The benefits of probiotics for babies With the increasing number of products in the marketplace containing probiotics, many new parents might be wondering if their babies could benefit from probiotics. Eifman Ballet’s Return to Segerstrom Center for the Arts with the Fateful Story of Red Giselle Segerstrom Center for the Arts welcomes Eifman Ballet of St. Petersburg June 16 – 18, 2017 performing Red Giselle, Boris Eifman’s ballet fantasy inspired by the tragic and tumultuous life of one of Russia’s greatest ballerinas, Olga Spessivtseva. This North American tour is in celebration of Eifman Ballet’s 40th anniversary. Eifman’s works appeal to the dance fan as well as those who crave powerful and provocative theater. Red Giselle is set during the beginning of the 20th century, an era of worldwide revolution, expatriation and personal tragedies, and Eifman’s ballerina is both a force and a victim in this captivating psychodrama. Tips to avoid distracted driving The pace of business never seems to stop, and thanks to the convenience of cell phones, many people work on the go, even while they’re driving. Yet cell phone use is one of the most common type of distracted driving, and it claims thousands of lives and causes thousands more injuries every year. More than a quarter of all car crashes involve cell phone use, both hand sets and hands-free, the National Safety Council (NSC) reports. In 13 percent of fatal crashes, the drivers were using cellphones, the National Highway Traffic Safety Administration (NHTSA) says. The actual number of cell phone-related accidents is likely much higher, since many states don’t yet compile and report data on cell phone use following a crash. Employers take up the issue Recognizing the ethical and liability issues that arise when employees drive while distracted, employers across the country have begun implementing distracted driving policies. Typically, these policies prohibit employees from using cellphones while driving on company time. In January 2017, the NSC reported
that Cargill was the largest privately held company to prohibit the use of mobile devices, including hands-free technology, while an employee is driving on behalf of the company. The ban also covers work related calls while commuting to and from work, even if employees are driving their own vehicles. “There is a time and place for doing business, and it’s not while you’re driving,” says Melanie Burke, director of health and safety at Cargill, a Minnesota-based privately held company with 150,000 employees around the world. Even Cargill’s Chairman and CEO David MacLennan is subject to the ban. In announcing the policy to employees in late 2016, MacLennan noted he was 138 days into cellphone free motoring. “It’s been liberating,” he told employees. NSC data shows about 20 percent of Fortune 500 companies have instituted cell phone bans, and of those, just 1 percent believe the ban affected productivity. Replace risk, keep productivity Taking care of business doesn’t mean you have to risk a crash. Here are six ways to keep up with the pace of business without using your cell
phone in the car: * Use an automated response app to let callers know you’re driving and can’t take their call at the moment. These free apps allow you to personalize the response and set your phone to automatically reply with a text message to incoming calls or texts. * If you’re driving a vehicle outfitted with communication technology, use its “do not disturb” feature to unplug from calls and texts while behind the wheel. * Use shared calendars to block off times when you’ll be on the road and unable to answer a call. The calendar item will help alert coworkers and anyone else connected to your calendar when you’ll be out of touch and when they might be able to reach you again. * Remove temptation. A study by AT&T found 62 percent of drivers keep their phones within reach in the car. Put yours away where you can’t see or reach it. You can place it in your purse, briefcase or messenger bag, and place the bag in the back seat. Further reduce distraction and temptation by turning your device off before stowing it. * If you absolutely must take a call
while on the road, pull over in a safe location. If a call comes in while you’re driving, allow it to go to voicemail until you’re safely pulled over, then return the call. * Be aware of other dangerously distracting behaviors, such as putting on makeup, tying a necktie or eating while driving. Do all your dressing and personal grooming before you leave home, and if you must snack while driving, choose food that is easy to manage, like a granola bar (unwrap it when you’re stopped), rather than something messy like a burger with all the fixings. “Before we had cellphones, if you had to take a business call while on the road, you would pull over and find a pay phone,” says Burke. “Productivity was fine and business got done. When it comes to time behind the wheel, safety is everyone’s most important job.” - (BPT)

