ebruary is for lovers. Or maybe that’s Ohio. Either way, we’re celebrating all things love this time of year: wearing red, buying sweet gifts for friends and family, and planning quality time with those we adore most. But the way to my heart, quite honestly, is through my stomach—and let’s just say, San Joaquin County restaurants are certainly doing their best to court me. My love of food runs deep and is varied. There is no one item that I love most. I’m a sucker for a lunchtime sandwich, a HUGE fan of sushi and other Asian eats, and I’ll turn to goo if someone gifts me a cupcake. And that love affair with the kitchen is a lot of what led to the inspiration of this issue. In addition to our Cheap Eats feature this month that celebrates good food on a budget, we’re scoping out other festive fare (and year-round staples). The cute cupcakes at Dlilah’s Cakery are perfect for class parties or office gal pals. Our personal favorites, however, may be the cheeky f*** love sugar cookies, ideal for gifting to your recently dumped bestie or single and thriving aunt. with other social-political issues—in his new book, a largely autobiographical memoir titled A Memoir of Hope and Home: The Deeper the Roots. The cover is graced with a young Michael, sitting on a tricycle outside of his Stockton, Calif. home. Within the pages, he uses his own life as a lens for larger issues. “The main point is really [that] genius can be found anywhere,” he says. “Places like Stockton really matter.” While detailing stories from his own childhood—experiences in local schools, growing up with a father in prison, living in a hard-knock neighborhood—he explores the potential of all children, the importance of a living wage, how mentorship helps disadvantaged youth thrive, and, ultimately, how to make democracy work. Part of the problem is in the accepted narrative, Michael says. There are stories, like his, of kids from South Stockton

and similar neighborhoods making it big, achieving milestone elections, and publishing books. But he says telling his story in that way can be harmful because it pushes the idea that a kid from the wrong side of town or a kid facing struggles must be exceptional to be worthy of college, higher education, and more. Instead, all kids, he says, should have the same opportunities, not an added pressure just because of their roots.

While the themes in Michael’s book are universal to many places in America, the setting for this memoir is important. “Stockton is a main character,” Michael says. The city he grew up in, though sometimes dragged in the media, is credited with shaping his world view and creating his faith in people and humanity. Its diversity—Stockton is one of the most diverse metropolitan areas in the country—also helped shaped Michael’s world view and gain an appreciation for people’s differences, seeing them as something to be celebrated instead of punished. Michael’s book, in addition to telling his life story, also delves into political issues and the merits of democracy, which makes sense for a man who was both the first Black mayor of Stockton and, at 26, one of the youngest mayors anywhere. When it comes to politics and how change can solve some of America’s biggest problems, he literally wrote the book. Ultimately, the memoir is written for Michael 15 years ago, almost an extended letter to himself. But his audience reaches beyond that to include mothers, young people looking to be inspired, people interested in political policy, and those who will appreciate the local angle. He spends a lot of time detailing the three “mothers” in his own life—the women who raised him to be who he is. But bettering the human experience for

disadvantaged youth is perhaps the book’s most prominent theme. “My primary focus was sort of young people… and to inspire the next generation.” For Michael, writing a book was a natural next step after relocating to Los Angeles. Not only did it give him a platform to share his social-political ideas, but it was also therapeutic. A selfdescribed book enthusiast (whose first job was working at Barnes & Noble), Michael explores his hardships not just from childhood but his adult life as well, including losing his second election as mayor and the journey that unfolded after that devastating loss. e live in the time of big butts. But crafting the perfect derriere takes a lot of hard work, or at least a little outside-of-the-box thinking. We all know squats and deadlifts can sculpt our booties, creating density and providing a firmer rear, but there are other ways to garner the same—or similar—results. Alternative approach one: ditch the 100 squats a day and try out some yoga poses instead. Alyssa Vaccarezza, owner of Shine Yoga Studios, has a few suggestions for poses poised to give your butt a natural lift. Utkatasana, also known as fierce pose or chair pose, is one surefire way to get results. The low squatting position activates muscles in

