PETER PAN IS FLYING TO A THEATRE NEAR YOU! 6 Casts Spotlight Hundreds of Orange County Kids By: Amy R. Spurgeon-Hoffman Nothing can tickle wonder and imagination like children bringing stories to life on stage. This June, as school doors close for summer, Capistrano Valley High School’s theatre doors are flying open for South County Performing Arts’ (SCPA) production of “Peter Pan.” Featuring kids ages six-to 21-yearsold in six (6) casts, “Peter Pan” offers families a “never grow up” mantra and adventure filled with Lost Kids, pirates, mermaids, fairies, Indians and so much more. And while this performance is sure to “wow” audiences young and old, SCPA’s vision for the performing arts transcends the stage and its imaginary “third wall” to find itself firmly rooted in the hearts and minds of Orange County’s youngest residents. “When we created our performing arts program 10 years ago, 24 children joined our first production,” said Irene Vecchione, SCPA’s artistic director who along with her husband, Josh Vecchione, run the program and have a long history in community theater. “Now, after going through an extensive and intensive audition process, nearly 300 kids have joined

us for six casts to bring this show to life.” For the show, SCPA’s mostly volunteer staff has put in countless hours blocking performances, testing memorization skills, introducing singing and dance numbers and building sets but they do more than that. “Even more important than helping kids bring characters to life on stage, is the character-building that goes on behind-the-scenes,” says Vecchione. “Whether we’re working with kids who have aspirations of becoming professional actors or kids who just want to have fun, our goal is the same: To build self-esteem and confidence. For us, the journey we take the kids on is as important as the show.” Six casts will perform 11 shows over two June weekends. Younger casts showcasing shorter performances will be featured June 10-12. Older casts spotlighting some more experienced performers can be seen June 23-26. Tickets start at $8. To purchase tickets, visit www.southcountyperformingarts. com. Funds from ticket sales go back into our community’s schools.

Memorial Day is great time to celebrate and have fun! We often gather for and plan parties, lunches, events or dinners on this wonderful occasion. It is nice to present our food and drinks on a wonderfully decorated table. If you are hosting such an event, here are some great tips for decorating your table on Memorial Day! My first and favorite choice is the red, white and blue table setting. This is a pretty and colorful way to show your Memorial Day spirit! This table setting idea has many variations that you can choose from! You can use a red table cloth, blue table cloth or white table cloth for this table setting. My favorite is the red table cloth. It does not show spills and stands out. I like to use white plates. If it is an informal gathering or party, white paper plates can be used, though I recommend the plastic plates or sturdiest plates you can find. This will make your guests more comfortable and they will be less likely to spill their plate. Use white napkins. This can be paper napkins or cloth ones. Serve the beverages in blue cups. They can be blue plastic cups or blue glasses. The effect of the white plates, white napkins and blue cups look very nice on a red tablecloth. Add a beautiful Page 4

Memorial Day Table Setting Ideas basket or vase of red, white and blue carnations in the center of the table. I like to use silk flowers. If you like, you can use real red and white carnations. For an added touch, place small flags in the vase or basket, among the flowers! If you decide to use a blue table cloth, use red or white plates, white napkins and blue or red plastic cups or clear cups or clear glasses. If you use a white table cloth, red plates, white napkins and blue cups or glasses look wonderful. For silverware, any type can go with this idea, even white plastic. This Memorial Day table setting is easy to set up and very affordable. It looks great! For a Spring like look that is festive and very pretty, use a flowered table cloth. For plates, the color choice is white, napkins can be white and the beverages can be served in clear plastic cups or clear glasses. Use silverware or white plastic ware. A large vase of all different types and colors of flowers look great in the center of this table setting. You can also just use white carnations in a basket. This table setting is colorful, attractive and very easy to do. It is very nice and makes a great Memorial Day table setting, if you do not wish to use the red, white and blue color theme. For an outdoor gathering, a red

