A-B-C, 1-2-3 I’m not the healthiest guy in the world, and over the last six months my staff has put me to shame losing a combined 100 pounds. That’s basically an additional staff member! In the

good old days, I was everyone’s favorite when I came into the office toting a box of delicious local pastries (if this has grabbed your attention, watch out for our February edition!!). Now, I am shunned, and cinnamon buns are left to harder on top of the microwave because no one eats them but me. Who has self-control like that?! It’s amazing, but also a total restrictor to our office lunch parties. No bread, no cheese—are you kidding me?! Those are fundamentals to my diet. But somehow, they stay strong, and their hard work is measurable. You go girls, we’re proud of you!    So, who better to inform San Joaquin on an extensive journey through generalized health, starting with a and ending with z. You’ll notice a few terms that you recognize, and others that you don’t. Learn something new about things you already knew about, or everything about something you knew nothing about! From health and beauty, to hormones, joint pain, supplements, illnesses, and natural aids for the common cold, sing along as we teach you a thing or two.   Our ode to you doesn’t stop there. Because, as we enter a New Year, we know the drill! It’s all about self-reflection, baby! Resolutions always ensue self-inventory, and if you’re looking to make a few changes—we got you! It’s common knowledge that, next to quitting smoking, weight loss rules the resolution list. So, we sent our new-to-the-workout-scene managing editor over to two local gyms to ask a few questions newbie gym rats commonly ponder.   We keep it coming with key steps to empowerment and selflove, as we reflect on quality time spent with Onisha Love, a local life coach who emphasizes the importance of loving yourself and positive affirmations. It’s important to this Stockton native to offer her services locally, in hopes to see the community flourish. When should I work out?

Working out in the morning really sets your day off on a high note. You’ve already achieved something. But if you’re not a morning person, figure out what works best for you. Don’t make yourself get up at 5 AM if you’ll be exhausted throughout the day. For night owls, it’s best to go before dinner, but have a snack like an apple, string cheese, or granola bar.

What’s a good post-workout dinner?

Post-workout dinners should be healthy, and full of lean protein like plant protein, chicken, or fish—the size of your hand. Carbs should fit the size of your fist, and you can have as much greens as you’d like!

Can you eat like crap and still lose weight if you exercise regularly?

Diet is crucial. You definitely can’t out-train a bad diet! I always tell my clients, ‘I can make you stronger and faster, but if you want to see physical results, that won’t come into place until you’re on the right nutrition plan.’    But don’t go too deep. Don’t go from eating whatever you want to chicken and broccoli every night. Make small changes. If you’re not eating breakfast, that’s where I’d want you to start. Try avocado toast, low or nonfat yogurt with granola, fresh fruit, and honey. The honey is key!

How do I get on a good schedule?

The hardest part of working out is getting in the door. If you walk through the front door, you’ll exercise, but for most people getting into that routine, the first few weeks, the first month, can be challenging unless you create a habit. If you don’t want to, go! Find that one hour in your day (everyone has it) and set that time for yourself.    How often you work out depends on the person and the goal, if you can go four to five days a week, that’s ideal. People who want to lose weight just need to be consistent and go 4-5 days every week. If you’re trying to build muscle, lift heavy three days a week.

More weight or more reps?

The most important thing is form. If you are starting to lift weights and you’ve never done it before, it’s best to come to a gym like [The Shop Fitness],where someone will instruct you, or higher a trainer. The last thing you want to do is have incorrect form.    Don’t lift heavy weight right off the bat. Start with moderate weight and correct technique, and then build up your strength. You can increase on a weekly, bi-weekly, or monthly basis. Always listen to your body! If something feels too easy, up the weight. And always look in the mirror to make sure that you have correct form.

Weights or cardio first?

We do both here, but for people who are working out at the gym, it’s best if you can lift weights first and perform cardio second, because cardio taps into your stored body fat—and intense cardio before weight training won’t leave you with much energy.   You don’t really start burning fat until you work out for a certain amount of time, so cardio after weight training gets that fat burn locked in! And, we lift weights to break down muscle to build more. But, if you use up all the carbs in your body to do cardio first, you won’t have those carbs to use after.

How do I push past my comfort zone?

