Our travel feature this month takes on The Loneliest Road in America, a phrase coined by Life Magazine in 1986, claiming the stretch of Nevada road had little to offer, including “no points of interest.” Guess again. Travel Nevada used that phrase as an opportunity to market the stretch of Nevada’s Highway 50 referenced, boasting about all of its cool stops along the way from the quirky roadside attractions like a tree filled with old shoes to the more mesmerizing, such as the darkest skies in the contiguous United States ablaze with more twinkling stars than you can count on a clear night. For those looking to stay closer to home, or perhaps partake in a seasonally appropriate daytrip, Apple Hill is on our radar. Many of the farms have gotten back to their regular offerings, which include apple picking aplenty and pumpkin patches this time of year. f you saw the beloved The Force commercial where a young boy dressed as Darth Vader turns on his father’s Volkswagen using the power of his mind (one of the most iconic Superbowl commercials of all time), then you know the work of Tim Ellis. If you ever watched a Got Milk? Campaign or have seen an advertisement for the NFL in the past four years, including the 100 Year Game commercial where a slew of NFL standouts were clad in tuxedos, then you know the work of Tim Ellis.

Tim was born and raised in Stockton, a 1979 graduate of Lincoln High School (where he inductedrecentlywas into the hall of fame for his success in marketing) who played football and performed in theater productions, an odd combination at the time. “When I joined, I don’t think there were any athletes there,” he says of LHS’ theater department. “When I left, several of the most successful athletes at LHS were [in theatre].”

“When I had a chance to go to the NFL, I jumped,” Tim says. “I wanted to make a difference on the NFL. I wanted to put my imprint on [it].”

At the same time, Tim is focused on propelling promising youth both in Stockton and beyond. Just last year he participated in a Zoom call with a third-grade class at LHS to answer questions about marketing. He also prides himself on inviting young associates to conferences to discuss future marketing trends, giving them a voice and an opportunity they may not otherwise have.

After high school, Tim attended an artist conservatory in Southern California, driven to his audition by one of his LHS teachers, Paul Barnes. He eventually decided, however, that acting wasn’t the life he wanted, so he packed his bags and headed to Paris. For five years, Tim traveled the world working odd jobs such as a hand on an oil rig, an actor in Tokyo, an au pair in Paris, a bartender on a cruise ship, and a tractor driver in Israel. “That ended up being probably the smartest thing I ever did,” he says. After heading back to the states, Tim received his bachelor’s in journalism with a marketing emphasis from San Diego State University. He began work at a local ad agency in 1990 before relocating to San Francisco to work at Goodby Silverstein where he worked on the Got Milk? campaign.

Tim’s work provides a more human and compassionate approach to brand marketing. Called the “helmets off” strategy, it was his idea to focus on the players as the face of the NFL by showing them out of uniform or at least not as faceless athletes. He also started integrating societal issues into the advertising campaigns. His other goal has been “to have a more youthful, more energetic approach to marketing for their brand” by integrating music, fashion, and gaming into their campaigns. His efforts are made obvious by what we’ve all seen on our televisions in the past four years: advertisements that feature wide receiver and gaming fanatic Juju Smith-Schuster and Ninja (the biggest YouTube gaming influencer in the world), a TikTok tailgate campaign with Miley Cyrus, and the NFL’s newest ad, featuring Lil Wayne at a high school pep rally.

“Everything went really well for me in those early years,” Tim recalls. From there, he held marketing positions at Volkswagen, Volvo, and Activision. At the latter he won the coveted Adweek Brand Genius Award. His The Force commercial won Adweek’s “Ad of the Year” in 2011. He’s also taken home the Grand Effie Award for the most effective campaign in the U.S., and the Cannes Lions Titanium award. In 2018, Tim started at his current gig as chief marketing officer for the NFL, and his life truly came full circle. “I loved how football was so connected to the community. I remember, as a boy, going with my dad to the games at LHS… I remember as a player how close I was to my teammates on the team,” Tim says.

In April 2021, Michael began radiation treatments and chemotherapy after being diagnosed with oral cancer. He endured treatment five days a week for nine weeks.Three months later, he was declared cancer-free and continued raising his three children with his wife. “We had the luxury of building this program together with the National Guard,” says Brandy. “They were invested because they had been a part of youth challenge programs, and this was going to be their own.”