and white checkered table cloth looks very festive with white plates, white napkins, white plastic ware and red or blue cups or glasses. My preference is using red cups or glasses. I like keeping to the red and white theme on this idea. It looks fancy, yet simple. I add a basket or vase of red and white carnations to the center of the table and it gives the table setting a fun and fancy look. This Memorial Day table setting is sure to please! Depending on how much money you want to spend, you can find many Memorial Day themed table cloths to buy. Some are flag themed and some are red, white and blue checkers, stripes or a mix. If you use these, use white napkins, white plates, white plastic ware or silverware, and blue cups or blue glasses. Place a basket or vase of white carnations in the center of

the table. You can also place small flags in the flower arrangement. This table setting idea is creative and looks great! These Memorial Day table setting ideas are sure to make your holiday table look special. They are very easy to do and cost very little. Your table will look beautiful, festive and fun!

by Amanda Austin Memorial Day is more than just a weekend off from work, an excuse to throw a picnic, or a reason to take a weekend trip, it is a national holiday. The history behind Memorial Day seems to have gotten lost in the shuffle throughout the years. With May 27th growing closer, take time to familiarize yourself with the history of Memorial Day, and why we celebrate this holiday. Memorial Day, originally known as “Decoration Day,” was established on May 5 1868 by General John Logan, the national commander of the Grand Army of the Republic. The first observation of Memorial Day took place on May 30th 1868, by decorating the graves of fallen Union and Confederate soldiers in Arlington National Cemetery. Here is an excerpt from General Logan’s “General Orders No. 11,” officially declaring “Decoration Day.” “The 30th day of May, 1868, is des-

ignated for the purpose of strewing with flowers or otherwise decorating the graves of comrades who died in defense of their country during the late rebellion, and whose bodies now lie in almost every city, village, and hamlet church-yard in the land. In this observance no form of ceremony is prescribed, but posts and comrades will in their own way arrange such fitting services and testimonials of respect as circumstances may permit.” New York was the first state to officially recognize Memorial Day as a Holiday in 1873, and all of the Northern states had followed suit by 1890. The Southern states didn’t recognize Memorial Day until after World War 1 when it was changed from recognizing soldiers who lost their lives fighting in the Civil War, to soldiers who lost their lives fighting in any war America participated in. The reason that students and employees are given the day off on Memorial Day, is so they can properly

observe the holiday. When the holiday was originally established nationally it was intended to give patrons the opportunity to visit the graves of our fallen soldiers, attend memorials, fly the American flag at half staff until noon, and acknowledge the “National Moment of Remembrance” at 3:00 PM. The “National Moment of Remembrance” is when everyone has a moment of silence and if you are in a public place “Taps” is played. So, this year on Memorial weekend take a moment to remember why you don’t have to go to work or school. If you are taking a trip with your family, make your rest stop at a memorial or Veteran’s cemetery and observe the men who have fought for our country. If you are having a get together at your home, or attend one at someone else’s home, give a little speech at 3:00 and call for a moment of silence to remind your friends and family why you are all able to get together that weekend.

I know not with what weapons World War III will be fought, but World War IV will be fought with sticks and stones. ~Albert Einstein

Beat the Heat with Pet Safety Tips

Sunny, warm days bring the welcome opportunity to change up your routine and spend more time outdoors with your beloved pets. However, soaring temperatures bring risks from heat and sun exposure, making your furry friends rely on you to help keep them healthy and safe. Make these warm-weather adjustments to keep your pets in top condition and ready to enjoy all the season has to offer with these safety tips from PetSmart experts: Keep them hydrated. Dehydration and heatstroke can be fatal to pets, so access to a clean water bowl both inside and outside is critical in the summertime. While you’re on the go, be sure to bring water for your pet in a suitable drinking container. Serve up healthy meals. Warmer weather invites opportunities, such as enticing picnic spreads, for pets to nab tasty treats. Protect your pet’s health by preventing them from ingesting food intended for humans, and opt instead for food and treats that fit their special needs and preferences. The varieties offered by Natural Balance, which is now available at PetSmart, span dry and wet food made with premium quality ingredients in formulas such as limited ingredient, grain-free and

