What are You Hungry for?

Life is simple here, and we embrace every season. Lose the crowds and come dine on fresh food the farmer raised. Drink in a hand-crafted beverage from the still or the tap. Smile when you remember what it feels like to jump in a lake. Hike through our woods and forage for lunch. Sway to the music at a concert. Gather around a campfire and cook s’mores. And after all that, bed down in a quaint B&B, vacation rental, country inn, or resort hotel.

UPGRADING YOUR VACATION PROPERTY

Most of us love to focus on our home’s appearance We take pride in curb appeal, interior design, and overall functionality A home is supposed to make us feel comfortable and at ease It is an environment where we can feel good about relaxing, hosting parties, or just spending time with family Therefore, when we travel, we are usually looking for the same things Style, comfort, and function are the three most important things to consider when booking a hotel or renting a vacation property

If you own a vacation property, and it could use a little TLC to make it more inviting to travelers, think about taking a few of these suggestions to heart By the time you ’ re done sprucing the place up, it will be booked in the blink of an eye! If you ’ re simply planning on using your vacation property for yourself, then why not add style and flare to the space? You’ll feel right at home in no time, and you may never want to leave!

Interior DÉCOR

Your vacation home’s interior should only represent your personal style if you do not plan on renting it out Feel free to add your own unique characteristics to the home if you are going to be the only one spending vacation time in it However, if you plan on renting out the property for a period of time, you will want to keep it somewhat neutral, with only a few decorations that give your style away For example, a neutral bathroom with fluffy white towels and a simple vase of flowers on the vanity says, “I’m comfortable and clean ” A bathroom with a bunch of different patterns and magazine stacked in a basket says, “I’m lived in,” and will remind your guests that they are definitely far from home

Make sure the kitchen is fully stocked with cooking utensils

and any other basic items that you or your guests may need The hardest thing to deal with when renting a vacation home is realizing that you truly don’t have all the comforts Providing a clean surface with a coffee pot in plain sight, and add greenery wherever space seems barren

The use of house plants in various corners of each room offers the illusion of life and breathability This will make it easier to enjoy the space, and will bring a little bit of the outdoors in, as well Pops of color should be sparing but still noticeable, such as a gray living space with tiny hints of purple or blue in throws, décor, and/or paintings Bringing the space to life with minute color additions will bring forth a tranquil energy without becoming to busy to the eye

If you ’ re staying there yourself, you will want to accommodate your own needs, such as how you like your own home’s layout You don’t need to completely replicate what you have back home, but there should be some sort of correlation to show that your vacation property is just as comfortable for you as your off-season house Stock closets with extra pillows and always have extra toiletries on hand for emergencies A functional space makes for a happy guest

Whether you are looking to spruce up your own personal vacation property, or you are hoping to be booked all season long, these inexpensive and practical suggestions will get you well on your way For less than what a single vacation day would cost, you can have your property looking like new; ready for the traveler's market, or ready for your own family to enjoy! Make your home away from home truly inviting, and you will never want your vacation to end

Escape. Relax. Enjoy. These are all the things we want in a vacation, and a tropical paradise checks off everything on our must-have lists. From the Caribbean to California, explore the best of what these islands have to offer, including specialty drinks, luxury resorts, culture, and cuisine.

Take a trip to the British Virgin Islands in the Caribbean, where the water is entirely clear and the granite formations seem like meticulously-placed statues. Or, head to Santa Catalina Island, off the coast of California, for an escape that isn’t too far from home. If you’re looking for a unique destination, try the Commonwealth of Dominica, which is not affiliated with the Dominican Republic. No matter what kind of island feel you’re searching for, these oases have got you covered!

Virgin Gorda

BRITISH VIRGIN ISLANDS

THE BRITISH VIRGIN ISLANDS ARE AN ISLAND CHAIN LOCATED IN THE CARIBBEAN CLASSIFIED AS BRITISH OVERSEAS TERRITORY. THE MAIN ISLANDS ARE MADE UP OF TORTOLA, JOST VAN DYKE, ANEGADA, AND VIRGIN GORDA, WHILE OVER 50 SMALLER ISLANDS DOT THE SURROUNDING WATERS.

Tortola is the capital island, and the largest of the British Virgin Islands Here, you can expect luxury resorts and plenty of tourist attractions, but the locals will beg you to explore the smaller ones as well, in order to get a feel for the unique character that each isle has

Anegada is the second largest island of the chain, and this is where snorkelers and divers go to find that perfect coral reef Natural springs and a wide variety of wildlife make this beautiful island one worth traveling to if you are a nature lover There are so many things to set your gaze on once you ’ re here, from the pearl-white sandy shorelines, to the greenery inland

Virgin Gorda is the third largest island, and is dotted with luxury resorts and villas that make up the island’s lively nature. Spend a day at a yacht club, or relax and enjoy some shopping and local cuisine as you cruise along the eclectic streets, influenced by African, Indian, and Spanish cultures.

The Jost Van Dyke island has much history, right down to its name. The island was named after an early Dutch settler and “former pirate!” Indulge in the delectable cuisine that can be found all over Jost Van Dyke, from barbecue to freshly caught and grilled seafood. The island has old sugar mill ruins to explore, as well as a “natural sea-formed jacuzzi” in the East End

With crystal-clear waters, natural granite pillar formations, and tons of wildlife, your inner-adventurist will feel right at home The artist and foodie in you will experience abundant culture and history, and plenty of islands, both tiny and large, to explore There is truly something for everyone in the British Virgin Islands

CATALINA ISLAND IS A POPULAR DESTINATION IN CALIFORNIA WHEN LOOKING FOR A PARADISE VACATION

SANTA CATALINA HAS A LOT TO OFFER VISITORS, FROM WILDLIFE AND NATURAL WONDERS, SUCH AS THE ISLAND’S HIGHEST PEAK, MT ORIZABA, TO DIVING SITES AND THE RESORT TOWN OF TWO HARBORS.

{SANTA CATALINA ISLAND

Planning your escape from the chaos of the mainland has never been easier, with Santa Catalina Island Known by the locals simply as Catalina, the island boasts about not even having a single street light to stop you from getting to the shorelines This type of style gives you the authentic island feel, without having to take a long trip overseas Simply hop into a boat and sail from the mainland of California, and you’ll soon be in Catalina, which will make you feel like you need to stamp your passport!

The foodie in you will have met their match when they arrive on “Island Time ” Take your pick from street foods that line the walkways, like handmade ice cream in a freshlybaked waffle cone or a cookie from the Catalina Coffee & Cookie Co For dinner, try an elegant waterfront setting where you can taste the juiciest surf and turf around, and wash it all down with the island’s signature cocktail: Buffalo

Milk Buffalo Milk is similar to a White Russian or a Mudslide, with Kahlúa, vodka, crème de banana, crème de cocoa, and a few other secret ingredients

Head to Avalon, where all the fun and nightlife is, and you’ll never have a dull moment If you ’ re not sure what you’d like to eat or what you want to do, take the 3-hour walking tour for samples, as well as interesting facts and background information about the island and its history After you ’ ve eaten your fill, head to Chi Chi Club, where you can party, play pool, and listen to live bands or music from the DJ until two in the morning

As you stroll down the streets of Avalon, you’ll notice the harbors that are decorated with boats bobbing in the calm water Take in the sun and island breeze and you shop, savor, and play in Santa Catalina!

