Welcome to our first edition of 2017 and the shortest intro yet! I hope it's going to be a good year. Interesting places, great people, new ideas, change, happiness, success... all words I'd love to hear a little more this year. I've made a couple of changes. A Contents page! rexit. Whether you voted to stay or leave is already starting to impact on S40 Local. I've lost a couple of regular advertisers, some saying they need to reduce their advertising budget as people seem to be spending less, a reason often mentioned 'they're waiting to see what happens with Brexit'. Others have stopped due to increases in prices from suppliers as the pound falls in value and they simply don't have the same margins as previously. At S40 towers I've been threatened with a price hike in the cost of print, again due to increases in paper prices due to the falling pound.

It's never been more important when using a business to tell them you saw them in S40 Local or you got their number from the advert in S40 Local. Great news, if things continue like this maybe in a few months there'll be no S40 Local... however I hope not! So what can I do? I can increase my prices, but then people haven't got so much spare cash to spend. I can start charging for things that I do for free, ÂŁ5 for a regular event listing anyone? Uhm, that will no doubt result in no What's On listings which people find so useful. I could reduce my paper quality, but people like the way it looks and feels, so perhaps not a good idea. The answer I think lies with you, the reader. It's important that those great local businesses who do advertise with me know that people are using S40 Local to help them choose where they go for a new carpet or which new restaurant they try next. It's never been more important when using a business to tell them you saw them in S40 Local or you got their number from the advert in S40 Local. Page 4 www.s40local.co.uk

For instance, The Chippy's advert opposite, give them a try, cut out their advert and make sure you take advantage of their offer. I know it sometimes feels strange to say it and I have a view that people may be becoming so familiar with the businesses advertising that once they've used them once, the next time they don't mention S40 Local. But I ask that wherever you can please mention us if you've used us. It may be the difference to us celebrating our tenth anniversary or not! One thing we don't have is a sales team and I don't want to start cold calling! There is just me, Kelly Bond (of 13 Bends Design) helping me with design and layout and Beccy Edgar helping me with invoices and finances. In addition my wife guides and helps and there'd be no delivery without the 17 strong delivery team who so diligently go out, come rain, snow or shine. Looking forward to 2017, we've got plans for a second publication and there is also a plan for a bit of self indulgence as I join a small group of two wheel fans to work on a small cycling project together. I'll tell you more about both as things progress. We've written a piece about our values which you'll see on the next page. I know it sounds like the stuff I used to talk about when I wore a suit to work but it's helped clarify what it is we're about, what makes me tick and why we've been so successful for the last eight years. I'm looking forward to 2017, it should be an interesting year. Events overseas make me think I need to make sure I get maximum life from everyday and enjoy it while I can! But then maybe that's how we should live anyway? I'll leave it for now and finish by wishing everyone who's ever touched S40 Local as a customer or reader a great New Year and thanks, as always, for reading.

t S40 Local we think it's important to exist for a reason other than just money (although there are bills to pay!). It's almost eight years since I established S40 Local in April 2009. I was a sole trader and needed to advertise, I didn't want to be travelling miles to work, I wanted to see my children every day before they went to school and to sit down at the table to eat as a family in the evening, have time to get out on my bike and have enough money to support our family - simple things.

Through S40 Local I’m generally able to spend quality time as planned and work fits around life – my work-life balance is about right (most of the time). But I also have a growing unease about the wider economy, the power of large multinationals and the quality of local jobs available. I have a sense that we need to do more to strengthen our local economy by making choices to spend our money in a way that keeps it local, in preference to spending money with large multinationals and supporting the already wealthy people at the top

of the chain - people who don’t live round here and reinvest their money into the area. I guess by working with local independent businesses and meeting people in the community I’ve become more aware of how important local businesses, people, their lives and the sense of community they engender really is. It makes me want to be even more supportive of local businesses, more involved in the community and make sure S40 Local fully supports the community in which we live. So this is what we want to achieve:

Purpose • To make our community a better place in which to live and work, for everyone.

