By Charlotte Raynor Labor Day is celebrated the first Monday in September in the United States. It is a formation of the labor movement and is committed to the financial and social accomplishments of the American workforce. It represents an annual national accolade to the contributions people have given to the affluence, strength, and welfare of our country. Labor Day’s Founder After more than 100 years after the first Labor Day celebration, there is even now some uncertainty as to who was the first to suggest the holiday for people in the workplace. Several accounts explain that Peter J. McGuire, general secretary of the Brotherhood of Carpenters and Joiners and a co-founder of the American Federation of Labor, was the initial person in proposing a day to pay tribute to those “who from rude nature have delved and carved all the grandeur we behold.” The fact of Peter McGuire being the founder of Labor Day has not gone uncontested. Numerous people think that Matthew Maguire, a machine operator, not Peter McGuire, created the holiday. The latest study appears

to maintain the debate that Matthew Maguire, later the secretary of Local 344 of the International Association of Machinists in Paterson, New Jersey, suggested the holiday in 1882 while functioning as secretary of the Central Labor Union in New York. It is obvious that the Central Labor Union approved a Labor Day suggestion and selected a team to design a picnic and exhibition. The Initial Labor Day The original Labor Day celebration was held on Tuesday, September 5, 1882, in New York City, in agreement with the policies of the Central Labor Union. The Central Labor Union had its next Labor Day celebration a year later, on September 5, 1883. The first Monday in September was chosen in 1884 as the holiday, as initially suggested, and the Central Labor Union pushed for comparable associations in other cities to go along with the model of New York and commemorate a “workingmen’s holiday” on that day. The proposal broadened with the increase of labor groups, and in 1885 Labor Day was observed in many manufacturing places in America. The Legislation of Labor Day

Over the years, the country gave growing importance to Labor Day. The first legislative acknowledgment came from municipal decrees passed during 1885 and 1886. From those decrees grew the advance to secure state legislation. The first state bill was presented into the New York legislature, but the first to develop into law was passed by Oregon on February 21, 1887. New Jersey, Colorado, New York and Massachusetts originated the Labor Day holiday by legislative ratification during that year. Pennsylvania, Connecticut and Ne-

braska followed the lead by the end of the decade. By 1894, 23 more states had approved the holiday in honor of people in the workplace and on June 28 of that year, Congress passed an act creating the first Monday in September of every year a legal holiday in the District of Columbia and the territories. These days, street parades and picnics celebrate Labor Day. Some of the time there are speeches by important men and women. Each year on the first Monday in September, we honor the American worker.

Remember your pets in this extreme heat, too With extremely hot weather forecasted for the next few days, the Mission Viejo Animal Services Center is urging animal owners to remember that heat affects our pets too. Animals have higher body temperatures than we do and less ability to cool down. Humans are covered with sweat glands, but our pets’ sweat glands are confined to their nose, mouth and pads of the feet. An over-heating dog, for example, can only regulate its own body temperature through panting, which is not terribly effective in extremely hot weather. You can take precautions to keep your pet safe during this heat wave: NEVER, under any circumstance, leave an animal in a parked car. This is very dangerous, as the temperatures inside a car increase greatly in hot weather. Always ensure your pet is kept in a well-ventilated area. It is not appropriate to house a pet in a garage or on a patio. Ideally, during Page 4

a heat wave, your pet should be kept indoors in a temperature-controlled environment. Be careful when walking your dog on hot pavement. Dogs’ paw pads can easily burn if they are forced to walk on a hot surface. Test the temperature of the pavement by placing your palm on it for one minute. If you can’t take the heat, neither can your dog. Exercise your dog in the early morning or cool evening hours. Be extra careful with dogs that are brachyalphalic, such as pugs, bulldogs and boxers. These breeds have a tougher time breathing, since their noses are short. If you notice that your pet is panting excessively, is extremely thirsty, has glazed eyes, or has bright red gums or a tongue, the animal may be overheating. The free trolley service runs each Saturday and Sunday through September 3. The hours of operation are from 7:30 a.m. to 9:30 p.m. The City will offer a free transportation option on the Balboa Peninsula during busy summer weekends. The Balboa Peninsula Trolley will began service on Saturday, June 17 to help visitors and locals easily travel along and explore the Peninsula. The trolley is scheduled to operate each Saturday and Sunday through September 3, 2017. It will also be in service on the Fourth of July holiday. The hours of operation are from 7:30 a.m. to 9:30 p.m. With 18 designated stops along the route, trolley users will be able to comfortably explore the Peninsula and its wide range of retail and dining opportunities or spend the day at the beach without having to worry about finding parking. “During the summer, the Peninsula

