Celebrate Dad with Grilling and Golf This year for Father’s Day, skip the tacky tie and 6 tablespoons diced red onion give dad something he truly wants – quality time 3 garlic cloves, minced with the kids who gave him such an honorable 3 tablespoons lemon juice title. Plan an intimate family gathering with all his 1 tablespoon olive oil favorite foods and a few special touches that reflect 1/4 teaspoon ground thyme his other passions in life, such as golf. Pepper to taste Let dad savor some grilled goodness (and a 1 pound boned, lean pork chop, cut into healthy dose of antioxidants) with colorful fruit and 1-inch cubes (approximately 38-40 pieces) veggie kabobs. Healthy, hydrating watermelon is 32 cubes watermelon (1 inch each), plus extra the star ingredient of these colorful skewers, which for garnish if desired also include marinated chunks of pork. 16-24 zucchini rounds (1/2 inch) Add a low-calorie, fat-free side by serving 16 pineapple chunks, fresh or watermelon balls in a fun golf ball-shaped vessel canned (1 inch each) carved from a watermelon rind. 24 yellow or orange peppers For more recipes and carving ideas using chunks (1 inch each, approximately versatile watermelon, visit www.watermelon.org. 3-4 peppers total) Pork and Watermelon Kabobs Cooking spray Servings: 8 Sesame seeds for garnish 6 tablespoons brown sugar Combine sugar, soy sauce, onion, garlic, lemon 6 tablespoons soy sauce juice, olive oil, thyme and pepper in mixing bowl. Pour into resealable bag and add pork pieces. Seal bag, mix thoroughly and refrigerate for at least 1 hour, turning bag periodically. Remove pork from bag and reserve marinade. Thread 5 pork pieces, 4 watermelon cubes, 2-3 zucchini rounds, 2 pineapple chunks and 3 peppers on each of 8 skewers, alternating the order. Spray cooking surface on heated grill and place kebobs on grill. Grill for 12-15 minutes, or until done, turning and basting frequently with reserved marinade. Garnish with sesame seeds and chunks of watermelon. Golf Ball Serving Bowl Wash watermelon under cool running water and pat dry. On cutting board, place watermelon on side and cut off 1/4-inch to 1/2-inch from stem end, being careful not to cut too deep into white part of rind.

This will provide sturdy base. Using paring knife, cut a 3- to 4-inch round circle in top of watermelon. Use melon baller to make shallow round divots into rind of watermelon to mimic dimples in golf ball. Next, use kitchen knife to peel thin layers of rind off to expose white underneath, being careful not to cut too deep or red flesh will be exposed. Try to get as much of green rind off so it will resemble a white golf ball. Hollow out watermelon with spoon or scoop. Place on tray and add watermelon balls to serve.

CITY SEEKS APPLICANTS FOR VACANCIES ON CITY COMMISSIONS AND COMMITTEES Have you ever thought about giving back to your community through service on one of the City’s Commissions or Committees? The City Clerk’s Office will accept applications for the following City service opportunities: o Planning Commission – 4 vacancies for terms to expire June 30, 2019. The Planning Commission advises the Council on matters relating to the General Plan, zoning, Specific Plans, subdivisions and other types of land use issues. The Commission also reviews specific applications for conditional use permits, variances, site plan reviews, architectural issues and signs. The Commissioners receive $110 per regular meeting, not to exceed $220 per month. o Beaches, Parks and Recreation Commission – 4 vacancies for terms to expire June 30, 2019. The Beaches, Parks and Recreation Commission advises the City Council on matters pertaining to the planning, development and maintenance of parks, recreational facilities, parkways, medians and street trees. Therefore, access to Marriage and Passport Services on the 2nd floor of the Old County Courthouse during this time period will be limited. This past Saturday, June 3rd, Clerk-Recorder Hugh Nguyen hosted his first Passport Day at the department’s South County Branch Office in Laguna Hills. Staff processed 104 passport applications and took 75 passport photos. Those numbers far exceed the number of passport applications and photos processed during a normal business day. “With kids out of school and vacations planned, now is the time to get your passport,” said ClerkRecorder Hugh Nguyen. “By opening on a Saturday, we are trying to make it easier for busy families and individuals to take advantage of our

services.” This was the first Passport Day hosted by Clerk-Recorder Hugh Nguyen. The department looks forward to hosting future dates to better serve the community and increase access to these important services. SATURDAY HOURS PLANNED FOR JUNE 24 The Clerk-Recorder Department will once again open its doors to the public on June 24 for its once-a-month Saturday hours. The department’s branch offices in Fullerton and Laguna Hills as well as the Old County Courthouse in Santa Ana, will be open from 10 am to 3 pm. Customers will be able to obtain marriage licenses, have marriage ceremonies performed, submit passport applications, purchase passport photos and obtain vital and official records. The Orange County Archives will also be open from 10 am to 3 pm. The Archives are located in the basement of the Old County Courthouse in Santa Ana. The history of father ’s day and any traditional present to fathers.

