Radical Beauty: How far would you go with your body?
O
riginally from Poland, renowned tattoo artist and body modifications fan, Sara Night moved to Britain when she was 22 years old. Having quit University where she studied Architecture, she describes a deep feeling candidly there was much more to be had from life, and the leap to leaving her country to pursue her creative career was the right step to take. Not just a tattoo artist, Sara is an alternative model, with over 70% of body tattooed, she also has her tongue separated into two, and undertook a dangerous procedure to have her eyeballs inked blue. VAMP caught up with London based Sara, to discuss her love for body modifications and her tattooing vocation. When did your artistic journey begin? I loved drawing since I was a child. It moved my imagination and provided a way to relax. Drawing was always around in one form or another, and the idea of studying architecture seemed an excellent way to take the passion into adulthood and work.The romantic aspect of architecture was a bubble that burst very quickly, but I always felt there’s more to be had. Moving to the UK was that drastic move that I hoped would help me learn more about myself. Tattooing people for a living wasn’t my first thought. Believe it or not, I was never actually a fan of tattoos! When I arrived in the UK, I started working as a beautician. It was a good job, but for me, I felt it lacked the creativity I craved. Luckily, my brother had started his journey with tattooing a while back. I was intrigued, and he didn’t need much encouragement to teach me the trade! Fast forward nine years and 70% of my body is tattooed, plus I finally get to do what I enjoy and get paid for it. How would you describe your creative process and modifications journey? There’s a surprisingly fine line between body modifications and beauty treatment. In my opinion, the difference is that one is accepted
by society, and the other is approached with curiosity. For me, it started with the socially accepted plastic surgery. Breasts and nose were first. Then I started taking an interest in what other things could be ‘changed’. Not everything was done to be ‘beautiful’. Some of the work was done for ‘fun’ or shock value like having my tongue split and getting an eyeball tattoo. The latter is pretty radical, but I still like it. It’s a mixture of ink colours, and I love how it shifts tones depending on the light. The journey of body modifications, tattoos and beauty treatment is certainly not over. I’m not a stranger to derma-fillers to shape the face or liposuction, and I certainly don’t think my curiosity will stop there. Do you face much stigma daily, and how do you deal with it? Over the years, I discovered that people, in all their curiosity, do approach me with good intentions. A bit of fear but mostly an open heart and kindness. The UK is very open to body modification and tattoo trade, but every country is different. In France, some people cross the road when they see me, in Eastern Europe, older ladies cross themselves religiously when passing me on the street. Most of the time I find it amusing. People quickly understand that my tattoos are simply an expression of the freedoms we enjoy in the 21st century. My way is to decide on the design of my body.
time when I feel particularly creative. I draw when emotion compels me. Do you have a favourite piece? I have managed to bring quite a few designs of mine to life, and I don’t discriminate between them. I do, however, have tattoos that I still love, and these are the two sleeves done by Kris Wlodarski and few pieces done by my brother. What has been your proudest career highlight to date? Being a tattoo artist is not a conventional career choice, and so the development path or the career highs don’t tend to be predictable. I’ve been lucky enough to meet amazing people along the way, join a great tattoo family at Adrenalin Park Tattoos in Luton and change minds and perspectives of people that would never conceive of expressing themselves with body art. The work I do helps me connect with people and their lives. Some want to remember; some want to forget. Every tattoo has a story, and that’s uniform across the world. What does 2020 have in store? The year 2020 will hopefully continue on the path of discovery. Discovery of others and myself. I have always wanted to start sculpting classes or oil painting, and I feel I’ve been putting this away for too long. Luckily, it’s never too late to grow. [ V ]
How would you describe your style? I don’t think I have a style. My work evolves with time as I do as a person. I try to stay away from templates of tattoos done to death over the years. Frequently I’ll ask a customer to help me create something individual, something that goes with the story that has a piece of them in it. Sometimes, when the customers give me free-range, I try to compensate for this trust with an individual to formulate something very special. In these situations, I frequently let my imagination loose, but I do have a rich library of my designs, either done by hand or an iPad. The process of drawing and designing the next piece of work calms me like drawing always has. There’s no specific

How did you enter the fashion world?
Since my childhood, I was really and deeply inspired by fashion; I organised fashion shows at home with the children of my parent’s friends, showing off my mother’s clothes. I also drew many looks in a little notebook and cut out my favourite pictures - I destroyed all of my parent’s magazines! I then studied fashion design and communication. Thanks to my last internships in different well-known French PR agencies, I started to work as an assistant with an artistic director and fashion stylist. That’s how I entered the fashion world. What challenges did you face when you first started out? First, it was really hard to build my own network, find talented and serious partners, develop contacts in different PR agencies and magazines, win their trust and prove my determination. >>