The staff of 12 includes six teachers, an education specialist, academic counselor, social worker, clinician, Thurman, and an administrative assistant. “The best part is that they get to see the change in our kids, and they get to see that pretty quickly because the kids live with us.” That’s something Brandy can speak to personally, having been with the location since its inception, serving as a mentor before stepping into her current role.

Families see their students on social media and have phone calls throughout the five-month stay, then come to visit ten weeks into the program on Family Day. “The experience is sometimes emotional. The families are surprised at the change in ten weeks,” Brandy says. “We have success stories with every graduating class.”

Discovery ChalleNGe Academy is a partnership between the California National Guard and San Joaquin County Office of Education, providing a five-month residential program designed to help students earn their high school diploma and compete for scholarships. The program was established nationally in 1993 and the Lathrop location has been in operation since 2017.

With a passion for education, she embarked on a journey to become a teacher and eventually a principal or vice principal. Part way through her associate’s degree in Early Childhood Education, Marissa found out she was pregnant. “I wasn't sure if I was going to be able to continue going to school, but the professors I had at the time believed in me and pushed me to keep going,” Marissa says. “I tweaked my schedule to where I was able to still attend school and be successful while pregnant.” The offering of in-person and online courses as well as daytime and evening classes made Marissa’s education possible. Today, she teaches a fifth and sixth grade combo class at Lois E. Borchardt Elementary in Lodi. She has both her bachelor’s and her associate’s degrees in Early Childhood Education and she is one class away from obtaining her master’s. At the same time, Marissa earned her Multiple Subject Teaching Credential.“Theprogram at Humphreys University is designed to prepare teacher candidates for the challenges of and opportunities for teaching at the elementary and middle levels (TK-8) of California’s highly diverse schools,” says Kary Ridenour, credential programs administrator at Humphreys University. “This group of about 15 people holds events throughout the year, and throughout the county in different cities to help raise funds for our Hospice House,” says Rebecca. This helps the nonprofit to pay for families whose insurance does not pay for hospice care or cannot otherwise afford it.

Rebecca Burnett has been with Hospice of San Joaquin for 13 years, serving in the role as its CEO since January of 2015, and continues to love her job in serving patients. “I feel it’s a privilege to be [in] someone’s life as they’re transitioning to a new phase,” Rebecca says. “I know that sounds corny, but death happens regardless of if hospice is involved or not.”

 BY NORA HESTON TARTE V isions of picking plump red apples from orchard rows with our brood in tow is the stuff fall fairytales are made of, and it’s all possible—and very accessible—at nearby Apple Hill. Apple picking, however, is just the tip of the iceberg when it comes to fall fun at the farm. A collection of familyoperated farms and businesses known as the Apple Hill Grower’s Association includes 50 farms in the area and we’ve got a few tips for making the most of your time in what we like to call the real big apple.

ALL ABOUT APPLES If you came for the apples, you’re in the right spot. You pick farms offer apple picking late into the season (usually October) as long as fresh, ready-to-pick fruit is still ripe in the trees.Our best tip for apple picking without a hitch is planning ahead. Different farms have different hours of operation and there’s little worse than showing up with a day of picking in mind only to discover your farm of choice is closed for the day. Luckily, if you’re looking for apples specifically you have several options. You Pick Apples are available at Denver Dan’s, Harris Tree Farm, Sloan Mountain Orchard, Pine-O-Mine Ranch, and Goodness Orchards (by appointment).

Abel’s Apple Acres is a can’t miss stop if you’re traveling with kids. Open Labor Day weekend to Christmas Eve, the bakeshop is teeming with apple goodies, including (but certainly not limited to) buttermilk apple pies. This is also a good farm to spend the afternoon, grabbing lunch and letting the kids play in Abel’s Amazing Maze. Don’t forget to grab some photos in the collection of country cut-outs!

