Norah to the Rescue

Nigel. Norah would make five. But the day after Jaime learned of Norah, he met her. It was over after that. “She was the sweetest little girl,” he says. Norah went home with the Nances and then off to training at North County Canine in Temecula. For seven weeks she learned how to work as a service dog, including a lot of impulse control and stimulus work. At the training, they prepped Norah to not only help Jaime with everyday tasks, but also began work on walking well with a wheelchair and basic guard dog training. “What I’m going to use her for, it’s probably going to be a little boring for her,” Jaime admits, adding picking up items around the yard while he works outside will be a big part of her daily duties. Part of the impulse control is to ensure Norah doesn’t take off running when she sees something enticing. “If she takes off, I’m either coming out of the chair or I’m probably going a little faster than I want to,” Jaime laughs. Jaime spent two days in Temecula after her training to work with her and learn commands. Then, the work continues at home. Jaime says he will take Norah to local wineries where she has open space and stimulus and can socialize while still remaining helpful. He’ll eventually work her up to outdoor dining and then indoor restaurants. In another four to five months, Norah will head back to Temecula for more training, and likely one to two more times after that to fine-tune her skills. In all, it’s about a two-year process. Part of Norah’s duties will include protection, not just at home but on the go, too. Jaime explains that criminally minded individuals often target those in wheelchairs because they look like victims, people defenseless and easy to rob. They wouldn’t know Jaime spent two decades working as a police officer. Norah will be able to stand guard in a calm sit while Jaime works around the house and while he waits the four to five minutes to get in and out of his car (he uses a Bruno lift that brings his chair to him in the front seat). Jaime also plans to get Norah ready for flight, obedient enough to fly on airplanes with him. “She’s probably going to ride with me just about everywhere I go,” he says. And when she isn’t “working,” Jaime will engage in her favorite activities, too, which mostly includes chasing a ball in the backyard.

transportation, but he’s also welcomed another family member to act as both his personal assistant and his guard dog. However, Norah, the pure-bred Belgian Malinois, is mostly a companion. Believe it or not, Norah is a rescue. She was found as a stray and kept by the Animal Protection League. Jill Fazo, who works with APL and is a good friend of the Nances, originally scooped up Norah and planned to keep her as her own (after no one claimed her during the

mandatory five-day waiting period) but knowing Jaime’s history with his Belgian Malinois, Vian, (a dog he worked with at the Stockton Police Department for six years), Jill offered Norah up to Jaime and his wife Kathryn instead. Jaime was originally hesitant to add another dog to their gang; the couple already has four dogs at home including a nine-year-old Labrador retriever named Callie, her son Blue, and two rescued chihuahua mixes named George and

STRENGTHENING YOUR CORE HAS MANY POSITIVE BENEFITS  BY LYNETTE CARRINGTON

T

he past few years have brought an increased spotlight on the importance of focusing on core strength. Paying it more than just lip service, Alyssa Marty, owner of Shine Cycle +Yoga + Barre, relays the benefits of strengthening the core and some specific ways results can be achieved. The core stabilizes the entire body, hence the importance on making it a priority. “A strong core is essential to a healthy life,” says Marty. “A weak core can also result in fatigue, less endurance, and overall, more injuries. You need to balance the front and back side of your body and that is done by targeting the core. People with back pain will benefit greatly from focusing on core strength.” There are some easy ways to incorporate working on core strength into your daily routine. “Daily, most people can do crunches, planks, and leg lifts,” Marty

explains. “If you’re someone who sits all day at a job, make sure that you’re taking time to get up and walk around.” As we age, core strength becomes increasingly important because it helps with balance. Achieving good balance can help with preventing falls and achieving focus. “My favorite core positions are the boat pose, planks with single leg lifts, and standing balancing poses such as the dancer pose,” says Marty. Additional benefits of strengthening the core include supporting better overall posture, sustaining good running or jogging form (which can also help you avoid injuries), protecting organs and tissue from external force damage (which makes bending, stretching, and everyday movements easier), assisting with strength training, and helping you age better by promoting mobility, decreasing back pain,

and preventing falls. Improving core strength can also assist when adding additional weights to a weightlifting workout or ongoing conditioning training routine.

eightlifting: it’s not just for men. There seems to be a common misconception that when women lift weights, they bulk up, which may not be their preferred body type. That, however, couldn’t be farther from the truth. In fact, weightlifting actually builds curves in women.