COMMONWEALTH OF DOMINICA {

Not to be confused with the Dominican Republic, the island of Dominica, officially known as the Commonwealth of Dominica, is a beautiful piece of paradise all on its own Dominica sits “midway along the Eastern Caribbean archipelago ” With English being the official language, but Creole being largely spoken among locals, the island has much culture and history woven throughout its shorelines

Roseau is the capital of the Dominica, and that is where you’ll find everything from cuisine to cultural tours, and much more Explore the nearby Morne Trois Pitons National Park, which is said to be the “jewel of Dominica ” Located just under 7 miles from Roseau, in the village of Laudat, is a great starting point for your exploration

Walk through the thick jungle, lined with orchids and ferns, along with abundant wildlife and natural water sources The mountainous terrain is perfect for a day hike, and you will be able to visit many of the highlights there, such as the Emerald Pool, Middleham Falls, Titou Gorge, Boiling Lake, and more To get to some of these highlights, like Boiling Lake, may be a hard journey, but once you reach your destination, you won’t be disappointed Boiling

Lake is a steaming green-g ray pool in the middle of the forest, that bubbles and “boils” constantly Boiling Lake is the result of a flooded fumarole, which is a crack in the earth that vents hot gases, thus causing the “boiling” effect Boiling Lake is the second largest phenomenon in the world of its kind

You’ll likely spend a day or two in Roseau, where the influential British and French cultures fuse together with island style to create a “Rasta” vibe With ships docking, shopping in full swing, live music, and restaurants churning out local creations, there is something for everyone to enjoy in Roseau Luxury resorts can be found along the shoreline, so book a stay in the middle of paradise and explore the outskirts as you see fit

Whether you ’ re looking for something not too far from home, or an oasis that is miles away from your daily routines, these tropical islands are going to make all of your vacation dreams come true Indulge in island-themed cocktails, soak up the sun on a soft, sandy beach, and enjoy the shade from the nearby palm trees It is never a bad time to book a trip to paradise!

Authentic

TALITY

Nothing compares to staying at a place where you ’ re treated like family While large hotel chains and resorts have their place, a stay at a small hotel, inn, bed & breakfast, cottage or condo, whose owners are committed to providing each guest an extraordinary vacation experience, is second to none

For an extraordinary vacation experience, the Superior Small Lodging Association (SSL) has you covered The nonprofit organization represents approximately 150 individually owned lodgings around Florida, each featuring fewer than 75 rooms, all working diligently to ensure guests experience authentic local Florida charm and character, as well as the modern amenities and comforts today’s traveler has come to expect

HIGH STANDARDS

But that’s not all To ensure you ’ re getting the vacation experience you deserve, each property must pass an extensive annual inspection conducted by a professional inspector Inspectors grade everything from general cleanliness to security, amenities and kitchen items If properties fall short, they must address the inspector’s concerns to remain in good standing Those properties that receive a 100 percent score on the housekeeping portion of the inspection are awarded their White Glove Award You can be sure you will be staying

at a lodging that has high standards for cleanliness, security and guest services

An overwhelming number of SSL members not only pass inspection, they get great review scores In 2016, 90% of SSL members received at least a 4 out of 5 traveler review score on Trip Advisor and 20% achieved perfect scores of 5.0! You can see why guests keep coming back year after year

Maybe it’s because members care about each guest They are mostly managed by mom-and-pop innkeepers No giant, lost-in-the-sauce hotel chains here Nor will you find resort fees or parking fees that many properties tack onto your bill when you checkout

SO MANY OPTIONS

The options offered by the array of properties make it easy to find one that fits Looking for an apartment with a sitting room and kitchen? How about a condo or cottage on the beach? Or maybe a junior suite with a kitchenette on the Intracoastal will suffice Need just a hotel room? No problem Superior Small Lodging has the perfect gem to make your vacation experience everything you ’ re looking for

Beer in Bir mingham, Alabama

The southern region isn’t well known for its craft beer scene, but that hasn’t stopped the south from flourishing in the industry Generally, we think of Florida as being one of the only, if not the “ one and only” state that produces brews in the south, but Alabama has recently been pushing ahead in the race Birmingham, the biggest city by population in Alabama, now has tons of microbreweries and craft beer taverns popping up all over town With Birmingham statistically being the fastest-growing city in the entire nation to drink craft beer by volume, it’s no surprise that these breweries are becoming popular stopins for travelers Go see what’s brewing in Birmingham, and visit one of these top southern taprooms

Start with the Avondale Brewing Company As one of the newest breweries in the area, Avondale is eager to live up to the hype Their building, located just east of downtown Birmingham, may not seem like much, but over 100 years of Alabama history is richly embedded within its walls The building that was once a saloon, pharmacy, a bank, and even a brothel, now houses Avondale’s open fermentation tanks, along with rows and stacks of their original kegs

Avondale was opened by Coby and Hunter Lake, two brothers with an extraordinary vision to create a brewery that catered to the history and folklore of the local area Once they purchased the building, they brought on Craig Shaw, the brewmaster that made all the “magic” happen Today, an expert team takes charge in everyday brewing techniques to provide patrons with the best craft beer money can buy

The Avondale Brewing Company is not just a place that brews the good stuff, though It’s also a pretty cool place to hang out From the ghost stories to the live concerts and many events, Avondale brings its customers something to look forward to every week Concerts include all genres, and events vary by season, so be sure to check out www avondalebrewing com for tickets, pricing, and more information

To schedule a tour of the brewery, go to Avondale’s website at least 48 hours in advance All tours are guided by volunteers, and will cost about $15 per person The tours come along with a “ swag set,” as well as a full pint of beer Tours are roughly about an hour long, and each tour can accommodate up to ten people While you ’ re checking out the brewery, you may want to request that your tour pint be filled with one of the brewery’s most recommended and highly-acclaimed concoctions, the Spring Street Saison At 7 2% ABV, Spring Street Saison has a golden-honey flavor with fruit bitters undertones The fruit reminds us of the tropics, and yet the brew itself aids the sensation of being on the front porch of a quiet farmhouse As Avondale says, “ one si p and you will fall in love ” Avondale was opened by Coby and Hunter Lake, two brothers with an extraordinary vision to create a brewery that catered to the history and folklore of the local area.

The long-standing influence of Creole and French culture in Cajun recipes have proved Louisiana to be both a satisfying and intriguing nook of the United States With a plethora of historical sites to visit, and hundreds of restaurants to try out, Louisiana makes for the one and only place to obtain authentic Cajun creations

For a night of elegance, and a true test towards one ’ s Cajun etiquette, try Restaurant August, located in New Orleans. August thrives in the historic Central Business District, where it housed in a 19 th century French-Creole influenced building. The structure in which August produces its creations is a perfect foundation for the originality and quality that the restaurant possesses.

“For a night of elegance, and a true test towards one’s Cajun etiquette, try Restaurant August, located in New Orleans . ”

With a main dining area and options for private dining reservations, August is ready and willing to accommodate all of your foodie needs Private dining can seat up to twelve people in the Tasting Room, and comes complete with a customized Chef ’ s Tasting Menu and wine pairing The Chef ’ s Tasting Menu, as well as the general dining menu, change seasonally, so the freshest, local ingredients are alwa ys being used.

You’ll find dishes on the menu like a salad of grilled Alabama peaches, served with brûléed goat cheese, pistachios, and jalapeños. As a hot appetizer, look for the Bayou pigeon crawfish and tête de cochon, cooked with buttermilk whey heirloom grits. Tête de cochon is a type of local head cheese, which pairs beautifully with the crawfish, and meshes together two timeless Cajun classics.