From where do you seek inspiration when given an assignment? Most of the time, my way to find great inspiration is by browsing on models.com and looking for strong and creative pictures for my mood board. It’s a website where you can find all the latest shootings (like editorials and campaigns) of the biggest magazines and brands. I also look into print magazines, read, walk through Paris, and visit a lot of exhibitions to find new sources of inspiration. For my personal style, I am not inspired by one person but by different kinds of style. I am a real vintage Saint Laurent and Tom Ford girl I think. The period that inspired me the most is when Carine Roitfeld led Vogue Paris, the porno/chic years. What are the biggest challenges faced during a shoot? As a fashion stylist, during a shoot you have to be really careful about the clothes; this is the most important thing. Bring back the outfit as the PR give it to you! You also have to focus on how the clothes fit the model and what

the photographer sees behind his camera, to be sure that the fabric sits beautifully and doesn’t crease. Organise well the timing to change the looks and having a good logistic organisation to set up them up, is very important. When you are shooting outdoors this can quickly become a challenge, you need to figure out where and how to put down the looks. How do you engage the audience in your work? How do you decide what story you want to tell? I want to give people a mix between simple beauty and pure figures, and also creative ideas. My goal is not to show how to dress up but it’s more the process of expressing my creativity through the composition of a fashion look. Most of the time, the photographer and I decide what the story is going to be. We create a mood board together. Sometimes, I do it alone. Once again, it’s a way to express my emotions, energies and ideas of the moment.

What can you tell us about the shoots you recently styled for VAMP? It was my firs time in Malta and I have great memories of this shooting day! We were in an amazing place, everyone was really cool, the weather was perfect, only great vibes! What is the prominent theme across the styles you have chosen? I wanted the looks very graphic, modern and minimalist; something new for VAMP readers. The idea was to mix well Mediterranean and Parisian styles. Always really chic shapes! Which outfit / style stands out to you most and why? My favourite look of this shoot is the long white shirt with the red boots! For me it’s the strongest, it’s super daring. This look shows a strong and powerful woman who assumes herself completely. There is elegance and arrogance in this outfit - the two components that lead all my styling. >>

your time running up and down on the set carrying a heavy suitcase with all the styling! When I leave home I always make sure to think of my safety pins, my steamer, all the credit details the PR gave me, and different kind of clips.

What did you enjoy most about working on the shoot? People are so kind, the energy is more peaceful than our shooting in Paris! No one was over stressed, the VAMP team trusted my choices and didn’t want to control anything; it was a real pleasure to work for them! How do you prepare yourself for a shoot and what are the must-haves for a stylist on set?

First, it’s important to wear a comfy outfit, because during a day of shooting you spend
Which/Who is your go-to fashion brand/designer for everyday fashion? For my everyday fashion life, I don’t have real go-to brands, I always mix my looks with vintage, mass-market and high fashion pieces. I buy a lot of things at vintage stores or second hand here in Paris. My new favourite shop is Mad Vintag. For shoes, Ash is the brand I love the most (boots and sneakers), for heels it depends. I am a big fan of heels but don’t often wear them during the day. I don’t put rules on myself about what I wear the most. The only thing I can tell you is that I NEVER wear tracks, even when I’m home. There are lots of different options to be comfy and stay elegant. I love fluid fabrics mixing with stretch pieces, an idea of elegance with a glam / sexy touch. [ V ] WINTER_19 ISSUE

Pluri–Disciplinary Art She’s a woman of many skills – sometimes she stands behind the camera, sometimes styling the shoot, sometimes beautifying models and in her spare time, she’s capturing moments in urban landscapes. Often times, she’ll even do it all at once! Meet Migle, the woman behind ‘Wild Rose’ a fashion editorial in this VAMP issue. Born in the capital of Lithuania, Migle had a special interest in arts since her childhood. Despite her close circles assuming she would become an artist or designer, classic arts was not the only hobby she enjoyed doing. “I could be left alone in my room for hours only with blank paper and colored pencils. I remember that I was playing with my paper dolls and their paper clothes. I wanted more clothes so I started drawing them by myself. A bit later I started sewing clothes for my Barbie’s.” Following latest trends on fashion magazines and social media channels kept the curious artist up to-date and inspired. “As every teenager girl I was also using make-up – my mum brought me healthy lifestyle and make-up magazines for teenagers which had a lot of beauty tips and I used them all … the more sparkles the better! Back then, that was the trend.” Migle continued to finish her studies in make-up whilst discovering photography. As soon as Migle had a professional camera in her hand, she quickly discovered photography to be her passion. “I fell in love with capturing every moment and was eager to master the arts of photography.” With now over 10 years experience in professional photography and a few interesting collaborations with other photographers Migle is expanding her possibilities through her natural talents. Migle is the woman behind the fashion editorial on previous pages, which she explains “I compare to a flower… beautiful, colourful and wrapped into shinny plastic… nowadays all girls try to shine just to grab some attention.” When not behind the camera or coordinating a fashion shoot, Migle is an urban landscape
photographer and compares the two worlds: “In fashion I like colours, outfits, backgrounds, lighting, model and mood. In urban landscaping I love the colours and shadows; I like when in morning or evening shades changes every 15 minutes, adding a new tone to the photograph which would otherwise be grayscale concrete, reminiscent of soviet era buildings.” She continues to highlight similarities and differences and undoubtedly photography can be a very wide topic. “In fashion you can get more or less the same result you conceptualise. Limits are only a self created wall. You can use light with colour filters; you can change poses, mimics, and add additional accessories. In urban landscaping the moment is everything, sun changes position, it can start to rain at the drop of a hat and in the morning there could be a thick fog (I love foggy mornings). I like to observe my surroundings, find an object and check if it would fit into my composition.” Migle’s favourite place to shoot is “Unequivocally, my local gas station during night time in the of fog!” When not in a studio, you might find her roaming around foggy cities for a quick spin in the early blue hour morning hours escaping the traffic of vehicles and people that invade the city during the day. “I like to do what I like to do. I don’t have one style; nor do I want one. Besides fashion and landscape I work on still life and minimal photography.” [ V ]

