Pacific Theatre Ballet Presents “The Nutcracker Suite”
Photos and Story By: Steve Wylie One of the traditions of the holiday season is the production Tchaikovsky’s “The Nutcracker Suite”. The Pacific Theatre Ballet will present its seventh annual production of this holiday classic on December 15 and 16 at the Laguna Hills Community Center. The Pacific Theatre Ballet, under the direction of Ann-Marie McClellan, works closely with and draws its youthful cast from the Pacific Ballet Conservatory of Aliso Viejo. “The Nutcracker” tells the story of a young girl, Clara, who dreams that her nutcracker doll becomes a prince who fights off the Mouse King, and then takes her to an enchanted Land of Sweets. The Pacific Theatre Ballet’s production features a large cast, many of whom perform or share multiple roles over the six performance weekend. The role of Clara is played by two young and gifted dancers, Kendra Burke and Chloe Koutroulis. The Sugar Plum Fairy will be played by veterans Lauren Lyskoski and Brianne Pattee. The Laguna Hills Community Center, located at 25555 Alicia Parkway, is an intimate venue that is perfect for this production. Refreshments will be served, and guests will have the opportunity to take photos with members of the cast. Performances will be held at 1:00, 2:30, and 4:15 p.m. both days. City Announces Availability of Grant Applications for Civic Projects, Social Services and Housing Programs The City invites non-profit organizations serving San Clemente residents to submit a request for grant funds from the City of San Clemente for civic projects, social services or housing and homeless support services. Funding requests will be considered for grants for a new service, event or an established program. Funds may be allocated to pay for one-time costs, staffing costs or operation costs (rent, supplies, professional or special services). The City should not be considered the sole funding source for the project. Grants are for the 2013-14 fiscal year, which begins on July 1, 2013. Last fiscal year the City provided $124,000 total in funding. Applications can be obtained by calling Denise Obrero, Housing Specialist at (949) 361-6188. The application will be posted on November 28th on the City’s website under the Services/Housing & Social Services/Housing Services link. The all-star ensemble will perform classic jazz and original compositions by critically acclaimed, Grammy® Award-winning artists: bassist and musical director Christian McBride, vocalist Dee Dee Bridgewater, saxophonist Chris Potter, trumpeter Ambrose Akinmusire, pianist Benny Green and drummer Lewis Nash. bassist Christian McBride is one of the most in-demand jazz musicians in the world. He has recorded and performed live with such artists as Freddie Hubbard, Pat Metheny, Joshua Redman, Joe Henderson, Betty Carter, Roy Haynes, Benny Green, Kathleen Battle, Diana Krall, Dave Brubeck, Jimmy Smith, Joe Lovano, McCoy Tyner, George Duke, Sting, Chick Corea, Chris Botti, James Brown, Queen Latifah, Carly Simon, Sonny Rollins and Roy Haynes. McBride has recorded for the Verve, Warner Brothers and Mack Avenue labels. The Good Feeling, his first big band recording as a leader, arranger and conductor, won a 2011 Grammy. As a jazz educator and mentor, he serves as the artistic director for the Jazz Aspen Snowmass summer program and is the co-director of the Jazz Museum in Harlem. McBride has held artistic director, creative chair and artist-in-residence positions at the Henry Mancini and Brubeck Institutes, the Berklee College of Music, Stanford Jazz Workshop, the Los Angeles Philharmonic and the Detroit and Monterey Jazz Festivals. McBride has appeared at the Festival eight times since 1994. Pianist Benny Green grew up in Berkeley, California. As a teenager, he worked with Eddie Henderson and Chuck Israels. Moving to New York City 1982, he studied with Walter Bishop Jr., worked with Betty Carter and eventually played in Art Blakey’s Jazz Messengers. After working with Freddie Hubbard’s quintet, Oscar Peterson chose Benny as the first recipient of the City of Toronto’s Glenn Gould International Protégé Prize in Music in 1993, the same year he joined Ray Brown’s trio. In 1997, Green resumed his freelance career with solo performances, leading his own trios and accompanying singers such as Diana Krall. As a leader, he has recorded many albums for the Criss Cross, Blue Note, Toshiba and Telarc labels. With more than 100 recordings to his credit, he has collaborated with Betty Carter, Art Blakey & the Jazz Messengers, Bobby Watson, Milt Jackson, Ray Brown and others. Green was a featured performer with Dizzy Gillespie All-Star Big Band in 2010. He continues to be in demand as a guest artist, leading workshops and master classes at such educational institutions and music clinics as The Juilliard School, Interlochen, the Monk Institute, Eastern Washington State University, Jazz Camp West, Snow College, Centrum and the Brubeck Institute. Green has appeared in eight Monterey Jazz Festival Tours, debuting in the 2008 50th Anniversary Tour at the age of 15 in the Next Generation Jazz Orchestra. He was musical director for the 50th Anniversary Tour in 2008. Drummer Lewis Nash is recognized as one of the foremost brush stylists of

his generation. He grew up in Phoenix, Arizona, and, by the age of 18, he was a first-call sideman for visiting musicians. He moved to New York in 1980 to join Betty Carter’s band. Nash’s versatility has made him one of the most in-demand drummers of the past several decades; recording and touring with Tommy Flanagan, Oscar Peterson, Sonny Rollins, Ray Brown, Gerald Wilson, Horace Silver, Ron Carter, Hank Jones, Benny Carter, Milt Jackson, Art Farmer, McCoy Tyner, Joe Lovano, Christian McBride, Branford Marsalis, Wynton Marsalis, Pat Martino, Clark Terry, Diana Krall, Joe Williams, Nancy Wilson and many others. He has made three recordings as a leader. Nash is also renowned for his passion and dedication to jazz education, fostering the careers of a long list of younger players. He has served as a clinician and educator at schools, workshops and major educational jazz festivals worldwide. In 2012, Jazz in Arizona opened The Nash, a nonprofit, 2,600 square-foot performance space in Phoenix, named in his honor. He has appeared with the Monterey Jazz Festival twice since 2001. DownBeat Magazine called Grammynominated saxophonist Chris Potter “one of the most studied (and copied) saxophonists on the planet.” He is a potent improviser and the youngest musician ever to win Denmark’s Jazzpar Prize. Born in Chicago and raised in Columbia, South Carolina, Potter has recorded 19 albums as a leader for the Criss Cross, Concord, Koch, Emercy, Verve and Storyville labels. As a sideman, Potter has appeared on more than 100 albums with an impressive list of artists that includes Herbie Hancock, John Scofield, the Mingus Big Band, Jim Hall, Dave Douglas, Ray Brown and many others. He has been a regular member of Paul Motian’s Electric Bebop Band, Steely Dan and bassist Dave Holland’s groups, including Holland’s quartet at the Monterey Jazz Festival 50th Anniversary in 2007. Potter’s most recent membership is with Pat Metheny’s Unity Band, Metheny’s first
group in 30 years to feature a saxophonist. Making an appearance with the Unity Band at the 55th Monterey Jazz Festival in 2012, Metheny said: “He is one of the greatest musicians I have ever been around.” Potter has appeared in eight Festivals beginning in 1997. Trumpeter Ambrose Akinmusire was born in Oakland, California, attended Berkeley High School and was a member of the 1999 and 2000 Monterey Jazz Festival High School All-Star Band. At 19, Steve Coleman hired him for a European tour with his Five Elements band. He moved to New York City in 2000 to attend the Manhattan School of Music, playing with Lonnie Plaxico, Stefon Harris, Josh Roseman, Vijay Iyer, Charlie Persip, the Mingus Big Band and the San Francisco Jazz Collective along the way. In 2005, he returned to the West Coast for a master’s degree at the UCLA while simultaneously attending the Thelonious Monk Institute of Jazz, where he studied with Terence Blanchard, Herbie Hancock, Wayne Shorter, Billy Childs and Gary Grant. After graduation, Akinmusire won the Thelonious Monk International Jazz Competition and the Carmine Caruso International Jazz Trumpet Solo Competition in the span of one week. He went on to perform with Steve Coleman, Vijay Iyer, Alan Pasqua, Walter Smith III, Josh Roseman, Esperanza Spalding, Aaron Parks, Jimmy Heath, Jason Moran, Terri Lyne Carrington, Ron Carter, Jason Moran, Wallace Roney, Herbie Hancock, Wayne Shorter, and others. In 2011, Akinmusire released When The Heart Emerges Glistening on Blue Note Records. The New York Times named the album as its top CD of the year. The Los Angeles Times said “Akinmusire sounds less like a rising star than one that was already at great heights and just waiting to be discovered.” He was Monterey’s artist-in-residence in 2012, and has made four appearances at the Festival.