weight management. Never leave your pet in a parked car. Studies show that on a hot day, the temperature inside a car can reach more than 160 degrees in five minutes. Leaving the windows cracked for fresh air or parking in the shade don’t keep temperatures from soaring in record time, either. Leaving pets in the car “just for a minute” is never a good idea. Groom regularly. One of the best ways to keep a dog’s coat healthy and help prevent matting and summertime skin irritation is regular grooming. The right grooming tool can dramatically reduce shedding by removing the undercoat and loose hair without sacrificing the healthy top coat. Provide skin protection. Just like humans, dogs can experience sunburn and even skin cancer. To prevent sunburn, apply a sunscreen where hair is thin and skin lacks pigment (nose, ears and sensitive areas) every day your dog is outside. Avoid hot surfaces. Dogs’ pads may seem tough, but sidewalks, pavement and sand can get so hot in the summer that dogs’ feet can burn and blister. To prevent this, schedule walks for the morning or evening, when sidewalks are cooler, or purchase protective boots

designed just for dogs. Practice smart snacking. After exercising and in between meals, a sensible snack can provide a boost of energy. Treats such as Natural Balance Dental Chews do double duty by giving a little help with oral care between brushing. Scientifically formulated with unique grooves, these tasty treats encourage natural, healthy chewing to help reduce and remove tartar and plaque. Provide outdoor relief. The best spot for your pet to cool off in the yard is a shaded grassy area because

grass releases moisture and keeps your pet cooler than concrete, dirt or gravel. For added comfort, provide a raised bed that increases the flow of cooler air underneath the bed mat to help your pet beat the heat. Keep water safety top of mind. Even if you consider your dog a good swimmer, a life jacket is very important if you take him with you on the boat or trips to the beach. Successful Launch for the Blenheim EquiSports Ch i p I n F o r Ch a r i t y P r o g r a m

Lane Clarke and Balu U clearing the Uryadi’s Village jump. Photos by: McCool There was a lot to celebrate as Blenheim EquiSports wrapped up the Spring Series in San Juan Capistrano. Along with congratulating all the award winners, Blenheim was pleased to launch the new Chip In For Charity program, where every blue ribbon class winner received a “chip” that could be used to donate to one of four charities. Truly excited for the opportunity to give back to worthy causes, the horse show community responded with exuberance. Uryadi’s Village, an organization that works to support vulnerable children and their families, is one of the program’s recipients. “What an amazing opportunity the Chip in For Charity program offers

us,” explained Jennifer Crooks, Executive Director of Uryadi’s Village. “We not only raised funds, we raised awareness! People whom I may never have been in contact with generously donated.” Crooks was impressed with the support from show management as well. “Blenheim also invited us to do some innovative fundraising. In the grand prix, we had ‘Jump for the Village’ - every time a rider cleared the Uryadi’s Village jump, people could offer a donation amount. We also had a silent auction,” she explained. “Overall, we raised almost $20,000. To top it off, a donor sponsored a hut in the village for an additional $20,000. We’re looking forward to the rest of the show season!”

The Uryadi’s Village booth at the Spring Series

Currently in Ethiopia at Uryadi’s Village, Crooks is putting those donations to work. Thrive Animal Rescue, another of the four charities, will be at this week’s Showpark Ranch & Coast Classic, with dogs available for adoption. Giving back can be rewarding with a new furry friend. Chip In For Charity raised almost $3,000 during the Spring Series. For more details on the Chip In For Charity program, please visit the show office or showpark.com. #ChipInForCharity #ThePlaceToBe Uryadi’s Village: Founded by Jennifer Crooks, Uryadi’s Village is a non-profit organization whose mission is to support vulnerable children and their extended families around the globe by developing social, economic and environmentally renewable systems with orphans, vulnerable women and children where the need is greatest. Their current focus is in Ethopia, Africa which has five million orphans, more than any other country in the world. Thrive Animal Rescue: An adoption organization founded by Cece Bloum, Thrive’s mission is to save abandoned dogs from the loneliness of shelter life and place them into loving families and forever homes. As an entirely donation-based, nonprofit with 501c3 status, Thrive relies on the generosity of the dog-loving community of Southern California for their continued success and ability to make a difference for animals in need. Park Place Foundation: Park Place Foundation, based in Southern California, was formed to promote

