Six local area scouts earn Eagle awards by Karen Lake Susan Hiltbrand had tears in her eyes as she pinned recognition pins on her two youngest sons, Grant and Rushton Hiltrand, when they were recognized as Eagle Scouts. The rank of Eagle is the ultimate honor one can receive as a boy scout and must be earned before the scout turns 18 years old. The court of honor was held in Rancho Santa Margarita at The Church of Jesus Christ of Latter-day Saints (LDS) building near Altisima Park. Six local scouts were honored including the Hiltbrand brothers, Jordan Procuniar, Riley Rubalcava, Tyler Schoessow, and Connor Traut. The most well known part of earning the rank of Eagle is the Eagle project. The service project is to be at least 100 man-hours and is designed and orchestrated by the scout himself. Two scouts, Tyler Schoessow, Foothill Ranch resident, and Rushton Hiltbrand, Portola Hills resident, joined together to paint and install a picket fence at Boys Town to bring it up to county code. Grant Hiltbrand and Riley Rubalcava focused on helping schools. Grant repainted the Unites States Map at Portola Hills Elementary and Riley worked hundreds of hours in special education classes at Cielo Vista Elementary. Portola Hills, Jordan Procu-

niar, collected canned food for South County Outreach and Ladera Ranch, Connor Traut, founded the Teen Leadership Council in Ladera Ranch. The court of honor began with the scouts and congregation singing “My Country Tis of Thee”. Then the customary formation of the eagle’s nest, which basically means that all past Eagle Scouts in the audience are invited to come and sit on the stage during the ceremony. The eagle’s nest included college students, CPAs, lawyers and business owners. Even LDS Stake Presidency Counselor, James Carter, joked about the nest’s diversity of the dress ranging from sweats to jeans to boy scout uniforms to business suits. After the tribute by Ryan Webber, Portola Hills resident and Boy Scout leader, Steve Rubalcava, retired marine and father to Riley, gave a presentation talking about the importance of honor. Each of the young men recognized then shared what they had each learned in becoming an Eagle. Riley, son of Steve Rubalcava, said, “I learned that no matter how hopeless a task can be; I can do it!” Connor Traut, a boy scout since second grade, made a similar comment when he said, “You can work through anything. All the skills you learn as a boy scout can be used in real life.”

LDS Stake Presidency First Counselor, James Carter, leads the new Eagles in the Scout Oath. “On my honor I will do my best to do my duty to God and my country….”

Connor Traut, Grant Hiltbrand, Jordan Procuniar, Tyler Schoessow, Rushton Hiltbrand and Riley Rubalcava stand for the “Eagle Moment” when they were officially presented as Eagle Scouts.

By Nancy Shepherd For years it was believed that exercise for fitness had to be very strenuous to have any noticeable benefit. However, it is now recognized that something as simple as walking can be as efficient as more rigorous activities. The key is the type of walking you do. Simply strolling is better than nothing; it at least gets you moving and keeps your joints limber. But if you’re walking to exercise for fitness, you’ll need to step up the pace. Depending on your current health and your fitness goals, you can choose from brisk walking, power walking, and pole walking. Brisk walking can help you lose weight, improve your mood, manage Type 2 diabetes, lower blood pressure, and normalize cholesterol. Done consistently, it is as effective for reducing the risk of heart attack as jogging. As a weight-bearing exercise, it also contributes to strong bones and reduces risk from osteoporosis. All it takes is a good, supportive pair of walking shoes and enough space to work up to a good pace. To gain the benefits of brisk walking, your speed should be fast enough to raise your heart rate, but still allow you to comfortably carry on a conversation. After a five to ten minute warm-up at a slower pace, increase to the brisk pace and maintain it for at least 30 minutes. You’ll get best results from engaging in the activity no fewer than five days a week. The next level of walking for fitness is power walking. At this level you can burn almost as many calories as jogging but without the jarring impact on your joints. In one study, women who incorporated three power