. “I could go on for days about all of the ways lifting can improve you as a person, not just physically but mentally,” says Lexy Padilla, a Lodi native and weightlifting junkie who shares her fitness journey on Instagram and Tik Tok @lexy.lifts. . Science shows that weightlifting helps women burn fat, but there are mental benefits, too. Those who lift may experience reduced stress, improved ease in everyday tasks, increased endurance, and better moods. . Weightlifting not only helps to build strength and muscle, but as a functional training exercise, it works to improve everyday life for men and women. Plus, lifting heavy weights can quickly advance you to your target heart rate zone, which means you’ll be burning calories like it was cardio. “There are children in their teens all the way up to women well into their 80s that have shown positive results in their overall well-being from weightlifting,” Lexy says. . Start slow, even spending just a few minutes in the weight room as you get comfortable with routines. “The internet is an incredible vault of knowledge on all things weightlifting,” Lexy says. “I recommend looking to qualified individuals such as certified personal trainers, dieticians, and general experts in the industry for reliable advice.” . In addition to following Lexy on the gram, she also recommends turning to Bret Contreras, PhD, and Jeff Nippard for tips. “As with any other new challenge in life, you never will truly feel ‘ready’ to begin,” Lexy says. “You just need to jump in and give it your all.”

ycling on a mountainous road in the French Alps or kayaking in the Grand Canyon are noble exercise endeavors. But both choices may be logistically or financially prohibitive. Virtual reality, the immersive technology made popular via VR headsets and corresponding applications, is less expensive and more convenient. The idea isn't new, but beginning with the COVID-19 shutdown, getting fit in a new environment nearly anywhere in or out of the world has become increasingly popular. According to Forrester, a data research company headquartered in San Francisco, about 25 percent of adults active online are interested in purchasing a VR headset. Eighteen percent of potential VR buyers say they'd use the headsets primarily for exercise. How about working out with the music and movement of Katy Perry? Maybe

discovering the rigors of boxing with music and VR from Imagine Dragons, The Weeknd, Kid Cudi, Coldplay, or Lady Gaga is equally appealing? The Supernatural Artist Series, the recently unveiled subscription-based VR fitness app featuring Oculus-ready workouts choreographed to artist playlists, does that. Perry's offerings began in June, followed monthly by other artists. VZFit, the Massachusetts-based VR fitness app company, has a Tour de France route to Val Thorens in the French Alps, the highest ski resort in Europe. The 80mile trek encompasses the second-to-lastday stage of the 2019 Tour de France. An equally enthralling kayak workout in the Grand Canyon is also available. FitXR, a virtual fitness club, merges VR with total body workouts in boxing, dance, and high-intensity interval training (HIIT) studios. It's available on the Oculus and Rift platforms. The multiplayer

feature allows up to seven members to work out together. Virtual Reality exercise is evolving, but it works to fight against a sedative lifestyle and obesity. The Virtual Reality Institute of Health and Exercise was founded in 2017 by Aaron Stanton. It assesses the impact of virtual and augmented reality on physical fitness. Its app, VR Exercise Tracker, compiles metabolic testing data in conjunction with the kinesiology department at San Francisco State University. The collaborative studies detail an estimated 15 percent of virtual reality games burn enough calories during typical play to qualify as medium to intense exercise. Further, the most intense VR fitness app games, from Thrill of the Fight to Beat Saber, are capable of burning more calories per minute than workout equipment at the gym.

osengarten Firearms Training in Ripon has provided beginning and experienced instruction for nearly 25 years. Owner Marcelo Rosengarten enjoys helping men and women in many age groups receive handgun use certification. An instructor for the Department of Justice (DOJ), Rosengarten, 64, and several additional former police officers and DOJ colleagues, provide the expertise via target and moving scenarios. Women comprise about 40 percent of the enrollment. "Society is changing so dramatically," says Rosengarten. "Many of the women want some sort of protection. They don't have in mind to shoot somebody. They have in mind, 'Ok, I'm going to the store and I have my kids or someone wants to kidnap me, I have to be prepared to defend and protect myself and my family.’”

