ENVIRONMENTAL NATURE CENTER PRESENTS WINTER NATURE CAMPS
The Environmental Nature Center (ENC) will present Winter Nature Camps in three sessions: December 17-20, December 26-28 and January 2-4. Full day camp is from 9am to 3pm, and half day camp is from 9AM to 1PM. Nature Adventure Camp is for campers in grades K – 6th and Little Naturalist camp is for campers age 3 – 5. Adventures within the Nature Center will increase their knowledge and appreciation for the natural world. “This Winter Camp marks one full year since the ENC introduced Little Naturalist Camp,” said Sue Bierlich,
ENC Nature Preschool Director. “Our Little Naturalist Summer Camp filled up within a few days of opening registration, so we are looking forward to a full Winter Camp. I’m so thankful that parents are just as excited as we are to immerse their children into nature at an early age, when it is most important.” A recent survey found that on average, children now spend only 12.6 minutes a day on outdoor activity compared with 10.4 waking hours being relatively motionless watching TV or computer screens. Another study found that 50% of preschoolers lacked even one outdoor play session per day. “We are raising a generation of sedentary kids who would rather sit on the couch with a cell phone
or game controller than be outside armed only with a stick and their imagination,” said ENC Executive Director Bo Glover. “Spending time outside in nature helps children develop spatial awareness and motor skills. PACIFIC CHORALE ANNOUNCES SINGER AUDITIONS FOR 2019–2020 SEASON
Pacific Chorale, resident chorus at Segerstrom Center for the Arts, today announced upcoming auditions for prospective volunteer singers. Auditions will be held January 20–26, 2019 by prior appointment only. Prospective singers are requested to visit Pacific Chorale’s web site at pacificchorale.org/auditions to learn about the audition process, then to submit their information via the online form provided to schedule an audition time. Rehearsals for the fall begin in September, although singers are also encouraged to participate in Pacific Chorale’s Festival Chorus in August 2019. The 140-voice ensemble will present its own concert season at the Renée and Henry Segerstrom Concert Hall conducted by Artistic Director Robert Istad, as well as appearing as the guest chorus in several performances presented by Pacific Symphony. While applications are being accepted for both volunteer and paid positions with Pacific Chorale, this year’s auditions are primarily focused on proficient volunteer singers. Volunteer members of the Chorale hail from a broad range of backgrounds and career fields, but share a love for and extensive experience performing choral music. Volunteers have the opportunity to participate in both self-produced and contracted engagements calling for larger groups of singers. Pacific Chorale members enjoy a wide variety of challenging and stimulating repertoire and performance opportunities, including world and West Coast premieres and
guest appearances with prominent ensembles and artists. ABOUT ROBERT ISTAD Dr. Robert Istad has served as Pacific Chorale’s Artistic Director since July 1, 2017. ‘TIS THE SEASON TO GET THE HOME READY FOR HOLIDAY ENTERTAINING Smart tips to prepare the kitchen and dining room for holiday entertaining As the year winds down, social calendars fill up with merriment-filled gatherings among friends and family. When hosting a seasonal gathering at home, being proactive can help streamline tasks and reduce stress. From whipping up a feast to toasting in the New Year, here are five ideas for getting the heart of the home - the kitchen and dining spaces - ready for holiday entertaining. Simplify measurements Chopped veggies and premeasured ingredients can streamline any cooking adventure and save precious time. Fill the fridge and pantry with ready-to-go items as much as possible and consider smart kitchen enhancements that make measuring a breeze. 5 TIPS FOR HOLIDAY ROAD TRAVEL If you’re planning to travel for the holidays this year, you’re not alone. Over 107 million people traveled last year for the holidays, according to estimates from the American Automobile Association (AAA), and more than 97 million of them did so along the nation’s highways. If you plan to join them this year, traffic and potholes aren’t the only potential problems you’ll need to navigate. Weather can also be a challenge during the holidays. According to the Federal Highway Administration, over 70 percent of the roads in the United States are located in snowy regions, which receive five inches of snow or

Be sure your tire tread is in good shape. When it comes to winter weather driving, a general rule is that the more tread depth, the better. A tire’s minimum tread depth should be more than 2/32 of an inch deep all around the tire. You can check your tread depth by inserting the edge of a penny into the tread with Lincoln’s head down, and facing you. If the top of Lincoln’s head is covered by tread, there is at least a minimum amount of tread left. If the top of his head is visible at any point around the tire, it’s time for a replacement. While you’re examining the tread, you can also look for signs of uneven wear or damage such as cuts, cracks, splits, punctures and bulges. These conditions shorten the life of tires or even cause tire failure. 