By • Providing people and businesses with a way to tell people what they have on offer – adverts and news. • Encouraging people to use local businesses – reducing the distance people travel for work and to shop. • Helping keep more money in the local economy. • Helping people start new businesses by providing a place to advertise and share their news. • Promoting community events so more local people attend, meet and connect with each other. • Sharing articles that make people think about their choices and what they can do to support the community

What we aim to do • Maintain a healthy work-life balance and encourage people who work with us to do the same. • Use local suppliers wherever possible – both personally and for the business. • Offer a free service so people can sell or give away things they’ve finished with – reducing land-fill and waste. • Support local charities by promoting what they do or by getting involved e.g. Cycle Campaign, Friends of Somersall Park, Ashgate Hospice. • Writing about what’s going on to give people opportunities to get involved and to feel part of the community. Community The aims of the project?

Steve Samson brings us up to speed on this inspirational community initiative. Words: Steve Sansom How did the garden come about? Members of the local community group Transition Chesterfield started the search for a site for a demonstration organic garden following permaculture principles after a group meeting in the summer of 2015. After looking widely for a suitable plot of land we eventually found our garden which lies between the Westfield Allotments, off Ashgate Road (S40 4AA), and the Fairplay Children’s Charity Garden (S40 1NP) nearer to Chesterfield town centre. Work began on a wasteland on Sunday 17th April 2016 and so was born ‘The INSPIRE COMMUNITY GARDEN’. The land belongs to Chesterfield Borough Council and was previously part of the Westfield Allotments. In 2009 the Fairplay Children’s Charity took a long-term lease on a large plot, only some of which they used to build their garden plot. The remaining land was a wasteland until we had discussions with Fairplay.

• To reclaim a piece of land back from wasteland • To create an Organic demonstration garden to encourage and support organic gardening in Chesterfield • To work with partners such as ‘Garden Organic’ to give our volunteers new skills and confidence • To improve the health of local people • To support healthy eating by providing fresh produce to local groups and schools If you’d like to get involved? During the winter period we meet every Sunday between 10am and 3pm and Wednesday afternoons between 1pm and 3pm and we encourage people to join us for however long they have available. Activities can include construction, planning, horticulture, composting etc. We have a monthly Newsletter which details particular projects and activities we are undertaking at the time. We hold monthly open meetings (on the third Thursday) at Monkey Park 7pm to 9pm where we discuss and plan the next stages of development, anyone is welcome to attend these meetings. New Funding: We are pleased to have received recently a grant from the ‘Thriving Communities Fund’ via Derbyshire County Council. This has enabled us to introduce a number of new features to the Community Garden, many listed above. Why don’t you join us on the journey? Our garden offers opportunities for people of all ages and abilities to get involved in working the land, growing food and developing a sense of community. In addition the site will offer many other opportunities for the community and visitors to witness demonstrations of more sustainable living in the wider sense.

Our first working day on the land was on Sunday 17th April 2016 when we began clearing the top section of the site. Over the remainder of 2016 we had a basic plan to clear land and cultivate sections as they became available. We decided that we would become a Registered Charity and went about finding a set of Trustees. To date we have five Trustees and would encourage other people to help us manage the project. Over the weeks our plan becomes more sustainable and impressive. We have a polytunnel in place, a lockable store on site with our supplies and tools, a static caravan with a seating area, catering facilities and a wood burning stove, we have built a composting toilet and plans for many other features. Our growing plan for growing fruit and vegetables in 2017 is taking shape on a four-year crop rotation system, we have a planted soft fruit cage with raspberries, strawberries, blackcurrants, gooseberries, tayberries, jostaberries etc. Page 14 www.s40local.co.uk

Councillor Ron Mihaly We find out more about one of the local councillors elected to represent our interests. Words: Paul Chapman