Conducted on a monthly appointment basis, the training is accepted by San Joaquin County, Calaveras County, Sacramento County, and Stanislaus County, as well as the City of Ripon. Besides firearm training and qualification as mandated by law, instruction includes learning state and federal laws, handgun responsibilities, ethical considerations, basic firearm mechanics and operation, firing stances and position, different types of concealed carry firearms, ammunition, firearm safety, escalation and justifiable force, citizen’s arrest, reciprocity, firearm transport, criminal and civil liability, concealed carry firearm storage, and an accessories overview. Class sizes vary and have included as many as 16 women. Rosengarten notes female students often prefer female instructors. "Sometimes the ladies feel

intimated by the men; they feel more comfortable with other females," he says. "I have two assistant instructors who are female. Some men instructors are more aggressive and try to impress female students. "I have two daughters; I have 25 female cousins, a wife. I understand how females feel about this, especially getting close to the person (student), adjusting the hands, the arms, the body. This is why I have female instructors. I think women feel more comfortable in that situation." While many enrollees are new, the business also has a large percentage of returning students. Certification renewal is required every two years, including for carrying a concealed weapon. Classes are available in English and Spanish and are also available for students with special needs.

Teacher of the Year GARY PEASE EARNS THE SJCOE HONOR BY NORA HESTON TARTE

G

ary Pease is a family man. He’s kid-oriented and he has a knack for shaping young minds. It comes as no surprise that he landed in the profession after helping out in his son’s third grade classroom, and his son’s teacher encouraged him to pursue teaching. “That summer I switched gears, changed majors, and here I am today. I have taught for 21 years here at Jefferson [Elementary School] and nine years at other schools,” Gary says. Not only did the change in careers—Gary originally pursued a degree in computer science—suit his natural abilities, it also gave Gary something else that was really important, the freedom and flexible schedule to coach and watch his kids play sports. At home, Gary made decisions based on what was best for his family. He curtailed his original aspirations when his wife of 38 years, Mari, became pregnant with their first son, Chris. They later had a second son together,

Steven, and Chris passed away in a motorcycle accident about 14 years ago. “We have a scholarship that we give out to a deserving eighth grader who has the same love for technology that my son Chris had,” Gary shares. In the classroom, he acts as the last big mathematical influence on students before they hit high school, teaching eighth grade math, as well as some elective classes. In his classroom, kids are out of their seats, teaching peers math and using Expo markers to write out equations on desks. “He sees a need and he’ll do it,” says Alyssa Wooten, principal at Jefferson. It’s to the point where we say ‘Gary, you can’t work 24 hours a day.’” Gary doesn’t teach an easy class. Instead, he caters to advanced minds. “My expectation is students will rise to the challenge when

given the opportunity,” he says. And when they falter, he’s there to help, with office hours some teachers may consider excessive. “He’s passionate about the work. It’s not work to him. It’s just his calling,” says Charles Spikes, a colleague. Gary puts his students first and he encourages them to reach their full potential. He also doesn’t give up on them. "I had a student that received an F in the first trimester and was in danger of not graduating,” he recalls. “I had a conversation with him, called home, and with some prodding, he was a strong B student.”

n May, “350” became San Joaquin Valley’s newest area code, by way of the California Public Utilities Commission (CPUC). This second area code, called an overlay, is meant to relieve demand on “209” and “559,” the existing area codes for Merced, Sacramento, San Joaquin, Stanislaus, and Tuolumne counties. Part of the need comes from the fact that “209” is projected to run out of numbers by December 31. Entities with numbers with a “209” or “559” area code will retain their existing numbers and there will be no charge to dial a number with a “350” area code. Callers in the Valley may still dial only three digits to reach 911, as well as 211, a free local number to learn about community services, and 311, a non-emergency local number to call regarding complaints about local government.

The “209” area code was created in 1958, after it was split from the 415 area code. The overlay “559” was added in 1997. Regional area codes are assigned according to the North American Numbering Plan (NANP), which serves the U.S., its territories, Canada, and numerous countries in the Caribbean. AT&T developed the NANP in 1947 to make it easier to dial long distance calls.

It’s hard to believe it’s been another 100 issues. In January 2014 we celebrated our first milestone of this kind with 100 issues of San Joaquin Magazine. This month, we salute 200 issues! There were times when we didn’t know if we would get here, most recently during the COVID-19 pandemic. As businesses shuttered and life as we knew it changed, we had to adjust, but we chugged on, and the proof of our success and our ability to adapt and thrive in the face of adversity is in this momentous milestone. It’s so hard to pick our favorite issues

ISSUES from the last eight years. There are too many that have left a lasting impact on us as a team. But here, we salute some of our favorites. Over the years, we’ve had turnover, we’ve welcomed new editors and graphic designers, and we’ve said farewell (and sometimes hello again) to writers and photographers. The truth is, every person

who has ever worked at our magazine, whether it be in sales, editorial, design, social media, etc., has gotten us to issue 200, and for that we will always be grateful. Hike With Your Dog!

