Vol. 8, No. 2 2017 21
PUBLISHERS’ LETTER If you have never really considered what an interior designer does, take a close look at the two whole house designs featured in this issue of Annapolis Home. The designers of these homes have perfected their craft. It’s all in the colors, compositions, textures, patterns, light and overall flow. Take a close look also at the architecture and custom building, where craftsmanship reigns, especially in the historic Gibson Island home with its elegant new addition built with many reclaimed materials. The exceptional skill a designer can bring to a project is also evident in the kitchen remodel featured in this issue. It’s a high design, hi-tech kitchen that is perfect for the homeowner who loves to cook and entertain. We are excited to publish the first of a series of articles landscape architect Kevin Campion is writing for Annapolis Home. His work is devoted to the Chesapeake Bay and he is deeply invested in its health and preservation. We hope you enjoy all the stories in this issue, including our critic’s restaurant review. When we write a review, we visit the restaurant anonymously so that we can provide you with an impartial assessment. Enjoy reading and hello spring!

The Whitney Biennial prides itself on being the longest running survey of contemporary art in the United States. I have been going to the Biennial for more than 25 years. You can expect to see work by emerging artists you have never heard of before, and others that have an established reputation. Some of the new art proves to be longlasting; some is a provocative flash-in-the pan. But it is always a great way to get a feel for the contemporary art that is being produced in this country. The show at the Whitney Museum of American Art in New York runs through June 11, 2017. For more information, visit whitney.org.
2
The Mitchell Gallery at St. John’s College is an excellent resource for art exhibitions and educational and travel programs. The gallery presents exhibitions by international and local artists on both historical and contemporary art. The current exhibition, “The Fantastic World of Ronald Markman: A Mini-Retrospective,” runs through April 23, 2017. As the only art museum in Annapolis, it will continue to thrive if the community supports it. You can do so by visiting the Mitchell Gallery and joining its membership. Learn more at sjc.edu.
3
The Annapolis Book Festival at The Key School is one of the events that makes Annapolis such an extraordinary place to live. As always the festival features major authors of our time and events designed for the entire family, including children’s activities, live music, refreshments and new and used book sales. The festival will be held on Saturday, April 8, 2017, from 10 a.m. to 4 p.m. See the announcement on page 74 of this issue. For a list of authors and events, visit keyschool.org.

The Severna Park Community Center is an important resource for those living in and around Severna Park. They offer preschool programs, Masters swimming and dance classes, and provide space for everything from the Annapolis Quilt Guild to the Ping Pong Club. Annapolis Home and Looking Good magazines are pleased to be sponsors of the SPCC’s fundraising gala this year on Saturday, April 8, 2017, at the Chartwell Country Club. See the gala invitation on page 78 of this issue. To learn more about the community center and to purchase tickets, go to spcommunitycenter.org.

ANNAPOLIS HOME
Gibson Island, one of the Chesapeake Bay’s crown jewels, remains an almost perfect model of the early-twentieth century planned recreational community. It was designed in the 1920s by the renowned Olmsted Brothers, who also participated in the 1906 re-design of Washington, D.C. and, closer to home, the Wardour section of Annapolis. Their father was the eminent landscape architect Frederick Law Olmsted best known for his creation of Central Park. The gated island, filled with meandering paved paths, has around two hundred private dwellings, one nine-hole golf course, and 7 acres of scenic shoreline. Everyone knows of everyone else, and also who lives in what house. One of its grandest homes, a European-style 1920s waterfront structure distinguished by its hexagonal turret, needed a suitable addition. “How does one make a new addition seem almost a hundred years old? This was the project’s greatest challenge,” says Raymond Gauthier, president of Lynbrook of Annapolis. The team in charge of creating the addition included interior designer Elizabeth Reich of Jenkins Baer Associates and architect Jonathan Rivera, who notes “This home in particular might be one of the last ones that reflects the grandeur of the original plan laid out in the early 1900s.” The homeowners, who had previously worked with both Reich and Gauthier, are empty nesters; they wanted to build an addition to their home to accommodate their grown children who like to visit with their families. “Everyone loves spending their holidays on Gibson Island. Building the addition they fondly call the ‘Pool House’ was a way to make that possible,” Reich adds. Originally, the intent was to build a freestanding cottage that opened onto the home’s swimming pool, but Rivera quickly established that wasn’t legally possible. The solution was to build an addition that connected to the main house via a hallway. “It was very important to the homeowners to have the addition look authentic, for it to emulate the vernacular and the shapes of the existing structure, including its arched windows, and its stucco and brick finishes,” says Rivera. “We worked hard to get the addition to look right,” adds Gauthier. “We created several brick and stucco samples to achieve the correct palette and finish. We even sourced reclaimed graduated slate shingles to match exactly those on the home’s original roof.”

