Fail-safe tricks for creating the perfect cheese platter
Your social calendar is packed to the brim with dinner parties and family activities. Whether you are hosting or attending as a guest, providing something delectable will always be a welcome addition to the celebration. Loved around the world, a scrumptious cheese platter is guaranteed to tempt everyone’s palate and be the perfect conversation starter. Creating a delicious and interesting cheese platter is easier than you think if you make use of a few tips and tricks trusted by expert chefs. These four ideas will ensure your platter not only embodies the perfect array of cheeses but also showcases your personal taste and style. The right varieties and correct amounts Confused about how many varieties of cheese to buy? And how much is needed for your size gathering? The goal is to give people a nice selection of cheeses to sample without overwhelming them; three to five cheeses typically will do the trick. A simple way to ensure a nice spread is to make selections based on the type of milk used to create the cheeses. For example, cow, sheep and goat’s milk all create
very different kinds of cheeses, and knowing about these differences can help you make better choices when shopping. Prepare 4-6 ounces per person if cheese is the main food, and serve more or less depending on the time of day, whether other foods are served and the type of celebration. When in doubt, reference this handy online cheese calculator at www. dcicheeseco.com/party. Add an aged-cheddar flight Do you love cheddar? You’re not alone, as it’s one of the most universally enjoyed cheese varieties. That’s why a flight of different cheddar cheeses is sure to capture your guests’ attention while satisfying their hunger pangs. Try selecting three different cheddars for people to taste - odd numbers always present well on a plate. Black Creek’s premium cheddar cheeses made in Wisconsin are aged for nine months, two years or even three years, and they feature a rich, sharp flavor. Pre-cut the cheese into cubes and place the pieces on the platter, or you can allow guests to cut their own. Educate guests by adorning each cheese with a candle featuring the number of years that the cheese is aged. Create a worldly theme
Want a crowd-pleasing theme for your cheese plate? Create a “Tour of Europe” platter that will delight taste buds while letting guests try different cheese styles. Start with mild flavors, including French cheeses like brie and camembert that offer a soft texture. Next, guests can visit Italy when they sample Stella Italian-style cheeses like full-flavored parmesan or rich, semi-sweet asiago. Finish with flavorful cheeses from Holland and Denmark, like extra-aged Gouda or nutty Edam. Add flags to your cheese offerings denoting each one’s nationality for the perfect finishing touch.
Accompaniments, preparation and presentation The sky is the limit when it comes to serving vessels. Go traditional with a wood cutting board or get creative by using marble tile or colorful vintage glass platters. Arrange cheeses artfully on the platter about an hour before guests arrive, as roomtemperature cheese maximizes each variety’s flavor. Finally, remember no plate is complete without a selection of garnishes like crackers, bread, fresh or dried fruit, nuts, olives and meats. Then sit back and watch as guests munch away and strike up conversation. - (BPT)

HALLOWEEN WITH HARRY POTTER! PACIFIC SYMPHONY CELEBRATES THE MUCH-LOVED HOLIDAY Hop on the Hogwarts Express! Young Witches, Wizards and Muggles unite as they find themselves transported to the fantastical world of Harry Potter, when Pacific Symphony’s Family Musical Mornings series returns just in time for Halloween. Featuring the beloved music of John Williams and more, this concert event is the perfect way to get a jump on Halloween (all are invited to come in costume!). Conjuring up this magical world are selections from the movie, “Harry Potter and the Sorcerer’s Stone”—including “Hedwig’s Theme,” “Harry’s Wondrous World” and “Nimbus 2000”—and yet more other-worldly music. Hosting the 45-minute musical extravaganza designed especially for kids 5-11 is the wondrous wizard, Assistant Conductor Roger Kalia, who, along with actors and a magician, takes the audience on an enchanting journey filled with symphonic sorcery. “The Magic and Music of Harry Potter” takes place on Saturday, Oct. 22, at 10 a.m. and 11:30 a.m., in the Renée and Henry Segerstrom Concert Hall. Come early or stay late and join in the fun at the interactive Musical Carnival, where kids can test drive a musical instrument, meet the performers and enjoy musical arts and crafts activities themed to the morning’s concert. Activities begin at 9 a.m. for 10 a.m. concertgoers and 12:15 p.m. for 11:30 a.m. concertgoers. Family Musical Mornings season-ticket packages are $60-$160; single tickets are $15-$40. For more information or to purchase tickets call (714) 755-5799 or visit www.PacificSymphony.org. “I respect J.K. Rowling immensely,” says Maestro Kalia, “and I can understand why the movies and books are so appealing to people all over the world. I absolutely adore the music of ‘Harry Potter.’ John Williams did an amazing job of capturing the moods and excitement of the movie plotlines and all of the characters. And since Halloween is only a few days after this concert, we are also going to perform works by Berlioz, Bach, Daugherty and Saint-Saëns to put the audience in the holiday mood. “Halloween lends itself to exciting concerts with everyone dressing up in costume, including our musicians, who always have a great time on this concert every season. I’m always amazed at how the costumes inspire great music making. The concert hall will be transformed into a world with wizards, witches and magical creatures! I encourage everyone to wear their favorite Halloween costume!” This exciting return to the world of magic and wizardry through the music of John Williams’ magnificent scores from the “Harry Potter” series also includes other music perfect for Halloween: Camille Saint-Saëns’ “Danse Macabre,” Hector Berlioz’s “March to the Scaffold” from “Symphonie Fantastique,” Michael Daugherty’s “Red Cape Tango” from the “Metropolis Symphony” and Johann Sebastian Bach’s “Tocatta y Fuga.” The concert spotlights the brass family of instruments as audience members learn how the families of instruments work together, similarly to the four houses at Hogwarts! “The basic premise of our show is that the power and magic of music will be able to save us from a new Dark Wizard,” says Kalia. “My baton will become a magic wand during the concert and Page 4
we’ll have a magician joining us, who will perform a variety of magic during some of our musical selections.” For those who need reminded of the literary sensation that sparked a new love for reading in many children and adults alike… J.K. Rowling’s popular children’s novels (which were later adapted into big blockbuster films) began with “Harry Potter and the Sorcerer’s Stone,” a story about a boy who learns on his 11th birthday that he is the orphaned son of two powerful wizards and possesses unique magical powers of his own. He escapes his life as an unwanted child and becomes a student at Hogwarts, a Scottish boarding school for witches and wizards from around the U.K. There, he meets two friends who become his closest allies and help him discover the truth about his parents’ mysterious deaths. Since that first book, Harry has been through a lot with his two best pals, Ron Weasley and Hermione Granger. There has been adventure, heartbreak and even death, all the elements that have shaped Harry into the man he needs to be to face the dark and evil wizard, Lord Voldemort. “I think audiences are able to connect with these characters,” says Kalia. “Rowling has the special ability to create unique personalities for each character that audiences can relate to. Likewise, “Rowling has made the ‘magic’ within her novels so believable. I feel that magic has become such a significant part of people’s lives, and the idea that anything is possible.” The Symphony’s storyline takes place after the seventh novel and has Harry Potter sending Hogwarts music professor, Joseph Weasley, to Maestro Kalia and Pacific Symphony to stop a new, immerging dark wizard whose goal is to rid the world of the magic of music! do battle against the evil entity is Hogwarts’ student Lucy Hufflepuff (played by 13-year-old Charlotte Rubino, 8th grade student at Orange County School of the Arts in the Musical Theater Conservatory), in her seventh performance with the Symphony. Playing the part of Weasley and adding to the spectacle is illusionist Joseph Réohm (first-season winner on the television series “Wizard Wars”), who confounds and transfixes with his wizardly abilities! Ronald M. Banks—the Percussionater in the 2015 Family concert “Superheroes!” and the voice of Quan Chi in the video game, “Mortal Kombat X”—returns to his villainous roots with the Symphony in his role as the Dark Wizard. Serving as director and scriptwriter is Symphony favorite, Joe Lauderdale, who most recently took part in last season’s “Symphony in Space.” The “Harry Potter” book and film series are one of those once-in-a-lifetime cultural phenomena that continue to delight millions of fans around the world—and now audiences will be able to relive the magic through the music that’s been sparking imaginations for years. From the first note, the innovative, colorful music engages and creates a special concert that comes to life with extraordinary music. The dominant theme closely identified with and used in all of the “Harry Potter” films is titled “Hedwig’s Theme,” even though it doesn’t always specifically represent the character, Hedwig, but rather the wider idea of magic and the wizarding world. Of all of the music from the movies, the concert suite for “Hedwig’s Theme” is the most frequently performed by musicians and ensembles. But all of the music performed during “The Magic and Music of Harry Potter” is sure to sound familiar—even to many young ears.