and embrace a healthy lifestyle for children and teens as they embark into their journey toward adulthood. The Foundation strives to make changes in how society perceives and treats addiction and mental illness through education, increased awareness and sharing the personal stories of peers. The Scarlett’s Jumper Derby, held in San Juan Capistrano by Blenheim EquiSports, is one of the area events that benefits the Park Place Foundation. Now in its third year, Scarlett’s Derby brings attention to some of the stories behind the Foundation’s mission. The Shea Center for Therapeutic Riding: Established in 1978 and located in San Juan Capistrano, the J.F. Shea Therapeutic Riding Center is dedicated to improving the lives of people with disabilities through therapeutic horse-related programs. It was founded by Nancy and Derek Lewis for their son Michael, who was born with cerebral palsy. The Shea Center now serves over 600 riders each year, utilizing 20 horses and the assistance of more than 600 community volunteers. LADERA RANCH FIREFIGHTER MIKE HEDDLESTEN, NOW KNOWN AS THE CAT WHISPERER, UNDERSTANDS ANIMAL BEHAVIOR Story and Photo by Amy R Spurgeon-Hoffman, Reporter Ladera Ranch News Veteran Orange County Fire Authority Firefighter Mike Heddlesten, the great nephew of South Salt Lake Fire Department Fire Chief Keith Heddlesten, knew as a young boy he would grow up to be a firefighter, the natural path from favorite childhood memories of visiting Uncle Keith at his fire station. While his life work as a firefighter points to a family legacy of helping people in their time of need, he never dreamed he would become known for saving family pets in times of crisis while the clean oxygen clock ticks down. Around 1:40 a.m. Friday, April 29 three-member Young family fled their burning Rinehart Street home in Ladera Ranch in their nightwear to safety outside but screamed for their seven-year old daughter’s cat Kristl who remained unaccounted for as angry orange flames engulfed the garage, exploded two family vehicles and entered the home through the little girl’s bedroom window and above to engulf everything in the attic. The fire damaged four structures and could have been a serious personal loss for the Young’s. Firefighters knew upon arrival that Ken, Kristi and Katie had safely escaped their home. Two other firefighters came to Heddlesten that night unable to locate the cat. A team of highly trained emergency personnel from four strategically positioned south county fire stations and the OC Sheriffs Dept worked in tandem to affect their goal: contain the fire to the garage and find Kristl, (sounds like Crystal) a one-year-old snow white Persian cat, still inside Donning his 70lb fireproof gear and insulated air mask, Heddlesten used his gift of feline behavior during a fire to quickly locate the beloved family pet, through thick toxic black smoke and chaos. Amid massive fire trucks and engines, wailing smoke alarms, intense heat and panic stricken neighbors watching the horror unfold, Heddlesten remained steadfast and used intuition to guide him to the terrified pet instinctively cocooned Page 10

