing lunch. Some of the items donated were a Bally Sommet Tote, a David Yurman Renaissance Tassel Necklace with Diamonds, an Island Hotel Getaway, a gorgeous Roger Vivier Clutch in Black Satin with Swarovski Crystals encrusted on an Iconic Pilgrim Buckle, a Carolina Herrera shopping spree, the ever popular Dine Around with favorite Orange County restaurants and a Celine Bag valued at $2,250. The Grand Prize was a $2,500 South Coast Plaza shopping spree with a VIP Valet Pass and a dinner at Water Grille. The very excited winner was Joan Heneghan. The luncheon ended with the Co-Chairs encouraging the guests to attend a hosted “After Glow” party at the Aqua Lounge where all had a good time. Be A ‘Roll’ Model: Orange County Sheriff’s Department encourages safety, awareness for National Bicycle Safety Month The Orange County Sheriff’s Department and the California Office of Traffic Safety (OTS) call upon bicycle riders and motorists to be cautious during May’s National Bicycle Safety Month, and every other month during the year. For riders and drivers, being a “Roll Model” means actively decreasing the risks of traffic crashes, preventable injuries and deaths. The National Highway Traffic Safety Administration (NHTSA) reports that 818 bicyclists died and more than 45,000 were injured in crashes in 2015, with deaths rising more than 12 percent from 2014. Over a 10-year period from 2006 to 2015, the average age of cyclists killed in motor vehicle crashes increased from 41 to 45. Alcohol involvement – either for the motor vehicle operator or for the cyclist – was reported in 37 percent of all fatal cyclist crashes in 2015. “Spring has arrived after a wet winter season, which makes it a great time for family and friends to strap on a helmet, hop on a bike and see just how fun and welcoming our community’s streets and bike paths are,” said OCSD Traffic Sgt. Brian Sims. “Whether a person rides or
drives, everyone should know about bicycle safety now more than ever.” California has the Move Over Law requiring motorist to share the road and pass bike riders with at least a 3- foot cushion. Total time: 9 minutes 1/2 pound ground beef sirloin 2 teaspoons minced garlic 1 cup chunky salsa, divided 2 cups cooked brown or white rice 6 whole wheat flour tortillas (9 inches) 1 can (15 ounces) black beans, drained and rinsed, divided 1 can (11 ounces) corn kernels, drained, divided 2 cups shredded pepper jack cheese, divided sliced green onion, including green tops In medium nonstick skillet, brown ground beef and garlic over medium heat, breaking beef mixture into smaller chunks with spoon. Drain fat and stir in 1/2 cup salsa; set aside. Spread 1/3 cup rice in center of tortilla, leaving a 1/2-inch border. Scatter about 2 tablespoons of beans and 11/2 tablespoons corn over rice. Spread 1/3 cup beef mixture and 1/4 cup cheese over corn. Top with 2 teaspoons salsa and a few pieces of green onion. Fold in two opposite edges of tortilla 1 inch each and roll up. Place, seam side down, on microwave-safe dish. Repeat with remaining tortillas.
Place burritos in microwave and heat 1 minute, or until heated through. Serve with remaining salsa. Hot and Sweet Grilled Cheese Servings: 4 Total time: 16 minutes Peach Jalapeno Jam 3 tablespoons peach preserves 1/2 fresh jalapeno, seeded and finely chopped (about 2 teaspoons) Grilled Cheese 1 1/2 tablespoons unsalted butter softened 4 slices 12-grain bread, divided 2 slices white cheddar cheese, divided 2 slices pepper jack cheese, divided 2 slices smoked Gouda cheese, divided 1/2 small avocado, thinly sliced, divided To make peach jalapeno jam: in small saucepan over medium heat, combine peach preserves and jalapeno. Stir mixture constantly until preserves are melted. Remove from heat and set aside. To make sandwiches; heat large nonstick or cast iron skillet over medium heat for about 2 minutes. Butter one side each of 2 slices of bread. Turn buttered slices over,
buttered side down and spread peach jalapeno jam over second side of each bread slice. On top of jam side of each bread slice, layer 1 slice cheddar cheese, 1 slice pepper jack cheese, half the slices of avocado and 1 slice of Gouda. Spread jam on remaining slices of bread and place jam side on cheese. Spread remainder of butter on bread on top of sandwiches. Place sandwiches buttered side down in pan. Partially cover with lid, allowing steam to escape, and cook for 1 1/2-2 minutes, or until bread is toasted and browned. Flip sandwiches over with spatula. Partially cover with lid and cook for additional 1 1/2-2 minutes, watching carefully for bread to brown and cheese to melt. Remove lid and check for doneness. Remove sandwiches from heat and cut in half. Serve warm.

Reprinted with permission from the American Institute for Cancer Research Servings: 12 Dough: 1 cup whole-wheat flour 1 cup all-purpose flour, divided 1 package (1/4 ounce) quick-rise yeast 1 teaspoon salt 1 cup warm water, 125-130 F 1 tablespoon canola oil Topping: 7 medium fresh mushrooms, sliced 3 plum tomatoes, chopped 1 small green bell pepper, slivered 1/2 cup sliced black olives 1/4 cup chopped red onion 2 tablespoons olive oil 2 teaspoons apple cider vinegar 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried oregano 1/4 teaspoon thyme 1/4 teaspoon basil 1/4 teaspoon garlic powder nonstick cooking spray 2 teaspoons cornmeal Heat oven to 475 F. To make dough: In mixing bowl, combine whole-wheat flour, 1/2 cup allpurpose flour, yeast and salt. Add water and oil. Beat until smooth. Stir in remaining all-purpose flour to form soft dough. Place onto floured surface and knead by hand until consistent and elastic, about 4 minutes. Cover and let stand 15 minutes. To make topping: In bowl, combine mushrooms, tomatoes, green bell pepper, olives, onion, oil, vinegar, salt, pepper, oregano, thyme, basil and garlic powder. Coat 15-by-10-by-1-inch baking pan with nonstick cooking spray. Sprinkle with cornmeal. Gently press dough into pan. With fork, generously prick dough. Bake 10 minutes, or until lightly browned. Cover dough with topping mixture. Bake additional 10 minutes, or until edges are golden brown.

