Cashew Ranch Dressing (or Dip) Ingredients: (Makes about 2 cups)
1½ cups raw cashews or macadamia nuts 1-1½ cups water (use less water for thicker dressing) 3 TBSP fresh lemon juice 1-2 cloves garlic 1-3 teaspoons unrefined Celtic sea salt ¼ teaspoon oregano ¼ teaspoon basil (or 2 fresh leaves) ¼ teaspoon thyme ¼ teaspoon mint (or 2 fresh leaves) 1 stalk celery 1 TBSP Tamari (wheat-free soy sauce)
Preparation: 1. Place all ingredients into blender. 2. Blend until smooth and creamy. 3. Allow to sit for 15 minutes, and then shake before serving. Variation: Notes:
Use only a ½ cup water to make a ranch dip This dressing makes a great substitute for mayonnaise!