S

o, you’ve got a dog? Whether it’s an older gentleman or a brand new (and very energetic) puppy, dogs love the outdoors and getting exercise with their owners. But if you’re prepping for your first hike, what do you need to know? Don’t worry. As avid hikers and dog owners ourselves, we’ve got tips to make your first trip go smoothly.

WHERE TO GO: California is full of hikes for your pooch. Once you know what they can handle distance-wise, you’ll be able to find the best trail for them. We recommend Oak Grove Regional Park in Stockton or Lodi Lake for starters. Then, work your way up to the harder stuff.

TIME FOR NEW SHOES! If you’re serious about covering a lot of terrain, and perhaps even terrain that is hot, consider investing in shoes for your pup. Those pads on the bottom of their feet can actually burn off, resulting in an expensive surgery. Pro Tip: get them acclimated to the shoes at home first.

WHEN TO GO: Start short. Puppies need time to get used to longer walks and hikes. Until one year of age, or even 18 months for larger breeds, keep hikes short and not too strenuous. After that, dogs can accompany you on longer trails, and even carry their own pack!

WHAT TO BRING: Just like you, a dog needs sustenance on long hikes. Bring snacks and water. A portable dog bowl that attaches to their leash or harness is ideal. Plus, if your dog is new to hiking, high value treats for positive reinforcement. And, always, a leash.

LOOK LIKE A PRO: Invest in the right gear. Bring a doggie first aid kit, get your dog a well-fitted hiking backpack, etc. Consider bringing a favorite toy or ball to keep your pup engaged.

HOW TO TRAIN YOUR DOG IT’S EASIER THAN DRAGONS BY NORA HESTON TARTE

S

o, you want your dog to sit pretty, stay off the furniture, and listen to your commands? We all want a well-behaved dog but getting there takes a lot of work. Whether you’re trying to train your pooch alone or using a professional (which is recommended), your own behaviors directly correlate to how well your dog will learn to listen.

In order to gain control of your dog, you must define the relationship with you as leader (who sounds narcissistic, now?) Only then will you have earned your dog’s respect.

WHEN TO START The right answer is immediately. “Training needs to begin when the puppy goes home, starting with exposure to a plethora of sights, sounds, textures, and people while keeping him safe until fully vaccinated,” Jonnee says. Limit the puppy’s play area to keep them out of trouble. While supervised, let them drag a leash around (attached to their collar) from a young age. If your dog is a rescue, give them three months to acclimate to new surroundings before beginning formal training while gently establishing rules and boundaries.

PACK MENTALITY Understanding your dog is the first step to training them. “Dogs are pack animals and as such, follow the laws of hierarchy,” explains Jonnee Bardo from All Dogs Sports Park on the grounds of Sycamore Lane Kennels. “The dog wants to look to the human for leadership, but if their person isn’t in control, the dog will take the lead.” Unfortunately, dogs are both narcissistic and opportunistic, so when left to their own devices, they don’t tend to make the best choices.

AVOID THIS “Inconsistency and a lack of expectations are the most common mistakes made by dog owners,” Jonnee says. It’s important that everyone in your household use the same command words and follow through with the

same consequences. “When training, it is important to expect the behavior you want is going to be performed, and then rewarding when it is.”

TRY THIS Sit is one of the first commands dogs learn. Once it’s mastered, take the directive to the next level. Hold a bowl of food and ask for a calm sit. When the dog sits, move the bowl toward the floor. If the dog jumps or in any way moves out of the calm sit, pull the bowl back. Do not use the release word to grant your dog access to the food until they have demonstrated a calm sit.

T

here is something so serene about a water feature. From koi ponds to wall-mounted displays, bird baths to trickling fountains, the options for adding water to your back or front yard landscape feel nearly endless. They are also a point of refinement and sometimes a symbol of wealth. In fact, in Chinese culture, water fountains stand for the retention of wealth, using water that flows inward to represent riches pouring in. Despite their symbolism, water features don’t have to be a pricey addition to your home, inside or out. Some are surprisingly more affordable than you’d think, with options for smaller fountains aplenty. Most play with natural elements, complementing the water itself—think glazed ceramic, concrete, slate, and quartz. Some look more expensive than others while materials, such as concrete, still look nice while also offering durability. Playing with height is another a fun way to add dimension to your space. GET INSPIRED While you aren’t likely to recreate the Trevi Fountain in your front yard, you can pull inspiration from famous fountains. Consider what fountain designs you like and why. For example, you can use the 18th century architecture of the Trevi Fountain in your small garden fountain or choose a water feature that spurts similar to the Bellagio Fountains in Las Vegas.

