ASSEMBLE A HOLIDAY CHEESEBOARD GUARANTEED TO IMPRESS
‘Tis the season for getting together with friends and family to celebrate. Food is at the heart of the holidays, so whether you’re hosting an event or attending as a guest, you’ll want to whip up something to impress a wide variety of taste buds. The perfect solution: A holiday cheeseboard. Creating a cheeseboard like the ones you see in food magazines might seem intimidating, but it’s actually surprisingly simple. With a little planning and a few flairs, you’ll put together a cheeseboard
that guests will nosh on until every last crumb is devoured. Just follow these five steps to a delicious holiday cheeseboard that’s guaranteed to get rave reviews. 1. Select a serving tray: A wood cutting board is timeless, but feel free to get creative with your serving vessel. You can choose your grandmother’s crystal platter, that festive holiday tray or repurpose a favorite cake plate. The only rule is the tray must be large enough to hold all your cheese plus accompaniments
without being overcrowded. 2. Choose cheese wisely: Select three to five varieties of cheese for your board. This provides nice variation without overwhelming guests with too many options. When in doubt, remember this rhyme when shopping: Something old, something new, something stinky and something blue. Consider an Italian cheese theme and choose from a variety of Stella cheeses. From fresh mozzarella and tart feta to aged Asiago and buttery Fontina, you’ll have nice variety for everyone. 3. Get the right amounts: You want enough cheese to satisfy everyone but you don’t wants loads of leftovers. Typically 4-6 ounces of cheese per person is a good estimate, but increase or decrease that amount based on time of day and other foods being served (for example, a bountiful luncheon versus a light cocktail hour). The Stella Cheese online cheese calculator can help you determine appropriate amounts considering these variables if you need assistance. 4. Add accompaniments and garnishes: For a well-rounded cheeseboard, extras are essential. Crackers, crostini and bread as well as nuts, dried fruit, olives and meats can be customized to your tastes. For
a festive take on your cheeseboard, add quintessential holiday-themed foods such as cranberry jam, roasted chestnuts, fresh figs and even pumpkin butter. For pops of color, add in fresh berries and sprigs of rosemary. These extras not only add a plethora of flavors, but they beautify your presentation. 5. Consider proper preparation: One of the best parts of a cheeseboard is it can be prepared ahead of time. This means less work and more time to spend with loved ones during holiday events. To get started, organize your cheeseboard in an eye-appealing manner with cheeses from mildest to strongest flavor as that’s the best way to sample them. Keep in mind you can set cheese out about an hour before serving as this time allows cheese to adjust to room temperature which maximizes flavors. Then add extras to fill in the spaces on the board, placing garnishes like jams and honey in the middle. Whether you’re hosting a casual neighborhood gathering, a festive celebration with family or a formal get-together with business partners, a delectable cheeseboard is ideal for guests to nosh on. YOUR 2018 GUIDE TO EARTH-FRIENDLY HOLIDAY GIFTING Each year, many people count down the days to the holiday season and save their money for festive decorations and gift giving. In fact, the average American will spend over $1,000 on holiday gifts, according to the National Retail Federation. But before you start checking gifts off your list, consider going green this year. The best gifts not only have the latest features and styles, they also save energy and protect the environment. It’s a gift that gives back to your loved ones and the planet. Cutting-edge electronics Many of the latest models of your favorite gadgets have earned the ENERGY STAR label, meaning they are independently certified to save energy and money and protect the environment. You can find TVs, laptops, tablets, speakers, soundbars and more with this certification something for everyone on your list. Look for ENERGY STAR on electronics while you’re out holiday shopping. Advanced appliances Appliances might not be the most flashy or exciting gifts around, but if they are ENERGY STAR certified, they’re gifts that keep on giving. Certified appliances use less energy
