Are you a self-proclaimed road warrior who loves when other drivers do a double take to admire your wellcared-for car? ANDRÉ WATTS, RETURNS TO PACIFIC SYMPHONY FOR A SEASON FINALE PERFORMANCE OF BEETHOVEN’S BREATHTAKING PIANO CONCERTO NO. 4
André Watts Concert also includes Berlioz’s extraordinary “Symphonie Fantastique” More than 50 years after Leonard Bernstein introduced him to the world at the age of 16, André Watts remains one of the most celebrated and beloved piano superstars. Having played before royalty in Europe and heads of government in nations all over the world, it’s hard to find a more accomplished pianist than Watts. In his hands, Beethoven’s revolutionary Piano Concerto No. 4 becomes a fitting finale to Pacific Symphony’s 2015-16 classical season. A longtime friend of Music Director Carl St.Clair and the Symphony, Watts returns for his sixth performance with Pacific Symphony. Led by St.Clair, Beethoven’s masterpiece shares the stage with Berlioz’s musically riveting work, “Symphonie Fantastique,” inspired by the composer’s infatuation with a British ingénue. Full of vivid descriptions of obsession and dreams, tantrums and tenderness, suicide, murder, ecstasy and despair—the piece is a musical wonder. This concert takes place Thursday through Saturday, June 2-4, at 8 p.m. in the Renée and Henry Segerstrom

Also on Saturday, June 4, is the Symphony’s fifth “Plazacast and Community Festival.” This free party on the Plaza outside Segerstrom Center for the Arts begins at 5 p.m. with food trucks, music, dance and art before the Symphony’s concert is projected simultaneously on the wall at 8 p.m. Another chance to hear Berlioz’s fascinating work, “Symphonie Fantastique,” takes place during Sunday Casual Connections, on Sunday, June 5, at 3 p.m., when Maestro St.Clair and the orchestra uncover the semi-autobiographical story of an artist’s self-destructive passion for a beautiful woman. Tickets for the Connections performance are $25-$96. In discussion, Maestro St.Clair pointed to the Los Angeles Times review of Watts’ April recital at the Broad Stage. The headline read: “At 69, André Watts is playing like a teenage phenom.” The article went on to say: “Watts, who turns 70 in
June… demonstrate[d] the young virtuoso in him is alive and well but tamed by an expressive and mature artist. Throughout his recital, Watts achieved a level of authority and command seldom heard from a pianist of any age.” “This is why I have a rewarding and long-lasting musical relationship with André,” says St.Clair. “He is a consummate artist and one of America’s most distinguished musicians. We are so fortunate that he chooses to join us as often as he does. This is the second of the five Beethoven Piano Concertos that he has performed with me and Pacific Symphony. It is always an enlightening musical experience when we share this great music of our beloved master Beethoven with André.” Beethoven completed his five piano concertos between the ages of about 19-20 to when he was just 38. Six years later, he started a sixth, but abandoned it, marking the end of his writing for this form. Like Mozart, Beethoven was a composer who had stunned audiences and made loads of money by composing ridiculously difficult piano concertos and effortlessly performing them in concert. Unfortunately, this was about the time Beethoven began growing deaf, and he could no longer trust himself to perform. For this particular concerto, his fourth, the piano begins alone, playing for just five bars with a gentle theme that sets the tone for the whole movement. The second movement is no longer gentle—the piano and orchestra seem to exist in different worlds, like a couple that can’t get along—angry, charming, petulant. At the premiere of his Fourth Concerto, two boys stood by the piano holding candles. At one point, Beethoven leapt up, knocking the candles to the floor. The element of the unexpected was another reason audiences flocked to Beethoven’s concerts! Beethoven’s Fourth Concerto is light years ahead of its time and the perfect vehicle in the hands of a legendary pianist like Watts. For years, Watts has always been the musician Pacific Symphony calls when they want to celebrate— whether it’s a show-stopping start or a memorable end to a season. It was in September 2012 that the superstar pianist last lit up the stage, opening the Symphony’s 34th season by playing Brahms’ Piano Concerto No. 2 to standing ovations. In June 2010, Watts joined the orchestra for St.Clair’s 20th anniversary
