Master chocolatier will serve up French treats a n d c u l i n a r y m a s t e r p i e c e s a t 2 0 1 7 OC F a i r The 2017 OC Fair won’t just be a fried food frenzy. Award-winning pastry chef and master chocolatier Stephané Tréand will showcase his talents in the OC Promenade during the Fair’s run from July 14 through Aug. 13. Tréand, a Tustin resident, is the owner of The Pastry School and St. Pâtisserie Chocolat in Costa Mesa. His next adventure will be a booth at the 2017 OC Fair. From chocolate to croissants, macarons to meringues, Tréand will have a large variety of French treats at his booth. The big item will be a macaron gelato sandwich, which is a

first for the OC Fair. He will also have a chocolate orange tarte to represent Orange County and the OC Fair. Tréand’s demonstrations will feature tartlets, chocolate bonbons, truffles, caramels, macarons, cookies, marshmallows, profiteroles and more. On Sunday, July 30, he’ll be on the Main Stage creating a highly technical sugar art sculpture right before your eyes! Keeping with the OC Fair’s Farm Fresh Fun theme, Tréand will use the power of a fire torch to glue large pieces of the sugar together to create one magnificent piece of art. “My piece has to be unique for the

Fair,” Tréand said. “I don’t recycle ideas.” Tréand will also hold cookie decorating classes for kids and teens on July 27 and August 6. Although the cookies will be baked a head of time, it will be up to the kids to create their designs using the variety of colors of royal icing, edible pearls and more. “They won’t have to follow a recipe or anything, they will have total freedom to be creative,” Tréand said. “The creative freedom allows kids to create something they can feel proud of, so I think it will be really great for them.” Originally from Paris, Tréand got his start as an apprentice at a local pastry shop in Northern France, all while taking pastry courses one week per month in Vincennes, Paris. Tréand opened his first patisserie tearoom, Pâtisserie Tréand, in Brignoles in Provence in 1989. A few years later, he decided to share his passion of pastries with others and became a teacher at the CFA of St. Maximin. Tréand’s knack for sweets isn’t the only special thing about him. In 2004, he won the coveted Meilleur Ouvrier de France (M.O.F.), which is the most prestigious award given by the President of France to a professional

Pastry Chef and Master Chocolatier Stephané Tréand in a certain trade. Tréand led a stage demo at the 2016 OC Fair and was a huge success. This year he’ll have his own booth in OC Promenade. “People are very curious about the art of patisseries here,” Tréand said. “I’m looking forward to educating people and making people aware of working from scratch, artistry and French pastries.”

Although you may be itching to get back outside, before you can relax there’s work to do. After enduring the wear and tear of fall and winter, most yards need attention to get back into summer shape. Frank Lloyd Wright’s interior plans bring heart and hearth to Orange County’s Bowers Museum

The Bowers Museum in Santa Ana, California is pleased to announce Frank Lloyd Wright: Architecture of the Interior, a visitation of the interior home designs of Frank Lloyd Wright. Studying the obvious and subtle ways Wright created the visual character of interior space, even going so far as to meticulously design almost every object within a home, it is evident why almost 60 years after his death Wright is still known as the world’s most famous architect. The exhibition’s 19 reproduction drawings, 8 photographs, and 4 photographic murals of illustrate these interiors, often considered Wright’s greatest architectural accomplishments. Organized by International Arts & Artists, Washington, DC, in cooperation with the Frank Lloyd Wright Foundation, Scottsdale, AZ, Frank Lloyd Wright is on view at the Bowers Museum from now through August 20, 2017. “Any building should be complete, including all within itself. INTERVIEW WITH JUDY MORR, EXECUTIVE VICE-PRESIDENT O F S EGER S TROM CENTER F OR THE ART S