Some of these farms also have options for grabbing other fruits and veggies on your visit.Ifyou want the fresh apples without the exercise, Apple Ridge Farms stocks giant barrels full of a variety of apples that you can purchase for $2 per pound. It’s also one of the most popular farms in the area with face painting, gem mining, a scarecrow maze, and hiking trails beckoning families to join the fun. Aside from bringing your own apples home, another perk to apple hill is the apple-centric treats. Rainbow Orchards is a favorite for grabbing a bag of hot apple cider donuts (but there are a few farms that offer them). There are also pies, cobblers, crisps, tarts, jams, butters, syrups, vinegar, and caramel apples on the menu. Apple Ridge Farms is another stop famous for its apple cider donuts, which come in glazed, sugar-coated, or plain varieties. The real treat here, however, is the Apple Sundae, one of those tasty apple cider donuts topped with vanilla ice cream, whipped cream, peanuts, and caramel sauce. At El

It'll take a long weekend to traverse the Loneliest Road and get acquainted with the slower pace of life rural Nevadan dwellers love, but along the way you’ll uncover hidden gems from natural hot springs off of dirt roads to haunted hotels teeming with supernatural stories (and spirits!) that will keep you up at night.

T he irony of the Loneliest Road, (a phrase coined in Life Magazine in 1986), is that it seems plenty of friendly souls inhabit the small towns that dot the stretch of Highway 50 in Nevada that was once a significant part of the Pony Express. These sweet people—sometimes one of 17 in a small town—unlock the secrets of the trail.

First Stop: Fallon, NV Pop. 8,540 Fallon is about an hour outside of Reno, and it’s also the most populated city you’ll hit on thisWetrip.suggest getting the party started at Frey Ranch Distillery. On Saturdays, the Churchill County distillery serves tastings of its famous whiskey and offers tours of the property, if you ever wanted to know how whiskey is made. The family-owned and operated business sits off in the distance, but it’s also the chicest and most modern building in the city. The result of their hard work is sustainable Nevada born straight bourbon whiskey. It’s a popular bottle at bars both local and far, but on-site you can sip variations not readily available everywhere else. 1045 Dodge Ln., Fallon If you’ve come in fall, or you’re looking for a family-friendly day on the farm, Lattin Farms may be a better first choice for starting your trek across Nevada. Here, a kindly older couple run seasonal activities at the farm, which include goat days, u-pick fruits, and a pumpkin patch. Outside of these activities, the farm is pretty quiet, but we do suggest stopping by to grab a jar of their infamous Hearts of Gold Cantaloupe Jam. The jarred creation is very rare and has created quite a following, made from cantaloupes grown onsite. 1955 McLean Rd, Fallon Families and adults will be in awe of the petroglyphs—or ancient rock drawings—at Grimes Point Archaeological Site. 55 Commercial Way, Fallon Day 2: Road to Eureka, NV Pop: 480 This is where it starts to feel like a true road trip. On the way to Eureka there are several stop off points, so take your time and plan to spend the day exploring Nevada’s rural backroads. Middlegate Station is your first stop. A weathered wooden sign announces the population: 17. For fun—or perhaps accuracy—it has an 18 crossed out next to it. Middlegate Station is about all the town has to offer, but we bet you didn’t expect the food and drink to be top notch. Belly up to the bar, order a brewski, sign a dollar bill to hang on the wall, and indulge in some comfort food. The monster burger is the most popular item, but the menu has a lot more to offer, and the friendly clientele is led by a resident cat who will greet you at the door, just past the dilapidated phone booth. 42500 Austin Hwy., Fallon Before you leave, fill up on gas (yup—the station has that, too, although it doesn’t look like your typical gas station) and get back on the road. The Shoe Tree is up next. And yes, it’s exactly what you’d expect. The large cottonwood tree is just three miles down the road from Middlegate Station. Pro Tip: Bring a pair of old shoes to toss over the top—it’s tradition, after all. You’ll have a longer stretch of road to your next stop—Austin. But this ain’t a music city in Texas. Austin is a small former mining town dating back to 1862 (pop: 101). There’s the ruins of a castle to explore up on the hillside, just a couple of miles off the main road, and small stores selling colorful gems and old prostitution coins. A lot of the buildings are closed, but there are a couple of monuments to explore and a restaurant called simply Grandma’s 99 Main St., Austin Also in Austin is the Spencer Hot Springs. You’ll be roughing it, trailing down an old dirt road to reach the GPS coordinates. It’s on BLM land approximately 19 miles east of Austin. Once you leave State Route 376, you’ll climb onto National Forest Service Road 001. This is a natural hot spring in "Much of the original Top

If you’ve brought your RV, we suggest setting up at Sand Mountain Recreational Area A strange geological occurrence created the mountain by migrating and depositing windblown sand. Now it’s a popular spot for dune buggies and other offroad vehicles, or simply photoshoots. There is a learner’s loop for kids that’s much safer than the dune system where we suggest driver’s beware. However, when you know what you’re doing, the 3.5-mile long, 1-mile wide, and 600-foot-tall mountain made of sand is a rip-roaring good time. Want to really test the limits? Bring a snowboard to slide down. If you prefer to skip the camping, a suitable Holiday Inn with an indoor pool awaits you.

