Sapporo Sauce Asabu Art Mart On Sunday, November 29 and Monday, November 30, Asabu hosts its popular Art Market. A great chance to do some early Christmas shopping, the market features all manner of handmade products including knitwear, leather goods, Japanese antiques, stamps, Kimonos, paintings, clay pottery, silverwork and much more. The event is open from 10am until 5pm (4pm on Monday) and is located across the road from Asabu Daiei supermarket, at Asabu Gallery, North 39, East 5 (麻生ぎゃらりぃ,札幌市北区北39条西5丁 目ダイエー麻生店向かい).
Paul’s Belgian Beer Festival Local Belgian bar impresario Paul de Coninck appears to be on something of a mission lately, to increase the quality and variety of beer available to Sapporo
residents. Last month Sapporo Source was invited along to his Big Bottle Tasting Event where no less than 15 different Belgian beers (some as strong as 9.5%) were consumed in considerable quantities. We’d like to tell you more about it, but frankly we only have a vague recollection of arriving and after that everything starts to blur. If you missed out, don’t worry...on November 23 (a public holiday), Paul will be holding his fifth Annual Belgian Beer Festival. With 10 Belgian draught beers on tap, food and souvenirs (including your own personalized bottle of beer to take home with you), it promises to be a memorable event, although that said, you probably won’t remember much. Note that this event is not held at Paul’s Café itself, but at the Hotel North Inn Sapporo (North 4, West 7). Doors open at 2.45pm
for a 3pm start, and the event will run until around 7pm, so you’ll be able to get home in plenty of time to sleep off the effects before going back to work the next day. Tickets are 5,500 yen, which given the cost of importing high quality Belgian beer and the length of the event, is very reasonable.
Festive Season in the Park Odori Park will be lit up, as it is every year around the Christmas/New Year period, with its annual white illuminations from November 27. On the same day, the Sapporo German Christmas Market will also open with food, drink and a selection of festive items for sale.

November is a bit of an awkward slot in the Sapporo calendar. The decent weather is long gone, but the snow and winter sports season haven’t yet arrived, so there’s not much worth venturing outside for. What better then than an arts festival to occupy the entire month until December comes along, the streets start to turn white, and the “bonenkai” drinking festivities kick into full gear. Now in it’s fifth year, Sapporo Art Stage is a relatively new festival. Split into five distinct parts, the event covers music, visual arts, and theater. And of course, being Sapporo, it wouldn’t be complete without an opportunity to do a bit of shopping along the way. You don’t even have to make a special effort to attend, because several of the locations are places where you may just come across something creative taking place without even looking for it.
Drawn from a broad cross section of local talent, more commonly seen performing at the city’s live houses, Cross Road Live! puts them right in the heart of the action, in two downtown performance areas. Odori and Sapporo station concourses are the venue for these daytime gigs. Whether you’re just passing through, or coming to see the show, they’re worth checking out. It might be potluck what you see, but with 30 artists performing, there’s bound to be something to please everyone. All performances from 14.00 – 17:10

The 500 Meter Museum As anyone who has lived through a Hokkaido winter will attest (especially if you’ve ever slipped on the icy streets) the decision to build large swathes of the downtown area underground was a stroke of genius. One such stretch of subterranean real estate lies between Odori Station and Bus Center Mae on the Tozai Line. An underground access tunnel connects the two stations, saving many a salaryman from having to wring his socks out during his lunch break. For most of the year, this well lit, but rather bland walkway serves a purely utilitarian purpose. But for the duration of the festival all five hundred meters are to be turned into a free-to-view, walk-in gallery. Art works by 15 professional artists and 200 selected works by local amateur citizens will be displayed, including paintings, sketches, photographs and sculptures.