he festive month has come around again — and let’s be honest, the main reason December is considered the most wonderful time of the year is because it’s party season, which means glitz, glitter and glamour galore — and copious amount of mince pies and free alcohol, of course. VAMP magazine has put together the below list of glittering crystals, disco metallics and show-stealing accessories for every occasion. It’s now or never!
Eighties Revival 80’s are back with a bang: shoulder pads, dramatic puff sleeves, gigantic bows and cocktail jewellery, satin and belted patent leather, and animal prints. Get inspired by Yves Saint Laurent’s Fall 2019 collection: sculptural lines, sharp tailoring, embellished mini-dresses. Show up to the party in spots, stripes or serpent skins. Think a fab 80s top in leopard, python, tiger or zebra print, ideally involving aggressive shoulder pads. Finish the look with your favourite pair of black skinnies and some look-at-me ear bling.

Who said party season is just about dresses? A good statement suit has gone from dull work-wear to classic dinner-do, and can do all of the heavy lifting. Opt for lushly rich and cold-weather-friendly velvet, the official fabric of holiday parties in dark blue, emerald green or burgundy.Your look can also be a gorgeous black trouser suit with flat shoes. Think Ralph Laurent’s sharp tailored suits and velvet jackets. Pair it with a sheer, light-weight bow-tied blouse in pastels, giving it a soft, feminine feel. Look to the likes of Philosophy Di Lorenzo Serafini and show up to the party in a lingerie dress paired with a big, boxy blazer. Divine.
Even though silver and sequins are big this time of year, we don’t have to treat them like they’re a dress code. Make a scene-stealing entrance wearing head-to-toe white or pastels amidst the festive chaos. A calming-yet-cheerful pastel palette was seen in elegant eveningwear at Brandon Maxwell and sequinned cosy sweaters at Ermanno Scervino. Add show-stopping heels or a pair of slouchy white boots — and maybe a glass of red for a flash of colour.
Nothing says party season quite like sequins. From Ralph Lauren’s and Saint Laurent’s sequinned dresses to the sparkly two piece at Celine, the message from the autumn/winter 2019 was glitz and shimmer. The epitome of festive cheer, this is a trend that is sure to brighten any room, plus it’s a guaranteed head-turner… need I go on? But if a full shiny look is not for you, opt for a sequinned crop top and pair it with a sharp, tailored blazer a la Balenziaga Fall 2019; or instead, wear a luminous jacket — think Ermanno Scervino and Ralph Lauren. >>

To modernize the classic look, swap loafers for sneakers or boots and mix it up with T-shirts – not button-downs. Bristol-based artist Jennie Cave has been making waves on the British art scene, with her dreamlike compositions. Intrigued and slightly baffled by the infinitely complicated world of her works, we had a chat with Jennie to find out more.

A
t the age of 17, Jennie embarked upon a foundation degree in fine art in Falmouth; however, life had other plans for her as she became pregnant and never completed the course. Having lived a full life and varied careers, Jennie turned her hand to back to art after retiring at the age of 62. She’s now the resident artist at The Island, and her works are listed with the prestigious Saatchi Art. Jennie started by making montages at home, though as her passion grew, she soon ran out of space and found herself a studio. For the last 5 years, Jennie has held a residency at the vibrant Island space, though she still insists, “I have never felt any good at painting and drawing”. Jennies oeuvre is through mixed media montage, “To me, it feels like doing a jigsaw, I feel so absorbed by it and a deep commitment to stick things down!” she adds. Jennie states the cause of such colourful juxtapositions is her highly vivid imagination, and the medium suits her well. Indeed, the approach appears to be effective; her works >>