Group training is a great place to push yourself. You’ll push yourself harder. Or get a workout buddy. You need to be able to push yourself past your comfort zone, and no one wants to just walk out in the middle of class, so that group dynamic is important. It’s more fun, and people look forward to it in the middle of their chaotic life. It’s like meditation!

DIGITAL HAGGIN MUSEUM DEBUTS RENOVATIONS AND EXHIBITS  BY FAITH LEWIS A prominent fixture in Stockton since the early 1930s, the Haggin Museum is home to the artwork of Albert Bierstadt, Pierre-Auguste Renoir, and 20th-century illustrator J.C. Leyendecker. But while the exhibits themselves are timeless, the museum itself needed a major facelift to bring it into the 21st century and capture the attention of

a new digitally-minded generation.   The renovation, which opened to the public on October 14, updated the museum’s six core art galleries, according to Amanda Zimmerman, the museum’s Publicity Coordinator.   “The galleries have been carefully reinterpreted with new labels, introduction panels, focus panels, and digital kiosks offering more insight into the core art collection,” says Aman-

da. “Along with a more-connected and in-depth experience, the redesign of the art galleries also gives visitors an opportunity to view artwork that has never been on public display.”   Following trends [at other museums] that suggest incorporating digital technology encourages people to interact with the exhibits more freely, the remodel put emphasis on bringing technology into the galleries.    And as it turns out, two steps forward and one step back isn’t such a bad approach—even with the new focus on connecting with patrons through a new integration of technology, Amanda points out that, “within the newly redesigned galleries, we have incorporated elements of California history into the interpretation of our fine arts collection.”    With the other half of the museum dedicated to local history, these changes also help to unify the museum and create a cohesive experience for visitors.   “Guests have been overwhelming positive in their response to the new galleries, and are engaging in the content more than ever before,” adds Amanda. Especially popular is the Leyendecker Gallery, which highlights the work of 20th-century illustrator J.C. Leyendecker and shows, “the process from art to advertising in beloved brands such as Kellogg’s.”   The renovation also saw the restoration of several pieces of art, including Constant Troyon’s Un dernier jour d’ ete, Normandie (A Last Day of Summer, Normandy). As one of the largest pieces in the museum’s collection, the restoration process took nearly two years to complete.   The renovated galleries had their official reveal in October, but the Haggin Museum is still buzzing with excitement over these changes. You can visit the Haggin Museum on Saturdays and Sundays from noon until 5 PM, Wednesdays through Fridays from 1:30 to 5 PM, and the 1st & 3rd Thursdays of each month from 1:30 to 9 PM.

In 2018, there isn’t a single day that a hybrid doesn’t pass someone along the freeway. Tesla has made itself a comfy little office in our Lathrop community, and charge stations are popping up across San Joaquin. As technology shifts toward green efficiency, so too has the region’s largest mass transport provider—San Joaquin Regional Transit District (RTD)— creating our nation’s first allelectric Bus Rapid Transit route.    RTD first donned this esteemed title in 2017, but the company has been striving toward green efficiency for some time. “In 2013, RTD launched the first 100% allelectric bus service in Northern California with two buses from Proterra,” explains Terry Williams, Public Information Officer of RTD.   Funded by a California Energy Commission grant, these buses performed well. “So well, in fact, that RTD was awarded additional grant funding to obtain 10 additional new electric buses this year—four of which have been deployed on Route 44,” Terry adds. As of today, RTD has grown to include 47 Hybrids and 12 Electric Buses.

In August 2017, RTD became the first in the nation to run an all-electric Bus Rapid Transit (BRT) route. “BRT routes are known for efficiency—closer to the speed of a light rail—but at a fraction of the cost,” explains Terry. “Passengers reach destinations much faster than with traditional bus routes because BRT routes have fewer stops and turns, and receive stop light preference at intersections if the bus is running late.”    Due to its outstanding success, the RTD Board of Directors has passed a resolution to convert 100% of RTD’s Stockton-serving bus lines to all-electric, zero-emission buses by 2025. It’s an ambitious goal, but with so much community support, and benefits, the future of Stockton’s mass transit is looking green!

