The Coto/Rancho Rotary has just advised the Coto de Caza News that;” We are sad to report that we are not going to be able to host the Coto de Caza 4thof July parade and Country Fair this year. “Rotary President Jim Bastian went on to say “The primary purpose for this event for our Rotary club has been to raise funds for our many service projects locally and internationally. Our fundraising is driven by sponsorships and in the last couple of years, our sponsor participation has dropped off dramatically. This year, we reached out to many local businesses and real estate brokers who have supported the event with sponsorships in the past without much success. Based on this response, it did not appear
that we had sufficient sponsorship revenue to make the event a success. We intend to reach out to people at the beginning of the year for this purpose and will let you know that this long time tradition will be back again in 2018..” The Country Fair was a nice addition to the 4th of July Parade with rides, food and games, but was still not as exciting as the earlier action packed events of years gone by. The Rotary once hosted not only the 4th of July parade, but also some high ticket Country Western Concerts such as Waylon Jennings, still spoken of with reverence by long time Coto de Caza and Rancho Residents. Talk of reviving a parade in 2018 quickly sparked a lively discussion
of adding a concert, or even a concert series. Coto and Rancho residents love concerts. Even the small concerts in the back yard of the Rancho Santa Margarita City Hall draws huge crowds. The Coto Golf and Racquet Club had to turn away hundreds from their concert series which featured ‘Hootie and the Blowfish’, and “The Beach Boys” among other headliners. The Rotary Club President concluded by saying: “It is our hope that next year with the support of CZ Master and Coto residents who want to be part of a committee to organize and host the event, and with our Rotary club providing support, we can make the event better than ever. “

Red, White and Blue Watermelon Cake Servings: 6–8 1 seedless watermelon 1 cup low or no fat natural vanilla flavored yogurt 1 cup sliced almonds 1 cup blueberries 1 cup sliced strawberries Place watermelon on side on cutting board. Cut 3–5 inches off each end to
create large center slice between 3–5 inches in depth. Trim off outer rind. Cut watermelon slice into 6–8 pie-shaped wedges. Blot edges with paper towels to absorb excess moisture. Dip the back (curved) side of each slice in yogurt and then almonds, reassembling pieces on serving platter as each piece is completed. When finished, it will look like piecrust of almonds around watermelon slices. Frost top of reassembled watermelon with remaining yogurt and decorate top with berries. Serve cold. Bison Burger with Blue Cheese Recipe courtesy of Michael Symon Servings: 4 Kosher Salt Freshly ground black pepper 2 tablespoons olive oil 1 pound ground bison, loosely packed into burger patties 4 slices Castello Burger Blue cheese 4 brioche-style soft hamburger buns, toasted 1 small red onion, very thinly sliced into rings 1 cup arugula Heat your grill to medium-high heat. Season burgers with salt and freshly ground black pepper on both sides. Drizzle with olive oil, then place on grill. Cook 3 minutes, then flip. Add slices of blue cheese (1 slice per burger), and let cook another 1–2 minutes. Remove burgers from grill and place patties on toasted buns. Top each burger with slice of red onion and 1/4 of arugula. Serve. Star-Spangled Dessert Add color and crunch to your cones

CLASSROOM AND CAMPUS UPGRADES, ESENCIA SCHOOL CONSTRUCTION AMONG TOP CAPITAL IMPROVEMENTS FOR CUSD THIS SUMMER The Capistrano Unified School District is busy updating its classrooms and technology during the summer break, including construction of the District’s new Esencia K-8 school from the ground up and undertaking a Solar Feasibility Study to improve District energy efficiency. Construction continues at the Esencia K-8 school site in Rancho Mission Viejo, which will open in the fall of 2018. Facilities crews are also working on the construction of brickand-mortar classroom buildings at San Clemente High School and San Juan Hills High School. Also at San Clemente High School, crews are replacing the 13-year-old AstroTurf on the football field with new turf. This summer the District is also working to improve and enhance our Career Technical Education Classrooms. Dana Hills High School’s culinary arts room will receive new, modern furniture and equipment, while Aliso Niguel High School will feature a brand new Forensics Lab. In addition, a new Engineering/ Construction Lab and new Fabrication (Fab) Lab will be constructed at San Juan Hills High and San Clemente High, respectively. Two new Virtual Enterprise classrooms with interactive TVs are planned for Dana Hills and
San Juan Hills High Schools. We are also on track to construct eleven new Investigation Labs at our middle schools. We will be unveiling these classrooms when school begins this fall. “As we look to the year ahead, we are very excited about the many improvements taking place to expand career pathways through Career Technical Education,” said Capistrano Unified School District Superintendent Kirsten Vital. “Our District’s CTE programs stay on the cutting-edge to give our students the skills they need to be viable in today’s rapidly changing world.” Our CTE students are busy this summer as well, with twelve students in the Law Pathway interning with the Orange County District Attorney’s Office, and our CISCO IT students interning in our very own District Technology Information Systems (TIS) department. “It is a very exciting opportunity for our students who have excelled in the CISCO IT computer networking course to get some hands-on experience in a summer internship with CUSD TIS,” said CTE Program Coordinator Pati Romo. “We are so grateful to all our business and industry partners.”