your legs and buttocks. To maximize results, hold chair pose for as long as possible. To up the ante, add in some twists when your body is ready. Utkata Konasans, or goddess squat, does more than firm the booty. The pose is also a hip, leg, and chest opener, and strengthens the legs, calves, abs, and knees. You may not think bridge pose (or setu bandha sarvangasana) would benefit the butt, but in addition to strengthening the back, buttocks, and hamstrings, it also stretches the chest, neck, spine, and hips when done in a shouldersupported position. W

hether you’re embracing the love or showing it your favorite finger this year, Dlilah of Dliliah’s Cakery has you covered, turning out creative confections including treats decorated with rustic fresh flowers and vibrant pinks with red hearts. One of the best sellers are Dlilah’s f*** love embossed sugar cookies, a huge hit every year. “The girlies love these,” she says. And while Dlilah’s inspiration is often in the aesthetics, she assures her treats, cupcakes included, are made with the best ingredients possible. Visual appeal may be her first requirement, but nothing squeaks by tasting less than delicious at Dlilah’s. “I wanted to bring creativity to food, without lacking the flavor, and my cupcakes embody just that,” she says. In addition to fun and festive decorating, Dlilah’s cupcakes are made with airy and light buttercream frosting, concocted from Swiss meringue with real butter and no shortening. She says the combination is the reason they taste so good. Aside from Valentine’s Day, when some of the most popular flavors are vanilla, chocolate, red velvet, and strawberry, Dlilah also creates eye-catching cakes and cupcakes on the daily. Her carnival cupcakes are a long-time favorite. “I wanted to literally put a carnival on a cupcake, and so I did,” Dlilah says. The result is a vanilla cupcake with buttercream frosting (so as not to compete with the toppings) finished with just about everything you’d find at a carnival including a fresh funnel cake with strawberry sauce, cotton candy, and caramel corn. The sprinkles add a fun dash of color to bring the dessert to life. “Creativity is everything for me. Like what would be fun to eat? And I just go for it.”

ipping through the trees may sound like an activity saved for exotic vacations, however, TreeTopSac makes the highflying activity accessible for families in San Joaquin County. Located just over county lines in Sacramento, Calif., TreeTopSac is a family-friendly adventure park offering several ways to try out ziplining with family and friends. Located 10 minutes outside of Downtown Sac, 150-year-old heritage oak trees are the backdrop for this adrenaline pumping activity—and the source of shade that makes zipping in warmer months more than tolerable. Guests choose between five parkour courses with varying levels of difficulty and several obstacles to complete from suspension bridges, tight ropes and more. Every single one also ends with a zipline as you plummet to the earth at high (but safe) speeds.

A day at TreeTopSac includes access to all five parkour courses and every obstacle offered. Kids and adults will challenge their balance, physical abilities, and nerves while getting a quality workout, engaging muscles you didn’t even know you had. Perhaps the most nerve-wracking part of each course is the ending zip, where clinching your belay system to a descending line results in a soft landing on the forest floor.

T

he vision for a business that effortlessly melds art and wellness was born out of necessity for Saul Serna. Two areas he noticed were lacking in Stockton were those that catered to the mental wellbeing of residents and those that nourished local artists looking to showcase their works. So, when a location opened for rent on Yosemite Street, a revitalized area of Stockton, Saul jumped at the opportunity to bring this concept to life. At its core, The Catalyst Arts & Wellness Studio is a space for artists, both established and budding, and those that have an interest in art, even just as consumers. “Everything we do to the building has to be an experience and has to be instagrammable,” Saul explains. Many have stopped by to snap photos in Umbrella Alley, a curated photo-op just outside the shop, and inside, the experiences continue. Pop-up art shows and installations change every other month to showcase local artists, including many who have relocated from the Bay Area, drove out by high home prices, and given the Stockton art scene a revitalization of its own. On Wednesday nights, Robert Kelley, an established and celebrated local artist who usually takes home large commissions for hosting workshops across the country, teaches for free, inviting the Stockton community to come in and learn to draw, whether they are an artist themselves or an amateur looking to learn the