walks per week into their walking routines lost five times as much belly fat than women whose workouts consisted of only brisk walking -even though they burned the same number of calories. To take your workout to the power walking level, do your warm-up walk, then bend your elbows and swing your arms as you stride energetically. Strive for a pace of four miles an hour, an intensity at which conversation is no longer comfortable. Pole walking gives you all the benefits of power walking and then some. Adding poles to your walking routine involves more muscles of the upper body, so you burn more calories and tone your upper body as well as your legs. Additionally, the poles provide stability and relieve some of the load from the hips and knees, which may make it easier for older people to take part. Walking with poles results in a greater aerobic workout without having to walk any faster. Even though using the poles raises the heart rate higher and burns more calories than walking without poles, walkers don’t perceive the exertion as harder. It has also been reported

to relieve neck and shoulder pain. To pole walk correctly, it is best to get some instruction so you’ll get the most from your efforts. You’ll learn the proper length for your poles and the most effective techniques. Generally, walking with poles is like power walking, except that you will push down and back on the poles to propel yourself more powerfully with each stride. There’s no longer any excuse for not working out. Walking to exercise makes improved fitness accessible to nearly everyone. Start where you are and do as much as you can do. As your fitness improves, step up to the next level of walking and you’ll be taking positive steps toward better health.

We gain strength, and courage, and confidence by each experience in which we really stop to look fear in the face... we must do that which we think we cannot. -Eleanor Roosevelt

Local Dentist Dr. Michael Tessier Suggests Faster and Easier Five Minute Way to Cure Canker Sores and Cold Sores About twenty percent of the population suffers from canker sores, while twenty to thirty percent suffers from cold sores. Both kinds of these common mouth lesions are painful and annoying but there’s no need to wait a week or ten days for this irritating condition to subside. Here in my dental office in Rancho Santa Margarita, I use a laser. It quickly delivers a small, concentrated amount of energy to a very specific, localized area, and, in the course of a five minute office visit, the lesion is significantly reduced in size, essentially scabbed over, and the patient is free of pain. Modern technology at its best! Cold sores are fluid-filled blisters on the lips. Their outbreak is stimulated by trauma, colds, or most commonly, exposure to the sun. People who get them regularly report a tingling sensation in the area before any lesion actually appears. Anti-viral medications taken very soon after onset dramatically shorten the length of time of the outbreak and its severity. The amino acid, Lysine, is said to be useful in fighting cold sores. The culprit herpes simplex virus is easily transmittable. Canker sores, also called mouth ulcers or apthous ulcers, are not contagious. They occur as shallow ulcers inside of the mouth. Because they are not caused by a virus, canker sores cannot be treated with anti-viral medications. Canker sores are a reaction to certain “triggers” that initiate their formation. Foods like chocolate, nuts, beer, in some cases orange juice, and wheat products may be the instigator. Of course, injury to the inside of the mouth caused by eating hard candy, crusty French bread, corn chips, or hurried tooth brushing can also be the perpetrators. Warm salt water rinses are the old fashioned treatment of these lesions. Rinsing this way increases circulation and thereby removes toxins from the inflamed tissues. Ibuprofen, an over-the-counter, non-steroidal, anti-inflammatory, is slow but effective. But most people with busy lives find it faster, easier and more comfortable to come into my dental office and enjoy the immediate relief a laser treatment provides. The laser is fast, affordable and, as I mentioned above in the course of a five minute office visit, the lesion is significantly reduced in size, essentially scabbed over, and you continue your daily routine free of pain. Please don’t hesitate to call my office if mouth lesions are a problem. Dr. Michael Tessier’s office is located at 28562 Oso at the intersection of Oso and Antonio Parkways (near the car wash) Most major credit cards and dental plans cheerfully accepted. Wounded Warrior Project Celebrates First Annual Carry Forward Awards The First Annual Wounded Warrior Project “Carry Forward Awards” were held with a sold out crowd that included an all-star lineup of celebrity talent who showed their support and honored the five award recipients. With a gourmet dinner and a LIVE exciting auction, the City National Grove in Anaheim was the place to be for this inaugural event. Starting the evening off was a VIP Purple Carpet entrance and cocktail hour – all eyes were drawn to the lights and cameras flashing as celebrities, honorees and VIP’s entered. Co Hosts for the evening’s program were Samantha Harris and Dean Cain. Samantha is best known for her eight seasons co-hosting “Dancing with the Stars” and corresponding on the number one entertainment news format, “Entertainment Tonight.” She was last seen co-hosting NBC’s “STARS EARN STRIPES.” Also appearing on “STARS EARN STRIPES”, Dean Cain competed on behalf of Wounded Warrior Project. He is best known for his starring role as Superman/Clark Kent on Lois & Clark: The New Adventures of Superman and is getting ready to star in VH1’s series “BOUNCE”. The Carry Forward Awards honored individuals who have gone above and beyond to further Wounded Warrior Project’s mission to honor and empower Wounded Warriors. The winners were selected based on a number of criteria including the magnitude of their efforts, how many people were impacted, leadership qualities displayed in accomplishing their goals, the number of areas in which their efforts assisted Wounded Warriors and a public vote. Many were nominated and over 12,000 people voted, and the panel of judges decided on five inspirational individuals who truly are making a difference in the lives of our nation’s wounded. The winners include rock star Rick Allen from the band Def Leppard, a fallen Navy Seal, a young cadet who began fundraising at age 16, a caregiver dad and a Vietnam veteran. All their inspirational stories can be found here www.woundedwarriorproject.org/carry-forward-awards/winners.aspx - please take some time to read them; they will truly touch your heart. There were a few amazing performances for the evening as well. Faircraft/ Universal Republic recording artist Chris Mann, one of the stars of the hit NBC television series, “The Voice,” sang the National Anthem and singer-songwriter John Ondrasik from the band Five For Fighting sang the Grammy-nominated song “Superman” and “Freedom Never Cries”. The evening’s menu started with a white fish Tiradito topped with jalapeno and cilantro; second course was a pan seared marinated beef tenderloin with fresh tomatoes and onions served on an Aji Amarillo cauliflower puree infused herb drizzle. Decadent dessert served as the finale with Cassis Berry shortcake with a condensed white chocolate-vanilla sauce with fresh berries. Lorena Garcia, chef behind Taco Bell’s Cantina menu, star of Bravo’s Top Chef Masters, restaurateur and cookbook author created and supervise development of the evening’s menu. Various items were auctioned off for the evening as well. One was a custom built Harley motorcycle that was originally commissioned by Sons of Anarchy Kurt Sutter to be donated to Wounded Warrior Project, built by Rusty Coons of Illusion Cycles in Westminster, CA. Auctioneer Trey Jarvis kept things alive when the bike was auctioned off for $20,000 but the first buyer was one of the Carry Forward Award recipients, Ken Collom who then put it back on the block. The second buyer was local philanthropist Glenn Stearns, whose son Trevor did the bidding for an additional $18,000. The Stearns also bought a California vacation package. Another item was a Yamaha drum kit signed by Carry Forward Award recipient Rick Allen from the rock band Def Leppard. It came with a private lesson by entertainer DJ RaviDrums; it went to Dan Nevins, director of WWP’s Warriors Speak program. The mission of Wounded Warrior Project is to honor and empower Wounded Warriors. WWP’s purpose is to raise awareness and to enlist the public’s aid for the needs of injured service members, to help injured servicemen and women aid and Page 12