MORE THAN FOUNTAINS Fountains, however, are only the tip of the iceberg. Local companies also offer pond management and installation, meaning you can create your own fishery just steps from your front door. Perhaps you’ll even install a miniature red bridge to take a page out of Lodi’s book, recreating the Japanese Garden at Micke Grove Regional Park. Ponds actually provide environmental benefits as well, requiring less mowing and pollutants and water conservation. There is also potential for greywater, erosion reduction, more irrigation options, and biodiversity. Wall fountains are another option that can bring color, texture, and that subtle trickling of water that creates calm across our space. Choose from mountable options that can hang on a fence or a green shrubbery wall, or choose a larger, standing piece in a modern or even Victorian design. Another idea is to add a second element to the mix. With a fire and water feature, your yard will represent the four classical elements.

Summer Brings Rattlesnakes HOW TO STAY SAFE  BY SARAH STEFFENS

W

ith the weather fully heated up and summer season in full swing, we reckon you may be outdoors more. Whether you are hiking in the hills or simply enjoying your backyard, it’s a good time to check-in about an aspect of summer that we all need to pay some attention to—we’re talking about snakes. Northern California has approximately 33 species of snakes. Most prefer to mind their own business, and slither along their way if they happen to see you on the trails or in your yard, not causing you harm. You do, however, need to beware of the varieties that are venomous. Of California’s seven varieties of venomous snakes (all being rattlesnakes), Northern California is home to one of them—the Northern Pacific Rattlesnake. Medium in size, at about 3 feet long (the Eastern Diamond rattlesnake can grow up to 7 feet), they are greenish brown or greenish gray with many dark brown blotches, each surrounded by a lighter color along their back. To identify one, look for the flat triangular head (all rattlesnakes share this feature) and, of course, the rattle at the end of their tail. They are generally passive, non-aggressive as long as you don’t provoke them, and come out at dawn and dusk. They prefer to dwell in grassland, brushland, woodland, and rocky areas with dry climates. If you see one, leave it alone. Aim to be at least three feet away from it and try to stay calm as you move further away.

While you cannot control what wildlife you encounter out on the trails, there are some things you can do to prevent snakes from moving into your yard this summer. Keep your trash cans closed with lids and don’t leave pet food out. If you have fruit trees and gardens, keep ripe vegetation off the ground to reduce rodents (all varieties of snakes prey on these little critters),

and let your cats hunt outdoors, minimizing rodents, which in turn reduces the possibility of snakes. It's important to know that snakes have a rightful place in our eco system and that most of them are just enjoying their habitat. Though mostly harmless, at worst they are deadly, so taking precaution just as you would with a large mammal predator, is advised.

TENDING TO ROSES The month of August is a hot one in the valley. This time of year can be trying for the gardener, with pests at their peak and daily watering needed for most plants. The good news is roses love heat! They produce the most flowers when it’s hot, so summer is their time to shine. However, they do still need some extra tender love and care this time of year. deep watering, so having drip irrigation set up is a game changer. This also helps prevent frustrating fungus issues that are prevalent on roses this time of year. Watering in the early morning is helpful in preventing mold and fungus from growing on leaves, and it’s no secret that harmful insects can be a real problem. So, it’s important to keep an eye on your rose plants for common summer pests like aphids, thrips, and Japanese beetles, and treat as needed.

APHIDS IN THE GARDEN

Aphids are a tiny pear-shaped pest that can be found on most garden plants. They usually hang out on the underside of leaves or on rosebuds where they use their needle-like mouths to suck out fluids from the plant. Aphids also produce a sticky substance, sometimes referred to as honeydew, which can turn into a moldy fungus wire dire side effects for your plants. The good news is aphids are soft-body insects, which makes getting rid of them as simple as knocking them off of your rose buds or other plants with a water hose, or directly spraying them with a soapy water mixture. Ladybugs are a natural predator of aphids, so placing them at the bottom of your affected plant can also help control an aphid population.

