TEMPORARY CLOSURE OF BEACH TRAIL BRIDGE Single day closure of bridge scheduled for May 23rd

On Tuesday, May 23rd the Beach Trail bridge at Mariposa, between West Escalones and El Portal, will be closed for maintenance. The closure will be in effect from 5:00 a.m. until 5:00 p.m. During the closure, the City of San Clemente’s Public Works Department will be performing rust removal and priming the bridge. CITY APPOINTS Lieutenant Mike Peters as NEW CHIEF OF POLICE SERVICES The City of San Clemente is pleased to announce the appointment of Lieutenant Mike Peters to the position of Chief of San Clemente Police Services. Lieutenant Peters has been a member of the Orange County Sheriff’s Department since 1996. Lieutenant Peters is no stranger to San Clemente, he was born and raised in San Clemente; attended Las Palmas Elementary School and Shorecliffs Middle School; and, graduated from San Clemente High School in 1988. Additionally, his father, Fritz Peters, served the City of San Clemente Public Works Department for over 20 years, overseeing the City’s street maintenance program, and he also volunteered with the San Clemente Police Department. Lieutenant Peters has served in patrol operations as a deputy in San Clemente, central jail management, special weapons and tactics, homeland security, SWAT, supervisory roles, administration and budgeting, and field operations. He also holds several instructor/expert certifications in community policing, arrest control techniques, firearms, driver training and more. About the appointment, Lieutenant Peters said, “I will assist the city in continuing with the positive evolution and momentum it has today. The Steps on How to Barbeque Successfully Trying to barbecue can be a difficult task; however, you are definitely going to enjoy the nice food that will be available to you when you cook it all completely the right way that you should have. You not only need to have the right type of steak, but you also need the right kinds of equipment and knowledge. If you are one of many people that has absolutely no idea on how to barbecue, then there are a few things you should know. Grilling barbecue tends to be pretty tough for a couple of people, but in reality, it happens to be very easy. As long as you have the right tools to grilling, you can then easily make perfect barbecue. Simple Tips On How To Barbecue - Properly Marinate The Steak Marinating the steak could take anywhere, from 12 hours or more just for it to have the sauce and ingredients really cooked into the steak. You can marinate it with anything that you choose, and usually a friend or somebody you may know may recommend a certain type of sauces to marinate it with. However, you really need to consider using garlic, coarsely, basil leaves, lemon, vegetable oil, red wine vinegar, and then adding all of that together with your steak. Let it rest under a foil for the night, and then cook it the following day.

- Right Quantity Make sure that you use just the ingredients for the sauce. Don’t forget to have a nice set of steaks, and have enough for everybody at the party. Just keeping in mind the right quantity can help you out a lot. What Do You Need To Make The Perfect Barbecue? - Barbecue Side Dishes Some of the best barbecue side dishes are Cajun Deveiled Eggs, Baked Sweet Potatoe Fries, and grilled Vegetable Kabobs. You can use whatever you want as a side dish. Your overall goal should be to use something that everybody is going to like, not to mention be made in a good way. If you use the most popular side dish but you make it the wrong way, then you need to use something else. - Clean Utensils Make sure that you use the right utensils that are also very clean. Whether a clean spatula or a clean grill, make sure that you clean it all up completely. If it is not all that clean, then you may make the mistake of dirty or soapy types of steak. Aside from just clean utensils, you really need a good type of grill that is still up to date. Keep all of your ingredients near you and get ready to start cooking. Helpful Grilling Tips

- Choose The Right Cut Of Meat Did you know that some cuts of meat are better for grilling than others? Many people like to grill strip steaks, but it is all a matter of opinion. It actually depends on you, as there are many types of meat, so you should try to experiment. Don’t just try one type of steak like Filet Mignon without trying the others. See what tastes the best, is the easiest to cook, and also the most affordable. - Don’t Touch It Avoid touching your steak while it is cooking. Try to use your spatula only a few times, and then flip it when you notice that it is starting to burn. Don’t touch it too much while it is still cooking. - Use Charcoal Using the ordinary gas from the grill could add that gassy type of taste to your steak. Try using a nice hardwood charcoal, similar to what is used in the chimneys at home. These can give that natural smell and taste without that aura of gas being inside of the steak.