Ringwald Entertainment Reporter The performances of world renown dance companies scheduled each Season at Segerstrom creates the rich cultural life we enjoy in Orange County and greater Southern California. Judy Morr, Vice President of Segerstrom Center, meets the challenge each Season inviting dance and ballet companies to perform and monitoring performances from rehearsals to opening night. The Judy Morr Theater, named in her honor, attests to her many achievements and contributions over the years to Segerstrom Center. In an interview at her office in Segerstrom Center, Judy Morr reveals more insights into her expansive role as Vice President, from ‘dance impresario’ to participating in the development of the Summer Dance and Ballet Camp out reach programs for the new outdoor Argyros Plaza to overseeing the American Ballet Theater Gillespie School at Segerstrom Center of the Arts. Reporter: The new plaza sounds like a wonderful way to attract new audiences, and offer free enriching opportunities and experiences to the public. Will you offer dance classes? I remember a few years ago when there were tango classes in the Plaza area. Morr: Yes, our tango classes were very popular and we will offer dance classes again in the new Plaza. We also have Monday Night Movies on a large screen and will continue with that programming. There is an stage and seating in on green knolls in a park like setting. The plans for the new Plaza also include an outdoor cafe that will be open throughout the day and during Plaza performances and events. Reporter: It will also be wonderful when the Orange County Museum is built in the remaining space. That will really build the Plaza and theater complex into a real cultural haven. How wonderful to have this quality, this enrichment of the arts in Orange County. That is one of the reasons why people move to Orange County. Because of Segerstrom Center and all of the amazing performances of world renowned dance companies. And over the years, since the the inception of the original Segerstrom Theater there has more and more development. Segerstrom Center is really a cultural luxury. Morr: Henry Segerstrom had the

vision and the ability to make the vision into a reality. Reporter: Well, now you continue building the vision. How many students are currently enrolled at the ABT Gillespie School? Morr: We have about 250 students in the ABT Gillespie School, taking classes in the afternoon after school in our theater studios. From beginning ballet to advanced and we recently started a new class in ‘Partnering.’ We can’t add too many more classes because we need the studio space also for rehearsals of dance companies that perform here. Reporter: Segerstrom Center is a theater first and the rehearsal space is a priority. But wonderful that you can also have dance training in remaining studio time. Do the parents bring their children to classes and pay tuition? Morr: Yes, and we also have scholarships available so that every talented child has a chance. They love being on stage and it is an inspiration for our students to be trained here with a chance to appear on stage with famous dancers. We have a wonderful Director who was a Ballet Mistress of American Ballet Theater, passionate about ballet and ballet history, who brings such depth and enrichment to our school. Reporter: Is the ABT Dance school working out well financially for the Center? Morr: We reinvest whatever we earn from tuition back into the program, with wonderful teachers and pianists. We offer live music for each of our classes. Also our Summer Programs are quite successful, with a long waiting list for both sessions of ‘From Broadway to Ballet.’ We have also initiated a summer program in dance and music for children with disabilities. Augusta Iwasaki Takes Top Two in $5,000 USHJA National Hunter Derby, Presented by Taylor Harris Insurance Services

With final scores of 182.5 and 179, she took home first and second, topping a field of forty-two entries. Her winning entry was First Draft, owned by Joann Goldsman. Scoring an impressive 92 in the Classic Round and then a 90.5 in the Handy, Iwasaki and First Draft held their lead and led the victory gallop, sporting a blue ribbon and a Blenheim EquiSports embroidered cooler. Iwasaki was also presented with a pair of Roeckl Sports gloves and an engraved Blenheim pewter plate. And once again, the twelve-year-old took home The Plaid Horse Highest Placing Junior Award. Blenheim June Classic III’s large National Hunter Derby attracted a crowd to the eye-catching course set by course designer Joe Lombardo. Both rounds featured classical derby-style hay bale fences adorned with colorful flowers, in addition to interesting lines and turn options. Betty Oare and Robert Crandall were the judges. Special competitors earned sponsored awards upon the conclusion of the class. First Draft’s owner, Joann Goldsman, won the Balmoral Winning Owner Award. The Blue Ribbon Blankets Winning Trainer Award went to Lesley Bulechek and Adam Ottomanelli. Jamie Krupnick, who rode Georgy MaskreySegesman’s Conux to a third place finish, won the One K Helmets Highest Placing Amateur Award. Tickets for the much-anticipated 2017 Pageant of the Masters are on sale now and make the perfect holiday gift for the art lover on your list. This holiday season share the excitement with tickets to next summer’s production of The Grand Tour. The Pageant of the Masters will be performed nightly from July 7 through August 31, 2017. In the 17th and 18th centuries, the desire to experience the world’s great art firsthand inspired the European tradition of continental travel on the Grand Tour. Inspired to set out on pilgrimages by land and sea to the great cultural centers of Europe, and eventually the globe, those early travelers often risked life and limb to stand in the presence of masterpieces. It’s that original dedication to expanding one’s horizons by visiting the great art centers of Europe that fueled Pageant Director Diane Challis Davy’s excitement and research as she fine-tuned plans for next summer’s production, The Grand Tour. “Perhaps because I do so much