• Spread a layer of compost on flowering plants in your cutting garden, such as roses, dahlias, and zinnias. • Deadhead often to encourage more blooms. Be sure to look for the next bud on the stem and cut about one inch above it. • Spray plants with Neem oil. Not only does this help prevent insect damage, but it is also helpful in preventing mold and fungus from spreading on plants.

here’s something special about a go-to restaurant, a place you come to time and time again. Everybody knows your name and maybe even your order. At Midori Fine Asian Foods in Tracy, this is the atmosphere customers are offered, with a family of familiar faces serving quality Asian food when it’s craved most. Whether it’s your first time into Midori or your 100th time, take a seat in one of the comfy booths decorated with chic Asian patterns, soft red and peach lighting, and blooming orchids. Upon sitting, “Mama,” a fitting nickname for the woman who runs Midori, offers a kind greeting. Immediately, it feels like even though you’ve ventured out for a meal, you are more at home that expected. “I know my customers well, they call me Mama,” she says. “They tell me what they like, and then we make it.” SJMAG.COM

wine & dine The “we” Mama refers to is the team at Midori. Harry, with 50 years of experience in fine dining, is the owner (he also owns Mikasa Asian Bistro & Sushi in Tracy), and Albert, the head chef, has 30 years of restaurant experience. “We all are a team,” Mama says. “We are all a team. Creating food is an art.” If cooking is an art, then Midori is a gallery of delicious and exotic dishes. Mama speaks fondly of the foods that Albert has perfected— an appetizer salad with pickled jalapeno and serrano pepper. “Everyone loves our pickled jalapeños, we make them ourselves and you can’t find these anywhere,” says Mama with pride. She also describes their pork buns, famous for melting in your mouth, and she mentions one of their most popular dishes— sweet and sour chicken.

“Our sauce is different,” she says, bringing over a taste. “See!” she says. “There’s no ketchup in our sauce, this is special!” If superb flavor was where the food at Midori ended, that would be good enough, but it’s only the beginning. Midori is big on presentation, too. Their food is pretty, and it’s exciting when it comes out to your table. Mama and the rest of the Midori family go out of their way to delicately arrange their dishes so that simply viewing them is part of the experience. “Food should be beautiful,” says Mama. The dishes at Midori are varied. Duck that has marinated for 24 hours with rich, umami plum sauce and Hong Kong Chow Mein with an array of fresh vegetables and tender, juicy pieces of shrimp. “These take longer to make than other noodles,” she says. Biting into them, the unique soft and crispy texture is unlike most chow meins around. If you’ve come thirsty, the restaurant also carries an assortment of sakes. “We have plans to start offering sushi,” Mama says, eyes bright as she talks about the future. While the food is both delicious and beautiful, it’s the ambiance that makes Midori stand out from other quality Asian restaurants around. The staff is attentive, and it’s amazing how well they can focus on multiple customers at once. When you dine in, you’ll never feel like you aren’t the center of their world, however, it’s also not rare to notice Mama slipping onto the phone to take a to-go order from a regular, checking in on the caller’s family as she does. One thing is for sure, when you dine at Midori, you will leave both full and fulfilled because Midori is a really special place to come home to after leaving home.

I

f you like pasta, or just good food, you’re going to love this. Toasted ravioli (or t-rav for short), originated in St. Louis in the 1950s. The dish is traditionally made of a cheese ravioli, fried in oil or an air fryer, and finished with parmesan cheese and parsley. It is most commonly served with a side of marinara sauce. The dish makes a great snack or an appetizer, and it has deep roots in the Missouri capital city. To the best of our knowledge, t-rav was first made at Angelo Oldani’s on the Hill, a restaurant in an Italian neighborhood in St. Louis. The rumor is that the cultural phenomenon was actually first created on accident, when a German chef mistakenly placed the ravioli in a pan of hot oil, not understanding how Italian ravioli should really be cooked. The crispy, deepfried result was an immediate hit, and so it

was weaved—or fried—into the fabric of St. Louis history. It’s now one of the food items the Gateway to the West is most known for, and it’s found on plenty of menus. However, it’s also made its way to California. It may not be readily available at most restaurants, but there are a few spots in Stockton that serve up their own appetizers. We’ll give you a hint, it’s easiest to find at Italian eateries. At De Vega Brothers, the Deep Fried Raviolis on the menu are stuffed with beef and fried golden brown before they are served with ranch and marinara sauce, a twist on the classic recipe. Angelina’s Spaghetti House offers the delicacy brushed with garlic butter and parmesan cheese. And at David’s Pizza’s Hammer Lane location (they aren’t available at the slice shop), you can indulge in a half order (10) or a full order (20).