Elks Host Carnival for Pediatric Cancer Patients and Their Families By Mike Klinger, Leading Knight “Free rides on the firetruck, free rides on the firetruck”, echoed throughout the Elks lodge as Past Lodge President Derek Randles and volunteer Tommy Nester gathered kids and their families to ride aboard an antique firetruck that screamed its’ siren for the crowd. The Carnival has started! On Sunday May 21, the Mission Viejo / Saddleback Valley Elks #2444 hosted their annual Cancer Kids Carnival benefiting the Orange County Foundation for Oncology Children and Families (OCF-OCF). The carnival was organized in 2005 by Betty Boelts, then First Lady to ER Harvey Boelts and co-organizer, Stephanie Bongartz. Since its inception, the carnival has grown from 15 volunteers to over 80 this past weekend. Committee chairperson Stephanie Bongartz started the day with a short pep-talk to the volunteers, “I am so excited to see so many volunteers for this year’s event. You are the life blood of the Elks and you make it possible for these kids and their families to have a great day and forget their sicknesses. Now, we need people on the cotton candy machine, Snow-cones, games out back and the prize tables. Everyone have fun and thanks!” Throughout the day, over 100 guests entered the balloon-filled lodge room, everyone greeted with warm smiles of volunteers handing out event tee-shirts and backpacks filled with goodies. Once the kids finished lunch of corn-dogs, chicken fingers, fries and lemonade, many stopped at volunteer tables to get a temporary tattoo or face painting, spent time coloring or added some color streaks with hair braids. Through the back doors and into the lodge backyard where the sights and sounds of the carnival were
underway with the sweet smell of cotton-candy and the sounds of ice grinding for Snow-cones. Lecturing Knight, Jamie Camunas and member AJ Pompos helped kids with the bounce-house leading their way down a tall, wet slide. Chaplain, Lane Keran helped manage the prize room with volunteers at every table eagerly waiting for the prize winners. Exalted Ruler, Mike Long, and volunteer Lloyd Bryan seemed to have the most fun watching the kids scoop plastic ducks from the pool-pond. After last years’ reptile exhibit which had the kids tangled with snakes and lizards, Mowgli Rescue brought in their puppy pen with eight delightful little puppies that melted the hearts of the kids and some adults. All the puppies are rescue dogs and were just adorable. Another highlight of the day was the antique firetruck on exhibit by the California Fire Museum and Safety Learning Center. Representatives from the museum had a booth set-up with historical photos and memorabilia, but best of the day was a ride on the firetruck with the siren screaming. The kids and parents alike piled in the rear of the engine, sat in the jump seats and even the co-pilot chair as the engine roared around the parking lot, everyone with a bright red fire hat on. Truly a treat for these kids. “Boy has this event grown,” explained ER Mike Long. “It is so energizing to see the happy faces of the kids and so many volunteers, and by the end of the day, it may be hot outside but so much good was done here today to help these kids and their families. Elks do care, Elks do share!” As the carnival ended and cleanup was done, we need to thank every member and volunteer, the Mowgli Puppy Rescue and California Fire Museum, that took time out of their

Recipe courtesy of the National Honey Board 2 cups graham cracker crumbs 1/2 cup butter or margarine, melted 4 packages (8 ounces each) cream cheese 3/4 cup honey 1/4 cup flour 5 eggs 1/3 cup heavy cream 1 tablespoon lemon zest, grated 1 teaspoon vanilla fresh berries, for garnish fresh mint, for garnish To make crust: In small bowl, stir together graham cracker crumbs and butter until well blended. Press mixture evenly onto bottom and sides of greased 9-inch springform pan; set aside. Heat oven to 350 F. To make filling: In electric mixer bowl, combine cream cheese, honey and flour. Beat until smooth. Add eggs one at a time, beating well after each. Beat in cream, lemon zest and vanilla. Pour cream cheese mixture over crust; bake 15 minutes. Lower oven temperature to 200 F and bake 1 hour and 30 minutes longer, or until center no longer looks wet or shiny. With oven off and door ajar, let cheesecake cool 1 hour in oven.