- Room Temperature If you would like for your food to smell and taste great, keep them at room temperature before you plan on cooking them. The fridge may be a good place to keep them during the marinating proccess, but once the morning rises, keeping it out in a safe place where no bugs can get inside is a great way to keep them cool right before they get cooked. These tips are definitely going to help you on becoming the next barbecue master. While it does take time to churn out steak repeatedly with no troubles, it is definitely going to be difficult to be good at it after only one day. This is why you really need to consider just learning and having fun. Keep all of the tips above for getting the perfect steak that everybody is going to enjoy eating.

FIVE FAMOUS CHARACTERS WILL CHARM THE CHILDREN AT THE 59th ANNUAL GARDEN GROVE STRAWBERRY FESTIVAL Strawberry Festival Will Be Honoring Jack Wallin A local Volunteer Five famous characters will be on hand to charm the children at the 59th annual Garden Grove Strawberry Festival on May 28th, 2017. Knott’s Berry Farms’ Snoopy will return for his eighth year to thrill the special needs families on Special Kids Day and will return to ride in the Saturday, May 28th parade. This will be the second year the festival parade will have two Minions from Despicable Me and Wiley the Wolf from Great Wolf Lodge. The new addition is the popular Poop Daddy from the new soon-to-be-released Emoji movie.

Instead of riding in the parade, this year the two Minions will be on festival grounds from 11 a.m. to 3 p.m. near the Courtyard Center ready to have their photos taken with kids of all ages. The festival will be held Memorial Day Weekend Friday, May 26th through Monday, May 29th, 2017. Friday hours are 1:00 p.m. to 10 p.m.; Saturday and Sunday from 10 a.m. to 10 p.m. and Monday from 10 a.m. to 9 p.m. Admission is free. The four-day event, which is the second largest city festival in the Western United States, will be held at the Village Green between Main Street and Euclid Avenue in downtown Garden Grove. Last year’s attendance was over 300,000. In his late 80s, Jack Wallin has served continuously on the festival board for 59 years. He says he has remained on the board because he likes the people and because it is for a good cause: helping local charities. As the board member in charge of grounds and rides, Jack spends two solid weeks every year setting up the festival. He coordinates layout