often becomes a challenge for those seeking parking to visit the beach or many of our wonderful restaurants and businesses,” Councilmember Diane Dixon stated. “The trolley allows our residents and visitors an opportunity to move around the Peninsula without having to worry about finding a place to park or losing their parking place. This service has been envisioned for many years and I am ecstatic we finally found a way to make it happen.” Free parking is available for trolley users in the lower Hoag Hospital parking lot at Hoag Drive and Coast Highway. A trolley is scheduled to pick up users at every stop in 15-minute intervals, depending on conditions. Users are invited to climb aboard or exit the trolley at any of the stops along the way to and from the Balboa Pier and Fun Zone area. For those planning a day at the beach, the trolley can

accommodate bicycles, surfboards under six-feet long, and beach gear. Users can obtain real-time locations of the trolleys online at peninsulatrolley.com or by downloading the mobile app, Ride Systems, and searching for Newport Beach from its list of agencies. The City received funding for the trolley service through a competitive grant process from the Orange County Transportation Authority’s Measure M2 Project V-Community Based Transit Circulators. The City was awarded $685,454 in grant funding for a seven-year operating period and is required to match the funding by 12 percent. The grant program was provided for local agencies to develop transit services to meet the needs in areas not adequately served by regional transit. Festival Of Arts Foundation Supports Art Education Programs at the Festival of Arts

The Festival of Arts was awarded a $3,000 grant which made possible three of its summer art enrichment programs, Arts-X-Press, Boys & Girls Club Photo Club and Family Art Day. With the support of this funding, the Festival of Arts hosted seventh and eighth grade students participating in the Pacific Symphony’s summer arts immersion program, ArtsX-Press. These 270 students enjoyed complimentary hands-on art workshops and instruction in printmaking, scratch art and ceramics at the Festival’s Art Center. They also went on a private backstage tour of the Pageant of the Masters followed by a performance of “The Grand Tour” in the evening. Funding also goes to supporting the Festival’s partnership with the Boys & Girls Club of Laguna Beach. Each year, the Festival hosts the club’s Photo Club where children meet artists, take photos, view the art and participate in art workshops. Additionally, over 200 children were able to take part in free workshops on Family Art Day, a special day at the Festival of Arts dedicated to families with kid-friendly art activities. “We’re very grateful for the support of the Foundation through this generous grant,” said Sharbie Higuchi, Marketing/PR Director. “Providing creative and educational

art experiences for children and young adults is extremely gratifying and beneficial to the community.” ABOUT THE FOA FOUNDATION The FOA Foundation, operating independently from the Festival of Arts and co-founded by John Rayment and David Young in 1989, was originally designed to award scholarships to graduates of Laguna Beach High School and grants to nonprofit art organizations and educational institutions in and about the city of Laguna Beach. Pacific Symphony’s Much-Loved Annual Favorite “Tchaikovsky Spectacular” Concludes the First “Summerfest” Season of Magical Music at Pacific Amphitheatre! Pacific Symphony ends every summer season with a spectacular bang, a burst of colorful fireworks and grand music! This year feels particularly significant, as the orchestra draws to a close its inaugural season in its new home at the OC Fair and Event Center on the triumphant note of “Tchaikovsky Spectacular.” Music Director Carl St.Clair leads this annual hit parade of Romantic masterworks, which also includes favorites by such mighty Russian masters as Shostakovich and Prokofiev. The concert features the brilliant virtuosity of the Van Cliburn gold medal winner, Yekwon Sunwoo, who performs Rachmaninoff’s exquisite and sweeping Piano Concerto No. 2. Capping off this memorable evening is the electrifying “1812 Overture,” featuring the Huntington Beach Concert Band—complete with cannons and brilliant fireworks— sending hearts racing and spirits soaring! “Our summer will close with the ringing of bells, the sound of canon fire and, of course, fireworks and Tchaikovsky’s ever-beloved ‘1812 Overture’—it’s always a memorable time!” says Maestro St.Clair. “Each year’s ‘Tchaikovsky Spectacular’ features an all-new program, and this summer the audience will be treated to a powerful performance of Rachmaninoff’s famed ‘Second Piano