THE FACTS How long does it take the bus to charge? Roughly 10 minutes. How long can a bus hold a charge? Approximately 40 miles, or two hours. How much pollution have these buses prevented? Every year, each electric bus reduces greenhouse gases by 312,840 pounds, CO2 emissions by 208,560 pounds, and carbon monoxide by 793 pounds. Do the new buses cost more to ride than the old buses? No, RTD’s low fares remain the same no matter what type of bus you ride. Are there capacity differences between the old & new buses? RTD’s electric buses typically hold a higher capacity than their predecessors.

BEATING SEASONAL BLUES  BY COPPER WILLIAMS

With the holiday season finally over, many of us are left in the wake of houseguest clutter, or returning to our own homes after visiting oth-

ers. But with all the hustle and bustle behind us, we are sometimes faced with a strong sense of unease that we’d been ignoring so well, tucked behind shopping lists and last-minute errands.

From anxiety to sleeping trouble, mood swings, fatigue and more, these complications are a common indicator of SAD. “Seasonal Affective Disorder (SAD) is a depressive disorder in which depressive symptoms follow the seasons of the year,” explains Dr. Cathy Francis, Psy D, MFT, and Social Services Director at St. Joseph’s Behavioral Health Center. “As the hours of daylight decrease, people affected with SAD’s symptoms of depression increase.”    Women are four times more likely to be affected by SAD than men, with symptoms beginning as early as late fall and lasting through the winter months. “The most common symptoms of SAD are tiredness, irritability, apathy, and trouble concentrating,” says Dr. Francis. The list continues, including physical aspects, such as weight gain and body aches. SAD can also showcase itself through crying spells, and social isolation.    The silver lining in this little black raincloud? SAD typically ebbs with the passing of the seasons. Researchers speculate that the reduction in sunlight in the fall and winter months is a major factor for the onset of SAD. With spring’s return comes abundant rays of sunshine. But Dr. Francis warns that: “If the symptoms get so bad that you are feeling hopeless, helpless, and entertaining thoughts of suicide, it is time to get professional help.”   Common treatments for SAD vary according to the case, but revolve around light therapy, talk therapy, and medication. “In light therapy, the client is instructed to sit under a lamp or get exposure to daylight. Light therapy can be prescribed for a specific amount of time and a specific time of day,” Dr. Francis states. “The more time a person with SAD sits at home alone in a dark [house], the worse they are going to feel.” Those suffering from SAD are encouraged to exercise and eat a healthy diet, and to socialize with friends and family at least once a week.

There are those that like music, those that love music, and then there are those who live through every note, transforming page scores into resonating works of art. University of the Pacific Graduate Assistant Scott Downs revels in the task, having spent much of his life mastering a plethora of instruments both large and small.

“I’ve always enjoyed the challenge of learning a new instrument and learning how to accommodate for each instrument’s unique difficulties,” Scott explains. “I always found people I was inspired by, who pushed me to be a better player, and performer in each ensemble I have been in.”    Like many performers, Scott’s eager leap into the world of music began when he was very young. As an audience member at his brother’s fifthgrade concert, Scott felt the first bite that would later lead him into band. “I always wanted to do what my older brother did, since I looked up to him a lot,” says Scott. Once he’d selected the flute as his first instrument, and quelled any beginner doubts, Scott shot down the rabbit hole that twisted and curved through years of elementary, and high school.    Flute and bassoon, bass guitar and euphonium, Scott’s repertoire has continued to grow throughout the years, garnering him roles in a variety of bands. “During my junior year of high school and two years with the Sacramento Mandarins, I was accepted into the Blue Devils Drum and Bugle corps, whom I have marched with ever since until this past year…”    Funny enough, Scott had never thought of perusing a degree in music until his parents brought it up. “When I was initially applying to college, I desired to be a biologist or go into teaching biology,” says Scott. “They then asked me if I had ever considered a career in music education, since I was so passionate about music and seemed to have an interest in the field of teaching.”   Scott had already been accepted into Pacific for a degree in biology, but with their esteemed reputation within the world of Music Education, he enrolled in their four-year graduation guarantee program instead. Since his graduation, he’s become a Graduate Assistant for the school, continuing to thrive in his musical prowess, as well as learning the ropes in work related organization, event hosting, leadership, and more.