Cajun cuisine is rich in seafood that is cooked by frying or marinating over a long period of time, such as in a hearty stew. At August, you’ll be able to try scrumptious pairings like the “breaded flounder” with wild mushrooms, shrimp, and crab fat The combination of August’s new age techniques and influential surroundings leaves guest with palates eager for a taste of unique Cajun fare

For a less formal atmosphere with food just as delicious, try the Jacques-Imo’s Café This eatery boasts an eclectic vibe, complete with a “quirky chef and owner, Jacques Leonardi, who’s a party all by himself,” says the Travel Channel Jacques-Imo’s has been serving up “real Nawlins food” and is noted for being “not famous” since 1996 The waits are long, as everyone is always looking for a bite out of this little slice of Cajun heaven, so make sure you arrive early Parties of four or less will be seated on a first-come, first-serve basis, but larger parties may make reservations up to 30 days in advance

While Jacques-Imo’s is recommended for dinner, they do have a sister restaurant called Crabby Jack’s, that is a perfect lunch spot Both restaurants are located in New Orleans, with Crabby Jack’s being on Jefferson, and Jacques-Imo’s bustling in Uptown At the café, order one of their specialties, such as Austin Leslie’s Fried Chicken, which has everyone buzzing Served with perfectly round pickle slices resting on top of the specially-fried, golden-brown chicken, the meat can be plated in a mixture or all white meat can be served, for a dollar more The famous fried chicken comes with two sides, like Corn Macque Chow and Smothered Cabbage There are plenty of other sides to choose from as well, such as mashed sweet potatoes, red or butter beans and rice, country greens, potato salad, slaw, beets, or shoestring fries

“While Jacques -Imo’s is recommended for dinner , they do have a sister restaurant called Crabby Jack’s , that is a perfect lunch spot.”

Another locals’ favorite, made to order, is the DeepFried Roast Beef Po Boy, which is also topped with pickles and served on a warm bed of gravy. The Po Boy is about as authentic as it gets when it comes to Cajun creations, but if you ’ re looking for something a bit more hearty and just as culturally filling, try the Crawfish or Shrimp Étouffée, which is served over rice. Don’t ask, just eat. You won’t be disappointed.

RESTAURANT AUGUST JACQUES-IMO’S CAFÉ CRABBY JACK’S

Lafayette, LA

Though most visitors to Lafayette might sooner associate the area with our more famed Cajun and Creole culinary fare ( jambalaya, crawfish, and gumbo), it is the rice and gravy-centric plate lunch that fuels the people of Louisiana’s Acadiana region Consisting of meat, a gravy-covered starch, a pair of vegetable sides, and a simple piece of bread and often all served on a single plate the plate lunch emphasizes speed, affordability, and caloric heft

A close cousin to the meat-and-three restaurants found throughout the South, the history of Lafayette’s plate lunch houses is rooted in the marriage of rustic, homestyle cooking with the convenience offered by the buffet line In the late nine-

teenth century, cafeteria-style lunchrooms appeared throughout America, introducing patrons to self-service, the steaming lunch counter, and the ubiquitous plastic tray

In South Louisiana, rural meat markets were likely the first to sling portable plate lunches to a hungry working-class crowd

Instead of disposing of their scraps and other unsold cuts, butchers smothered these meats in a rich, roux-based gravy for tomorrow’s lunch With the addition of rice a regional commodity and staple of local tables and a stewed vegetable or two, the plate lunch was born

Growing up in his great-grandfather’s butcher shop, David Billeaud remembers

learning how to grind meat for sausage, prep pork chops, and debone steaks as soon as he was tall enough to reach the butcher’s block He’s taken that expertise to T-Coon’s, his plate lunch restaurant, located in central Lafayette There’s meatball fricassé, smothered pork, and smothered beef, all immersed in a peppery, brown gravy Appearing alongside these everyday standards, daily specials round out the menu

At each and every plate lunch house scattered throughout Lafayette, variety is crucial The menu at Landry’s Café resembles a labyrinthine board game of weekly standards, daily specials, side dishes, and additions

There’s stuffed pork roast offered every week, stuffed brisket every other week, and cornbread dressing every third week.

Hamburger steak is prepared five ways, boosted by a variety of toppings for each day of the work week For sides, there’s white beans, red beans, and black-eyed peas Smothered veggies, salads, and casseroles One can go dizzy just thinking over what to order

And while rice and gravy is at the center of all plate lunches, without gravy, rice ain’t nothing but a grain The gravy at Laura’s II comes several shades darker and a pinch spicier than most Molasses in color, this gravy recipe dates back to the late-1960s, when Laura Williams Broussard began selling takeout lunches from the backdoor of her own home kitchen Today, Madonna Broussard carries on her grandmother’s legacy at the aptly named Laura’s II The steam table displays a panoply of items that have been fried, stewed, barbecued, smoked, stuffed, smothered, covered, and maque chouxed

At the Creole Lunch House, owner Merline Herbert sees the plate lunch as nothing less than life-affirming, a celebration of South Louisiana’s legendary

joie de vivre and the blissful comfort that an assortment of foods and flavors can provide “It’s a little bit of this and a little bit of that,” she says For firsttime visitors, Herbert, after greeting you with her trademark grandmotherly smile, might fix up what she calls the Rookie Plate, a sampling of just about everything For her regular customers its meatball fricassee on Mondays and Wednesdays Stuffed baked chicken on Tuesdays and Thursdays Fricasseed chic ken dished up everyday And rice and gravy served everyday

For a listing of plate lunch restaurants as well as behind the scene images and stories of some of Lafayette’s oldest spots handed down through the generations visit LafayetteTravelcom/PlateLunch

Restaurant weeks are a great way to try out new or fancy places without having to pay full price or wait in a horrendous line of other hopeful patrons, straining their bodies and their wallets simply to get on the reservation list Instead of comparing your dinner experience to Black Friday, simply look up your local restaurant weeks, where you can find information on how to receive these deals, and which restaurants will be participating in the week as well

Take for example NYC’s Summer Restaurant Week This summer, the restaurant week will be from July 24 th to August 18th, with reservations being open for booking on July 10th More than 300 different restaurants will be participating, as with every year, all throughout NYC Restaurant weeks are tricky, because they are not always available on the weekends, such as with NYC’s week Most restaurants will only participate during the week, so Saturdays and Sundays you’ll have to pay full price as normal There will be prix-fixe menus, where typically you’ll get to choose from 3-4 choice appetizers, 3 entrees, and a minimum of two desserts To go along with the prix-fixe, many restaurants will offer drink specials and à la carte options to add to your night out Reservations are highly recommended for all NYC Restaurant weeks, but walk-ins are welcome any time If you plan to run through the week with more intimate company, such as you and your spouse, you may have better luck getting seated, rather that traveling with a larger party

Make sure you look up local information on your region’s website, to stay up to date on restaurant w eeks in your area. Bigger areas, like NYC, will have many more participants as far as the week goes, but higher prices as well. If you have a restaurant week in your area, but you don’t see the restaurant that you wanted to try participating, you can try calling the restaurant and they will usually come up with a way to accommodate you. There are many different restaurant weeks throughout the year, so if the summer season isn’t in your budget, save for a fall or winter night out, and pair your dinner with a special holiday stout.

When we think of college, we think of cheap Chinese takeout and dining hall dinners There was nothing better than ordering in on a gloomy day, or heading down to the buffet for brunch with a group of your newfound friends But college towns are becoming more and more well-known for their prestige and their ability to keep those co-eds staying long after they walk across the stage to receive their degrees One town keeps us on our toes every year when it comes to our inner foodie spirits and our love for a good education: Cambridge, Massachusetts

Cambridge boasts two of the most awarded and coveted higher-education institutions in

the country, and daringly, the world When Cambridge is brought up in any conversation, Harvard and MIT (Massachusetts Institute of Technology) undoubtedly follow suit Because of these two gems, and the close proximity to the ever-living tourist town of Boston, we have to mention Cambridge as one of the hottest areas to both grab a warm meal, and stay for a while

Whether you ’ re renting a bike and trekking through the campuses for a tour, or you ’ re taking in the scenic views of the Charles River, Cambridge has something to offer everyone New eateries are constantly popping up, and there’s everything from BBQ to Middle-Eastern cuisine, depending on what you ’ re craving

BBQ The E volution of

BBQ has been an American favorite for decades. Whether you’re a purist for the pig, or a sucker for brisket and a good smoked chicken, BBQ makes everyone a little bit happier. Take a few steps backwards and follow the timeline of BBQ Embark on a smoke-filled, wood fire-burning, sauce-covered journey, where you’ll experience the complete evolution of BBQ, from the Caribbean settlers’ pig pits, to the new-age fusions, like cheesy BBQ nachos.

