Cool ways to enjoy your outdoor spaces through the dog days of summer

A special Flag Day celebration held at local Elks Lodge
By Andy Costello The Mission Viejo, Saddleback Valley Elks Celebration of Flag Day was held at a Tuesday meeting which was open to the public. Patriotism has characterized the Benevolent and Protective Order of Elks of the United States of America since the early days of the organization. Allegiance to the flag of our country is a requirement of every member. In 1907, the Grand Lodge of the Benevolent and Protective Order of Elks designated, by resolution, June 14 as Flag Day. The Grand Lodge of the Order adopted mandatory observance of the occasion by every Lodge in 1911, and that requirement continues. The Elks prompted President Woodrow Wilson to recognize the Order’s observance of Flag Day for its patriotic expression. But it was not until 1949 when President Harry Truman, himself a member of the Elks, made the proclamation that thereafter June 14 would be a day of national observance for the symbol of our country. Elks sponsored Boy Scout Troop 603 opened the program with the Presenting of the Colors. Exalted Ruler Mike Klinger welcomed members and guests and introduced retired Air Force Veteran Jim Humphrey who recited the “History of the Flag.” Each Armed Forces Flag was displayed

and compositions about each written by Lodge Lecturing Knight Lane Keran were read by Elk veterans: The United States Army by Sven Akesson - retired Army, Steve Cagnacci - retired Navy, Larry Colgan - retired Air Force, Jerrie Muir - Active Marine Corps, Lucky Walch - retired Navy, and Norm Jones - retired Navy spoke about the POW / MIA Flag. The Armed Forces Medley played by Lodge organist Andy Costello followed with veterans rising to great applause as their branch of service was played. Lodge Leading Knight Jamie Camunas read “The Meaning of the 13 Folds”, while our nation’s Flag was folded by Veteran Lodge members Dennis Lumley, Larry Colgan, and Frank Scarpini. The inspirational program concluded with a spirited rendition of “God Bless America” by all in attendance. Refreshments and fellowship followed. Lodge #2444 is celebrating 49 years of service to Saddleback Valley Communities. It is one of 8 lodges in the Orange Coast District of the Benevolent and Protective Order of Elks (BPOE) whose headquarters is in Chicago, Illinois. School’s Talon Theatre program took home 44 MACY Awards on Tuesday, a record number of awards for the program. The 48th Spirit of the MACY Awards was held at the Segerstrom Center for the Arts on June 5. Over the 2017-18 season, MACY judges saw 57 productions produced by schools in Orange, San Diego and Los Angeles counties. The MACY Awards program encourages, recognizes and rewards achievement and excellence in high school musical theatre. Santa Margarita’s Talon Theatre spring musical, “West Side Story,” was recognized as one of the top ten musicals with The Spirit of the Macy Award. “West Side Story” also won Best Show Ensemble and Best Choreography. Among the award recipients were recent graduates Alec Melosini of Trabuco Canyon, who won best dramatic actor for his role as Tony, and Drew Schlingman of Mission Viejo, who won best supporting actor for his portrayal of Action. The show garnered a total of 27 MACY awards. Additionally, the cast of Talon Theatre’s fall musical, “Godspell,” brought home 17 MACY awards. Class of 2018 graduates Griffin Webb and Eric Renna were both awarded MACY college scholarships. “I am so very proud of all the students who participated in our 2017-18 season,” said Talon Theatre Director Amy Luskey-Barth. “This was an extraordinary year.” Luskey-Barth said the Best Ensemble Award was particularly meaningful, an affirmation of each student involved in the production as well as an outstanding creative team that included Casey Garritano, whose choreography elevated “West Side Story” to a professional level, and the immense talents of Chris Winn, the show’s musical director, and Francisco Calvo, the show’s orchestra conductor. “Theater is a collaborative art and the expertise of the production staff combined with the talent of the student performers, designers, and technicians was on full display this year,” Luskey-Barth said. Luskey-Barth also expressed her gratitude to Santa Margarita’s supportive parents, the parent-lead Arts Alliance, the entire performing arts department, The Most Rev. Bishop Kevin Vann of the Diocese of Orange and the SMCHS administration. “The recognition that both “Godspell” and “West Side Story” received at the MACY awards and