virtual traveling via Google,” Challis Davy offered, “I have a fantasy about actual travel and sightseeing. I was curious about the tremendous difficulties travelers encountered in the 18th century, with horse-drawn coaches on unpaved roads and no railways, no hotels. Even restaurants hardly existed, and there were virtually no public museums.” There’ll be no shortage of masterpieces in the 2017 Pageant, including works by Leonardo da Vinci, Tiepolo, Longhi, Watteau, Reynolds and Romney. But, as in previous years, the production’s theme will expand to include American artists like John Singer Sargent whose work was transformed by his travels. With the coming of the 20th century, new modes of transportation made it possible for almost everyone to go on their own “tourists’ grand tour,” and the theatrical possibilities assure no shortage of Pageant-style fun and inventive showmanship. A side trip to Pompeii, a celebration of Carnival in Venice and the European tour of Buffalo Bill’s Wild West Show offer abundant opportunities for surprises and special effects. And a tribute to Paris in the early 20th century when audiences in clubs embraced the talents of Josephine Baker, Louis Armstrong and Duke Ellington reveals how a change of scene can launch an

Festival of Arts Celebrates 85th Anniversary with Renovation, Art, Special Events and More July 5 – August 31, 2017 The Festival of Arts Fine Art Show celebrates its 85th anniversary July 5 through August 31, 2017 in Laguna Beach, California. The Festival has been rated one of the top festivals in the nation and each year hosts 140 of Orange County’s most talented artists. Recent accolades include Orange County Register’s Best Place to Buy Original Art, Art Fair Calendar’s Top Five Art Fairs in the West and Top 5 Art Festival in the nation voted by USA Today readers. Live music, hands-on art activities, exhibitions of local student artwork and a wide variety of special events round out one of southern California’s favorite outdoor summer event. “Avid art collectors and festivalgoers will have an outstanding variety of fine art to browse and purchase as they walk among the artists displays,” says Marketing and Public Relations Director Sharbie Higuchi. The Festival of Arts is a professionally juried fine art show featuring a diverse selection of artwork including paintings, sculpture, photography, ceramics, jewelry, and more from artists around Orange County. Since opening in 1932, thousands have shown and sold their artwork at the Festival and many have their work featured in the private collections of leading art collectors, celebrities, and museums around the world. In addition to the variety of artwork, the Festival of Arts offers a wide range of daily activities that the whole family can enjoy. The 2017 events calendar includes nightly live music, jazz concerts, wine and chocolate pairings, guided art tours and art workshops. Several special one-day events return this year, including the Festival Runway Fashion Show and Family Art Day. In 2017, the Festival of Arts debuts its brand new $10 million facility which features a new layout for the art exhibit area, workshops, gift shop and concert stage. Last remodeled in 1964, the renovated grounds have been updated to meet accessibility standards and incorporate progressive sustainability features. The plans also call for additional and updated restrooms and wider pathways. Tensile roof pavilions shelter artwork from sun and rain, the green lawn where patrons picnic and enjoy concerts is nearer to the entry, the gift shop is relocated and expanded, and the junior art exhibit has a prominent location near the entrance. “The Festival of Arts grounds have been completely transformed and modernized as a result of this Page 16