Father’s Day was founded in 1910 by Sonora Smart Dodd. Its first celebration was in Spokane, Washington on June 19, 1910. Her father, the Civil War veteran William Jackson Smart, was a single parent who reared his six children in Spokane, Washington. After hearing a sermon about Jarvis’ Mother’s Day in 1909, she told her pastor that fathers should have a

similar holiday honoring them. Although she initially suggested June 5, her father’s birthday, the pastors hadn’t enough time to prepare their sermons, and the celebration was deferred to the third Sunday of June. It didn’t have much success initially. In the 1920s, Dodd stopped promoting the celebration because she was studying in the Art Institute

of Chicago, and it faded into relative obscurity, even in Spokane. In the 1930s Dodd returned to Spokane and started promoting the celebration again, raising awareness at a national level. She had the help of those trade groups that would benefit most from the holiday, for example the manufacturers of ties, tobacco pipes,

Since 1938 she had the help of the Father’s Day Council, founded by the New York Associated Men’s Wear Retailers to consolidate and systematize the commercial promotion A bill to accord national recognition of the holiday was introduced in Congress in 1913. In 1916, President Woodrow Wilson went to Spokane to speak in a Father’s Day celebration and wanted to make it official, but Congress resisted, fearing that it would become commercialized. US President Calvin Coolidge recommended in 1924 that the day be observed by the nation, but stopped short of issuing a national proclamation. Two earlier attempts to formally recognize the holiday had been defeated by Congress. In 1957, Maine Senator Margaret Chase Smith wrote a proposal accusing Congress of ignoring fathers for 40 years while honoring mothers, thus “[singling] out just one of our two parents”. In 1966, President Lyndon B. Johnson issued the first presidential proclamation honoring fathers, designating the third Sunday in June as Father’s Day. Six years later, the day was made a permanent national holiday when President Richard Nixon signed it into law in 1972.

$1.5 Million Raised at Roaring ‘20’s Themed Gala for Pacific Symphony PHOTO CREDIT: Ann Chatillon Glitz, glamour and decadence—it was the cat’s pajamas and the bee’s knees all rolled into one! More than 430 guests roared their way back to The Jazz Age for a night of flappers and speakeasies to celebrate Pacific Symphony’s 2017 Gala! Tassels flew and knees knocked as the Charleston became the rage again and Gala attendees learned first hand why the 1920s were called “roaring”! The exuberant, freewheeling popular culture of the decade came alive with a thematic evening that included a stylish reception, a ritzy gourmet dinner and sensational entertainment by a daring aerialist, Symphony musicians and the Jazz Age sounds of JT & Friends. Tunes such as “Sunny Side of the Street,” “Blue Skies” and “Bill Baily” set the tone, as the evening proved to be a rip-roaring success—netting more than $1.5 million for the Symphony’s artistic and education programs! Chaired by last year’s gala co-chair, Symphony Board Member Ginny Davies, this swanky event took place at the Hotel Irvine. Along with the gala committee, Davies created a lavish evening that sparkled with festive, good-natured fun—recalling a time at the end of World War I when a new sense of prosperity and freedom emerged and life picked up momentum. “We are thrilled that the evening was a success, bringing in much needed funds to support Pacific Symphony’s activities in the community. The roaring ’20s were the inspiration for the ambience and all the energy. Guests enjoyed having time to relax and just be,” says Davies. The evening’s guests arrived at 5 p.m.—gussied up and looking like they’d stepped out of an F. Scott Fitzgerald novel—passing by a row of stunning vintage cars before finding themselves in the midst of a hotsy totsy speakeasy (an illicit establishment that sold “hooch” during the 1920s when Prohibition was in full swing). They were a mere Lindy hop away from a night they would never forget! Inside, the speakeasy dazzled with bouquets of red roses and gold leaf, and six stunning models in gold floor-length art-deco gowns added to the ambience. Guests enjoyed a little “giggle water”—either from the gold, towering eight-level champagne fountain that bubbled and fizzed (adorned at the top with a beautiful live flapper), perfect for picture taking; or from the 1920s-era selection of cocktails, such as the Side Car and Mary Pickford. Don’t forget the “swizzle stick”! Guests also kicked back in the lounge area, where they were entertained by a spiffy band, with a singer and dancers, while others tried their luck in the casino, where gaming table were hopping with roulette, blackjack and craps. A giant paper moon provided another key photo op! As the reception drew to a close, guests were ushered into the grand ballroom, decked out in opulent art-deco décor glistening in shades of white and gold. Guests half expected Jay Gatsby to greet them! Dinner, created by the hotel’s Executive Chef, Michael Beck, featured cuisine reminiscent of the 1920s—with velvety cauliflower soup, cabernet poached-pear salad, sumptuous filet mignon (and lobster tail for VIPs!), plus basil-whipped potatoes with asparagus, tomatoes and peppercorn brandy sauce, among the mouth-watering delights. Following a greeting from Symphony President John Forsyte and Music Director Carl St.Clair, four Symphony musicians—Joseph Morris (clarinet), Paul Manaster (violin), Meredith Crawford (viola) and Timothy Landauer (cello)—performed Haydn’s Clarinet Quartet and a Gambaro Clarinet Quartet. Then, Symphony cellist Laszlo Mezo and four Pacific Symphony Youth Ensembles members (all cellists) delighted the rapt audiences with Mancini’s “Pink Panther” and a little Schubert! As if that wasn’t enough, anyone wearing socks had them knocked off when the band played “St. Louis Blues,” as a sultry, jaw-dropping aerial act took place high overhead, before guests were treated to more jazzy tunes by JT & Friends, courtesy of Symphony supporter and good friend, John Tu of Kingston Technology. Cannon bursts of confetti kept the festivities lively, even as the spectacular evening wrapped up. Before departing, guests made sure to visit the 20s-era candy bar and were sent home with Hershey Bars that read: “Save the Date for Gala March 3, 2018”!! Page 12