In the beginning , BBQ, or barbacoa, was the simple invention of cooking meats over an indirect flame The wood was usually young and green, or slightly wet, to provide the billows of smoke for that charred flavor, as well as to prevent the fire from becoming too hot, burning too fast, and thus producing a burnt meal

The original barbacoa came from a term that the Spanish provided to the early settlers, as the natives of Hispaniola and the islanders were spotted cooking their feasts in this fashion According to the Smithsonian, "as the spanish explorers who followed Columbus turned their expeditions north, they brought the cooking technique with them In 1540, close to present-day Tupelo, Mississippi, the Chickasaw tribe, in the presence of explorer Hernando de Soto, cooked a feast of pork over the barbacoa ”

As settlers moved north towards the Carolinas and Virginia, they brought this cooking style along with them The main four styles of American BBQ break down into: Carolina, Memphis, Texas, and Kansas City As you can imagine, the local culture, along with the new culinary introduction, led to the diffe rences in these BBQ styles When referring to Carolina BBQ, the sauce is vinegar-based, and they tend to stick to pig as the traditional meat choice In early times, when BBQ was becoming a staple, the southern states relied on pork as their main food source, because pig farming was inexpensive and promising “Unlike cows, which required large amounts of feed and enclosed spaces, pigs could be set loose in forests to eat when food supplies were running low The pigs, left to fend for themselves in the wild, were much leaner upon slaughter, leading Southerners to use the slowand-low nature of BBQ to tenderize the meat And use it they did ”

When you’ve spent over 80 years in syrup... tradition tends to stick.

“The use of pork then became sacred, and authentic BBQ is now viewed as being a slow-cooked, juicy piece of pig.”

The vinegar-based sauce came from the Caribbean tradition of basting the meat to seal in the juices and thus provide a more tender bite The juices were then incorporated into the sauce, and the entire hog was covered in the tangy, flavorful glaze The chefs took pride in their creations, and their pig farms, therefore taking the best possible care of them to provide the best meat The use of pork in the Carolinas is said to be the original birthplace of early-tradition BBQ

The Carolinas are also known for their mustard-based sauce, which stems from the large population of French and German immigrants that settled in the land The Germans are wellknown for serving up a spicy mustard with their brats and other types of sausages The French go hand-in-hand with that Dijon that we ’ ve all come to love so much Honey is a southern staple, and vinegar helps cut the sugar Add it all together and you ’ ve got a golden Carolina mustard-based BBQ sauce that will knock your socks off

As settlers moved into the thick of the south, they came to Memphis, which was perfectly set up as a port along the Mississippi Because of this, Memphis received all sorts of imports and other goodies, including molasses and brown sugars, which led to the ultimate invention of the dark,

“ Texas BBQ coat-tailed off of the Carolinas, in following their authentic barbacoa cooking style with wood, but they switched it up when it came to the meat being used.”

Texas BBQ coat-tailed off of the Carolinas, in following their authentic barbacoa cooking style with wood, but they switched it up when it came to the meat being used Texas is known for its cattle, so the meat used here is mainly beef Texas takes pride in the flavor of the meat itself, so you’ll notice the main difference in the flavoring of the wood chips and the overall smokiness of the tender morsels

The meat in Texas is smoked until it practically falls off of the bone, or until the brisket turns itself into pulled-pork’s distant cousin In traditional Texas BBQ, the sauce is the last thing to go on, after the meat hits the plate steaming The sauce does have a similar flavor to Carolina BBQ, in that Texas also had German immigrants

Kansas City, the final BBQ style, was birthed by the Memphis traditions “In the early 1900s, a Memphis-born man by the name of Henry Perry settled in Kansas City and opened a BBQ restaurant In the restaurant, which Doug Worgul, in his book on the history of Kansas City BBQ, credits as the origin of the city’s particular barbecue style, Perry followed the style of his Memphis roots, using a sweet and spicy BBQ sauce He did not, however, adhere to the stringent requirements that called for a pork-only BBQ style, and allowed beef and other meats to be sold as well Expert Dotty Griffith refers to Kansas City BBQ as the ‘ultimate amalgamation of East and West’ BBQ ”

Food Traveler | Summer 2017 | 71
Kansas City is known for it s spicy-sweet sauces of a thicker variety. The sauce is similar to the tomato-based, dark sauce that Memphis created, only slightly thicker, and usually served on the side, or poured over the meat just as it is being plated.

Kansas City is also known to use a wide variety of meat The area isn’t shy when it comes to serving up BBQ chicken, turkey, and mutton This branch that grows away from the traditional pork, makes Kansas City one of the most evolved styles of the authentic barbacoa cooking tradition

Since these traditions were born, and the “BBQ Belt” came to life, tourists and BBQ lovers from all over the country have wandered hungrily towards these areas to taste the “real BBQ,” and get a feel for the differences in each style From national BBQ cooking competitions and festivals, to smaller , more intimate food trails and BBQjoints, you will findyour preferred style in one of these original areas History can only provide the facts and legends that essentially is American BBQ today Let your taste buds be the true judge, and head to the belt for your authentic BBQ. After platefuls of the specialty that should be considered its own foodgroup, you’ll see why BBQ is so thickly embedded in America, and why its evolution only gets tastier, year after year

Mumphord’s Place has a large menu featuring Texas barbecue staples such as brisket, sausage and pork ribs Although you can’t go wrong with these, Ricky suggests you try the turkey breast, a

mouth-watering culinary treat The potato salad is good stuff, but it’s the green beans - complete with garlic, butter, and onions - that truly rounds out the meal Be sure and leave room for the homemade chocolate cake dessert!

Limon’s BBQ is owned by Lupe Limon, whose family has been in the meat packing business for forty years Limon’s BBQ cooks on a revolutionary rotisserie barbecue pit; it’s an original Herbert Oyler purchased at the 1968 World’s Fair in San Antonio by his great-grandfather

Lupe’s brisket, cooked evenly and slowly, has an appealing consistency throughout and is smoked with a mix of mesquite, oak, and pecan woods The flavors really come through in the beef brisket and their pork baby-back ribs

The sausage and German potatoes are both from closely-held

family recipes and are not to be passed up Be sure to grab some of their packaged beef jerky for the road!

Does the cooking style and type of wood make a difference? Try all eight BBQ joints on the Coastal Texas Barbecue Trail and reach your own conclusion!

Summer and California go together like wine and cheese It is an age-old combination that seems to rest easy within the mountain ranges and along the 800+ miles of coastline that the state offers Whether you ’ re looking for an outdoor adventure exploring the area ’ s natural wonders, or you ’ re leaning more towards exquisite food and vibrant nightlife, California has something for everyone It isn’t all about Disneyland and Hollywood There is so much more to the Golden State, and these top summer destinations will show you why Go sightseeing and discover California like a local!

