Salmon may not be a traditional fish for Thai cooking but it handles the robustness of Thai flavours better than most fish. It’s all about balancing sweet and sour, spice and salt, so do adjust the balance of flavours depending how intense you like them. I’m not a fan of much chilli/chile heat so this recipe is written with less than you might traditionally find. Don’t be scared to add more heat by adding extra chilli/chile, or by substituting green with red, but increase the salt (Nam pla), sour (lime) and sweet (tamarind) flavourings as well to maintain a good balance. This recipe is intentionally light but for a richer flavour, use a can of coconut milk instead of just water for the sauce. I like to slice the vegetables for a pop of flavour and texture but you can use the same mixture and grind them in a pestle and mortar to make a paste if you prefer. As with most Asian cooking this dish takes time to prepare and minutes to cook so you can prepare everything well in advance and keep the ingredients in the fridge until dinner time. Oil your hands lightly or wear latex gloves when preparing chillies/ chiles... and never rub your eyes until your fingers have been thoroughly cleaned afterwards! 4 x 120-g/4-oz. salmon fillets 300 g/8 oz. flat rice noodles SAUCE 1 x 400-ml/14-oz can coconut milk (optional) 50 g/ ⁄ cup tamarind paste 1 teaspoon fish sauce (Nam pla) grated zest and freshly squeezed juice of 2 limes 2 lemongrass stalks, bruised and finely sliced 2 green chillies/chiles, finely sliced 2 red Thai chillies/chiles, finely sliced 2 garlic cloves, finely sliced

First, prepare the salmon fillets. Carefully remove the skin using a small sharp knife and check the flesh for any bones, removing and discarding any you find with fish tweezers. Pour 600 ml/2 ⁄ cups of water (or the coconut milk with 200 ml/ ⁄ cup of water if you prefer a richer sauce) into a large saucepan or pot. Add the sauce ingredients, stir and set over a low–medium heat. Simmer gently for 2–3 minutes to allow the flavours to infuse. Add the noodles to the pan then carefully place the salmon on top. Cover with a lid and continue to simmer for 3–4 minutes (or up to 6 minutes if you want your salmon well cooked). Carefully lift the salmon pieces out of the pan using a slotted spoon, cover with foil to keep warm and set aside. Stir the noodles and sauce before transferring to serving bowls. Place the salmon on top, dress with coriander/cilantro leaves and serve.

As with all good seafood dishes, less is more when it comes to cooking skate. The thickness of this fish varies a lot from one side to another so cook it at a lower temperature to ensure it is cooked through without overcooking. Buy your skate skinned and portioned – it’s very difficult to do at home – but trim off any obvious sinew on the outside of the wing or it will curl while cooking. A trick to ensuring your clams are tender to eat is to freeze them before cooking as it tenderizes them. 50 g/3 ⁄ tablespoons unsalted butter 2 skate or ray wings, skinned and cut in half 1 litre/4 cups whole milk 100 g/ ⁄ cup capers in brine 400 g/2 cups surf clams TO SERVE (OPTIONAL) 300 g/1 lb. boiled potatoes 50 g/3 ⁄ tablespoons unsalted butter a small bunch of parsley, chopped

Put the butter in a large saucepan or pot set over a medium heat and warm until the butter is sizzling. Carefully place the four pieces of skate in the pan thick-side down and cook for a couple of minutes to just caramelize. Pour over the milk (it should just cover the skate), then add the capers and a few tablespoons of the brine they are in. Add the surf clams and continue to heat until the milk is just starting to form bubbles around the sides of the pan. Remove from the heat and let it sit for 5 minutes, ensuring the clams are cooked and open. Discard any clams that haven’t opened. The cooking sauce should be about 80°C (175°F) – check it with a temperature probe if you have one. Return the pan to the heat briefly if the clams are not cooking but avoid boiling the milk as it will curdle. Serve the skate dressed with clams, capers and the sauce. Spoon the sauce over, leaving a little in the pan as this will stop any grit from the clams getting onto the plate. This is a delicious light dish on its own or great served on a bed of boiled and buttered potatoes, tossed with some chopped parsley as a whole meal.

