Wooden Boat Festival June 8-10, 2018

Looking for something fun to do this weekend. June 9 -10, the 5 th Annual Newport Beach Wooden Boat Festival will be held at Balboa Yacht Club (BYC) located at 1801 Bayside Drive, Corona del Mar. This is yachting’s equivalent of a Concours d’Elegance and a “must-see” event open to the public; you won’t want to miss it! Last year nearly 4,000 visitors attended the free event, which also offers complimentary shuttle and water taxi service to and from Balboa Yacht Club. In addition to being able to view and board nearly 50 of these wooden treasures, there will be so much else to make Saturday a fun day for the whole family: live music, maritime art and exhibits, delicious food and libations, a silent auction, and the very popular kids toy boat building pavilion. All of this at Balboa Yacht Club in collaboration with its strategic alliance partners, Discovery Cube’s Ocean Quest, The Balboa Bay Club &amp; Resort, Bahia Corinthian Yacht Club, the City of Newport Beach, the County of Orange, and Visit Newport/Newport Beach & Co. Last year, the County of Orange officially recognized the event, with Chairwoman Michelle Steel in attendance to present a proclamation

by the County naming the second weekend in June henceforth “the Newport Beach Wooden Boat Festival Weekend.” The Spirit of Dana Point will be arriving at the BYC docks as this year’s featured vessel. Built by local Dennis Holland (who started building this boat in 1970 in his Costa Mesa backyard), Newport Harbor will welcome back his originally-named Pilgrim of Newport on Friday, June 8. This 118-foot wooden schooner is lovingly cared for today by the Ocean Institute in Dana Point. Baby on board? 8 tips for stress-free infant travel Whether it’s a quick weekend away or a weeklong adventure, family travel is a great way to bond and create lifelong memories. However, if you have an infant, you may be hesitant to pack all those bags and venture to the unknown. “With their love of a set schedule and the familiar, plus loads of gear, babies are natural homebodies,” says Sandra Gordon, baby safety expert and blogger at www. babyproductsmom.com. “Still, they can be surprisingly adaptable and getting out and about can be loads of fun for everyone. The trick is to be prepared so you can enjoy the journey and the destination.” Gordon offers eight tips and tricks that make infant travel easy so everyone can have an enjoyable vacation: Prepare the diaper bag The diaper bag is your go-to throughout your trip. Pack everything your baby might need including diapers, wipes, a change of clothes, snacks, toys, a pacifier, feeding supplies, infant formula and lots of Ziploc bags for dirty bottles, clothes, etc. An extra shirt for yourself is a smart addition as well, just in case. Pack pre-measured, dry powder baby formula Whether on the plane or out for the day, pack two to four bottles with premeasured, dry baby formula that you can mix with bottled water at feeding time. To save up to 50 percent, buy store brand infant formula. All infant formula sold in the United States is regulated by the U.S. Food and Drug Administration, so store brand formula must meet the same FDA

standards as the big advertised brands. It’s available wherever infant formula is sold, such as Wal-Mart, Sam’s Club and Target. Bring a prepared bottle Bring a prepared bottle for the airport; it can help keep your baby content during the lengthy checkin process. It’s also a must during takeoff to relieve ear pressure. You can take more than 3.4 ounces of infant formula or breast milk through airport security. Tell the transportation security officer that you have medically necessary liquids at the beginning of the checkpoint screening process. Visit the TSA for more info on flying with children. Split up your stuff When packing bags you plan to check at the airport, split up the contents so that each suitcase has everyone’s clothes in it, including your baby’s. That way if a bag gets lost, everyone will have something to wear for the next few days until your bag is found. Essentials such as formula, medicine, etc. should be packed in your carry-on. Stick to baby’s schedule Babies rely on a schedule so there’s no need to disrupt it when on vacation. Try travelling around nap time for domestic flights or at bedtime for international flights. Be sure to bring along her favorite stuffed animal or blanket that she normally sleeps with so there’s something familiar to sooth her. Baby can sleep and you can relax. Avoid popular travel times Avoid crowds and save money by travelling on slower days. The day prior to holidays will always be hectic,

