The ENC Nature Preschool has broken ground! The Environmental Nature Center (ENC) celebrated the official groundbreaking of its highly anticipated state-of-the-art Nature Preschool on February 15, 2018. The ENC Nature Preschool will be the community’s first nature preschool and nature play area. The preschool will be located on 1.3 acres bordering the Nature Center’s Redwood Forest, at 745 Dover Drive. Check out photos of the event HERE. The ENC Nature Preschool will teach the building blocks of a STEAM (science, technology, engineering, arts and math) education by providing young children with the opportunity to become familiar with the natural world by playing – and learning – while surrounded by nature Qualified early childhood educators and environmental educators will teach the basics of a typical preschool and more. Indoor spaces will be warm, welcoming and conducive to learning, but the majority of the day will be spent learning outside. “It is becoming increasingly evident that nature-based preschools are more effective in terms of learning and health benefits,” said ENC Executive Director Bo Glover. “Our Nature Preschool will provide quality education and nature exploration opportunities for preschool children, a n d h el p t h e m d e v e l o p i n t o environmentally literate adults, which is needed today more than ever.” The ENC is aiming to achieve a Platinum Level LEED Rating on the new facility. The US Green Building Council’s Leadership in Energy and Environmental Design (LEED) Green Building Rating System™ is the nationally accepted benchmark for the design, construction, and operation of high performance green

buildings. The preschool was already awarded a citation from the American Institute of Architects Orange County Chapter (AIAOCC). The ENC’s Nature Preschool was one of eight projects selected to receive an award out of the 56 projects that were entered into the design competition. It was the only project to receive an award that was not a completed project “The ENC’s Nature Pre-school will have play areas but no playgrounds,” said ENC Nature Preschool Director Sue Bierlich. “Students will spend the majority of the day outdoors, where they will have ample time for unfacilitated nature experiences.” The ENC Nature Preschool will also engage parents in active learning,

serve as a model nature preschool, and provide a research forum on early childhood and environmental education. “I truly believe that this Nature Preschool and Nature Play Area will be an integral addition to the community making an essential impact on the next generation.” said Rick John, long-time Newport Beach resident and ENC Board Member. “We are urgently seeking community members to join us in supporting the ENC Nature Preschool.” For more information or to donate to the ENC’s Nature Preschool, visit encnaturepreschool.org or contact ENC Executive Director Bo Glover at 949-645-8489 ext. 101 or bo@ encenter.org.

The Westminster Kennel Clubs Westminster Week 2018

Photo by Jack Grassa The Westminster Kennel Club and American Kennel Club partnered once again to bring dog and cat lovers a fun-filled, action-packed, fan-favorite day during Westminster Week 2018. Meet & Compete, featuring the 5th Annual Masters Agility Championship at Westminster and the 9th AKC Meet the Breeds®, presented by Purina Pro Plan, returned to Manhattan on Feb. 10, 2018 at Piers 92 and 94. Masters Agility Championship at Westminster The Masters Agility Championship at Westminster once again featured some of the country’s greatest canine athletes and their handlers as they faced a challenging obstacle course of jumps, tunnels, weave poles, and more, in entertaining races against the clock. The entry is limited to 330 dogs that have attained Master agility titles (MX and MXJ, or MXP and MJP) at the time of entry, virtually guaranteeing a top-performing field. The Agility competition was divided into five height classes - 8, 12, 16, 20 and 24 inches, which refer to the height of the jumps in that class. Dogs competed in the class appropriate for their size. At Westminster, each dog competed in two qualifying rounds – a Standard Agility course and a Jumpers

with Weaves course. Scoring for eligibility to the Championship round was the combined actual running time of both runs, plus any faults (refusal/ run-out, wrong course, table fault, failure) and course time faults. Dogs were placed in order of the lowest combined score within their true AKC jump height. The twelve dogs from each height class with the lowest combined scores moved on to the televised Championship round Saturday evening, creating a field of 60 finalists competing for the coveted title of Westminster Kennel Club Masters Agility Champion. The championship course was a hybrid of the qualifying rounds and ran as a ‘time to beat’ course, where the first dog set the baseline time for the subsequent competitors. The Masters Agility Championship at Westminster included AKC- registered purebred dogs, mixed breeds enrolled in the AKC’s Canine Partners program, Miscellaneous breeds not yet eligible for conformation competition, Foundation Stock Service recorded breeds, and Purebred Alternative Listing dogs (purebred dogs that cannot be fully AKC registered). Agility judges for 2018 were Mr. Don Farage of Bartlett, Tennessee and Mr. David Powell of Auzielle, Occitanie, France.

