Salzburg Beer Culture Innovation with Tradition Salzburg’s history of brewing beer is more than 600 years old: It reflects a great love of enjoyment and keen efforts to ensure undisputable purity and quality. It has produced well-established beers and breweries of long-standing tradition. This in turn laid the foundation for the “young creatives” that have been enhancing beer production in Salzburg over the last few decades. These days, the ten breweries in the regions in and around Salzburg not only produce the finest beers, they also know how to celebrate the enjoyment of beer drinking in many ways: by introducing modern production techniques, by offering exceptional beer experiences, new creative styles and speciality beers. Beer lovers and gourmets have the opportunity to learn more about their favourite drink in seminars, guided brewery tours and walks around the old town, or in beer sommelier courses. Cosy pubs and a large number of shady beer gardens are a great way to get to know Salzburg beer culture. Fifteen of Salzburg’s most popular beer-serving pubs and restaurants were subjected to a demanding evaluation process and honoured with the Salzburg Beer Culture Award.

Stiegl Brewery – The Art of Brewing at the Highest Level Stieglbrauerei zu Salzburg is Austria’s favourite privately owned brewery. The secret of the brewery’s success lies in its balance between tradition and innovation. The owners, the Kiener family, believe in having the courage to take things slowly. Brewing is still done manually according to methods handed down through the decades. This is why Stiegl was welcomed to the ‘SlowBrewing’ club, an organisation reserved for highly distinguished breweries. Stiegl has revived an old tradition with the establishment of a new malt house and roasting facility on the Stiegl-Gut farm in Wildshut, Austria’s first farm devoted solely to the needs of a brewery. Originally, brewing and malting were done in the same place. In Wildshut ancient types of wheat are grown to the current standards set for organic produce. Long-term cooperative agreements between Stiegl and domestic farmers make it possible to provide a guarantee for the regional origins of all ingredients. Stiegl-Brauwelt See one of the most fascinating tourist attractions in Salzburg! At Stiegl’s 270° brewery cinema guests can immerse themselves in the world of this popular barley-based beverage. The newly opened Stiegl museum offers an interactive voyage of discovery. Afterwards, why not enjoy a freshly pulled Stiegl beer in the Brauwelt restaurant and tavern. A broad range of dishes guarantees something to suit every taste. See the brewery sampling cellar and enjoy a unique opportunity to taste the ingredients, to sample beers in cold storage and savour beer with all your senses. There are standard tours every day at 11:00am, 2:00pm and 4:00pm. The tours at 11:00am from Monday to Thursday also include the Stieglbrauerei production area. The admission fee includes beer sampling and a souvenir from the brewery shop. Special tours can be scheduled for groups of 15 people or more if booked in advance. Augustiner Bräu Mülln Monastary in Salzburg Living monastery history Since it was founded in 1621 the Augustiner Brauerei has been brewing beer with traditional craftsmanship. In contrast to the common use of industrial production, brewing here involves methods and traditions handed down over the centuries. Beer is brewed by hand according to the 1516 purity law. That means only malt, water, hops and yeast – and no preservatives! The brewery has an annual output of around 13,000 hectolitres. The Bräustübl beer served in the halls is very distinctive, so it’s extremely popular with beer lovers from home and abroad. ‘Märzen’ lager, ‘Fastenbier’ (Ash Wednesday until Easter) and the extra-strong ‘Bockbier’ (November and December) are the names of the types of beer available. The long tradition of brewing at the monastery is reflected in the way Augustiner beer is served and savoured – straight from wooden barrels – straight into traditional ceramic tankards. The wooden barrels are typical hallmark of the brewery and are produced in various sizes (15, 20 and 50 litres) to suit every occasion.

Another unique feature is the ‘Schmankerlgang’; a hallway along which guests can buy all kinds of regional, culinary delights as perfect accompaniments to their beer – including white radish; ‘Leberkas’ – a popular Austrian form of spam, and fine mayonnaise. Delicious buffets can be booked in advance for all kinds of celebrations for gatherings of eight all the way up to very large groups.

Die Weisse Weißbierbrauerei - the art of brewing in Salzburg In Salzburg, when the talk is of ‘the art of brewing’, this small Weissbier brewery in Rupertgasse founded in 1901 just can’t be ignored. Ever since the beginning DIE WEISSE has been unswerving in its pursuit of the very best quality. ‘Our customers appreciate the difference to industrially produced beers’, explains the owner, Hans Gmachl. In 1901 the German brewer, adventurer and big game hunter Adelbert Behr built a Weissbier brewery in the back yard of his tavern and restaurant in Schallmoos. Back then there were 50 breweries in Salzburg – all of whom brewed extra-strong beers. Adelbert began brewing a light, fruity and aromatic Weißbier. The result was an amber-coloured Weissbier topped off with a tightly-beaded, creamy head. From that moment on the WEISSE never looked back and a new age of beer drinking had begun.