craft. From 6-8 PM, anyone is welcome to stop in and learn from the mastermind—materials provided. For the life-long artist himself, Saul also contributes to the artist space with his own creations, commonly made out of acrylics, oils, and/or charcoals. Known around Murphys for creating Day of the Dead wine labels for a small collection of wineries, he’s hell bent on making a difference as an entrepreneur, looking forward to starting art and wine strolls near The Catalyst, bringing more artists into the space, and hosting receptions where artwork can be oogled, ogled, and bought. “My focus is to just really support art and the artists,” he says. On the wellness side of the studio, The Catalyst hosts support groups including one for moms run by a local woman from Manteca and another for those on an IVF journey. Tackling tough topics like infertility in a safe space surrounded by peers is one way The Catalyst uses its space to provide free (and necessary) services to its community. Yoga classes offer another aspect of healing. With three instructors on payroll, interested individuals can head to The Catalyst for a slow-paced yoga practice, or even attend a Self Care Sunday, hosted about every other month, boasting breakfast, mimosas, meditation, and sound baths.

After taking a hiatus last year due to the pandemic, Delicato Family Wines’ Fine Art Show is returning this month for its 32nd installment. Running from February 5 to 26, this is the perfect opportunity to delight your senses with both wine and art. The late Dorothy Indelicato’s love of art motivated her to start the Fine Art Show in hopes of giving local artists a way to let their creativity shine through. “She loved art and wanted to create a place for local artists to display their work,” Brent Dodd, director of corporate communications at Delicato Family Wines, says of Dorothy. And over the last three decades the event has aged like a fine wine, drawing artists and art admirers from up and down the Central Valley. Throughout January, artists were once again invited to submit up to five original works created

in the last three years for a chance to win one of several cash or gift certificate awards. Judging took place on January 29 with the art split into several distinct categories, including landscape, floral, portrait, animals, whimsical, seascape, and other. Now the doors are open to visitors and Delicato is eager to welcome you to enjoy the many acrylic, watercolor, pastel, oil, charcoal, and ink masterpieces being shown. And even though the official judging is already done, you can still let your inner art critic be heard by voting for your favorite piece; the artist with the most votes at the end of the show will be awarded the coveted Visitors’ Choice Award. NEW GENERATION OF VEHICLES ANSWER CLIMATE CONCERNS

A

pproaching 200 years ago, a few smart innovators with big dreams began experimenting with vehicles propelled by electricity. Two Scotsmen respectively introduced an electric carriage and locomotive with galvanic cells with limited lives. The contraptions quickly gained notoriety. They were revolutionary for the early 1830s but are best remembered as pre-historic precursors to the current electric vehicle surge. All major and niche car manufacturers— Chevrolet to Ford, Tesla to Lucid—have electric cars and trucks or are preparing an alternative fuel or electric vehicle. The automotive future is now, accelerated in California by Gov. Gavin Newsom's executive order announced in September 2020. The state will require by 2035 that all new car and passenger trucks sold in California be zero-emission vehicles. Electronic vehicle pioneers were renowned engineers, but who knew they could predict the future? While early entrepreneurs' machines vanished, EVs never disappeared. The electric streetcar Electrobat debuted in Philadelphia in 1894. It had rear-steering, a 25-mile range and a top speed of 20 miles per hour. Ransom Eli Olds built electric horseless carriages before debuting the first mass-market Oldsmobile cars in 1901. The Thomas Egger-Lohner C.2 Phaeton electric vehicle was engineered by Dr. Ferdinand SJMAG.COM