THE KING AND I COMES TO SEGERSTROM CENTER FOR THE ARTS

Segerstrom Center for the Arts, Ambassador Theatre Group and NETworks Presentations LLC announce that the national tour of the Lincoln Center Theater Production of Rodgers & Hammerstein’s THE KING AND I will make its way to Segerstrom Center for the Arts February 27 – March 11, 2018. Laura Michelle Kelly stars as Anna Leonowens and Jose Llana as the King of Siam. Joan Almedilla will play Lady Thiang, with Brian Rivera as Kralahome, Q Lim as Tuptim, Kavin Panmeechao as Lun Tha, Anthony Chan as Prince Chulalongkorn, Rhyees Stump as Louis Leonowens and Patrick Boll as Captain Orton/Sir Edward Ramsey. For more information, please visit thekinganditour.com, or on Facebook and Twitter. Director Bartlett Sher had this to say about the leads in THE KING AND I: “Jose was so superb on Broadway in The King and I that I begged him to join us on the tour, and l feel we are incredibly lucky to have him. He brings such joy and virility and strength to the King. And he is one of Broadway’s great talents. “Laura Michelle has one of the best voices on Broadway matched with an extraordinary heart. Her work on Finding Neverland and Mary Poppins distinguished both of those

shows with her natural grace and joy. She will be an exquisite Anna Leonowens.” Tickets for THE KING AND I start at $29 and may be purchased online at SCFTA.org, the Box Office at 600 Town Center Drive in Costa Mesa or by calling (714) 556-2787. THE KING AND I, directed by Tony Award® winner Bartlett Sher, won four 2015 Tony Awards® including Best Revival of a Musical. Bartlett Sher is reunited with the award-winning creative team from Rodgers & Hammerstein’s South Pacific and The Light in the Piazza. THE KING AND I has music direction by Ted Sperling, sets by Michael Yeargan, costumes by Catherine Zuber (Tony Award® winner for THE KING AND I), lighting by Donald Holder, sound by Scott Lehrer and casting by Telsey + Company/Abbie

the story of the unconventional and tempestuous relationship that develops between the King of Siam and Anna Leonowens, a British schoolteacher, whom the modernist King in an imperialistic world, brings to Siam to teach his many wives and children. Newport’s Gold Coast Catering Sets the Standard for Food and Service Excellence in the Catering Industry

Top Chef Shahen Mouradyan Runs the Show with Style and Sincerity

The Newport News recently interviewed famed chef Shahen Mouradyan, owner of Gold Coast Catering in Newport Beach. First we asked HOW MANY YEARS IN YOUR TRADE, PRACTICE, OR PROFESSION? Shahen replied “I have been in the food industry for 15 years. I went to culinary school straight from high school at Le Cordon Bleu in Pasadena. From there I worked under some of the best chefs in Orange County in the restaurant industry. I started catering about 7 years ago. I started Gold Coast Catering in October 2016.” WHAT WOULD YOU SAY IS YOUR SPECIALTY? Without hesitation Shahen said: “We are a full service off premise catering company. We specialize in social gatherings such as private dinners, cocktail parties, weddings, birthdays, bar/bat mitzvahs, bridal showers, baby showers, yacht parties and corporate events. During morning and lunch hours we also have a corporate menu for corporate breakfast/lunch deliveries. We pretty much do everything related to food. All of our food is handmade and of the finest quality. Quality is very important to us.” WHY DID YOU CHOOSE THIS BUSINESS OR PROFESSION? “I chose this profession because I have a true passion for cooking and making people happy. I love the energy of this industry and all the creativity and logistics that go into making an event happen. It’s fun going in to work every day and having this rush all day and feeling really good and with the accomplisment at the end of the day.” WHAT SPECIAL TRAINING AND LEARNING EXPERIENCE DO YOU HAVE? “I’m please to say that I have had an outstanding education. I graduated from Le Cordon Bleu School of Culinary Arts with an Associate’s of Art Degree in Culinary Arts and later went back and got my Bachelor’s Degree in Hospitality and Business Management. However, I still take the