In August, we will open the Outdoor Science Classroom at Marblehead Elementary Environmental Studies Academy, where students will have a wonderful opportunity to learn in a unique environment. On June 6, District Facilities Management walked all six District high schools and the District Office to survey energy usage. As part of the project, students will work hand-in-hand with the District to help

Students will be auditing, monitoring, and measuring electricity usage as an educational tool to establish innovation at every level within the school system. A usage report will be compiled with recommendations for the District to consider in its Solar Strategy. Over 350 friends, family and other Chapter members gathered at the Laguna Cliffs Marriott in Dana Point to recognize these seniors in a ceremony that included tributes to the girls and their families. Those in attendance were enriched by each senior’s personal speech and video slide show highlighting the hallmarks of her life and her favorite memories of her participation in NCL with her mother. Family and friends joined in the celebration with dancing until midnight. Determine desired size for table linens and cut fabric to size, leaving 1-inch excess on each side for hemming. 2. For neatly finished edge (on toweling, for example), hem each raw edge by turning fabric toward wrong side 1/2 inch, iron flat, and then turn 1/2 inch again. Press well with an iron. Sew across turned edge, approximately 3/8 inch from edge, to secure hem in place. 3. To add decorative trim to edge of fabric, match right side and raw edge of trim to right side and raw edge of fabric. Stitch using 1/4-inch seam allowance. Turn and press under raw edge of fabric so that remaining portion of trim extends out. Topstitch along edge of fabric to secure trim in place. 4. Use hemmed and decorative edge linens as tablecloths and table runners to stage food and beverage tables. Add height to table by stacking books and then draping with decorative table linens. Place cake stands or food trays on top.

coto de caza Village homeowners news ITS OFFICIAL ! Our new Property Management Company, Crummack-Huseby Property Management, has as of June 1st officially taken over management of our community. VILLAGE DEMONSTRATION GARDEN IS COMING ALONG NICELY You may have noticed the work in progress on the corner of Via Conejo and Via Ortega. The garden is intended to showcase recommended plants for our Village. This project is just the beginning phase of what could become even more park improvements, with your help! A terrific way for homeowner families to help improve the Park for better community enjoyment is to show your appreciation of the Village through the purchase of a Memory Marker. For a small donation toward park improvement funds, your family can commemorate special people, pets or life occasions on an engraved brick to be located within the park. Bricks will be available for $50 each for anyone wishing to engrave and place in the garden. Check the blog for details to follow. Initially, the committee would like to install two benches in the garden area. One bench has already been donated that will include a commemorative plaque on behalf of the donor. Let us know if you are interested in donating a second bench at this time. The Village Amenities Committee can be contacted at: susandilauro@ cox.net. DID YOU KNOW? The Village is a “Dark Sky” rural community. Uncontrolled or excessive exterior lighting is prohibited. Lighting is to be low lumen and integrated into the landscape and architecture of the home. Exterior lights must be screened from direct view from streets, Common Areas and adjacent dwellings and pointed downward to illuminate the immediate area around the light fixture. Exposed fluorescent lamps, flashing lights, colored lights, excessive garden lights exposed and aligned like an airport runway, flood lights, post lights, unshielded lights placed on top of columns or pilasters, and unshielded exterior lights and lights which result in glare are prohibited. LET’S GIVE IT A NAME As our Park enhancements progress with our demonstration garden, benches and commemorative bricks, it really needs a name. “Lot 424” just doesn’t cut it. Submit your best idea and if chosen by Committee and approved by the Board, not only will it be published in the Coto de Caza News, it will be memorialized! WHAT’S YOUR STREET ADDRESS? Page 16