Porsche, founder of his namesake vehicle. Studebaker began the 20th century by debuting electric cars, one of which Thomas Jefferson drove. Much happened in the next 100 years, all outdone by the industry's growth in the past 20 years. "I know that Chevrolet is fully invested," says James Vasquez, a sales associate at Chase Chevrolet in Stockton who leases a Chevrolet Bolt. "I believe they are planning at least 15-2 fully electric vehicles by 2030. Right now, it's starting to pick up steam. I think as the infrastructure grows and they add more stations, customers are going to see that will eventually be more interested." Tesla wasn't the first modern, massproduced electric vehicle. The General Motors EV1 was made for four years beginning in 1996. But Tesla founder Elon Musk changed the automotive industry in 2008 with Roadster, the first electric supercar. Several models have followed, pushing the iconic brand named after SerbianAmerican futurist Nikola Tesla, into a phenomenon. The Tesla Model 3 is the best-selling plug-in electric vehicle in history, surpassing one million units sold in June 2020. Tesla's success pushed other manufacturers into catch-up mode. The public hasn't embraced alternative fuel vehicles, particularly electric vehicles. But the industry is moving forward. The Toyota Prius, the first mainstream hybrid, debuted in the United States in 2000. With many other carmakers' offerings added into the mix, hybrids comprise only 2.5 percent of the country's vehicle sales. Electric vehicles represented only 1.7 percent of U.S. car sales in 2020. But with tax incentives, purchasing an electric vehicle in many instances is economically prudent. In October of 2021, the average price of a new car in the U.S. surpassed $45,000 for the first time. A recent report, published by Cars.com, notes base models of the country's top-11 cheapest electric vehicles cost $45,000 or less. Here are six additional manufacturers' electric vehicles, value-oriented to luxury:

2022 CHEVROLET BOLT —

Competition is brisk in the EV market. The small hatchback is much improved out of necessity. Updates are about as detailed as can occur without a carmaker declaring a vehicle's new generation. With its starting price slashed $5,000 from 2021, the Bolt begins at $31,995. New stuff inside and outside abounds. The interior includes a new instrument panel, new seats, an 8-inch gauge display and a 10.2-inch touchscreen. There's also a new shifter design with buttons and toggles. The biggest styling change is a more upright front end. It has “high-eye” daytime running lights and turn signals with headlights lower down. Inside, new seats and a new instrument panel with a standard 10.2-inch

touchscreen and an available 8-inch gauge display shine. A new shifter design uses toggles and buttons. "I live here, not too far away, so it's perfect," says Vasquez of his Bolt. "I drive it to work. I plug it in, use the vehicle and plug it in again in a week. No fuel, no maintenance. It is the future. The infrastructure just has to catch up." A rear cross-traffic alert, 360-degree camera system and adaptive cruise control is included with the Bolt. Direct current fast-charging capability is also now standard as is a dual-level charge cord that can be used with 120-volt or 240volt home outlets. The new Bolt retains a 65-kWh battery and 200-horsepower electric motor, with as much as a 259-mile range.


2022 HUMMER EV — About as far

removed from the former gargantuan-isbetter approach, the Edition 1 is hardly subdued. But the returning beast is less military-styled and more geared toward performance than its defunct steroidladen ancestor. With a projected 1,000 horsepower and acceleration from 0 to 60 miles per hour in 3.0 seconds, the new bruiser will bristle with machismo. It comes standard with 35-inch all-terrain tires but can accommodate larger styles. An adaptive air suspension? Why not? The new Hummer's body can lift 5.8 inches when conditions dictate. What the new Hummer isn't is cheap. The base model won't be available until 2024 and will start at $80,000. Like its predecessor, the new Hummer is strikingly different in looks and drive. It joins the Ford F-150 Raptor, the Ram 1500 TRX, and Rivian R1 in the fledgling super-truck segment. It's testosterone on wheels defined. SJMAG.COM

2022 NISSAN LEAF — A pioneer among fully electric vehicles available in the U.S., the base trim Leaf is now called the "S" model. The four-door hatchback debuted in 2011 and the newest version presents another segment oddity. The standard-range Leaf has a 40-kilowatt-hour battery and a 147-horsepower electric motor, bigger than earlier models. But it's also been reduced by $4,000 to make the manufacturer's retail price $28,375. It's the country's lowest-price EV. Its charging range hasn't been set but will vary from 149 to 226 depending upon model. Much about the Leaf is basic. But for the price, it offers a good share of features. An 8-inch touchscreen with navigation, Apple CarPlay and Android Auto are standard. A fast-charging port and portable 240-volt charging cable are also included. A Leaf Plus, with a larger battery, longer range (and higher price), is also available.