celebration, the final concert of the season, performing Grieg’s sweepingly romantic Piano Concerto. In 2008, Watts rocked the concert hall by performing Rachmaninoff’s Piano Concerto No. 2. But it was in 2004 that Watts last performed one of Beethoven’s piano concertos—his third. Many sense in Berlioz’s ‘Symphony Fantastique’ the classical tradition and presence of Beethoven. At the same time, Berlioz strove to write “new music”—meeting with tremendous success. The most remarkable of first symphonies, “Fantastique” sounds and behaves like nothing ever heard before. A self-portrait of its composer and an epic for a huge orchestra, through its movements, “Fantastique” tells the story of an artist’s obsession over a beautiful woman. The symphony describes his extreme emotions in all their glory and horror. Leonard Bernstein described it as the first musical expedition into “psychodelia,” because of its hallucinatory and dream-like nature, and because history suggests Berlioz composed at least a portion of it under the influence of opium. According to Bernstein, “Berlioz tells it like it is. You take a trip, you wind up screaming at your own funeral.” “Symphony Fantastique’ is a unique work in the orchestral repertoire,” says St.Clair. “It is often thought that it comes from the late 19th century, at the end of the Romantic Period. Actually, it was premiered in 1830, three years after the death of our dear Ludwig. The first rehearsal of the ‘Symphony Fantastique’ had to be cancelled because—and get this—there weren’t enough chairs or candles to light the room or seat the number of performers. “The piece is SO far ahead of its time and it lit the path for many of the Romantic composers to follow, including Wagner, Liszt and others,” St.Clair continues. “It also is the first extensive tone poem with a story and a musical connection via the idée fixe that Wagner later uses in his opera, especially his ‘Ring Cycle.’ It is a miracle—and a musical journey not to be missed as it concludes our 2015-16 series.” Pacific Symphony’s classical series performances are made possible by the Hal and Jeanette Segerstrom Family Foundation, with additional support from the Avenue of the Arts Hotel, KUSC and PBS SoCal. Simple swaps for a healthy lifestyle Americans are more concerned than ever before about living a healthy lifestyle. However, implementing dietary changes and adopting an exercise routine can prove to be overwhelming. A recent Gallup poll found that nine out of 10 consumers say they make it a point to try to include fruits and vegetables on their plates, but they are not necessarily succeeding. “Simple everyday swaps can make the difference in achieving a healthy lifestyle,” says registered dietitian Dawn Jackson Blatner, author of “The Flexitarian Diet.” “We live in a busy society, and no one diet fits all. Focus on small daily shortcuts that are realistic and will have a lasting impact.” Try these quick and simple swaps, which can actually make a difference in realizing your goals: * Boardroom conference vs. walking meeting: Swap your sedentary internal office meeting for a “walking meeting.” Instead of meeting in a conference room for 30 minutes, make a few trips around the office building and add a burst of physical activity to your day. * Online shopping vs. mall: Switch up the routine and head back to the store. While online shopping has made life more convenient, it has eliminated another opportunity to realize the health benefits of walking. * Gym vs. five-minute routine: Page 10

WATER AWARENESS FESTIVAL DRAWS RECORD CROWDS AT SANTA MARGARITA WATER DISTRICT By: Amy R. Spurgeon-Hoffman, Staff Reporter/Photographer Ladera Ranch News Nearly 2,000 water inquisitive guests attended Santa Margarita Water District’s 2016 annual Water Awareness Festival May 14th from 10 a.m. to 2 p.m. at its expansive campus headquartered on Antonio Parkway in Rancho Santa Margarita in conjunction with California’s recognition of May as “Water Awareness Month.” The family-friendly event drew both adults and children that were able to learn more about water use efficiency and local supply reliability at the second largest retail water agency in Orange County that serves more than 155,000 residents and businesses in Mission Viejo, Rancho Santa Margarita, Coto de Caza, Las Flores, Ladera Ranch and Talega. Captivated children searched high and low for keywords posted throughout the festival trying to