Eight Rancho Santa Margarita High school Eagles Named 2017 National Merit Semifinalists Santa Margarita High School seniors Evan Deakin of Laguna Niguel, Jonathan Kim of Laguna Niguel, Albert Lee of Rancho Santa Margarita, Ethan Lee of Laguna Niguel, Justin Mendelson of Trabuco Canyon, Natalie Wang of Irvine, Elizabeth Weeks of Ladera Ranch and Justin Wittekind of San Clemente were named semifinalists in the 62nd annual National Merit Scholarship Program. These academically talented high school seniors are eight of approximately 16,000 students nationwide that will have an opportunity to continue in the competition for some 7,500 National Merit Scholarships worth about $32 million that will be offered next spring. To be considered for a Merit Scholarship award, semifinalists must fulfill several requirements to advance to the Finalist level of the competition. Santa Margarita High School has more semifinalists than any other private school in Orange County. About 90 percent of the semifinalists are expected to attain finalist standing, and about half of the finalists will win a National Merit Scholarship, earning the Merit Scholar title. About 1.6 million juniors in more than 22,000 high schools entered the 2017 National Merit
Scholarship Program by taking the 2015 Preliminary SAT/National Merit Scholarship Qualifying Test (PSAT/ NMSQT), which served as an initial screen of program entrants. The nationwide pool of semifinalists, representing less than one percent of U.S. high school seniors, includes the highest scoring entrants in each state. The number of semifinalists in
a state is proportional to the state’s percentage of the national total of graduating seniors. To become a Finalist, the semifinalist and their high school must submit a detailed scholarship application, in which they provide information about the semifinalist’s academic record, participation in school and community activities, demonstrated leadership
abilities, employment, and honors and awards received. A semifinalist must have an outstanding academic record throughout high school, be endorsed and recommended by a high school official, write an essay, and earn SAT scores that confirm the student’s earlier performance on the qualifying test.

W i l l S i m p s o n a n d T h e D ud e D o I t A g a i n i n the $50,000 Showpark All Seasons Grand Prix Bjorn Ikast and Supernatural Win the $20,000 Interactive Mortgage Horses 10 & Under Futurity Final Saturday afternoon highlights at the Del Mar Horse Park included the $50,000 Showpark All Seasons Grand Prix and the $20,000 Interactive Mortgage Horses 10 & Under Futurity Final. Catsy Cruz of Mexico set the tracks, with her educated eye on encouraging the young horses and challenging the 1.50m show jumpers. Will Simpson and The Dude (Nicole Walker, owner) illustrated their dynamic partnership once again by leading the grand prix victory gallop, and Bjorn Ikast rode his nine-year-old, Supernatural, to the win in the futurity finals. “I enjoyed setting for this class. The material here is fantastic and this ring gives you a lot of room to set these courses,” FEI course designer Cruz said. “In the grand prix, I set the triple at the end of this course to test the riders’ ability to keep their horses focused. I also set some fences that might present riders with some problems, like the triple bar to the tight skinny vertical. I made the time quite fast; they must keep the pace, especially on the long gallops.” With the variety of questions asked, jumps fell throughout the 16 effort track, but as noted, the ‘A’ element of the triple combination came down repeatedly. As Cruz expected, the time allowed was tight, and over half the class incurred time faults. Two riders finished with time faults only, just missing the chance to ride the
