That’s why people continue to complain about their weight yet eat fast food and refuse to exercise. It’s hard work. But, it’s worth it. And the future is bright for downtown Stockton, with so many strong, passionate, creative and innovative people catapulting the city forward. We can’t wait for what they’ll do next! This month, we also reflected on a renaissance if you will, of the Lodi Appellation. This fall, University of the Pacific will host 14 free mobile clinics throughout the Central Valley and Northern California to assist Medicare beneficiaries with making informed decisions about their Medicare Part D prescription drug plan. Beneficiaries should bring their red, white, and blue Medicare card and all their prescription and over-thecounter medications. This is the 11th year the program will bring students and faculty from the Thomas J. Long School of Pharmacy and Health Sciences to senior centers, nursing homes, and places of worship. The events

will take place from Carmichael to Turlock between mid-October and late November, during the peak of Medicare’s open enrollment period. The first event will take place on Sunday, October 15 from 10 a.m. to 6 p.m. at the School in Stockton. “There are about 30 different ways to get your Medicare prescription drug coverage. We sit down with Medicare beneficiaries and identify the lowest cost plan based on their medications and individual needs. All of the hassle is taken care of for them,” says Dr. Rajul Patel, Professor of Pharmacy Practice. Patel says plans change drastically every year. “Think of it as an annual checkup (for your finances). Also, the annual deductible is going up this year,” Dr. Patel adds. A typical review usually takes an hour. Pharmacy students, overseen by licensed pharmacists and professors, review the eight or nine medications a typical Medicare beneficiary takes. They help them look for a lower cost drug plan, review drug-drug interactions, and determine if the beneficiary has a severe medication-related issue that warrants a follow-up by the prescribing physician. “We offer about a dozen different free health services at these events, including bone density testing, blood pressure testing, cholesterol screening, mental health screening, diabetes screening, and a flu vaccine,” explains Dr. Patel. Dr. Patel says Pacific has found the review helps about eight out of 10 Medicare beneficiaries save money. The average beneficiary realizes a savings of about $1,030 per year. Hong Nguyen, a second-year Pacific doctor of pharmacy student from Stockton, says Pacific’s mobile Medicare clinics make 34

consultations with a health care professional more accessible. “Beneficiaries get that one-onone time with us while we review and optimize their Part D plans and medication regimens. They are very patient with us and have expressed high satisfaction through our feedback surveys. In addition, many of the preceptors (licensed pharmacists) who volunteer for the events have been a part of the Medicare class in the past. Many of the returning beneficiaries remembered these Medicare students, who are now Pacific pharmacy graduates. This shows that the clinics have built wonderful, nurturing and long-lasting relationships,” Hong says. Hong, who was part of the translation and education committee for the clinics, says Pacific makes an effort to reach out to seniors who speak other languages. “We translate many of the formal documents into different languages, including Spanish, Vietnamese, Chinese, and Russian. We have student translators on hand to translate and speak to the beneficiaries in their native language,” she explains. Emily Highsmith, a second-year Pacific doctor of pharmacy student from Lodi, says she thinks the program is necessary because the Medicare system is complicated. “It’s really important that we educate the beneficiaries, especially as they are aging and more medications are being added (to the coverage list),” she says. Emily added the program helps pharmacy students grow professionally. “Becoming involved in the mobile Medicare clinics allow me to realize that I can impact the community on a broad level. I can incorporate public events and outreach like this into my career,” Emily says. Pacifics’s mobile Medicare clinics are funded by grants written by the school’s pharmacy professors. This year’s contributing organizations include the San Joaquin County Human Services Agency, United Way, Kaiser Permanente and Pacific’s Thomas J. Long School of Pharmacy and Health Sciences. SYMPOSIUM ARTISTS, MUSICIANS, AND MAKERS COME TOGETHER BY COPPER WILLIAMS There’s something sublime stirring up the nighttime scene in downtown Stockton. Heavy beats pour out from The Sycamore, a warehouse transformed into a vibrant venue. The clock has just struck 7 PM, but throngs of locals and out-of-towners are already flocking, weaving in and around curated booths bustling with local artwork and hand-crafted wares. The beat stops and someone hits the mic to present the next in a vibrant lineup of regionally reared musicians. And in the dim lights casting their glow throughout the complex, the crowd lets loose as another musical wave hits the walls. This melting pot of talent is known as Symposium, a monthly event that celebrated its first birthday in July. “Timing really was the spark behind Symposium,” explains co-founder Brandon Ente. “Before Symposium, co-founder Anthony Caampued and I curated a music event called RESONATE that took place at The Matinee on the Miracle Mile. During the 9 years of the event, it went from Stockton to San Francisco due to Matinee’s closure and no other venue fitting what we do. Fast forward to 2016; we wanted to bring the event back home and incorporate some new aspects.” With the help of Alex Suelto and his art collective, Skillhouse, many sensational artists and musicians gathered at The Sycamore to showcase the first Symposium on
July 8, 2016. It was a hit and further solidified what the event can and will bring to downtown Stockton…. “Symposium; a collection of opinions expressed or articles contributed by several persons on a given subject or topic,” Brandon states. “…We’ve taken that term and used it in an artistic sense. Symposium is a place where artists can express themselves, visually or sonically.” No two events are ever truly alike. And this allows 38

Symposium to continuously bring new blood into the fold. “It’s such a diverse event that allows people of all talents to participate,” Alejandra Sanchez, vendor manager, elaborates. “Artists, musicians, and makers of all kinds reach out to us to be part of the event, and that is what keeps Symposium so diverse and exciting every month.” But, showcasing their own skills isn’t enough for the creators behind this unique event. “We want to inspire the local youth to pursue careers in the arts, and show them that they can be successful doing so,” says Alejandra. “Symposium provides a venue where they can step out of their comfort zone, showcase their talents, and have fun doing so.” CATCH THE NEXT EVENT FOR:

