Letter from the Editor
Back in October, Noel and I were sitting in the office, chatting about the wedding issue, when she proposed an idea. She had a fantasy of a wedding on the beach with an elephant draped in flowers. Several weeks, many calls with permitters who “didn’t see the humor in the idea,” a couple creative meetings, and endless logistics later, we were watching Tai, the elephant, step out of her trailer at Dos Pueblos Ranch. The result was Wildly In Love (page 38)—not just a surreal wedding, but one with a cause. An event not only arranged to celebrate the couple’s unity but also a day that goes beyond just them. In this case, it was focused on their love for elephants and giving back to elephant conservation. In lieu of gifts, donations to the International Elephant Foundation were encouraged. Having a concentration that goes beyond the couple changes the whole vibe of a wedding—the couple, family and friends feel more connected because they are all a part of something bigger. In this case, Tai was the link between the bride and groom, reconnecting them with nature and reminding them to embrace simplicity. The mood was peaceful, elegant and classic. It was an unbelievable day with everyone who came together to bring Noel’s vision to life. We pet Tai and watched her play in the ocean at sunset, splashing around and totally in her element. I woke up the next morning thinking it was a dream, and then wondering what Dos Pueblos Ranch beachgoers would think of the dinner plate sized prints in the sand. I can only image an actual wedding with an elephant on the beach. I hope this issue leaves you inspired to create your own wedding with a cause.

ai is a 48-year-old female Asian elephant with unique peach colored freckles. This statuesque beauty stands 8’ 8” tall and weighs 8,500 lbs. Her sweet, gentle personality makes her a favorite with people and other elephants. Her diet consists of up to 200 pounds of hay, fruits (watermelon is her favorite!) and vegetables a day. She washes it all down with up to 60 gallons of water. Tai, like many elephants, has had a place of respect in weddings and a variety of events. For many cultures keeping traditions alive is very important to their families. Tai has often been the guest of honor at weddings and many religious ceremonies, keeping Tai and her human friends connected to their heritage. Tai has also enjoyed invitations to weddings for those that simply love and respect elephants. Home is Have Trunk Will Travel Ranch in Perris, California, where Tai lives with her herd mates, Kitty, Dixie, Rosie, and Becky and her human family of 40 plus years. Her care includes daily baths, exercise and plenty of time for play and relaxing with her friends. Tai was born severely pigeon-toed, a major disability in the wild; being unable to keep up with the herd made her a target for predators and put her life in constant danger. With a healthy diet, vitamins, exercise, and specialized pedicures Have Trunk Will Travel was able to correct her gait throughout her life. Tai had a growth spurt in her late thirties and it was discovered that one leg was shorter than the other and it was becoming more pronounced as she aged. Her family at Have Trunk will Travel along with Joe DeMarco, Master Orthopod and veterinary specialists started research to design and develop elephant orthotics. Her gait is now smooth and she walks comfortably and confidently. Tai and her herd mates also participate in health research that benefits other elephants. An example is a water absorption project. The elephants were given a shower, then had cups placed on various parts of the body to measure the water absorption rate. The data was used to determine where to place man-made water sources for African elephants during a drought… Asian elephants helping African elephants. Asian elephants are endangered simply by loss of habitat. Tai is an ambassador for her dwindling species; she is one of about 29,999 Asian elephants left on earth. She uses her celebrity to bring attention to the plight and struggle against man’s urban development and the decreased safe environment for elephants in the wild through awareness and education. The International Elephant Foundation (IEF) is the elephant charity that Tai supports. Over 90% of donations go directly to a project that helps elephants. I’m a vodka soda type of girl, but as I lay eyes on shakers in mid flight, and a bottle of Ketel One juggling in between, that begins to change. This bartender is giving a spectacle that is not only turning heads, but making me second guess why I ever settle for Tito’s, soda water and a lime. Ivo, creator of Flair Project, makes one thing known—crafting cocktails is so much more than a glass, a pour and a delivery. Exuding personality, he has mastered the true spirit of quality service and mixed drinks. His routines embody efficiency, entertainment and, well, practice. Ivo’s presence is captivating, it’s easy, it’s fun. “The number one thing people say is, you really love what you do. When you do what you like, it’s hard to hide it. People can feel it,” he explains in between throwing a cherry behind his back and laughing. His disposition is genuine, and rare and I want him bartending at my own wedding.
The craft cocktail, the personalized experience and the ultimate entertainment are what make Flair Project so distinctive. With their firm mentality to not just serve, creating an authentic relationship with guests is just as crucial as putting on a show. His team creates a customized bar concept and cocktail menu depending on the theme, venue, city, and soon to be Mr. & Mrs. Although the bar isn’t always a top priority when planning one of the most important days of your life, the clinking glasses and exceptional cocktail flavors bring guests together, and definitely aid in generating *relatively* killer dance moves. Weddings celebrate a love that is portrayed in each minute detail, and Ivo voices “Why not make the bar special too?” As I look down at the ice layered on the pristine glass I savor the last drop. I am no longer a vodka soda type of girl.