Ombré! Undeniably the buzzword of the last few years, this design is a very easy way of bringing a little ombré to your table in impressive fashion.

1 Begin by preparing your 20 cm/8 in. and 15 cm/6 in. tiers, filling them with raspberry jam and a little cream cheese frosting or buttercream (these make more sturdy fillings than Marshmallow Meringue Frosting). Dowel your 20 cm/8 in. tier so that the dowelling rods stick 5 mm/1⁄ in. up from the surface.

2 For this design, you will need to fix a 20 cm/8 in. tier to a larger 25 cm/10 in. cake drum. Your 20 cm/8 in. cake should already be set on a 20 cm/8 in. cake drum, so a cross of double-sided tape in the centre of your 25 cm/10 in. cake drum should be sufficient to stick the two together.

3 Crumb-coat your tiers with Marshmallow Meringue Frosting using the same technique detailed on page 16. Allow the tiers to set for 30 minutes in the fridge.

4 Divide your remaining Marshmallow Meringue Frosting evenly between two bowls and colour one bowl with Dusky Pink paste food colouring.

5 Remove your 15 cm/6 in. tier from the fridge and spread a thick layer of white Marshmallow Meringue Frosting over the top and half way down the sides of the cake. Spoon a little of your pink Marshmallow Meringue Frosting into your white and combine into a shade of pale pink and spread this thickly around the bottom half of your 15 cm/6 in. tier.

6 Clean off your large palette knife and hold the tip of the blade so that it is gently pressed against the top edge of the side of your cake. Without moving the blade, slowly turn your turntable anticlockwise so that you are creating a line in the frosting. As you reach one full rotation, gently move your blade down to create a second line directly under your first. As you continue to move around the cake, bring the blade downwards in this same way until you reach the bottom. The cake should have a pattern of organic lines that have blended the two shades of frosting into each other.

7 Tidy up the top edges of your 15 cm/6 in. tier using your side scraper. 8 Repeat step 5 with your 20 cm/8 in. tier,r this time using your pink Marshmallow Meringue Frosting on the top and half way down the sides, before pausing to add a little more Dusky Pink food colouring to your remaining pink frosting. Spread this darker pink around the bottom half of your 20 cm/8 in. tier.

Repeat step 6 with your 20 cm/8 in. tier,r being careful to ensure that the dowelling rods are still exposed and still slightly higher than the top of your frosted cake.

Spread a little dark pink frosting around the bottom of your cake to cover the silver of your 25 cm/10 in. cake drum and finish the edges of this drum with a pink ribbon. Carefully stack your 15 cm/6 in. tier on top of the 20 cm/8 in. one. Finish the cake with an arrangement of sugared fruits (see page 14).

Nothing says summertime like Eton Mess. This is my homage to warm summer days filled with ripe strawberries, whipped cream, and meringue in cake form! This cake would be the perfect centrepiece to any garden party and is best enjoyed at the height of summer with friends.

1 Prepare your 20 cm/8 inch Victoria Sponge Cake, filling it with vanilla buttercream and strawberry jam. I would recommend that you prepare this cake to be eaten on the same day to enjoy it at its best.

2 Cover the cake with Marshmallow Meringue Frosting (see page 16). I have chosen to straighten the edges of my frosting using the same techniques as described on page 18 but you could adopt a more rustic approach if you like.

3 Decorate with beautifully ripe, fresh strawberries. Leave your berries whole for this job as, when cut, they yield quite a lot of water,r which will dissolve your frosting. Ensure that the strawberries are completely dry from washing before you use them.

4 Crumble your meringues into a bowl, gathering a mismatched rubble of larger lumps and finer pieces. Scatter these broken shards of meringue on top of your cake and allow the pieces to distribute themselves organically. Part of the charm of this design comes from its slightly cavalier appearance.

Serve with lashings of double/heavy cream or a cheeky dollop of clotted cream. Enjoy alfresco on a lovely sunny day!