Dibs, a trip reduction program of the San Joaquin Council of Governments, is “turning over a new leaf” to encourage greener, less stressful commuting options. Kari McNickle, Dibs program specialist, says Dibs recently launched a smartphone trip track app that helps about 8,000 registered participants identify alternative and shared transportation options. You can choose to ride with other participants in a carpool or vanpool. You can also use public transportation, walking trails, or a bicycle route. Improving your commute helps San Joaquin, Merced, and Stanislaus counties reduce air pollution, and traffic. “Our trip planning program allows you to put in where you’re coming from and where you’re going. The program comes up with a greener way for you to get there!” says Kari. Dibs, which used to go by the name “Commute Connection,” also has a new, easy-to-use website. The program has begun offering new incentives and is putting on new events. You can learn more about Dibs’ Smart Travel options at events for “employer champions:” entities with 100 or more eligible employees that are required to imple-

ment a trip reduction program. Kari says businesses with fewer employers can also participate. “We offer an employer toolkit. We will work with businesses to create a free, custom Smart Travel program that meets their company’s specific needs,” says Kari. Dibs is working to meet the needs of public and private employers as well as nonprofits. Julia Tyack, a transportation planner for the City of Lodi, says Dibs has encouraged a number of city employees to explore carpooling, cycling, and walking to work. A few employees have chosen to use hybrid or zero emissions vehicles. “We also have a Bike to Work day in May. We coordinate with Dibs to hold and publicize that event downtown,” Julia adds. Andrea Chapin, a clinical dietitian at Lodi Memorial Hospital, says Dibs regularly comes to health-oriented events like the hospital’s employee wellness fair. Employers make a huge difference in promoting alternative and shared transportation, says Tiffany Hooser. Tiffany is the sustainability and environmental program manager for Crystal Creamery, a dairy manufacturer in Modesto. “We complete an annual survey on how employees are getting to work. We send out internal messages to our employees, put up posters, and educate our employees about alternative transportation and different resources via team huddles.”

GOING OVER THE EDGE TO SUPPORT COMMUNITY HOSPICE BY JESSICA ZIMMER Rappelling down the side of one of the tallest buildings in downtown Stockton is an excellent way to benefit hospice care. Those brave enough to scale down the side of the historic Medico-Dental Tower are sure to enthrall a crowd of children, onlookers, and supporters. This year’s Over the Edge for Community Hospice is presented by Ten|Space, Wells Fargo, and Port of Stockton—and is dedicated to the memory of former Ten|Space Chief Brand Officer, Tim Egkan. The nonprofit has already raised about $40,000 out of an expected $175,000. Individuals who are rappelling can go down themselves, in a group, or “toss their boss” over the side of the tower. The event will kick off on October 20 (with an VIP/Media Day and a Liquid Courage Reception) and on Saturday, October 21, participants will strap up and step off. Saturday’s Drop Zone street festival welcomes community onlookers, and boasts children’s activities and food trucks. Melissa Van Diepen, major gifts officer for Community Hospice Foundation, says the $1,000 fundraising minimum can go to any one of Community Hospice’s programs.
“The event helps fund Community Hospice’s Youth Grief Programs which include Camp Erin of the Central Valley and our School Grief Program that runs 6 to 8 weeks at area schools for students ages 6-17. Edgers can also raise funds for hospice care, the Community Hospice Alexander Cohen Hospice House, and education programs for community members like Caregiver College,” says Melissa. Many participants brave the height because they believe in Community Hospice’s mission. Shelli Prosser, a donor relations coordinator for CHF, says this year’s descent honors her grandmother who passed away while on hospice services.
“She was able to pass at home with all of her belongings in a family environment. It’s so important to raise money for families who can’t afford hospice care otherwise,” says Shelli. Matt Beckwith, who fundraised last year, says his father used Community Hospice’s service. “If it weren’t for them, he wouldn’t have had the same final days that he did. They also checked on all of his adult children to see how we were doing,” says Matt. Oscar Cabello, a vice president district manager with Wells Fargo, was a boss tossed over the side of the tower by his employees last year. This year his office will be fundraising to support the event. “It was a little scary, but totally worth it, and was a great way to put a point on all the fundraising our team did—potlucks, bake sales, and yard sales. The allure of the garden is magic, filled with a perfume as breathtaking as the view. Rows
and rows of rich crimson, yellow, and orange plunge forth from shady lengths of verdant leaves and emerald stems. As Stockton’s very own International World Peace Rose Garden, this gem has brought together a community, all in the name of peace.
There’s not a soul who lives, works, or commutes through our streets who isn’t aware of the violence that plagues us. But when Sandy Huber of Grupe Commercial Company took a trip to our state capitol and found herself in Sacramento’s International World Peace Rose Garden, she knew she’d be taking more than a memory back home with her. It wasn’t just the beauty of the garden that moved her to action, but the words of students from across the city, inscribed on plaques around the garden. “When I looked down and began to read the Inspirational Messages of Peace from local students, my heart melted,” Sandy explains. “Here [were] the voices of our future, calling out their dreams for peace.
Peace in their homes, peace in their neighborhoods, their schools, their cities, and their world.” Grupe Commercial Company had already been hard at work for the last 17 years, redeveloping the 103-acre campus, University Park. With healing and education as a priority, they focused their efforts to build Stockton’s garden there, partnering with International World Peace Rose Gardens. Fostered in her own back-
yard, Sandy raised up over 50 varieties of roses, each representing a distinct quality of peace. On May 26, 2016, the community joined with speakers and students for University Park World Peace Rose Garden’s official dedication, showcasing the garden’s own message: Peace through Non-Violence. This central theme has struck a chord in many parts of our community, but it’s been the students of San Joaquin who’ve been impacted most. Through the Annual Messages of Peace contest, the youngest of our city’s ranks have shared their riveting messages in poems now showcased on plaques found along the roses. “Our hope is that this positive experience will begin to effect the decisions of the students, to behave and believe that peace is possible for their life.”

BRICK BY BRICK Forged from the tireless efforts of our community, Stockton’s downtown district is evolving. Graffiti-riddled, board-blockaded buildings are being replaced with bustling businesses and wall-engulfing murals. Once forgotten bike paths now buzz with cyclists, and garbage-laden plazas play host to vibrant, locally-driven events. It’s a breath of fresh air, blowing straight in from the Delta channel herself. And it’s a welcome reminder of the current revitalization of downtown Stockton. From the restoration of our historic buildings, to the promotion and continuous care of our city streets, right down to community engagement itself, we’ve set off down the road less traveled to share the story of the great minds and the projects that have helped the budding success of our beloved downtown district. Follow along and rediscover our city along the waterfront.
It takes time, patience, and planning to pave the literal path to downtown Stockton’s success. Within every abandoned building is a budding business waiting to blossom. But it takes the right minds to help others envision what Stockton’s oldest historic relics could be, given the right care. Those that have stepped up to the plate have transformed structures deemed uninhabitable into marvelous works of art. These revived buildings now host a wave of new offices, homes, and eateries, fit for the generation who thrives on a high walkability score.
RAISED FROM THE FOUNDATION
TEN SPACE Leading the pack in re-imagining the many structures encompassing downtown Stockton is Ten Space. The brain child of Zac Cort, Ten Space first began back in 2007 as Cort Group, before evolving into its current model in 2015. “We are trying to bring a vibrant, thriving core to a city of over 300,000 people,” explains David Garcia, COO of Ten Space. Zac Cort “Downtown Stockton has treTen Space mendous assets, but it takes something transformative to take it to the next level.” In a marriage of passion and commitment, Ten Space took the reins on renovating such structures as the Newberry Building—that now hosts a modern-envisioned daycare facility, businesses such as Papa Urb’s, and plenty of office space—all of which is currently occupied. The Belding building is another jewel that’s helped to reinvent downtown, operating as home to spaces like Cast Iron Trading Com-

