Ladera Teens Send Warm Thoughts from Home to Deployed Marines

cards were created by students in the Ladera Ranch Middle School All-Stars Program and Civics class, led by Mrs. Jennifer Halton. The colorful cards traveled from Ladera Ranch Middle School to the offices of Ladera Ranch Community
Services (LARCS), then, to Camp Pendleton, and then to the deployed Marines. According to George Blair, LARCS Community Lifestyle Director, “These small expressions of thoughtfulness mean a great deal
to our service men and women who are away from their family and loved ones. The cards carry genuine warm wishes throughout the holidays. It is great to see our residents support our Marines through this and other efforts throughout the year.�

By: Eulynn Gargano As a mom of three elementary age children, I find myself frequently surrounded by the sounds of Christmas. No, I’m not talking about the tiny jingle of bells or the sweet sounds of carolers, I’m referring to those “I want,” “Santa better bring me ...” and “Why can’t I have?” moments. My platform, as Ms. Southern California, is Living with Purpose: Define your Legacy. I hope these three simple tips will help you Create a Legacy of Gratitude for your family. Number 1: Focus on Experiences, Not Things Children spend the holiday season bombarded with the question “What do you want?” I encourage you to surround your children with the spirit of “What do you want ... to do?” By giving your family the gift of your time and presence, you imbue an organic optimism for life, which leads to a perspective of gratitude, even for the youngest children. One way I strive for this during the season, is to always have toys and books to donate in the car. Whenever we are on our way to an event, we stop by a donation center for the Salvation Army, Goodwill, or CHOC and make sure we say a prayer of gratitude before proceeding with our gifted lives. Eight steps to perfect holiday cookies
The time-honored popularity of holiday cookie baking remains strong even in today’s grab-and-go society. “Most of us are looking for ways to simplify the holiday hubbub, and focus on activities that truly have meaning for our families,” says Ginny Bean, publisher of Ginny’s catalog and Ginnys.com. Bean, who fondly recalls baking holiday cookies with her mother and her three sons, offers the following easy tips for your own holiday cookie baking tradition. * Get organized. Read the recipe thoroughly. Gather your ingredients before even turning on the stove to make sure that you haven’t forgotten anything that would require an
unanticipated trip to the store. * Keep it simple. Bean recommends starting with this good, basic dough recipe and adding different ingredients to customize the taste and texture to personal preferences: Cream 1 cup (2 sticks) butter, 3/4 cup granulated sugar and 1/2 cup brown sugar until fluffy. Add 2 eggs and 1 teaspoon vanilla and beat until well mixed. In separate bowl, whisk 2 1/4 cups all-purpose flour and 1 teaspoon baking soda together, then add slowly to creamed mixture, beating until combined. “There’s almost no end to what you can do to this dough,” says Bean. “Get creative and experiment with different mix-ins like lemon peel, pumpkin pie spice, even instant coffee, or substitute toffee or peppermint chips for traditional chocolate and butterscotch.” * Use the right fat. Some cookie recipes only achieve their best flavor and texture with butter. Hopefully, those recipes will specify “butter only; no substitutes.” Recipes calling for butter or margarine will produce good results with either, as long as you use a margarine that contains at least 80 percent vegetable oil. Check the nutrition label. The margarine should have 100 calories per tablespoon. Margarines with less than 80 percent vegetable oil have high water content and can result in tough cookies that spread
excessively, stick to the pan, or don’t brown well. * Measure accurately. Metal or plastic measuring cups are intended for dry ingredients such as flour and sugar. When measuring flour, stir it in the canister to lighten it and then gently spoon into a dry measuring cup and level the top with the straight edge of a knife. Glass or plastic cups with spouts are meant only for liquids. If you use a liquid measuring cup for flour, you’re likely to get an extra tablespoon or more of flour per cup, enough to make cookies dry. * Chill dough properly. The chilling time given in a recipe is the optimum time for easy rolling and shaping. If you need to speed up chilling, wrap the dough and place it in the freezer. Twenty minutes of chilling in the freezer is equal to about one hour in the refrigerator. * Use a powerful mixer. An electric stand mixer is the best way to mix heavy cookie dough. With a handheld mixer, you’ll probably end up needing to stir in flour by hand, which can be a nightmare. * Choose the right cookie sheets. Look for shiny, heavy-gauge cookie sheets with very low or no sides. Dark cookie sheets can cause cookie bottoms to overbrown, and cookies won’t bake evenly in a pan with an edge. Insulated cookie sheets tend to yield pale cookies with soft centers.