so opt to fly two to three days before or after to enjoy a slower airport plus cheaper ticket prices. For non-holiday travel, avoid early-morning flights on weekdays so you and your baby don’t have to compete with harried business travelers. Rent gear If you can’t bring all your gear when travelling, consider renting. Ask your hotel about rental options in the area so you can have everything you need to make baby feel comfortable without having to lug items across the country. It is an extra cost, but it also saves you the cost of having to check bulky items on the plane. Eat in or eat out early Book a hotel with a kitchen so you can make baby-friendly foods in a comfortable space. When you do want to eat out, remember that prime time for eating out with infants, toddlers and preschoolers is Sunday through Wednesday before standard lunch or dinner times (11:30 a.m. or 5:30 p.m.). Restaurants are less crowded and you’ll get faster service. Travelling with a baby gets easier every time you do it. With these tips you’ll satisfy your wanderlust without worry, plus your little one will have a great time. - (BPT)

Santa Margarita Catholic High School celebrates the Class More than 3,600 friends and family members gathered at the UCI Bren Events Center on Friday, June 1, as Santa Margarita Catholic High School’s 449-member Class of 2018 received their diplomas during the school’s 28th commencement ceremony. The Most Rev. Timothy E. Freyer, auxiliary bishop of the Diocese of Orange, presided over the ceremony. Freyer was joined by Interim Superintendent Sally Todd of the Diocese of Orange, who reflected on the faith and spiritual development, academic excellence and character formation Santa Margarita provided. “You are definitely not the person graduating today that you were when you walked onto the campus of Santa Margarita,” Todd said. “You have grown in learning, wisdom and faith – yes, but also as a result, integrity as a person.” Principal Raymond Dunne and President Andy Sulick ’91 offered their personal reflections before Assistant Principals Sean Basford and John Hayek assisted Bishop Freyer with the conferral of diplomas. Select members from the Class of 2018 joined school and diocesan leadership on the dais. Niko Mancera of Laguna Niguel brought chills to the crowd with his rendition of the national anthem; ASB President Garrett Domier of Coto de Caza led the traditional tassel ceremony; and Andy Concialdi of Trabuco Canyon was recognized as the school’s Caritas Award recipient, which is given to the student that best embodies the school charism of Caritas Christi, the love of Christ. At the top of their class academically, valedictorian Rachel Kim of Laguna Niguel and salutatorian Nathaniel Torres addressed their classmates. Kim, an immigrant from Korea, will

attend Stanford University while Torres of Rancho Santa Margarita plans to study at UCLA. Kim shared with her classmates that she was confident they would go on to change the world in their own unique ways. Quoting Nelson Mandela she said, “Education is the most powerful weapon which you can use to change the world.” She went on to say, “We’ve been incredibly blessed to receive an SM education … All 450 of us will have a positive impact on society in 450 or more different ways-- some of us want to be doctors, nurses, lawyers, engineers, actors, politicians, entrepreneurs, journalists, athletes, and for some of us, in this age of rapid technological change, our future jobs probably don’t even exist yet. And that is the most exciting part. Masquerade Ball FUNdraiser a Smashing Success!