pany and Channel Brewing, at its base. Huddle, and plenty of unique office space, take up the levels overhead with Ten Space acting as the beacon for change on the fifth floor. “It’s important to realize that new construction is incorporated with the old structures. People don’t recognize the old structure until a new one is hauled up next door,” says Zac Cort, Founder and CEO of Ten Space. “We’ve done a good job of weaving these hundred-year-old buildings into the new construction, which is very exciting. Some of these buildings have been sitting here for our whole lifetime and have never been utilized.” Paired alongside The Sycamore, Ten Space’s very own rent-able venue, it’s obvious that the company has made a permanent impression on the community. But why stop there? “Over the longer term, we’ve developed a master plan for the downtown,” says David. Encompassing over 11 acres—and including projects such as the Medico Dental Building—is the Open Window Project. The venture may eventually feature 1,000 homes and 400,000 feet of new commercial and retail spaces.

“It’s a positive change that the city is yearning for. It’s fantastic to wake up and look back ten years ago,” Zac smiles. “Downtown is going to attract the next wave of progressive people, and we’re excited to be at the forefront of that.”

Weber Avenue, take in the view, and it’s hard to believe you’re not standing in front of one of the Bay Area’s many luxury apartment complexes, complete with edgy, modern designs and robust bottom-floor retails stores. Cal Weber 40 completed its 40-unit apartment building in 2016, offering low-income residents a high-quality and functionally pleasing place to call home in downtown Stockton. This project has been a labor of love for DFA Development’s Danny Fred and Three Leaf Holdings’ Chris Flaherty. Utilizing as much of the original McKeegan building and Cal Weber building as possible, the developers have worked hard to minimize their carbon footprint and emphasize a greener construction method. Residents can choose between two and three-bed-
room apartments, and have access to a private playground and computer lab. A parking garage is also underway, and solar panels help curb the units’ electricity usage. It’s a step in the right direction in providing sustainable housing for Stockton’s downtown residents, showcasing the beauty of local architecture alongside modern pieces such as Cal Weber 40. Its high walkability score is key for re-envisioning downtown’s close connection to shops and restaurants, event centers, and the waterfront. And as the first design of its kind, it provides a glimpse into what downtown’s growing populace might enjoy in future architectural pieces.

It’s easy to step out and onto our city streets to take in the physical transformations of downtown Stockton. Now, more than ever, businesses are opening shop in restored buildings and events are taking place along the waterfront. But without the heart and soul of Stockton backing these powerful changes, years of restoration can all be for naught. It’s the community that truly makes these efforts worthwhile. And people from all walks of life are making it their goal to bring Stockton’s citizens back home and into their newly reformed downtown spread, learning what its citizens truly need to thrive in the heart of Port City.
COMING TOGETHER FOR THE CAUSE THIRD CITY COALITION
When great minds combine, their ripples can cause waves, transforming talk into action. Jasmine Leek had noticed a great deal of people whose efforts could forever impact Stockton’s growing success. And yet, these people needed more support. “After seeing several missed opportunities for action—as well as some groups working toward the same goal but Jasmine Leek with little resources—I began Third City Coalition to work to bring people together,” Jasmine explains. “All different kinds of people, with different interests and experiences, but with one thing in common: a love for this place we call home—Stockton.” And so, Third City Coalition was born in 2016, providing the key component for Stockton’s residents to combine forces and discuss the state of their city and what it needs most. One such aspect is the monthly meetings, known as Conversation over Cocktails, held in local restaurants and shops. “People from all walks of life interested in engaging in the happenings of the community can expect to meet www.sanjoaquinmagazine.com

new people, learn about the history of the city, and determine its future by sharing their own experiences, opinions, and ideas,” says Jasmine. “The goal of this event is to build connections beyond our existing networks and learn more about how to better the city we love.” Third City Coalition also utilizes Jane’s Walks, conversation-driven guided tours, to help shed more light on what works (and what can be improved upon) in our neighborhoods. These walks have already taken place in both downtown and midtown Stockton. “The thing I love most about Jane’s Walk is that it makes a strong case for taking your city into your own hands,” says Jasmine. “Everyone has a story, an opinion, a question, or a dream about where they live, work, and play. Every Jane’s Walk is a catalyst for taking those things and doing something about it.” Along with the conversations and the walks, Third City Coalition has plenty more to bring to Martina Morio their ever-increasSDSF ing ranks. And, as it is, they’ve helped to open the minds of many who’d have never thought to take steps towards greater change before.

ONE PIECE AT A TIME SAVE DOWNTOWN
STOCKTON FOUNDATION It’s all about creating catalyst projects for the group known as Save Downtown Stockton Foundation (SDSF). Founded in 2013 by local architects, Linda Derivi and Christina Frankel, SDSF focuses their efforts on items that include the arts, historic preservation, and increasing urban greening—to say a few. “We hope to raise residence and business awareness about the gem of downtown Stockton,” describes Martina Morio, SDSF President. “Its livability,
walkability, and its very unique and special history sets our downtown apart from any other community.” SDSF’s latest project will provide Martin Luther King Jr. Park nearby Caesar Chavez Library with a much-needed artistic facelift. The Hunter Square Spire, designed in 1965 by Glen Mortenson, was removed from its original position at the old courthouse when work began on the new building. It’s sat in storage since, but will now be restored to its former glory as a sundial—transforming the old, unused water fountain in the park into a work of art. “People want more attention on art and historic preservation,” Martina explains. As more artistic pieces and the voice of Stockton’s residents come into play, SDSF will continue to focus their efforts, acting as
an outlet for their members to discuss the city’s process on both the public and private level.
PUTTING DOWNTOWN’S BEST FOOT FORWARD
Beauty is in the eye of the beholder, and those that believe in Stockton’s riveting return showcase their brilliance in every action they make to promote downtown’s businesses, events, and overall image. Through their work, they help keep the lifeblood of the community pumping onward, thriving in providing residents with a sense of purpose, a reason to belong, and a drive that develops into dozens of families, friends, and their guests dining, seeking entertainment, and spending to reinvigorate our beautiful waterfront.