A Night Out on the Town

If you ’ re looking for an authentic and historic night out, where you can explore your surroundings just as much as your cocktails, then head to San Diego’s Gaslamp Quarter Known as the “Historic Hear t of San Diego,” the Gaslamp Quarter is a district comprised of about 16 blocks of Victorian architecture that boast nearly 200 different restaurants, just under a dozen nightclubs, and right around 50 bars to hop from It is quite a busy district, and the outlets are tiny, but getting elbow to elbow with the locals is what makes this place so much fun Explore the grandeur of San Diego’s history with people who know how to have fun

If you ’ re touring from out of town, an easy trolley ride will get you to and from the district For rentals and those who live nearby, the district is easily accessible via the freeway Whether you ’ re into new age or old, Gaslamp Quarter has it all From after-concert parties hosted by celebrities, to tiny hole-in-the-wall bars that make the best late night snacks in the region, no one leaves Gaslamp unsatisfied

Food Traveler | Summer 2017 | 81

For a Vegas-style nightclub, complete with elegant cuisine, opt to spend your evening at the Parq Restaurant & Nightclub With state-of-the-art technology and sound equipment, aerial dancers, bottle service, and the “industry’s best hosts,” you can’t go wrong with a night at Parq Call ahead to make a dinner reservation, where you’ll be greeted with excellent service and sit down to an extraordinary menu

Don’t worry, you won’t be in the midst of the dance floor as you try to enjoy your dinner; The restaurant is separate from the nightclub The menu features shared plates like the bone marrow, with crispy carrots, charred onion, and grilled ciabatta As for an entrée, we recommend the 60-day dry-aged Ribeye, which consists of a whopping 24 ounces of choice beef, served with smoked baby potatoes, chives, swiss chard, and a black garlic demi-glace.

An Outdoor Adventure

For an outdoor vacation you’ll be sure to remember, head to Sequoia & Kings National Parks Both parks are next-door neighbors, and both are known for their extremely impressive giant sequoia trees Sequoias are the largest trees in the world, and can grow to be more than 300 feet tall Their trunks alone can span more than 100 feet in width

The Sequoia and Kings National Parks are essentially the little sisters of Yosemite, and a lot less crowded, so if you ’ re looking for a day of awe-inspiring natural fun, these parks should be at the top of your list Staying a while longer? There are hiking and camping options all over the parks, and plenty of sights to see once you ’ re inside You may want to pack up some camping gear and make a campground reservation If you would rather stay at a lodge within the parks, there are four to choose from, two of which are open year-round!

These parks, although less popular than Yosemite, among others, actually boast some interesting statistics that not everyone is aware of For example, did you know that the Sequoia National Park is actually home to Mount Whitney, which is the highest point in the contiguous United States? In Kings National Park, Kings Canyon is the deepest canyon in America There is also Crystal Cave, which is a beautiful wonder to explore in the summertime, but this is one site that does get pack quickly, so call ahead to make reservations and purchase tickets

Parq Restaurant & Nightclub Gaslamp Quarter Sequoia National Park

You may spot several species of wildlife, such as gray foxes, bobcats, mountain lions, and black bears, which are extremely active all year long Make sure you take the necessary precautions when traveling without a guide or camping in primitive areas

A Relaxing Day at the Beach

A day at the beach doesn’t have to mean hoards of tourists all huddled together on a single boardwalk, waiting in line for an overpriced ice cream while they get more and more burnt by the minute We think a day at the beach, especially West Coast style, should mean soft sand, nearby strips for shopping, and a quiet beach to sprawl out on

Head to the Huntington Beach Pier for a relaxing, fun and sun-filled day The pier measures over 1,800 feet in length, making it one of the longest piers on the entire west coast Beautiful sunsets cast over the pier a nd a stroll to the end makes for a great family photo The pier is free and open daily until midnight

In the big pavilion at the end, you’ll notice Ruby’s Surf City Diner This is a must-visit location in Huntington Beach, where you’ll enjoy the 1940s vibe that is put out by the restaurant, with its red vinyl booths and soda fountains Order a burger and fries with a shake – the shakes are absolutely necessary! Just off the Pacific Coast Highway and Main Street, you’ll come to the Surf City Store, where you can buy as many souvenirs as your heart desires.

Take a whale-watching or dolphin cruise via Newport Landing for around $40, where you will be able to individually or with a group on a private charter During the summer season, you’ll see animals like the giant blue whales and finback whales, plus dolphins, seals, pelicans, and more During the cruise, narrators and crew members will guide you past each landmark and sighting with interesting facts and will answer any questions you may have There is a snack bar and beverages on board, and views from the top observation deck make for great photos of the whales

These Californian summer hot spots are worth the trip, so make sure you stay up to date on all upcoming events before you book your stay Whether you ’ re looking for a fabulous night out on the town with friends, or a relaxing day at the beach with family, you will find what suits you in the Golden State

Florida

Florida is one of the best places to go for seafood, because of its diversity along the coastlines Having the advantage of both the Gulf Coast and the Atlantic Ocean, Florida receives an abundant amount and a wide variety of seafood, including: shrimp, stone crab, mullet, snapper, grouper, amberjack, blue crab, scallops, clams, and more Nearly every restaurant along the coast, and even those further inland, are offering up more than one seafood dish, prepared in more than one way Whether you're looking for award-winning pasta from the local Shell's of Tampa Bay, a massive golden-fried grouper sandwich from

the El Cap Restaurant in St Petersburg, or some of the best conch fritters you'll ever eat from Alabama Jack's in Key Largo, you'll find something delicious almost anywhere in the state.

Shell’s, located in the Tampa Bay area, has been a casual locals’ favorite for years Their Shrimp Pasta is what they claim “made them famous,” and just walking in the place and catching a whiff of the butter and garlic frying in the kitchen will have you drooling The Shrimp Pasta is a heaping portion of linguine that is tossed with fresh garlic, olive oil, and a California white wine and cream sauce Add insane amounts of marinated shrimp to the pasta and you’ll be forced to ask for a

to-go box eventually Shell’s is also serving up fresh shrimp and crab by the pound Grab the Crab ‘ n Shrimp Trio, which consists of ½ lb of Snow Crab, ½ lb. of Dungeness Crab, and ½ lb of peel & eat shrimp Holy seafood!

El Cap's is super casual and has been a local favorite for decades They’ve made their name known across the Bay Area, and for good reason The Grouper Sandwich is out of this world, super-fried with leaf lettuce, a toasted, buttery bun, and house-made tartar sauce El Cap’s is also a great place to go if you ’ re traveling with someone who doesn’t like seafood, because the burgers here are award-winning and as big and juicy as they come

Voted as the #1 Hamburger in the Bay Area by the Tampa Bay Rays affiliate radio station, the World Champ Hamburger or Cheeseburger come with your choice of toppings, including sautéed mushrooms, onions, and peppers, jalapenos, lettuce, tomato, and mayo. When it comes to differ-

California

California is a no-brainer when it comes to seafood With over 800 miles of coastlines to choose from, there is something for everyone, everywhere Here, you’ll find rock crab, rockfish, swordfish, prawns, spider crab, sea urchin, tuna, Dungeness crab, oysters, seabass, ridgeback shrimp, king salmon, and so much more

Renting a boat for a day or taking a fishing charter out on these seafood-infested waters will never leave you empty-handed, but if you ’ re more up for eating and less inclined to catch your own dinner, head to Barbara’s Fishtrap for a great seafood meal Barbara’s has been serving up the good stuff since the 70s, and it only gets better with age, here Enjoy fantastic sunset views of Half Moon Bay, with the option for outside dining, as you explore the overflowing menu

The atmosphere is casual a “homey,” and daily specials listed on their website, such tempura oysters or broiled Mahi Our suggestion? Try the C Pasta, which is linguine tossed nara-style sauce with prawn mussels, clams, calamari, and fi served with warm sourdough b

The award-winning fish and chips or the Dungeness crab sandwich are both excellent choices as well The sandwich is served with house-made tartar, celery, and onions, with a side of soup, fries, or slaw Perhaps the most impressive menu item is Barbara’s Fishtrap Special, which is fish, calamari, scallops, and prawns, all fried golden-brown and served with your choice of starch, along with bread and veggies; Hearty appetites only!

Fishing With Dynamite is another local favorite, located in Manhattan Beach A little more upscale than Barbara’s, FWD is known for its seafood, along with it’s eclectic drink menu The bartender is showcasing fun cocktails like “If I Ever Cease to Love,” which is Sazerac with Koval white rye whiskey, safflower, lemon, and Nonino, an Italian pomace brandy Add some fresh seafood to your table, and you ’ re in for a treat

FWD has a raw bar, featuring littleneck clams, Peruvian scallops, Prince Edward Island mussels, and more, all served on shaved ice Oysters are abundant here as well, with about a half dozen different types to choose from. Not sure which one to order? Opt for the sampler platter, where you’ll be able to try every oyster on the bar!