extensive renovation,” said Board President Fred Sattler. “We look forward to sharing our new ‘digs’ with our patrons and the community this summer during our 85th anniversary celebration.” The very first Festival of Arts started on August 13, 1932. To celebrate 85 years of art, the Festival is having a birthday bash on August 13, 2017 and admission to the art show is free all day. There are plans for a birthday cake, music, proclamations and much more honoring the Festival’s rich history. Also in celebration of the organization’s milestone anniversary, the Festival introduces a new event on Sunday afternoons. “A Salute to the Arts” is inspired by the original Festival of Arts, which featured a variety of artistic endeavors including theater, literature, dance and more. In 2017, each week will spotlight a different art form. Also as a nod to the first art show, the Festival is adding tea for patrons to enjoy during its fascinating Art Talks with artists every Wednesday. It Was a Circus at Tilly’s Life Center’s 10th Golf Tournament!

Tillys action sports retailer hosted its 10th Charity Golf Tournament at the Mission Viejo Country Club to benefit Tilly’s Life Center (TLC), a youthfocused nonprofit empowerment program in Orange County. This year’s golf tournament attracted influential individuals from local businesses to the biggest names in the action sports industry to include: Volcom, Billabong, Rip Curl, DC Shoes, Vans, Nike, Converse, RVCA, Stance and many more. Attendees golfed, participated in games, contests, a drawing and enjoyed a circus-themed after party complete with appetizers, drinks, dinner, a silent and live auction, and entertainment. Tillys golf tournament kicked-off with a putting contest followed by a shot gun start at 10:00 a.m. sending golfers out in clown-inspired golf carts to compete on Mission Viejo Country Club’s 18-hole course. Aside from golfing, attendees enjoyed hole activations featuring games, giveaways, food and drinks from the following sponsors: Layrite, Volcom, Coyle Reproductions Inc., Dixon Golf, Laguna’s KX 93.5 FM, Vans, Trunk Club, Cuater by Travis TLC’s Kimmy Neuberger and Monica Utley posed withTillys CEO, Hezy Mathews, James Haunt and Wahoo’s. Golfers also participated in contests such as closest to the pin and a unique chipping contest to break wine bottles Shaked and TLC’s Director of Marketing, Amy Diaz for a chance to take home prizes. After the tournament, it was a party under the big top for the circus themed after-party featuring amazing sword swallowers, beautiful aerial performers, very TALL stilt walkers, a python handler and unbelievable contortionists from Firestorm Talent. Attendees had the opportunity to hold a 40 pound Burmese Python and dress up in fun accessories to strike a pose at Tillys photo booth. Event goers were even treated to a full circus experience complete with tasty appetizers such as Carmel-dipped apples, cotton candy, kettle corn, cake pops, mini-hot dogs and churros. During the after party, two teens from TLC delivered speeches to share with guests how the nonprofit has benefited their lives by providing them with the life tools and encouragement to become productive, kind, happy and responsible individuals. There were a few guests who entered a bidding war for Tillys and TLC’s live auction items such as: four Disneyland Resort Premium Annual Passes, Aerial Performance Performed Python handler from Firestorm a Porshe Design Timepiece Flat Six Watch, an all-inclusive trip to Austin, by Firestorm Talent Texas including airfare and lodging for three nights and a hideaway golf Talent experience with Tilly and Larry Levine. Teatro alla Scala Ballet Company Makes Rare West Coast Visit with the Ballet Classic Giselle at Segerstrom Center Segerstrom Center for the Arts welcomes Teatro alla Scala Ballet Company in an exclusive West Coast engagement performing Giselle, July 28 – 30, 2017 in Segerstrom Hall. One of the finest examples of romantic ballet, Giselle is the tale of love, betrayal and redemption between the peasant girl Giselle and Prince Albrecht. It was a triumph at its world premiere in 1841, and its beloved choreography in La Scala’s elegant production, especially, continues to thrill audiences. The opening night cast for this Center engagement includes ballet superstar Misty Copeland in the title role with Roberto Bolle, making his Center debut as Prince Albrecht. The music, by Adolphe Adam, will be performed by the renowned Mikhailovsky Orchestra. Giselle will be performed in place of the originally announced Cinderella. The Teatro alla Scala Ballet Company tour is being arranged through Ardani Artists. The La Scala star Roberto Bolle, will also perform with the Royal Ballet’s acclaimed Marianela Nuñez for the Saturday, July 29 evening performance and the Sunday, July 30 matinee. La Scala’s principals Nicoletta Manni and Claudio Coviello, recently starring in Giselle for the La Scala tour in China, will dance the lead roles for the Saturday, July 29 matinee. Giselle is one of the most popular and most performed classical story ballets. The La Scala production, enriched by Aleksandr Benois’ sets and costumes that are part of the Scala’s repertoire, features the original Coralli-Perrot choreography in the revival by Yvette Chauviré. Her own moving interpretations of roles such as Giselle celebrated the classical ballet tradition in all its purity. When I was dancing, my obsession was to make people forget the physicality of the feet and