Session 1 themes include Time Travelers, Nature Games and Wild Winter Wonderlands. Session 2 themes include Outdoor Creativity and Spectacular Senses. After Camp themes include the Art of Culture & Legends, Survival Camp, Real or Imagined and Inventions, Flight & Fantasy. Girl Scouts Recognize Outstanding Alumnae and Raise $218,000 More than 300 guests came together during Girl Scouts’ 100th anniversary year to recognize 12 extraordinary local female leaders, all Girl Scout Alumnae, and raise $218,000 for Girl Scouts of Orange County at the Third Annual Celebrate Leadership Gala at the Island Hotel in Newport Beach. As guests approached the Island Hotel, they were greeted by a custom mint green Fiat, fitted appropriately with a Girl Scout sash and decals, provided by Orange Coast Fiat. During the reception, guests nibbled on a variety of marvelous goodies including Grilled Ginger Shrimp with Cucumbers and Wasabi, Smoked Salmon on a Savory Cheese, Crostini with Olive Tapenade and Roma Tomatoes, Miniature Beef Wellingtons with Red Wine Sauce, Baked Brie in Phyllo with Walnuts, and Southwest Chicken Spring Rolls with Cilantro Plum Sauce. They also enjoyed signature Chocolate Mint Martinis rimmed with crushed Girl Scout Thin Mint Cookies, hosted by Blue Ice Vodka. There were more than 100 Silent Auction items available for guests to bid on before heading into the ballroom for a moving program highlighting the dramatic impact of Girl Scouting on the lives of the 12 honorees. Each honoree was matched with a current Orange County Girl Scout through a shared leadership trait, linking these leaders of today with leaders of tomorrow. Each Girl Scout presented her honoree an art canvas that she designed herself to embody the leadership trait they share. The 2012 Celebrate Leadership Honorees were: Victoria Collins, Sophie Hall Cripe, Janet Toll Davidson, Kristina Dodge, Suzanne Huffmon Esber, Tamara Fairbanks, Kathryn Cenci, Judy Koyama, Heidi Miller, Tricia Raymund, Barbara Roberts, and Sudi Shoja. Dinner was delicious with a starter of organic baby greens with chevre, candied pecans, roasted apples and balsamic dressing. The entrée was short rib served on truffle risotto and pan roasted local sea bass served with sweet potato hash and haricot verts. For dessert, guests enjoyed an assortment of mini dessert creations topped by a Girl Scout 100th birthday mint cheese cake. Guests went home with a beautiful 2013 Keepsake Calendar, featuring stunning photographs of the 12 honorees with their partner Girl Scouts. The live auction gave way for some fierce bidding by some, as there was an assortment of exciting items up for grabs; a dinner for four at Disneyland’s Club 33 went for $1,200; a personal golf tournament for 12 at Shady Canyon golf course sold for $2,600; while an 18” strand of Akoya Pearls with diamond rondels from Mikimoto brought in $6,400. There was also a “Lockup and Lunch” - a Personal Tour by Sheriff Hutchens of the Orange County Jail that one lucky winner purchased for $850 and a seven night stay at Las Mananitas Resort in San Jose del Cabo fetched $2,300. A very lucky family also walked away with two First Class Tickets on American Airlines with a 3 night stay at the Walt Disney World Swan and Dolphin Resort at Disney World for $3,700. Funds raised at the Third Annual Celebrate Leadership Gala support Girl Scouts of Orange County’s quality leadership development programs for more than 23,000 Girl Scouts who represent every neighborhood and zip code in Orange County and to recruit, train, and support the more than 10,000 adult volunteers who guide and support them. PACIFIC SYMPHONY LEAGUE’S MAGICAL NIGHT Dressed in snazzy cocktail attire, more than 100 fans of the lighter side of Pacific Symphony’s programming gathered last Friday night to celebrate the opening of the orchestra’s 201213 Pops concert series. Hosted by the Pacific Symphony League, the Pops Opening Night Celebration took place in the newly renovated Center Club and included cocktails, gourmet delicacies and first-class entertainment. During dinner, guests enjoyed a musical performance by Whitney Kaufman, Principal Pops Conductor Richard Kaufman’s vocally gifted daughter, accompanied by pianist Nelson Kole, before heading to the nearby Renée and Henry Segerstrom Concert Hall for a night of Broadway hits. The festive dinner set the mood for the enchanting night of music by the Symphony featuring Alli Mauzey and Julia Murney, two lead singers with powerhouse voices from Broadway’s Tony Award-winning musical, “Wicked.” The pre-concert event—which raised $6,000 for the Symphony’s educational programs (bringing