We have noticed a large number of homes that do not have their street address numbers posted on their home in view from the street. For your safety, please have your street address numbers clearly visible from the front of your home so Fire and Police emergency personnel can locate you quickly in time of need. MESSAGES AND ANNOUNCEMENTS Our street work has been completed – Thank you for your patience! Our contractors have suggested that we make sure our sprinklers are not watering or spraying onto the street because that’s one of the fastest ways to degrade the asphalt surface. Please take a look at your sprinklers and adjust them accordingly. ORTEGA Drain Update: All underground work has been completed. Surface work is in process and we will update you as soon as it is finished. CPAC (Coto Planning Advisory Committee): The June CPAC meeting has been canceled. Photos by: Kait McKay Photography An air of anticipation permeated the City National Grove of Anaheim as attendees arrived for the 21st Annual Remarkable Women Awards Gala, presented by the National Association of Women Business Owners, Orange County Chapter (NAWBO-OC). Fox 11 News Anchor Christine Devine greeted guests as they entered. The highlight of the gala was the heartwarming and inspiring speeches from the four award recipients upon being introduced by Devine. “It has not been a straight or easy road,” said Loreen Gilbert, describing her journey to success as founder and president of Irvine-based WealthWise Financial and her commitment to an advocacy role for women in business. Gilbert, named Business Advocate of the Year, was one of four Remarkable Women honorees at the lavish affair. The Laguna Beach resident, who was also NAWBO-OC’s 2016 Business Owner of the Year, is the only person ever to receive two Remarkable Women awards. Her fellow honorees were: Heidi Hendy of Newport Beach-based H. Hendy Associates, Lifetime Achievement Award. Hendy lives in Newport Beach. Scharrell Jackson with Anoosheh Oskouian, Loreen Gilbert and Anoosheh Oskouian of Signal Hill-based Ship & Shore Environmental, Inc., Heidi Hendy Business Owner of the Year. Oskouian is a Newport Beach resident. Scharrell Jackson of Newport Beach-based Leadership in Heels, Entrepreneur to Watch. Jackson lives in Lake Forest. All four honorees agreed that running a business is like a roller coaster ride with a myriad of pitfalls awaiting the unwary – from being discounted as a woman in a male-dominated industry, described by Oskouian, to reorganization and receivership – both of which Hendy experienced since starting her interior architectural firm in 1979. The theme of the event was “Stand” – “Stand for what you believe, stand in the face of obstacles, stand up for others, and stand together.” “Most women business owners face a major challenge at some point and feel very vulnerable and alone. But, if you think about the people we admire in life, none of them have had it easy,” said NAWBO-OC President Liz Camaur. “They have faced traumatizing setbacks and bravely stood in the face of them to make something remarkable.” Attendees were served a salad of mixed farm greens, grilled peaches and candied walnuts with buttermilk ranch followed by a deconstructed chicken Lucinda Salinas and Lisa Hallaian pot pie with spring vegetables or kale ravioli finished off with a chocolate pot de crème with a latte meringue. In addition to the program, attendees bid on silent auction items benefiting NAWBO-OC and the Women’s Business Institute (WBI), a nonprofit that funds educational programs for women business owners seeking to supplement their skills through workshops, seminars or college courses. Event sponsors were Rancho Las Lomas and Marketing Initiative Worx. Corporate sponsor Henry Walker of Farmers & Merchants Bank spoke about the bank’s commitment to NAWBO-OC and women business owners during the program. The bank’s donations during its 14 years as a corporate sponsor total nearly $300,000. Founded in 1991, the Orange County Chapter of the National Association of Women Business Owners (NAWBO) provides information, resources and an environment for women business owners to thrive and grow. Nationwide, only about 4 percent of women business owners gross a million or more, but among NAWBO members, about 24 percent gross over a million. Facts A bout the F ourth of J uly: A merica’ s I ndependence D ay By Jennifer Phillips The 4th of July marks the signing of the Declaration of Independence by the men who are responsible for the start of the United States of America. In 1776, on July 2nd, the Continental Congress met to discuss independence. There was much political unrest at the time, with the thirteen colonies chafing under the rule of a King who was an entire ocean away. There were feelings of resentment over the lack of representation in England, for the Colonies. In short, the citizens of the original Colonies were unhappy, and the Continental Congress felt it was time to take the next step forward, towards independence, and self-rule. Two days after this meeting, on July 4th, these men signed a document, drafted by Thomas Jefferson, declaring the intentions of the Colonies to be free from the rule of the kingdom of Great Britain. What followed was a long, bitter war lasting roughly eight years. It eventually involved not only England and the United States, but also France, Spain and the Dutch Republic. The war ended in 1783, and the United States were finally free to