A blue plastic tub signals you’ve found it, and three little pools of water beckon you to climb into the warm water and enjoy the view. If you haven’t been to a rural natural hot spring before, this is an experience unlike any other. Towel off and make the final trek to Eureka, another former mining town dating back to 1864. Another fun fact about Eureka? It’s haunted— well, probably. If you don’t scare easy, stay at Jackson House, an old Victorian hotel on the main stretch of road. If that sounds like too much for you, stay at its sister property Gold Country Inn and use your room key to access the Jackson House and tour its empty rooms. 701 N. The coffee, baked goods, and morning sandwiches here are divine, and the perfect sendoff for an active day ahead. 51 Clark St., Eureka Great Basin National Park is the least visited national park in the country, but not because it isn’t beautiful. We suspect its rurality is what causes many to skip it. It’s also located next to Baker, which happens to have the darkest skies in the contiguous United States. There are over 60 miles of developed

58 SEPTEMBER 2022 | SJMAG.COM hiking trails in the park, so you’ll have no trouble finding a place to explore. Favorites include Bristlecone Trail (2.8 miles), Osceola Ditch Trail (9.2 miles), and Lexington Arch Trail (7.4 miles). There is also a short trail behind the visitor’s center with historical signs that is a good warm-up before embarking on something longer, or a scenic drive to Wheeler Peak if you want to skip the hike.

Lehman Caves is a can’t miss. Tours sell out fast for this natural wonder so be sure to book in advance so you can explore the odd collection of active stag mites and other growing formations with an experienced guide. After a day filled with hiking, lunch at Great Basin Café is highly recommended. Here you can grub on grilled cheese,

nachos, and a Stuffed Pretzel Sandwich, plus that welldeserved, post-hike beer. As we see it, you have two choices for lodging. Book a campsite and stay the night or head the few minutes into Baker and stay at the Stargazer Inn. This quaint roadside-hotel is bright blue and hard to miss, housing modest rooms. The service is unlike any other. Owned by a couple who has moved from national park to national park most of their lives, they bring a big city quality to the small town.

The fullservice restaurant you dined at last night has a casual counter-serve breakfast option for early mornings. On the way to Ely, there is another old-school, roadside attraction to see. Ward Charcoal Ovens State Historic Park boasts six, beehive-shaped charcoal ovens used to process silver discoveries from 1876 to 1879. You can tour the ovens and even walk around inside. It’s not a destination on its own, but it makes for a quirky roadside pitstop between visits. Pro-Tip: Bring $5 cash for the entry fee.In Ely, the downtown has a lot of mural art, which makes strolling fun, and small casinos with slot machines and table games. 211 5th St., Ely At night, you’ll hop aboard the Nevada Modern Railway to view those dark, starry skies you don’t get in the city. There are several ways to tour, but we recommend the Sunset, Stars, and Champagne train. You’ll get two glasses of bubbly as you trek across Ely, first with the sunset as your backdrop and next with a dark night sky. Head to the uncovered car and get an astronomy lesson from the knowledgeable guides. Head back to Ely and hit the hay—you must be exhausted from all of that adventuring. We recommend Hotel Nevada for a themed and historic hotel that offers it all. In the morning, it’s a long drive back home. If you desire, add an extra day into the trip and stop off in Reno as you adjust back to life in the 21st century.

Dine in a jail cell, then take a star train. Cellblock Steakhouse was built above the now-defunct jailhouse that once housed Ely’s criminals, but they kept the theme alive. Every dining table is placed inside of a cell (don’t worry, they leave it unlocked). The fare is your standard steakhouse grub, delicious and filling, and the atmosphere makes it a must-stop.