Remove cheesecake to rack to cool completely. Cover and refrigerate cheesecake at least 4 hours before serving. Garnish with fruit and fresh mint. Pair with chardonnay like Joseph Carr. Gradually beat in water. 1 1/2 cups all-purpose flour Divide batter between pans. Bake 1 1/2 cups unsweetened 25-30 minutes, or until sides pull cocoa powder, divided away slightly from pan and toothpick 2 teaspoons baking soda inserted in center comes out clean. 1 teaspoon baking powder Cool 10 minutes. Turn onto wire racks 1/2 teaspoon salt and cool completely. 2 cups honey, divided To prepare frosting: In medium 1/2 cup 2 percent low-fat milk bowl, combine remaining cocoa 1/2 cup vegetable oil powder, honey and vanilla, and 2 eggs cream. Beat until just thick and fluffy. 3 teaspoons vanilla extract, To assemble: Spread frosting divided evenly over sides and top of one cake 1 cup boiling water layer. Place second cake layer on 1 cup heavy whipping cream top. Job s earching skills to help boost confidence
Finding employment can be a fulltime job these days, and while there is good news that the jobless rate has dropped 8 percent in the last year according to the Bureau of Labor Statistics, the unemployment rate in August stayed relatively flat. This can make it a challenge for those looking for long-term jobs and careers. Before your confidence begins to wane, it can help to remember that the skills applied to a search for employment can strengthen performance on the job. “With a thoughtful and determined approach to finding employment, you can not only help yourself stand out from the crowd but you’ll also hone skills that will help you succeed on the job,” says Gizelle Ortiz-Velazquez, director of Career Services at Brown Mackie College - Miami. Persistence is key Rarely does anyone secure a position on the first attempt. “Looking for a job takes determination, patience and persistence. Candidates must look at job opportunities every day and use multiple resources, such as networking, online job boards, professional organizations and social media sites,” Ortiz-Velazquez says. Your persistence will apply to success on the job as well. “In life, we don’t always get the results we want the first time we try to solve a problem. We have to try again, look at the problem in a different way and look for the answer in different
places,” Ortiz-Velazquez continues. “Just like using multiple resources for a job search, employees must learn to use multiple resources to solve problems on the job.” Clear, focused communication is a must When interviewing, effective oral and written communication skills are a must. “Different companies recruit and interview in different ways. The process often varies from company to company, and can include phone screening, Internet screening, email communications and face-to-face interaction,” says Ortiz-Velazquez. The successful candidate must be prepared for all of them. She advises candidates to speak or write clearly and stay focused on the topic. At every step in the process, prospective employers evaluate each candidate’s ability to communicate. Once employed, effective communication skills can prove invaluable. “On the job, different employees prefer different forms of communication,” OrtizVelazquez says. “It is important to communicate effectively and convey necessary information well whether communicating face to face, over the phone or in writing.” Th e r e i s n o s u b s t i t u t e f o r professionalism Whether an employee or a prospect, it is important to remember that the way people conduct themselves
outside of the workplace is a personal reflection on them. “During a job search, most candidates take great care to ensure that they are dressing, communicating and representing themselves professionally,” Ortiz-Velazquez says. “On the job, however, employees sometimes get comfortable in the work environment and become less professional over time. This can lead to a less than professional reputation and hinder future opportunities.” Social media websites present a forum to be considered with an eye toward professionalism. OrtizVelazquez advises job candidates and employees alike to remove personal information and never post
questionable images or negative information about a coworker, boss or the company. “We’ve all heard the story about the employee that called in sick and then later the same day posted a smiling photo of himself while sitting at a sporting event,” Ortiz-Velazquez says. Those out there looking for employment can take heart in the skills they apply to the search. Those same strengths can help them succeed when they accept a position. John French celebrates the win aboard Center Court with EquiFit Groom’s Award winner Daniel Soto and Blenheim EquiSports’ Melissa Brandes Photos by: Captured Moments Twenty-five derby horses took to the grand prix field on Friday afternoon for the $10,000 USHJA International Hunter Derby at the Showpark Ranch & Coast Classic. It was John French aboard Center Court who emerged victorious, leading both rounds and finishing with a two-round total of 383. Truly a magical victory, the handsome bay turned eight years old this week and this spectacular win marked his eighth derby victory. Topping the pros,