If you use them, don’t bake cookies long enough to brown on the bottom because the rest of the cookie may get too dry. Nonstick cookie sheets let you skip the greasing step. But the dough may not spread as much, resulting in thicker, less crisp cookies. Unless specified otherwise, a light greasing with shortening or quick spray with nonstick spray coating is adequate for most recipes. * Know your oven. Experiment with the temperature of your oven. If your oven typically cooks items faster than the recipe calls for, adjust accordingly. Don’t bake cookies for too long. They should be light brown around the edges and look a little underdone when they come out. Keep in mind that cookies will continue to cook from the heat of the cookie sheet after you remove them from the oven. 3 essential tips for traveling with a pet during the holidays
The holidays mean different things to different people. Every family seems to have its own set of traditions, but one thing seems to be common among Americans during this time of year, and that’s traveling. Like Santa Claus making that long journey from the North Pole, it’s estimated that more than 90 million Americans (36 percent) will travel this holiday season, according to a recent survey conducted by Extended Stay America hotels and Kelton Global. Santa and his reindeer will hit the road during the 2017 holiday season - and he’s not alone, as nearly threequarters of Americans (69 percent) will do the same with their pets. “Pet parents are increasingly including their furry family members in their travel plans, especially during the holidays,” says pet expert Andrea
Arden, who has over 20 years of experience in the industry. “In fact, our companion animals can be such a great source of comfort while we’re away from home, that some people can’t even conceive of a vacation without their dog or cat by their side.” To ensure you and your animal companion bring cheer wherever you go, Arden has provided three essential tips for traveling with a pet this holiday season. 1. Prepare your pet Like finding the perfect gift for your loved ones, the earlier you start to plan and prepare, the easier it will be. A great holiday vacation begins with a trip to the veterinarian to make sure your animal is in good health, has all the medications they might need (and perhaps some extras) and is up-to-date on vaccines. Along
with their physical health, you want to make sure your dog or cat is mentally prepared for a journey that may involve new places, new smells and new people. To get your four-legged friends ready for the adventure, bring your pet to unfamiliar places like a local park and have them interact with new faces. Santa helps mission viejo elks host several holiday events By Andy Costello The Elks Lodge was once again full of the holiday spirit as the members played host to 150 developmentally challenged men and women from the Saddleback Valley community. The special guest ranged in age from sixteen to sixty-six. They entered the Lodge in groups - some walked, some used walkers and many came in wheel chairs. After a lunch of chicken tenders, chips, cookies and lemonade were served, D.J. entertainer Doug Houston kept the music flowing much to the delight of the merrymakers who sang and danced all afternoon, some danced with the Elk volunteers who joined in the fun. The Laguna Woods “Clown Alley” clowns were again on hand in full regalia passing out balloon hats and bringing smiles to the faces of the partygoers. And then came the moment the special guests anxiously anticipated. Santa arrived on a big red fire engine and each guest enjoyed a personal visit with Santa (Ed Mackey) & Mrs. Clause (Elk Pam Mackey) receiving a bag full of gifts and a photo with Santa. Elk event organizer Sandy Bergen said, “It was a combined effort of many dedicated members working together to make the event so successful.” Bergen offered a special thanks to the Elks Bingo Charity committee for their ongoing sponsorship, and added, “Some of these special guests have been attending this party for 25 years and look forward to returning each year. The Elk’s members do

Santa arrives in fashion whatever it takes to give them a fun day at the Lodge.” While one full complement of Elks kept busy at the Lodge party, another group of Elk volunteers traveled south to Camp Pendleton to host a dinner for Marine families. Over 200 dinners were served. The Benevolent and Protective Order of Elks (BPOE) has a long standing support structure for the military and for the developmentally challenged. The Benevolent and Protective Order of Elks has a 149 year history of giving. “Elks Care, Elks Share.”