on Mihaly is the elected local county councillor for Boythorpe and Brampton South, serving the communities of Boythorpe, Whitecotes, Brampton and Brockwell - elected in 2013. He lives in the heart of S40 on Heaton Street, played for Chesterfield FC in the early seventies, and has worked in the NHS and local government as an accountant. “I started life on Manor Road, Brampton, then Newbold and Whittington Moor, but returned to my Brampton roots where I live with partner, Lorraine, and daughter, Kate, on Heaton Street,” said Ron. I had a brief spell in London playing football at QPR but Chesterfield is home, sharing a beer with friends in Newbold Working Men’s Club and Brampton." So, what got Ron involved in politics? "I suppose Thatcher fired up my desire to make a difference, rectify the massive injustices she had imposed. I played for a local team in the late 60’s called “Saltergate Athletic”, our base was the old “Corner House” pub at the top of Glumangate (now the Thai restaurant) and our pitch was the ground near the Markham pithead at Duckmanton. I remember a vibrant and happy community; shops, the miner’s welfare, “Ducky” Hotel and people in work, before the mines closed. I returned to Duckmanton in the 90’s and saw first-hand a hardworking generation out of work and the impact it had. "Throughout my working life I was a union member and when I retired from CBC, the 2013 county elections were taking place. I was an active member of the Labour party and decided to have a try at local politics. "My division covers a wide, diverse area, 10,000 people, and 5,000 homes from areas of economic deprivation, to large middle class residential, to welloff. It's situated between Walton Road, Whitecotes Lane, Boythorpe Road, West Bars, the “Donut”, Newbold Road, Brockwell Lane and Ashgate Road. This diversity creates challenges and opportunities, but my sole aim is to deliver changes that make a difference to people regardless of background and political persuasion. “I love life in Brampton and think it’s really important to live among the people I represent as it really helps understand what issues are important to them. “I often walk into the town centre. It’s a walk which should take about 30 minutes, but it can take me an hour and a half because I’m forever stopping to talk to people!” added Ron. Page 16 www.s40local.co.uk

Ron holds regular surgeries in his division that constituents can attend and raise any issues. These take place at St Mark’s Church in Brampton, St Francis Community Centre in Boythorpe, Brocklehurst Piece sheltered flats accommodation meeting room and at St Margaret’s Drive Girl Guide headquarters. He also holds street surgeries, giving residents a chance to discuss issues in the comfort of their own home. Ron attends local area committees, where residents can come and raise issues and liaises with various local groups, e.g. Chatsworth Road Festival Group, the Inkerman Buzz Group etc. "A typical week may involve: cabinet, political cabinet, meetings with chief officers regarding strategy, site meetings with officers and residents regarding issues raised by residents e.g. pavements, highways, flooding and casework in general." In addition, he’s treasurer of the county labour group and a governor at William Rhodes School. "You could say that I am a busy person!" "There are some massive national issues at present, but more locally the funding reductions to Local Government effects what we can provide in terms of front line services i.e. children’s services, adult social services. "It’s not just about the big issues and projects, there are other small ways we can improve people’s lives. Parking around schools for instance. We have an ongoing problem at Old Hall, to ensure the safety of our children, respect local residents and make sure there is clear access for the ambulances from the ambulance station at Old Brampton. Parents probably are not aware that quite often their actions negate what we as a County Council are trying to do to make areas around schools safer, and the extra minutes it takes the ambulance to get through near the school could be crucial in terms of life and death! In general parking is a major frustration for residents in parts of my Division, for example Chester Street, Bank Street, with these small streets of Victorian terraces where increased car ownership causes conflict. “I’m active in local Labour party politics and, as deputy cabinet member for strategic policy, economic development and budget, I have a role to play in helping to shape policy and the “direction of travel” for Derbyshire County Council. Yes, this aspect is very important but an equally, or more important role is that of ‘community champion’ supporting people to get projects off the ground.”

Projects supported include the Inspire Community Garden, the Monkey Park Community Hub and Friends of Whitecotes Playing Field. These are funded from either the Community leadership or Community priority fund – Council provided pots of money used to support community schemes. ‘Thriving Ccommunities’ is a new concept that looks at how we engage with communities, with current pilot schemes based in Danesmoor, Cotmanhay, Newhall and Shirebrook. In the past, we've imposed change on local communities, DCC subconsciously thinking it knows best; but the change in approach will shape local service provision, hopefully giving people what they want. So what puts a smile on Ron’s face? “I love where I live. There’s a real community spirit. I have easy access to town, a good selection of pubs close by that are frequented by decent, hard-working people and we’re almost on the edge of town, spilling out onto the greenbelt that still encircles Chesterfield. I relax by training at the new QPLC, occasionally train at Spire boxing academy, walking and spending time on my allotment which I have had for over 25 years." “I take pleasure in small achievements and get a real buzz from doing this, I wouldn’t continue if I didn’t. In the present economic climate it’s difficult with little or no spending available, but it just adds to the challenge. “I think we have an opportunity to work together far more than we do, the community, the council, national politicians, making a genuine difference to our communities. "One of the saddest things at present, in my view is the democratic deficit i.e. voter turnout is reducing. Common comments on the doorstep are: “you’re all the same”, “not interested”, “never vote”, “will not make