Donations to date have topped $6.5 million. “I’m honored to have been part of an organization that has done so much good for the community,” he says, “last year raising over $150,000 for local charities, student scholarships and youth projects.” The festival also treats over 2,000 special needs kids to a day of free rides and food. In addition, he works at Kiwanisland tending the grounds and handling reservations. He has served the Boys and Girls Club of Garden Grove, the Soroptimist Club and others, and has been honored often for his outstanding community service, including Cypress College Americana Citizen of the Year from Garden Grove, Garden Grove Man of the Year, Garden Grove Kiwanian of the Year, and Garden Grove Elks Lodge Citizen of the Year. T he L agu n a P layhouse Gala Raises Record $600,000 Photos by: Patrick and Peggy O’Donnell The Laguna Playhouse annual fundraising gala was held at the Island Hotel in Newport Beach with the theme Theatre Changes Lives. Around 381 supporters, guests and VIP’s raised a record $600,000 in support of the Playhouse’s mission to enrich lives through the magic of live theatre, to provide educational opportunities for children and adults, and to create experiences that stimulate cultural and social interaction and inspire our community. Proceeds from the event help cover the operating costs of the 96-year old icon, one of the oldest continuing operating theaters west of the Mississippi. Within the funds raised that evening, $90,000 was raised for the Suzanne and James Mellor Laguna Playhouse Tribute Fund, which will provide theatre experiences for youth by providing tickets to performances and to cover the cost of transporting youth groups to the theatre. Arriving guests were greeted to live piano music. Highlights from the evening included: a VIP Reception sponsored by First American Trust featuring hors d’ouevres and live music, the critically acclaimed Laguna Playhouse Youth Theatre welcoming guests with a special musical presentation of “Consider Yourself” from the play “Oliver”. The celebratory event was co-chaired by Kathryn Burton Gray and Laguna Playhouse Trustee Glenn E. Gray who led this great success with the most amount of money raised at a Playhouse gala in history. The event was sold out three weeks before the event date with special accommodations being made to add in an extra sixty attendees. Gray welcomed celebrated Orange County community and business leaders with a champagne toast to 96 successful theatrical years, and honoring Suzanne and James Mellor for their decades of philanthropy and leadership for arts in Laguna Beach. Suzanne’s touching remarks recalled how, growing up in Detroit at age 10, her sanctuary was hearing the Detroit Symphony perform. Jim noted, “We give and we also get, with a big multiplier. We feel privileged to serve and be part of the Playhouse. It’s especially rewarding to be honored for something you love to do.” The event featured a Nolet’s Bar where guests enjoyed signature Nolet cocktails. An amazing array of silent and live auction items ranging from Art & Jewelry, Wine and Spirits, Chef’s Tables and luxurious travel were available for bid throughout the night. The opportunity drawing sponsor, Winston’s Crown Jewelers, contributed three stunning pieces of jewelry and 150 boxes filled with a piece of jewelry or a Winston’s Crown Jewelers gift certificate. Barbecue Sauce, an American Flavor Tradition By Mike Thayer It’s grilling season, BBQ season, it’s time to fire up the smoker, the gas grill, the portable Weber, rub two sticks together, it doesn’t matter - put some meat on the fire! And what is the most popular accompaniment for a plethora of meats cooked in the great outdoors? No silly, not ketchup, its barbecue sauce! The person who invented BBQ sauce is unknown, but whoever he was, he was a genius! References to the sauce started appearing in 17th century English and French literature about the formation of the American colonies. The rest is history and boy has BBQ sauce been kicked up a notch with all kinds of flavors and varieties created over the last 400+ years! A traditional flavoring for pork, beef and chicken, sauce can range from watery to thick, from being heavy on the vinegar to being loaded with spice. Heck, there’s even mustard and mayonnaise based BBQ sauces. It’s a regional thing, there’s Carolina BBQ, Tennessee whiskey BBQ, Texas BBQ and the favorite of yours truly, Kansas City BBQ. What is your favorite sauce? Kansas City BBQ style: This is

a thick, rich tomato based sauce that’s got some spice but is heavier on the sweet. Tomato, brown sugar and vinegar are the base ingredients. It doesn’t really penetrate the meat and is more like a frosting than a marinade. It glazes REAL nice though when put on the meat about 10 minutes before pulling off the grill, a beautiful finish. This is the most popular style of sauce in the U.S. and what you see the most of in the bottled varieties on the grocery store shelf. Be careful with the store bought stuff though! The high sugar content of the “ready” varieties tend to burn real quick so keep an eye on your dinner. Texas BBQ style: This has more kick than Kansas City style. It has less tomato, less sugar and a lot more spice such as cumin, black pepper, chili pepper, and even chili powder. Meat drippings and hot sauce - Tabasco - are always a part of this style and fresh veggies like green bell pepper and onion are often added. East Carolina mop: This simple but tasty sauce was pioneered by the African slaves of Scottish settlers in the region. It’s a straight forward combination of hot pepper flakes, ground black pepper and vinegar. The

reason it’s called a mop is because this thin concoction is literally mopped - basted - on the meat throughout the cooking process, the flavor really penetrates! With little if any sugar and no tomato in this style, East Carolina mop is a sharp contrast to other sauces. Western Carolina dip: From the hilly areas of North Carolina, most American sauces can trace their roots to this one. The recipe usually consists of a base of black pepper blended with tomato paste or tomato sauce, or ketchup, with vinegar added to balance it out. Like the East Carolina mop, this is a thin sauce that is mopped on the meat throughout the cooking process. South Carolina mustard style: This is a whole new BBQ sauce experience. Early German settlers developed this one and while good on chicken, its tailor made for pork. A little thicker than its Carolina cousin sauces, a simple recipe consists of mustard, vinegar, spices and a little sugar. Fantastic on a pulled pork sandwich topped with coleslaw. Tennessee Whiskey style: Made