ADULT ACNE

Think you’re in the clear (no pun intended) once you get out of your teens? Think again. In the past decade, the common age of acne sufferers has increased from 20.5 years old to 27, and clinical studies report that nearly 55 percent of the adult population from age 20-40 are diagnosed with mild to moderate, persistent acne. So, although all your friends seem to have perfect, flawless skin—know that you are not alone.

Because acne is triggered by hormones, these pesky, often depressing and anxiety-triggering blemishes can make an appearance at any time in life. However, adult acne is typically more difficult to treat and control than teen acne. Common causes for adults include fluctuating hormone levels, genetics, diet choices, hair and skin care product choices, medication side effects, and continual stress.    Work your way through this list: Get hormone panel testing, consider birth control to regulate your hormones, a steroid or pharmaceutical grade topical, fill your dermatologist in on family history and current medications, eat more greens and less grease, and try out a few new beauty and hygiene products for sensitive skin. And then, you may not need to tackle the ‘continual stress’ aspect, because as we all know—breakouts cause more stress, which results in excess activity of the sebaceous glands, which causes more acne—dang, it’s a vicious cycle.

Scroll to letter ‘S’ for a by-thenumbers look at stress in America today. So, how do we deal? We breathe!    Common breathing exercises focus on deep breaths. It’s a simple practice, and you can do it anywhere! Sit up straight, put one hand on your chest and another on your stomach. Breathe in fully and slowly through your nose, hold that breath in for a few seconds, and exhale through your mouth. Ensure that each inhale through your nose fills your lungs fully—and that each exhale releases as much air as you can. Your hand placement will help with proper technique. If the hand on your stomach moves as you exhale, you’re in business, because this signifies deep breaths.

Harvard Health Publishing explains that the disease attacks the lining of the small intestine when gluten is consumed, and damages the nutrient-absorbing, fingerlike projections, called villi, on the intestinal wall—resulting in gas, bloating, diarrhea, constipation, joint pain, headaches, and fatigue and, more seriously, malnutrition. DHEA

A naturally occurring hormone, dehydroepiandrosterone (DHEA) is produced by both your ovaries and adrenal glands. And has recently created buzz as a precursor to hormone therapy, as it helps produce and stabilize other hormones including testosterone and estrogen. Synthetic versions of DHEA are available to take as an OTC supplement, and reaps additional benefits!   The Mayo Clinic reports that studies suggest DHEA is an amazing anti-aging tool; and that it slows the aging process, increases bone mineral density, decreases body fat, improves sexual function and vaginal dryness, boosts cognitive function and body composition and can treat mild depression.

Sure, we’ve all heard about this hormone, but do we understand it? The term estrogen is commonly used to refer to three major endogenous estrogens—estrone; a weak estrogen that is a steroid and minor female sex hormone, estradiol; a hormone that can be used to treat symptoms of menopause, to support post hysterectomy, or treat prostate and breast cancer, and estriol another weak estrogen with powerful play—as it can benefit bone density, heart health, and is a major player in bioidentical hormone-replacement treatment.    So, what does this mean for us? If you begin to experience painful sex due to lack of natural lubrication or increased urinary tract infections, head to your doctor for a hormone panel. Low estrogen levels can lead to vaginal atrophy—a thinning and shrinking of the tissues that results in inflammation.

FIBROMYALGIA

This common, chronic pain disorder is a hard egg to crack. It’s complex, causing fatigue, sharp soft-tissue pain (that ranges in severity) and tenderness throughout the body that comes in waves—lasting for hours or weeks. The National Fibromyalgia & Chronic Pain Association reports that 10 million Americans live with this disorder. And at a staggering 8 to 2, Fibromyalgia (FM) affects women over men.   Though there is no cure, active treatment makes life for the affected much more manageable and enjoyable. If you feel you are suffering, don’t stay in the dark. Work with doctors until a diagnosis is reached, and then take healthy steps to live a happy life.

Your gut is your second brain—no, really! There is biochemical signaling that takes place between the gastrointestinal tract (GI tract) and the central nervous system. So, it doesn’t seem too far off to treat your belly right in hopes of ultimate body function.    Eat fresh foods, only eat out once or twice a week, eat small meals, eat often, try greens, kick grease to the side, cut down on dairy, give meatless Mondays a go…the list goes on. There are so many ways to treat yourself right in the realm of GI health, and if you’re suffering from Irritable Bowel Syndrome (IBS)-like symptoms—start here, and improve your quality of life!