shortened course for the blue. Four of the thirty-four entries returned for the jump-off. First to go was Lane Clarke aboard Georgy Maskrey-Segesman’s Balu U. Double clean and opting for both inside turns, he set the pace with a time of 37.84 seconds. Next in was Simpson and The Dude. Taking all the inside turns and never missing a beat, the pair clocked in with a very quick time of 35.86, shaving almost two seconds of Clarke’s lead. Eager to catch Simpson’s blazing fast time, Michelle Parker rode Cross Creek Farm, Inc.’s Cupilor around a speedy track but barely rubbed and dropped the last rail, picking up four faults in 36.23. Last in the jump-off, Hanna Mauritzson aboard Parkmore Lux, chose to go for a clean, smooth ride, and succeeded in 37.97. “Today I really kicked on the afterburners, which I love to do,” Simpson mused. “We schooled early, so I got off the horse and went up to watch the horse before me. I learned that trick from my good friend, Mclain Ward. He always does that, watches on foot before going in. I did that today and it worked out really well. I came back and got on my horse so I knew the striding for both the eight-stride lines.” “The Dude has such an amazing gallop, you can see a fence that looks like it’s a mile away and you go for what you think is a really long

Santa margarita racks up four straight wins against non-league opponents
Junior Chad Magyar finished the night 147 rushing yards and three touchdowns. By: Sean Zeitler Photos by: Robert Russell Scoring has been at a premium for Santa Margarita the past four weeks. Since dropping the season opener to Mission Viejo on August 26th, the Eagles are averaging 44.5 points per game and are holding their opponents to just 23.5 points. Last Friday’s matchup against MLK High School was no different. The Eagles (4-1) once again established their first half dominance as they would go into the half with a 30-0 lead and close out their fourth straight victory by a final score of 44-14. The Eagles were led by the stellar play of juniors Chad Magyar and Malone Mataele, as they managed to score five of the teams’ six touchdowns. Magyar would add to his season totals on the ground, rushing 18 times for 147 yards and three touchdowns. He would also return a kickoff for 16 yards and had five catches for 52 yards to bring his total yards on the night to 215. As a spectator, be sure to not look away from the game anytime number 22 steps on the field. A truly remarkable athlete, Malone Mataele had another record setting night for Santa Margarita special teams. Mataele now becomes the only Eagle in school history to return two punts for touchdowns in a single game. His first punt return of 58 yards was considerably longer, as he would start on one side of the field and navigate his way through defenders and work from sideline to sideline before making his way into the end zone virtually untouched. Malone’s second punt return touchdown of the night was a thing of beauty, as he would return the ball 49 yards straight up the middle of the field with King defenders parting like the red sea. It took just six seconds for Mataele to reach the end zone from the 49, but more impressively, it has only taken
five games to set or tie six school records. Malone now owns the record for Most Punt Return Yards in a game (107, vs. King 2016), Most Punt Return Touchdowns in a Game (2, vs. King 2016), and Total Kickoff Return Yards in a game (270, vs. Mission Viejo). Malone is now tied for Most Punt Return Touchdowns in a season (2, Mataele ’16, Maxwell ’05) with five regular season games left to negotiate. Against Mission Viejo, Mataele tied four other Eagles for the most kickoff return touchdowns in a season with two. Malone is also tied for the longest kickoff return of 99 yards against Mission Viejo. This puts Mataele’s name down for a share of six school records, half way through the season. Senior quarterback Richard Wagner was once again efficient in the pass game, completing 13 of 18 passes (72%) for 161 yards. Junior Johnny McCartan caught four passes for 45 yards, and sophomore Munir McClain caught three passes for 50 yards. Defensively, Alex Kilander lead the way for the Eagles with 13 total tackles, and the linebacker duo of Caden Fitch and Sean Toohey had 12 and 11 total tackles respectively. Santa Margarita is in a bye week and will not play again until they take on the number one team in the county in Mater Dei (5-0) on October 7th at the Santa Ana Bowl to open up the Trinity League season. Mater Dei is currently ranked number one in Division 1, number one in California, and number three nationally according to Max Preps. The Monarchs are outscoring opponents 278-21. Santa Margarita is currently ranked ninth in Division 1, 15th in California, and 137th in the country while outscoring their opponents 199-112.