govern themselves, but the date most celebrated is the date that began it all; the Fourth of July. While the 4th of July has only been an official paid holiday for federal employees since 1941, it has been celebrated thoroughly since the very start. Today the 4th of July is celebrated in the United States with parades, fireworks, picnics and extravagant displays of patriotism. It has been that way for a long time, too. The list below illustrates some of the ways that this holiday has been celebrated in the past. * 1777- Thirteen gunshots were fired (once in the morning, and again in the evening) on July 4th in Rhode Island. Philadelphia held an official dinner, complete with toasts, 13-gun salutes, speeches, songs, parades and, yes, fireworks. * 1778- George Washington’s soldiers received a double ration of rum and an artillery salute. John Adams and Benjamin Franklin, acting as ambassadors to France, held a celebration dinner for their fellow Americans. * 1779- July 4th fell on a holiday, and was celebrated on Monday instead.
* 1781- Massachusetts was the first state to recognize July 4th as an official state holiday. * 1791- The first use recorded use of the name “Independence Day” is found in this year. * 1941- The 4th of July is declared a paid holiday for federal employees. The traditions of the 4th of July celebrations run deep. It inspires in many American citizens feelings of patriotism, and pride in their country. It’s also a holiday for fun and family. Some of the long-standing celebrations in the United States include: * Since 1785, Bristol, Rhode Island’s Fourth of July Parade has occurred annually. This makes it the oldest continuous Independence day celebration in the United States. * Since 1916, Nathan’s Hot Dog Contest has been held at Coney Island every 4th of July. The contest supposedly started as a way to settle an argument between four immigrants, over who was the most patriotic. * During the last week of June, since 1959, Detroit, Michigan and Windsor, Ontario hold a mutual celebration of both Independence Day and Canada Day. The celebration
ends with a large fireworks display over the Detroit River. Clearly, Americans hold a special place in their hearts for this holiday, even this many years later. Many wars have been fought, and many lives lost, in the name of freedom and independence. Even in times of political unrest and economic struggle, Americans can, on this day, look back at their long, rich history of freedom and independence, and feel a sense of gratitude to, and pride in, their forefathers, and the men who followed in their footsteps.

What makes America great? The two main elements that make America great are our people and our freedoms. Our people have a can do, nothing is impossible, spirit. Starting with the American Revolution, we have always conquered adversity, often in the face of overwhelming odds. We have more rights and freedoms than anywhere else in the world. Our freedoms are considered inalienable rights, not privileges granted by government. Our freedoms are the envy of the world. Every item in the bill of rights is a precious jewel, designed to ensure the immortality of our liberty. Our founders came from societies where government controlled its citizens. They had a solid understanding of the consequences of unchecked power. Our constitution was crafted specifically to limit the scope of government to prevent its infringing on individual liberties. Our constitution is a brilliant document, filled with foresight and understanding, that has withstood the test of time. The principles embedded in
the constitution are the foundation of our greatness. In America, each citizen can control his or her destiny without fear of interference by government or others. Our government was formed to serve the people rather than vice versa. Our government was designed to play a minimal role in people’s lives. Our doors have always been open to people from anywhere in the world who want to come here legally to work hard, contribute, and assimilate into our society. America’s reputation as a melting pot is derived from the fact that people from every walk of life can work together to create an unstoppable force for good. In America anything is possible. America is great because it offers its people unlimited opportunity to succeed by bringing their dreams to reality. In America, success requires hard work, determination, and persistence, not permission. We are constitutionally protected to prevent government from confiscating the results of our labor. America is an engine for unprecedented productivity. Our economic system has been responsible for civilization transforming innovations and discoveries. No other country has even come close and many other
systems have failed miserably. America has a big heart. Whether in this country or elsewhere, we help those who can not help themselves. Americans are first on the scene in the wake of natural or civic disasters. We are there with food, supplies, medical aid, and money. Our brave soldiers travel the globe defending those who can’t defend themselves. In America there are no problems
that we can’t solve. Any obstacles we may face do not taint our greatness. It is our greatness that enables us to overcome adversity and become even stronger in the process. Everyday, be thankful that you live in America and benefit from its greatness. Don’t take for granted that which people in other countries can only dream about. Be proud to be an American.