Photo by Jim McCracken This year’s West County Area Guild’s 6th Annual FUNdraiser, “Masquerade Ball” was a smashing success held at the Irvine Duck Club. Folks were dressed in all sorts of attire, someone they admired, someone historical, their favorite crooner or royalty. From Zorro and his wife Elena de la Vega to a female swashbuckling pirate, the costumes were both inventive and hilarious. Magic Castle Magician Joyce Basch wandered around through this kaleidoscope of entertainment showcasing her sleight of hand encouraging guests to watch in vain to uncover her secrets of the trade. The Karaoke King kept the music going while people limbered up their voices to be ready to participate in the Karaoke Contest when the time was right. Sipping cocktails, the myriad characters munched on delightful appetizers of beef kabobs, crab delectables, and more waiting for dinner to be served. Meanwhile, costumed guests lined up to be judged in four separate categories. The funniest costume award went to the nun, Carol Dodson, and her monk, Tom Keyes. Most original costume went to Gail Daniels who simply donned a brimmed floral hat with a $2.98 price tag dangling from it – truly a Minnie Pearl, American country comedienne of Grand Ole Opry and Hee Haw fame. Best Couple Costume was awarded to the Kinkades as Robin Hood and Maid Marion. Finally, Zorro and his beloved, Elena de la Vega aptly portrayed by Stephen and Wendy Fink won for the Best Overall Costume. In between all this, warmed up voices plied their talents with a variety of music. Kenny Rogers and the First Edition would have gloried in Jim Daniels’ rendition of “Ruby, Don’t Take Your Love to Town”. Apparently, the judges thought so too as Jim was honored with first prize. A Marlene Dietrich sound-alike, Margaret Nolde, walked away with second prize as she warbled her way through the soulful melody, “Lili Marlene”. “Unforgettable” was the duet of Louise Costa and Karaoke King Roy Southerland winning the 3rd prize for Louise. Not only did the West Area Guild chapter members outdo themselves in talent, knowledge, and creativity, members picked up some great auction items – food, experiences, gift cards were the most popular offerings this year. Masquerade Ball raised about $7,500 this year to support Segerstrom Center’s artistic and education programs. This year’s event was planned and organized by co-chairs Louise Costa and Carol Strauss, West Area Guild Chairman with committee members Delphi Ballinger, Ed Cady, Gail and Jim Daniels, Diana Hardy, Susan Kinkade, Marty Olds, Margaret Ann Vincent, and Hallie Whelen. The Guilds of Segerstrom Center for the Arts is one of the largest and most prestigious support groups for a non-profit organization in Orange County. The Guilds, which is comprised of 22 chapters and nearly 1,600 members, is respected and admired for its contributions to Segerstrom Center for the Arts and is emulated by many other arts organizations around the country. Guilds members are Center ambassadors, spreading the word about the Center among their friends and neighbors and encouraging them to enjoy and use this great community resource. The Guilds raises funds for the Center, Orange County’s largest non-profit arts organization. Guilds members have contributed more than $14 million dollars in support of the Center since their organization was founded. Their support helps the Center to present its renowned performing arts series, which includes dance, Broadway shows, cabaret, jazz, classical music, family entertainment, cutting-edge theater and many free and low-cost performances and events. Close to the heart of The Guilds is the Center’s education programs that reach hundreds of thousands of young people and educators each year with performances and arts-in-education programs at the Center and on school campuses. Segerstrom Center for the Arts is unique as both an acclaimed arts institution and as a multi-disciplinary cultural campus. It is committed to supporting artistic excellence on all its stages, offering unsurpassed experiences, and engaging the entire community in new and exciting ways through the unique power of live performance and a diverse array of inspiring programs. Free performances open to the public from outdoor movie screenings to dancing on the plaza and many other special events. Mission Viejo, Saddleback Valley Elks Honor Our Fallen Heroes

Elk Veterans gather for the annual group photo Article by Mike Long Photos by Steven Steele and Mike Klinger On a beautiful, sunny Memorial Day afternoon, the members of the Mission Viejo Elks Lodge united to commemorate our fallen United States servicemen and servicewomen. Lodge Exalted Ruler Mike Klinger welcomed more than 200 members, Veterans and other guests as they enjoyed Elks fellowship and dined on delicious barbecued hamburgers, hot dogs and corn on the cob. Exalted Ruler Klinger stepped to the podium and spoke of the true meaning of Memorial Day, stating, “Today, Americans across this nation and citizens located around the world will pause throughout the day to observe Memorial Day. Since its first official observation on May 5, 1868, when it was called Declaration Day, it has been a day of remembrance for those who sacrificed and died in our nation’s service. And while it was originally dedicated to honor Civil War soldiers, we know it today as a celebration in memory of all who have fought for and defended our right to freedom.” Next, Lodge Veterans Services Chairman Jerrie Muir took the microphone and lead the gathering to recite the Pledge of Allegiance and sing “God Bless America”. Afterwards he requested a moment of silence from those assembled to show support of our First Responders and the men and women of our Armed Forces. Vets Chairman Muir then called for all Veterans in attendance to come forward to 27 year Elks member, Richard Holmes shows off this 63 year old jacket he wore aboard the be recognized and participate in a group photo. Orange County Coastkeeper Releases 2017 Data on Human Activity in Marine Protected Areas