scope, final size and location, timing, prioritization or other facets of project implementation will be made solely by the Board of Trustees. Measure M is a broad tax on secured and unsecured property including homes, commercial property, mobile homes, boats, airplanes, improvements on real estate, and business property fixtures like commercial ovens. Measure M is estimated to cost in excess of $1.8 billion. This is one of the largest bonds to ever be on the Orange County ballot. The South Orange County Economic Coalition (SOCEC) strongly opposes Measure M. “We’d be more supportive of a smaller, more realistic bond that allows the District to leverage State matching funds and address the most critical facilities improvements,” stated Brown of the SOCEC. “But $1.8 billion is not an appropriate ask of this community nor do we believe it’s all needed at this time. So we urge voters to reject this measure and have the District come back with a more appropriate proposal.” There’s no locality to Measure M. The older school areas who aren’t already paying a Mello-Roos tax will love it. The newer school areas who will be paying the highest overall taxes while not benefiting from Measure M will obviously hate it. “It’s a question of fairness,” stated Reardon. COUNCIL MEMBERS DEBATE COST OF MAILBOX There was extensive discussion over the Ladera Ranch Civic Council’s PO box. Apparently, some of the members who attended a private “working” meeting and decided it would be best to eliminate the PO box which costs the Board $180 per year. Jett McCormick opposed this decision but was out-voted 3-2 (Todd Stearns also opposed it). McCormick pointed out that it is against the bylaws of the Civic Council to make any such decisions in private “working” meetings. He proposed the Board let the new members make this
decision since two of the three members who voted for it are now off the Board. The three members who voted to eliminate the PO box pointed out that the new Board can easily reverse this decision at the next meeting. It is well to note that the State and County still primarily use “snail mail” in formal communications. STREET SLURRY COMPLETIONS The majority of the street work in Ladera Ranch has been completed. 37% of the streets in Ladera Ranch are private and will not be slurried, except the private streets in Covenant Hills. FIRE RESPONSE PLAN PROPOSED Finally, after the recent fire in the hills around Ladera, the need for a community-wide response plan was noted by Scott Weisgerber. The Council says it will be forming a committee (in which the departing member Scott Weisgerber is scheduled to participate) to work with the local pre-schools, schools and county agencies to ensure the safety of our community is our first priority. The Board said that details on this initiative will be forthcoming PROBABLE NEW BOARD MEMBERS Another item of discussion was the departure of members Scott Weisgerber and Jeff Hamilton. Jett McCormick was re-elected for his fifth two-year term. It was not disclosed whether the two presumptive new members, Amir Arbabi and Michael Ellzey, were elected or appointed by current board members, both of whom who were not present at this meeting, will be presumably be sworn in to the Board at the October 17th meeting. TWO APPLICANTS FOR OPEN SEATS AMIR ARBABI Arbabi resides in Ladera with his wife Deborah and his two young children. MICHAEL ELLZEY Ellzey has lived in Ladera Ranch since 2008.

Fall lawn tips that keep your yard looking great year-round
Falling temperatures and shorter days don’t mean you can retire from lawn care for the year. In fact, the fall season is a critical time to nourish lawns and care for plants so they can survive winter and emerge even more vibrant when next spring arrives. Before you store your lawn and garden supplies, consider these fall lawn tips that keep your yard looking great year-round: Fertilize Your lawn may not look like it’s doing much above ground during cool months, but below ground root
systems continue to grow. That’s why most lawn care professionals recommend fertilizing once or twice in the fall - grass will store and use the extra boost of nutrients throughout winter. Fertilizers high in nitrogen are ideal for fall feedings. Sweep Leaves and other foliage left on the ground can rot and deprive grass and other plants of moisture and sunlight. If you dread raking, a blower/vac is the ideal tool. Go eco-friendly with a rechargeable battery-powered option from Greenworks. With no cords and an easy push start, the innovative 40V Brushless Blower/ Vacuum blows up to 185 mph, plus it can vacuum four bags of leaves on a single charge. Water Watering during fall is important to foster root growth and give plants a healthy drink before winter arrives. If you’re not experiencing at least 1 inch of rainfall a week, supplement with a sprinkler. Continue the same eco-friendly watering strategies you used throughout summer, such as watering in the mornings to reduce evaporation.