The furnishings have low profiles, so as not to block the views of the water that surrounds the addition. For spatial definition on the open floor plan, the ceilings above the kitchen and living area have wood beams, and those above the sunroom are planked in cerused oak.
Vol. 8, No. 2 2017 29
Thick-edged Black Calacatta marble was handpicked for the kitchen’s countertop, rangebacksplash and eat-in island.
The dormer windows also help visually link the addition to the main house. “The dormers are interesting because they integrate with the wall below,” says Gauthier. “Usually you see a dormer and it has a strip of roof running across its face. If you look at this house, you see that the front wall of the dormer is integrated with the wall below … it’s a very European detail.” Behind the 1920s façade is an interior with a modern sensibility. Reich conceived of an open plan for the main floor, with a kitchen, living and sunroom areas, all facing the water. “I chose a serene off-white (Ralph Lauren’s Plaster White) for the walls and trim throughout for continuity, but also because I wanted the organic materials we selected, which have a lot of character, to really stand out,” says Reich. Thick-edged Black Calacatta marble—“It had great movement,” says Reich—was handpicked for the kitchen’s countertop, range-backsplash and eat-in island. It is paired with cerused oak cabinetry and a sculptural custom hood. The hardware and triple light pendants are of a warm brass. For spatial definition on the open floor plan, the ceilings above the kitchen and living area have wood beams, and those above the sunroom are planked in cerused oak.
30
ANNAPOLIS HOME
“We distressed the ceiling beams to make them look like reclaimed wood,” says Gauthier. “Everything is crafted and created to fit with the designer’s vision and the homeowners’ desire, from the handmade bathroom tiles to the rift-cut and quartered white oak floors laid in a herringbone pattern.” Architectural and design details abound, including the hand-painted tiles adding interest to the staircase’s risers. Furnishings are comfortable and relaxed, yet elegant, what Reich likes to call California Casual. The palette is of neutral grays and tans, and touches of blues and greens, with a lively mix of leather, linen, wood and metal for furnishing materials. The furniture silhouettes are tailored and most have low profiles, so as not to block the views of the water that surround the addition. “Obviously, the views were very important; we tried to give as much fenestration and natural light to the addition as possible,” says Rivera, adding, “They [the views] become the artwork in the home and are visible from every angle.”

The bar was salvaged from the Gibson Island Boat House during its own remodel. Behind the bar, tile art was recreated from the top of a table the homeowners had owned.
This is why the windows are devoid of window treatments, even in the upstairs “attic” master bedroom suite, where, due to the sloping ceiling lines, the four-poster bed gracefully “floats” in the center of the room. Even the basement, with its sofa bed and full bathroom, is meticulously designed in keeping with the rest of the addition. It, too, is set up for easy living and light entertaining, with a reclaimed bar salvaged from the Gibson Island Boat House during its own remodel. Behind the bar, tile art was recreated from the top of a table the homeowners had owned. The addition was finished, as planned, in time for the birth of the homeowners’ first grandchild, a girl. Just as the historic home has received a new expansion, the family itself has grown by a generation. AH RESOURCES