and water, saving money on utility bills with every use. Treat your loved ones with the convenience of a new refrigerator, washer, dryer or dishwasher. Smart thermostat As temperatures drop, your heating bill is on the rise. For the average American household, almost half of the annual energy bill goes to heating and cooling - more than $900 a year. If you’re concerned about your energy usage this winter, an ENERGY STAR certified smart thermostat can help you stay warm without breaking the bank. And those energy savings add up to a greener planet. If everyone used an energy-efficient certified smart thermostat, savings would grow to 56 trillion BTUs of energy and $740 million per year, offsetting 13 billion pounds of annual greenhouse gas emissions. Modern lighting Candy and socks are common stocking stuffers, but how about something unique this year? Give your friends and family something they really need. ENERGY STAR certified LED light bulbs last over 13 years with typical use and save nearly $55 in electricity costs in that time. LED light bulbs are available in
warm to cool white light, so your gift can help set the mood in any room. You can also find energy-efficient light fixtures that come with LED light sources integrated right into their design that use up to 90 percent less energy. Creative wrapping paper Materials used to make gift wrapping paper are often not accepted for recycling, especially if it’s dyed, laminated or contains nonpaper additives like glitter or plastics. Get creative when wrapping presents this year with old fabric, maps, sheet music, magazines or newspapers. You can even use baking pans or
festive reusable tins. Do-good donation What do you get that friend or family member who has everything? That’s easy. Donate to a charity or service organization that they support in their name. For example, donate to a local organization that promotes environmental research or conservation. Your gift could also include a promise to volunteer with an organization. Follow this guide to green-up your holiday gifting. For more earth-friendly holiday gift ideas, visit energystar. gov/holiday. - (BPT)
DO IT YOURSELF HOLIDAY ACTIVITIES FOR THE WHOLE FAMILY ‘Tis the season for baking and crafting - the perfect ways to feel festive and bond with loved ones of all ages. From trying new recipes to creating crafts that will be cherished for years to come, plan a date for some holiday fun and let the memorymaking with friends and family begin! These five festive projects will inspire laughter and good cheer while helping you mark the season with togetherness: PEEPS Snowy S’mores Classic s’mores get a holiday makeover with a tasty and adorable twist thanks to PEEPS(R) marshmallow and its fun seasonal shapes. Just follow the simple instructions and everyone will enjoy a delicious treat. Don’t forget to make a few extras to give away! See instructions below: Curated by Good Housekeeping magazine on behalf of PEEPS(R) Servings: 3 Prep time: 5 minutes Cook time: less than 1 minute Ingredients 9 ct. pack of PEEPS(R) Marshmallow Snowmen 9 graham cracker squares 1 pack of mini candy canes 6 chocolate squares Directions 1. Turn on the oven broiler and place the oven rack in the center of the oven. Line a baking sheet with foil. 2. Break the graham cracker and the chocolate bars into squares. 3. Arrange six graham cracker Page 6
squares on the baking sheet and top each with a square of chocolate. Place a PEEPS(R) Marshmallow Snowman on top of each chocolate. 4. Place the tray in the oven for 35 seconds. Check to see how toasted the Snowmen are - they should be slightly puffed, looked melted around the sides, and begin to form a goldenbrown crust on top. If they don’t look melted enough, leave them in for another 5 to 10 seconds. Keep a very close eye on them and use extreme caution when broiling PEEPS(R) and pulling them out of the hot oven. 5. Remove the tray from the oven and immediately begin to build the PEEPS(R) Snowy S’mores by stacking two melted PEEPS(R) topped graham crackers. 6. Finish off with a clean graham cracker and top off with a PEEPS(R) Marshmallow Snowman. Adhere the Snowman to the top of the graham cracker with a dab of melted chocolate, and then adhere the candy cane to his hand with chocolate - to appear as if the Snowman is holding the candy cane. 7. Break up a candy cane and sprinkle bits to the melted chocolate and PEEPS(R) Marshmallow Snowman. 8. Make sure to enjoy while the treat is still warm! Gratitude tree The family tree gets a thoughtful update in this project that serves as a reminder of what matters most during
The San Clemente News