“Carly and the CHOCO Factory” - CHOC Follies Raises Nearly $700,000 for CHOC Children’s Photos by: Carla Rhea, Peggy O’Donnell and Travis Compton A mysterious and magical chocolate factory set the stage for the CHOC Follies XIX’s original production of the “Carly and the CHOCO Factory, An Orange County Musical of Sweethearts, Swindlers and Swashbucklers” as more than 2400 people enjoyed the three days of performances while raising nearly $700,000 for CHOC Children’s. With a dream and an idea, Gloria Zigner founded the fundraiser 19 years ago and looking at the numbers, more than 1500 cast members (me being one of them!) have entertained folks with 75 performances which has netted over $8 million for CHOC. Not bad for Orange County’s professional and business folks who have some theater in them! This year’s productions showcased the talents of 88 of Orange County’s prominent business and civic leaders who took to the stage while the audience members cheered them on. Some actually jumped up from their seats and danced during several musical numbers in the production. Carly and the Choco Factory!” showed a loving spoof of the classic “Charlie and the Chocolate Factory”. Featuring a sweet, single Orange County girl, Carly (played by Samantha Meyers), lives with her large family and dreams of visiting the magical factory where CHOCO, the mascot of CHOC Children’s Hospital resides. In the CHOCO factory on Catalina Island, dreams turn into realities, if only for the time you visit. The factory is run by none other than Millie Zonka (played by Diane Marshall), who secretly guards the magic that transforms the dreams. For the first time ever, seven lucky winners will receive a special ticket to visit the factory! Through song and dance, led by the factory’s “Mova Groovas,” you journey through this special place with Carly and a motley mixture of other winners. But look out for complications, for a band of crazy pirates blown in on the winds of El Nino arrive to bring zany complications to the proceedings! “I want to thank our dedicated and loyal sponsors for supporting the CHOC Follies for so many years,” said Executive Producer Gloria Zigner. “and I am deeply grateful for the amazing contributions of our co-producer, Lois Augustine; our co-chairs, Sandy Segerstrom Daniels, Dale Skiles and SueAnn Cross; and our wonderful artistic team of all 19 years, director John Vaughan; music director Doug Austin and choreographer Lee Martino. And, I certainly can’t thank enough our cast of thousands of talented Orange County community members, who have performed over the years.” Local dignitaries, major donors and other VIPs were invited to the cast party featuring a food buffet provided by the students of the culinary school at Orange Coast College. Buffet stations included: A variety of sushi rolls: ahi tuna, vegetarian and California with wasabi, pickled ginger and soy sauce; Selection of International and domestic cheeses with assorted nuts and berries; Petite chopped salad: shaved Brussel sprout salad with hazelnuts; Kale salad with pomegranate and butternut squash with blueberry vinaigrette; Variety of Tortilla rolls including turkey cranberry cream cheese, Boursin and sundried tomato, roast beef and horseradish cream cheese; Mini shepherds pies with chocolate stout braised lamb; Crudite display; Desert tables including chocolate fountain with selection of dipping fruits, pretzels, rice crispy treats and a selection of dessert bites; and a delicious S’mores station. For the third consecutive year, proceeds of the CHOC Follies will support the hospital’s music therapy program, which applies the clinical and evidencebased use of musical interventions to help patients reach various goals. Named one of the best children’s hospitals by U.S. News and World Report (2015-2016) and a 2015 Leapfrog Top Hospital for the highest quality of care, CHOC Children’s is exclusively committed to the health and well-being of children through clinical expertise, advocacy, outreach and research that brings advanced treatment to pediatric patients. Affiliated with the University of California, Irvine, CHOC’s regional healthcare network includes two state-of-the-art hospitals in Orange and Mission Viejo, several primary and specialty care clinics, a pediatric residency program, and four centers of excellence - The CHOC Children’s Heart, Neuroscience, Orthopedic and Hyundai Cancer Institutes. CHOC earned the Gold Level CAPE Award from the California Council of Excellence, the only children’s hospital in California to ever earn this distinction, and was awarded Magnet designation, the highest honor bestowed to hospitals for nursing excellence. Recognized for extraordinary commitment to high-quality critical care standards, CHOC’s Pediatric Intensive Care Unit (PICU) is the first in the United States to earn the Pediatric Beacon Award for Critical Care Excellence. Top Memorial Day Recipes Start the Summer Right with these Great Recipes By Derrick Riches It’s called the unofficial start of summer and this Memorial Day gives you the opportunity to break out the grill or smoker to start the summer right. These recipes were the most popular for Memorial Day last year and they are a great start to your summer barbecue season.

Kansas City Rib Rub In Kansas City they know BBQ ribs. This is the barbecue rub recipe for traditional Kansas City-Style Ribs. Finish these ribs off with a good barbecue sauce and you’ll have a fantastic meal. Prep Time: 10 minutes Total Time: 10 minutes Yield: Makes a little more than 1 cup Ingredients: 1/2 cup brown sugar 1/4 cup paprika 1 tablespoon black pepper 1 tablespoon salt 1 tablespoon chili powder 1 tablespoon garlic powder 1 tablespoon onion powder 1 teaspoon cayenne Preparation: Combine all ingredients together and transfer to an air tight container. Maybe stored up to six months.