become a Santa Margarita Water District Water Wizard for a chance to win a prize basket. Over 30 invested community partners hosted booths and activities for guests to browse and enjoy while learning about water use in our area. While some enjoyed a 30-minute sustainable landscape class or a 15-minute chat about Santa Margarita Water District infrastructure project, others headed for the face painting, hands-on tide pools exhibit, water efficient irrigation and native plant displays, reptiles and jumpers or took part in the complimentary historic fire truck rides. CHIQUITA WATER RECLAMATION PLANT OPEN FOR PUBLIC TOURING The most intriguing event of the day were the informative bus tours of the state of the art and technologically advanced Chiquita Water Reclamation Plant, a facility built in 1985 to provide sewage treatment for Rancho Santa Margarita, Coto de Caza and a small portion of Trabuco Canyon. Tracy Wallace, Chief Operator Chiquita Water Reclamation Plant, is the Willy Wonka of this reclamation plant, and if you have any doubts about his integrity, knowledge and passion for his work – don’t. He’s got South County’s back when it comes to all things reclamated water. “It’s the most rewarding career. It keeps me so interested and the career is so diverse,” Wallace said. “This is my passion.” Chiquita can be found off an old paved road just off Cow Camp and Antonio right before you head into Rancho Mission Viejo’s latest endeavor Esencia. Wallace remembers back to the mid 1980s at Chiquita when discharge to
the ocean was a standard EPA guided practice. “Now it’s a crime if you don’t recycle,” Wallace said. “And those flushable wipes cost the industry billion’s a year – they don’t disintegrate!” FLUSHABLE BABY WIPES CAN CAUSE A SEWAGE SPILL Wallace said despite marketing of flushable wipes that hits home especially close here in young family oriented Ladera Ranch, the ‘baby wipes’ actually stop pumps and can create sewage spills.” The Santa Margarita Water District upgraded equipment at Chiquita in August 2015 to increase production of recycled water to an average of 6 million gallons per day, at a cost of $140,000; however, looking forward to the build out of Rancho Mission Viejo, Chiquita is looking to increase to 10 million gallons a day at an additional $7.5 million in renovation which will be funded by the Rancho Mission Viejo Co., according to online sources. The Santa Margarita Water District was formed in 1964 as a landowner district (Section 35306 of the California Water Code) by a group of ranchers who wanted to create a reliable source of water for their cattle. Wayne’s performance included his hits, “Sara Smile, Do You Believe in Me Now?” and “I Love you This Much.” He spoke about his mission as a former foster child to bring awareness to kids who age out of the system and become homeless, which included his 1,700-mile walk from Nashville to Phoenix to bring attention to it. “I’ve been given this platform to help these kids,” he said of his homeless/foster care experience, and he lauded Olive Crest’s work with foster youth. His new book, Walk to Beautiful, is a tribute to mothers in celebration of Mother’s Day, as well as to Wayne’s late foster mother Bea Russell. His book was a gift to all mothers attending, and the dedicated author autographed copies of it following his performance. The evening included a festive cocktail reception in keeping with the concert atmosphere, with tray-passed and stationary appetizers, as well as tempting silent and live auction items. The live auction included tickets to the Country Donna Giordano, Dave Hirz, and Olive Crest National Director of Music Awards, tickets to the award-winning Broadway show, Hamilton, and Development Rhonda Tagge a Bristol Farms sushi party for 20, which sold twice for $3,500. The evening’s estimated net proceeds of $118,500 benefited Olive Crest’s Project Independence, a unique and comprehensive program that provides foster youth, ages 14 to 24, the support necessary to become independent and successful adults. The Founder’s Award was presented to Dave G. Hirz, CEO and President of Smart & Final Stores, Inc. Presenting the award were Olive Crest founders Dr. Donald and Lois Verleur. “Dave is truly committed to bettering the kids’ lives at Olive Crest,” Lois said. Conversation with Ken Seeley, Renowned Substance Abuse Expert and Host of the Emmy Award Winning Television Series; Intervention The phones are always ringing at Ken Seeley’s