Those numbers far exceed the number of passport applications and photos processed during a normal business day. “With kids out of school and vacations planned, now is the time to get your passport,” said ClerkRecorder Hugh Nguyen. “By opening on a Saturday, we are trying to make it easier for busy families and individuals to take advantage of our services.”

This was the first Passport Day hosted by Clerk-Recorder Hugh Nguyen. The department looks forward to hosting future dates to better serve the community and increase access to these important services. Servings: 6 to 8 Dressing: 3 tablespoons Tree Top Frozen Concentrate Apple Juice, thawed 3 tablespoons light corn syrup 2 teaspoons brown sugar 1 teaspoon apple cider vinegar 2 teaspoons garlic salt Ground pepper to taste Salad: 9 ounces cheese-filled tortellini 2 cups sliced apples (approximately 2 medium apples) 2 cups shredded salad greens 1 cup sliced fresh strawberries 1/2 cup thinly sliced celery 1/2 cup sliced scallions 2 tablespoons toasted pine nuts (optional) To prepare dressing, combine apple juice concentrate, corn syrup, brown sugar, vinegar, garlic salt and pepper. Cover dressing and refrigerate. To prepare salad, cook tortellini, drain and cool by rinsing pasta under cold water. Shake gently to drain thoroughly. In a large bowl, combine tortellini, apples, salad greens, strawberries, celery and scallions. Toss salad gently with chilled dressing. Serve chilled. If desired, sprinkle with pine nuts.

Spiced Pork and Apple Burger with Maple Dijon

Servings: 6 3 tablespoons maple syrup 2 tablespoons spicy brown mustard 2 pounds ground pork 1/2 cup Tree Top Natural Apple Sauce 1 1/2 teaspoons salt 1 1/2 teaspoons chili powder 1 teaspoon dry mustard 1/2 teaspoon black pepper 1/4 teaspoon ground cinnamon 6 hamburger buns Baby Spinach leaves Stir maple syrup and mustard together in a small bowl. Set aside. Spray a large non-stick grill pan or griddle with cooking spray and place over medium to medium high heat. Mix pork, apple sauce, salt, chili powder, dry mustard, pepper and cinnamon together in a large mixing bowl. Form mixture into 6 patties. Place patties in pan and cook for 4 to 5 minutes, turn and cook additional 4 to 5 minutes or until done. To serve, spread bun bottoms with maple mustard mixture. Top each with a patty, spinach leaf and bun top. If desired, toast buns and top with cheddar cheese, grilled onions, pickles, tomatoes or other favorite toppings. Serve with crispy sweet potato fries and steamed beans for an easy but special meal.

Strawberry Banana Smoothie Ice Pops

1 cup Tree Top Apple Juice 1 pint strawberries, hulled, sliced and frozen 1 banana, sliced and frozen 1 apple, peeled, cored, sliced and frozen 6 ounces vanilla yogurt 1 teaspoon vanilla Put all ingredients in a blender and process until smooth. Pour into ice pop forms or paper cups. Place ice pop sticks in center and freeze, inverted, for 3 hours or until solid. Keep frozen until ready to serve.