DOWNTOWN’S BUSINESSES
DOWNTOWN STOCKTON ALLIANCE What makes a vibrant community? Bustling streets? Top dining destinations? Thriving storefronts? Downtown Stockton’s business owners united to advocate on their own behalf twenty years ago, forming what is known today as Downtown Stockton Alliance (DSA). “Property owners knew they needed to put forth extra efforts to sustain downtown, tackling several issues they felt couldn’t be addressed by city services,” explains Cindi Fargo, the organization’s CEO. With a focus on 3 basic areas—environmental, economic, and administration and advocacy—DSA uses partnerships to get things done. And what exactly are they doing? Bringing music to the streets, art to the walls, and resources to business owners. Programs like Full Moon Riders, Music to Our Ears, Postcards to Stockton, and an Entrepreneur Training Workshop offered to business owners and start-ups to support and fine tune their efforts and
success, are all strategic moves, as Cindi explains. “Everything we do is multi-faceted.” From street cleanups to community events, DSA works tirelessly for a cleaner, safer, more vibrant place to work, do business, and play. And their efforts have not gone unnoticed. Just this last year, the district was up for renewal, calling on a vote to solidify another 10 years of operation. “Through the recertification, I was able to talk oneon-one with hundreds of people, to ask—How are we doing as a district? How can we improve our services?” Cindi continues. “And to speak with business owners, asking, are they proud of what they do and the property they own? Are they connected with the community?” 82 percent of Stocktonians voted in support of the recertification, and for DSA, it couldn’t have come at a better time. “We are at a really important crossroads. Many of our partners have made things happen over the last couple of years,” states Cindi. “We have new tenants and new leases down-

town—early pioneers. These business owners have a vision of an 18-hour day, where people are enjoying downtown until 10, 11 at night.” As for the future, DSA hopes for a vitality that is irresistible. Through attractive storefronts, lively clusters of businesses, rooftop retail, and an active, 18-hour a day city, the organization strives to have all our public spaces utilized.
SETTING THE STAGE
VISIT STOCKTON While their striking promotional methods have evolved with the times, Visit Stockton’s fundamental mission has remained unchanged throughout its many years. “Simply put, Visit Stockton works to bring visitors to Stockton,” CEO Wes Rhea explains. Whether they’re just 64

outside the city limits, or three hundred miles away, Visit Stockton invites guests to Port City to enjoy the plethora of activities and events held here. “These ‘temporary taxpayers’ bring much needed dollars into our community. The more we have, and the more that stay overnight, the better.” And Visit Stockton has excelled in its efforts, helping to both host and share gatherings occurring throughout our county seat. endeavors continue online, with a flourishing calendar that acts as the centerpiece of Visit Stockton’s website, allowing residents and those hosting functions in our region with the chance to post upcoming events with times, location specifics, and more. Stepping their game up further, Visit Stockton also produces three marketing events of their own, held in the heart of the participant’s venues to drive business—Stockton Restaurant Week, Stockton Beer Week, and Stockton Arts Week. Each phenomenal function strikes down the need for a centralized venue, and allows residents and guests the opportunity to forge their own path by visiting participating businesses directly. “We wish to support restaurants, breweries, and artists, as they represent a lot of the flavor and culture of our city,” Wes explains. “Each year, our main goal is to grow these events, and to drive more participation from our locals.” But Visit Stockton’s projects don’t stop with its events. The business strives to create as many Certified Tourism Ambassadors as it can, which “empowers locals to become ambassadors for Stockton.” And the new Stockton Savings Pass allows for locals and visitors to experience pieces of Stockton’s arts, amusements, and restaurants at discounted rates. As Stockton continues to transform into the sublime visiting destination it was always meant to be, Visit Stockton will continue to lead the helm in arranging for the perfect events to take place at our doorstep.

Did you know that good dental health can improve many other aspects of your overall health?! Keeping those chompers in tip-top shape can influence everything from your weight, to your joints, bones, and heart. Checking in with a dentist on a regular basis, brushing and flossing every day, reducing stress to prevent grinding, and wearing a night guard if you do, are key to maintaining overall health. Fighting against two of the biggest threats to dental health—tooth decay and periodontal disease—is another surefire way to protect not just your mouth, but your entire body. Preventing tooth decay is particularly important for young children, as the pain of tooth decay can stop a child from eating correctly, and negatively affect their health and development. Periodontal disease is more of a concern for older children and adults. This disease is defined as oral infections and inflammation of the gums and bones supporting the teeth. According to a 2012 report by the CDC, 47.2 percent of adults 30 and over
have some form of periodontal disease. Periodontal disease is more common in men than women, and those living below the federal poverty level. A 2015 report by the United Ways of California reveals that the Central Valley is one of three regions in California with a high amount of families with inadequate incomes. Dr. Lester Low, DDS, a Stockton dentist, explains that periodontal disease is linked to a number of serious medical conditions, including heart disease, diabetes, at-risk pregnancy, and osteoporosis. It is not yet clear how periodontal disease contributes to these and other concerns, including obesity, rheumatoid arthritis, pneumonia, and chronic obstructive pulmonary disease. But, research indicates one of the ways that periodontal disease increases risk is a heightened potential for bacteria to enter the bloodstream. Warning signs for periodontal disease include red or swollen gums, sensitive teeth, painful chewing, bad breath, gums that pull away from teeth, and a bite that is “off.”

Dr. Low suggests that individuals who believe periodontal disease is affecting other aspects of their health should immediately visit a dentist to get their mouth cleaned. This is the initial step to removing harmful plaque and bacteria causing infection and inflammation. “Dealing with the problem is best done as a team approach, with a dentist, dental hygienist, physician, and nurse working together,” Dr. Low suggests. “First, the patient should visit their dentist. The dentist will diagnose the issue and take a medical history. The dental hygienist will clean the patient’s mouth. Then the dentist can refer the patient to a physician who will address any medical concerns,” he adds. It is possible to turn bad dental health around with just one visit, and with improvement in home care! Of course, more severe cases take longer. “That is why patients should come in for routine checks,” Dr. Low adds. “Every day we see success cases in our office. It’s a combination of motivating a patient who’s not taking care of their mouth and having them engage in regular maintenance.”