time every day to learn from different chefs by constantly reading trade magazines and cookbooks. I love cookbooks and I have hundreds of them that I am constantly browsing and learning from.” WHAT ARE THE GOALS FOR YOUR BUSINESS AND PROFESSION? “That’s a good question. My goal is to provide Orange County a great catering company that they can count on every time. Our slogan is “Orange County’s Gold Standard Caterer”, and we want to stand by that every time. Our goal is to be known as one of the best catering companies in Southern California. We would like to grow as a business without losing our values on quality and service.” WHAT IS THE BEST KNOWN QUALITY OF YOUR BUSINESS? ”I think the main thing people will associate with us is our high quality of food and service. Attention to detail is very important to us as well. I am very picky with our staff about the little details. It’s the little things that always make you stand out”. WHAT HAS BEEN THE GREATEST REWARD IN YOUR BUSINESS AND/OR MOST INTERESTING PART OF YOUR DAILY WORK? “The one thing that brings me joy more than anything else is the positive responses we get back from our clients. Nothing puts a bigger smile on my face than a client or guests complementing our food and service. It’s really a great feeling when you are making other people happy. It’s also a great feeling when people appreciate your work. As the business grows I also get great pleasure from hiring employees and being able to offer people jobs. It feels good to be able to bring more jobs to the community. The most interesting part of my daily work is connecting with different clients every day and hearing their thoughts and ideas about their events. It’s like you get to work with someone new every day.” HOW MANY TOTAL STAFF MEMBERS DO YOU HAVE? “We have a staff of ten including both full

One of Gold Coast Caterings specialty dishes Page 12

The Newport News

Chef Shahen Mouradyan time and part time. people. We have one location where we prepare all our food.” Our menus are very seasonal and they change every 3 months. There is always something new from us depending on the time of year.” ARE YOU AFFILIATED WITH ANY COMMUNITY OR OTHER GROUPS? “Yes, I’m delighted to say that we are part of the Costa Mesa Chamber of Commerce and we do the Coach’s Dinners on occasion for the Los Angeles Chargers.” DO ANY FAMILY MEMBERS PARTICIPATE IN YOUR BUSINESS? “Every once in a while, my girlfriend will help me out. She will do a little bit of everything, whether its helping out in the kitchen, serving, making corporate deliveries, etc. She loves being involved and I try to involve her whenever she has free time.” ARE ANY NEW PRODUCTS OR SERVICES BEING ADDED? “We just recently got into having our own rentals for events as opposed to being the middle man between our clients and other rental companies. We have a good supply of plates, silverware, glassware and kitchen equipment right now. We eventually plan on expanding that to tables, chairs, linens, etc. We will be able to save our clients some money by keeping these things in house.” WHAT ARE TOP THREE THINGS PEOPLE MIGHT NOT KNOW ABOUT YOU OR YOUR BUSINESS? “1. Even though I am out and about at events all the time, I love being at home and watching TV Shows. I like to pick up creative things that directors and actors do that I can translate into our business activities. 2. We do a lot of corporate deliveries during the week. We specialize in social events, but we have a great

corporate breakfast and lunch menu for office buildings. We feed offices with anywhere between 10 and 700 employees. 3. I love change and creativity so I am always changing things about our business. Whether its menus, uniforms, types of services we offer. I like to keep things interesting and keep our clients interested as well. There will always be something new and exciting at Gold Coast Catering.” WHAT IS YOUR COMPANY MOTTO, SLOGAN OR FAVORITE QUOTATION? Our slogan is “Orange County’s Gold Standard Caterer”. WHO ARE THE PEOPLE WHO HAVE INSPIRED YOU MOST IN YOUR BUSINESS, TRADE, OR PROFESSION? “When I was younger I loved watching the Food Network Channel, and I loved Emeril. I was just a little kid when I started watching his shows, but I watched them all the way up until I started going to culinary school. I loved his showmanship and the way he interacted with the crowd and cooked his food. I think he gave a lot of inspiration to people in this industry and I was one of them. The other person that inspired me a lot, was my first chef I worked for, Florent Marneau. He was instrumental to my growth as a cook. His passion and intensity is something that I carry with me every day when I go in to work and I will always be thankful for him bringing me on board in his kitchen. I was lucky to have trained under him.” HOW LONG HAVE YOU BEEN IN YOUR CURRENT LOCATION? “We have been at our location since October 2016. We are located on the border of Costa Mesa and Newport Beach off of Placentia and 17th Street, while we don’t offer walk-in food service we are available by phone at (949) 365-6741”