3. Have the right tires for your needs. While all-season tires are a great choice for many people, if you live in an area that routinely experiences extremely cold temperatures and/or heavy snowfall - or plan to travel to one during the holidays - you should add winter tires to your vehicle. If you will be among them, allow extra time in your holiday plans so that you can drive slower in bad weather or even pull over and spend the night in a hotel if necessary. FRESH IDEAS FOR 30-MINUTE MEDITERRANEAN MEALS With few having the time to devote to cooking an elaborate meal, a collection of delicious and dependable 30-minute recipes for a quick but satisfying meal can be handy. What else keeps things simple? Having fresh staples such as California table grapes on hand helps brighten up any recipe and fuel up after activities. Mediterranean ingredients and flavors create dishes that are refreshing, colorful and filled with fruits and vegetables. Quinoa Tabbouleh Salad with Grapes offers a fresh twist on the Middle Eastern classic, replacing the traditional bulgur with quinoa, and using grapes in place of tomatoes. The result? An approachable and modern salad that works as well for a quick dinner as it does for a brown bag lunch the next day. Pair with grilled chicken or fish, or simply add chickpeas or kidney beans for a heartier meatless entree. With Mediterranean Pizza, there is no need to fuss with dough because whole-wheat naan, an Indian flatbread, makes the perfect crust. Simply top with cumin and paprikaseasoned ground lamb, bake it, and then finish with a lightly dressed grape and red onion combination that perfectly complements the flavors in the meat. Pita or flatbread can take the place of naan, and lamb can be replaced by ground beef or turkey as desired. Mediterranean Pizza Prep time: 15 minutes; cook time: 15 minutes Yield: Serves 4 Ingredients 1 1/2 cups halved red California grapes 2 tablespoons lightly chopped Italian parsley leaves 1/4 cup slivered red onion 1 tablespoon lemon juice 3 tablespoons extra-virgin olive oil (divided) plus additional for drizzling Pinch of salt Freshly ground black pepper to taste 1 garlic clove, minced 1/2 pound ground lamb, beef, or dark meat turkey 1 tablespoon tomato paste 1/2 teaspoon ground cumin 1/2 teaspoon ground paprika Pinch cayenne 2 whole-wheat naans (about 4.4 ounces each) Directions Heat oven to 475 F. In a large bowl combine the grapes, parsley leaves, red onion, lemon juice and 1 tablespoon olive oil. Season with salt and pepper and set aside. In a large skillet heat 1 tablespoon oil. Add the garlic and meat, and cook until browned, 2-3 minutes. Stir in the tomato paste, cumin, paprika and cayenne. Place naans on parchmentlined baking sheets, brush with the remaining 1 tablespoon olive oil and spread the meat mixture on Page 6
the naans. Bake until each naan is browned and lightly crisp, 8-10 minutes. Top with grape mixture and drizzle with additional olive oil if desired. Cut in pieces and serve. Quinoa Tabbouleh Salad with Grapes Prep time: 15 minutes; cook time: 15 minutes Yield: Serves 6 Ingredients 1 1/2 cups water 3/4 cup quinoa, rinsed 3/4 cup halved red California grapes 3/4 cup halved green California grapes 2 cups diced English cucumber 2/3 cup chopped flat leaf parsley 1/2 cup chopped dill 1/4 cup chopped mint 2 tablespoons extra-virgin olive oil 2 tablespoons lemon juice 1 teaspoon lemon zest 1/4 teaspoon salt Freshly ground pepper to taste Directions In a medium-sized saucepan, bring the water to a boil and add the quinoa; reduce the heat and simmer until quinoa is tender, about 10 to 12 minutes. Drain any excess water, then fluff the quinoa and transfer it onto a baking sheet to cool for 10 minutes. In a medium bowl, combine the grapes, cucumber, parsley, dill, mint, olive oil, lemon juice and zest, salt and pepper. Gently fold the cooled quinoa into the grape mixture and serve. - (BPT)

A healthy gut may be connected to weight loss The benefits of a healthy gut are still being studied, and more research is needed to confirm how a healthy gut contributes to weight loss. In a preliminary study, Mayo Clinic collected and analyzed gut bacteria samples from a group of 26 participants enrolled in the Mayo Clinic Obesity Treatment Research Program. The research team found that those who did not lose weight had
different gut bacteria than those who did. THE MIRACLE OF MAGIC RAISES NEARLY $1.3 MILLION TO SUPPORT CHILDREN The Monarch Beach Resort in Dana Point was the scene for the Miracles for Kids Annual Night of Miracles Gala: The Miracle of Magic where nearly 500 of Southern California’s most generous philanthropists, business and civic leaders gathered to raise funds to benefit families with critically-ill children. This year, guests made the biggest impact in the nonprofit’s 16-year history, raising nearly $1.3 million. “Words cannot express our gratitude to the incredible community of friends, donors, volunteers and sponsors who help make miracles happen at Miracles for Kids every day of the year,” said Autumn Strier, Co-founder and CEO of Miracles for Kids. The Fund-a-Family portion of the evening raised $700K of the $1.3 million during which guests raise their paddle to donate at various levels that range from $100K to $100. In an exciting and unexpected moment, four $100K donations were gifted by generous supporters. A gourmet dinner and signature cocktails from custom bars by longtime sponsors NOLET’S Silver Gin, Ketel One Family Made Vodka, and Duke Spirits kept the guests satisfied. Further adding to the excitement of the evening was the Opportunity Drawing for the chance to win a pair of White Gold Diamond Earrings containing 370 round diamonds weighing 9.06CTS with a retail value of $18,500 – generously donated by the Night of Miracles Gala exclusive jewelry sponsor, Martin Katz. The lucky winning guest, Brian Hill, took home the opportunity item after purchasing just a handful of tickets for $100 each. Guests continued to raise their paddles during the lively and highly anticipated live auction. Top items included a Telluride Ski Resort Package and a Vintner Hosted Wine Connoisseur’s Getaway with Private Air, which were each generously donated by Orange County locals and company owners - Chad Horning of Telluride Ski & Golf Resort and Steve and Seanne Contursi of Arrow&Branch. ACTION STAR BRUCE WILLIS SELLS SUN VALLEY SKI HOME!