The best times to brush your teeth are before eating and about half an hour after eating. Brushing before eating is effective because plaque, bacteria, and a fermentable carbohydrate create an acid. Acid weakens tooth enamel, the protective hard coating of the teeth. When you brush before eating, you remove plaque. Brushing after eating removes both the plaque and the carbohydrate. The 30-minute policy provides time for your mouth to restore a neutral pH. Tangy foods like citrus fruits or canned salsa that contain a high amount of lemon juice or vinegar contain acid. While waiting to brush, floss, rinse your mouth with water, drink a glass of water, and chew sugarless gum. All these actions help get rid of acid. Avoid brushing too much as this removes tooth enamel.

AFFECT ORAL HEALTH Allergies negatively affect oral health by forcing people to breathe through their mouth and driving sufferers to take decongestants and antihistamines. Both these actions cause dry mouth, a lack of saliva. But, saliva is helpful. It washes away harmful bacteria and bits of food, and neutralizes acids generated by oral bacteria. A person with dry mouth has an increased chance of developing bad breath, gum disease, and cavities. You can prevent allergies from negatively affecting your mouth by getting prescription allergy medication, an allergy shot, using rinses that prevent dry mouth and avoiding rinses that contains alcohol. In addition, you can take actions that increase saliva production, such as chewing sugar-free gum, sucking on sugarfree hard candies, and limiting caffeine intake. Alcohol and caffeine both dry out the mouth.
Dr. Cameron Wheeler, an orthodontist at Wheeler Orthodontics in Stockton, says orthodontic care also plays an important role in overall health. “A lot of people assume orthodontics and having braces is just a cosmetic solution. But we look to make sure the bite’s right. The teeth should meet together and fit together. If you have a bad bite, you’re not chewing right. This can affect your gastrointestinal system. You’re digesting food that’s not completely chewed, which puts a strain on your body,” he explains.

HEALTH LEADS TO FATIGUE AND NEGATIVE MOODS Different problems with the teeth and gums can lead to stress and fatigue. Stress is defined as a non-specific response of the body to change. Stress can lead to teeth grinding, jaw pain and displacement, lack of sleep, gum disease, and canker sores. Fatigue is defined as unrelenting exhaustion that reduces motivation and concentration. Fatigue can also lead to lack of sleep, gum disease, and canker sores. When an individual loses sleep and is in pain, they are more susceptible to contract and continue having chronic infections. All the factors: stress, fatigue, pain, and lack of sleep, combine to have a negative effect on an individual’s mood. Typically, these factors also spur an individual to make poor choices. These can include developing unhealthy eating habits, ceasing regular exercise, overexercising, and abusing alcohol and drugs. Such choices can cause the individual to be in even worse health.

One reason why periodontal disease may be connected with more serious issues like diabetes, is serious gum disease can cause blood sugar to rise. Then the body is more prone to infections and less able to fight bacteria that attack the gums.
According to the ADA and the American Diabetes Association, 1 in 5 cases of total tooth loss is linked to diabetes. Tips beyond basic dental care include brushing twice a day for at least two minutes with a fluoride toothpaste, replacing a toothbrush every three to four months, cleaning between teeth once a day with floss or another interdental cleaner, eating a balanced diet, and eating few between-meal snacks. Age and the color/ stains on your teeth are both factors that should be taken into consideration. Over-the-counter whitening products are accessible, but they often don’t give patients the results they desire. Dentists use different products that can’t be purchased in a store, such as Opalescence by Ultradent—one of the most trusted brands for whitening used by the dentists. The whitening gel contains potassium nitrate and fluoride, which helps reduce sensitivity (a common concern after a whitening procedure). Fluoride helps reduce cavities and strengthen enamel. “Your dentist might want to start you with take home bleaching trays,” Dr. Sohi explains. Your dentist will choose which concentration of whitening gel is most appropriate for your teeth. Lower concentrations can be worn all night to whiten while you sleep while higher concentrations can be worn from 30 minutes to four hours at a time. When fast results are needed, an in-office whitening treatment may be selected. “In-office whitening can get your teeth a few shades lighter within a couple of hours,” Dr. Sohi says. “Then you can continue whitening at home with whitening trays.”

Your smile is an important physical attribute, and typically one of the first things that people notice. Time, health, and care are all important factors that make or break a smile. And if you’re not feeling your grin, cosmetic dentistry is available to improve teeth that have become worn, discolored, chipped, and more. We sat down with Dr. Todd Franklin, a local expert, to talk aesthetics. “Teeth can show wear for a variety of reasons, including too many carbonated beverages, grinding teeth, or eating disorders,” he explains. “The most important component is to determine how and why the tooth was worn away—fixing things without identifying the root of the problem is a recipe for disaster.” For example, if teeth grinding is the culprit, treatment would require wearing a night guard to avoid further damage. Teeth discoloration is a common issue that can be caused by poor dental hygiene, certain foods and drinks, or the use of tobacco. Depending on the severity of the discoloration, the process can vary from at home or professional tooth whitening, to veneers. For severe cases, Dr. Franklin teams with master ceramists to determine the correct porcelain material to cover dark areas. While whitening strips can help correct discoloration, a single visit to the dentist can help brighten a smile and leave teeth refreshed and healthy. 88

Chipped teeth can occur from an accidental injury, tooth decay, or clenching of the teeth. The most common reason for breakage is a loss of tooth enamel. The easiest way for a dentist to correct this issue is to provide composite bonding. “This is white plastic material that is matched in color to your teeth and then sculpted and bonded to repair the chipped area,” Dr. Franklin explains. “If the broken area is large, white porcelain material can be placed providing a stronger and longer lasting result.” When you’re ready to invest in your smile and fix cosmetic issues, don’t rush the process—although it may be tempting! It is essential to make sure that you are confident in
your dental team and their work. “A dentist with experience will have examples of their work and the corrections they’ve performed,” Dr. Franklin notes. By investing in your smile, you are investing in each interaction that occurs. It’s about time to smile wide, and meet people with confidence!