American Thyroid Association explains that Hashimoto’s is the most common cause of hypothyroidism in the United States, affecting 5 out of 100 people nationally. Seen most commonly in middle-aged women (as it’s 8 times more common in women than men), the autoimmune disorder occurs when your immune system attacks your thyroid.    This disorder can often come without symptoms, so take a look at your family history, as genes play a big role. The Mayo Clinic reports that researchers aren’t sure where the disorder comes from, but believe it to be a combination of genes and an outside trigger, like a virus.    Pay attention to what history and your body tells you, and go to the doctor if you experience weight gain, tiredness, trouble tolerating the cold, dry thinning hair, and heavy or irregular periods.

INTERNET ADDICTION

Guess what? Social Media is probably making you depressed, and hours on your smart phone every night is likely fueling your insomnia. If you spend a few hours online reading and learning, skip this letter. But if your days and nights are full of scrolling, take a seat.    Recently, there has been a plethora of case-control studies that report on the connection between smart-phone/internet addiction (which has now earned its official disorder title—IAD, or Internet addiction disorder) and depression, social anxiety, self-esteem issues, and sleep quality. It’s no secret that the virtual world can sometimes be more attractive than everyday life (it’s not real), so it’s really no surprise. The cure? “My knee!” No, I’m not 75 years old; I’m your average woman in her early 30’s who experiences joint pain, and I’m not alone. Joints are the parts of your body where your bones meet, allowing for movement—like in your shoulders, wrists, hips, elbows, and knees. The pain’s trigger is where treatment and prevention gets tricky. Arthritis is the most common cause of joint pain, with osteoarthritis being most common in adults over 40. However, autoimmune disorders can also be a culprit, as well as injury and strain.    If you’re concerned about arthritis, its early onset, or are experiencing intense joint pain, a blood test and a joint x-ray can be performed by a doctor to pinpoint your reason for pain, and the test treatment.

KETOSIS Surprise! The key to your weight loss is ketosis! National Center for Biotechnology Information says the hunger-reduction report during ketogenic diets is well-known, though the underlying molecular and cellular mechanisms remain uncertain.    When your body is in ketosis, your blood sugar levels drop and your body begins to break down fat to use as energy, because in normal circumstances, your body uses glucose—derived from carbohydrates like sugars, fruits, milk and yogurt, and bread and pasta— as its primary source of energy. And if you don’t have ample amounts, your body will catapult into an extreme fat-burning state, reducing hunger, stabilizing blood sugar, and burning fat.    If there is not enough glucose available to meet energy demands, the body will adopt an alternative strategy to meet those needs. Specifically, the body begins to break down fat stores to provide glucose from triglycerides.

LEAFY GREENS

Are your meals colorful? If not, chances are you’re lacking a vital part of your everyday diet, and more importantly, nutrients. Leafy greens are nutrient-dense powerhouses that reduce the risk of some seriously population-plaguing issues like cancer and heart disease—as they are packed with antioxidants, phytochemicals, fiber, folic acid, vitamins, minerals, and protein (YES, with all crazy vegans aside, science supports that greens have protein). In fact, protein accounts for 30% of the calories in spinach, a common leafy green. Others include kale, collard greens, broccoli, bok choy, and red and green leaf romaine lettuce.    Want to lose weight? Leafy greens play a big role here, as the antioxidants they provide can play a critical part in weight loss, and they’re low fat all on their own. Can’t stomach the taste? Replace a meal with a smoothie that contains 2 cups of spinach, 1 collard green leaf, 2 cups of frozen fruit, 2 bananas, and 2 cups of water or milk. MENOPAUSE

Hot flashes, irritability, and depression—oh my! We all know what menopause is, but do we know how to make this un-ignorable part of our life work best for us? Hormone therapy (HT), AKA Hormone Replacement Therapy, is all the buzz as technology takes us further in the medical field, with avid supporters and others who voice concerns.    However, The North American Menopause Society’s 2017 report states that HT remains the most effective treatment for vasomotor symptoms and the genitourinary syndrome of menopause. In layman’s terms, they kick your hot flashes, night sweats and flushes in the rear, as well as any dryness, burning, irritation, or sexual and urinary symptoms associated with menopause. The report also states that HT has been shown to prevent bone loss and fractures.   However, there are risks. The report states that the benefit-risk ratio is less favorable for those over 60, or those who take HT 10 to 20 years prior to onset of menopause symptoms.