This custom burger combines the sharp taste of bleu cheese with the saltiness of bacon before adding grilled onions, lettuce, tomatoes, pickles, and the aptly-named house “fancy” sauce.

HAMBURGER Fat City Brews & BBQ Fat City Brews & BBQ is another local spot that does simple well. The hamburger here isn’t loaded with special ingredients or topped with some crazy sauce. Instead, Owner Don King packs a toasted Genova Milk bun with a ½-pound hand-formed patty and adds only the basics— mayonnaise, lettuce, tomato, and onion.

Add avocado, bacon, an egg, and some serious gourmet cheese (Fiscalini Cheddar, Pt. Reyes Blue, and/or Cave Aged Gruyere—we vote for all three)

MONSTER MOO Moo Moo’s Burger Barn

The name itself is enticing enough. This ¼-pound ground chuck burger is packed with grilled onions and Gulden’s mustard. Manny’s ditches the basic bun though and instead opts for something in sourdough. Slap the signature Vienna pickle on the side and you’ve got yourself a real good sandwich! Plus, there’s always the option to add bacon (for a surcharge).

The Monster Moo is barely classified as a burger, but since it boasts two 1/3-pound ground beef patties, we’re including it on this list anyway. As if that didn’t sound like enough to fill you up, Moo Moo adds American cheese, bacon, tomato, lettuce, red onion, and Moo sauce before its finished. All that and it’s stacked three-high on toasted white bread instead of your classic bun.

The patty is topped with saucy mustard, pickles, grilled onions, and two slices of American cheese and served on grilled sourdough bread.

PIZZA BURGER Midgley’s Public House Can’t choose between pizza and a burger? Don’t! At Midgley’s, you can have both. In this mouthwatering creation, a half-pound of angus ground beef is grilled and placed on a brioche bun before it’s smothered in marina and ranch and topped with melted American and pepper jack cheese. Cultural Winemaking Hispanic Winemakers are key to Lodi’s transformation from mass-market producer to wine destination  BY JAMES RAIA D DAN HOOD

"As long as winemaking in California has been part of the discussion, Lodi has been operating,” explains Chris Rivera, founder of the Seis Soles Wine Co. "But a lot of the history was bulk producing for making wines. It wasn't necessarily growing for quality."

"Although we did a lot of grape growing, when it comes to wine growing I think it's fair to say it's only been in the last 20 years the focus has shifted from large production for wines that aren't necessarily traditional to more artisanal types of wines," Rivera says. "Lodi is making a name for itself; it's being really well-recognized and getting its due."

W

inemaking in the Lodi region isn't new. Harvests have occurred for more than a century. But its intimacy, influence, and cultural history are increasingly adding to its international prominence.

Rivera, whose parents migrated from Central Mexico to the Central Valley, is among several winemakers in the Lodi region immersed in the area's evolving Hispanic wine persona.

"But no one wants to drink what their parents are drinking. No one wants to drink cabs (cabernets) or buttery Chardonnays. They want something refreshing and affordable. It's totally attainable in Lodi." Christina, 33, was raised in Sonoma County, sometimes called Pinot Country. Nearby Napa is world-renowned for its wines. "I grew up surrounded by wine country, but never really paid much attention to it," says Christina. "[Wine] never came across the table or anything and it wasn't something I ever thought about.”

Her mother used wine as an ingredient in spaghetti sauce. Christina "stumbled upon the wine industry," and it's now her career. Her Hispanic heritage is important in her responsibility as an assistant winemaker at Acquiesce Winery where she’s worked for one year. The small batch business produces everything from grenache blanc to roussanne and viognier to white blends Belle Blanc and Ingénue.

"Hispanics are a big demographic, so when you are making something stylistically you want to broaden your reach and make it toward something they want to drink," says Christina. "Stereotypically, they gravitate toward Tequila and Corona, something that's refreshing.”

"There are industries within the industry."Anearlier career tasting room job led to a winery production job in Santa Rosa. The camaraderie, science, and the art of winemaking was more appealing to Christina than the hospitality industry. She did her first harvest in 2014. Opportunities also fostered working on harvests in Australia and New Zealand.