by Karen Lake Upon entering the door at the “Sci-Fi Out of this World” New Year’s Eve dance it is obvious this is not the first time the church has put on such an event. Over 800 youth, ages 14-18, enter through the large back entrance of The Church of Jesus Christ of Latter-day Saints in Aliso Viejo. First each youth checks in with their local church leaders to receive a colored wristband. Then the youth sit through a 3-minute overview of church standards such as being respectful and no freak dancing or inappropriate contact. Jamie Draper of Ladera Ranch talks to youth and asks for a show of hands for first timers or visitors. Later Mr. Draper explains, “I want to make sure that they Page 16

understand the rules but I also want newcomers and friends of all faiths to feel welcome. It is all about creating a fun positive experience for all of our youth.” Then after the overview the youth file into a gigantic cultural hall decorated with a Sci-Fi theme. Liz Forrest, Santa Margarita stake young women’s president, explains, “The youth dictate both the theme and the refreshments and even help decorate the building the morning of the event. The dance is planned by the teens that serve on the four local youth councils. ” The dessert bar includes vanilla wafers, candies, gold fish and even noise-makers for each of the 800 youth attending. Four projectors are positioned about 20 feet high playing four different Sci-Fi movies

During fast music youth dance in small circles with their friends and talk and dance simultaneously. During slow music the teens pair off and then join up with their friends again when the song is complete. With only one minute left on the large basketball timer on the wall, youth crowd toward the center of floor to experience the hundreds upon hundreds of balloons

falling from the ceiling at exactly midnight. Starting over 35 years ago, the LDS church felt a strong need to provide a safe, wholesome, alcohol and drug free environment for youth to celebrate the new year. Back in the day, church congregations in Orange County would schedule with South Coast Plaza and rent out the entire mall for the event. No matter the location, putting on an event like this is anything but new to LDS youth leaders.