I

f you’ve been into Swirl’d Ice Cream and Shaved Ice on Kettleman Lane, then you already know how the business model works. In case you haven’t, we’ll break it down really quick. Essentially, all of the ice cream—and yes, it is real ice cream—made at Swirl’d is created in a machine using a vanilla base. The team only works with vanilla ice cream, but then creates enticing flavors using toppings. Think Fiesta concocted with real fruit and spicy tajin, or Blueberry Cheesecake topped with cinnamon streusel. When it’s done, it looks like soft serve, but we guarantee it’s not. By having the ability to mix a slew of toppings together, the options are endless, but one flavor combination that has caught us by surprise is Hot Cheetos & Takis.

The spicy yet sweet ice cream concoction uses completely emulsified chips to turn out a hot pink Swirl’d vanilla cone sure to confuse the tastebuds. Owner Kristy says people will first notice the vanilla taste before it gives way to Cheetos and Takis flavors. However, it’s the spicy kick that tickles the back of your throat upon swallowing that really takes this dessert to the next level. “You’ll feel a little burn,” Kristy warns, but the milk-based vanilla ice cream actually offers a cooling affect that takes the edge off of the spice Hot Cheetos and Takis tend to create. The best way to indulge is to try the snack for yourself and set your own tastebuds ablaze with this ideal—and wacky—blend of spicy and sweet.

Getting Figgy With It  BY SUZANNE LEDBETTER

O

ne of my fondest childhood memories remains playing in a dusty fig orchard during the sweltering summers of the San Joaquin Valley. My childhood home in Fresno sat directly across the street from several acres of fig trees and we often found ourselves running amongst the gnarly branches filled with the sweet nectar of the gods— figs. Each year, we eagerly anticipated the soft-ripening morsels falling to the ground. Basically, if the fruit hit the dirt, it was fair play, and we could sink our teeth into the soft, fleshy fruit. If it was still on the tree, it was forbidden. Fast forward a couple of decades when I settled in Lodi. I was distraught

wondering if I’d ever see fresh figs again. To my delight, there are a handful of local farmers cultivating figs. I consider them a San Joaquin delicacy lost in the sea of nut trees and vineyards that blanket our local landscape. The joy of locally grown, fresh figs is divine. Their perfectly sweet and delicate flesh is ripe with flavors of honey. With a firm flesh and soft center, figs can be eaten whole, including the skin. They can be devoured raw, broiled, baked, roasted, preserved, or even fermented. So do yourself a favor and pick up a basket or two of figs the next time you see them at your local farmer’s market.

STUFFED FIGS INGREDIENTS 8 figs 8 oz. goat cheese 1 tbsp. honey ¼ tsp. garlic salt 1-2 tbsp. balsamic vinegar ¼ c. sliced almonds 1 tsp. fresh sage, chopped

DIRECTIONS Quarter figs leaving stem intact. In a small bowl, mix goat cheese, honey, and garlic salt. Spoon one teaspoon into each fig. Broil for five minutes. Remove from oven, top with balsamic vinegar, sliced almonds, and fresh sage.


GRILLED FIG SALAD WITH BURRATA AND PROSCIUTTO INGREDIENTS 8 oz. prosciutto 8-10 figs, halved 6 c. arugula ½ c. burrata 1 c. candied walnuts 3 tbsp. balsamic vinegar ¼ c. extra virgin olive Juice of half a lemon ½ tsp. sumac Salt and pepper to taste Sea Salt

DIRECTIONS Slice figs in half and set aside. Using a large bowl or platter, layer arugula, prosciutto, figs, and walnuts. Sprinkle lemon juice, salt, and pepper, toss to combine. Place burrata over salad, sprinkle with sea salt and sumac. Drizzle Calivirgin balsamic vinegar and olive oil over top.

BAKED FIG CROSTINI INGREDIENTS 8 oz. sliced bread 8 figs, halved ½ c. crumbled gorgonzola 1/3 c. pistachios 2 ½ tbsp. hot honey 1 tsp. fresh thyme 1 tbsp. olive oil Salt and pepper

DIRECTIONS Line sheet pan with parchment paper and set oven to 400 degrees. Slice sourdough baguette into ¼-inch slices and brush with olive oil. Bake for five minutes. Remove crostini from oven and top with one tablespoon cheese and two fig halves and sprinkle with salt and pepper. Bake for an additional five minutes or until cheese melts. Remove from oven, garnish with fresh thyme and hot honey. SJMAG.COM

BECOMING PALEO GO BACK TO YOUR ROOTS  BY SARAH STEFFENS

H

ave you heard of the caveman diet? This plan, popularly called the paleo diet, mimics what humans are thought to have eaten during the Paleolithic Era (literally meaning “Old Stone” Age), dating back to before 10,000 B.C. and earlier, when foraging, hunting, and fishing were the primary means of obtaining food. The idea is that sticking to foods that have not been processed, drinking plenty of water, and staying active each day, prevents excess inflammation in the body and reduces obesity, diabetes, and heart disease. Many people eating paleo claim to have more energy, less sugar cravings, clearer focus, better skin, and a general vitality for life.