the holiday season. Use cardboard or poster board to cut out a tree trunk and branches to hang on the wall. Then cut out leaf shapes with construction paper and ask each person to write down what they are grateful for. Then share with each other before adhering the leaves on the branches to create a one-of-akind family tree. For a holiday theme, place an evergreen tree on the wall and decorate with paper ornaments with notations of gratitude instead. Hand-print wreath Every person is unique and so is the size and shape of their hand. Outline each person’s hand on green felt and cut out individually. Then use glue to adhere the hands together in a circle shape to create a wreath, adding in a few red circles for berries or a bow if you desire. Alternatively get a white canvas and green acrylic paint from the local craft store. Gather everyone and paint the palms and underside of fingers and press each family member’s hand firmly on the canvas to create various prints in a beautiful wreath shape. Cup of joy Want a simple project that is as much fun to create as it is to give? From neighbors and the mail-carrier to teachers and school friends, it’s easy to show you care when you create a treat that lets everyone enjoy a cup of joy. Simply get packets of classic hot chocolate and PEEPS(R) marshmallow in seasonal shapes
like gingerbread men, snowmen and holiday trees. Tie together with a bow and add a tag with a holiday greeting or fun saying like, “You’re our favorite ‘PEEP’le, thanks for being great neighbors!” Salt-dough ornaments Kids love to play with clay, so they certainly will enjoy creating saltdough ornaments. All you need is flour, salt and water to get started. Look up “salt dough ornament recipe” on the internet and you’ll find quick and easy recipes. Traditionally, you’ll roll out dough and cut with cookie cutters before baking and painting. You can also make three-dimensional ornaments like snowmen or people, too. Get creative by using household utensils like a garlic press to create hair or beards. Spending time with loved ones is the best part of the holidays. Let these five DIY activities inspire your friends and family to get together and feel the joy of the season. - (BPT)

3 ESSENTIAL TIPS FOR TRAVELING WITH A PET DURING THE HOLIDAYS
The holidays mean different things to different people. Every family seems to have its own set of traditions, but one thing seems to be common among Americans during this time of year, and that’s traveling. Like Santa Claus making that long journey from the North Pole, it’s estimated that more than 90 million Americans (36 percent) will travel this holiday season, according to a recent survey conducted by Extended Stay America hotels and Kelton Global. Santa and his reindeer will hit the road during the 2017 holiday season - and he’s not alone, as nearly threequarters of Americans (69 percent) will do the same with their pets. “Pet parents are increasingly including their furry family members in their travel plans, especially during the holidays,” says pet expert Andrea
Arden, who has over 20 years of experience in the industry. “In fact, our companion animals can be such a great source of comfort while we’re away from home, that some people can’t even conceive of a vacation without their dog or cat by their side.” To ensure you and your animal companion bring cheer wherever you go, Arden has provided three essential tips for traveling with a pet this holiday season. 1. Prepare your pet Like finding the perfect gift for your loved ones, the earlier you start to plan and prepare, the easier it will be. A great holiday vacation begins with a trip to the veterinarian to make sure your animal is in good health, has all the medications they might need (and perhaps some extras) and is up-to-date on vaccines. Along
with their physical health, you want to make sure your dog or cat is mentally prepared for a journey that may involve new places, new smells and new people. To get your four-legged friends ready for the adventure, bring your pet to unfamiliar places like a local park and have them interact with new faces. When you do this, be sure to bring plenty of treats to praise your pet and reinforce that these new experiences are positive and fun. 2. Avoid guilty faux paws Forty percent of traveling pet parents feel guilty about leaving their pets home during the holidays. That’s because pets are considered part of the family, and nearly onethird of Americans (27 percent) say pets should be included in all holiday festivities. Places like Extended Stay America can help alleviate some of the stress (and guilt) pet parents might feel during this time of year; the hotel’s more than 600 properties nationwide welcome pets year-round, so families don’t need to make the difficult decision of leaving their animal companion behind. To make things even easier this season, if you book before Dec. 31 at esa.com/ holiday, your pets stay free. Consider it a retreat from the holiday madness for you and your four-legged friend. In addition to helping pet owners stay connected with their animals, Extended Stay America offers all the comforts of home for guests. That’s important, since nearly half