Fresh Corn on the Cob This is the general method for grilling corn on the cob. Remember not to remove the husks, they will hold in the moisture and keep the corn from burning. You might want to pull out as much silk as you can before hand Prep Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes Ingredients: corn on the cob, husks intact Page 14

butter herbs Preparation: DO NOT REMOVE HUSKS. Do remove the silk. Soak in water for at least 15 to 20 minutes. Remove from water and pull down husks carefully -- DO NOT REMOVE -- and coat with herbal butter (made from adding your favorite fresh herbs to softened butter). Put the husks back up covering the corn and tie with a thin piece of husk at the top. Place on grill for about 15 minutes, turning.

BBQ Beef Ribs This is an easy way to prepare delicious, sticky beef ribs on your grill. Remember that the secret to indirect grilling is to make sure that the food doesn’t get any direct heat at all. You will need to rotate the ribs occasionally to evenly cook them. Prep Time: 20 minutes Cook Time: 3 hours, 30 minutes Total Time: 3 hours, 50 minutes Yield: Serves 4 Ingredients: 4 to 5 pounds beef back ribs (about 10 ribs) 1/2 cup ketchup 1/2 cup honey 1 4 ounce can green chilies, diced 1 large onion, chopped 4 cloves garlic, minced 1 teaspoon cayenne 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon dry mustard Preparation: Trim excess fat from beef ribs. Combine salt, pepper and cayenne. Rub over the ribs. Preheat grill and prepare for indirect grilling with a drip pan. Place ribs on grill over drip pan and close the lid. Cook for about 3 to 3 1/2 hours over a medium low, indirect heat (try to keep the temperature under 265 degrees F.). To prepare sauce combine onion, honey, ketchup, chili peppers, garlic and mustard in a sauce pan. Heat over a low temperature, stirring until even and warm. When the ribs are nearly finished begin brushing the sauce on them until you get a thick

coating. B i g D a dd y ’ s C a r o l i n a S t y l e Barbecue Sauce Big Daddy says, “This is Carolina style barbecue sauce.” This means that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid and southwest. The combination of sweet and tangy flavors brings out the absolute best in grilled or smoked pork or chicken. Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Yield: Makes about 2 1/4 cups Ingredients: 1 cup prepared yellow mustard 1/2 cup sugar 1/4 cup light brown sugar 3/4 cup cider vinegar 1/4 cup water 2 tablespoons chili powder 1 teaspoon black pepper 1 teaspoon white pepper 1/4 teaspoon cayenne 1/2 teaspoon soy sauce 2 tablespoons butter 1 tablespoon liquid smoke (hickory flavoring) Preparation: Mix all except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes. Grilled Sweet Potatoes It doesn’t take a lot to make delicious sweet potatoes. These grilled sweet potato slices get a quick blanch in hot water and then hit the grill to cook up hot and fast. Best part is that most of the preparation can be done in advance. Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes Yield: Serves 4 to 6 Ingredients: 4 medium sweet potatoes 1/2 cup melted butter 3 tablespoons brown sugar 1 teaspoon ground cinnamon Preparation: Cup sweet potatoes into 3/4 inch slices. Bring 3 quarts of water to a boil and add potatoes. Boil until potatoes are just starting to soften. Cool and peal. Combine butter, brown sugar and cinnamon, brush over potatoes. Place Potato slices on preheated grill over a medium low heat and cook

for about 10 to 15 minutes, turning once. When the sweet potatoes as soft through the middle and browned on the surface they are ready. A Carolina BBQ Rub Chuck Ozburn sent me this fantastic, classic-style Carolina barbecue rub recipe. Try this rub next time you want to make a traditional Carolina Pulled Pork. Prep Time: 10 minutes Total Time: 10 minutes Yield: Makes about 1 cup Ingredients: 2 tablespoons salt 2 tablespoons sugar 2 tablespoons brown sugar 2 tablespoons ground cumin 2 tablespoons chili powder 2 tablespoons freshly ground black pepper 1 tablespoon cayenne pepper 1/4 cup paprika Preparation: Combine all ingredients in a small bowl and mix well; use as a dry rub