With summer at an end and the holidays just around the corner, it could seem easy to blow off appointments and divulge in the treats and sweets of the upcoming seasons. But, never forget the importance of keeping your teeth and body healthy all year long! “If you think about it, the mouth is a point of entrance to your body, similar to a gate,” Dr. Lita Rodriguez of Millennium Dental says. “Anything you eat or drink will have a beneficial or harmful effect on your teeth and the rest of your body.” Dr. Rodriguez explains that teeth are hard structures with several layers. The outside layer is called the enamel and it is made of dense minerals. The middle layer is called dentin, and the inside layer is the pulp, where the nerve and blood vessels of the tooth live. “There are many bacteria living in our mouths, and they feed off of the things we eat,” Dr. Rodriguez explains. “They love sugar and carbohydrates. Every time we have food in our mouth, the bacteria eat the sugar and carbohydrates and produce acids that damage the enamel.” While the result of the acids may result in a

cavity in your tooth, there are other, more severe consequences. “For instance, if there is an infection in your gums, the harmful bacteria can travel to your heart through the blood vessels and cause heart problems,” says Dr. Rodriguez. “There have also been cases where certain types of bacteria can cause issues such as premature birth or even miscarriage.” To build healthy teeth habits and practice healthy oral hygiene, it is important to make sure to brush your teeth twice a day for two minutes, and floss daily. Furthermore, it is essential to drink plenty of water and eat healthy, nutritious foods that will leave your teeth and body strong and healthy. The consumption of beverages with high sugar content as well as
foods with high acidity will lead to tooth decay, obesity, and diabetes. Dr. Rodriguez recommends trying to avoid processed foods and replace them with fresh alternatives. Along with eating healthy, it is important to have regular dental checkups at least twice a year.

When it comes to teaching kids good oral hygiene, teachers and dentists play a part. The biggest influences in a child’s oral hygiene habits, however, come from the parents. It’s always best to lead by example. “Be a good role model to your kids,” says Dr. Rafat S. Razi, a pediatric dentist in Tracy. When children see their parents taking good care of their teeth—brushing, flossing, and visiting the dentist—they follow suit. Mimicking parental behavior is part of growing up. And when parents enforce positive oral hygiene routines, kids are more likely to continue those practices as adults. Dr. Razi recommends the 2-2-2 approach to oral hygiene. That’s brushing twice a day for two minutes each time and getting dental cleanings twice a year. Frequent flossing is another good practice to employ. Healthy eating helps teeth thrive, too. When feeding your kids, think about the foods they are putting into their mouths. Dark sodas (like coffee and red wine for adults) cause stains. Sugary substances like fruit juices and candy lead to more bacteria creation. Even late-night glasses of milk can spell trouble for tots who don’t brush afterward. However, drinking plenty of water helps rinse away stuck food particles and bad germs. Eating healthy foods and drinking plenty of water lends to better smiles—less cavities, less tooth decay, and less discoloration and staining. “The biggest misconception about pediatric oral health is that baby teeth will just fall out,” Dr. Razi says. “It is important to have healthy primary teeth to create a healthy environment for the permanent teeth. Children need good dental habits early to ensure good oral health as adults.” Want to raise a family with healthy teeth? Follow these simple rules to good oral hygiene:

Cancer has touched many people’s lives, and dental care is an important part of successful cancer care. A dental evaluation before cancer treatment may help prevent serious oral problems. Oral side effects related to cancer treatment can include acute oral infections, dry mouth, soft tissue sensitivity, mucositis, and increased rate of dental decay. It is recommended to have a complete dental exam, including x-rays, one month before cancer treatment. Identifying and treating dental infections prior to treatment can help minimize future oral complication. And for those receiving high dose head and neck radiation therapy, invasive procedures (like extractions and surgery) should be completed 14-30 days before beginning radiation treatment. The dentist and radiologist should be in careful consultation before treatment. Throughout your cancer treatment, be sure to brush your teeth, gums, and tongue with an extra-soft toothbrush after each meal, snack, and at bed time. If brushing becomes uncomfortable, soften the bristles with warm water. Please don’t stop brushing your teeth, just be gentle. Toothbrushes can harbor bacteria, so change them frequently. As for the rest of your routine, please use a fluoride toothpaste, fluoride treatments prescribed by a dentist, and glide floss. If your gums bleed or hurt, avoid those areas, and don’t use any toothpicks because they can injure the soft tissue. It’s also helpful to avoid mouth washes that contain alcohol. Instead, use a mouth rinse containing a single

teaspoon of baking soda in 8 ounces of warm water, followed with a plain water rinse. The baking soda rinse helps neutralize acid PH in the mouth. But if you have high levels of oral bacteria, a medicated mouth rinse can be prescribed. Sometimes cancer patients may develop oral fungal infections as the result of antibiotic or steroid drugs during chemotherapy. If you have a burning sensation in your mouth, change in taste, or discomfort when wearing dentures, call your oncologist or dentist for an evaluation. Anti-fungal medication maybe prescribed. Dry mouth is a very common side effect of some cancer treatments. Keep your mouth moist by drinking lots of water, suck on ice chips, or sugar-free gum or candy, or use saliva substitutes. If your mouth is sore, select softened foods that are nutritious, and easy to chew and swallow. And take smaller bites, chew slowly, and sip liquids with your meal. Avoid sharp crunchy foods that can cut or scrape your soft tissue. Also, avoid food that’s hot, spicy, or highly acidic. Minimize sugary foods that can cause tooth decay, and discontinue all
forms of tobacco and alcohol. Please keep open communication between your oncologist and dentist. If your cancer treatment includes intravenous bisphosphonate therapy, be sure to inform your dentist. This is critically important. Patients who have received radiation therapy to the head and neck need to be closely evaluated for the rest of their life. The irradiated jaw bone requires special consideration before any treatment, such as an extraction, is considered. The oral side effects of cancer treatment can vary from person to person. Some patients may have minor side effects while others may have more serious problems. Maintaining good oral health before, during, and after cancer treatment can help minimize oral complications and improve the patient’s quality of life. The journey through cancer care can be arduous but with help, we can achieve the goal to get better and once again enjoy life.