There’s a varied program on offer from opera to puppet shows, and comedy to heavyweight drama. Lau On November 3, contemporary celtic folk band Lau come to the PATOS Hall for a one-off gig as part of the Art Stage festival. Two-time winners of Best Group (2008, 2009) in the BBC Radio Folk Awards, the band combine three of the foremost exponents of "modern traditional" Scottish music. Kris Dever (guitar, vocals), Martin Green (piano accordion) and Aidan O'Rourke (fiddle) have already played to sold out venues in Tokyo and put on an explosive live show. With influences and other styles woven into their performance, from Balkan dance to American jazz, this is a concert worth checking out even if you're not normally a folk music connoisseur. Art Meet Mart On Sunday, November 1, between 10am and 5pm, Sapporo City Hall (see our downtown map if you’ve never been there) will devote its spacious first floor and basement for a one day event comprising an art mart, flea market, fashion show, live music stage and fresh produce fair. There will also be a number of workshops running throughout the day.
Workshop 1 Special Effects Make-up Workshop Professional make-up artist Hideo Yoshida demonstrates a number of make-up techniques including creature effects and injuries. 10.30, 12.00, 14.00 – Limited to 10 people per session, lasts for 1 hour
Workshop 2 “Let’s Make Fluffy Sheep” This wonderfully titled workshop is actually an exploration of using lamb’s wool as a recyclable art medium. We were going to give it a more serious name, but the title we were provided with was so charming that we didn’t have the heart. And it’s a baaaargain at only 500 yen for the materials, so there’s no chance of getting fleeced. [You’re fired – Ed]. 10.00, 11.00, 12.00, 13.00, 14.00, 15.00, 16.00 – Limited to 30 people per session, lasts for 1 hour.
Workshop 3 Kirie Art Kirie is the Japanese art of paper cutting. Paper artist Takayki Sato will teach the techniques for making animals, insects and other interesting figures in minutes. Attendees will be given an original Sato cutout to take home. Rolling workshop: Anyone can join at any time.
Sapporo Schools Music Festival Schools from around Sapporo perform at Sapporo Concert Hall (Kitara) in Nakajima Koen on Sunday, November 14. Orchestras, choirs and and groups from selected elementary, junior high and high schools will be taking part. The event is entirely free of charge and starts at 10am. You can enter at any time during the day and stay as long as you want.

Nina Fischer & Maroan el Sani ニナ・フィッシャー &マロアン・エル・サニ Nina Fischer and Maroan el Sani are an artistic partnership that stretches back to the early 1990s and have a produced a prolific body of work including short films, documentaries and photography collections. They are also well known for their thought provoking film installations and have had a number of books published of their art. Dividing their time between Berlin and Sapporo, they both hold teaching positions at the recently established Sapporo City University, and have collaborated with local Japanese artists and filmmakers on their recent projects. Source: So, how did you end up working in Japan and in particular Sapporo? MeS: The first time we came to Japan was in ’95. We were invited to Korea for a big exhibition in Gwangju. It was the first contemporary art biennial in Asia. A journalist in Tokyo said, ‘why don’t you come over after the show.’ So we traveled to Japan on a boat and he introduced us to some people from the art world over here. NF: And we came to Sapporo because we have a friend here who is a professor. He asked us a few years ago if we would come to Sapporo to start a new university, and if we would like to teach. We came over for the premiere of a movie that we shot in Tokyo and at that time some people came down from Sapporo to meet and get to know each other. We liked the idea from the beginning, but it still took more than a year for the
decision to be taken, and then another year before we came over to work. MeS: Yes, we moved to Sapporo from Berlin in 2007. Source: Aside from a number of exhibitions in Tokyo featuring your art, your first major work in Japan was the documentary “Tokyo Star” examining Japanese pop culture and the process of creating Japanese pop stars and ‘idols’. How did that come about? NF: When we came over in ’96 and ’98 we were interested in the singers and musical artists here. Many of them are very famous in Japan, but unlike singers from the ’States and other parts of the world, we never hear about them in Europe. MeS: Japan buys 80% domestic music, so we were interested in the process by which the industry raises their pop stars. NF: We had a nice connection to Sony Music and they invited us to go and see some of the development of upcoming artists. We stayed about 4 or 5 months. We also went to a talent academy to meet some of the young children and their parents and met them several times as they auditioned or entered contests. Source: As artists yourselves, did you ever feel that this idol creation process has taken all the art out of the music industry? NF: Well, this process is put together by many other creatives who have to figure