Orange County Coastkeeper published its latest MPA Watch report, an analysis of human activity at Orange County’s seven Marine Protected Areas (MPAs) in 2017. The report is based on recent data collected by Coastkeeper volunteers who patrol local MPAs to research and protect vulnerable ecosystems. MPAs protect valuable marine environments by prohibiting or limiting activities like fishing, oil drilling or development projects. They create safe places for marine populations to grow and thrive, while also providing beautiful destinations for people to enjoy. By maintaining healthy marine environments and species within MPAs, nonrestricted waters can offer healthy fishing stocks for sport and commercial fishers. “Our data show that thousands of locals enjoyed our pristine, healthy MPAs last year. It’s all thanks to the passionate volunteers who spend their time patrolling the waters that make Orange County so special,” says Ray Hiemstra, associate director of programs for Orange County Coastkeeper. “It’s an inspiring reminder that the health of our oceans is up to all of us.” Coastkeeper reports that volunteers counted 21,176 people visiting local MPAs during its surveys. 85.2 percent of observations were onshore recreational activities like swimming, sunbathing, running and wildlife viewing. Offshore activities like surfing, diving, snorkeling and boating comprised 14.8 percent of total activity. The surveys found that more than 98 percent of

recorded activities were non-consumptive, allowing marine life to thrive undisturbed. Volunteers also counted 101 potential violations of MPA regulations. Coastkeeper says these potential violations demonstrate a need for continued community education to inform the public how to sustainably enjoy MPAs. The organization also calls for increased enforcement of MPA regulations to hold violators accountable. “When I learned that our government agencies need information on the activities occurring in our MPA in order to protect them, volunteering seemed like a great way to fill the gap,” says Lauren Hisatomi, a Coastkeeper volunteer in the MPA Watch program. “I get to keep Orange County fishable and swimmable while spending time at the beach.” Volunteers in Coastkeeper’s MPA Watch program receive classroom and field training to gather accurate, reliable information on human activity in MPAs. The program’s ongoing research ensures MPAs continue to protect our coastal ecosystems so they can be enjoyed for generations. Petty Officer 1st Class Elizabeth NuNez-Orona is an aviation ordnanceman with the Kestrels of VFA 137, which operates out of Naval Air Station Lemoore. A Navy aviation ordnanceman is responsible for maintaining the weapons systems on the aircraft and uploading and downloading ordnance on the aircraft. “Growing up I was taught that you have to hustle,” NuNezOrona said. “You have to work for what you want, and nothing is free. It’s the same in the Navy.” Members of VFA 137 work with the F/A 18 Super Hornet, one of the most advanced aircraft in the world. The Super Hornet takes off from and lands on Navy aircraft carriers at sea and is capable of conducting air-to-air combat as well as striking targets on land. It is approximately 61 feet long, has a loaded weight of 51,000 lbs., and

a max speed of 1,190 miles per hour. Operating from sea aboard aircraft carriers, the Super Hornet gives the Navy the power to protect America’s interests anywhere, at any time. The versatile jet has the ability to destroy targets located hundreds of miles inland, without the need to get another country’s permission to operate within its borders. “Strike Fighter Wing, U. S. Pacific Fleet, based at Naval Air Station Lemoore, California, is the heart of Naval Aviation,” said Capt. James S. Liza Minnelli Liza Minnelli, winner of four Tony Awards, an Oscar, a special “Legends” Grammy, two Golden Globe Awards and an Emmy, is one of the entertainment world’s consummate performers. In film, on stage and in television, Liza has won critical acclaim, a multitude of fans, and recognition from her peers in show business, giving new dimension and credibility to the word “superstar.” One of America’s true legends, Liza began her professional career at an early age, 16, in 1963, in an OffBroadway revival of the musical Best Foot Forward, for which she received her first award, the Theatre World Award. It would be the first among many show business honors. In 1972 her movie career peaked when she played Sally Bowles in Cabaret. The film won eight Oscars, including Best Actress for Liza. The role also earned her a Golden Globe and a British Film Academy Award. The unqualified success of Cabaret put Liza on the covers of both Time and Newsweek in the same week. Liza starred in the first concert ever filmed live for television in 1972. The seminal Liza with a Z produced a Top 20 album and won the Emmy for Outstanding Single Program and the prestigious Peabody Award. It has been released in recent years on DVD. In between her many TV and film roles, Liza has never stopped touring and has long been considered one of the most exciting concert performers, electrifying audiences around the world and setting records at the most prestigious venues, from the Palladium in London and Opera House in Sydney, to the Olympia Theatre in Paris and New York’s historic Carnegie Hall, where one of Liza’s greatest triumphs was her unprecedented three-week concert engagement in 1987. Liza was the first entertainer in the hall’s history to completely sell-out three weeks of appearances. She had earlier appeared in concert at Carnegie Hall in 1979. nutritious diet is crucial for overall health and well-being. While it’s OK to indulge from time to time, it’s important to make sure you’re providing your body with appropriate nourishment. There are many ways to help you add more of the essential nutrients you need into everyday meals, including these nutritious ideas from CocoaVia.