famous by the Jack Daniel’s World Championship Barbecue Invitational, this style has become so popular it now deserves its own category. This combination of vinegar, whiskey, molasses, spices, and Worcestershire sauce gives BBQ a whole new flavor profile. And BBQ sauce isn’t just for pork, beef or chicken anymore! Try the Western Carolina dip on grilled shrimp or fish. Put your favorite style on a pizza instead of traditional tomato sauce. If lamb isn’t your favorite, try it again with some Tennessee Whiskey sauce! And here’s a personal side dish favorite, toss some grilled cauliflower florets, baby carrots, baby portabella mushrooms and bacon bits together with some Kansas City style sauce. Delicious! Get your tongs out!

PACIFIC SYMPHONY RENEWS CONTRACT WITH POPULAR ASSISTANT CONDUCTOR ROGER KALIA FOR TWO MORE YEARS Pacific Symphony has extended the contract of its assistant conductor, Roger Kalia, for two additional years, providing for him to continue in his current role through June 2019. It’s been two years since the Symphony first announced Kalia as its second in command (under Music Director Carl St.Clair), with his position beginning at the start of the 2015-16 season. In addition to assisting St.Clair with conducting duties, Kalia has played— and will continue to play—a vital role in the Symphony’s education initiatives. These include programming and conducting the Farmers & Merchants Bank Family Musical Mornings series, which introduces children ages 5-11 (and beyond) to the exciting world of orchestral music through engaging and educational concerts. “I am absolutely thrilled to continue my work as assistant conductor with Pacific Symphony for the next two years,” says Kalia. “Working with Maestro St.Clair, the staff and the wonderful musicians has been inspiring and memorable. I have already had the privilege of meeting and working with incredible people across Orange County, and I’m looking forward to being part of the many exciting future concerts and projects. Just having this opportunity is extraordinary—and a big deal! I am so grateful for being part of this very special organization.” “Roger has made a tremendous musical contribution to Pacific Symphony,” says Maestro St.Clair. “In very short order, he gained the respect of the musicians and also the staff with whom he works so very closely. Offering Roger a two-year extension will give all of us some important stability for the near future. He is most deserving!” Kalia will also continue in his role as music director of Pacific Symphony Youth Orchestra (PSYO), a premier training orchestra for instrumentalists in grades 9-12, preparing them for a three-concert series each season. Among his many accomplishments with the Symphony thus far, Kalia led the youth orchestra on its highly successful 10-day international tour to China in June 2016. Kalia remarks: “I will never forget the Youth Orchestra’s China tour last summer, which marked the orchestra’s second international tour and first to Asia. I am beyond thrilled to continue my work with the wonderful young musicians of PSYO, as we reach for new heights as an Page 14

orchestra over these next two years.” “Roger is doing a wonderful job with our PSYO,” says St.Clair. “He keenly understands his role in helping these young and very talented musicians mature and develop. He shares his love and passion for music with them, inspiring and motivating them beyond their years.” Additionally, Kalia’s duties will include welcoming more than 12,000 elementary school children to the concert hall at the end of each of the next two school years for the Class Act Youth Concerts, which annually conclude a year of music lessons and performances in Orange County schools given by Symphony musicians. “One of the most enjoyable and important aspects of my job has been connecting with our younger audiences through the Family Musical Mornings and Class Act Youth concerts,” says Kalia. “Having the opportunity to expose and introduce them to Pacific Symphony and orchestral music has been extremely rewarding for me as a conductor. I always enjoy meeting these wonderful young people and their parents in the lobby and seeing the joy and excitement on their faces after our concerts.” With the end of the Symphony’s 2016-17 season concluding in June, Kalia can next be seen on the stage of the Renée and Henry Segerstrom Concert Hall in October 2017, when he will lead the annual Halloween Family Musical Mornings concert. “As with all of our previous assistant conductors, I have been of the same thinking—one year at a time, but not more than four years in this post,” notes St.Clair. “Having been an assistant conductor of the Boston Symphony, my goal is to treat our assistant conductors as I was groomed and mentored. I try to make sure and create an environment in which they can continue to grow and develop as musicians, conductors and future music directors. Roger embraces all of his opportunities and makes the most out of them. Everyone is a winner!” Though only 30 years old when he first arrived in Orange County, Kalia brought with him a great deal of experience as a conductor and educator, having served as Charlotte Symphony’s assistant conductor since September 2013. The maestro led a variety of performances for the