Concerto,’ as well as great music by other top Russian composers. It is sure to bring our first summer at the Pacific Amphitheatre to a wonderful and fitting close!” A grand spectacle from beginning to end, “Tchaikovsky Spectacular” takes place Saturday, Sept. 9, at 8 p.m., in the Pacific Amphitheatre at the OC Fair & Event Center. Tickets are $25-$99. Pre-concert entertainment by the Huntington Beach Band takes place from 6-7:30 p.m. at the Plaza Pacifica entrance. All are welcome to bring their own food, wine and non-alcoholic beverages onto the premises, but glass containers and glassware are not permitted inside the amphitheater. Beer, along with additional food and beverages may be purchased at the concession stands inside the amphitheater. The gates open at 6 p.m. for picnicking. The evening is off and running right out of the gates, as the audience enjoys a short, wild ride via Shostakovich’s “Galop,” which sounds just like its name and is a musical sprint from the satirical operetta “Moscow, Cheryomushki.” Next is the program’s centerpiece, Rachmaninoff’s virtuosic showpiece—the achingly beautiful, grand and lyrical Piano Concerto No. 2—performed by this year’s Van Cliburn gold medal winner, pianist Yekwon Sunwoo. Sunwoo earned

his bachelor’s degree at the Curtis Institute of Music, his master’s at The Juilliard School, and also studied at the Mannes School of Music. The young, fast-rising star has already won first prizes at the 2015 International German Piano Award in Frankfurt, the 2014 Vendome Prize held at the Verbier Festival, the 2013 Sendai International Music Competition, and the 2012 William Kapell International Piano Competition. Rachmaninoff’s most popular piano concerto, the Second, is jam-packed with stunningly beautiful harmonies and melodies, sadness, melancholy, love and passion—and music almost anyone would recognize. From the first opening piano solo chords sounding like bells in a church, to magnificent and magical dialogue between clarinet, piano and violins in the second movement, until the grand tutti of orchestra and piano together in the end of the third movement, Rachmaninoff transports everyone—performers and listeners alike—to a unique and wondrous world. Thundering with drama and achingly beautiful, it’s so mesmerizing it calls to be heard over and over. Then—as if the audience isn’t already on the edge of their seat, the orchestra delivers Prokofiev’s lesser-known but highly rousing March in B-flat, Op. 99, before taking them by the hand to hear Tchaikovsky’s unabashedly romantic “Romeo and Juliet” Overture-Fantasy, one of the composer’s most-inspired and passionate melodies, telling the tale of the famous doomed

lovers. Full of tenderness and longing, Shakespeare’s tragedy and Tchaikovsky’s tortured personal life merge to produce the first true expression of his genius as a composer. This tautly constructed masterpiece with its irresistible melodies then gives way to a thrilling orchestral battle featuring fireworks, cannons and brassy fanfare for Tchaikovsky’s “1812” Overture. Tchaikovsky’s exhilarating music, with its distinct brilliant sound and victorious climax, becomes the quintessential conclusion for an evening of fireworks and orchestral music under the stars. Santa Ana Zoo’s 2017 Zoofari Celebrates Silver Anniversary

The Newmeyer Family - Photo by Ann Chatillon Everything was glittering silver at The Friends of the Santa Ana Zoo (FOSAZ) the non-profit 501(c)(3) organization’s 25th annual Zoofari blacktie gala benefiting the Santa Ana Zoo. With more folks attending this year, in fact there were almost 45 more from last year, guests were wearing their best black-tie and silver anniversary attire as Zoofari takes place at one of the most exotic venues in Orange County, outside and under the stars on the grounds of the Santa Ana Zoo. Guests enjoyed a first-class dining experience catered by Parties by Panache with a hosted bar including a special drink, the “Satin Sparkle” – which was of course a celebratory glass of Champagne with a rim of silver sparkled sugar. Decorations were provided by R.W.B. Party Rentals which put a special “bling” in the air with colors of silver, black, white and lavender. Elegance was everywhere on the grounds of the Santa Ana Zoo with beautiful statues, pillars and furniture that created a sophisticated flair to celebrate the historic year. “We are very excited to be celebrating 25 years, Zoofari has grown from a dedicated group of Zoo supporters who gathered to enjoy a festive evening to celebrate all that the Santa Ana Zoo has to offer”, said Cathi Decker, event host and Executive Director of FOSAZ. “Through the years, we’ve experienced fantastic themes, delicious food, creative drinks and have engaged many wonderful supporters who have donated their time, money and talents – it means so much especially raising the funds needed for all Rib and Karen Ripple with Chuck Street - Photo by Ann Chatillon the special projects and improvements going on here”. Guests began the night being greeted by various animals and their docent “handlers”. An Armadillo, Spectacled Owl and a French Rooster, a few crawly things and of course Danny the Pony were just some of the wildlife that welcomed everyone as they entered the Santa Ana Zoo. Guests were also privy to tour the zoo grounds and see the area where the new Giant River Otters habitat is being created, the construction of the Fifty Monkey Ferris Wheel and of course the 50 monkeys the Santa Ana Zoo is famous for. Commander Chuck Street, a long-time airborne traffic reporter for KISS-FM radio and former Executive Director of the Santa Ana’s Parks, Recreation and Community Services Agency and current FOSAZ Board Member Rip Ripple were the Masters of Ceremonies for the evening with Glen Fladeboe coming back as auctioneer for the live auction. Honorees this year were Peggy Baldwin-Butler of the Tudor House Entertainment and James Howe of Bert L. Howe & Associates, Inc. BaldwinButler has been a longtime supporter and underwriter for Zoofari and the Santa Ana Zoo while Howe is an instrumental underwriter for the upcoming Fifty Monkey Ferris Wheel set to be unveiled at the end of this year. Researchers to Collect Eelgrass Data in Newport Bay Multi-year study to reveal how eelgrass fights ocean acidification Orange County Coastkeeper joins as field experts for local portion of the study WHAT: Starting next week, Orange County Coastkeeper will join university researchers to study natural and restored beds of eelgrass to understand how they may buffer against ocean acidification. The local survey and data collection efforts in upper Newport Bay are one component of a multi-year study led by UC Davis and UC Santa Cruz scientists at multiple bays in California. WHY: Seagrass beds are critically important for their potential to buffer acidified waters because of their high amounts of photosynthesis. By removing carbon from our seawater, eelgrass beds may fight the effects of ocean acidification and climate change. The new study will compare how natural and restored eelgrass beds absorb carbon by addressing the following questions: To what extent does eelgrass buffer estuaries, mitigating the impacts of ocean acidification across multiple