So, how do you start eating the caveman way? People in the Paleolithic Era ate what was available to them and that depended on where they lived. These days, we have just about every food at our fingertips at all times, so it takes a little work to weed out the extras. Aim to eat local, organic, non-GMO foods such as fruits, vegetables, nuts and seeds, eggs, fish, poultry, and beef. Healthy fats such as avocados, olives, and coconut oil are also on the list. Carbs are encouraged but get them from root vegetables such as sweet potato, instead of processed, packaged food. If you have sweets, limit them, as it would be rare for a caveman to have access to sugar. Stick to raw and natural honey or maple syrup instead. There are foods to avoid, such as dairy products, grains, legumes, soy foods, industrial seed oils such as canola and peanut oil, and processed foods in general. If you are in doubt, read the ingredient labels. Everything you eat should, in theory, be able to have been foraged from the ground or a tree or fished or hunted. Today, there are many processed foods on the grocery shelves that claim to be paleo but resemble a modern-day candy bar or tub of ice-cream. Remember that these “paleo” foods are treats and shouldn’t make up the bulk of your diet. Instead, aim to eat mostly whole, real foods, which are high in nutrients and fiber. In the end you will increase immunity and support healthy hormones and bodyweight, while increasing enjoyment for delicious, seasonal foods.

ince 1999, albariño has successfully grown in the Lodi appellation. One reason for its success is the similar hot, dry climate that albariño grapes have long thrived in in Spain and Portugal. WHAT IS ALBARIÑO? Albariño is a wine varietal made from albariño grapes. It is most commonly grown in Northwest Portugal or Galicia, Spain and used to make crisp white wines. In Portugal it is often commonly referred to as alvarinho.

WHAT DOES ALBARIÑO TASTE LIKE? Like all wines, every glass will be different, but there are some common flavor profiles that many albariño grapes share. On the palate, look for flavors of lemon zest, honeydew, nectarine, and grapefruit. Many describe albariño as citrusy and refreshing. It also commonly ends with a subtle, bitter aftertaste that acts as a natural palate cleanser.

VEGAN TAKEOVER AT TERRA COFFEE  BY NORA HESTON TARTE

I

n June, Vegan Outreach announced the Stockton Vegan Challenge, adding the SJC city to its list of places that have taken the Vegan Chef Challenge. It’s all in an effort to encourage local businesses to add more vegan items to their menus and educate customers and staff about the diet-friendly fare. Among the businesses to embrace it was Yosemite Village’s Terra Coffee. And they didn’t stop there. Even after the challenge ended on June 30, Terra Coffee decided to keep their new and improved vegan menu. “It’s an intentional choice for us,” says Owner Laura Garcia. “This was a great opportunity

to get into that new world of vegan items.” The heartiest of the dishes is a tuna sandwich alternative—hold the fish! The Chickpea Toast is a savory, house-made chickpea salad with pickles, onions, and spices. Another showstopper is the house-made hummus. A traditional version sits on the menu for now but the plan is to customize this dish for the seasons, adding local flair and flavor throughout the year. Currently the plain hummus is served with seasonal vegetables and pita bread for dipping. In addition, the shop will rotate through seasonal

vegan muffins and scones. The big tradeoffs here include egg and dairy alternatives. For example, the Apple Streusel Vegan Muffin will be made with applesauce, rolled oats, and coconut oil. New flavors will pop up sporadically and include both sweet and fruity variations as well as more savory options. It’s not just the food that’s vegan, however. “About 80 percent of our customers have their drinks with a milk alternative and they are all vegan friendly,” Laura says—whether they realize it or not. One way Terra Coffee embraced this is by concocting a vegan cold foam (the foamy part atop a cold brew coffee) that uses soyand oat-based products instead of whole milk and whip cream. With vegan-friendly syrups, customers can punch it up with additional flavor. Stockton is one in a line-up of cities that have taken the Vegan Chef Challenge, a nationwide project launching local initiatives, and it’s growing. Soon cities in New Mexico, Rhode Island, Texas, Alabama, and more will join past contenders including Davis, Calif., Contra Costa County, and Durham, N.C.