PREVENT TOOTH DECAY WITH REGULAR
CHECKUPS

Thinking of skipping your upcoming dental checkup? Consider it carefully before calling to cancel. Tooth decay is an issue that can quickly take over if not caught early on, as it occurs when bacterial acids eat away at the tooth enamel, creating small holes or ‘cavities’ in the tooth structure. By scheduling regular check-ups with your dentist, you can ensure your oral health and prevent more serious, costly, and painful issues. A regular checkup consists of assessing tooth enamel, existing restorations (crowns, fillings, etc.), and visual changes to your soft tissue. Periodically, you will have an X-Ray to take a closer look at your mouth and teeth structure. “Because early tooth decay is so difficult to see with the naked eye, early signs are virtually impossible to detect without dental X-Rays and visual oral exams,” Andrea Hearn, R.D.H. of Suzuki DMD & Associates explains. “X-Rays will show early loss in tooth density between teeth and under restorations, while exams allow the dentist to use instruments to explore for any weaknesses in the teeth’s surface.” Brushing and flossing daily will help prevent tooth decay, but make sure this practice becomes a habit—and not just the day before the appointment! Changes in sugary or high-acid diets, addressing side effects of certain medications, and using fluoridated 96

oral health products are also important prevention methods. “Patients can significantly reduce their chances of having tooth decay by regular preventive visits to the dentist, including dental X-Rays and following-through with recommended treatment to update failing restorations,” Hearn says. According to Hearn, lowered pH levels in the mouth create a highly acidic environment where cavity causing bacteria thrive. There are several factors contributing to lowered pH including poor oral hygiene, dry mouth, high sugar and carbohydrate diets, as well as medical conditions and side effects of certain medications. “The earlier tooth decay is diagnosed and treated makes for a less complicated procedure to restore the tooth,” Hearn explains. With a combination of a balanced diet, brushing and flossing daily, and regular visits to the dentist, it will be easier to avoid and prevent tooth decay. Has your partner ever worried that you’ve stopped breathing during sleep? If yes, then you might be one of the 18 million American adults experiencing sleep apnea. If you believe you’re suffering from sleep apnea, or have been diagnosed, it is strongly recommended to make some lifestyle changes—including exercise and diet—and wear a CPAP, or participate in Oral Appliance Therapy. Dr. Atwal stresses the importance of good sleep hygiene, which includes avoiding electronics and television for at least 30 minutes to an hour prior to bedtime. This practice creates the optimal sleep environment! Even children can suffer from apneic, and it’s crucial to catch it early on, as not to interfere with healthy and proper development. Dr. Atwal begins screening patients as young as four or five—if they show allergy symptoms or airway obstruction due to tonsils, narrow jaws, and other orthodontic problems. Regardless of age, early intervention and treatment is crucial if you or a loved one believe you’re experiencing suspension of breathing.

SLEEP APNEA A common but serious sleeping disorder, symptoms include snoring, silent pauses in breathing, and excessive daytime sleepiness. The lack of oxygen the body receives can have negative, long-term consequences. Stroke, depression, and heart disease can occur if this disorder is not treated. Common treatments for this sleeping disorder include Continuous Positive Airway Pressure (CPAP), oral appliance therapy, and positional therapy. CPAP is a machine that stays beside the bed and connects to a mask with a hose that you wear at night. However, some prefer a more discreet oral appliance that resembles a mouth guard and prevents the airway from collapsing. This device fits over your teeth and is worn while sleeping. Positional therapy is another common treatment. For some, sleep apnea occurs when sleeping on your back. If breathing returns to normal when lying on your side, Positional Therapy could be your fix. This option works with a device that gently vibrates your sleeping body, to awake you and alert you to change position.

This type of therapy does not use sleeping pills. CBT-I includes techniques for stress reduction, relaxation, and sleep schedule management.
MOVEMENT DISORDERS Sleep movement disorders—like Restless leg syndrome, leg cramps, and periodic limb movements—can occur anytime throughout the night, either preventing sleep or causing you to wake. Restless leg syndrome typically has a feeling of discomfort in the legs with an itching, burning sensation. Sleep leg cramps create a painful feeling in the leg as muscles tighten and contract. Periodic limb movements are typically noticed by others sleeping in the same bed, but can leave an individual feeling tired after a full night of sleep. Treatments for these types of disorders include exercise, consuming less caffeine and alcohol, and talking with a doctor regarding anti-seizure medication. Before taking any medication, make sure to discuss with your doctor the side effects and how they could affect your sleep patterns.

Pioneer St.), the largest of the three venues. Here, plays begin against a gorgeous backdrop of the Oregon mountains, and for evening performances guests can watch the sunset as the play goes on. By the time it ends, you’re sitting under twinkling starlight in an oddly cozy outdoor space. EXPERT TIP: Grab a blanket from concession at the beginning of the show and dress warm, Ashland has cool evenings and those blankets are sold out by intermission. Snacks, beer, and wine are also available at concession.
Theatre-goers from around the globe travel to the Oregon city to watch some of their favorite Shakespearean stories (and other tales) come to life on stage during the Oregon Shakespeare Festival. Running from February to October, the calendar is rather extensive. Many productions play for only a couple months at a time, while others run the length of the festival. The 2017 season runs through Oct. 29, meaning there’s still plenty of time to catch one of 2017’s productions—including Shakespeare in Love, the Odyssey, and Disney’s Beauty and the Beast. The back door is always open so guests can stop in and catch a glimpse of the artists at work, creating extravagant vases and decorative pumpkins in the hotshop. Make it your own adventure by booking a glassblowing class. It’s simple. Call ahead to schedule a time during operating hours (reservations don’t have a guest minimum) for a private lesson. The introductory lessons last about an hour or so during which the shop’s artists help you create a glass piece to take home as the ultimate souvenir.