Restaurant – beer garden – brew house The traditional and single-mindedly different brewery restaurant and tavern brews its own special beers, like the original lightly coloured WEISSE that has been brewed according to an old recipe since 1901. DIE WEISSE has the right place for everyone with a rustic old tavern on the one hand, to a contemporary bar in the ‘Sudwerk’ brewery room. In the summer, traditional downto-earth Austrian cuisine is best enjoyed out in the beer garden in the shade of the leafy chestnut trees. Proof of the brewery’s beer brewing expertise is provided by a wide range of Weissbiers stored in wooden barrels, some produced on a seasonal basis such as the ‘Jubilator’, a top-fermenting super-strong beer; the ‘Fas8


ten-Weisse’, a dark, malty and powerful wheat beer with a fruity orange tang and a hint of chocolate! Macht Spaß im Mund …! That’s the slogan of DIE WEISSE printed on every beer glass; and the philosophy of the brewery roughly translates as ‘tickles the taste buds!’

Brewery restaurant special: A lightly-coloured bottle-fermented beer that goes perfectly with the best roast pork or full-flavored goulash in the town. A malty and dark ‘Dunkles’ beer is great at harvest time, and a roast chicken is ideal with a glass of pils. Follow the main dish with a ‘Jubilator’ instead of a dessert and maybe even a ‘Tacca’ – an in-house spicy spirit drink. New Brauhaus Gusswerk in Hof bei Salzburg Brauhaus Gusswerk was established by Reinhold Barta in Salzburg in 2006 and is solely devoted to the brewing of organic beers. The constantly high quality standards of the beer produced are reflected in the numerous awards for the Weizenguss beer; the most recent being a golden ‘European Beer Star’. In September 2013, after seven years at the northern end of Salzburg it was time for Brauhaus Gusswerk to relocate to the village of Hof, just outside Salzburg. The village is around 20km to the east of the city of Salzburg. It’s easily accessible via the motorway and local main roads. The 1500m² grounds of the new brewery provide plenty of space for the Brauhaus Gusswerk organic brewery to brew good beer. One part of the property is used for the BierPub, with a pleasant beer garden in which regional delicacies are served to generate the thirst required to try the numerous beers brewed at the site. ‘Try our multiple award winning, traditionally brewed craft beers and discover the special flavour of organic quality from Salzburg!’ says Reinhold Barta (Dipl.-Ing.), Master Brewer and General Manager at Brauerei Gusswerk. Brewery tour: ‘The Classic’: On the classic tour visitors find out plenty about the history of beer brewing, about the oldest brewery in Salzburg, about the process of brewing and the cultural aspects of beer. ‘Women & Beer’: Is beer a purely male domain? Not at all! In ancient Egypt beer brewing was very much reserved for women and in 18th century Austria most bars were ‘manned’ by women. The ‘Women & Beer’ tour illuminates the little known story of beer and brewing from a female perspective with lots of anecdotes from years gone by. What exactly is a craft beer? Craft beer is a phrase coined in the US and stands for beer produced with the skills of traditional brewing craftsmanship, and stems from a time in the 1980 when the ban on home-brewing was finally lifted. From this moment the traditional craft of brewing beer at home quickly grew in popularity as an independent and innovative approach, crafting distinctively flavoured brews as an alternative to conventionally produced industrial beers. Numerous microbreweries sprang up all over with hobby brewers producing small batches of very special, distinctively flavoured beers. The aim was to create brews that reflected traditional beer brewing skills and were clearly distinguishable from the industrially produced identy-beers. There was also a spate of new and original beers in Europe, produced ‘by hand’ by small-scale breweries, many by tavern and microbrewery operations. For Europeans, traditional non-industrial brewing is much more than just the production of limited edition brews. It’s about love, about being passionate about an idea, about the brewing process in general and about creating something unique. Craft beers are made by committed and creative people with the courage to experiment. Master brewers, freestylers and lateral thinkers put a new twist on old beers, and employ special ingredients and recipes for distinctive own-brand beers. There is a growing number of beer lovers worldwide, constantly on the lookout for good, unusual and innovative flavours. Salzburg’s breweries have always produced beers according to traditional methods. The craft beer boom has boosted the spirit of experimentation in Salzburg’s breweries even further who can now offer guests an even wider range of special beers.


Stiegl Wildshuter Sortenspiel Brewed with love and care at the Stiegl Wildshut farm in St. Pantaleon, Austria’s first farm devoted solely to production for brewing activities. This special light, honey-coloured, top-fermenting beer is brewed using the very finest strain of ‘ancient Wildshut wheat’ to produce a well-balanced, mild, yet full-flavoured beer. Refreshing nuances of yeast combine with the flavour of aromatic Mühlviertl hops to tickle the nose. ‘Wildshuter Sortenspiel’ is soft and velvety on the tongue with a harmonious aftertaste for a lasting impression. Stiegl’s in-house brews Stiegl’s microbrewery is responsible for the production of innovative, limited edition specialty beers, made for consumption in the brewery. These beers are produced using traditional beer making methods and the limited volumes are often very original reinterpretations, and are based on highly creative recipes. Augustiner Strong ‘Bock’ beer The Christmas period is a very special time for beer drinkers. Great celebrations demand great beer, and strong ‘Bockbier’ brews are particularly popular in Salzburg. They are available from the beginning of November until the end of December. Augustiner ‘Bockbier’ is produced using Stadlauer Pilsener and Kara-Extra-Hell malts, as well as Hallertau-Spalt-Select and Saaz hops from Barth & Sohn of Nuremburg. Bottle size: 0.5 l Alcohol by volume: 6.5% Original gravity: 16.2°