NUT CHEESE

Thought you could never put down that block of cheese? Grab a bag of raw cashews next time you’re at the grocery, and consider kicking dairy’s many scary afflictions. When dairy is removed from your diet, you are likely to experience weight loss, clearer skin, and increased energy. URINARY URGENCY

Can you make it through a short road trip without a rest stop? I can’t. But I also drink massive amounts of water and have a high metabolism. Still, I wondered if everything was okay when I noticed I head to the girls’ room more often than most. Cleveland Clinic reports that the average person should urinate 6 to 8 times in a 24-hour period, but up to 10 times is not abnormal. XYLITOL If you read food labels (go you!), chances are you’ve come across the ingredient xylitol. A great rule for thumb when considering ingredients is—if you can’t pronounce it, don’t consume it. That’ll clear up time spent Goggling terms in the aisle.    Ouch! There goes half of your processed panty, because, many of those ingredients can wreak havoc on both your body and mind, and this ingredient— dubbed by manufacturers as ‘all natural’—is one of them.    Considered a crystalline alcohol, xylitol is a derivative of xylose—a crystalline aldose sugar that is not digestible. Xylose is naturally found and commonly obtained from birch bark. Yet, just because something is “natural,” doesn’t mean that it’s good for you. Studies dating back to the 1950s report that single-stomach animals are unable to properly metabolize xylose. People who eat foods with xylose tend to experience digestive issues like gas, bloating, and diarrhea. 72

Cognitive decline is an unfortunate side effect of aging. In many cases, forgetting your grandchild’s birthday or leaving your keys in the freezer indicates normal levels of memory loss. For many adults, however, forgetfulness could mean something more. While aging is inevitable there are steps seniors can take to lower the chances of developing Alzheimer’s or dementia. Some activities have been linked to keeping the mind sharp.

A HEALTHY LIFESTYLE

Eating well and exercising often are surefire ways to maintain whole body health. From a young age these are the most common recommendations for living a healthy life.    High blood pressure and cholesterol problems have been linked to higher rates of cognitive disability and memory problems in the elderly. Eating healthy foods, staying away from alcohol and tobacco, and exercising often all reduce risk of developing these conditions. Exercising is also thought to help maintain positive blood flow to the brain, helping it to function optimally.    Certain foods have been heavily linked to improved memory function, including fish high in DHA, green, leafy vegetables, avocado, sunflower seeds, peanuts, whole grains, and berries. Sometimes the best way to boost memory is to reach for a leafy, green salad with an oil-based dressing (another memory-boosting food).

EXERCISING THE MIND

The brain is a muscle and it needs to be exercised to perform at its best. Instead of sitting down to television at the end of a long day, try a challenging puzzle instead. Trade morning television time for coffee and a crossword. Games like Sudoku are also great practices for those looking to stay sharp and with technology taking over plenty of brain-busting games are at your fingertips.    Mind games don’t have to be complicated. Engaging in short practices offers plenty of benefits to the aging mind. Try doing math problems in your head or challenging your taste buds during a meal by identifying individual ingredients.    They may say an old dog can’t learn new tricks, but taking up new hobbies is one of the best ways to challenge your mind.

Many studies have linked grandparents who babysit to healthier cognitive function. Caring for young children is engaging as they often require significant attention and use of mental capabilities (but we don’t have to tell you that), so it’s possible the need to use these functions keeps the brain sharp. The key is balance. Grandmothers who spend five days or more watching young children have an increased risk for cognitive disorders, however, those who watch them one day each week showed reduced risk for both Alzheimer’s and dementia. It’s also suggested that grandparents who watched their grandchildren daily felt taken advantage of.