A stir and a garnish later, my drink is placed on the sleek bar top with a liveliness that outdoes the typical encounter of a person, a drink and a bartender. My cocktail is vibrant, with fresh ingredients. A few post worthy snapshots later, my taste buds are calling on me to take my first sip. I’m suddenly in a great mood. It could be because of the soothing aftertaste of the puree drizzling smoothly down like a promising potion, but the vitality surrounding me is surely the reason.

Oh-So-Sweet Treats: Wedding Dessert Trends That Will Wow Your Guests By Jennifer Arreguin and Natasha Burton Unless you have a serious sweet tooth, chances are you'll spend more time crafting the perfect wedding menu than dreaming up drool-worthy desserts for your loved ones to enjoy. But your big day confection shouldn't get relegated to just another to-do to check off your planning list— the dessert you choose can make a major statement and even make your wedding more fun. (Plus, who doesn’t love noshing on a variety of delicious treats in order to make your final decision?) Here are five delectable ideas that are trending in 2017 for you to consider as you choose what wedding sweets to serve.
Take your cake up a notch
If you love the idea of serving a traditional wedding cake, you should know that you have a ton of creative options for making your dessert look incredible. This classic confection is anything but boring when you ask your baker to incorporate cool effects with edible artwork like glitter— perhaps a gold sparkle effect on buttercream—watercolor or metallic stripes. The result will be almost too pretty to eat. Almost.
Make everything mini
Dessert bars are a wedding trend that's here to stay. Make yours stand out by serving mini treats like lemon bars, fruit tarts, donuts, cupcakes— you name it. Guests will get to sample a little bit of everything and you won't have to make tough decisions about what kind of dessert to serve.
Share local specialties
Let your wedding venue or city guide your dessert decision-making so you can introduce your nearest and dearest to the local specialties. Get wedding day ready with these three simple strategies! Eat More Produce. In order to look your best on the big day, ditch the processed food a few weeks beforehand. Stored carbohydrates in the body retain water, which is what makes you bloated. Swap: Rice, junk food and crackers for sweet potatoes, roasted veggies, spaghetti squash, and mashed cauliflower.
Increase green tea consumption. This is time to load up on the beauty boosting magic known as green tea. Green tea has a high concentration of polyphenols which are powerful antioxidants. These antioxidants reduce oxidative stress, which help to slow down signs of aging, fight chronic disease and increase energy. Green tea also stabilizes blood sugar levels, helping to avoid that late afternoon crash when blood sugar is low. Try: Un-sweetened green tea with lemon.
Perform strengthening and stress reducing yoga postures. Wedding season can be a stressful time. Performing just a few yoga poses will increase circulation, improve balance, reduce stress, and tone the entire body. Whenever you have 5 minutes, take time to do a few poses.

DISH IT UP Ingredients: 1 vanilla bean 3/4 cup sugar 7/8 cup butter, softened 1 1/8 cup all purpose flour 3/8 cup almond flour
Directions:
Mix all ingredients together in a bowl, it will be soft and soggy.
Pour the dough into a piping bag with a star nozzle.
Make 2 inch diameter circles, 1 inch apart on a baking sheet.
Bake cookies at 400 degrees for 6 minutes or until golden brown.
Remove from oven and let cool.