out how to make the project successful and devise a strategy, so I found it quite interesting. MeS: There are two different categories, “artist” and “idol”. An artist is someone who writes their own songs, and decides their style and genre, whereas the idol is completely produced. Sometimes at the start, their direction is not chosen, but during their education and training it is decided whether they will become an idol or not. Personally, we tried not to take a position. Of course we have our own view about it, but during editing we decided not to provide a voiceover or judge whether it’s a good or bad thing. Source: It certainly is a fascinating insight into evolution of new idols. I hope that perhaps in the future there will be another opportunity to view the film at a screening in Sapporo. ARTS SPECIAL time we met was last year at the screening of your film “Spelling Dystopia”. How did that project come about? NF: After the [Berlin] Wall came down, we went into east part of the city and everything was empty. We organized a bar in an empty building from Thursdays to Sundays and were projecting our films and had artist friends coming over, and music, and this went on until the mid-90s when the buildings were given back to the original owners from before the war. So we are interested in this idea of empty spaces and abandoned places. Source: So the idea of visiting this abandoned island, goes back to your experiences at the end of the Cold War in Germany?

NF: Yes, we wanted to make a film about the shift of the collective memory of the island of Gunkajima [the popular name for Hashima Island]. In order to realize the project we had to persuade a number of authorities to allow us to shoot, but we got great support in both Sapporo and Nagasaki. Another important part of the project that we can’t put a value on was the cooperation of Hiragishi High School. The teachers arranged for us to be able to shoot with 3 different classes on a single day on the sports field, and we did a workshop with the students. It was really nice.

Source: Moving on from past projects, what are you currently working on? NF: We have one project in development right now, but it’s too early to talk about it. We’re also going to be taking part in a panel discussion later this month to talk about independent film production in Japan, and we are planning a workshop at the end of November for young creatives in Sapporo in conjunction with Intercross Creative Center and the Sapporo City University. Tokyo Star Tokyo Star focuses on the creation of “idoru” in Japan. The film follows the lives of six teenagers living in Tokyo, who are being groomed for the life of a pop star or idol. We watch them go through the various stages of apprenticeship, debut and the early part of their career as well as see the development of their identity and sometimes artificially created image. But what will remain in the end? A product or a personality? (source: text by Fischer/el Sani 2004) The film is particularly notable for featuring Japanese pop icon Mika Nakashima (pictured) while she was an unknown teenager seeking fame and fortune. Since the film was made Nakashima has achieved 5 Number One albums, ten Top 10 albums and over 30 single releases in the Japanese charts.

Spelling Dystopia Hashima Island is a man-made artificial island built from concrete, which was a newly discovered construction material in 1916 when construction started. Until 1974 it was a major coal mine. During World War II it was converted into a work camp for prisoners of war from Korea and China and later in the ’60s it became the most densely populated place on earth. With dimensions of only 160m x 450m the island was inhabited by over 5,000 people. After the mine closed, the island was abandoned but in the year 2000 the island was used as a location for the sequel to the Japanese blockbuster movie “Battle Royale”. The younger generation now knows the place mostly from movies, manga and video games, as an abandoned ghost island. The film combines the memories of a former inhabitant of the island - the son of a coal miner, who lived on there until 1974, and who is leading an effort today to preserve Hashima as a world heritage site, with the narration of two high school students who recall fragments of the movie “Battle Royale”. The narrative creates an effect where the island appears almost as a fantasy; an imaginary playground for their games, where various images and layers of reality and fiction merge. Masaki Kurita 栗田 正樹 Masaki Kurita, 56, has always had art inside him, but the path he took to finally establishing himself as a full time working artist was a long one. One of his earliest memories as a 5-year-old child is the ambition he had to become an artist, but real world influences led him to consider the more commercially viable route of industrial design and architecture. During his youth, he studied to become an architect at Hokkaido University, but by his own admission “I played too much tennis”, and dropped out of the course, instead switching to study metallurgy. Five years on he rediscovered his enthusiasm for academia and was accepted to the highly prestigious Waseda University in Tokyo, graduating a few years later with a Masters Degree in Architecture. However, despite the young Kurita being in demand with local architect firms, he found it hard to settle and switched companies 3 times in 5 years. It was during his third stint as an architect
for natural wood homebuilder Sweden House, that a chance encounter would shape his future. Working in a show home during a shortage of sales staff, he met a young entrepreneur who was interested in building a new headquarters for his successful IT firm. The man was looking for an architect with knowledge of wooden construction. In the end, the project didn’t go ahead, partly due to the city government’s obsession at the time with reinforced concrete, but the two men stayed in touch. Kurita worked for his new friend for several years until 1995 when the company opened a new studio dedicated to the emerging art computer animation and was looking for someone to come and manage the computer systems. This gave him the chance he’d been looking for. Not only did Kurita have an opportunity to gain experience in this new media (leading to him producing some pioneering work for television), but the job also entailed long periods of waiting while the slow computers of the day rendered
each individual frame of animation. During this time he could sit and sketch, honing his more traditional hand drawing skills. Kurita left the firm in 2000 to become independent but still occupied a small area of their office, to produce his own work. Two years ago, he moved to his own small office in Intercross Creative Center, the Sapporo City sponsored creative incubator where he has finally found the freedom to create his current, more abstract, purely artistic works. We asked Masaki about the work he creates now, and what inspires him. “I really don’t know”, he said. “I just draw what comes to me. Even after I’ve finished, I don’t always know whether my pictures have a meaning.” With several exhibitions around Japan and books of his work already published, Kurita recently realized his dream to publish a book dedicated to the study of color-blindness – a condition, which perhaps surprisingly for an artist, he himself suffers from.