If Cabo is known for anything other than it’s gorgeous beaches and inviting waters, it has to be the nightlife. At all hours of day and night, people party throughout the city, stomping from beachside bar to beachside bar. Most areas of Cabo are Americanized and considered safe from riff-raff more prevalent in other parts of the country, but that doesn’t mean all bars are created equal. Choosing a resort to call home during your visit to Cabo San Lucas is only hard if too many good options bog you down. The resorts are often all-inclusive and rather robust when it comes to amenities, with large pools and swim up bars being a pretty standard accommodation at most.    Buyer beware if you choose a stop that doesn’t include food and drink. In Cabo, food often has to be flown in from other locales, which quickly raises the cost of dishes so you end up doling out more cash on nourishment than you’d likely expect.    Aside from the type of accommodation to choose, you must consider location. Cabo, or Los Cabos, has two main parts— Cabo San Lucas and San Jose del Cabo. The first is known for providing its visitors with a wild good time, while the latter offers a more subdued escape in a less developed locale. Since its arrival, the eatery has provided its guests with a menu that evolves with the seasons. “We typically change it every three months, and it is wholly driven by what’s available locally,” explains Melissa Goodman, General Manager and co-owner of Mezzo. “We’ve always been one step ahead in the farm to fork movement. 4 FACTS ABOUT CAVIAR

• Caviar is the salt-cured roe (eggs) of White Sturgeon. White Sturgeon is considered America’s largest fresh-water fish; growing up to 20 feet long, weighing up to 1,500 pounds, with females that spawn as many as 3 million eggs at a time. • Fine caviar will have a smooth, nutty flavor profile with a creamy finish. This makes caviar the perfect pairing for Champagne. • Caviar which costs an upwards of $300 to $1,000 per ounce is beluga caviar, from the beluga sturgeon. This fish is only found in the Caspian or Black Seas, and can take up to two decades for the sturgeon to reach their full size. It is banned in the United States. • In the United States, we rely on sustainable, farm-raised sturgeon for our caviar culinary needs. 114

HOW TO ENJOY CAVIAR

• Caviar should be delicately spooned onto plain toast or blinis, with a garnish of crème fraiche, as to not interfere with the taste of the caviar. • Popular accompaniments, like freshly chopped onion, chives, and a hard-boiled egg, might make it more appealing to the caviar resistors, but will detract from the flavor of fine caviar. • Do not use a metal spoon to serve caviar, as it affects the flavor of the caviar. Experts suggest using mother of pearl, ceramic, or wood spoons to scoop up the delicacy. • Air and temperature can spoil caviar. Be sure to consume any opened tins of caviar within one hour of opening.

One of Downtown Stockton’s culinary gems, Cast Iron Trading Co., is hip, modern, industrial, and down-right delicious. The driving force behind its success is much to the credit of Executive Chef and owner, Eric Lee, who opened the doors just a mere 14 months ago to the delight of Stockton foodies.    Hailing from a self-proclaimed foodie family, Eric’s stepmother was his biggest culinary influence. And while he isn’t formally trained, Eric has spent most of his life working in restaurants—getting acquainted with both front and back of the house operations. His motivational muse? Eric credits the Gourmet Food Truck Revolution, the Food Network, and Danny Bowien and Chris Yings’s Cookbook—The Mission Chinese Food Cookbook— to open Cast Iron.    Eric’s love for Central Valley products is distinctly showcased in every gourmet menu option he offers. He’s even teamed with Trail Coffee Roasters to provide a custom medium blend with hints of cocoa nib, black pepper, walnuts, and clove. But, he’s also drawn to the comforting pub-style food that started 118

it all. His mantra is, “Use seasonal, fresh ingredients and put a craft spin on each dish.”    Cast Iron’s signature dish has to be the Pulled Pork Sliders, a menu staple that’s been around since Eric began cooking for the popular StockMarket events. But the BLT and BEC (bacon, egg and cheese) are popular among regulars as well.   One of his most indulgent specials is the BEAST Burger. The beast boasts equal parts Lamb, Ribeye, and Double Smoked Bacon. The sliders, burgers, and breakfast sandwiches are all accompanied by pickles and jalapeños from Puentes Farms. Both are made in-house and are perfectly brined.   As for Eric’s current favorite dish? The Brussel Sprout Tacos. “The sprouts are par roasted, then sautéed and blackened upon ordering,” Eric details. “The tacos are complemented by a chipotle crème, house-made Roma tomato salsa, and topped with pickled veggies.”   Cast Iron also boasts one of the best Craft Beer selections in Stockton, often tapping High Water Brewing,