a difference to my life”. People don’t realise that by engaging with the political process they can help shape their lives. I'd rather lose my seat with a 100% turnout, than retain it with a 30%! If any person reads this piece and is interested in making a difference I would strongly advise them to get involved, whether it be as a community leader, as a councillor or in any other way. Yes it is challenging, very frustrating at times but it can also be very rewarding. Give it a go." Contact Ron on 0796 914 4929. omplementary and alternative therapies offer people a different way to treat illness and pain or to enhance lives, to help people realise their full potential, without chemicals and drugs. Therapies draw on ancient wisdom and traditional practices aimed at a holistic, whole body approach which treats the cause not just the symptoms. It’s an approach that’s growing in popularity, as people become more inclined to take control of their own health and look for more caring ways with less chemicals and drugs from the corporate pharmaceutical companies. That’s not to say there’s not a place for both, many people look to the doctor’s surgery at the first sign of pain or ailment, but complement these with alternatives. The team at the Brampton Therapy Centre at 349 Chatsworth Road have been in their new home for two years in February and have gradually expanded their services to offer a range that supports their mantra … ‘Relieve your pain - Release your body - Realise your potential. Live your life’. Robin explains “There is a bit of a North/South divide with alternative therapies, but we are Page 20 www.s40local.co.uk

starting to see a change with more people coming searching for alternatives. People often visit the doctor first and come to us particularly where taking pills has not resulted in a cure.” Husband and wife, Robin and Ellena Outram set up the business from home before opening the centre. Robin is an osteopath offering massage, visceral and cranial osteopathy, whilst Ellena offers hand, foot, and facial reflexology, hypnotherapy and antenatal classes. She has a special interest in supporting people with their fertility journey and pregnancies. The rest of the team are: Rosa Villaseca an acupuncture therapist “I’d love people to discover what acupuncture can do for them - children, pregnant ladies or older patients, it’s a great and painless way to treat many problems” says Rosa. Janice Yule delivers the Alexander Technique, Diane Oxborough offers life coaching, hypnotherapy, EMDR and EFT, Dr Valerie Phipps is a Clinical Psychologist who offers CBT and EMDR. Nicole Huthwaite is a psychotherapist and hypnotherapist specialising in abuse and trauma counselling as well as offering the ever popular virtual

gastric band. Chell Bagshawe the newest member of the team is a sports and massage therapist, Clare West and Beth Atkinson are speech and language therapists. “We have a mixed bunch of alternative therapies under one roof and are able to treat physical and emotional issues, overcoming obstacles and making progress towards the things people may be wanting to achieve in their life” says Robin. “For some people, it’s walking to the local shop without pain, being able to raise your arms to dry and style your hair or bend down to do something we take for granted such as tie your shoe laces” explains Robin. “It could be about building someone’s self-esteem, dealing with trauma caused by past events. Emotional problems often manifest themselves as physical issues and dealing with the cause and not the symptoms can help turn people around.” “I had a patient who had been running for a while but couldn’t get past the five-mile mark” explains Rosa. “After acupuncture treatment, she was able to complete the Brighton marathon just six weeks later.” “We’ve had patients who can’t get on a plane, after treatment sending us text messages from Spain and patients overcoming a fear of needles so they can complete NHS treatments”. “In some cases, sadly there may be no cure, but using alternative therapies we may make the end of life more bearable” adds Rosa. Acupuncture is a traditional Chinese treatment using chi and balance to affect a general change in the body. Rosa uses her skills to get to elements of a problem, then once the problem is identified to work on particular area. “I had someone with a dog bite to his leg who was on medication which wasn’t helping and was also causing huge weight loss, by treating the chi and balance in the body I treated the opposite leg with acupuncture, this had an amazing impact on the damaged leg and was a great success” says Rosa. Rosa is a member of the British Acupuncture Council and can do home visits for people who are home bound. Brampton Therapy Centre is about getting you back to you. Great rustic food meets botanical cocktails. Chesterfield's latest venue for lovers of great food, great drinks and great company opens its doors. A quick intro to Bottle and Thyme, Knifesmithgate.