Sneak in More Fruits and Vegetables.

You can bulk up the nutritional value of nearly any meal by incorporating fruits or vegetables directly into your recipes. Pureeing veggies is a good way to disguise textures or flavors you might typically avoid. For example, celery is a natural flavor enhancer for many types of broth soup. Frozen foods are often perceived as less nutritious, but they can contain just as many nutrients as fresh produce. In fact, since freezing often involves picking the food at its peak and then quickly freezing it, freezing can actually help retain vitamins more efficiently than refrigeration or canning; frozen vegetables can actually hold on to nutrients longer than fresh produce and are a great alternative when seasonal fruits and vegetables are unavailable. In many cases, frozen veggies also make it easy to experiment with better-for-you meals because the cleaning and prep work is already done. You can try adding them to soups, stir-fries, casseroles and even pasta dishes.

Cook Quickly.

If you’ve historically shied away from cooked vegetables, you may find that proper preparation is the secret ingredient. Not only does overcooking veggies deplete their flavor, in

most cases it also diminishes their nutritional value. Cook veggies lightly and quickly using methods like stir-frying or steaming to help retain water-soluble nutrients like vitamins B and C.

Get Saucy.

You may think of dishes covered in rich gravy or sauce as unhealthy, and in some cases, you would be right. However, it’s actually quite possible to create saucy dishes that taste terrific. Both tomato sauce and pesto add nutrients and can top pretty much anything, from pastas to grilled chicken. Tomato sauce contains lycopene, a bright plant pigment known as a carotenoid that has been linked to a range of health benefits. Pesto is traditionally made with healthy pine nuts and basil, but you can also get creative and prepare this light sauce alternative with options such as arugula, spinach and heart-healthy walnuts or pecans.

While chocolate, including dark chocolate and natural (nonalkalized) cocoa powder, can be sources of cocoa flavanols, they are often not a reliable source of cocoa flavanols. While there are many misconceptions about chocolate, especially when it comes to its health benefits, these facts from the experts at CocoaVia set the record straight on some of the most common chocolate myths.

Prepping for a party: make-ahead appetizers make summer entertaining easy Don’t let the first “ding-dong” of the doorbell catch you up to your elbows in dirty dishes and half-finished appetizers. For your next party, prepare your appetizers ahead of time with these simple tips and recipes: “Let’s not reinvent the wheel. Take items you already know how to make and turn them cool and trendy with some add-ons,” says Chef Richard Worthen, culinary instructor at The Art Institute of Seattle. You can dress up egg, tuna or chicken salad with a variety of flavors and spices. He recommends chopped cilantro instead of chopped parsley, adding chipotle to egg salad or adding almonds, walnuts or pistachio nuts for some crunch. For a gluten-free appetizer, try lettuce cups. “You could do a quick chop of a variety of three-to-four items and put it in a lettuce cup,” says Chef Brian Shulse of The Art Institute of California - San Francisco, a campus of Argosy University. “It can also go traditional Asian - ground pork with some spices that can just be popped in the microwave to heat before serving.” “You could do a flat bread with seasonal vegetables on it,” Shulse says. “Make the bread in advance, roll it out, put olive oil on it, add seasonal vegetables, and bake.” Worthen recommends tomato toast, which is made by taking cut tomatoes and rubbing the juice and pulp into french