the total over the last five years to $392,214)—was highlighted by a visit from the stars of the concert. Chaired by League member Marion Brockett, the festivities got underway at 5:30 p.m., as guests arrived via a red carpet to mingle and enjoy tasty hors d’oeuvres and “Wicked” cocktails—pink champagne (for Glinda) and vinho verde (for Elphaba)—before being ushered to their tables for an elaborate dinner served under the ambience of a chandelier and candle-lit room. Tables were stylishly decorated with vibrant bouquets of pink roses and purple orchids alongside photos of children from the Symphony’s many music education programs. Guests were greeted by the League’s co-president, Jaye Yaruss, before Symphony President John Forsyte provided an update on the orchestra and also recalled memorable Pops performances, including amusing tales about Bill Medley (the Righteous Brothers) and Ray Charles. Maestro Kaufman then charmed the crowd with tales of past guest artists such as old friend Andy Williams, and also shared exciting details about the Pops season ahead. “I felt the evening was a resounding success,” says Yaruss. “We honored our Friday evening subscribers, brought together patrons from all facets of the Symphony family and celebrated the beginning of our Pops season in style. Of course, a highlight of the evening for me was greeting the wonderful array of guests who came Page 14
out to support the League, Pacific Symphony and Richard Kaufman. Every guest tipped their hat to each by their presence at this League event. To be sure, Chris Hartley and staff of the Center Club did not let us down with the elegant new surroundings, fine cuisine and great service.” Surprise guest—soprano Whitney Kaufman—who for two and a half years was a member of the cast of the national tour of “Mama Mia,” sang a number of songs while accompanied by Kole on the piano; these included Cyndi Lauper’s “Girls Just Want to Have Fun”; ABBA’s “Thank you for the Music”; “Through the Eyes of Love” from “Mary Poppins”; and “But the World Goes ‘Round” from “New York New York.” Kaufman made her symphony debut at age 7 with Pacific Symphony singing in the children’s chorus in the West Coast premiere of music from John Williams’ “Home Alone.” She has been appearing as the principal vocalist in “Disney in Concert” performances around the world since 2009 and now performs in stage productions nationwide. She also frequently appears as a singer and voice-over performer in film and television. “Whitney Kaufman was a true touch of class and a lovely addition to our evening, all the while honoring and delighting her parents and grandparents,” reflects Yaruss. “Having the Divas visit and mingle also added to the excitement and anticipation of the evening, leading up to an extraordinary concert experience. Members of the League were sweetly surprised with long-stemmed roses and pictures with Alli and Julia at the after-concert reception—and it was almost too much icing on the cake! When can we do it again?!” Yaruss adds. Throughout the presentations and entertainment, wine was abundant and dinner was served in several courses, beginning with a goatcheese and candied pecans mixed green salad with honey balsamic vinaigrette and followed by a duo of petit filet mignon and orange roughy with duo sauces, herb risotto and baby vegetables. The meal concluded on a sweet note with strawberry cheesecake and pistachio chocolate mousse. The evening’s chair, Brockett, drew the event to a close by thanking everyone before all departed to enjoy the thrilling, high-energy “Wicked Divas” concert. The dynamic singing duo returned to the stage for “My Heart Will Go On” from “Titanic,” “Over the Rainbow” from “The Wizard of Oz” and a finale featuring songs from “Wicked.” Pacific Symphony League: While members of the League vary in age and background, each shares a passion for music. It is through this passion that League members remain
active volunteers in supporting music education and opera-vocal projects throughout Orange County. Since the League’s creation alongside the Symphony’s inception almost 35 years ago, its members have been volunteering and lending a hand with Symphony programs such as Target Symphony in the Cities, Musical Carnival (part of Family Musical Mornings) and running the Symphony Shop in the concert hall lobby during most performances. In addition to volunteering, the League also plays a significant role in fundraising to support the Symphony’s music education programs. In addition to the altruistic efforts made by its members, the League also hosts events, such as the Symphony’s Pops Opening Night.