How to prepare your pet for summer fun - and beyond The dark, cold days of winter are nearly behind us, and many people are looking forward to warmer weather and outdoor activities. Dogs also appreciate their time in the sun. So, it’s important to keep in mind what you need to do to make sure your dog is ready to enjoy summer activities. The American Veterinary Medical Association (AVMA) provides important summertime pet care tips, including: * Provide adequate water and shade * Never leave your dog in the car * Take walks and play outside during cooler hours of the day * Avoid walking on hot pavement that can hurt your dog’s paws * Provide regular flea and tick protection And, if your dog isn’t on a regular schedule of heartworm preventive, now is a good time to start. Many people don’t realize that while mosquito bites are usually a minor irritation for most people, for dogs, just one mosquito bite can be life-threatening. This is because
mosquitoes carry heartworm. Heartworm disease may exhibit few symptoms. When diagnosed, it is difficult and expensive to treat and, if not caught in time, can be fatal. If you don’t live in an area with a heavy concentration of mosquitoes, or if your dog doesn’t spend a lot of time outside, you may think that your dog is not at risk. According to the American Heartworm Society (AHS), “Heartworm disease is spreading to new regions of the country each year. Stray and neglected dogs and certain wildlife such as coyotes, wolves and foxes can be carriers of heartworms. Mosquitoes blown great distances by the wind and the relocation of infected pets to previously uninfected areas all contribute to the spread of heartworm disease.” The AHS recommends year-round protection because it is “an easy thing to do and is much less expensive than treating serious, sometimes deadly, heartworm disease.” Leading veterinary organizations including the Companion Animal Parasite Council, the American Animal Hospital Association and the AVMA also support year-round protection. For many people, however, remembering that monthly heartworm pill is easier said than done. Recently, the U.S. Food and Drug Administration Center for Veterinary Medicine agreed to revisions under which ProHeart 6, a six-month injectable heartworm
preventive, may be administered. The changes were made based on a safety study encompassing 4 1/2 years’ worth of data that demonstrated that predictable safety and efficacy remained consistent as use of the injection increased. This data shows that ProHeart 6 is safe and effective for the prevention of canine heartworm disease for six full months in dogs age 6 months and older. “Monthly heartworm medications are effective, if they are given on the proper schedule,” says John Santilli of Mayfair Animal Hospital in Cary, N.C. “Unfortunately, many of my clients have busy lives, and, while they have the best of intentions, doses are missed. Heartworm disease is a serious problem here in North Carolina. That’s one reason I rely on the six-month, injectable heartworm preventive. Not only does it give my clients the peace of mind that their dogs are protected against heartworm disease, the biannual visits allow me to make sure that those dogs are healthy in other respects, too. We can check for any dental issues, examine for tumors and help keep our canine patients in good shape for summer activities - and all year round.” As with any medication, it’s critical to consult with your dog’s veterinarian to see if an injectable heartworm preventive is a good option to provide six months of protection to your dog
and six months of peace of mind for you. I M P O RTA N T S A F E T Y INFORMATION: ProHeart 6 should be used in healthy dogs. Do not administer to sick, debilitated, underweight dogs or dogs that have a history of weight loss. Prior to administration, ProHeart 6 certified veterinarians should continue to assess patient health through a medical history, physical examination and if deemed appropriate, diagnostic testing. Continue to use caution when administering ProHeart 6 concurrently with vaccinations. Adverse events, including anaphylaxis, have been reported following the concomitant use of ProHeart 6 and vaccines. In some cases, anaphylactic reactions have resulted in death. Use with caution in dogs with pre-existing or uncontrolled allergic disease (food allergy, atopy or flea allergy dermatitis). Dogs receiving ProHeart 6 should be tested for existing heartworms as per the product label. In people, avoid ProHeart 6 contact with eyes. If contact with the eyes occurs, rinse thoroughly with water for 15 minutes and seek medical attention immediately. Respecting the stars and stripes: American flag etiquette