Do ’s and don’ts of shopping for dads and grads Father’s Day and graduations are coming up, and that means you’ll have to think of appropriate gifts for these heralded champions. You don’t need to spend a fortune to make gift recipients happy, all you do need to do is put some thought into their presents. A few tips and tricks will help you pick out a gift the recipient is sure to love. Here are some do’s and don’ts for shopping for dads and grads: Do: * Know what Dad enjoys. Does he like to cook? To read? Enjoy a specific sports team? It’s easier to buy a gift he’ll enjoy when you tailor it to his tastes. * Consider giving your grad cash. Whether he or she is graduating from high school or college, there will be late-night pizza needs that pop up, and that money is sure to come in handy. * Check your area for unique experiences. Being a tourist in your hometown can be easier than you think - whether it’s a trip to a local street fair, a specialty beer tasting at nearby watering hole, or even an afternoon at the ball game, sometimes sharing the experience can be the best gift.

* Spread your gift out through the whole year with a subscription to Netflix for Dad’s movie obsession, Hulu Plus for TV-lovers or Pandora for your grad with a music library that rivals Billboard’s Hot 100.- Almost all online streaming devices from TVs to Blu-ray players and even a sound bar from LG can give him access to his subscription. *Grads would love a place to plug in their music, and a docking station is perfect for everything from visiting a friend’s dorm room to just lounging around the apartment. Just because you think Dad should start exercising, doesn’t mean he shares your enthusiasm - and you’re implying he needs to lose weight (not what he wants to hear).

* Skimp on technology. It changes quickly - that’s why stores have those clearance tables. No need to break the bank, but don’t buy something that’s outdated the moment you walk out of the store. Third to go double-clear, Ramar held onto the lead with a time of 37.08, even as three more combinations finished fault-free. As an amateur rider, this class is her first $25,000 win. the summer, FEI course designer Anderson Lima of Brazil designed a solid 1.40m track that tested riders over sixteen efforts. Rails fell throughout the course, though the oxer-vertical combination at fences 7A and B heading away from the back gate fell nearly ten times. As Lima predicted, time proved to be a factor in the first round with fourteen of 37 competitors incurring time faults,

some of whom would otherwise have been clear. Fourteen riders advanced to the jump-off where Ramar’s slick turns and smart decisions on course gave her the win. “I thought it was a friendly track but I knew it was going to be a race in the jump-off,” she explained. “Everyone was putting nine steps from one to two in the jump-off, and I knew that if I put eight steps that I would have an edge right out of the gate. I knew that it would also enable me to turn back faster to fence three.” Ramar, who trains with Mariano Alario, joked about simply trying to stay on as her horse put great effort into each jump. Her adaptability between fences proved to be the winning strategy as she decided to balance and add a stride to the last fence in order to ensure a doubleclear finish. Along with the blue ribbon, Ramar earned a SmartPak cooler, an engraved Blenheim pewter, and a pair of Roeckl Sports gloves. The win marks Mr. Harrison’s first grand prix victory. The talented jumper was named after and bred by Hunter Harrison, who breeds McLain

Ward’s “HH” horses. Ramar imported him last year from Europe and plans to continue competing in grand prix classes with him this week and going forward.