Pacific Symphony assistant conductor, Roger Kalia Charlotte Symphony including the family, education, outreach and parks concerts, and he also collaborated frequently with the Charlotte Ballet. He’s been praised for conducting with “vigor” and “commitment” (Charlotte Observer) and for bringing a “fresh view to classical music” (The Republic). Kalia also completed three years as music director of the Young Musicians Foundation (YMF) Debut Orchestra in Los Angeles. Winner of YMF’s 2012 National Conductor Search, Kalia follows in the footsteps of such illustrious conductors as Michael Tilson Thomas, André Previn and Myung-Whun Chung. Kalia has proven to be a prolific leader in the music world through his appearances with orchestras across North America and Europe, as well as his innovative programming choices. Highlights from his time with YMF Debut Orchestra include a production of Stravinsky’s “The Soldier’s Tale” with actors Jack Black and Michael Lerner at the Los Angeles County Museum of Art, a unique concert titled “Gamer Jams: Music Behind the Screen” featuring music by leading video game composers at the Ford Theater, and the orchestra’s debut

performance at the Cathedral of Our Lady of Angels “Virgin of Guadalupe” Celebration, which was televised and streamed worldwide. He has worked with many famous composers, commissioning and programming more than 100 works as an advocate for contemporary classical music. This fascination for the advancement of music in today’s world along with the reverence for the old masterpieces is expressed in Kalia’s co-founding and music directorship of the Lake George Music Festival in New York, which serves as a meeting point for composers and musicians from across the nation. Kalia’s many praiseworthy experiences are further bolstered by his acceptance of the BMI/Lionel Newman Conducting Scholarship and YMF Conducting Grant. He completed his work as a doctoral conducting fellow at Indiana University. “I am so grateful and honored to be part of an organization that puts so much priority on music education and I look forward to inspiring future generations of musicians and classical music listeners in the years to come,” concludes Kalia.

Keep your teen athlete fueled with these 4 vital tips High school can be intense, but being a student athlete can intensify expectations. As the start of spring sports approaches, the stakes are even higher for your student to maintain the success they had first semester. There are practices, matches and conference finals that have to fit in with exams and semester-long projects. Being a standout in the classroom and on the field requires expert-level planning and execution. That’s where parents play a huge role in helping their teen athletes keep it all in balance. Here are four easy tips to help you ensure that your teen is ready for a great season, on and off the field. Food: Allison Maurer - a sports dietitian and Gatorade consultant who has worked with high school and collegiate athletes - says, “The important thing to remember is that food is fuel. It gives athletes the energy they need to perform and also helps them recover. When planning your athletes’ meals, look for whole food sources that provide high-quality fats, lean proteins and complex carbohydrates. Talk to your athlete about his or her fuel strategy before, during and after practices and games, and offer support by providing healthy, energy rich snacks.”

Hydration: When exercising hard, the body cools itself through sweat. If body mass is reduced by about 2 percent, which would be 3 pounds of water weight loss in a 150-pound athlete, it can negatively affect performance, according to the National Athletic Trainers’ Association’s (NATA) Position Statement on Fluid Replacement for Athletes. “Athletes lose more than water in sweat, so it’s important that they take their hydration seriously since it can impact performance,” Maurer says. “There are a number of products to meet an athlete’s hydration and fueling preferences. So, help your teen come up with a strategy to power down an hour or so before bedtime in order to prepare their minds for a night of restorative sleep.