spacious Palm Springs offices. Some calls are as important as life-and death where families of addicts are calling desperately to get Seeley’s advice about a chronic drug-abusing family member and other matters of a serious crisis tone. Ken Seeley’s secretary interrupts our interview with “Mr. Seeley, I have a CNN producer on the phone wanting to get your opinion on a show they’re doing this weekend.” “Ask them if can call them back,” Seeley replies calmly. Major television news producers and onair talent usually seek out Ken Seeley for input for important topics involving celebrity substance abuse. Seeley is a regular contributor to CNN, MSNBC, NBC, CBS, Fox, and ABC on the topic of addiction. Ever since the powerful Emmy award winning series ‘Intervention’ ran on A&E for fourteen seasons, Ken Seeley has been regarded as the foremost expert in the field of drug, and alcohol abuse. Those familiar with the Intervention series know the format which follows real life dealing with the frantic struggles faced by many different kinds of addicts. Each episode followed one or two participants, each of whom has a substance dependence or other type of severe addiction. The subjects believe they are being filmed for a documentary on their problem, but their situations are actually being documented in anticipation of an intervention by family and/or friends. During the intervention, each participant is given an ultimatum: go into rehabilitation immediately, or risk losing contact, income, or other privileges from the loved ones who instigated the intervention. Often, other tactics are used to persuade the addicted person into treatment, which vary depending on the situation; some of these include threats to invoke outstanding arrest warrants, applying for custody of the addict’s children, foreclosing on the addict’s property, and break-up of marriages or other relationships. If the idea of longer, warmer days has you reaching for the tongs, it’s time to get your grilling game on before the season is in full swing. Serving family and friends the most mouth-watering grilled entrees with ease requires a little know-how and a few crowd-pleasing recipes. From versatile chicken to hearty ribs to tender seafood, it’s never been more fun to incorporate new flavors into grilled cuisine. For the best results on the grill, keep these tips in mind: • A grill is not an oven, so don’t walk away from it when it’s on. Organize what you’ll need ahead of time; no running back and forth. • Always scrape hot grill grates clean with a wire brush so food will release more easily. Before cooking, try using tongs to dip paper towels lightly into oil and swipe over the grates. • If the meat or skin sticks, it’s not ready to be turned. Let it sit for another minute or two. • Try chicken thighs, which have a deeper, richer flavor than breast meat. • The pork tenderloin can withstand the dry heat of the grill and stay moist.
• Salmon, tuna and swordfish steaks grill well because they are thick and crumble less than other types of fish. • A safe inside temperature for ground beef is 160°F; medium steaks is 140°F. Heat poultry to 165°F and whole cuts like breasts to 170°F. Medium pork should be 150°F. Seafood should be 145°F. • For maximum flavor and juiciness, let meat rest 5-10 minutes before cutting or serving. Another tasty grilling tip is to add flavor with sauce. Molasses Apple Butter BBQ Sauce for Chicken Servings: 4 For up to 2 pounds of chicken 1/2 cup Apple Butter 1/4 cup molasses 1/2 teaspoon ground ginger 1/2 teaspoon salt 1/4 teaspoon pepper Mix all ingredients in medium bowl. Brush sauce over chicken in the final 5 minutes of grilling. Additional sauce can be served at the table. Citrus Apple Butter Glaze for Seafood Servings: 4 For up to 4 fish fillets or 2 pounds
of shrimp 1/2 cup Apple Butter 2 tablespoons orange juice 2 tablespoons lime juice Mix all ingredients in medium bowl. Cook one side of seafood (skin side down). Brush glaze generously on top. Flip seafood and cook until done. Discard any remaining sauce. Asian Apple Butter Grilling Sauce for Pork Servings: 4 For up to 2 pounds of pork tenderloin or ribs
1/2 cup Apple Butter 1/4 cup Apple Cider Vinegar 1/4 cup water 2 tablespoons honey 3 cloves garlic, minced 1 teaspoon ground ginger 1/4 teaspoon salt 1/8 teaspoon pepper Mix all ingredients in medium bowl. Lightly brush or mop sauce over pork during entire grilling time, so sauce slowly cooks into pork. Discard any remaining sauce.