(47 percent) of travelers this holiday season plan to be away from home for five days or more. With fully equipped kitchens in each room so guests can still contribute a dish to their family gathering; on-site laundry facilities to keep guests looking their holiday best; and free, in-room Wi-Fi, it’s easy to feel at home at Extended Stay America. 3. Practice good petiquette We know, sometimes it’s hard to believe that your lovable, furry friend could misbehave. When traveling to unfamiliar places, a calm, happy animal makes everyone else calm and happy, too. Here are some pointers to ensure your pets stay on the nice list this holiday: * Teach your cat or dog to rest calmly in a crate before you leave, so they have a familiar spot when traveling. * If driving, take frequent breaks to walk your dog or check in on your cat. * Bring along a chew toy that is filled with a little bit of food, as this serves as a great distraction for an anxious or bored animal. * Outside, keep your pet on a leash and walk them away from public areas like flowerbeds. And always remember to clean up after them! * Never leave your pet in a room alone, unless you are sure they will not disturb neighbors. If you must, leave the “Do Not Disturb” sign on the door, so housekeeping won’t startle them. - (BPT)

HANDCRAFTED AMERICAN FURNITURE BUILT TO LAST Study nature, love nature, stay close to nature. It will never fail you. That quote by Frank Lloyd Wright is ever so present in the work of Sean Woolsey Studio. Based in Costa Mesa, Sean Woolsey and his team design and meticulously craft handmade furniture built to last for generations. “Our pieces are purposefully designed to last generations , in contrast to a ”throw away” mass market approach. The core of what we do is informed by the beauty, structure, and simplicity in nature” Woolsey says. Growing up Woolsey was influenced by his father, a reputable stained glass artist building lamps and custom doors and windows for high profile clients all over the country. “My dad taught me a lot, and was a role model to me in many ways. “I grew up building skate ramps, then had a stint in the apprel industry (having his own 2 brands) then working for Hurley in Costa Mesa. I ultimately wanted to make things with my hands, built things with purpose and out of the best materials possible. Pieces that I would be proud to own myself.” Woolsey left the apparel industry and forged a new path in hand crafted furniture. Today Sean Woolsey Studio makes everything in southern California, from chairs and desks to pool tables and ping pong tables.
The showroom in Costa Mesa is open by appointment.

JOYFUL CHILD FOUNDATION GALA RAISES NEARLY $100,000.00 P h o t o s b y D r e w Wy m a n a n d M i c h e l l e P e r a l e s The Joyful Child Foundation’s California coastal-themed fundraiser gala at the Fashion Island Hotel in Newport Beach was an elegant affair that generated nearly $100,000 to support the organization’s BRAVE Initiative. Through the BRAVE Initiative, The Joyful Child empowers children and teens, ages 5-18, how to protect themselves and stop violence through self-advocacy, verbal and practical defense techniques, and resiliency skills. A special highlight of the evening featured unveiling the breathtaking painting created by the formally trained and very talented Parisian artist, Laurent Dareau. The painting, which Dareau commissioned specifically for the event, revealed a stunningly joyful depiction of young Samantha Runnion, in whose memory The Joyful Child was established. Founding Director, Erin Runnion, announced that the masterpiece would serve as the focal point for the new Champions for Children Wall at The Joyful Child’s Headquarters, in Irvine. This wall will feature the names of inaugural donors to the newly established Samantha’s Legacy Fund, honoring their support for The Joyful Child’s national movement for child protection and prevention education. Laura Diaz, the 14-time Emmy Award winning and three-time Imagen Award winning Fox11 news anchor and reporter who has been a longtime friend to The Joyful Child, Emcee’d the event with finesse and poise, while framing the context for The Joyful Child’s mission and call to action. Ms. Diaz also introduced a short video of the up-and-coming Eliana Sweet, current president of a local high school BRAVE Club who produced a short film titled “The Joyful Child – Erin Runnion’s Story.” Ms. Sweet’s full-length video was nominated for Best Spot Feature at The Orange County Film Festival. Erin Runnion herself delivered a powerful message, applauding all in attendance for being champions for children, celebrating the victories of the past year through collaboration with a myriad of community partner agencies, and emphasizing the urgent need to “do what needs to be done to stop the cycle of violence so that we can protect every child, whether it be within their schools, communities, or families.” The Joyful Child annually honors a community partner whose work has gone above and beyond to expand the BRAVE Initiative into their communities. This year was no exception, as Ms. Gloria Huerta