For big groups, we recommend The Mothershucker, a giant platter than feeds six people, and consists of 15 oysters, 6 clams, 16 shrimp, 20 mussels, 1 entire lobster, and 1 ½ lbs of king crab For $160, you’ll all eat like kings Kick it “old school” if you ’ re not up for the platter, and order the Maryland Blue Crab Cake, served with in-house dill pickles A surefire way to please any picky palate is with the FWD’s version of New England Clam Chowdah, with house-made oyster crackers and other locally-sourced ingredients “New school” entrees are best left for the adventurous Here, you’ll find Grilled Octopus with cranberry beans, Rockfish Ceviche with kumquat, and a few other modern creations

Whether you ’ re in the mood for simple seafood, fried to perfection, or something a little more unique, these places have you covered From the Atlantic to the Pacific, and every bay in between, these states are at the top of the list for a reason Eatyour fillofcoastalcuisine, or tryyour handat catchingyour own meal Whatever dish you ’ re searching for will be found in these establishments, where they’re serving up the freshest seafood, that is definitely foodie-approved!

“Josh is the epitome of why you should never settle, why you should always follow your dreams, and why giving it your all is always the best option.”
G

Josh Garcia is a fun-loving journalist, humanitarian, and the host of the new hit series, The Voyager with Josh Garcia, on NBC Josh did not always grow up in the travel industry’s spotlight, however He had to work his way up from the very bottom, by video-journaling and compromising his logics to follow his heart After realizing he wasn’t meant for the engineering field, he set out to embark on an unknown journey that has left us all in awe

Josh is the epitome of why you should never settle, why you should always follow your dreams, and why giving it your all is always the best option Though he has run into many snags while traveling and making a name for himself in television and journalism, he has made it quite clear that it has never and will never hinder his passion for the world “I didn’t get my bachelor’s degree in ‘Travel Show Host’ or even ‘Journalism ’ Instead, I got my degree in engineering and spent 6 years working my tail off I was miserable Eventually I figured out the travel business, got an agent, and after 8 years of trial and error, I finally landed The Voyager,” says Josh

As an environmentalist and a humanitarian, Josh stresses the importance of plant-based diets, giving back to the earth, and animal welfare His admirable qualities and desire for exploration has led him farther than he ever imagined possible Now, he is consistently posting pictures, writing, and sharing his experiences with his fans via social media, so in between filming and his following, we were lucky to catch him! In this exclusive interview, you’ll learn how Josh found his passion, what kept him going, and the interesting stories he picked up along the way, from trying tendons and pork fat, to being held at gunpoint by the Mexican DEA!

FT: How did you get your start in the travel & entertainment industry? What led you to the position you are in today?

JG: I did not get my Bachelors degree in “Travel Show Host” or even “Journalism ” Instead, I got my degree in Engineering and spent 6 years working my tail off I was miserable They knew it and I knew it Eventually, I was fired from my only two engineering jobs, which was devastating, but probably one of the best things to ever happen to me It forced me to really think about how short life is, and that I better get my act together and figure out what I want to do (not what other people want me to do) I had to do what I hated, only to find out what I loved, and once I realized that I wanted to host my own travel show, I bought a camera and worked my tail off making the best stuff I could It's the hardest question, but if I can clearly answer “What do I want?” (not, “What am I told I

should want?” But honestly, what I REALLY want!), without hesitation, without caring how ridiculous it may sound to my friends, then I'll work my ass off until I get there Eventually I figured out the business, got an agent, and after 8 years of trial and error, I finally landed The Voyager Lots of work, and some luck too It wasn’t easy, but it was worth it

FT: What was your childhood dream job? Did you always have a love for travel, or did you initially have other plans for a career?

JG: I wasn’t ever taught to dream big as a child The idea of doing what I love for work is something I had to figure out on my own in my late 20s So my childhood dream jobs were mostly jobs that don’t exist like steam engine train operator, or driving a giant yellow Tonka truck through dirt

FT: Name the most unexpectedly delicious food that you have tried since being the host of The Voyager.

JG: Sometimes it’s the simplest things that make the biggest impressions I remember a brilliant group of chefs in Barcelona that made me a steamed potato that was hit with a dash of salt, then smothered in a unique aioli that was made from roasted garlic and olive oil That’s it I’ve thought about it everyday since and am dying to make it at home but considering I’ve been on the road since January of 2016, it may be a while!

FT: We hear you like to sing. Is music a central part of each experience in another part of the world? How does music bring you closer to the culture you’re visiting with?

JG: I don’t know who told you this or how you found out but it is absolutely true As much as I enjoy learning and hearing about the music of different cultures, it’s not uncommon to catch me rocking out to terribly cheesy pop songs by my lonesome I’m such a goober in my car or the shower and always trying to give Mariah or Kelly Clarkson a run for their money I fail miserably, but have a blast doing it.

FT: What does a normal day of filming The Voyager look like?

JG: We have a lot to do in a short amount of time And when you factor in a hard-working, hungry crew, unpredictable weather, and all the things I want to do, we ’ re looking at a very long day, and you bet we ’ re up very early and in bed pretty late It’s totally worth it though

FT: How important is cultural diversity? Is it hard for travelers to integrate themselves into local traditions?

JG: To me, diversity is the spice of life When I travel I want something different, a time stamp, a flair, anything to set this trip apart from the others To me it’s very important And truth be told, in my experience, most places have tourism events catered specifically to exposing more people to the cultural diversity of that region Some are quite generic and touristy, others less so Regardless, it’s almost always very accessible if one bothers to get up and seek it out What you seek, is seeking you!

FT: Do you prefer to travel alone or with friends and family? What are the benefits of being a solo traveler?

JG: Don’t tell my mom, but I love the freedom of solo travel It used to scare me to death I thought I’d be lonely and bored, but when you consider that the planet is loaded with friendly, chatty locals and travelers everywhere you go, I was hooked! Solo travel allows me all the fun and adventure to choose where I eat, what I explore, when I pee, who I talk to, and how I get there I don’t have to bother with anyone but me Maybe that makes me selfish, but hey, in this context I’m TOTALLY okay with that

"If you come prepared to step outside your comfort zone, then you'll be good to go."

FT: Have you ever run into any “snags” while traveling? What should travelers always be prepared for?

JG: Oh absolutely Snags are part of the fun But if you come prepared to step outside of your comfort zone and can ask a complete stranger for help, then you’ll be good to go I’ve suffered a flat in the middle of the Brazilian Cerrado, 17 hours away from Sao Paulo, held at gun point by Mexico’s DEA when I accidentally sped through a check stop (oops, my bad!), and endured an injured knee on a solo bike ride from NYC to St Johns Newfoundland I could let these incidents hinder my love of travel, but I choose to make them part of the fun, and now I have awesome stories to tell It’s all about perspective

FT: As a lover of animals, what was your most memorable encounter with a creature? How do native species contribute to the beauty of a location?

JG: While trying to make a name for myself in video-journalism, I was shooting a documentary in Brazil about the glowing termite mounds of the Cerrado There is such phenomenal biodiversity there and it was a mesmerizing experience At one point, I saw a wild Spotted Red Brocket Fawn They are one of the smallest deer in all of Amazonia – only about 70cm long – and can be relatively elusive, so we were lucky to spot one I noticed he was a bit skittish, but when I began filming, his curiosity must've got the best of him because he was walking towards me He came in for a neck scratch, loved my camera (which got me incredible footage), then gave me a few kisses, wagged his tail, and left I

was so touched by his boyish good looks and those big beautiful eyes I fell hard for this little guy I don't know how I got so lucky, but it totally made my day So many people live their entire lives and never get to experience intimacy with a creature like this I'm definitely one for respecting all life – even the ugly, “ creepy, ” and less popular But when cute and fuzzy wants to hang out, I'm a total sucker You can see a snap shot I took of the deer on Instagram, and the entire video story is uploaded on YouTube

FT: What is the grossest thing you’ve ever eaten?