2022 FORD MUSTANG MACH-E — It

looks nothing like a Mustang, but the small fastback SUV has the iconic sports car's badging, it's stylish and fast. The two GT performance versions have estimated 0 to 60 miles per hour times of 3.5 seconds. There's much more to like. The base, standard-range Mach-E has a 68-kWh battery; the longer-range versions have an 88-kWh pack. A dual-motor, all-wheel drive or rear-wheel drive are available. With the standard-range Select trim, the range is 230 miles; it's 211 miles with all-wheel-drive. The uniquely made California Route 1 model with rear-wheel-drive has a 305mile range. Fast-charging capability is standard at up to 150 kWh. "I think people are embracing the technology," says Eric Beas, general sales manager of Big Valley Ford in Stockton. "There's been good interest in Mach-E but Ford also has the Lightning (the electric version of the best-selling pickup truck) coming out and we have 300 reservations as a dealership." The new truck, however, may be delayed because of continuing supply chain issues. In the meantime, the Mach-E has captured the spotlight. The 15 1/2-inch vertically mounted touchscreen is a highlight. Ford calls its infotainment/multimedia/safety system Sync 4A. It handles most of the interior functions. Standard safety and technology features are impressive as are the overall interior space, driving comfort, and road feel. It's a lot of car for a starting price of $43,995.


2022 LUCID AIR — Fifteen years after it

was founded as a battery manufacturer and then rebranded as an automaker, the carmaker's luxury sedan has arrived. It hopes to go where no new electric car has gone — to challenge Tesla. Massively powerful, the top-line Air Dream Performance edition has 1,111 horsepower and 1,025 pounds-feet of torque. Its slightly less powerful sibling has 933 horsepower but a manufacturer'sbest 520 miles of range. A few other trims vary in horsepower but remain specification monsters. With such high numbers and extraordinarily styling inside and out, the two top-line Air models sold put shortly after they were announced for a price estimated at $170,000. Cheaper editions, with lower performance expectations, are planned for 2022 and for about half the cost.

2022 RIVIAN R1T — Style, innovation, and

unparalleled specifications lean toward success for the just-debuting pickup truck. It's been planned for years and it's strategically built its financial foundation. Now what awaits is real-world reviews. The on-paper numbers impress: The Rivian has 1,760 pounds of payload and an 11,000-pound towing capacity. Its 314mile range is better than many electric cars it's the most among trucks or RVs. Further, Rivian's 0 to 60 miles per hour acceleration is marketed at 3.5 seconds. The R1T is a performance-oriented truck with equal ability for off-road adventure. There's more. The truck has four electric motors that deliver a combined 835 horsepower and 908 lb-ft of torque. It weighs 7,148 pounds and still has 0 to 60 miles-per-hour acceleration in 3.5 seconds. Two one-of-a-kind features complete the futuristic-looking truck. A side-toside pass-thru box storage area is located behind the rear seats. It's called "gear tunnel." It's ideal for golf clubs, skis, luggage, etc. But an optional accessory is the removable "camp kitchen." It features a 1440-watt induction stovetop. The Rivian R1T starts at $74,145. This year, offer your Valentine a homegrown bouquet with a little je-ne-sais-quoi. Tulips, daffodils, and hyacinth are all February bloomers that make great bouquets. And don’t forget to collect some greenery to add color and texture.

Never made a bouquet before? It’s hard to go wrong with fresh cut flowers, just make sure you cut the stems at an angle and be sure to remove any leaves below the water level. But if you want to take your bouquet to the next level, keep these tips in mind and you’re sure to end up with a bouquet worthy of your Valentine.

START YOUR SEEDS FOR SPRING Don’t let that chill fool you. You can get your veggies started now for splendid spring and summer bounties. While tomatoes are sensitive to cold conditions, seeds can be started inside up to six weeks before the last frost. In San Joaquin County, where the last frost of the season is typically early or mid-March, that means February is the perfect time for your tomato seeds to get their grow on. Peppers and cucumbers like it even warmer, so start your seeds indoors toward the end of the month and move them outside six to eight week later when the sun has had a head start warming the soil. Biodegradable pots offer an easy option for starting seeds since the whole pot can be planted in the ground, just be sure not to start too many seeds in one pot. Plant your seeds with a seed-starting mix (which doesn’t actually contain dirt, but provides the needed nutrients and drainage to get your seedling ready to grow) and keep them in a warm, well-lit place. Keep soil moist, but be careful not to oversaturate them. Unlike our delicate summer favorites, carrots and radishes aren’t bothered by the cold and should be planted directly outside.