ook the baby sitters (if needed!) there’s a great new bar/restaurant to try out in town and, although I've not eaten there yet, the reviews on Facebook are glowing. I have drunk the coffee and have to admit it was one of the best I’ve had for a while. Gavin Grainger has worked in various bars and restaurants locally, even designed the odd advert for S40 Local advertisers as Fine and Dandy Graphic Design, but now he has his own place to call home! Bottle and Thyme, located at 15-17 Knifesmithgate, is a family business, opened on 17 December and is fast becoming Chesterfield's latest meeting place - day, evening and night. “We serve rustic food, botantical cocktails, world beers and wines and are very proud to say that we’re totally independent of brewery control, We decide what we sell, where we source it from and, being a local family, are placing local suppliers at the heart of everything we do” says Gavin. Large chain pubs seem to open and close weekly at the moment and it’s great to see someone operating outside of this model. The independence shows in the drinks available and the great food on the menu. During the day you can enjoy lush coffee, breakfast, brushcetta brunch and lunches. In the afternoon (between 3 and 6pm) they take a rest from cooking but you can still enjoy coffee and cakes, then evening meals are available from 6pm. “We do a three course a-la carte menu, sharing boards, skewers, burgers, salads, and have gluten

free and vegetarian options” says Gavin. “The sharing boards and Camembert are going down a storm at the moment. All our food is freshly prepared every day, we use local ingredients where we can and nothing is prepped until needed.” So what’s the Botanical connection? “Our cocktails have a botanical theme, we add a twist and will often use botanical ingredients, different herbs and even a flower garnish, such as in our gin and basil Mojito and our Violette gin sour. We also do a selection of mocktails (non-alcoholic cocktails) so you can get the botanical hit whatever you drink, or even if you’re enjoying a dry January. We have a happy hour from 5 to 7pm where two cocktails are £10.” The building itself needs a few words. It’s been an old bank, Barclays for a while, then a Building Society, then more recently the Money Shop. As such it comes with a great bottle cellar, better known as the old walkin safe! The place has been stripped back to its bones and given a warm refurbish, think simple industrial charm, recycled pallets, bare plaster walls etc. S40 Local favourite Peter Barber has added his artistic touch, hand painting the stone floor tiles. It does look good, and I’m sure that on a cool evening, with a beer in hand listening to the live acoustic music they put on, you’ll be feeling warm inside. But it’s not all about the nightlife, when shopping in town on the way back to the donut car park don't walk past call in for a drink before heading home. A Key. Most of us take a key for granted but a key to your own home is something Pathways believe everyone in our community should have. Words: Sandra Johnson

omelessness in Chesterfield is becoming more of an issue bit in many ways it is hidden. Many don't meet the local authorities criteria to be classed as homeless but spend their life, living on people's sofas, or moving between friends as they have no place of their own. I In June 2002, following a seminar organised by the Chesterfield Churches Together initiative, a steering group was formed made up of representatives from local churches, Chesterfield Borough Council and the NHS to work towards the establishment of a day centre for the homeless in Chesterfield and the surrounding area. In 2005 Pathways was founded and finally signed the lease on our first premises on Vicar Lane. This was achieved with the provision of money from a legacy held by the Holy Family Catholic Church. Pathwaysâ&#x20AC;&#x2122; vision is that everyone in our community has a place called home. Our fundamental aim is to provide a service based on client needs and these are integral to our service planning and delivery. Our ethos is to encourage self-help, responsibility and participation. Pathways is a place where support staff trained with specialist knowledge and our resident trained nurse can deliver an effective service of constructive and beneficial interventions at the right time and at the clientâ&#x20AC;&#x2122;s pace. This we hope will provide a catalyst for change and break the cycle of homelessness. We believe that maintaining street lifestyles is not appropriate, that better alternatives exist, and that these are attainable for our clients with the right support and guidance. We want to encourage aspirations and hopes to be identified by clients and to give them structures, the information and the choices to achieve them. Pathways' first manager, Emily Clarke (Redmond) was recruited in December 2005 Page 30 www.s40local.co.uk