Lent fasting beer The special, full-flavoured ‘Augustiner Fastenbier’ is sold from Ash Wednesday until the Easter week. After all, ‘this drink does not break the fast!’, as they say. The Saaz hops that give this beer its distinctive flavour are considered the best in the world and guarantee premium quality. It is brewed with a blend of Stadlauer Pilsener and Kara Dunkel malt, and Saaz hops provided by Barth & Sohn of Nuremburg. Bottle size: 0.5 l Alcohol by volume: 5.2% Original gravity: 12.6° 28

Events Augustiner Bräustübl The Augustinus-Fest will be held in honour of St. Augustine on the 26th – 28th August, and the ‘Schmankerlfest’ is a celebration of great food at the start of October. These two events and the romantic starry skies in the advent period (from Thursday to Saturday on advent weekends) are some of the great attractions at the brewery. There’s always something going on at the Augustiner Brauerei. There are numerous events staged to entertain guests here all the year round – carnival costume balls, summer parties and live football evenings for the devoted. Die Weisse Cult Tracht-style parties are held in the brewery mash room on months without an ‘R’. Tradition has become a cult, and the cult has become stylish. Real ‘Volksmusik’ is played alongside hip-hop and techno … Lederhosen and head-turning Dirndl dresses are part of the dress code! The ‘Weisse-Gschnas’ is a Carnival Tuesday party and has been a ‘must’ for carnivalites in Salzburg for 25 years! ‘Rupertikirtag’ fair | In the autumn, around the time of St. Rupert’s day on the 24th Sept., the Weissbierbrauerei sets up shop on Alter Markt square to give a live demonstration of how beer is brewed. Ruperti-Special is a beer brewed especially for the occasion and is on sale at the stand and in the brewery tavern. JAZZ & THE CITY at Die Weisse | In October, to mark the start of the strong ‘Bock’ beer period, there’s a lively and informal gathering with food, beer, swing and jazz music at the brewery restaurant tavern. The fresh, bottle-fermented strong beer is sampled, and accompanied by lots of crispy roast duck! www.dieweisse.at


Stiegl brewery Day of the open bottle A day of the open bottle is held at Stiegl-Brauwelt several times a year. It’s a world tour for fans of beer. Stiegl beer sommeliers are always available to give visitors the tips and assistance they need. Maypole celebrations Stieglbrauerei cultivates the tradition of staging the celebrations surrounding the raising of the maypole ceremony on the grounds of the Stiegl brewery. There’s an event tent, music, regional culinary treats and a barrel of beer is tapped. Concert picnic On the lawn of the Stiegl brewery outside Stiegl-Brauwelt, Elisabeth Fuchs conducts the Salzburg Philharmonic Orchestra as they play classical music, themes from musicals and films, to the guests enjoying a picnic out in the open air. These musical treats are traditionally served up at the beginning of September every year. Beer advent The Stiegl-Brauwelt courtyard is opened up to the public in the weeks before Christmas for a very special annual Christmas market focusing on the topic of beer. Trumer Brewery Open air summer cinema In July and August visitors love to come and enjoy some great cinematic moments under a starry night sky. On six Thursdays in July and August Trumer Privatbrauerei puts on a unique open air cinema in cooperation with DAS KINO. Right next to the Trumer hop garden on the grounds of the brewery in Obertrum visitors can enjoy a great evening of open-air cinematic entertainment accompanied by great food and excellent beer. www.trumer-sommerkino.at

Kiesbye’s BIERkulturHAUS Creative brewing follow-on course

The creative brewery at the heart of the BIERkulturHAUS was built and made publically accessible back in 2000. As well as providing brewing lessons, we also offer seminars – and even complete courses with certification as a qualified Beer Sommelier. The old brewing plant has already seen 1000 different brews produced over the years; each one different, creative and suited to tastes of the age! One of the brewery’s biggest advantages is its simplicity. Visitors can see, hear, smell, taste and feel their way through the changes that malt, hops, water and yeast undergo during the fascinating brewing process - on their way to becoming parts of a mature beer. Get involved in the process, change things, improvise and optimise! The most important goal is to let each group brew its own beer, informed and supervised by the experts, but acting according to their own ideas and wishes. Participants on the beer brewing courses gain insights into the culture of beer through the eyes of the sommelier. Various packages and extras are also available. The BIERkulturHAUS has become the Austrian centre of excellence for brewing and beer enthusiasts, producing around 80 brews per year. However, the brewery and the world of beer also provide a very popular venue for corporate events. Kiesbye’s Forest Waldbier

Every year this beer is brewed using a different ingredient from the forest. The essential oils of fir, pine, larch; or this year Austrian black pine, give this beer its own unique and unsurpassed quality. The recipe was invented in our 100-litre creative brewery and over 40,000 bottles of the current edition have been produced.