The story of this humble eatery begins with Kevin Fahey, Owner and Executive Chef. As a child, Kevin’s grandmother instilled in him a passion for the warmth and wonder of the kitchen. Side by side, he would watch as Grandma Sal prepared pastas from scratch, and breathed life into savory dishes with fresh, high-quality ingredients. It was then that Kevin learned how simplicity was key, allowing the ripe components of every recipe to showcase their flavor. His heart set to enter the culinary world, Kevin served his country for six years in the Air Force before following his true calling at the Culinary Institute of America in St. Helena. After honing his skills and working across the country, it was finally time to open his own restaurant, and so Bistro 135 was born. “Bistro 135 brings
a casual setting with an upscale feel to downtown Tracy,” Kevin explains. “We want our guests to enjoy flavors they may find in Napa or the Bay area without having to travel for it.” But there are few who wouldn’t be willing to travel the distance for divine dishes such as the Butternut Squash Gnocchi. “This house made favorite has incredible flavors—sweet and creamy, yet savory.” Kevin describes. “The deep smoky flavor of the chicken is paired perfectly with the subtle sweetness of the butternut squash [gnocchi].” And the Jalapeno & Bacon Mac n’ Cheese is a worthy contender for any hungry appetite, blended with three cheeses, jalapenos, and bacon in a Ditalini pasta. Beyond the bistro’s open-aired interior and back behind the counter sits a wood-burning oven, hard at work
preparing another bubbling pizza for a hungry guest. Such a flavorful addition to the kitchen has brought plenty of popularity for Bistro 135’s pizzas, which are as varied and delectable as the next. House-crafted pastas are another highly recommended dish, prepared with fresh ingredients like cherry tomatoes, mushrooms, or zucchini. Wine sales have hit record highs in recent years, 2016 alone came in at around 238 million cases of wine totaling around $34 billion dollars, according to the Wine Institute. With so many of us enjoying the apparently not-so-rare glass (or bottle), it might be wise to keep in mind a few quick tips and tricks to have us expertly sipping our favorite vintages.
ORDERING.
HOLDING.
Even the most experienced wine drinkers among us can feel intimidated when the waiter presents that long, confusing wine list. Don’t hesitate to ask for recommendations from your waiter, or in more elegant establishments, there’s usually a sommelier on hand to aid diners as they pick the perfect wine.
Start with the right grasp and hold your wine, if in a stemmed glass, by the stem or base. This prevents the warmth from your hand from changing the temperature of the wine and also avoids those unsightly finger smudges.
SIPPING.
Hold the wine bottle at its base, fill the glass halfway to allow the wine to breathe and always pour for others before filling your own glass.
Give your wine a smell before your first sip to enhance the experience of its flavor. Take a modest sip and take your time with it to introduce it to your palette. For ladies, endeavor to sip from the same place on the glass to minimize lipstick marks.
ICING.
TOASTING.
Contrary to what many think, it’s perfectly acceptable to add a couple cubes of ice to wine that maybe didn’t have time to chill to the right temperature. Be sure to leave them in just long enough to cool the wine, and then remove them before they melt.
Always look your toasting partners in the eye when your glasses meet and always take a hearty sip immediately after the clinking commences—neglecting to do so is considered bad luck and poor manners.
POURING.
GIFTING. For most, a bottle of wine is a failsafe gift. Choose crisp white wines like a Sauvignon Blanc in warmer months, and a deep Merlot or Zinfandel in cooler months. For acquaintances, spend around $15 to $20 on a bottle but splurge for close friends on something you know they’ll enjoy.
Whether attending a swanky soirée or mingling with close friends and family, these handy wine dos and don’ts will prove to be valuable tools to keep in anyone’s social skills repertoire.

Taking to Lodi’s picturesque countryside to delight your palette with a day of wine tastings is far from a novel concept. A trip to the family-run Berghold Vineyard and Winery promises not merely savory flavors from some of their finest vintages, but also a surprising delve into history through their extensive collection of rare antiques. The history of the Berghold family name is a serendipitous one. Tracing all the way back to 1600s Austria, it means “vineyard worker.” This correlation is, as Julia Berghold describes, a pure coincidence in life. It had long been the ambition of Julia’s father-in-law, Joe Berghold, to produce his own collection of wines. Having grown and sold grapes to established wineries across Napa and Sonoma counties, the time had come to bottle wine under their own label. In 1999 Berghold produced its Syrah, which was followed by the Viogner in 2001—and by 2005 Berghold had opened its tasting room, where tasters can now experience a wide selection of specialties such as their Merlot, Zinfandel, and Cabernet-Syrah blend. “All are estate vintages, hand-crafted and barrel-

aged in the traditional method,” Julia explains of the wines. Among the most popular are the FrenchOak-aged Cabernet Sauvignon, and a striking Tawny Cabernet Port that was recently added to their repertoire as of last year. When visiting any typical winery, one expects to taste and discover great wine, but this Lodi staple offers more. The collection of exceptional antiques on showcase at Berghold Vineyards proves this is not your typical winery. Guests can sip wines while being escorted through the facility and learn the history behind each unique piece. Pennsylvania, where Benjamin Franklin was a member, [as well as] Pabst carved dining chairs, which are the last existing dining chairs from the Guilded-age.” While most plan to make their winery rounds during harvest or perhaps in spring when the weather is pleasant, it behooves anyone interested in visiting Berghold to plan a visit during Christmastime, when the entire place becomes adorned with stunningly elaborate decorations—including life-size, Old World Father Christmases. It’s this impressive assortment of things to savor, see, and experience that Julia believes compels visitors to keep coming back to Berghold Vineyards and Winery time and again. “It’s not just about wine. Grapes love our Mediterranean climate and rich soil, making us a top producer of nationally recognized and enjoyed wines, and the grapes from which they’re crafted. But, there is more to these refreshing little poppers than just wine. Perfect for snacking and chalk-full of benefits, grapes help you pack a source of micro-nutrients like copper, iron, and manganese—all of which are important in the formation and strength of bones. They also keep your immune system strong with high levels of vitamin C, K, and A, all sure to keep unwanted colds away. Make wine, act as a perfect member of a cheese platter, boost your system, what can’t these grapes do?! Take it further and make a natural facial cleanser! Mash a handful of grapes in a bowl. Add a tablespoon of olive oil, half a tablespoon of milk and baking soda, and mix together to make a rough thick paste. Apply to your face, and after five minutes, wash off with cool water. GRAPE SALAD INGREDIENTS:
1 (8 ounce) cream cheese, softened 1 C. sour cream • ¼ C. sugar 1 tsp. vanilla 4 lbs. red grapes, chilled ¾ C. brown sugar 1 C. walnuts, chopped DIRECTIONS:
In a large bowl, combine cream cheese, sour cream, sugar, and vanilla. If the mixture seems lumpy, stir quickly with a whisk. Carefully fold in the grapes and gently toss until evenly coated. Meanwhile, in a small bowl, mix brown sugar and walnuts. Sprinkle the brown sugar mixture on top of the grapes. Cover and chill at least 4 hours or overnight. SORBET INGREDIENTS:
2 C. water • 1 C. sugar • 4 C. black grapes 2 Tbsp. fresh lemon juice • 1 envelope of plain gelatin DIRECTIONS:
In a medium saucepan combine water and sugar. Heat on medium high until sugar has dissolved. Add grapes and cook on high until grapes start to burst (about 5 minutes - it’s OK if it boils). Remove from heat and take an immersion blender to blend the grapes into chunks (do not completely puree grapes). Pour grape mixture through a sieve and gently press on solids to extract the liquid. Take 2 1/2 cups of the grape syrup and pour into a medium saucepan. Add gelatin and heat on low and whisk until gelatin has completely dissolved. Stir in lemon juice. Pour mixture into an 8”x8” pan and place in the freezer. When sorbet is partly frozen, mix it up and then spread flat again.