junior rider Augusta Iwasaki and Small Adventure took home the overall red ribbon with an outstanding two-round total of 359. The judging panels drew from all over the country, with Chris Wynne (VA) and John Roper (TN) comprising one panel joined by Bill Ellis (FL) and Kathryn Griffiths (CA) who made up the second panel. Thomas Hern designed a flowing yet challenging track for the classic round. Riders who returned for the handy round were

then tested through both tight turns and options for long gallops. With a score of 88 + 7 bonus points from Panel One added to 89 + 9 bonus points from Panel Two, and 3 high option points, French and Center Court earned an impressive 199 in the second round, acing the competition. “In the Handy, you needed to turn pretty tight on the back side of the jumps. I wanted to make sure that [Center Court] was following me and landing on the leads so it would be really smooth,” French described. “He couldn’t have been better in the Handy.” French noted that Susie Hutchison has been working with the horse since the Blenheim Spring Series and came to help them prepare for the derby. “It meant a lot to me that he won because I know she put a lot of time into him,” he said. This derby title wrapped up a successful show for French and Center Court, who were Champions in the High Performance Hunter division earlier in the week. Going forward, he has plans for Center Court to make his USHJA Derby Championship debut this August in Lexington, Kentucky. Along with the tri-colored ribbon, French won the Roeckl Sports Winning Rider Award, taking home a pair of Roeckl Sports gloves, and the Blue Ribbon Blankets Winning
Trainer Award. It was Center Court’s owner, Kristen Hiller of Hiller Farms LLC, who won the Balmoral Winning Owner Award. Center Court performed beautifully over the jumps but also looked impeccable, earning his groom Daniel Soto the EquiFit Groom’s Award for Best Turned Out Horse. As she did in the Spring, Augusta Iwasaki won The Plaid Horse Highest Placing Junior Rider Award. The action in the grand prix field continues this weekend. Saturday afternoon highlights include young show jumpers competing in the $7,500 Interactive Mortgage Horses 10&U Futurity, followed by a solid group of competitors, including Will Simpson, Rich Fellers, Richard Spooner, Nayel Nassar and more, in the $60,000 Grand Prix of California, presented by EQU Lifestyle Boutique. Encore for Education did just that – a commercial real estate industry charity raised $161,345 to benefit Music Matters, a program created by Buchannan Children’s Charities and the Orange County Community Foundation – ALL to restart Orange County public school’s music programs. This was the fifth Encore for Education concert since Buchanan Children’s Charities was founded in 2007 and was attended by more than 1,300 people, the highest attendance in history. The concert was held at the new House of Blues in Anaheim and featured for the VIP’s tray passed goodies of Pulled Pork Sliders, Grilled Veggie Flatbread, Vegetarian Spring Rolls, Petite quesadillas with chicken – a taco station with all the fixings along with a pita/hummus and a yummy soft pretzel station with a ton of sauces to pick from (cheese, marinara, peanut butter and mustard!). General admission ticket holders were not left out as they noshed on Tater Tot stations that had a choice of cheese sauces, Carnitas and delicious BBQ Pulled pork and veggies. The LIVE performance from Cheap Trick did not disappoint as they were on fire as always. The grant also allows the districts to hire music teachers and purchase supplies to launch elementary music education programs. During the check presentation, Brunswick honored long time supporter Steve Fein for his decade of giving which is in excess of $75,000. “This grant touches more than the students from this year,” said Steve Venz, Coordinator of Visual and Performing Arts at the Orange County Department of Education. “Future students who will participle in music education programs will be impacted for many years to come.” Buchanan Children’s Charities, a 501(c) (3) organization, was founded to measurably improve the lives and educational opportunities for children in Dave MacLeod with Anita Mellon, Cynthia Murnane and Rachel Orange County. Since its inception in 2007, Encore for Education has raised Svoboda. $805,450 for the Music Matters initiative. Frank Lloyd Wright Waterfall Home For Sale On His 150th Birthday Out of over 500 structures built from Frank Lloyd Wright’s designs, there are residential homes, museums, churches, commercial buildings, mausoleums and more stretching from the United States around the world. He not only concentrated on the plans, but paid special attention from the building site to the interiors, designing the furniture, lighting fixtures, stained-glass windows and decorative ceilings. Most of Wright’s work was inspired by his appreciation of the simplicity and functionality of Japanese design where large walls of Shoji doors could be pulled back to expose calm gardens that became an integral part of the whole living experience. During his career, Wright created four design styles: Prairie, Textile, Organic and Usonian. Out of these designs have come many of the features we use and love today such as the open floor plan, radiant floor heat, which he began using in 1935, and glass walls and doors. MUSIC AND MOVEMENT PLAY VITAL ROLE IN BABIES’ AND TODDLERS’ DEVELOPMENT. TWO PROGRAMS CREATED BY PACIFIC SYMPHONY