passion embodied by the entire Talon Theatre community,” she said. Last month, Santa Margarita’s Talon Theatre program took home four Cappies, including Best Musical for “Godspell,” out of eleven nominations at the 15th annual Orange County Cappies Gala at the City National Grove of Anaheim. But despite the numerous accolades, Luskey-Barth said she’s most proud of the positive impact the students are making in the world through theatre. The 2017-18 season, “Choose Love,” explored the idea that community begins with recognizing our common humanity and the rights of all to live in peace by breaking down barriers and striving for understanding. Both shows offered a glimpse into how true community begins with personal relationships. “Awards are nice and everyone enjoys a sense of pride in what they represent, but I am most grateful for the fact that Talon Theatre was able to shine light on two very important issues through our productions,” Luskey-Barth said. “Godspell” increased awareness and support for the homeless community. The school’s theater program raised $3,000 which was donated to the Illumination Foundation to assist a family in need with first and last month’s rent. The cast and crew also reached their goal to fill 650 backpacks with hygiene items for the homeless community. “West Side Story” helped raise $1,500 for the Puerto Rican hurricane relief fund through Catholic Charities. Students tackled the premier musical about overcoming fear and prejudice and how two people, Tony and Maria, “Choose Love” over hate despite enormous cultural differences. “This is truly Theatre on Purpose,” Luskey-Barth said. “The students of Talon Theatre are using their gifts and talents to make a positive difference in our world. They are living our school charism of Caritas Christi (the love of Christ).” Individual MACY Awards recognize unique contributions to a show. Laguna Playhouse Raises $1.7 Million at Newport gala

Attended by 400 playhouse patrons, the sold-out event featured a VIP Sponsors Reception, an elegant dinner, live and silent auction, entertainment and a special performance by “Phantom of the Opera” star Davis Gaines. Honored at the event were the Moulton Family and South Coast Plaza. “A big thank you to Gala Honorees Jared Mathis (great-grandson of Nellie Gail Moulton) and the Moulton Family for announcing their $1 million gift toward renovations which will restore the beauty and vitality of the Moulton Theatre,” said Ellen Richard, Laguna Playhouse Executive Director. The Island Hotel was transformed into a glamorous backdrop to this memorable and inspiring evening which began with a VIP Sponsors Reception and private performance by “Phantom of the Opera Star” Davis Gaines. Members of the Playhouse Youth Theatre Conservatory joined Gaines in performing “Day by Day”. Chair of the Board of Trustees Paul Singarella kicked off the honoree portion of the night with a historical introduction about the Moultons. He welcomed Mathis to the stage, while a historical video played paid tribute to a pioneer of the arts and philanthropist, Nellie Gail Moulton, the major benefactor to the building of Laguna Playhouse’s Moulton Theatre. Mathis currently serves on the Board of Trustees. He serves as CEO of the Moulton Company along with his cousin, Scott Barnes, CFO and a supporter of Laguna Playhouse and was present to accept the honor. “We are truly honored and humbled to be recognized by The Laguna Playhouse,” said Mathis. “Our family and The Moulton Company is dedicated to honoring and building on Nellie Gail’s vision and commitment through faithful service and support.” South Coast Plaza also received recognition and was honored for its role since its creation 50 years ago in supporting arts, theatre and culture throughout Orange County. It was 1966, when Nellie Gail Moulton was approached to help fund the building of the now 420 seat Moulton Theatre named after her husband Lewis F. Moulton. Donating a large principal amount of the $400,000 needed to build the theatre, Nellie Gail not only served as the major benefactor of the theatre, she co-founded the Laguna College of Art and Design served as President of the Laguna Art Museum. Nellie Gail was a major catalyst for the creation of an arts community in Laguna Beach. = Co-chaired by Laguna Playhouse Season Producer Lisa Hale, Annee Della Donna and Board of Trustee Jamie Walters El Erian, were intricately involved in every aspect of the gala. “Each of us began our love for Laguna Playhouse through the Youth Theatre conservatory and its programs,” noted the co-chairs. Major Sponsors for the event were South Coast Plaza, Lisa Hale, Joe Hanauer, Jamie El-Erian, Nolet’s Spirits, Greg and Barbara MacGillivray, Heather and Paul Singarella. Clear Scalp & Hair Therapy experts Dr. Francesca Fusco, a leading dermatologist who specializes in scalp and hair care, and celebrity stylist Jen Atkin, share some helpful tips for men as they head into the summer season. Protect the scalp: One area men often forget about protecting is the scalp and any and all outdoor activities call for a generous application of sunscreen. “It is important to think of the scalp as an extension of your face. If no sunscreen is around, wear a hat for foolproof protection.” Lather, rinse, repeat: When out and about in the summer,perspiration is highly likely. “It is important to shampoo after working up a sweat because inadequate scalp and hair hygiene can lead to buildup of oil,” Fusco says. Reach for a shampoo that is packed with nourishing ingredients. “A clean, well-nourished scalp is a thriving scalp,” Fusco says. The perfect style: Don’t be afraid to switch up your look to reflect the easygoing nature of summer. One of the easiest ways is to change up your hair cut. “Many guys are nervous to try something new, but changing up your look is simple and can help to boost your confidence,” says Atkin. “Most men go right for the clippers and buzz it all off when the weather gets hot.” Not ready to take it all off? “Another