JG: Oh, man! When I was shooting The Voyager Hong Kong, I met with a lovely guy named Gray Carper, who invited me to try some classic Chinese dishes that were traditionally eaten by the lower class One of them was chicken liver, pork fat, and tendons wrapped with duck intestines I really impressed myself that I tried it, and to be frank, the sauce, a delicious orange teriyaki-honey glaze, was the only reason I could get it down Otherwise, I was definitely NOT a fan I’m still trying to think of a way to get my producer back for that one Haha!

FT: Do you have a preference when it comes to rooms while aboard a cruise ship, such as windows or no windows? Why? Does it make a difference?

JG: It’s all about the windows! It may cost a bit more but I sleep and feel so much better with fresh air, natural light and a little mother nature So I say if it’s in your budget, go for it, especially if you plan on being on deck for more than 3 days

It’s true: The D is in the midst of an economic turnaround. Downtown has been revitalized with an ever-growing number of tech businesses, entrepreneurs, retail and restaurants. An up-and-coming food mecca, it was named one of “6 Unexpected Cities for the Food Lover” by National Geographic, with more than 100 new restaurants, breweries, distilleries and coffee shops opening in the last three years. These newcomers join the stalwart who never gave up on Detroit, and together, are orchestrating a transformation there’s just no stopping.

DISCOVER DETROIT, AMERICA’S GREAT COMEBACK CITY.

Townhouse restaurant and Luke Song, owner Mr. Song Millinery.

“TheVoyagertook me to Girona Spain, and literally everything (and I mean EVERTHING) took the cake.”

FT: Do you ever get seasick?

JG: I have, but on much smaller boats on incredibly rough waters Even on cloudy, windy semi-stormy days, I have never had a problem with being sea sick on a cruise ship The ships are so much more massive then we realize and really mask the waves well Then again, I’m a pretty lucky guy and there’s always a chance I’ve just been lucky with friendly oceans

FT: Name the most interesting place you traveled to while on The Voyager. What was it about this place that stuck out?

JG: The Voyager took me to Girona Spain, and literally everything (and I mean EVERTHING) took the cake The people were so genuine, unique, and vibrant The food was authentic and fresh, yet still honored traditions from hundreds of years ago The geography and landscapes were exactly what you’d expect from the sunshine-soaked Mediterranean cliché we ’ ve all heard about And nothing beats hanging out with the castells, literally human towers These guys are not only athletes, building crazy nine-story-tall towers out of humans, but they made me feel loved and like family It was unforgettable Just go You can see some of the highlights from that episode via www nbc com

FT: Being environmentally conscious and practicing humanitarianism is important to you What are some words of advice on how to treat the lands that provide us with so much beauty and excitement?

JG: It’s so easy to take, but in so many ways, I think mankind has forgotten how to give back Emphasizing eco-tourism and exercising a plant-based diet is an incredibly effective way to take care of our bodies, our planet, and feel just as enriched as anyone else traveling the globe I am living, breathing proof that we can live the big life, take care of our planet, and feel incredibly rewarded By doing so, I feel true joy and bliss, so much more than I ever did living carelessly. Because the universe continues to match my contributions, I get more, I enjoy more, I feel more, granting me access to a canyon of satisfaction and gratitude that I never fathomed So next time you ’ re out and about on vacation, look up local eco-tourism opportunities or volunteer opportunities It’s an excellent way to meet your destination I promise it will come back to you tenfold

FT: What are some of your traveling plans in the future? What do you hope to accomplish next?

JG: I’ve spent a lot of time working on The Voyager and enjoyed every minute of it I absolutely loved getting to know New Zealand in April, and having some me-time was much needed I’ll be posting lots of YouTube and Instagram updates with all my latest work, as production for The Voyager with Josh Garcia season 2 is now in high gear Be sure to be watching NBC on Saturday mornings starting Sept 30!

It shouldn’t be surprising to hear that Jackson, Mississippi, the “City with Soul,” is home to a James Beard American Classic restaurant named Bully’s, which caters to soul food Nor the fact that their dishes are made from scratch It shouldn’t even be a surprise that a beloved Jackson chef, Nick Wallace, is often summoned to the prestigious James Beard House in New York Guests from around the world marvel at old heritage recipes from his grandmother, prepared with the finest Mississippi ingredients

JaCkSoN, Ms [

The fact that the American Seafood King, Chef Alex Eaton, rests his apron at The Manship in Jackson may come as a surprise, as Jackson is not resting on the shores of a pristine beach

Now what may be most surprising is the heavy Greek influence on the culinary scene in Jackson In the early 1900’s Greek immigrants came to Jackson seeking a new life and in search of opportunity Most found themselves in the restaurant industry like the two friends from the island of Patmos, George Kountouris and John Goura who opened the Mayflower in 1935 Twelve years later, the Zouboukos brothers established the Elite Restaurant In the 1950’s, Paul Crechale opened his ominous restaurant, followed by Bill’s Greek Tavern

All but the latter, are still a very prominent part of the Jackson culinary scene serving fresh, broiled Gulf fish, Greek salads, and a dressing and dipping sauce referred to as the kissing cousin of rémoulade: the Comeback Sauce This versatile spiced sauce originated at the Mayflower, the oldest operating restaurant in the capital city Maxim Magazine calls Comeback the Nation’s number one condiment! Coupled with the Mayflower’s buttery, meltin-your-mouth signature redfish as featured on the Food Network’s The Best Thing I Ever Ate, the Mayflower experience is second to none More culinary charm awaits at sippjackson com

What local eateries would you recommend to friends?

I love Gyro Plus And Steamers, too My tastes are simple I'm not a fancy dinner sort of guy

What is it about your restaurant that brings customers back? For some places it’s the location. For others, the atmosphere or service or menu or special event or…

I hope it's all those things I am always working on so many things at once; the decor, the music, the cleanliness, consistency and service First and foremost, everyone loves pizza, so we've got that going for us But we also want to make a comfortable environment for kids, and for celebrations and community gatherings I talk to the employees all the time about the importance of getting repeat customers and how we must offer something special I hope that something special is good food and service in a bright and colorful surrounding

What local restaurants do you enjoy?

I think the Gainesville food scene is really underrated

There are quite a few true gems in and around town that I love: V’s Pizza, Adam’s Rib Company, Paramount, and Reggae Shack to name just a few!

What can you tell us about a dish your customers enjoy most?

People always think about sushi when you mention Dragonfly, but I think I hope everyone who comes in is blown away by what my team is able to do across the board. The simplicity of the tuna tataki, the sweetness of the wontons, the umami of the miso black cod and the inventiveness of our omakase specials Everything we send out of the kitchen has a backstory, and they’re all so interesting

mike manfredi SWeet DReamS

When you’re not eating ice cream, where do you go to dine?

Four of my favorites are Mildred's Big City Café, Satchel's Pizza, Leonardo’s 706 and Las Margaritas

your ice cream flavors are nearly unlimited What are some of your favorites?