Baked Apple Pie Layer Bars

Servings: 16 2 1/2 cups sifted flour 1 tablespoon sugar 1 teaspoon salt 1 cup shortening 1 egg Milk 2/3 cup crushed corn flakes 1/2 cup Tree Top or Seneca Apple Sauce 5 cups sliced, peeled apples 1/4 cup sugar 1 teaspoon cinnamon Glaze: 1 cup confectioners’ sugar 2 tablespoons lemon juice Sift together flour, sugar and salt. Cut shortening in with pastry blender or two knives. Put egg yolk into measuring cup and add milk to make 2/3 cup. Add to shortening mixture. Mix just enough until dough shapes into a ball. Roll out half the dough into 15 x 11-inch rectangle. Transfer to baking sheet. Cover with corn flakes. Mix apple sauce together with apple slices, and add mixture on top of corn flakes. Mix sugar and cinnamon. Sprinkle over apple mixture. Roll out other half of dough for top crust. Place over apples. Pinch edges together. Beat egg white until stiff and spread on top crust. Bake in hot 400°F oven for 40 minutes. Cut into 16 squares. Combine confectioners’ sugar and lemon juice to make glaze. While hot, drizzle glaze over top.

the history of the Sawdust festival The Sawdust was originally called the Laguna Artists and Gallery Owners Association after breaking away from the Festival of Arts in 1965, in protest of that show’s jurying system. That first festival was located on a vacant lot at the bottom of Park Avenue (on the Peacock lot) with only a few dozen exhibitors. It was called the ‘Rejects Festival’ by the media. There was no show in 1966, but the show did reappear, with more exhibitors, in 1967 on an empty lot on North Coast Highway (The Kronquist lot). That show was a great success and led to the artists moving to its current location on Laguna Canyon Road, leasing the property from Walter and

Dorothy Funk, and when the artists spread sawdust on the ground to combat the dust and mud, the media called it the ‘Sawdust Festival,’ and that name has identified the show for decades. Looking for room to expand, in 1968 the show moved to its present three-acre site at 935 Laguna Canyon Road, welcoming one and all with the promise to educate the public as well as provide a sales outlet for unrestricted art.Today, artists demonstrate their art in designated “demo” booths where the public is invited to participate, as well as working in their own booths. The lovely eucalyptus grove with its rippling waterfall provides an irresistible background. The Sawdust Art Festival is truly a local event. All artists exhibiting in the festival are residents of Laguna Beach. Unlike some other non-profit organizations dedicated to the arts, the Sawdust Art Festival’s administration is made up of exhibiting members. Each year, exhibiting artists are elected as members of the Board of Directors. In addition, booth locations are determined by an annual lottery, usually held in February. Because the show is non-juried, enthusiastic amateurs display their work along with accomplished veteran artists, providing the spice and variety that make every show different from the last.

One of the first facades ~1978~ In keeping with the spirit of its beginnings, the Sawdust Art Festival intends to be different from other art shows, visualizing itself as an artists’ “happening” rather than a stuffy exhibit. To that end, the artists themselves build a unique village of individual booths from the ground up each summer. The architectural designs are as varied and interesting as the work they showcase. Once the booths are finished, the sawdust goes down, the landscaping goes in, music fills the air and once again the Sawdust Art Festival magically returns for another summer. It took Jill Rogers four decades. “After 44 years of marriage, I got the soup bowls I wanted; Mama would be so proud to know I finally have exactly what she wanted for me,” says Rogers. “My mother started this pattern for me in high school, buying pieces from the area grocery store. The fact she started it was so sweet and special.” Over the years, Rogers actually forgot the name of her pattern. That’s when she turned to dinnerware giant, Replacements, Ltd. The company’s research team not only

identified Rogers’ vintage pattern through Replacements’ free pattern identification service, they even had the pieces she needed to complete her set. “I collected pieces here and there through the years but never had more than six place settings,” adds Rogers. “We use it for special family occasions, such as birthdays and anniversaries, and sometimes we take our special china out just for us.” Replacements’ designer, Julie Robbins, hears similar stories from baby boomers like Rogers, who after years of collecting, finally completed their patterns.