and with the support of a core of volunteers Pathways began to provide much needed help and support to vulnerable individuals. Terry Waite officially opened the service on 29th March 2006. Although at Vicar Lane we were able to get the service up and running it wasn’t the most suitable building and its layout made delivering services difficult. A five-year grant from the National Lottery allowed the move to Stand Road in April 2008. More space helped provide a wider range of services including laundry and showering as well as a dedicated health suite. The charity continued to be supported by local churches through financial donations as well as food, volunteering time and clothing. The then mayor, Trudi Mulcaster performed the opening ceremony and chose Pathways as her charity during her year in office. The Lottery funding also meant we were able to recruit Support Workers. Emily moved on and John Bell took over as manager. Sadly John died suddenly in May 2012 and this was the beginning of a difficult period for Pathways. Sean Power stepped into the manager’s role and had the unenviable task of helping staff, clients and volunteers through the shock of losing John.

the reasons why they have become homeless which could be a relationship breakdown, the loss of a job, being released from prison, drug and alcohol abuse issues, perhaps a mental health problem (often it is a combination of factors) we can then help them find accommodation, and try to help them avoid it happening again. The other aspect of Pathways’ work is helping clients piece their lives back together. We run regular housing and benefits clinics and for rough sleepers we provide breakfast and lunches three days a week. Though we no longer have showering facilities, we have an arrangement with Queen’s Park Sports Centre, and clients can shower there. We also provide optical, and podiatry clinics, and therapeutic massage sessions. The service has two resident mental health nurses who provide mental health support, assist clients in accessing healthcare and refer clients into supported accommodation for people with mild mental health problems.

What of the future? We are currently in the process of putting together funding bids to secure our future beyond 2017. In addition to support by our major sponsors we’re developing a regular stream of income through sponsored events and donations - we’ve even started selling our own Christmas cards, designed by our clients with the support of a local volunteer artist. The current premises are adequate although it would be good to have more room, this is determined by our funding. Without further funding we cannot employ much needed additional support workers to help provide on-going outreach support.

It was during 2012 we learnt that our application to the Lottery for continued funding was unsuccessful and we were facing closure. This necessitated urgent action not least downsizing to a building with lower running costs. As a consequence Pathways moved to our current building. With the skills of a professional fundraiser we were able to secure short-term funding from a variety of sources including funding from Henry Smith and Lloyds Foundation.

Throughout our ten years it is undoubtedly the support of local volunteers, agencies and sponsors who have led to the charity’s achievements. To celebrate our tenth anniversary, we’re holding a pie and pea supper at Loundsley Green Community Centre, at 7.30pm on 28 January 2017, with entertainment provided by Peak Performance. We’re hoping that those who have done so much for Pathways of Chesterfield over the years will come, so we can thank them for their support. The Love I of Food.

t's the month of love and what better way of showing it than cooking a fabulous meal by Gastronamis bloggers Louise and Laura. They always say the way to a man (or woman’s) heart is through food so why not try these delicious recipes below for a recipe for love.

These recipes can be made ahead and warmed through on the night so get planning and organised and you wont have to do much on the night.

I’ve started with a light starter of Fresh Tomato Soup with heart shaped croutons followed by a delicious rich Coq au Vin. We like to use local suppliers where we can for our ingredients. All our meat comes from Highfield farm.

Fresh Tomato Soup

Coq au Vin

Ingredients

1 tbsp olive oil 700g of plum tomatoes 1 onion - diced 2 garlic clove - sliced 1 celery stick - sliced 1 pint of chicken stock 60g of spaghetti broken up into smaller lengths salt and pepper

Method

• Pour the olive oil into a pan and add the tomatoes, onion, garlic and celery. Cover and cook on low for 45 mins. Occasionally stirring the mixture. • Transfer the mixture to a food processor or use a hand blender and process to a smooth puree. Push the puree through a sieve into a clean pan. • Add the stock and bring to the boil. Add the dried pasta and cook for approx 10 mins. season with salt and pepper to desired taste.

Croutons

• Mix in a bowl some olive oil, salt and pepper and basil. Dip the brown bread into the seasoned oil and place on a baking tray. Bake in the oven until crisp. Cut into heart shapes with a heart cutter.