season and years? As the chemistry of water is modified as it flows through eelgrass, how does this influence organisms living within and outside of the eelgrass? To what extent is carbon being trapped and stored in sediments, and how does this change seasonally and inter-annually? Healthy Picnic Recipes for Labor Day

By Sally Ann Murphy The key to a perfect picnic is the food - fun to eat and easy to make. The perfect Labor Day picnic for my family consists of barbecued chicken, potato salad, green bean salad, lemonade, and brownies. One thing that is guaranteed not to make a picnic fun, however, is if you are worried about gaining a ton while you are eating it. So, in the interest of keeping things fun for everyone, I have written this article to provide you with some healthy recipes for picnic favorites that will make everyone happy and not put an extra five pounds on your waistline! To keep things easy, two of the recipes can be made the night before, and two items are made from a mix (I know, I know, but I’m promising fun and easy, not Julia Child here!) Recipes: Barbecue Chicken This is an easy one. Sauté one green pepper, one clove of garlic and one onion in a skillet, add skinless, boneless chicken breasts, cover in barbecue sauce and simmer for about 20 minutes. Chicken is a wonderfully healthy food, most kids love it, and a little barbecue sauce isn’t going to send the calorie count through the roof. Potato Salad Potato Salad - would a Labor Day

picnic be complete without it? Boil 2 cups of water, 2 and ½ lbs. of cubed red potatoes and one 14 oz can of fat free chicken broth and cook until tender (about 25 minutes). Drain and let the potatoes cool. Mix one cup nonfat plain yogurt, the juice of one lemon, ½ cup chopped onion, 2 tablespoons fat-free mayonnaise, 1 tablespoon of olive oil, and salt and pepper to taste. Mix potatoes and yogurt mixture, cover and chill overnight. For variety you can add a hard boiled egg (we don’t because of allergies), or diced cucumbers or celery if you like a little crunch to your potato salad. If this is too bland for you try adding thyme, dill, basil or oregano. Boiling food in fat free chicken broth is a little trick of my husband’s, and it works great for vegetables and pasta, too! Green Bean Salad Cook 1 lb. of fresh green beans and drain. Mix in 3 tablespoons of olive oil, 1/ 2 cup lemon juice, 1/ 4 cup minced onions, 1 tablespoon of minced garlic, 1/ 4 teaspoon black pepper and salt to taste. Cover and chill overnight - how easy is that? Green beans are a very healthy choice for a vegetable, and this recipe spices them up nicely. Lemonade You can’t have a Labor Day picnic without lemonade. Pick up some

Crystal Light - zero calories, easy to make (just add water) and lots of different, fabulous lemonade flavors (strawberry kiwi, anyone?) A healthy alternative to sugar laden sodas and other drinks. Brownies Brownies may not be the typical Labor Day treat, but they are easy and fun and everyone likes them. Pick up a package Betty Crocker Low Fat Brownie Mix - 130 calories per brownie - how easy is that? You can dress these up for people who don’t care for low fat brownies (e.g. your husband) - add some chocolate

frosting on top or sprinkle with nuts. Mmmm. This can be made the night before or the morning of your picnic, depending on whether or not you and your family like to eat brownies while they are still warm. And that’s it. Food that is quick, easy, and healthy as far as picnic fare goes (lean protein, green vegetable, starch, healthy fats, and a fun dessert!). Throw it in a picnic basket with a blanket, some paper products, and your sunscreen, and you are good to go. Have a happy, healthy, safe Labor Day, from my family to yours!