Jennie doesn’t seem to be able to swallow her immense success, though there’s every reason why she should start to let it sink in, as word of her talent is spreading exceptionally fast. sell out like hotcakes and have commanded an incredible demand in a short space of time. “I know I am a late bloomer - I am just getting started!” she quips. “So far I have had exhibitions in The Green House, London, Ashton Court, Bristol, Space and The Island also in Bristol. These have all been very successful exhibitions!” It’ not hard to understand why, when you delve into Jennies work, it’s unique, bubbly and instantly puts a smile on your face. “I love the freedom of the studio space and being able to reflect the world around me. My first exhibition was just the proudest moment, just to see how much my work was loved - people truly connected with it! This gave me a big confidence boost.” When it comes to reoccurring themes throughout her work, Jennie divulges, “I’m a feminist, women’s welfare really matters to me. And you can see this if you look closely in some of my works. There’s a story in every picture, whether it be political, religious, erotic or humorous hence the ‘weird and wonderful Jennies montage’ title of my Facebook page and collections!” What’s next for the Bristol artist? “I hope to take a bigger step and organise exhibitions in new areas and master new skills. I love, love, love what I do, and I feel so lucky to have this talent I can use every day. I have met some truly amazing people along the way. the incorporation of technology here is very interesting.” When there are no boundaries, Ryoko explains, “It’s hard to distinguish and identify,” this is why the firm strongly focuses on powerful story lines. “It can go any direction, especially for interior which is very personal. We need a strong story line with the key characters of the key players involved. We first establish very strong story lines so that we’re on the same page with everyone. We don’t put our specific corporate stamp – but I hope you can sense our strong philosophy behind.” Needless to say, their philosophy is apparent and strong indeed. We explored a breath-taking transcending space the architectural firm shaped in a penthouse in New York – a private residence that floats on the top of a tall building – perhaps not ideal for someone with ver tigo! Even at penthouse level, Ryoko explains that we need to be connected to nature and surrounding. In this case, the sky is the immediate natural surrounding. “We wanted to take full advantage of the fact that it is a penthouse; this kind of space is very rare. We wanted to create a sensation of grounding with anchoring stone walls whilst also sensations of floating.” >>

yoko Okada leads a team of skilled professionals to produce highly original, custom solutions for residential, hospitality and commercial clients. Her passion and sophisticated sense of colour, grounded in knowledge of materials and finishes combine to form a distinguished vision that provides for uniquely innovative and memorable creations. She describes her work as a boundary-less respectful union of professions, skills and the environment they are working in. “As a designer, I like to see everything together - there is no boundary between each trade. We respect each other – architecture, interior design and landscape – every profession has their own strength.” Ryoko’s passion comes from indoor space with the aim of creating the right atmosphere. “I’m interested in architectural landscape… I like to continue developing more skills to incorporate all elements into whatever I’m doing. In addition I think it’s very interesting the way people like and work, the style is changing rapidly.”
VAMP meets with Ryoko Okada, Director of Interior Architecture and Design at ODA based in New York to dive into the concept creations and philosophy. During our talk we enter a Private Residence, a floating penthouse where space transcends. >>
When talking about the types of spaces she works with Okada remarks that spaces are getting similar in terms of structural boundaries, whilst “we (ODA) are getting broad – we want indoor and outdoor spaces to be more connected.” “Residential spaces to me are not so different to hospitality spaces. Their approach also star ted to demand a more residential feel.” She talks about corporate spaces that want to create a more playful atmosphere in the work place stating, “I think it’s an interesting time for interior design to reduce the boundaries of functions and marry all functions in one space. Yet still demands its own character. And

Some notable elements contribute to this floating sensation. “We don’t look at indoor space as a closed box. Each element is its own sculpture in this case.” The floating onyx stair case was created as open as possible in terms of structure. A growing onyx becomes like a light box at night. “We wanted to make this a pure onyx – this gives the heightened floating sensation. It becomes borderless. It becomes like a light fixture.” The mirror finished stainless steel floors reflect like a mirror, reflecting everything around it that “makes things disappear and doesn’t read much as a supporting structure.” >>

A Zen-like, natural energy draws you into the bedroom, (right) influenced by Ryoko’s Japanese roots. She explains “It’s sort of instinct for me to incorporate these elements. It’s not so much a style of ‘Zen’ – its more philosophical. It goes to the basic sense of creating a soothing, nurturing and calm space. It comes down to choice of materials that highlight natural materials. Even though it’s a high-end residential space, we like to bring in natural materials instead of heavy elaborate deco. We go back to nature.” The bedroom boasts natural Birch wood furniture and oak floors, “staying into natural grey colour that blends with the sky.” The walls are matte lacquered for a simple background to put focus on appreciating the view. “The client also has amazing ar t

collections so we wanted to keep everything quite simple.” Incorporating mirror also gives the feeling of expansion. Natural light is intelligently utilised. “Especially for a space like this that is in the sky, natural light is very impor tant. There’s nothing to break the light coming through. It really depends on the weather.” Natural shadows project lines that remind of the matrix-like system of the bustling city below with continued linear work is consistent throughout the space, maintaining a modern and minimalistic feel. “You need a good control. The controlling is one thing – but the shadows are interesting. It keeps things alive and in perspective of its surroundings.” >>