Popcorn Trio
Yield: Varies Cheesy Popcorn 6 cups popped popcorn 1 tablespoon melted butter, optional 1 tablespoon nutritional yeast or brewer’s yeast (found at health food stores) 1/2 teaspoon curry powder, optional Caramel Popcorn 6 cups popped popcorn 1/2 cup sugar 1 tablespoon light or dark corn syrup 1 tablespoon water 2 tablespoons butter 1/8 teaspoon salt 1/8 teaspoon vanilla extract Plain Popcorn Cover bottom of 3 to 4-quart pan with thin layer of vegetable oil. Place 3 kernels of popcorn in pan; cover with a loose lid that allows steam to escape, and heat. When kernels pop, pour in enough popcorn to cover bottom of pan, one kernel deep; cover pan and shake to evenly spread oil. Shake as popcorn continues to pop. When popping begins to slow to a few seconds apart, remove pan from stovetop. The heated oil will still pop remaining kernels. Sprinkle lightly with popcorn salt, if desired, and store in an airtight container. Cheesy Popcorn Follow instructions for making Plain Popcorn. When you remove popcorn from heat, transfer popcorn to serving bowl. Pour butter over popcorn and toss. Sprinkle yeast and curry powder, if desired, over popcorn and toss to distribute evenly. Serve immediately or store in an airtight container. Caramel Popcorn Line large baking sheet with lightly buttered foil. In medium saucepan, combine sugar, corn syrup and water and bring to a boil. Cook syrup over medium heat, without stirring, until amber in color; about 6 minutes. Remove from heat and stir in butter, salt and vanilla until blended. Stir in popcorn until coated. Spread caramel corn in a single layer onto buttered foil. Allow to cool before breaking into pieces. Store in an airtight container until serving time.

Holiday Popcorn Snowman
Yield: 10 balls, 5 snowmen (2 balls each) 1 1-pound package large marshmallows 1/4 cup (1/2 stick) butter or margarine 1 teaspoon vanilla extract 10 cups popped popcorn Decorations: sprinkles, licorice, gum drops, cinnamon candies, cookies, etc. Melt marshmallows and butter in a large saucepan. Remove from heat and stir in vanilla. Let stand for 5 minutes. Pour over popcorn and stir. Butter hands well and form popcorn into balls. Decorate as desired.

Yield: 10 trees 10 cups air-popped popcorn 1 10-ounce bag miniature marshmallows 2 tablespoons butter 1 teaspoon vanilla extract Decorating sugar (green, blue)* 1 tube of white frosting (with decorating tip) Assorted small colorful candies, such as sprinkles and miniature silver dragées Place popcorn in large bowl. Place marshmallows and butter in medium saucepan over medium-low heat. Stir until marshmallows are melted and mixture is smooth. Remove from heat. Stir in vanilla extract. Pour mixture over popcorn in bowl. Toss well to coat popcorn evenly. Line baking sheet with foil. Spray hands with nonstick cooking spray, then scoop up about 1 cup of popcorn mixture. Shape mixture into a cone shape, keeping the base flat. This forms the tree. Sprinkle tree with decorating sugar; place tree on baking sheet. Make the rest of the trees. Pipe frosting on trees to make a garland, then decorate them with colorful candies. Serving suggestion: Place each tree on a sugar or gingerbread cookie, and decorate your serving tray with shredded coconut to resemble snow.

Notes: It’s important that this recipe starts with unflavored white popcorn for best color and flavor. *Make your own colored sugar by adding food coloring to sugar, stirring in a bowl or shaking vigorously in a sealed container. Add more food coloring for more intense tones.
Holiday Wreath Popcorn Treats
Yield: 8 5-inch wreaths 3 quarts popped popcorn 4 tablespoons (1/2 stick) butter or margarine 3 cups miniature marshmallows 3 tablespoons (1/2 of a 3-ounce box) lime gelatin dessert mix Decorations: small red candies, jellybeans, red fruit leather, etc. Spray large mixing bowl lightly with cooking spray and place popcorn inside. In medium saucepan, melt butter over low heat. Stir in marshmallows and gelatin dessert powder until marshmallows are melted and mixture is smooth. Pour over popcorn and mix well until coated. Spray hands with cooking spray and press firmly to form into 9-inch logs and then bend to form wreaths. Place wreaths on wax paper. Press candy decorations onto wreath to decorate. Add a ribbon cut from fruit leather. Serve immediately, or wrap individually in plastic wrap for storage.
Gingersnap Popcorn Snack Mix
Yield: 2 quarts 2 quarts popped popcorn Butter flavored cooking spray 1/3 cup granulated sugar substitute 2 teaspoons ground ginger 1/2 teaspoon freshly ground nutmeg 1/4 teaspoon cinnamon 1/4 teaspoon ground cloves 1/8 teaspoon freshly ground black or white pepper Preheat oven to 325°F. Spread popcorn on baking sheet and spray lightly with cooking spray. Combine remaining ingredients in small bowl, and sprinkle evenly over popcorn. Spray again with cooking spray and toss to coat evenly. Bake 7 minutes and serve warm.