According to reliable sources such as the U.S. census bureau the area served by the Newport News is one of Orange County’s highest income groups. These affluent nearby homeowners in Newport Beach, Balboa, Corona del Mar, and Newport Coast have more money to spend and the time to spend it. Make sure that these readers are aware of your company and what you do by keeping a regular, affordable advertising message in the newspaper that all of them read every week 2.Why pay more to reach your most preferred customers? Smart business owners and marketing experts agree that the most expensive advertising is advertising that doesn’t work. Savvy business managers are wise to be concerned about high volume publications that don’t deliver a strong local audience that would bring you customers. Major daily newspapers like the Times and the Register reach nearly a million readers, but do you really need to pay their high prices to reach your customers in Newport News? While some glossy monthly magazines are stylish, their costly rates may not be realistic compared to choosing a highly effective newspaper like the Newport News which is received by your most likely preferred customers of high income homeowners with advertising that costs you far less money. The Newport News is attractive, effective and affordable. 3. Why do Newport News Readers read the Newport News? Since 1907 The Newport News has been the favorite weekly publication of Newport Beach. On July 15, 1997, the Superior Court of Orange County adjudicated

(approved) The Newport News as the official newspaper for The City of Newport Beach and the County or Orange. That’s why you regularly see stories about the Newport News Chamber of Commerce, and prominent Newport News residents in the Newport News. So when you advertise In the Newport News you get the most popular weekly for Newport Beach readers. 4.U S Post office plus selected delivery makes this newspaper special! If you don’t know her already, get to know Kelly Bennett, the top society columnist in Orange County. She also has the top rated radio show and television program “Breakfast with Gary and Kelly. Readers eagerly await her weekly column in the Newport News which features major charity events where the beautiful people

of Orange County gather for fashionable luncheons and dinners which regularly raise millions of dollars for worthy causes. Permit us to say that placing your advertising where it is seen by people who can afford to give away millions is the best advertising purchase you will ever make. Read Kelly Bennett’s “Society Scene “column every week in the Newport News and see why. 6. Free Online Advertising Newport News Version each week. While many people still prefer to have a hard copy of the Newport News to hold in their hand, our online version is equally popular for those who want to access our entire newspaper on their smartphone, tablet or computer. Your regular ad will appear in our online edition at no extra charge. Just click on the Thenewportnews.com. 7. How Fast Will this Home be sold? We’d like to share some actual quotes from local Newport News area realtors: BUYERS CAME IN WAVING the ad that appeared in the Newport News.” Two factors determine how fast a house will sell: 1.Choose a skilled real estate professional 2. Advertise it in the Newport News Whether you are selling homes or other desirable goods or services you should consider the Newport News for your advertising.

Cottage cheese is having a moment. Nutritionists and health-minded individuals have discovered that the dairy case staple can actually unlock a lot of mealtime solutions, especially when it comes to remaking recipes with a creamy base, such as tuna salad and veggie dip. Simply swap the mayonnaise, cream cheese or sour cream with high-protein cottage cheese, and it’s pretty easy to pull off a higher-protein and lower-calorie version of your lunchtime favorites, says Amy Gorin, a registered dietitian nutritionist and writer in New York City. “In many of these recipes, cottage cheese works beautifully, because it helps these delicious foods keep that creamy texture while decreasing the calories and saturated fat - and adding filling protein,” Gorin says. “It’s one of those foods that was hiding in plain sight all these years.” For best results, start with a protein-packed brand of cottage cheese. Gorin always recommends Muuna Cottage Cheese to her clients, because its Lowfat Plain variety delivers a rich and creamy texture, plus it’s high in protein (14-19g per serving), is a good source of calcium and also contains potassium. So look at your go-to breakfast, lunch and snack recipes with new eyes, grab your blender and get creative. To get you inspired, here are five easy ways you can make the cottage cheese swap and give yourself a protein boost without going hungry. Lunch salad update Many of us have said no to delicious and classic lunch salads we love, Page 16

because mayo can add fat and calories. Turn to cottage cheese to make over your favorite lunches, and you can start enjoying things like tuna salad and potato salad, plus you’ll love that boost of protein. On toast Simplify your lunch hour and use cottage cheese as a creamy base for your favorite whole-grain toast, and then stack on yummy, vitaminpacked extras, like salad greens and sliced mangos, or even strawberries and avocado. A Greek yogurt-cup alternative For a quick on-the-go snack or lunch side, Muuna has reimagined cottage cheese into single-serve cups with real pieces of fruit on the bottom, packed with 15 grams of protein, including strawberry, blueberry, pineapple, peach and mango. Smoothies reimagined Swap out the yogurt and try using cottage cheese as a protein base for your favorite smoothie recipe. What you’ll have is a thick and creamy breakfast, likely with more protein than sugar. Dip without the guilt Kids and adults love how flavorful, creamy dips and dressings can liven up cut-up vegetables like carrots and broccoli. Sub in cottage cheese for mayo or sour cream to lower the calories and fat - and to amp up the protein and make the snack more filling and fueling. This super-simple, reimagined ranch dressing not only adds flavor to your crudites, it brings protein power to your lunchbox or your child’s.