According to Ryoko, nur turing space is like a suppor t to inspire people and “it is important to keep good a balance between protected and sheltered space and open public communal spaces.” She explains that when the city becomes denser “we design architectural spaces and continue to develop and extend this notion of public space. This philosophy applies to interiors too – interiors expand to architecture and landscape.” Interior space is not limited to four walls;

“we need to study the external environment – the view and surroundings cannot be ignored.” This philosophy is evident in the spaces shaped by Ryoko and her team at ODA, a philosophy that makes connections, “essentially blurring the indoor and outdoor, a relationship that marks well.” Removing these borders creates more breathing space. >>

dedicated to the hedonistic pleasure of much of what surrounds me and what i surround myself with, either physically or virtually, under my concept of ‘beauty’.”
F
rom a young age, he drew and painted and created with “huge imagination and my hands.” He was educated in private schools until he joined the art school IADE in Madrid, from which he explains he did not finish. Nando continued to take painting classes at the Peña Academy, where many of the current recognised artists took drawing classes. This was during La Movida Madrileña, a countercultural movement that started in Madrid, characterized by freedom of expression, transgression of taboos imposed, use of recreational drugs, the emergence of dialects and a new spirit of freedom on the streets. Nando would spend a lot of time visiting galleries, exhibitions and museums including the Prado Museum, especially El Bosco’s collection and all the social events and parties that would be held. This vibrant artist lifestyle allowed Nando to meet Andy Warhol in person at the opening of an exhibition where gallery owner Fernando Vijande curated him in 1981. >>

Nando explained that Warhol was in between interviews with two of the leading publication of the time - La Luna de Madrid and Madriz Me Mata. He reminisces, “it was very exciting for me to have been there and to have greeted him, it was a great experience to be close to such an important character of the art world.” After 10 years dedicated to a very different activity, the once artist considered doing “what I liked” but was not looking forward to dedicating himself to painting. “I consider myself a good search engine of trends, or currents, from music to the artists I select.” With all this and with encouragement from his environment, Nando decided to open an art gallery, in Sotogrande, Cádiz, from which he has projected very different artists, from very different backgrounds and feelings. He explains these projects and exhibitions “are somewhat special for this wonderful corner of the world; a cradle of wonderful artists in an enclave, with as many disparate influences and artistic as is the entry or exit of the Mediterranean Sea…” Nando dedicated himself to several different projects, “of course continuing to create in a personal way or in collaborations with friends and businesses.” He returned to Finca Casa El Coleta, his family home where he spent his childhood. “Consisting of various constructions, the main one is where I currently have the gallery headquarters from which I move to different spaces and locations to curate or collaborate with other galleries. The second is a school destines for my home, and the third is a chill out, ‘boîte’ to listen to music etc…”. Finca Casa El Coleta is a place where Nando “summons different artists and as an artistic residence they work and live. As a co-existence we organise the exhibition ‘site specific’ there, with the possibility of presenting them in other spaces - as in the case of David Paul Kay.” David, a NY-based visual artist who was recently featured on VAMP, participated in Nando’s art residency earlier this year. Nando tells us that he met David Paul Kay on Instagram, “I know and contact many artists through social networks; they are a great springboard to get to know us, undoubtedly ... I proposed to invite him and work some works - site specific - here and it seemed like a very good idea. I have some very good artists with a new gallery
in Marbella, which they offered me when I wanted to present a project, and I thought it was time to match it with ArtMarbella.” Nando Argüelles creates exhibitions and projects almost ad hoc to the space and content of the space, “creating a communion with the established and the works of the guest artist. What is important for me is the connection with the person who creates, for which I create a coexistence of time to shape that project as an artistic residence specific...” He creates a “normally collective and representative project of my artists in spaces that are unique and somewhat different”. In various curator projects and exhibitions in different cities and spaces, such as museums, official exhibition halls, private houses etc, Nando crafts his own habitat, which is becoming a trademark of Nando Argüelles Art Projects. “I just have to seduce space and there I go! I create the project afterwards according to the space or my mood that the selected works produce for me; maybe I have a part of the Renaissance ... because I am passionate about any artistic representation that touches me, no matter the discipline in question... I think this is a way of life, of oxygen, of pleasure, immaterial.” Curious to know how Nando goes about choosing artists to work with, he honestly
explained, “Forgive my insolence for declaring that ‘I am a good artist selectionist’, but if it is true, I do not have complexes or clippers to address any artist for not having curriculum vitae… I propose and from there, if we are both interested, then we begin to study the possibilities of expo, project, promotion, etc Nando continues to explain, “as in the case of the next expo,‘Indócil’, with a very young edge with hardly any CV that I met in a street stall with her works - from there we have given way to produce for the expo, it is really exciting...” The exceptional curator describes his selection as “eclectic”, explaining that when asked ‘What is your gallery line regarding the artists you select?’ His response is always, “I may not have a line! I have a curve!” He laughs it off. Argüelles is preparing to present a project with Spanish artists in NYC next Spring in collaboration with David Paul Kay. Nando explains that they “have established a very good friendship and he has really drawn attention to my way of directing, projecting, selecting and getting involved with the works, artists and spaces. SALMON, BRAISED LETTUCE, CRAB Serves 4 Ingredients 4 pieces salmon, 180gr (skin on, scored) 2 heads baby gem lettuce, halved 16 new potatoes (cooked in the skin and then peeled, halved) Thyme 50ml fish stock 60g peas Dill, chopped ½ lemon, juice 50g butter Salt Pepper Oyster leaves (optional) you can substitute with blanched samphire Beurre Blanc ½ cucumber, seeded and sliced 250g butter 125ml white wine 30ml Chardonnay vinegar