Baku Maeda 前田 麦 If you picked up last month’s Film Festival Special Edition of Sapporo Source, you’ll already be familiar with the work of Sapporo-based illustrator Baku Maeda, 34. It was his beautiful image that graced the cover of the magazine and was the striking visual identity for the film festival this year. Maeda is another artist who took a slightly roundabout route to finding himself where he is today. The difficulty of making money from art, and a certain amount of parental pressure at the time meant Baku studied economics at university with a view to pursuing a more “regular” line of work. His first wish was to become a comic book artist, but he became interested in computer graphics in college. During his senior year, he designed a piece for Town Magazine, a network of publications featuring local attractions in Japan – it was his first paid job, and made him realize that he could actually make a living doing what he really wanted to do. After a period of working for a website production company, he became fully independent in 2005. His recent work includes magazine covers, ticket designs for local soccer team Consadole Sapporo and professional baseball team Rakuten Eagles, character design for “Chibi Nacs” a television animation, and a TV advertising project. Although Maeda lists Osamu Tezuka (Astro Boy) and Katsuhiro Otomo (Akira) as his influences, he has clearly developed a number of his own individual and distinctive styles. His work has been exhibited as far afield as Manchester, England, and he recently staged his first solo exhibition “No Concept” in April of this year.

This month, Debito examines the role of humor in our lives... Look at my photo above. I look like a real sourpuss, don’t I? [No comment – Ed] But don’t judge this puss by his fur. I am in fact the Cheshire Cat – a man who smiles and laughs a lot. In fact, without humor, I think we would all go insane. Humor is a funny thing. Nobody can exactly define what a “joke” is, why something is “funny”, or how one develops or cultivates a “sense of humor”. But we all know its effects. Humor, as you know, causes that wonderful instant reaction where you lose control of yourself – and emit a smile if not a full-on loud laugh. The longer you laugh, the better you feel. It is a catharsis. You can tell when somebody’s been under a lot of stress lately when they laugh long and loud even at the lamest joke. Why? Like a volcano erupting, laughter releases the toxins of stress that build up in this modern world. But it goes beyond that. Consider the power humor has over us. There’s the “likeability” quotient: We might dislike a politician or opinion leader, but one good gag from him and suddenly he is “charming”. Televised debates in Japan must have the occasional joke or they get overbearing – viewers crave that spoonful of sugar for entertainment value. I know at least one politician who gets elected on amusing charisma alone. And look how much pressure is on Democratic Party of Japan’s Okada Katsuya just to smile! There’s the popularity factor: Have a good jester attend a soiree, and suddenly he’s the “life of the party” and soon invited back. Remember your Class Clowns of yesteryear? (It’s easy to, isn’t it?) They often go on to bigger things. Some of the richest people in the world are comedians, literally laughing all the way to the bank. Humor even influences love. One common reason for choosing a spouse? “He makes me laugh.” Humor is also a powerful analytical tool. Consider one variant – irony – and the social
service it provides. For example, listen to what comedian Stephen Colbert said about former President Bush in 2006 during a speech at the White House: “The greatest thing about this man is that he is steady... He believes the same thing Wednesday as he did Monday, no matter what happened Tuesday.” Not only did many laugh at that, but some also realized the emperor has no clothes. A joke can penetrate farther into the psyche than reams of political commentary. Public figures: alienate the stand-up comedians at your peril. In Japan, however, the lack of irony as a source of humor severely impairs political analysis (one exception: outstanding political impressionist group Newspaper). But not to worry: Japan too has its fount of silliness and wordplay. Thanks