"I have worked in several wine regions, domestically and internationally and the wine industry, in general, is communal, but it does feel accentuated here," says Christina. "I felt it immediately, that it would be really nice and reassuring to have that"That'sbackup."part of the allure of Lodi; it just has that shadow, that rain shadow over it. People say, 'Oh, they're just bulk and feed Sutter Home' or 'It's too hot, you can't grow quality grapes.' But it's definitely not that way. It shows in all the artisanal wines popping up; we are doing something right."

But while pursuing a medical career at Santa Rosa Junior College, a program of interest wasn't available via a lottery system. Instead, Christina took wine classes for fun. "I absolutely fell in love with the concept of it," says Christina, who has a degree in Enology & Viticulture from Washington State University.

A project manager for an agricultural firm, Gerardo worked with his family part-time until leaving his full-time employment to work in the wine business.

He works with his son and two other colleagues in the winemaking process; his uncles remain in charge of the vineyards. "There's still a lot of potential; Lodi still keeps that intimacy. If you walk into a wine tasting room in Lodi, you will talk to the staff, talk with winemakers, or see the owners on site. That's something Lodi still has about it. You get to see the real people behind the scenes."

"The farming roots brought me back. I've been here almost 12 years and fulltime here six years. I make wine from the family's vineyards. I like to produce what the vineyard produces. We are very delicate on the farming part of it,” Gerardo says. As a winemaker, Gerardo, 42, is diverse. He also makes wine for a dozen other brands, with clients in Contra Costa County and Napa among other areas. He relies on the same philosophy. "Let's focus on the vineyards and that what's going to

The younger Espinosa's uncles planted the first vineyards and they're still farmed and managed by the family.

Susana's interest led to another internship and classes at UC Davis to study fermentation. "I just fell in love with it," she recalls. "I continued and finished my classes and asked if I could stay and Gallo hired me to stay on the wine side. And the rest, you know, is history."

With her long tenure, including her current winemaker position at Peltier, Susana espouses the significance of winemaking in the Lodi region. "Lodi is the backbone of the grape industry," she says. "Lodi produces more fruit than Napa and Sonoma together. The wines that are made here are completely adapted to the weather that we have in Lodi.”“There is a different relationship between the wineries,” Susana says about Lodi. She calls it a concert of collaboration. If a winery needs help, another winery obliges. "It's awesome to me to work in the industry in Lodi and find out the concept of everybody working together," she says. A few months ago, Chris stopped making wine for other companies to dedicate his efforts to Seis Soles. "I figured out I really needed to commit full-time or not because as a side hustle, I think I had gotten as big as I was going to get," says Chris, who buys his grapes from area growers but doesn't own land. "I decided to take a leap of faith."

Physical therapy was Chris Rivera's first career pursuit, but an entrylevel job at Gallo in Livingston a dozen years ago initiated an interest in winemaking. "Once I got there I was surprised; there was his whole new industry I knew nothing about," Chris recalls. "I was dragging hoses and doing a bunch of stuff, individual takes that would eventually lead me to make wine." As his career advanced, Chris realized if he wanted to pursue a career in the wine industry he couldn't "stick around just to be in middle management." He applied at numerous wineries to learn more and was hired at Klinker Brick Winery. He began to learn the business throughout nine harvests with a mentor. Now he's a sole proprietor of a brand named after the "sixth sun." As Chris explains, the Aztecs believed the world had been created and destroyed in four cycles, giving way to life under the fifth sun. 1 tbsp. sugar Kosher salt, pinch 4 large zucchinis cut into thirds, lengthwise 6 Calabrian chiles in oil, coarsely chopped 3 tbsp. olive oil ½ c. mint leaves

1 small red onion ½ c. red wine vinegar

DIRECTIONS Prepare your grill to medium heat. In a large bowl combine onion, vinegar, and let set for ten minutes. Mix in the sugar, salt, and chiles. Set aside. In a large bowl, toss the zucchini in olive oil and season with salt. Place the zucchini on the grill and cook for 8 minutes. Flip zucchini over using tongs and cook for an additional 6 minutes. Remove from the heat and let cool to room temperature. Place the zucchini back into the large bowl, add the onion, chile mixture, and toss to coat. Add additional mint and plate.