Bruce Willis has something new to remember for 2018 - the sale of the home he has had on the market since 2011. Though he bought it in 2003 for less than its final sale price of $5.5 million, a sales record in the Hailey, Idaho area, it was an excruciating drop from its original list price of $15 million. In the last 15 years, Willis rebuilt the main house, added a guest house, gym, streams and ponds and paid years of property taxes, so whether he made profit, broke even or took a loss is not known. Reprinted with permission from the American Institute for Cancer Research Servings: 10 Nonstick cooking spray 2 medium Granny Smith apples (about 2 cups) 3 tablespoons fresh lemon juice 1 cup all-purpose flour 1 cup whole-wheat flour 2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon 1/2 teaspoon allspice 1/4 teaspoon salt 3/4 cup packed light brown sugar 3 tablespoons canola oil 1 egg, lightly beaten 1 teaspoon vanilla extract Heat oven to 350 F. Coat 9-inch loaf pan with cooking spray. Peel and grate apples. Toss with lemon juice to prevent browning. In large bowl, combine flours, baking powder, cinnamon, allspice and salt. Mix well. Make well in center and set aside. In medium bowl, combine apples, brown sugar, oil, egg and vanilla. Mix well. Add mixture to dry ingredients and mix until just blended. Transfer batter to prepared pan. Bake 1 hour, until toothpick inserted near center comes out almost clean. Cool in pan on wire rack, 10 minutes. Remove from pan and cool completely.

Tuscan White Bean Soup
Reprinted with permission from the American Institute for Cancer Research Servings: 6 1 cup dried navy beans cold water 1 leek, white part only, cut into 1-inch pieces 3/4 cup coarsely chopped onion 1/2 cup chopped carrot, 3/4-inch pieces 1/2 cup chopped celery, 3/4-inch pieces 1/4 cup flat-leaf parsley leaves, loosely packed 1 tablespoon extra-virgin olive oil 4 cups reduced-sodium vegetable or chicken broth 2 cups water 1 teaspoon finely chopped fresh rosemary salt, to taste freshly ground pepper, to taste

tablespoon olive oil, plus additional for searing cup vegetable stock ounces cremini mushrooms, sliced ounces shiitake mushrooms, sliced cloves garlic, minced pepper, to taste 1 pouch SEEDS OF CHANGE Organic Mushroom Simmer Sauce 1 tube (18 ounces) prepared organic polenta 10 teaspoons shaved Parmigiano cheese fresh parsley Caramelize onions. Heat butter and 1/2 tablespoon olive oil over medium heat until hot. Add sliced onions to butter mixture and stir gently to coat. Spread onions in one layer, and cook until golden brown and caramelized, stirring every 5 minutes for about 40 minutes, or until caramelized. Once caramelized, add vegetable stock to deglaze pan and scrape browned bits. Add mushrooms and garlic, and season, to taste, with pepper. Cook until mushrooms are browned and tender. Stir in mushroom sauce, lower heat and bring to slow simmer. Cut polenta tube into eight even rounds. Sear polenta rounds in bit of olive oil and season each side with pepper. Cook until polenta is golden brown on each side, about 4-5 minutes per side. Transfer to plates. Spoon mushroom mixture over polenta rounds and top with 2 teaspoons Parmigiano cheese per serving and fresh parsley.
Place beans in deep pot and cover with cold water to 1 inch above beans. Bring water to boil and simmer, uncovered, 1 minute. Remove from heat, cover and let beans sit 1 hour. Drain. In same pot, cover beans with cold water to 2 inches above beans. Over medium-high heat, bring to boil. Cover pot partway so it does not boil over; simmer beans until soft and creamy, 45-60 minutes. Set beans aside in cooking liquid until ready to use. In food processor, pulse leek, onion, carrot, celery and parsley until finely chopped and moist. In medium Dutch oven or small soup pot, heat oil over medium-high heat. Add chopped vegetables and cook, stirring, 5 minutes, or until soft. Cover tightly, reduce heat and cook 10 minutes. Increase heat and cook until golden, 8 minutes, stirring occasionally. Add broth, 2 cups water and rosemary. Simmer, covered, until vegetables are soft, 20 minutes. Remove from heat and use immersion blender to whirl soup until partly pureed with some vegetables bits remaining. Add 2 cups drained, cooked beans to soup. Return pot to heat and cook until beans are heated through. Season soup, to taste, with salt and pepper. Divide soup among six deep soup bowls.