When Mario and Katarina Todorov hired interior designer Erin Paige Pitts to renovate and design their Salisbury, Maryland, home, they had every intention of staying there forever. Midway through the project, however, they called Pitts and put the project on hold. It turned out that their dream house wasn’t in their dream location. So the couple, both physicians at Peninsula Regional Medical Center, started anew, and when they found a buildable waterfront lot in Bishopville, they once again called on Pitts and architectural designer Christopher Pattey, a senior associate with Becker Morgan Group. The house, which spans two building lots consolidated into one, is situated on an isthmus that provides both intimate creek views and wide-open river and distant bay panoramas. For Pattey, the challenge of the design was the site itself, which dictated the shape of the architecture. “The narrow house design was conceived not only to comply with limited building envelope setbacks and waterfront regulations, but to afford spectacular water views,” he explains. Almost every room showcases windows on multiple walls, bathing the interior in natural light and orienting those inside toward the unique site amenities. Thirteen-foothigh ceilings on the main level allow tall doors and rows of transoms to bring in even more natural light to the bright, airy mostly white interiors.
Occasional concentrations of color ensure there is no monotony. The backsplash in the pantry area recalls the shimmer of sunshine on water.
The architecture combines East Coast vernacular with modern forms. Crisp stucco and numerous contemporary windows blend the owners’ European roots and sensibilities with the coastal textures of Eastern white cedar shingles. Four tall chimneys echo adjacent majestic pine trees and add another dimension to the balanced proportions of the façade. Sleek silver metal roofs are juxtaposed with the home’s multi-textural characteristics, while a crisp white Realstone veneer, used as a water table around the foundation as well as on the walls surrounding the main front entry, adds another textural element with a clean and modern feel. “This house is all about the light and the views,” says Pitts. The open floor plan—with as few interior walls as possible—allows light to pass from front to back with no architectural obstruction. “There are stunning views from every room and the house is flooded with light even on the cloudiest day,” notes Pitts. On the interior, the homeowners wanted the same coastal but contemporary look, accomplished by a predominantly subtle palette of taupe, gray and light blue—“the colors of the horizon,” says Pitts—complemented by a pristine architectural environment that doesn’t compete with the natural landscape visible throughout the home. Pitts saw the kitchen as the hub of the house, and designed it with light, views and family entertaining in mind. Like the color palette, the selection of the finishes was chosen not to detract from the views but to complement them. The elegant Calcutta Gold marble countertops, for example, are subtly veined in shades of gray, while the tiled backsplash is handmade with an iridescent finish in both white and light blue. “The tiles not only reflect light but emulate the colors of the surrounding water,” she notes..

The cozy, family-friendly family room is a direct extension of the kitchen with wide unadulterated views of the water beyond. The visual interest in the room is not so much color but texture, a frequent theme in Pitts’s work. “From the wave tile on the fireplace surround to the woven benches to the fossilized wood coffee table, the room has interest without interfering with the view, which is the main event,” says Pitts. In the main living space, windows overlooking the infinity pool run the length of the room. The extensive millwork, from the coffered ceiling to the paneled staircase and fireplace surround, are all intended to give intimacy to an otherwise grand space. The walnut floors add a warm glow, while the polished nickel lighting was chosen for its ability to reflect light. Pitts selected living room furnishings in softer hues of blue, taupe and gray, and with comfort in mind. And tucked under the stairs is a baby grand piano that can be heard throughout the first floor. “This special home embraces waterfront living,” says Pitts. “It lives and breathes its location and its environment.”