great option is to go for a style with shorter sides but keep length up top. It is easy to maintain and will grow out nicely too.” Complete the transformation with some new clothes to complement the new look. How to prepare your pet for summer fun - and beyond The dark, cold days of winter are nearly behind us, and many people are looking forward to warmer weather and outdoor activities. Dogs also appreciate their time in the sun. So, it’s important to keep in mind what you need to do to make sure your dog is ready to enjoy summer activities. The American Veterinary Medical Association (AVMA) provides important summertime pet care tips, including: * Provide adequate water and shade * Never leave your dog in the car * Take walks and play outside during cooler hours of the day * Avoid walking on hot pavement that can hurt your dog’s paws * Provide regular flea and tick protection And, if your dog isn’t on a regular schedule of heartworm preventive, now is a good time to start. Many people don’t realize that while mosquito bites are usually a minor irritation for most people, for dogs, just one mosquito bite can be life-threatening. This is because
mosquitoes carry heartworm. Heartworm disease may exhibit few symptoms. When diagnosed, it is difficult and expensive to treat and, if not caught in time, can be fatal. If you don’t live in an area with a heavy concentration of mosquitoes, or if your dog doesn’t spend a lot of time outside, you may think that your dog is not at risk. According to the American Heartworm Society (AHS), “Heartworm disease is spreading to new regions of the country each year. Stray and neglected dogs and certain wildlife such as coyotes, wolves and foxes can be carriers of heartworms. Mosquitoes blown great distances by the wind and the relocation of infected pets to previously uninfected areas all contribute to the spread of heartworm disease.” The AHS recommends year-round protection because it is “an easy thing to do and is much less expensive than treating serious, sometimes deadly, heartworm disease.” Leading veterinary organizations including the Companion Animal Parasite Council, the American Animal Hospital Association and the AVMA also support year-round protection. For many people, however, remembering that monthly heartworm pill is easier said than done. Recently, the U.S. Food and Drug Administration Center for Veterinary Medicine agreed to revisions under which ProHeart 6, a six-month injectable heartworm
preventive, may be administered. Big Price On Shaq’s Big Florida House!
Pro basketball legend Shaquille O’Neal has put his 28-room lakefront mansion near Orlando, Florida on the market at $28 million. A longtime Orlando-area resident, shortly after he was the #1 overall pick in the 1992 NBA draft by the Orlando Magic, Shaq played for the Magic from 1992 to 1996 before signing with the Los Angeles Lakers for $121 million. At the end of the contract he returned to Florida in 2004 to play for the Miami Heat, then played for several other teams before retiring in 2011. O’Neal now spends most of his time in Atlanta where he works as an analyst for TNT on Inside the NBA. Shaq’s massive Lake Butler estate within the private golf community of Isleworth, about 30 minutes southwest of Orlando, is sized to feel spacious to a man of 7’1” weighing in at 325 pounds. Completely customized to fit his varied lifestyle, it is not surprising that one outstanding feature is an indoor 6,000-square-foot basketball court with bleachers. Unusual extras include two garages that together will fit 17 cars, one a show-car garage with fitness center and the other having a dance studio and an enclosed recording studio, recalling
his rap music hits of the 1990s. The master wing has a four-room closet, his-and-her baths and in the bedroom, a custom 15-foot round bed. The guest wing has its own great room with bar and five ensuite bedrooms. Some unusual rooms include a temperaturecontrolled, cedar-planked humidor and wine storage and an aquariumstyle room with saltwater triangular fish tank. Most impressive is the wall mural of a true-to-size tractor trailer barreling toward the interior of the room on an expressway. With the front cab bumped out of the wall, the realism is electrifying. The grandeur doesn’t stop with the interior. Shaq nicknamed his party-perfect outdoor area “Shaqapulco” quite aptly. The 95-foot long swimming pool seems to go on forever and has a large waterfall spilling over boulders. It includes a
swim-up bar and a spa large enough for a crowd. The pool deck also has an extensive outdoor kitchen, all of which looks out over Lake Butler, the long private pier with boathouse and the life-size statue of Shaq’s favorite character, Superman, standing at the end overlooking the lake. Shaquille O’Neal - a big man with a big personality and stellar basketball career, is selling his equally large