A triple scoop Chocolate, Turkish Delight, and Hazelnut

When it comes to the northeast United States, we automatically think of the rocky coastlines of Maine, or the bright lights of New York City However, these top-ranked stays on the northeast will have you planning an entirely different vacation next time you ’ re heading to the region

Start off with a look into The Chanler at Cliff Walk Located in Newport, Rhode Island, The Chanler is all about luxury While there may only be 20 rooms at The Chanler, everything is dressed to a tee, and completely personable, with French-Provincial style and architecture Enjoy beautiful views of the Atlantic from various points of the hotel, including their award-winning restaurant, Spiced Pear The building was originally a private summer home for a New York Congressman, John Winthrop Chanler, but has since been turned into a favorite vacation destination, both for tourists, and for locals just looking to escape to the luxurious “Cliff Lawn” for a weekend

The area is known as Cliff Lawn because of its visitors who came to take part in the summer retreat with Chanler and his wife, Margaret Astor Ward, whom was the great granddaughter of the wellknown John Jacob Astor Visitors such as President Theodore Roosevelt and Henry Wadsworth Longfellow used to come to the mansion, so when you stay at The Chanler, you get a dose of Newport history, as well as a stay in a hotel that practically defines the meaning of couture

Another great place to visit while you ’ re in the northeast is Newburyport, Massachusetts Newburyport boasts Plum Island, a barrier island located just north of Cape Ann.

It is approximately 11 miles in length and is named for the wild plum shrubs that grow there There are public beaches you can enjoy, or go fishing in the Merrimack River The Parker River National Wildlife Refuge is a great place to go sightseeing, where you’ll be able to spot over 800 different species of plants and animals Parking is available at the refuge for a small fee, and there are also private lots around Plum Island to park in, depending on what your plans are for the day Plum Island, with its beaches, wildlife, sanctuaries, and miles of pristine shorelines, is an excellent choice for a nature vacation in the northeast, especially during the summer months In Newburyport, wrap up the day with local cuisine or some window shopping, and if you choose to stay for a few days, try one of their quaint bed and breakfast locations

“In the summer, look forward to enjoying activities like fly-fishing, hiking, biking, and paddleboarding.”

When it comes to lodges and resorts, there are many to choose from in the Pennsylvania If you ’ re ever near Bradford, make your way to The Lodge at Glendorn Established in 1929, the lodge is know for its impeccable hospitality and unmatchable amenities Glendorn has won many awards, including Travel + Leisure’s 2016 World’s Best Award for “Number One Resort Hotel in the Continental U S ”

The lodge itself is more like a private campground, with individual cabins for guests There is the Big House, which has convenient hotel rooms and suites that most of us are used to, but if you can get your hands on a private cabin, you won’t regret it Try the Miller Cabin, which is the most historic cabin on the grounds, and is quaint, accommodating up to three guests. Built around 1927, the log-and-plank cabin has a screened in porch with the original hickory furniture for relaxing Enjoy an authentic wood-burning fireplace in the living room, and a bedroom fit for a king, which has a fireplace all its own

There are plenty of seasonal events that take place at Glendorn throughout the year Some events may have an extra charge, while others are completely free to the guests staying during that time In the summer, look forward to enjoying activities like fly-fishing, hiking, biking, and paddleboarding Fall activities include communal pumpkin carving with instructors and refreshments, as well skiing and snowshoeing in the winter season

The Midwest is full of rich history and culture There’s much more to this region than agriculture and nature parks –which are definitely worth a visit! If you ’ re thinking about heading to the Midwestern area, stop in Kansas for some true cowboy history The Old Cowtown Museum, located in Wichita, houses tons of artifacts and educational pieces that tell the story of the cattle “kingdom” that reigned before the aviation period

The museum actually recreated an old cattle town, similar to the ones that were thriving in the 1800s In the area ’ s prime, there were more than 1 million longhorns being herded into the Chisholm Trail rail-

heads The cattle farm demonstrates what a working farm would have been like in those days Guides will go through the daily routines of the cowboys and the farmers, and will show you around the chicken coops, garden, and pasture

The entire town will make you feel as though you ’ re walking through that actual period in history, and many of the historic structures are original buildings You will notice a jail, a law office, a general store, several historic houses, a mortuary, a saloon, a church, a bank, a blacksmith, and more The Old Cowtown Museum is definitely worth the trip if you ’ re wanting to learn more about the

overall timeline of the cattle business and the early history of cowboys in general

Those who are looking for a casual, locallysourced eatery that also happens to offer one hell of a beer list, should head to The Coopers Tavern Located on Mifflin Street, Coopers has been churning out the best combination of great food, good beer, and an awesome atmosphere for less than a decade While Coopers isn’t an old-time establishment, it is certainly one of the local favorites by far Coopers boasts nearly 30 craft beers and more than 120 different bottles, from the popular domestics, to specialty imports from across the world Looking for a solid whiskey to swish around? Coopers also has more than 120 different whisk(e)ys, bourbons, and scotches to try For any local in love with the

game of soccer, this is the tavern to come to Coopers is all about soccer, and of course, good game food to pair with it

Try Cooper’s Curds, which are local Wisconsin cheese curds, dipped in a Pabst Blue Ribbon batter, and served up gold brown with a house-made ranch dressing Coopers is known for its rustic vibe as well, so menu items also include poutine, or bone marrow, which is split and seasoned with parsley and shallots Wisconsin can get cold, so Coopers is a great place to go to get warm, as well There’s nothing better than having a steaming bowl of cheesy mac set in front of you to warm your hands on and gobble down Try Cooper’s spin on

the comfort food classic, which sets the mood with a Dubliner cheddar mac, topped with house-cured Fox Heritage Farms pork belly and herb-seasoned breadcrumbs It’s a delicious combination that is sure to please any mac & cheese fan!

west

Most people think of California when the western part of the United States is mentioned in conversation, but there is much more to the region than the “West Coast” lifestyle Head to Ellensburg, Washington for a completely unique experience Ellensburg is the home of the Ellensburg Rodeo, which was founded in 1923, and airs on ESPN Nearly 30,000 fans and spectators come to the Ellensburg Rodeo for a great show and a good time

During the rodeo, Ellensburg becomes quite packed with tourists from all over the country, so you may want to start

making reservations or accommodations now if you ’ re interested in attending the event The event will be happening this year on Labor Day weekend, from September 1st, to the 4th The county fair will also be active during this time, so it is a great weekend to plan a getaway Patriot Night at the rodeo will be on the 1st, and the rodeo show lasts for approximately 3 hours each day

On the 2nd, there will be a western parade downtown, along with the Xtreme Bulls Tour Finale, which will be televised During the finale, 40 of the world’s most

talented bull riders will enter the rodeo to compete for a chance to win $100,000 The bulls in the competition are some of the highest-ranked, oneton animals in the world After the longgo competition, the 12 best out of the 40 riders will come back to compete for the grand prize

Along with the Xtreme bulls competition, there will be specialty acts performed as well, such as The One Armed Bandit, John Payne, who will be performing several stunts during his show, which includes longhorns, wild horses, and even buffalo

Head just south to Astoria, Oregon for a bit of western history and one heck of a view Astoria rests on the southern banks of the Columbia River, and is the oldest American settlement west of the Rocky Mountains The city used to be a fur trading post, but now boasts some of the most incredibly scenic views in the region

Parasailing, kayaking, hiking, and fishing are all very popular summertime activities in Astoria, as the land is booming with evergreens and wide open, mountainous terrain You may know Astoria from the famous movie, The Goonies The Oregon Film Museum has an extensive exhibit list for a variety of movies that were filmed on the land, but you can relive the actual Goonies movie here

Take a self-guided tour to places like the bowling alley where Chunk saw the police chase, or “stage your own breakout” at the Clatsop County Jail, which is now the actual building that the film museum resides in

Kick back and relax with a craft beer from the Astoria Brewing Company after your long day of touring and sightsee-

ing The Astoria Brewing Company has an eclectic and tasty lineup of beers to choose from, including the Bitter Bitch Imperial IPA, and the Trolley Stop Stout, which is a dark malt with a hint of chocolate At 6 7% ABV, it is the strongest beer on the menu Order the cheesy beer fondue to pair nicely with your beer, or a Halibut burger, if you ’ re feeling adventurous