The impressive island is topped with Cambria, a quartz material that has the look of marble but is more durable.

t is difficult to imagine this sun-drenched kitchen as it once was—dingy, cluttered and with only a single window over the sink. Needless to say, the
sparkling waterfront Annapolis location was wasted. When Celeste and Mark Streger (Rockville residents and avid sailors) first saw the home during an open house in 2015, even they had doubts about the neglected, early eighties house. But it was such an ideal location. “I wanted to wake up and see the water,” Celeste says. “But boy, oh, boy, did that house need work.” Joining forces with Kenwood Kitchens in Annapolis was the key to the transformation.
As Kenwood Kitchens designer Lisa Brown, ASID, remembers, “Owners Mark and Celeste are very sophisticated/contemporary clients. Celeste was very interested in the overall design, while Mark, the chief cook, was most interested in the function.” Brown wanted to create a first floor in their new home that took care of a variety of space issues as well as the poor layout—keeping in mind, “It’s all about the view.”
Vol. 8, No. 2 2017 59
Opening up a wall into the dining room allowed the new space to be used for the remodeled kitchen. The previous living room became the dining area. “After seeing a contemporary kitchen in our Annapolis showroom, they knew that would be the style for their kitchen,” Brown says. She then showed them a Wood•Mode door/cabinet style the couple loved—a matte rift cut veneer made in America (Pennsylvania, in fact). “We now had a style and a plan.”
The cabinetry on the first floor all ties together, while the floating base design used throughout gives the impression of freestanding furniture pieces. The floating dry bar, with signal blue back-painted glass doors, is an example of this effective technique.
That flash of blue (a favorite of Celeste’s and perfect for the waterside location) makes repeated appearances throughout the kitchen, sitting area and new full bath (an ideal post-pool stop for the family and visitors). Brown suggested a visit to the venerable Annapolis Lighting store where Celeste found those touch-of-blue pendant lights. The glass backsplash is an especially dramatic and pleasing focal point amidst the sleek cabinetry and stainless steel exuberance of the top-of-the-line appliances. Even the fireplace insert was changed to have blue stones placed in the bottom.
The countertops are Cambria, a quartz material in the Ella finish (the look of marble, yet more durable). The impressive island again uses Cambria but this is in the

“jewel collection” finish Parys. The bar-height island top appears as if it is floating, held up by three steel supports hidden behind the inner panel of the island. The island even has a nifty nook built in with its own stool—a perfect perch for Celeste to keep Mark company while he creates in the kitchen. (Risotto is his signature dish.)
And Mark got all the techie tools he’s been yearning for—including a 60-inch 15,000 BTU Wolf range with a French cooktop, two ovens and 9 cubic feet of dual convection capacity. This blends perfectly with the giant Subzero refrigerator and freezer that supply a total width of 5 feet of refrigeration.
Conveniently, many of these great gadgets and design features can be seen at the 4,000-squarefoot Kenwood showroom in Annapolis (or at their facilities in Abingdon, Bel Air, Columbia or Lutherville). “It’s a family business started in 1974,” Scott Waldhauser, who runs the company with his brothers David and Steven, explains. “We are a turnkey company. Most of our work is residential where the whole remodeling is done through us.” He proudly tells us that “we measure, install and take care of everything with people who have worked for us for 10, 15 or as many as 20 years.” Homeowner Mark Streger loves to cook. This chef ’s kitchen has a 60-inch 15,000 BTU Wolf range with a French cooktop, two ovens and 9 cubic feet of dual convection capacity.

The Stregers, parents of two grown sons, are avid sailors. They just needed a home base. “We love our home on the water, cooking dinners, sampling the wine cellar with friends. And we’re really glad we walked into Kenwood,” Celeste says earnestly.