hen Valentine’s Day hits and you’re looking to romance someone special, it’s hard to look past the sparkling wineries in Lodi’s backyard. With plenty to choose from, we’re highlighting one option for big, bold reds that match the winter season, and the gorgeous red hues we’re all donning to celebrate love. At Mettler Family Vineyards, the tasting room is open to visitors Thursday through Monday, giving you plenty of opportunity to taste—including on V-Day itself. But while you’re in, what are you going to drink? While there are options for those that enjoy a white or lighter red, we’re focused on the bigger sips that can really stand up to any meal you pair them with. Read on for our picks of some of the best wines to impress your date with this Valentine’s Day, whether you’re sipping on site or grabbing a bottle to uncork with your home-cooked meal.

2018 LODI ‘EPICENTER’ OLD VINE ZIN This Mettler staple is one of the most popular wines to come out of the tasting room with every vintage. The 2018 bottle is no exception. Boasting grapes from one of the oldest zinfandel vineyards in the Mettler Family collection, nestled into the Mokelumne River sub-appellation—the epicenter of the OVZ district—the vines date back more than 50 years while also following sustainable winegrowing protocols as set forth by Lodi Rules. Deep and inky in color, this blend is earthy and smoky on the nose, with notes of blackberry, vanilla, and plum. On the palate, you’ll taste the ripe berries as well as hints of licorice, herbs, and black pepper. Not a sweet zinfandel, but rather a complex combination of flavors with softly integrated tannins, this wine has no trouble standing up to the robust flavors in stews or grilled meats.

2018 LODI ESTATE GROWN CABERNET SAUVIGNON Wines from three vineyards are combined to create this popular cabernet. The fruit comes from the family’s Jahant, Clements Hills, and Mokelumne River vineyards, combining grapes from three contrasting regions. Deep garnet in color, tasters will first notice dark cherry, toast, cedar, and nutmeg on the nose. The dark cherries and plums will be most prominent on the palate, with whispers of vanilla. Mid-palate, the velvety texture of the wine shines through, leading to moderate tannins and some acidity. Grab a bottle to crack open now or save for a few years. In the right conditions, this cab is expected to age nicely in the bottle.

2019 PETITE SIRAH Petite Sirah thrives in the Mediterranean climate offered in the Lodi AVA. Delta breezes blow in to cool off the vines after high daytime temperatures, creating an ideal growing climate for this particular grape type. Dark purple as it pours, this estate-grown wine hits the nose first with dark berry and plum notes. Upon tasting, flavors of pepper and honey may be distinguishable. Using both French Oak (20 percent) and Neutral Oak (80 percent) to create the unique flavor profile, the tannins are well-integrated while the wine remains bold and lush with a lingering finish. If you’re taking advantage of the luxurious and modern bar for your drinking line-up, we recommend accompanying any bottle, glass, or tasting with a charcuterie board. Each is prepared with three different cheeses, which rotate as the team sees fit. “We always like to change it up, so it is something new, but we normally serve cheddar, gouda, or manchego,” says Nick Stefan of Mettler Family Vineyards. The third cheese is typically a chevre served with seasonal jam, likely cranberry this time of year. To round it out, a selection of crackers and chocolate-covered almonds decorate the board. For an extra special touch—and one that makes all the more sense this time of year— salami is served in the shape of a rose.

Yes, you probably remember being forced to eat the boiling blobs of mush from the past—but guess what? These aren’t your grandmother’s brussels sprouts. Crispy, crunchy, and bursting with umami flavor, these recipes will have you questioning why brussels haven’t been part of your weekly dinner rotation. And the best part is brussels sprouts are simple to prepare. Whether you’re a fan of savory, sweet, salty, or spicy, these winter veggies are as versatile as a basic black dress. So do yourself a favor and give them a chance to be a part of your family’s dinner table—today, tomorrow, and forever.