Seed Have a few sparse areas in your yard? Fall is a great season for grass seed to germinate due to the cool, moist weather. Plus, because most seasonal birds have left, the seed is less vulnerable to being eaten. Over-seeding now not only fills in open areas, but it increases grass density to help prevent weeds next year. Loosen and prepare the soil, choose a high quality grass seed and water the area plenty so seeds reach maturity before winter. Trim Fall is a good time to trim trees and shrubbery before the harsh weather of winter hits. Save money with the DIY approach. Don’t be intimidated by chainsaws - because the easyto-use GreenWorks 40V Brushless Chain Saw uses a rechargeable battery, there’s no gas or oil to mix. No gas means no excessive heat or vibration - the saw runs up to 65 percent cooler and vibrates up to 70 percent less than comparable gas saws. In addition, the innovative brushless motor provides this saw with enough power to cut a cord of wood on a single battery charge.
Aerate Aerating your lawn in the fall helps to open compacted soil and break down thatch that built up over the summer. The small soil plugs removed by the aerator loosen the ground so oxygen and water can better reach the grass roots. Aerators are available for rent at most rental stores and the job can typically be done in a few hours, depending on yard size. Mow As the weather cools, grass slowly goes dormant. Before winter hits, continue to mow as needed. When your lawn seems to have almost completely slowed its growth rate, mow one final time for the year, but set your mower at a higher height. This helps keep grass healthy until warm weather returns. Recommended mower heights for a final mow are 2 to 2.5 inches. Rather than retreating from the crisp fall air, use the time to enjoy the beauty of Mother Nature while helping keep your yard looking its best. A few simple steps now will help your lawn look great today and into next year. - (BPT)

Santa Margarita Girls Volleyball Comes Away with Sweep of the #1 Team in the Nation
Eagles girl’s volleyball team By: Sean Zeitler Photos by: Robert Russell Eagles girls’ volleyball team makes quick work of the highest ranked team in America, sweeping Mater Dei 3-0 at home There was obviously a lot of hype heading into last night’s matchup against Mater Dei. The Monarchs came into the Moiso Family Pavilion as arguably the best team in the country according to MaxPreps, PrepVolleyball.com, USAToday High School Sports, OCVarsity, and other sports editions Rankings are fun, but at the end of the day you need to play the game.
That is exactly what the Eagles (194, 3-0) did, and did well. Coming out swinging, the Eagles would win game one easily, holding the Monarchs to just 11 points. It was more of the same the rest of the way, as the Eagles would take game two, 25-18, and put the proverbial nail in the coffin game three, 25-23, to complete the sweep of the best team in America. It was the two future Pac-12 stars that helped lead the way for the Eagles. Despite an injured ankle, Cal-commit Devon Chang executed accurate passing all night, distributing 33 assists to several Eagles. On the receiving end of many of those Santa Margarita celebrates with a dejected Monarch team in disbelief was Stanford-bound senior Meghan McClure, who would finish her night with 15 kills. Other notable Eagles were Julianna Reisinger, who had 15 digs; junior middle-blocker Peyton Ehmke had arguably one of her best performances with seven kills, and junior Abby Van Winkle had a strong showing as well, ending the night with six kills of her own. It has been a busy week for the Eagles who defeated JSerra 3-1 on Tuesday and bounced back in commanding fashion against the best team in the country with a sweep of the Monarchs. The ladies will get some well-deserved rest before traveling to Rosary on Wednesday, Devon Chang finished the night Meghan McClure had a team Julianna Reisinger (33) celebrates October 5th. with 33 assists high 15 kills on the night with teammates after a point Page 18