Summers are packed with outdoor activities, barbecues and patriotic celebrations. While the American flag is often an important part of these celebrations, many of us have questions about how to properly care for and display it. “Flag etiquette can be confusing,” says Mary “Dubbie” Buckler, executive director and national secretary of the American Legion Auxiliary. “Many Americans want to show patriotism, but do not know the standards of respect and traditions associated with flag flying.” The American Legion Auxiliary, the world’s largest women’s patriotic organization, helps to advance the mission of The American Legion, the nation’s largest veteran’s service organization, to provide service to veterans, military and their families. The American Legion has played an important role in establishing the standards of flag etiquette since before the passing of the first national codes in 1923, and has worked diligently to uphold these historical standards. Today, much of flag etiquette can be found in the Flag Code, official national rules regarding the American flag. “The American flag is meant to be enjoyed and celebrated,” Buckler says. “The American Legion Auxiliary is passionate about educating the public so they can do so with proper respect for the freedom and sacrifices it represents.” Page 24
Buckler shares the following guidelines for using, displaying and caring for the American flag. Hoisting and lowering of the flag * The flag should be hoisted briskly and lowered ceremoniously. * The flag of the United States of America is saluted, or acknowledged by placing a hand over your heart, as it is hoisted and lowered. * When lowered, the flag should never touch anything beneath it, such as the ground, the floor, water or merchandise. The American Legion frequently conducts flag retirement ceremonies, often on Flag Day, June 14. Flag etiquette was established to honor and pay tribute to our nation and its history. As such, certain uses of the American flag are considered disrespectful. The flag should never be: * Displayed with the union down, except as a signal of dire distress in instances of extreme danger to life or property.
* Used as a drapery or for any other decoration. * Carried flat or horizontally, but always aloft and free. * Used as a receptacle for receiving, holding, carrying or delivering anything. * The flag should never be used as apparel, bedding or drapery. * Festooned, drawn back, nor up, in folds, but always allowed to fall free. Blueberry Vanilla Ice Cream Cake with Cream Cheese Frosting
Prep time: 20 minutes Freezing time: 6-12 hours Servings: 10-12 10 ounces (about 2 cups) fresh blueberries, cold, plus extra for decorating 16.9 ounces heavy whipping cream, cold 6 ounces white granulated sugar, chilled 1 packet The Curious Creamery Vanilla Ice Cream Cake Mix 1 tub (14 ounces) cream cheese frosting sliced strawberries In blender or food processor, puree 10 ounces blueberries until smooth then place in refrigerator. Cover mixing bowl with dish towel to prevent splattering. Turn mixer to high and mix for 4 minutes. The mixture will become wavy and creamy, and almost double in volume. Pour mixture into 9-inch springform pan. Cover with plastic wrap and freeze at least 6 hours. Once frozen, ice cream cake will easily release from pan. Have a Flag-Waving Fourth of July! I’m bringing a fantastic flag cake to this year’s party - it serves a lot of people and it’s easy to make. I’ll let you in on two little secrets that make this cake taste extra good: instant potato flakes keep the cake tender and moist, while mini chocolate chips give you little bursts of chocolate with every bite. The colorful fruit on top not only adds great flavor, but it turns this cake into a showstopper that has guests “oohing” and “ahhing” in delight! If you’re going to a potluck party this year, I have some tips for being a good guest: * Keep it safe: It’s tricky to keep hot foods hot and cold foods cold, so make sure the food you’re bringing will be safe at room temperature. For example, on a hot summer day, vinegar-based salad dressings are a better choice than mayonnaise-based ones. * Keep it simple: Bring dishes that are ready to serve. Asking to pop something into the host’s oven for “just a few minutes” is inconvenient for the host and the guests waiting to eat. * Keep it practical: Label your dish so that guests know what they’re getting. It’s also a big help if you bring your own serving utensils - the host won’t be forced to hunt for something and the line won’t get held up waiting.