By Sarah Hagerty Did you ever wonder why there are so many outstanding homes in Anne Arundel County and on the Eastern Shore? It might be because we are blessed with a location that can only enhance a home’s merits. Or perhaps it’s because we are lucky enough to have been peopled by individuals with style and vision—both in our homeowners and the professionals who fulfilled their wishes. Architectural Window Supply is just such a company. Opened in 1995 by owners Christina and Greg Kunowsky, their business specializes in windows and doors—one of the most import features of any home design. As Christina explains it, “We only sell windows and doors and our knowledge is key and what builds trust with architects, builders and homeowners.” Greg Kunowsky relishes meeting with clients. “I like the challenge of adapting the product to each project, whether contemporary or traditional, and solving the clients’ needs. I pride myself,” he continues, “on knowing the products very well ... and knowing the competitor’s products.” He tells us that homes built on the water require doors and windows with a special finish and glass that reflects UV rays. Additionally he says outside doors (especially French doors) should swing out, not in, to prevent leaking. The couple, and their company, also take pride in their extensive showroom. “There’s a lot of value in meeting face to face and seeing exactly how the products function and compare,” Greg says. Online shopping has become a major preoccupation these days, but windows and doors should be seen, felt and demonstrated. And explained. At Architectural Window Supply you will see a high quality, “curated” selection with the added benefit of instantaneous, expert advice. “I want the people I speak with to know that this guy knows what he’s talking about,” Greg says. “I am always honest whether we get the project or not.”
The Kunowskys are true local businesspeople. They live in Severna Park and love running into people with whom they have worked. “We are in this for the long haul.”

AN ESTUARY LIKE NO OTHER:
THE CHESAPEAKE BAY BY KEVIN CAMPION
WHY IS THE PRESERVATION OF THE CHESAPEAKE BAY SO CHALLENGING? The health of the Chesapeake Bay gets a low grade every year. In fact, conditions seem to be worsening. What makes preservation of the Bay environment so challenging? What more can we do about it? When answering these questions we must appreciate the Bay as a unique estuary with topographical and aquatic characteristics unlike any other. An estuary is unlike all other bodies of the water in the world. Unlike a river, an estuary moves in more than one direction. Unlike a lake, an estuary’s temperature turns over more than once or twice a year. Unlike an ocean, its currents and movements are largely unpredictable. Heavier salt water flows inland from the ocean. Lighter freshwater flows down from upland streams, riding over top of the heavier saltwater, creating various gradients of brackish water. Tides move up and down, reversing and heaving the effects of the saline flows, creating waters capable of sustaining large volumes of life. (Indeed, the word “estuary” comes from the Latin aestuare, meaning “to agitate, boil and
Thousands of native grasses and perennials were planted in order to heal the edge and reconnect land and water in a mutually beneficial way. The Chesapeake Bay watershed expands through five states and encompasses several physiographies, including coastal plain, piedmont and mountain formations. The actions of millions of people impact the health of the Bay.