and the San Bernardino Sheriff’s Department each received a stunning crystal Champions for Children award for their consistent and steadfast work teaching BRAVE to children in the Inland Empire. As a community united for child protection, they have empowered over 1,000 children with knowledge and skills to keep themselves safe from abduction, abuse, and exploitation. The gala’s Co-Chairs Darryl Tallon and Debbie Nguyen orchestrated the details of the evening, including the cocktail reception with silent auction and the sit-down dinner, down to the details of the gorgeous coastal-glam-inspired centerpieces designed by Julie Khuu Interior Design, which one lucky guest from each table had the privilege to take home. Zack Krone of California Coastal Auctions provided lively, jovial entertainment for the fundraising activities, including auction packages and opportunities for travel to places near and far, from as close to home as Pelican Hill in Newport Beach, to Key Largo, Florida and even the Caribbean island of Antigua. This event was an elegant and joyful evening to celebrate this important work for child protection! Since 2002, The Joyful Child Foundation has been dedicated to preventing crimes against children through programs that educate, empower, and unite families and communities. The BRAVE Initiative provides empowering, interactive life skills lessons for children in grades K-12 with the help of teachers, community partner agencies, and law enforcement, as well as through parent education opportunities. DAOU A BEACON OF FINE WINE IN PASO ROBLES
Considered the birthplace of modern winemaking and an amazing terroir for producing Cabernet Sauvignon, 2,300 foot DAOU Mountain stands tall in the Adelaida District of Paso Robles. Off to the west of the 101, in the Adelaida District of Paso Robles, about a half day journey or so on the road from north San Diego, stands a solitary mountain of some 2,300 feet, producing magnificent Cabernet Sauvignon. Everything about this mountain is so right for the highest quality Cabernet. When the brother team of Georges and Daniel Daou staked their claim after growing up in France with a love of wine, then achieving great success in America in academics and in the tech world, the dream of DAOU Mountain turned into the discovery of a lifetime. It did not come quickly. As a matter of fact, when the decision was made to pursue their vision of making the best Bordeaux French style wines in the world, it took them 8 years to find this location. 12 years ago, DAOU Mountain was named and planting began at the pinnacle of what would become the largest wine country in California, Paso Robles. “It was wild country then and we struggled to quickly put up a single building to start making wine,” Daniel Daou told me. “We were just 14 miles from the ocean and you could feel it. The calcareous lime soil had a very similar make up to what makes Bordeaux vineyards thrive. Our wines have lots of minerality and natural acidity. Over time, wine experts have applauded our efforts and now expect us to make great Cabernet Sauvignon. The American dream is still alive. We have challenged ourselves to produce wines that will rival the greatest. There is no question that we have the terroir. This Page 14
terrior is naturally inclined to produce wines of extraordinary staying power. We spare no amount of imagination or technology in harnessing that power to make wines of dimension and elegance.”
At the recent Vigilucci’s Steak and Seafood Wine Dinner in Carlsbad, speakers included, from left: Daniel Brunner Regional Sales Manager, Proprietor/ Winemaker Daniel Daou, both from DAOU Vineyards & Winery, and Matt Moore, General Manager/Wine Director for Vigilucci’s.

QUARTER PAGE COLOR This month I have terrific low prices on quarter page full color ad packages. Plus you can choose to either pre pay or pay as you go. But remember these rates apply only if you order this month. Smart business owners and marketing experts agree that the best advertising program is one which brings you clients and customers. Savvy business managers are wise to be concerned about high volume publications that don’t deliver a strong local audience that would generate immediate income for your business. Major daily newspapers like the Times and the Register reach nearly a million readers, but do you really need to pay their high prices to reach your customers in San Clemente, Talega, Dana Point? While some glossy monthly magazines are stylish, their costly rates may not be realistic compared to choosing a highly effective newspaper like these reasonably priced local newspapers which are received by your most likely preferred customers of high income homeowners. This advertising costs you far less money. These five local newspapers are attractive, effective and affordable. Let’s talk today!