50gr shallots, finely chopped 10g garlic, chopped 2 white peppercorns 60ml fresh cream 1 lemon, juice ½ lemon, zest Method: For the beurre blanc, place the wine and vinegar in a pan, add the shallots, garlic and peppercorn. Place over a medium flame and cook to get a syrup like consistency. In a food processor blend the cucumber with a pinch of salt and place in a bowl. Add the fresh cream to the pan and increase heat. When the liquid starts to boil, reduce the heat and start to whisk in the butter until it has all been incorporated. Remove from the stove and add the cucumber to infuse. Allow to take the cucumber flavour and pass through a fine sieve. Adjust seasoning to taste. Keep warm. In a non-stick pan place a dash of oil, heat and
put the salmon fillets skin side down cook for approximately 3 minutes until golden and crisp; flip over and repeat. Remove from the pan and place on a tray in a warm place. In a non-stick pan drizzle some oil and heat; place the baby gem lettuce flat side down to get a nice colour flip over and add a sprig of thyme and some cold butter. Baste until cooked (do not over cook it needs to retain its shape); transfer to a dish and keep warm. In a pan place the fish stock to reduce then add the potatoes, peas, and cook for a few minutes. Add some butter, lemon juice and the chopped dill season to taste. Brush the oyster leaves with oil – dress the plate as in the photo.

Orange Crêpe Soufflé:
For the Crêpes 100g plain flour 2 eggs 300ml semi-skimmed milk 1 tbsp sunflower oil Pinch salt For the Crème Anglaise 235ml heavy cream 10ml vanilla extract 4 egg yolks 65g white sugar For the Soufflé Mix 185g orange juice 75g milk 45g castor sugar 3 egg yolks 30g flour 36g unsalted butter 45g Lerina liqueur For the Meringue 150g egg whites 40g castor sugar Crêpes: Put 100g plain flour and a pinch of salt into a large mixing bowl. Make a well in the centre and crack 2 eggs into the middle. Pour in about 50ml from the 300ml of semi-skimmed milk and 1 tablespoon sunflower oil; then start whisking from the centre, gradually drawing the flour into the eggs, milk and oil. Once all the flour is incorporated, beat until you have a smooth, thick paste. Add a little more milk if it is too stiff to beat. Add a good splash of milk and whisk to loosen the thick batter. While still whisking, pour in a steady stream of the remaining milk. Continue pouring and whisking until you have a batter that is the consistency of slightly thick single cream. Crème Anglaise: In a small, heavy saucepan, heat cream and vanilla until bubbles form at edges. While cream is heating, whisk together egg yolks and sugar until smooth. Slowly pour 1/2 cup of hot milk mixture into egg yolks, whisking constantly. Gradually add egg yolk mixture back