bread slices. This can serve as a base for any type of spread. Shulse says people tend to go to proteins, such as shrimp cocktail and cubes of steak, and not to the veggie tray. He says you can make all kinds of skewers with different meats, then add fresh chopped herbs and citrus to Greek yogurt for a quick and easy sauce. Another great make-ahead protein is tuna tartar, which can be made with a high-quality ahi tuna steak and served with store-bought kettle chips. Phyllo-wrapped asparagus, made with store-bought phyllo dough, is another easy recipe, along with water chestnuts wrapped in bacon. Simply wrap one third of a slice of bacon around each water chestnut, roll in brown sugar and bake at 425 degrees until brown and crisp. Try these easy make-ahead recipes courtesy of Shulse: Spicy Ahi Tartare Yield: 10 servings Ingredients: 2 pounds Yellow fin/Ahi tuna, diced in 1/8-inch pieces 1/2 cup cucumber, washed, dried, diced in 1/8-inch pieces(optionalpeel) 1-2 garlic cloves, crushed, peel removed and minced 1-2 serrano or jalapeno pepper, seeded, minced fine 1 shallot, finely minced (substitute 2 green onions) 1 orange, washed, dried, zested,

juiced 1 lime, juiced 1 teaspoon dry oregano (or 2 teaspoons fresh) 2 teaspoon ground cumin 2 teaspoon kosher salt (or more to taste) 1 teaspoon sugar 1 bag thick potato chips (like Kettle chips) or crackers Directions: Gently mix all the ingredients together and refrigerate, covered, until ready to use. This will hold for two to four hours (or up to overnight). To serve, gently mix and place in a serving bowl with a spoon, with the chips on the side. Lettuce Cups Yield: 15 bites Ingredients: 2 tablespoons sesame oil 1/2 yellow onion, small dice 1 tablespoon garlic, smashed, peeled, minced 1 tablespoon ginger, peeled, grated fine (or use micro plane) 1/2 bunch green onions, minced, white and green kept separately 1 pound ground pork or turkey 1 teaspoon Kosher salt 1/2 cup water chestnuts, small dice 2 tablespoon soy sauce 2 tablespoon Hoisin sauce 1-2 tablespoons Chinese hot mustard 1/2 cup peanuts, crushed or chopped 15 Iceberg lettuce cups, cut into

3-inch squares Directions: Over medium-low heat, preheat a medium size saute pan for 30 seconds. Add the sesame oil and swirl the pan until it is fully coated with oil. Add the onion, garlic, white part of the green onion and ginger. Sweat for several minutes until the mixture begins to look translucent. Turn up the heat to high and add the ground pork. Cook on high, stirring until the meat turns pale brown. Turn the heat back down to medium-low and add the salt, diced water chestnuts, soy sauce and Hoisin sauce. Cook until moisture evaporates. Turn the pan off and add the Chinese hot mustard to taste. After this has cooled down, cover and refrigerate. Can be made up to four days in advance. Reheat gently in a microwave or saute pan until just warmed through. Place in a serving bowl, top with peanuts, and serve with lettuce cups.

Be prepared: Red Cross urges blood and platelet donation Because emergency situations are unpredictable, the American Red Cross needs regular donations to help ensure that blood products are available for patients at a moment’s notice. You can help ensure a sufficient supply for accident victims and others with serious medical conditions. This May, the American Red Cross is calling for donors to give blood and platelets regularly to be prepared to meet the needs of patients in emergency situations. According to the National Trauma Institute, trauma accounts for approximately 41 million emergency department visits and 2 million hospital admissions each year. In March 2015, Kevin Frame suffered life-threatening injuries in a head-on collision during spring break. He received blood products to treat internal injuries immediately after the accident and during multiple surgeries while recovering. “Without the blood and plasma products made available from donations, I would not be alive today to continue my rehabilitation journey,” said Frame, who had to relearn to swallow, speak and walk after the accident. Regular blood, platelet and plasma donations help ensure that blood is available at a moment’s notice. In fact, it is the blood on the shelves that is used to help save lives at the time of an accident or sudden illness. In trauma situations, when there’s no time to check a patient’s blood type, emergency personnel reach for type O negative red blood cells and type AB plasma because they can be transfused to any patient, regardless of blood type. Less than 7 percent of the population has type O negative blood, and only about 4 percent of the population has type AB blood.