seethe.”) Estuaries are the liveliest aquatic systems in the world, a tussle of currents, tides and marine life.
up and down the estuary. No other bay in the world has as much shoreline compared to its size.
The estuary that we now call the Chesapeake Bay is actually the drowned ancient river valley of the Susquehanna River. During the last ice age, the Atlantic shoreline was located approximately 180 miles east of where it is today. Over the course of thousands of years, large glaciers melted, carving out the land as they receded, forming the Chesapeake Bay along with the Susquehanna, Potomac, Patuxent, Rappahannock and James rivers. Sea levels during the last glaciation were roughly 300 feet lower than at present, and as a result the Atlantic continental shelf was largely exposed. Toward the end of the last glacial epoch, sea levels rose rapidly, submerging the continental shelf. Between 6,000 and 7,000 years ago sea level rise tapered off, and a narrow estuary, what we call the Chesapeake Bay, was formed, albeit roughly 30 feet lower than it is today. By the time of European settlers, the general shape and level of the current Bay was attained. The Bay is actually still rising, but at a much slower rate.
While the Bay is expansive, it is also uncommonly shallow, making it uniquely suited for a rich and thriving broth of edge environments. Its edges allow sunlight to reach the bottom of a significant portion of the Bay. This light and warmth become the catalyst for supporting life. It is there where phytoplankton grow, oysters feed, fish hide, crabs shed their shells and where eagles and herons hunt for food. It also allows for the ideal growing conditions for thousands of miles of underwater grasses known as SAVs (submerged aquatic vegetation).
Today the watershed of the Chesapeake Bay encompasses more than 64,000 square miles, including parts of New York, Pennsylvania, Virginia, Maryland and Delaware. It is often described as “long and thin”—200 miles long and between 5 and 30 miles wide at various points—but it is actually much larger when you consider that it absorbs the waters from hundreds of rivers, streams, farm ditches and swales, stretching its tentacles through roughly one-sixth of the eastern seaboard. Shorelines run an estimated 6,000–9,000 miles
Unfortunately, the Bay’s shallow nature also makes it more vulnerable to pollution and other detrimental factors. Averaging just over 21 feet in depth, most of the Bay is composed of a long shallow shelf with a relatively thin central channel. With 10 percent of waters less than 3 feet deep and 20 percent of waters less than 7 feet deep, the Bay’s less than one tenth of the volume per acre of most of the world’s other coastal bays. With this in mind, there is very little water beneath its broad surface to absorb and dilute pollutants from the land, leaving it largely unprotected from the impacts of human civilization. SAVs are one species seriously threatened by the pollutants of modern living and poor human decisions. There was once a time when large seas of underground grass meadows blanketed the Bay floor. A conservative estimate established the coverage to be more than 600,000 acres of grasses. These grass beds consisted of 16 varieties of plants, ranging from eelgrass to wild celery,

ANNAPOLIS HOME
and they served many functions, including the home and breeding grounds for bay organisms, a dampening of wave energy, as well as the filter for harmful chemicals entering the system. Historically, about half of the nation’s crab harvest came from the Chesapeake Bay, and millions of crabs found their home in the waving tufts of underwater vegetation. Other aquatic life, including shrimp, fish and oysters use the meadows as cover, protection and nursery. SAVs also absorb and recycle critical nutrients in the Bay. Grasses bind up large quantities of nitrogen and phosphorus from the water, creating cleaner environments for organisms to thrive. In the grassy meadows, phytoplankton take in nitrogen and phosphorus as they grow. When they die, they decompose, releasing the elements back into the water as food for other organisms. In this way they are actively regulating the quantity of nitrogen and phosphorus in the water. Too much of anything is a bad thing. This especially goes for nitrogen and phosphorus. Where grasses are abundant, nutrients stay in balance. Where nutrients inputs are excessive, due to dumping and toxic storm water runoff, the nutrients overwhelm the system, cloud the waters and kill off the grasses. This negative cycle continues passively until the SAV meadows eventually give up and disappear, leaving the Bay bottom barren and devoid of diversity. After pondering the initial question Why is preservation of the Bay environment so challenging?, the answer indeed seems to be, in part, because it is an estuary like no other. The Chesapeake Bay is UNIQUE in its flows, temperature, tides and wildlife. It is EXPANSIVE in its reach, yet mostly SHALLOW, creating an abundance of life that is easily influenced by negative impacts.
Knowing the unique nature of the Bay, all aspects of our society need to act. Scientists who study the Bay need the funding required for research to help us all understand the complex and fragile environment in which we live. Those who design the edges of the Bay need to provide a heightened sense of awareness through design. They need to make conservation both functional and beautiful. Lastly, those who live on or near the Chesapeake Bay and other sensitive waterways need to own the responsibility for making their small piece of the world environmentally sound. This is our time, here and now, to enjoy the present but protect the future of the Bay. A healthy environment and a well-lived life can and should coexist for the betterment of both man and nature. We only get one shot. Let’s get it right. AH