on beef, chicken, lamb or pork. Grilled Tri-Tip Roast This simple beef tri-tip roast is perfect for many uses. Grill it up, low and slow, and serve it as it is, or cut it up for fajitas, tacos, enchiladas or anything else that calls for a flavorful meat. Prep Time: 15 minutes Cook Time: 1 hour Total Time: 1 hour, 15 minutes Yield: Serves 4 Ingredients: 2 pounds tri-tip roast 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon ground black pepper 1 teaspoon salt Preparation: Lightly oil the cooking grate on your grill. Preheat grill and prepare for indirect grilling. Combine garlic powder, onion powder, pepper and salt. Rub it over the surface of the tritip roast. Place tri-tip on grill, fat side up. You can place a drip pan under it to catch the drips which will make a great gravy later. With the grill on low cook for about 1 hours or until it reaches your desires doneness.

How to Commemorate Memorial Day By Patti Winters The United States has a rich history, and Memorial Day is one of the holidays originated to show our respect for those who have died for it and the many freedoms we enjoy on a daily basis. Memorial Day (originally called Decoration Day) was officially proclaimed in 1868 by General John Logan, and first observed on May 30, 1868 by placing flowers on graves of Civil War soldiers at Arlington National Cemetery. Since 1971, Memorial Day has been celebrated on the last Monday of May, to allow for a three day Memorial Day Weekend. Discuss American history with your family. We get so busy with our day to day lives that we often forget to slow down and really think about the reason our national holidays were started. It is important to discuss the pride we have in our country and how we appreciate those that came before us, especially with our children. Buy a poppy from the VFW. Beginning in 1922 the Veterans of Foreign Wars (VFW) took a Dutch and French tradition and began to sell poppies nationally, to raise money for veterans in need. Today these poppies are made my disabled veterans and sold each Memorial Day Weekend. Participate in the “National Moment of Remembrance”, which was started in 2000. This is a resolution asks American citizens to stop anything they may be doing at 3 p.m. local time, and observe a moment of silence.

Show respect for fallen war veterans. Visit cemeteries or war memorials to show your respect. Lay flowers or place flags as a remembrance to what the war veteran has given for his or her country. Many cemeteries have fallen war veterans whose family no longer lives close by. You can “adopt” these grave sites to show that their service has not been forgotten.

Spend quality time with your family and enjoy (and appreciate) the freedom that others have given their lives for. Most cities will have parades and other celebrations. If there isn’t a formal activity that you’re interested in, think of having a picnic or get together with family and friends.

Start the Summer off Right - Memorial Day Safety Tips!

Next weekend is Memorial Day Weekend. “Let’s all take part by being responsible for our self and others says Fire Chief Sam DiGiovanna.” Here are a few safety tips: Travel Safety • Buckle up, slow down, don’t drive impaired. • Be well rested, alert and patient; give your full attention to the road. Do not text and drive! • Let someone know your destination, your route, and when you Page 16

expect to arrive. Water Safety Paddle Board? Jet Ski? It’s all harmless fun, right? Fun, certainly. But think before you play. Whatever the activity, observe these three cardinal rules: • Wear a Coast Guard-approved life jacket. • Know local weather conditions. Make sure the water and weather conditions are safe. Let others know when you hit the water and when you plan to return!

The Ladera Ranch News

• Learn to swim. Do not swim alone or leave children unattended! Let someone know where and what time your leaving and intend on returning! Grill Safety This fun seasonal ritual has a flip side, though—namely, an onset of injuries and home fires due to careless cooking practices. Here are some tips you can follow to stay safe while enjoying those tasty treats at your cookout. • Never grill indoors or unattended

– not in your house, camper, tent or any enclosed area. • Keep the grill out in the open, away from the house, the deck, tree branches, or anything that could catch fire. Hot grease or ashes could spill from the grill onto the wooden deck or into dry leaves or grass.