BRUSSELS BACON BITES INGREDIENTS

1 pound brussels sprouts, halved 1 pound bacon 3 tbsp. olive oil ¼ tsp. sea salt Pepper to taste Pinch of red pepper flakes 2 tbsp. fresh thyme Hot honey drizzle

DIRECTIONS Preheat oven to 425 degrees. On rimmed baking sheet, toss brussels sprouts, olive oil, sea salt, thyme, and red chili flakes. Trim bacon slices into thirds and wrap each sprout in bacon. Roast sprouts for 25 to 30 minutes. Remove from oven, flip brussels sprouts, and cook for an additional 10 minutes. To serve, arrange on a platter and drizzle with hot honey.


BASIC ROASTED BRUSSELS SPROUTS INGREDIENTS

1 pound brussels sprouts, halved 4 tbsp. olive oil 1 tbsp. lemon juice ¼ tsp. lemon zest ¼ tsp. sea salt ¼ tsp. cracked pepper

DIRECTIONS Preheat oven to 425 degrees and line baking sheet with aluminum foil. Toss brussels sprouts with olive oil, sea salt, pepper, lemon juice, and lemon zest. Roast the brussels sprouts for 20 to 25 minutes.

PANCETTA AND CHEVRE BRUSSELS Basic Brussels Sprouts Recipe (see above)

INGREDIENTS 6 to 8 oz. pancetta, chopped 4 oz. chevre cheese, crumbled 1 tbsp. balsamic vinegar

DIRECTIONS Start by cooking the pancetta over medium heat until crispy. Remove pancetta with slotted spoon. Use basic brussels sprouts recipe above but substitute olive oil with pancetta drippings. Cook according to instructions. When completely cooked, remove from oven and garnish with pancetta and crumbled chevre. Drizzle with balsamic vinegar.

MEDITERRANEAN BRUSSELS Basic Brussels Sprouts Recipe (see above)

INGREDIENTS ¼ c. sun dried tomatoes, chopped ½ c. crumbled feta 2 tbsp. pine nuts, toasted

DIRECTIONS Cook according to instructions above. When brussels sprouts are completely cooked, remove from oven and garnish with sun dried tomatoes, feta, and toasted pine nuts. SJMAG.COM

They’ve Got the Meats!

C

hef Don King, the owner and grill master behind Stockton’s Fat City Brew & BBQ, is a genius when it comes to cooking meats. From his tri-tip to pork ribs, pulled pork to ground beef, every dish he turns out tastes amazing in large part because of his cooking technique and spice blends. Next up on the scale of importance, however, is the quality of the meat. Regardless of what you are cooking, the brand and type of meat used will make a difference in your end product, even if you’re a culinary genius like Don. “People do know the difference,” Don says of the different tiers of meat. Brisket—one of Fat City’s best sellers of which they sell out every day—is one of the best examples of how meat matters. “You can definitely tell the difference between a prime brisket when cooking briskets,” he says. Don plays to the strengths of each supplier out there. Instead of choosing one place to source all of his meats from, he buys a little from each place nearby with the knowledge of who does what best. That’s why he purchases pulled pork from Sysco Central California (where they carry the Seaboard brand he likes) and briskets and ribs (also Seaboard) from Express Restaurant Depot in Stockton. The Chef’s Store, also in Stockton, is where he buys tri-tip and ground beef. For the most part, he's going for high quality, choosing prime cuts of meat instead of select or choice (which has a lower fat content). When it comes to his tri-tip, however, the secret is he uses select because the prime cuts will simply fall apart. At home, he says he’d go prime, but when you need a large batch to keep, select is actually best. One of the reasons his brisket is so popular is because Don sources only the best USDAcertified prime angus brisket. You can see in the way the meat is marbled that it has a high fat ratio. “When you’re smoking [meat], you want something with a high fat content,” he explains. “Prime is the top; the best you’re going to buy.”

For pork, which isn’t really graded, it’s about the brand, Don says. Seaborg is one he trusts because the ribs he buys don't dry out while cooking. Instead, they stay tender and juicy.

There’s a lot of science behind grilling and meat selection, but the proof is in the end product. Don’t take our word for it, try for yourself. Fat City BBQ is open six days each week, Tuesday through Sunday.