For the crepes Before starting this Lerina Crêpe Soufflé recipe, make sure you have organised all the necessary ingredients. Heat the crêpe pan, and then pour the equivalent of a small ladle of crêpe batter. Spread the batter in a thin layer over the whole surface of the pan. When one side is brown, flip and cook the other side. Repeat the operation until you have the desired quantity (count one crêpe per person). In a mixing bowl, tip the egg yolks. Sprinkle the castor sugar in a thin stream. Blanch the ingredients using a whisk. Add the flour. Combine again with a whisk. Pour the milk and the orange juice in a saucepan; bring to a boil. Pour the milk and orange juice over the blanched preparation. Transfer the preparation into the same saucepan used to boil the milk, and cook over medium heat, whisking constantly until thick. Add the soft butter, cut into cubes, and the Lerina. Combine with a whisk, and then spread the preparation on a baking sheet so it cools down quickly. For the soufflé mix In a stand mixer, tip the egg whites, the sugar and a pinch of salt. Beat until stiff peaks form. When the cream is cold, transfer into a mixing bowl. Add the beaten egg whites and combine gently with a rubber spatula until homogeneous. Place a crêpe on a plate. Make sure the plate you are using is suitable for the oven. Pipe some soufflé preparation on one half of the crêpe. Spread evenly with the back of a spoon. Gently fold back the other half of the crêpe on top. Sprinkle with icing sugar and bake at 200°C for approximately 10 minutes. Once baked, garnish with forest berries. Place a spoon full of homemade orange marmalade and a spoon full of Crème Anglaise. Dust with icing sugar before serving. << ROAST PIGEON WITH LEG CONFIT TART SERVE 4 4 squab pigeons Sprigs of thyme ½ bay leaf 30ml vegetable oil Garlic clove 50gr butter Kale 4 short crust pastry tart (baked blind) 4 large cauliflower florets 1 lemon, juice 15ml sherry vinegar 250gr duck fat
For the Pigeon Jus 50ml vegetable oil 50gr pancetta 3 shallots, diced 1 stick celery, diced 1 carrot diced 2 peppercorns Thyme Bay leaf 200ml red wine 50ml merlot vinegar 1.5l dark chicken jus Salt For the Parsnip Puree 300g parsnips, chopped 40g butter 300ml milk 200ml cream (reduced by half) Thyme Salt Pepper Start off by making the sauce. In a pan heat the oil, add the pancetta and cook until golden and caramelised. Add the shallots, celery, carrot, pepper corns and cook until golden. Deglaze with the vinegar, reduce wine and reduce. Pour over the chicken jus and add the thyme and bay leaf. Bring to the boil and reduce heat; simmer for 40 minutes. Strain through a fine sieve to remove any residue and return to heat over a low flame. Reduce to a sauce consistency adjust seasoning just before serving. Place parsnips, butter, thyme and a pinch of salt in a pot and cook over a low heat until parsnips are soft. Once cooked, strain, remove thyme and place parsnips in a food processor adding just enough milk to get a smooth puree. Pass through a sieve, add the reduced cream (gradually) to get a smooth consistency and season to taste. Return to a clean pan and cover; keep warm. Wipe the pigeon dry and remove the legs. Salt the pigeon legs for 30 minutes to draw out any excess moisture, rinse off the salt and pat them dry. Render the fat down to 120°C; add the legs. Cook in an oven, set at 120°C, for 2 to 3 hours until completely cooked. Allow to cool and remove from the fat, remove bones. Season to taste. Fill the tarts with the seasoned pigeon leg meat. Warm a generous amount of oil and when hot, fry kale until transparent, drain and place on absorbent paper, season with salt. Heat the oil in a non-stick pan and sear the pigeon all over until golden. Add a piece of garlic and some thyme as well as a good piece of butter. Baste until golden brown. Transfer to a roasting tray and cook in a pre-set oven at 185°C, cook for approximately 8 minutes. Remove from the oven and allow to rest. Carve off the bone and serve as shown.

ROAD A TRIPPIN’ U.S.A
t a time in my life when I had no commitments, I decided to embark on what I would call “a once-in-a-lifetime vacation”. Flying towards the USA, this 7-week road trip involved setting foot in 24 states, visiting 9 national parks and 10 major cities.

I chose to do this trip with an organization that made all the necessary arrangements. Travelling alone was ideal as I got to meet up with fellow solo travellers, allowing us to journey together. The road trip involved a lot of van time, and our night lodging was mostly a tent in a campsite. On a good day, we’d bump ourselves up to cabins, and in big cities, hostels or hotels. The trip star ted off with a few solo days in New York City before life on the road to enjoy a bit of me-time with a touch of luxury hotel living. A few days later, the roadtrip began in New Jersey as we drove west through the Nor th of the country, hitting spots like Chicago, Yellowstone National Park, and Yosemite National Park. Once we arrived in San Francisco, we headed down the coast to LA, and drove back Eastward through the South of the country through Las Vegas, the Grand Canyon, Austin, New Orleans, Washington D.C, and everywhere in between. Camping is the definition of ‘roughing it’. Prior to this trip, I’d never camped, which makes me wonder why I thought this type of trip was such a good idea. Simply pitching a tent was no easy feat, but I must admit, that doing it almost every day turned me into a pro, and we sometimes raced to complete it the fastest. Sleeping in a tent for 6 weeks made me miss the comfor t of a bed. The most comfor table sleeping options were prone or supine, finding the right spot between a literal rock and a hard place. On cold nights, I would mummify myself in blankets, restricting my mobility but attempting to retain my warmth. The tent’s height, or lack thereof, helped me to improve my squat technique, and getting dressed inside the tent required some creativity with a touch of contor tion. Experiencing this whole trip with a group eliminated the notion of privacy, even more so when sharing a tent with somebody who

was initially a stranger. Having said that, once relationships were formed, my tent buddy became my best friend, and we were inseparable. The experience of camping allowed me to enjoy the simpler things in life. As a group, we took turns performing chores like cooking and cleaning, and sitting outside for a group meal became something special. At a par ticular campsite, we caught our own
fish and had it grilled for dinner, something I had never done before and haven’t done since. Suddenly, chilling out around a campfire eating s’mores and sharing stories became second nature. In the middle of the desert or at a high altitude at a national park, phone service would be absent, and passing the time became a more sociable act. Occasionally, showers were timed, and I’d contemplate the actual need to wash my hair. Other times, showers were completely
lacking, and we would spend a couple of hiking days without a wash, merely using wipes. I got to wind down with a book in hand, or some informative reading within the park about how to bear-proof your camping area, and how to react should an encounter happen! In the end, the shor tcomings of such “luxuries” were nothing compared to the >>