Heat oven to 350 F. Place crust on baking sheet and bake 8 minutes, or until golden and fragrant. Transfer to wire rack and cool completely. Place cream cheese, sour cream, sugar, lemon zest and vanilla in small bowl. Using hand mixer on medium speed or wooden spoon, blend until combined and smooth. Spread cheese mixture evenly over bottom of pie crust. Refrigerate until set, 1-2 hours. Before serving, cut off tops of strawberries. Halve largest ones and place in bowl. Cut remaining berries lengthwise in quarters and place in another bowl. Melt fruit spread in bowl in microwave or in small saucepan over medium heat, stirring often. Mix in lemon juice, if using, and divide hot fruit spread between two bowls of berries. Using fork, toss until fruit is coated. Spoon quartered fruit into center of pie, turning most pieces cut-side down. Arrange larger halves in circle around edge of pie with flat side facing rim of crust and pointing toward center of pie. Fill open spaces with any remaining fruit spread. Serve pie within 1 hour.

1/2 teaspoon McCormick Garlic Powder 1/4 teaspoon McCormick Crushed Red Pepper 1/4 teaspoon McCormick Pure Lime Extract 1 pound large shrimp, peeled and deveined 1 small zucchini, cut into thin noodles with spiralizer 1 medium yellow squash, cut into thin noodles with spiralizer 1 medium carrot, cut into thin noodles with spiralizer 2 tablespoons oil 1/2 teaspoon salt 1/4 teaspoon McCormick Ground Black Pepper Heat oven to 375 F. In large, re-sealable plastic bag, mix together coconut milk, ginger, garlic powder, crushed red pepper and lime extract. Add shrimp; turn to coat well. Refrigerate 15-30 minutes. Remove shrimp from marinade. Discard any remaining marinade. In center of large, shallow, foil-lined baking pan, arrange shrimp in single layer. In large bowl, toss vegetable noodles and oil. Sprinkle with salt and pepper; toss to coat well. Spread noodles around shrimp in pan. Bake 10-15 minutes, or until shrimp turn pink and are cooked through and noodles are tender. Serve shrimp over vegetable noodles. Test kitchen tip: For faster prep, use 4 cups store-bought spiralized vegetable noodles instead of spiralizing them yourself.

Are You Getting Enough Vitamin D? How milk can help Many people know that sunlight is one of the best sources of vitamin D, but it can be difficult to get enough from sunshine alone during the winter months. This is especially true for those living in the northern United States from October through May because the sunshine is not strong enough. And, while sunscreen is important to protect you from the sun’s harmful rays, it prevents the body from making vitamin D. So, it’s no surprise that according to the “Dietary Guidelines for Americans,” many Americans, including children, fall short of getting the recommended amount of vitamin D; not getting enough can be linked to health concerns. Consuming foods high in vitamin D, such as milk, is an easy way to boost intake levels, regardless of how much time is spent in the sun. Why is vitamin D important? Vitamin D works with calcium to help build and maintain strong bones. Plus, vitamin D helps protect children from rickets and older adults from osteoporosis. Vitamin D also helps muscles move, and nerves need it to carry messages between the brain and every other part of the body. In addition, a growing body of research supports other potential benefits of
vitamin D. According to the “Dietary Guidelines Advisory Committee Report,” it may reduce the risk of high blood pressure, diabetes, cardiovascular disease and cancer. Why milk is a good choice? Unfortunately, there aren’t many natural food sources of vitamin D, but milk is fortified to be an excellent source. In fact, milk is the top food source of vitamin D in the American diet. American Ballet Theatre William J. Gillespie School Announces Enrollment for the 2017-18 Year Plus Final Sunday Intensives in 2017 Segerstrom Center for the Arts announced that auditions for new students wishing to attend the 2017 – 2018 American Ballet Theatre William J. Gillespie School will be held on Saturday, May 6 (ages 8 – 13) and May 13 (ages 14 – 18). Classes begin on September 5, 2017. Priority registration for currently enrolled students begins May 29. Registration for new students begins June 12. Children ages 3 – 8 with no prior experience do not need to audition. New student placement for children ages 8 and above with prior ballet experience will be determined by audition. The ABT Gillespie School is adding Level 6 for the 2017 – 2018 school year. Those classes are for highly advanced dancers preparing for professional careers and college and conservatory programs. This fall, the ABT Gillespie School will extend its pre-professional levels by accepting students up to age 18 and the faculty is growing with the addition of three new instructors; two who hail from ABT. Tips for hosting a better brunch
Love the idea of hosting a brunch, but begin to regret it the moment you’re toiling over a pan of bacon grease while your friends are chatting over mimosas? You’re not alone. NOTICE IS HEREBY GIVEN that sealed bids for the CIP PROJECT Antonio Parkway Pavement Rehabilitation from Tijeras Creek to Via Ladera and the Santa Margarita Parkway Pavement Rehabilitation Project – Phase III (from Station 320+31.21 to Plano Trabuco Road – Eastbound Lanes), in the City of Rancho Santa Margarita will be received at the Office of the City Engineer of the City of Rancho Santa Margarita, 22112 El Paseo, Rancho Santa Margarita California, until 11:00 a.m. on Tuesday, June 13, 2017 at which time they will be publicly opened and read aloud.