Wearing a pair of comfortable sunglasses while you are staying active outdoors will not only prevent eye strains and squinting - which will help keep you looking younger, longer - but can actually help protect eyes from cataracts, keratitis and other eye ailments as well. Many people need their vision corrected through eye glasses or contact lenses. If you choose contact lenses, wearing sunglasses to prevent glare and protect your eyes from UV light is still very important. If you prefer to wear eye glasses, a pair of prescription sunglasses is ideal, to be worn whenever you are outside in daylight. A wide brim hat offers sun protection to your skin as well as eyes, creating natural shade and reducing strain. Choose a hat with a dark, non-reflective underside of the brim. This will help reduce UV glare from reflective surfaces like water or snow. Staying active is great for your overall health, but be sure that you are safely engaging in activities. Taking steps to strengthen and protect your vision will help ensure that your eyes will be safe and healthy for years to come.

Jenny Karazissis and Legacy Are Number One in the $10,000 USHJA International Hunter Derby

Photos by: Captured Moments On an ideal Del Mar afternoon, twenty-eight entries galloped onto the green grass field for the $10,000 USHJA International Hunter Derby. The four honorable judges included Carol Dean Porter and Chris Wynn as Panel One, and Jimmy Lee sat with Tony Scarlata for Panel Two. With four solid high options, flowing lines and a single oxer up the hill, the course designed by Thomas Hern of Plymouth, MA, covered the expanse of the grand prix field. Going late in the order, Jenny Karazissis and Emily Sukert’s gorgeous gray Legacy earned the highest score of the Classic Round, 174, giving the pair a six point lead going into the Handy
Round. With a score of 165, Michael Leon and his own Nil Du Buffant Rouge were sitting second. Amateur rider Kaitlyn Van Konynenburg and Comissario rounded out the top three with a score of 161. Michael Leon earned another spot in the top twelve aboard Apache Joe (owned by Oz Investments). Also returning with two mounts was veteran Derby rider John French, riding Center Court (owned by Hiller Farms, LLC) and Iwasaki & Reilly’s Small Adventure. The winners of this class during the Blenheim Spring Series, Katie Gardner and Starlane Farms, Inc.’s Maldini, were sitting fifth after the first round. The Handy Round created some shifts

in the standings. The course required riders to trot the first fence and hand gallop the final oxer, plus offered some challenging options. If a horse turned better one way or another, the track from fence one to three could be done in the horse’s best direction. Sitting tenth and second to return, thirteen-year-old Brooke Morin and Highpoint Farm, LLC’s Boss were having a lovely round, including all four high options, but had a heartbreak rail at the final oxer. Sitting ninth and third to return, French and Center Court rose to the occasion. Taking all four high options and receiving top handy scores, the pair scored a stellar 193 and moved into the lead with a total score of 342. Gardner and Maldini also had a lovely round, jumping all the extra options and with handy style. Their score of 192 and overall total of 342 tied for the lead. Leon and Karazissis both performed well under the pressure. Nil Du Buffant Rouge executed impressive handiness and took all four high options, scoring a 346 overall and taking over the top position. Legacy was lovely, and although they only took one high option, their overall score of 355 held the top spot. Blenheim EquiSports also congratulated the other top rides and participants. Top class awards included the Equitex Trainer Award that went to Mary Morris of Ivy Gate Farm, the Balmoral Farm Owner Award to Emily Sukert, and premier
grooming company Shapley’s awarded the Best Turned Out Award to Davlyn Farms’ Cy Young and grooms Hector, Francisco and Nico. The Plaid Horse High Score Junior Hunter Rider Derby Award went to Brooke Morin, and the One K Helmets High Score Amateur Hunter Rider Derby Award went to Kaitlyn Van Konynenburg. A solid citizen at eight years old, Legacy illustrated his true derby talent. “He has a really great front end, you always know he is going to try hard,” Karazissis said after her win. “This was a very spooky course, there were a lot of people that had trouble, but Legacy handled it very well, he is really brave. He is also extremely handy; I would say that’s the best part about him.” The praise continued. “I get to ride him often, fortunately for me. He’s a lot of fun! I usually ride him in High Performance division, but we did two divisions at Del Mar, so I decided to only do the hunter warm up and derby here, which paid off.” The Ranch & Coast Classic highlight classes continue this weekend in Del Mar, including the second Interactive Mortgage Horses 10&U Futurity qualifier of the season, and the $60,000 Grand Prix of California on Saturday. Presentations of SmartPak Grand Champions and High Score Awards will wrap up Blenheim’s second World Champion Hunter Rider week on Sunday.