While the smallest citizens of Orange County might have a difficult time telling you exactly why, they love music and dancing too! And on their behalf, Pacific Symphony and Orange County Music and Dance (OCMD) have teamed up to give babies and toddlers a jumpstart on their own development as well as their love of the arts with two unique programs— one specially designed for babies, the other for toddlers—called “Parent and Me: Music and Movement.” Parents and their youngsters are invited to take part in a series of innovative workshops with teaching artist Maria Simeone and Pacific Symphony violinist MarlaJoy Weisshaar that will have parent and child dancing, singing and moving together through brain-based learning activities! “We are fortunate to be in the same building as OC Music & Dance,” says Susan Miller Kotses, the Symphony’s vice president of education and community engagement. “From the start, we’ve had very close ties and have been talking about the Symphony presenting group music classes for all ages at OCMD as part of our overarching strategic plan, which focuses on a regional strategy of creating ‘hubs’ of activity in different cities in Orange County, with activities ranging from concerts to classes and everything in between. This pilot is our very first step in doing so, and our hope is that it will serve as the first phase of implementing our exciting new vision for the Symphony’s education and community engagement programs.” The four classes that make up each “Parent and Me: Music and Movement” workshops take place at Orange County Music and Dance, 17620 Fitch Ave., in Irvine. Each registration includes one parent and one child; parents wishing to register more than one child in the same class should plan to bring an additional adult with them to maintain the oneto-one, parent/guardian-to-child ratio. Skills that teach and support effective parenting through music, movement and creative play are taught throughout each class. “Parent and Baby” workshops are definitely a good time, chockfull of play-based musical classes for newborns through crawlers and their parents/guardians. Classes inspire optimal brain development through engaging live music played by a Pacific Symphony musician, tummy time, rhythm patterns and vocal expressions. Relaxation and destressing techniques for parents are also taught. The workshops follow the curriculum of a series of classes the Symphony created four years ago, and continues to present in partnership with the

Orange County Rescue Mission and in collaboration with Teaching Artist Maria Simeone. The primary goals for both workshops include: improving verbal and oral skills; learning the importance of play for child development; improving nonverbal communication and parent/ child bonding; increasing appreciation of music; supporting and meeting neurodevelopmental markers; providing opportunities for creativity and self-expression; and reducing stress. The presence of a Pacific Symphony musician playing live music at every session is key. The musicians are trained to respond to the needs of the class and to the directives of the teaching artist. As they play, they adjust their interpretation to the cues they receive, allowing for a musical experience that is tailor-made for each group at every class. “And of course, the quality of their artistry is not to be undervalued,” Kotses points out. “The quality of sound that is produced from our professional musicians would be impactful on its own!” Also, the curriculum is carefully
constructed to ensure optimal brain development for the participating children and babies through music and movement that are specifically chosen to facilitate a child’s brain development, as well as to build a bond between parent and child. Kotses says what she loves the most about the classes is that in addition to the parents being able to see the impact on themselves and their children, the class itself is a joyful experience for both parent and child. “Maria explains the rationale behind what she is doing in a gentle way, so as to help coach parents to re-create the experience at home, but it is done in a warm and nurturing way that helps to guide, rather than instruct. This, coupled with our musician’s beautiful and responsive playing, make the experience not only an educational one, but a relaxing and comforting one,” says Kotses. She then adds: “The classes are so incredibly impactful at the Rescue Mission, that we are thrilled with the opportunity to bring them to the broader public with our partners at OC Music & Dance.”

Spring also heralds the return of farmers markets. A trip to the market is a great opportunity to indulge in fresh healthy produce and to expand your horizons by trying new items or preparing them in different ways. Here are eight tips to make the most of your visit to the local farmers market: * Note the hours and dates of your local market on your calendar. Set reminders on your smartphone that will alert you when favorite items such as tomatoes, peas, beans and strawberries come into season. * Prepare your refrigerator and kitchen for the season’s harvest.