* Keep it yours: If you need to take your serving dish home, be sure to label it. A bit of masking tape with your name on it can be discreetly placed on the dish so it doesn’t get mixed up with someone else’s. Independence Cake Makes 20 servings
1 cup water 1 cup instant mashed potato flakes 2 2/3 cups all-purpose flour 1 tablespoon baking powder 3/4 teaspoon salt 2 teaspoons ground cinnamon 1/2 teaspoon ground nutmeg 2 2/3 cups granulated sugar 1 cup (2 sticks) butter or mar garine, softened 4 large eggs 3/4 cup milk 2 cups (12-ounce package) Nestlé Toll House Semi-Sweet Chocolate Mini Morsels 1 container (8 ounces) frozen lite whipped topping, thawed 2 cups sliced strawberries 1/2 cup blueberries PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan; line with wax
paper. HEAT water to boiling in small saucepan; remove from heat. Stir in potato flakes until moistened. Cool to room temperature. Combine flour, baking powder, salt, cinnamon and nutmeg in a medium bowl. BEAT sugar and butter until crumbly. Add eggs one at a time, beating well after each addition; beat in potatoes. Gradually beat in flour mixture alternately with milk. Stir in morsels. Spoon into prepared baking pan. BAKE for 45 to 55 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 15 minutes.
Invert onto wire rack; remove wax paper. Cool completely. Transfer to serving platter. FROST sides and top of cake with whipped topping. Just prior to serving, arrange strawberry slices and blueberries on top of cake to represent the American flag. Five Tips for Safe Summer Sun By Kevin Ronneberg, M.D. Summer has arrived. As the weather heats up, it’s critical for beachgoers and outdoor fun-seekers to be sun-safe. This begins with choosing the right sunscreen to protect yourself from harmful UV rays. Equally important are these five simple tips from the Skin Cancer Foundation, which also will help you mitigate sun damage and reduce the risk of skin cancer. First, seek the shade. Simply minimizing exposure to UVA and UVB rays can go a long way toward protecting your skin. Taking a break from direct sun is especially important between the hours of 10 a.m. and 4 p.m., when rays are strongest. And remember, clouds don’t block UV rays. Infants under 6 months should always be kept out of the sun -- protected with clothing, an umbrella or a stroller hood. Children and adults should wear protective clothing, including wide-brimmed hats and UV-blocking sunglasses. Second, use a broad spectrum (UVA/UVB) sunscreen with SPF 15 or higher. Regardless of the season, this kind of sun protection should be used on a daily basis. Most people understand the importance of sun safety during the summer months, but many underestimate the need for year-round protection. The temperature may drop, but UV rays remains strong. And the cooler temperatures may actually prevent people from realizing the extent of the damage the sun is doing to their skin. Next year, new regulations from the Food and Drug Administration will help consumers know they’re getting the right protection by prohibiting manufactures from labeling their sunscreens as Page 28
“broad spectrum” or making claims about protecting against skin cancer and aging unless they’re SPF 15 or higher. And sunscreens with lower SPF values will have to sport a warning that the product may not offer protection against the harmful effects of exposure to the sun. Third, apply 1 ounce of sunscreen to the entire body 30 minutes before going outside. According to the Skin Cancer Foundation, for full SPF protection, sunscreen must be applied half an hour before sun exposure. If you are average size, you’ll need a full ounce -- or about two tablespoons -- to adequately cover your skin. Studies show that most people apply less than half that amount, losing the full benefit of the SPF protection. Reapplication is just as important as putting sunscreen on in the first place, as sunscreens tend to break down with exposure and can be rubbed off or washed off by sweat or water. So sunscreen should be applied every two hours, and immediately after swimming or a set of tennis. During a full day at the beach, one person should expect to use at least a quarter of an 8 oz. bottle of sunscreen. Fourth, do not let yourself burn. Sunburn is the most immediate and obvious sign of UV damage. When immune cells race to the injured skin site to start healing the damage, they produce the reddening and swelling. Tanning is the skin’s response to this damage and may permanently affect skin cells. While many believe a “base tan” will prevent damaging burns, that’s not the case. There is no such thing as a healthy or base tan. Finally, check your skin regularly and ask your doctor for a skin cancer exam annually. One in five

Americans will develop skin cancer. Tans and burns can be the first step. Intermittent but intense UV exposure is more closely associated with melanoma, the most deadly variety of skin cancer, than chronic sun exposure. One blistering sunburn in childhood or five in a lifetime doubles the risk of melanoma. To check yourself for signs of skin damage, inspect your skin from head to toe, looking for spots or sores that heal too slowly, new growths, and any moles or beauty marks that change in color, texture, or size. And once each year, be sure to ask your physician for a skin checkup. Sunscreens are an essential part of a healthy lifestyle. They keep skin looking young and reduce the risk of many skin cancers.