Morgan Territory, and New Glory. The hot spot also features Dust Bowl, Firestone, and many other popular craft beers, offered alongside an assortment of wines and other beverages for guests to sip on.   As Executive Chef, Eric believes in changing up the menu and giving customers what they want—comfort food with an urban twist. And though he continues to transform menu items, Eric has definitively found his culinary voice. Tart, tangy, and delightfully transformative. The lemon is a must-have in kitchens across the country and beyond. Their use in recipes has been established in poultry and fish, desserts and, of course, a plethora of unique and refreshing beverages. Alongside its versatility, lemons pack an extraordinary amount of benefits! As one of the leading nutrient deficiencies in developed countries, iron deficiency is best combated with a combination of foods rich in vitamin C, and foods rich in iron. This allows the body to absorb iron incredibly well.    Because they are packed with flavonoids, consuming lemons are seen as a great way to lower the risk of stroke in women, and have the potential to 120

help prevent cardiovascular problems and protect against cancer cells. For those interested in clearing up their complexion, the high amounts of vitamin C in lemons make important contributions in the body toward creating collagen. That means more elasticity and less wrinkles cropping up as the years wear on.    Beyond the kitchen, lemons still take the cake in uses. Apply lemon onto your skin and let sit for fifteen minutes every day and watch dark spots fade and skin tone even. A combination of honey and lemon for a face mask brightens skin and acts as an antiseptic to control acne development! And don’t you dare toss those peels! Rub the inner side of a lemon on your cutting board to remove nasty leftover smells that just

won’t dissipate. Use the same system, with a little added baking soda and salt, and get to scrubbing on brass and polished chrome for sublime shine!   Lemons really are the answer to a boatload of household and personal predicaments, but have you ever wondered how they arrived on our Cali shores? Records indicate that the first lemons may have come from Asia, and as trade routes expanded, were ported throughout the Mediterranean region. As their popularity grew, and explorers traveled and immigrated to the United States, lemon seeds tagged along for the journey beside other common citrus.   By 1751, California was growing the bitter beauties, with the only large-end competition hailing from Florida. While production in our golden state has slacked in recent years, California is still a mighty contender in the industry, and the largest grower in the United States, producing 836,000 tons in just 2016 alone. Whether or not you enjoy the tang of a fresh glass of lemonade, there can be little doubt on just how valuable the fruit is to our beautiful state.

ASPARAGUS WITH LEMON AND

RICOTTA INGREDIENTS

One Bunch of Asparagus 2 Tbs. Olive Oil One Lemon Sea Salt Freshly Ground Pepper 3-4 oz. of Whole Milk Ricotta Cheese Calivirgin Balsamic Vinegar DIRECTIONS

Preheat oven to 450 degrees. Trim or snap ends of the asparagus and wash in a colander. Once dry, place asparagus on a sheet pan and brush with 2 tablespoons olive oil. Squeeze the juice of one lemon over asparagus, sprinkle with sea salt and freshly ground pepper. Bake for 10 minutes. Remove from oven and spoon fresh ricotta over asparagus. Drizzle with balsamic vinegar.

MAHI MAHI INGREDIENTS

2 Tbs. Extra Virgin Olive Oil • 1 Tbs. Red Wine Vinegar 4 6 oz. Mahi Mahi filets • ½ C. Plain Greek Yogurt ¼ C. Crumbled Feta • 2 Tbs. Chopped Fresh Dill 1 Tbs. Lemon Juice • 1 8 Slices of Lemon, Thinly Sliced DIRECTIONS

Preheat Broiler. Line a broiler pan or 9x9 glass baking dish with foil and lightly oil. Season the fish with salt and pepper. Whisk together Greek yogurt, feta, herbs and lemon juice. Spread the mixture on top of the fish and place two lemons on each filet, slightly overlapping. Drizzle with olive oil and broil in the oven for 15 minutes, or until the fish is just cooked through.