TRAVEL being in the great outdoors. Camp life may not be for everybody, but it was incredible and without it I would have never slept under the stars and heard coyotes run by in the near distance. Rising at dawn to a frost covered tent and the smell of wet grass is something that I will never get over, and the sound of the waking birds and the rustle of the leaves was a blissful wake-up call. With a great amount of road distance to cover, we drove through some of the most scenic spots. The winding roads leading up to a higher altitude gave us glorious forest views, and the drive along the West coast was something on a whole other level. Some camp nights were mere simplicity where we would just sleep through the night and head back on the road the following morning. However, most times, we were a shor t distance away from some of the most amazing places. The national parks were undeniably the highlights of this trip, if not of my life. Being chased by a thunderstorm as we walked a trail in Badlands National Park was exhilarating, until it finally caught up to us and drenched us in rainfall. Visiting the 2.2 million acre park of Yellowstone was amazing.
Practically a volcano just waiting to blow, the park was a geological wonder, with sulphuric acid pools, gushing waterfalls, erupting geysers, hot springs, and extensive wildlife. Yosemite was simply incredible, despite the fact that the drought got the better of the lakes and waterfalls. The views of the extraordinary cliffs and valleys were an unforgettable sight, and standing at the enormous base of an 80-metre high giant sequoia tree made me feel like the tiniest being. Walking along the river valley at the foot of the cliffs of Zion National Park carried with it a sense of serenity. Our quick stop at Horseshoe Bend gave us an overwhelming birds eye view of the awe-inspiring marvel, and as we hiked the rim of the rust-coloured Grand Canyon, I would stop atop the edge of the cliff and look ahead, views as far as the eye could see. Watching the sunset, we observed the vivid colours of the canyon as the shadows on the peaks and valleys changed, seemingly bringing them to life. I will never forget the feeling from the helicopter ride over the Grand Canyon, when my stomach dropped as we flew over the threshold between woodland and canyon.

To witness the rising of the sun behind Monument Valley was unique. The sun silhouetted the larger-than-life monuments as the sky changed from black, to red, to blue. Learning about the deep history of the natives and the way they live a spiritual life in the depths of the sandstone valley was astounding. If we weren’t at a park or a city, we were somewhere in between making the most of the oppor tunities that lay ahead of us. Paddling down the thrilling white waters of Snake River in a raft, walking around the perimeter of a glorious lake, and riding on horseback in the hilly woods allowed us to appreciate the diversity of our surroundings. After seven weeks of a jam-packed itinerary with constant company, I learnt that life on the road is the best way to see the beauty of a place. I may have missed the comfor t of my bed and my own privacy, but once I returned home and had no plans, I lay on my bed in absolute silence, and within two minutes, I could only ask myself, “Now what?”

For many, it is a calm good night routine which includes to stay away from screens and world news before you go to bed but to instead read, reflect and to dive into your own calm universe before dosing off. Do you like herbal tea? Do you have a favorite instrument? I am not saying, chamomile, valerian, lavender and lemon balm turn back your biological clock over night but have a cup, combine it with a nice piano or mandolin instrumental and see the difference to your former good night routines. Fur thermore, take a look onto your daily habits. Do you sit around most of your day? In a car? At a desk? On a couch? A body that is not physically exhausted (in a good way) by exercise will often find rest harder than a body that had to run that extra mile. This seems simple but give it a try, ideally not too close to bed time but for example after school, university or work. It’s a great way to unwind and to release happy hormones like endorphins or cor tisol that help you to cope with stress.
As we grow older, we typically face a decline in the so-called NREM-sleep. This term describes the non-rapid eye movement kind of sleep. It‘s a deep one, that gives you peaceful rest and it’s said to be a pure fountain of youth. NREM-sleep is characterized by ‘slow’ waves and spindles, which give your brain the ideal basis to transfer your memories and new information from the hippocampus to the prefrontal cor tex. The hippocampus provides the brain’s shor tterm storage, whereas the prefrontal cortex consolidates the information for later. In a nutshell: deep slow wave sleep helps you with processing life; sor ting out what can go and what deserves to stay in your brain‘s long-term storage. In the stage of slow wave deep sleep your brain and body also ‘tidy up’ inside, tackle diseases before they even occur or gain energy to fight bad bacteria or viruses that already manifest in a disease. Ageing often comes with interrupted nights, may it be due to midnight-visits to the toilet or worries that keep us awake. Another and connected reason can be found on a neurochemical level: “These neurochemicals include galanin, which promotes sleep, and orexin, which promotes wakefulness. A disruption to the sleep-wake rhythm commonly leaves older adults fatigued during the day but frustratingly restless at night,“ writes Yasmin Anwar for the Berkeley