Net proceeds of an estimated $60,000 will provide programs, services and support to develop the talents of adults with disabilities. Walmart was recognized as Vocational Visions’ 2017 Employer of the Year, with a table of Walmart supporters attending. J.D. Thorson, Director of the Laguna Niguel store, accepted the honor, which also included commendations from the California State Senate and Assembly. Vocational Visions Executive Director Joan McKinney said of Walmart: “We have partnered with Walmart since 2001. It is our mission to help people find employment but we cannot do it without the partnership and commitment from local businesses. Walmart knows the value adults with disabilities bring to the workplace: diversity, stability to high turnover positions and building customer loyalty.” Among those making it happen were McKinney; Linda Albers, Ph.D., Vocational Visions’ Board Chair; Joe Orsak, Vocational Visions’ Development Joan McKinney, Sean Ikola and Susan Samueil Director, and Clint Hufft took the stage both as emcee and auctioneer. Dinner featured a choice of a Salinas Cruz Organic Field Greens Salad with Point Reyes blue cheese and walnuts with a champagne vinaigrette or a Valley Baby Spinach Salad with feta cheese, dried cranberries, roasted pecans and apple cider vinaigrette. Entrées were a choice of Seared Free Range Chicken, poached pears and Point Reyes blue cheese sauce, Alaskan Halibut with ginger beurre blanc sauce or Son Rise Ranch Style Strip Steak with exotic mushroom sauce. A Chocolate Espresso Tart completed the delicious repast. The nonprofit’s main fundraiser featured world famous magician Johnny “Ace” Palmer entertaining guests throughout the evening. His performance following dinner saw him producing the proverbial rabbit out of a hat and live doves from underneath cones. The evening’s highlight, per tradition, was a performance by Vocational Visions’ clients dancing to Michael Jackson’s iconic “Thriller.” Vocational Visions Board of Directors supporting the fundraising efforts included the aforementioned Albers, Vice Chairperson Hilary Hurt, Secretary David Cosgrove, Treasurer Barbara Boteler and Members at Large John Connolly, Wayne Hunt, Edward Kenna, Sheri Lee, Howard Neufeld, Andrea Reade and Mark Sorenson. The Gala Committee included previously Board member Wayne Hunt and Magician Johnny “Ace” Palmer mentioned board members Albers, Boteler and Hurt as well as Lori Bartlett, with Tracy Roberts his wife Judy Hunt Barrie Best, Jill Cooper, Rebecca DiFranco, Roland Fernandez, Sharon Meredith, Mary Orsak, Carol Roberts and Sharon Sprague. The top auction items included an autographed Duck’s Corey Perry jersey, a “magical” performance by magician Johnny “Ace” Palmer, a wine party for 20, two tickets to the popular food event Table for 10, and tickets to see the LA Clippers play the Miami Heat. The very hot opportunity prize, a two-night stay at Montage Resort, prompted some brisk ticket sales, with a very happy Peter T. Stevenson taking the prize. Segerstrom Center is a leader among the nation’s performing arts centers for providing education programs designed to inspire young people through the arts. The Center’s programs reach hundreds
of thousands of students each year in five Southern California counties. Community engagement programs developed through the Center for Dance and Innovation and Center Without Boundaries also connect the Center more comprehensively with Orange County’s many diverse communities. The CDI supports flagship artistic programming and a wide range of projects that celebrate innovation, nurture creativity and engage audiences of the future. It is home to the ABT Gillespie School and the School of Dance and Music for Children with Disabilities. The Center Without Boundaries develops partnerships with noncultural organizations to help them in their own efforts to respond the everchanging needs of the community. Segerstrom Center for the Arts is also proud to serve as the artistic home to three of the region’s major performing arts organizations: Pacific Symphony, Philharmonic Society of Orange County and Pacific Chorale, who contribute greatly to the artistic life of the region with annual seasons performed at Segerstrom Center for the Arts. In addition to Segerstrom Center for the Arts as a presenting and producing institution, it also identifies the beautiful 14-acre campus that embraces the Center’s own facilities as well as two independently acclaimed organizations: Tony Award®-winning South Coast Repertory and a site designated as the future home of the Orange County Museum of Art.