Straight Up on Dining Out
Venezuelan Culinary Artistry Alma Cocina Latina
By Christine Fillat | photography courtesy of alma cocina latina
Alma Cocina Latina, in Baltimore’s Canton neighborhood, is a chic urban restaurant, serving sophisticated Venezuelan fare. When our group of three swelled to nine with my husband’s happy hour cronies, a brief moment of mayhem ensued. Most of our party had no clue what to expect of the cuisine and the menu contained such unfamiliar dishes that we did what we have often done in the past and enlisted assistance from the staff. Would it be possible to bring us a selection from the menu that we could all share, and get an understanding of Venezuelan cuisine? No problem, and all we had to do was sit back, sip sangria and leave the driving to the chef.
72
First dish to come to the table was a little bite of cherry tomato on a cracker. The tomato was rich and savory, like summertime on a cracker. Next offerings were sticks of fried yucca, drizzled with a house-made sriracha. This was very spicy, with a heat that exploded in the mouth, then dissipated. Like fireworks. Some of the fellows in our group weren’t fond of the heat, but it was nothing a sip of sangria couldn’t fix.
Chef Enrique Limardo has cooked all around the world. He brings the techniques he has amassed to inform his cuisine. “I always use my Venezuelan roots,” the Caracas native explains, “I have played around with other techniques, but most are from South America.”
The parade of dishes that followed seemed to embody perfect little worlds of their own, each so exquisitely engineered to contain all of the nuances of flavor that make food exciting. Like the Crudo de Mero, a marinated sea bass. Here we have a microcosm of flavors, the silky fish, the pineapple-ginger puree, a roasted and spicy blend of avocado and jalapeño, a smattering of a tiny salty fish called Camiguana, and the freshness of micro greens.
“He’s an artist,” says owner Irena Stein, who is also from Caracas, “He paints at night; he never stops. He is very creative, the colors, the amazing surprises that he magically puts together, the vivid imagination. The most wonderful thing is that he doesn’t copy anyone. You could go to any other Venezuelan restaurant and you won’t eat what you get at Alma.”
From the De La Granja section of the menu, the Wagyu Tartar. Arriving in neat layers in a perfect tower, the finely chopped steak is topped with red onion, chives, Dijon mustard, garlic-rosemary-vanilla infused oil, goat cheese mayo, cilantro powder and crispy quinoa. Mind blown. Rich, spicy, savory, crunchy. The meat is rare. It is really, really good.

Parrillada Marina. Mini arepas, topped with grilled fish. The arepa is a soft, grilled cornmeal flatbread, traditional to Venezuelan cuisine. With octopus, calamari and shrimp, this dish embodies the balance in flavors. Peppers and onion provide the crunch, smoked chili pepper the spice, garlic flakes the umami, and preserved lemon vinaigrette the bitter.
Atún al Ajillo There is surprise in the Mandoca B&W. Here we meet mandoca, a cornmeal ring (another regional specialty), with black beans, avocado sauce, tomatoes and Alma’s special sauce. It is topped with a generous grating of cheese imported from Oaxaca, Mexico. The cheese is hand grated, Irena explains, and it is luscious. There is something in the way it is grated that renders this exquisite. I think this dish is infused with love. There is no other way I can explain it. This is a lovely dish.
AHM Rating Design & Decor
I
So far we have tasted some pretty amazing flavors. But the final dish to arrive, Arroz con Pollo y Camaron, truly soars to new heights. A chicken thigh, wrapped around shrimp, is garnished with radish, snap peas, onion, caper aioli, rice, mushrooms, bacon powder, cilantro mojo, homemade sriracha, green beans and preserved lemon. This dish is pure genius in its rendering. There is a lot going on here. To truly taste every dish, you have to slow down and pay attention to just what is sitting on that plate in front of you. “Even if you were to come with a friend and only gotten four things, you would get all of the flavors,” says Irena. In my fantasy world of food, I envision myself making a pastime of coming to Alma Cocina Latina at every possible opportunity, and ordering a single dish with each visit. Every subtlety of the compositions could then be savored. Eating here is like going on an expedition into an unknown land where surprise and mystery make up the thoughtful offerings. AH