Then treat it like a good friend with these tips When cousins Bo and Luke Duke from the television series The Dukes of Hazzard named their car “The General Lee,” they had the famous General Robert E. Lee in mind. Why? The show was set in the South, so perhaps it was to capture the Southern vibe of the Duke lifestyle. Maybe it symbolized rebellion against authority. Who knows? There are as many reasons for naming a car as there are drivers, and the Dukes were in good company when they named theirs. Thirty-five (35) percent of Americans have named their car in the past, proving that our cars can have a deeper emotional hold on us than just a way to get from point A to point B, according to Hankook Tire’s quarterly Spring Gauge Index. Gender influences choices. The Gauge showed that women are more likely to consider the car they drive a female, and men are more likely to consider their car male. On the other hand, approximately half of those surveyed stay gender-neutral when it comes to cars, considering their vehicle neither male nor female. Some of the most popular names were “Betsy,” “Bessie,” and “Baby.” On the other end were
the more unconventional, exotic titles including “The Accordion,” “Petunia” and “NellyBelly.” Whether or not you name your car, treat it like a friend and it will take better care of you. Prepping for a party: make-ahead appetizers make summer entertaining easy Don’t let the first “ding-dong” of the doorbell catch you up to your elbows in dirty dishes and half-finished appetizers. For your next party, prepare your appetizers ahead of time with these simple tips and recipes: “Let’s not reinvent the wheel. Take items you already know how to make and turn them cool and trendy with some add-ons,” says Chef Richard Worthen, culinary instructor at The Art Institute of Seattle. You can dress up egg, tuna or chicken salad with a variety of flavors and spices. He recommends chopped cilantro instead of chopped parsley, adding chipotle to egg salad or adding almonds, walnuts or pistachio nuts for some crunch. For a gluten-free appetizer, try lettuce cups. “You could do a quick chop of a variety of three-to-four items and put it in a lettuce cup,” says Chef Brian Shulse of The Art Institute of California - San Francisco, a campus of Argosy University. “It can also go traditional Asian - ground pork with some spices that can just be popped in the microwave to heat before serving.” “You could do a flat bread with seasonal vegetables on it,” Shulse says. “Make the bread in advance, roll it out, put olive oil on it, add seasonal vegetables, and bake.” Worthen recommends tomato toast, which is made by taking cut tomatoes and rubbing the juice and pulp into french
bread slices. This can serve as a base for any type of spread. Shulse says people tend to go to proteins, such as shrimp cocktail and cubes of steak, and not to the veggie tray. He says you can make all kinds of skewers with different meats, then add fresh chopped herbs and citrus to Greek yogurt for a quick and easy sauce. Another great make-ahead protein is tuna tartar, which can be made with a high-quality ahi tuna steak and served with store-bought kettle chips. Phyllo-wrapped asparagus, made with store-bought phyllo dough, is another easy recipe, along with water chestnuts wrapped in bacon. Simply wrap one third of a slice of bacon around each water chestnut, roll in brown sugar and bake at 425 degrees until brown and crisp. Try these easy make-ahead recipes courtesy of Shulse: Spicy Ahi Tartare Yield: 10 servings Ingredients: 2 pounds Yellow fin/Ahi tuna, diced in 1/8-inch pieces 1/2 cup cucumber, washed, dried, diced in 1/8-inch pieces(optionalpeel) 1-2 garlic cloves, crushed, peel removed and minced 1-2 serrano or jalapeno pepper, seeded, minced fine 1 shallot, finely minced (substitute 2 green onions) 1 orange, washed, dried, zested,
juiced 1 lime, juiced 1 teaspoon dry oregano (or 2 teaspoons fresh) 2 teaspoon ground cumin 2 teaspoon kosher salt (or more to taste) 1 teaspoon sugar 1 bag thick potato chips (like Kettle chips) or crackers Directions: Gently mix all the ingredients together and refrigerate, covered, until ready to use. This will hold for two to four hours (or up to overnight). To serve, gently mix and place in a serving bowl with a spoon, with the chips on the side. Lettuce Cups Yield: 15 bites Ingredients: 2 tablespoons sesame oil 1/2 yellow onion, small dice 1 tablespoon garlic, smashed, peeled, minced 1 tablespoon ginger, peeled, grated fine (or use micro plane) 1/2 bunch green onions, minced, white and green kept separately 1 pound ground pork or turkey 1 teaspoon Kosher salt 1/2 cup water chestnuts, small dice 2 tablespoon soy sauce 2 tablespoon Hoisin sauce 1-2 tablespoons Chinese hot mustard 1/2 cup peanuts, crushed or chopped 15 Iceberg lettuce cups, cut into
3-inch squares Directions: Over medium-low heat, preheat a medium size saute pan for 30 seconds. Add the sesame oil and swirl the pan until it is fully coated with oil. Add the onion, garlic, white part of the green onion and ginger. Sweat for several minutes until the mixture begins to look translucent. Turn up the heat to high and add the ground pork. Cook on high, stirring until the meat turns pale brown. Turn the heat back down to medium-low and add the salt, diced water chestnuts, soy sauce and Hoisin sauce. Cook until moisture evaporates. Turn the pan off and add the Chinese hot mustard to taste. After this has cooled down, cover and refrigerate. Can be made up to four days in advance. Reheat gently in a microwave or saute pan until just warmed through. Place in a serving bowl, top with peanuts, and serve with lettuce cups.