DIRECTIONS Prepare your grill to medium high heat. On a rimmed baking sheet, brush zucchini, squash, and onion with olive oil, salt, oregano, and red pepper flakes. Meanwhile, place pine nuts in a small sauté pan and cook over medium low heat until they are aromatic and golden in color. Remove and set aside. Place all vegetables directly over the heat and grill for 8 minutes. Flip and cook for an addition 6 minutes, leaving the onions until they are charred. Remove the medley and plate on a large platter. Layer the squash, zucchini, onion, feta, pine nuts, and fresh basil. Serve and enjoy! PIZZA BOATS

Preheat your oven to 450 degrees. Halve each zucchini lengthwise and spoon out the flesh from the center. Place the zucchini shells into a 9 x 13 baking dish. Chop the flesh of the zucchini and place it into a small food processor with one small yellow onion. Pulse until combined. Pour the mixture into a sauté pan with olive oil over medium heat and cook until soft. Remove from the heat and add marinara, ricotta, 3/4 c. of the mozzarella, Parmesan, dried basil, and dried oregano. Stir to combine and season with salt and pepper. Spoon the mixture over the zucchini shells and top with remaining mozzarella. Add pepperoni cups and bake until golden brown for 20 minutes. Garnish with fresh Parmesan and basil.

Carlos Arechiga, owner and operator of Lodi’s La Bamba Mexican Food truck, knows a thing (make that a lot of things), about preparing mouth-watering street tacos, a traditional Mexican taco served on a corn tortilla with meat, onions, and cilantro, as well as other delicious Mexican foods such as burritos, quesadillas, enchiladas, nachos, tortas, and“Wesoups.always try to use the freshest, best quality ingredients,” says Arechiga. “Even though they cost more, we think it’s worth it. From our meat to our tortillas, I always ask myself, ‘Would I eat this?’” When asked who taught him how to cook, Arechiga credits his dad, who started the family business back in the mid-1990s. “He taught me everything I know,” says Carlos. Another thing that sets La Bamba apart from other taco trucks is their enthusiasm for creating a menu that caters to all customers, regardless of dietary needs and preferences. Think tender cuts of carne asada wrapped in grain-free cheese shells for your friends eating keto, smoky mushroom and pico de gallo tacos for your vegan friends, and a grilled fish burrito for your pescatarian friends. Meal prepping for beginners BY SARAH STEFFENS HEALTHY YOU It’s hard not to admire a batch of colorful meals packed in matching containers as seen on Tik Tok and Instagram. Aesthetics asides, there are many advantages to meal prepping, such as balanced meals ready in the fridge for you to eat throughout the week, saving money on take-out, and improving your overall health.Cooking your own food is healthier than eating out, as many restaurants serve portions that are higher in calories, fat, and sodium than our bodies need for one meal, and use excess oils and sugars. There are exceptions, of course, but gen erally speaking, many people feel better eating home-cooked meals made with healthy ingredients, balanced with pro tein, fiber, and fat. Meal prep is an excel lent way to ensure you eat healthy meals consistently, which is key to managing weight, often improving blood pressure, a preventative to illness such as diabetes and heart disease. We all know that eating out costs more than eating in, even as the cost of grocer ies have soared. Did you know that the average burger meal in California is $8? And that’s for a fast-food meal, anything fancier can land you between $15-$20. If you batch-cook a tray of marinated chick en thighs, roasted Brussels sprouts with garlic and caramelized onion, and a pot of brown rice, you’re looking at about $4/ meal. The savings (financially and nutri tionally) really add up!

Using up what you already have wastes less food—Americans throw away about a third of the food they buy—and saves money. Remember that in the beginning, you will need to buy more food to build your kitchen inventory. Staples such as olive oil, sea salt, pepper, and vinegars will last longer than just one week. Soon, your kitchen will be ready to cook regularly, and with practice, planning your weekly menu will go faster.

You don’t need much to meal prep, but you do need a set of containers (glass will last longer, but plastic that you can wash and reuse is also fine), a few pots, pans, baking sheets, and measuring tools such as cups, spoons, and a food scale are helpful for portion control.

Cook for about five days at a time, or your food will not taste as fresh. Prep as much as possible but save the finishing touches like salad vinaigrettes and garnishes for actual meal time. If you are new to meal prepping, remember that it’s about creating a routine that works for you. There is no point if you are not excited to dig into the food you made! Try meal prepping for about three days at first to experience its benefits and gradually increase that to five. Then let us know how you’re enjoying your extra time, money, and improved health!