to a language replete with homophones, and a set time and place for laughter (be it manzai, rakugo, or konto), Japan has no shortage of belly laughs. Humorwise, I am at home here, being an incorrigible punster (so don’t encorrige me!). In fact, bring out the booze and the stereotypes of the sexes and suddenly you have an evening of mirth and jape. Although Japan sometimes seems to have rules just to spoil your fun, it sure knows how and when to let loose and party. And laugh. Back to my personal relationship with humor. I talk about serious topics every single day on my blog, Debito.org – so much so that people have said I depress them, and they ask why I don’t depress myself. Easy. Every single day, for at least an hour a day, I find something that is funny. I own all of South Park, a show that defies gravity by getting better over the years. I collect The Simpsons, King of the Hill, Monty Python, George Carlin, Stuart McLean, and Robin Williams. I subscribe to comic books and Britain’s Private Eye
magazine (with so much irony you can’t take regular articles seriously again). I get silly in conversations with friends, and try to work in the occasional dirty joke. I guffaw at night and get back in my groove by morning. So should you. As people who can understand English – and that means you, readers of this column – you can tap into a wellspring of well-developed humor culture, including racial and ethnic humor, accents, sarcasm, and no-holds-barred parody. Take advantage of it. Because it is the people who do not laugh and erupt in small doses who wind up erupting in large doses – rending asunder all around them. The humorless never let themselves lose control however momentarily, and they smother their soul in the process. Beware: It is the soulless who make the most inhumane decisions. Consider the company of some humorless historical figures: Spain’s Franco, Zaire’s Mobutu, Zimbabwe’s Mugabe, Turkmenistan’s Niyazov, Burma’s entire ruling junta. Not to mention Hitler, Stalin, Mao, and the Kims. I agree it’s certainly less enjoyable to be laughed at than laughed with, but the people who cannot laugh at themselves are the ones who, given enough power, actively stop anyone poking fun at them. Those paranoid about not being taken seriously are the ones most likely to become dictatorial, suppressing their public until they are straddling their own political volcanoes. Yet all you have to do is laugh at them, and the walls around naked emperors come crashing down. Humor is what will save mankind from itself, for it rehumanizes people and puts things in perspective. So, everyone, every day find a way to laugh yourself silly. Even if it means just going down to the beach alone and sniggering at the seagulls. It’s good for you. No matter what’s bothering you, I guarantee you’ll have the last laugh.

working abroad, I’m often asked the question, “what is Australian cuisine?” At this point, I have two options: tell the truth and say that we don’t have any, or make up some nonsense about our cusine being as multi-cultural as our country. I remember a couple of Australian cooks that I knew in Nagoya many years back who applied for specialist work visas on the grounds that, as Aussie chefs, they could prepare Australian cuisine. They were refused. Would an
Indian chef suffer the same fate? I doubt it very much. Indian food, with its luxurious aromas, spices, flavours and textures is amazing and makes me – as an Australian – quite envious of its rich heritage and history –something we can only dream about. Sure, Japan has its own version of the curry but it’s fairly generic. Even in Hokkaido, where soup curry is a distant cousin of its Indian counterpart, there really is no substitute for authentic Indian curry.
Our guest chef this month is Paveen from Taj Mahal, a local group of Indian restaurants, largely responsible for introducing Indian food to an entire generation of Sapporo residents. Born and bred in New Delhi, Paveen spent three years at culinary school studying to hone his cooking skills before starting work as a chef at the Le Meridien Hotel, Delhi and then moving on six years later to the Delhi Oberoi; “Both 5 star hotels”, as he proudly points out. He’s not shy to admit that becoming a chef is all he ever wanted to do. “Cooking