Did you know that this recipe was invented by the French to make old birds more palatable? • 900g of Chicken - either breast or a whole chicken chopped up. • salt and pepper • 1 tbsp of plain flour • 1 tbsp of olive oil • 1 tbsp of butter • 100g of streaky bacon or lardons cut into strips • 225g button onions - peeled • 375ml red wine • 1 garlic clove - crushed • 1 bouquet garni • 175g button mushrooms

Method

• Preheat the oven to 180°C. • Season the flour with the salt and pepper and put it into a large bag. Add the chicken and shake well to coat. • Heat the olive oil and butter in a casserole dish. Add the chicken and fry on high for 5 mins. • Take out of the dish and put to one side. Add the bacon lardons to the casserole dish and fry for 3-4 mins. Remove from the dish. • Add the onions to the dish and fry for 5 mins until they go a brown colour. Pour in the wine and stir well. • Add back the chicken and the bacon to the dish. Add in the garlic and the bouquet garni. Place the lid on then cook in the centre of the oven for approx 1 and a 1/4 hours. • Add the mushrooms, cook for a further 10 to 15 min. • Take out the bouquet garni and discard. Remove the chicken, bacon, onions and mushrooms and place in a serving dish and keep warm. • Return the casserole dish to the hob and turn on high. Cook the juices until they have reduced down into a thick sauce, then pour over the chicken, bacon, onions and mushrooms before serving.

EXHIBITION: All Creatures Now Jan 26 to Feb 28

The Dome, North Block, Chesterfield College An exhibition of sculptures and linocuts by Jacqueline Currell. Jacky has been a resident artist in Chesterfield since 1980 and taught Art at Chesterfield College for 18 years. She has exhibited widely throughout her career. Jacky trained at Bournemouth College of Art and was awarded the Rome Scholarship. Before moving to Derbyshire, she taught at Plymouth Art School for 14 years. Although foremost a sculptor, Jacky has become a prolific printmaker using linocut to visualise and explore her imagery. Animals and animal –like formations are a recurrent theme. The motifs themselves have become a vehicle to express underlying themes of opposing forces, light and dark, good and evil, evoking an emotive response. More recently Jacky has been diagnosed with Motor Neurone disease, this exhibition is a celebration of her creativity and productivity.

The winners in each section won a camera appropriate for their age. Winter Garden Tips

Winter is the time to reflect on last season’s harvests. Consider which fruit and vegetables performed well and also those that were a disappointment. Think of what will be grown again and also if a new approach to growing a particular fruit or vegetable is required. Should you be trying something new or perhaps selecting a different variety for the forthcoming growing season?

This is the time of year to plan for next, with seed and nursery catalogues. Don’t be over-ambitious though – only plan for plants where there’s space, or steal yourself to removing underperforming ones (or dig them out on a nice day, which will allow time for the soil to settle before spring).

If you have a pond with fish in it, make sure it never freezes over completely (but don’t break ice by hitting it, which may well hurt the fish); a rubber ball can be floated in it to make a hole to allow access to oxygen.

Keep an eye on any stored produce, bulbs and tubers to make sure the mice haven’t found them. Hanging them in a sack is usually a good way of both storing and protecting them, but remember that mice are amazing climbers.

This is the time to give your pots and trays a thorough clean to get rid of any over-wintering pests and diseases. If you have a greenhouse or frames a good clean of the glass, frames and floor will mean that you can get off to a good start in March when it is time to really get started sowing your seeds for this season.

If it snows heavily, knock it off or gently shake branches to prevent them breaking under the weight. Try not to stand underneath while you do this…

Check to see if any paths, fences etc. need routine maintenance, and prepare to do it on any nice sunny, dry days. Also clean and (where applicable) sharpen tools; book the lawnmower in for a service.

If you have facilities, the early sowing of some seeds will benefit your later crops by giving your plants more time to ripen. These include: tomatoes, peppers and onions from January and lettuce, beetroot, peas, broad beans and radishes from February. Crops like microgreens and sprouting seeds can be grown at any time.

Keep everywhere clear of debris, which can harbour diseases and harmful organisms. But try not to be too fussy; old logs and piles of leaves tucked away somewhere are excellent over-wintering spots for essential wildlife.