Froley and her six-year-old mount led both rounds with impressive scores of 89 and 87, and finished with an overall total of 176 points to top the field.

The pair had a stellar week, winning every round over fences in the 3’ Green Hunters and the division championship, plus a second in the $1,000 CPHA Green Hunter Incentive class. Their derby victory earned Froley the Blue Ribbon Blankets Winning Training Award and a pair of Roeckl Sports gloves, along with an embroidered cooler and engraved pewter plate. “We recently purchased Park City

at the beginning of this year as a jumper in Europe. He has started out the season competing in the 3’ Green Hunters, and he now competes in the Adult Amateur Hunters with his owner, Lauren Fleming,” Froley said. Froley summed up the experience of winning on the young mount, who is also a good match for the owner. “My favorite part of my job is watching the juniors, amateurs, and young horses alike develop and improve over time. It is very exciting and satisfying to see the riders’ and horses’ hard work pay off.” With an overall score of 173.5, amateur rider David Scapa secured second place and the One K Helmets Highest Placing Amateur Award aboard Dream Catcher. The Plaid Horse Highest Placing Junior Award went to Reeve Sykes and Tonaco. Winner of the Equifit Groom’s Award for the Best Turned Out Horse was Guillermo Flores, who prepared

The sweltering temperatures in many parts of the country can have a multitude of effects on these animals that are in the sun and heat throughout the day. Horses are a primary example of outdoor animals that experience the effects of the temperatures and must adapt. However, there are ways that owners can help ease the strain of summer on their horses in a few different key areas. Nutrition Oftentimes, a horse’s diet will require adjustments during the hot temperatures of summer, especially during extreme heat. Perhaps the largest nutritional concern for horse owners is making sure to provide plenty of fresh water to ensure proper hydration. As temperatures climb, horses, like most animals, will naturally feel the need to consume higher volumes of water. However, it’s the owner’s responsibility to make sure the proper amount is available. Sweet Barbecue Sauce (I love anything sweet and the following recipe is delicious, especially on grilled chicken!) 1 cup ketchup ¼ cup apple juice ¼ cup apple cider vinegar ¼ cup of Worcestershire 1 teaspoon of garlic powder ½ teaspoon of onion powder Salt and Pepper to taste Combine all ingredients in a saucepan and mix. Bring to a boil and then allow the sauce to simmer for about 20 minutes. Another nice feature is to add apple Page 16

wood chips to your charcoal or gas grill before grilling the chicken. Sauce should be put on grilled chicken for the last 10-15 minutes of grilling. Beer Can Chicken This is an oldie but goodie! Try grilling your chicken using ½ a beer! The beer gives your chicken a very flavorful taste. You can add your favorite barbeque sauce for the last 10-15 minutes of grilling. ½ cup barbecue sauce (your home made recipe or store bought!) 1 12 oz. can of beer (need only ½) 1 tablespoon of onion powder 1 teaspoon of garlic powder 1 teaspoon of basil (dried) 1 teaspoon of paprika Salt and Pepper to taste One Whole Chicken (about 3 ½ pds.) Combine all spices and mix well before rubbing mixture onto chicken. Pour out half can of beer and place the can of the beer into the cavity of the chicken. (It will look odd, as if the chicken is sitting on top of can.) Put the chicken on the grill and cook for 1 to 1 ½ hours (be sure not to overcook). Keep cover on grill. Put barbeque sauce over chicken and grill in last ten minutes of baking time.

When complete, remove the beer can and discard. Place chicken on plate and add extra sauce as needed or desired. Baked Barbecue Chicken (This is the easiest of all three recipes!) 1 3 to 3 ½ pound chicken, cut into pieces 2 teaspoons garlic powder Dash salt and pepper 1 ½ cups of your favorite barbecue

sauce (mine is Sweet Baby Ray’s!) Preheat oven to 350 degrees. Take chicken pieces and sprinkle with salt, pepper and garlic powder. Cover tightly with aluminum foil and bake chicken for at least 1 hour. After one hour, drain any chicken fat from pan and then return chicken to pan. Cover with your favorite sauce and bake again (this time uncovered) for approximately 20-25 minutes.