13 Lucky Tips for Better Health in 2013 Simple Ways to Eat Smart and Move More for Your Healthiest - and Maybe Even Luckiest - Year

By Kim Galeaz, RD CD Happy New Year! It’s the time of year when we all make resolutions to eat better, exercise more and get rid of the stress. If you failed to reach your goals last year or need a little help keeping up the momentum, the New Year presents another chance. By following these 13 smart-eating and active lifestyle tips, you just might have your healthiest - and luckiest year ever! 1. Eat breakfast EVERY day. Research shows that breakfast eaters are more alert and productive throughout the morning and that they are more likely to achieve or maintain a healthy weight. 2. Go for greens. Reach for green leafy vegetables like kale, collard, turnip and mustard greens more often. They are filled with bone-building vitamin K and numerous antioxidants, and according to folklore, may bring good luck because their leaves resemble money. 3. Fall in love with lentils and legumes. Learn to love dried beans like pinto, black, navy and garbanzo.

They’re all rich in fiber and other nutrients that help fight cancer and heart disease. In Italy, lentils resemble coinshaped money, so enjoy lentil soup for financial prosperity during 2013! 4. Choose whole grains vs. white refined. Whole grains can help reduce the risk of stroke, heart disease and diabetes and contribute to healthy weight maintanance. Choose whole wheat pizza crust, whole wheat penne pasta, brown rice, quinoa, popcorn, bulgur or oatmeal. 5. Have your cake and eat it, too. Or cookies, candy and donuts, as well. Sticking with your resolution doesn’t mean you have to give up all of your favorite sweet treats. Just have them in sensible, smaller portions. Try eating two bite-size cookies instead of a big one. Or cut your cake slice in half. Ultimately, sugar can have a place in a balanced diet so keep the things you love. 6. Go fishing. Eat more fish for those valuable omega-3 fats that promote a healthy heart and may help reduce incidence of depression. Many countries start the New Year

with fish since it represents good fortune, abundance and long life. 7. Get hoppin’! First, make a batch of Hoppin’ John. It’s a Southern dish of nutrient-rich black-eyed peas, onion, rice and bacon or sausage thought to bring good luck. Second, start hopping up and down because even hopping counts as valuable calorie-burning activity! 8. Become a Lean Mean Protein Machine. Beef and pork can be part of a healthy diet. Just choose lean cuts with “loin” and “round” in the name like sirloin and tenderloin (there are 7 lean pork and at least 29 lean beef cuts) and enjoy moderate, 3-ounce portions. 9. Say yes to low- and no-calorie beverages. Research shows they’re not only safe to enjoy, but they can help you reach and maintain a healthy weight. So there’s no need to give up your Diet Coke, flavored water or diet tea this year. Plus, they provide essential fluids since ALL beverages hydrate! 10. Spice it up. From cinnamon, cloves, cumin and oregano, to rose-

mary, red pepper, paprika and turmeric, spices are a surprising source of powerful antioxidants. Do as the Danish do on New Year’s and eat stewed kale sprinkled with sugar and cinnamon for good luck and wealth. 11. Blend and balance. Substitute, switch and/or boost ingredients in recipes to maximize nutrients and keep the flavor. For example, make your famous mac and cheese with whole wheat elbows, low-fat milk, reduced fat cheddar cheese and add some peas, too. 12. Shop smart. You don’t always have to choose fresh fruits and vegetables to get nutrients. ALL forms count, including frozen, canned and dried. And, they may be more budgetfriendly. 13. Move more. Don’t get overwhelmed with “exercising.” Just think of realistic ways to add more daily activity. Park farther away. Take the steps. Dance to your favorite tunes. Just get moving to burn calories and be a healthier you in 2013!