is my hobby as well as my job”, he says. “When I was younger, back in India, my mother used to make such good food all time and it made me curious. I used to ask her why she put this spice or that ingredient into the dish. She told me that cooking comes from the heart”. Arriving in Sapporo about 18 months ago, Paveen is a relative newcomer to the city but has already stated his intention to stay as long as he can. He works as the executive chef for Taj Mahal Group overseeing more than half a dozen restaurants. His calm and softly spoken demeanor belies his burning passion for food. “When I’m at home I’m always thinking about new ideas. I enjoy cooking fusion style dishes, such as combining Italian pasta with traditional
Indian methods in order to create something new”. Keen to pass on his experience and skills in Indian cooking, Paveen also teaches at a local cooking institute, teaching young Japanese soon-tobe chefs about the traditions and techniques used his home country. He also gives his time every week to teach retired Japanese citizens how to make various curry dishes. “They’re really enthusiastic. Last week was keema curry and next week we’ll be making okra curry, bhindi style. It’s great fun, and often my students come to the restaurant to see me and have some food”, he says. I asked Paveen what surprised him most about Sapporo when he first
arrived. “Mainly the people”, he mused, “they’re very friendly, but disciplined. I’ve felt very welcome here, and I admire their way of doing things. Oh, and the snow, of course!” With the average high temperatures in Delhi never dipping below 20 degrees and peaking into the 40s during the hottest part of the year, I can only imagine how much of a change a Hokkaido winter must be for someone from India. So, where does an Indian chef in Sapporo go in his own spare time when he goes out to eat? I asked the question and the response was immediate. “TK6!” came the firm reply. “Really?” “Really! I love western food, especially steak.”

As a chef you take compliments anywhere you can get them, and from an experienced hand like Paveen, this was high praise indeed. I completely forgot that I was supposed to be interviewing him, and we sat for a while chatting about some of the dishes I’d been making recently in my own kitchen, until it was time to leave. Paveen has given us a recipe this month which is his own variation of the classic Chicken Curry and just the thing for those cold winter nights that are rapidly rolling in. Having tried this myself, I can heartily recommend it. The important thing is to follow the steps exactly as outlined as timing is of the essence. But trust me – this is a recipe you will find yourself making again and again.

Chicken Curry (serves 4) Ingredients:

500g Boneless Chicken, cubed 300g Onion, chopped 250g Tomatoes, chopped 10g Ginger, chopped 10g Garlic, chopped 2 Bay Leaves 4 Cloves 2 Cinnamon Sticks 4 Green Cardomon 6 Whole Black Peppercorns 1 Green Chilli, halved into strips 50ml Yoghurt 75ml Salad Oil 300-400ml Water ¾ tspn Tumeric powder ½ tspn Paprika powder ¼ tspn Garam Masala powder 1 tspn Cumin Seed Salt to taste
1. Heat oil 2. When hot add whole spices*and sauté for three minutes 3. Add chopped onion and sauté over a high heat until golden brown (7-8 mins) 4. Add ginger, garlic and sauté until aromatic 5. Add tomatoes and mix 6. Add yoghurt and mix 7. Add powdered spices and simmer for around three minutes 8. Add chicken and sauté, then add salt and water 9. Add green chilli 10. Do not boil, reduce the heat and simmer for 10-15 minutes *Leave whole spices in the curry when serving.

Wine expert Mick Nippard advises on what to drink this month. The biggest wine event happening in Japan this month (and arguably in any given year) is the arrival of Beaujolais Nouveau 2009. New Beaujolais! You can join the craze any time after the official release date –always the third Thursday in November– for around 2000 to 3000 yen a bottle. Or if you’re really feeling thirsty, a small oak barrel or 4 liter cask may set you back around 10,000 yen or more. If you just want to experience the taste without the cost, I’m told that some AEON stores are offering a 750-ml plastic bottle at a bargain basement price of around ¥1,800. The strong yen, discounting and the plastic bottle helps to save on the freight costs so that’s probably about as low as you can go. So what’s all the fuss about, especially in a country as far from France as Japan?
I am at a bit of a loss to explain it, other than excellent marketing on the part of the French, and Japanese wine suppliers! The drink itself is as simple as wine can get. It is literally picked, fermented, fined, filtered and bottled all in a matter of days. Transportation to Japan adds around 400 to 500 yen to the end cost. Wait 6 months for it to mature and you waited 5 months too long. It’s made for immediate consumption, so drink up! Thanks to the time differences Japan gets each year’s fresh batch of Beaujoulais Nouveau before just about any other country in the world. And don’t they love it here! In 2004 Japan overtook America as the largest Beaujolais importer. In 2003 717,000 cases (8,604,000 bottles) were flown over, and thanks to a great vintage (and a good deal of hype) it sold out within days! By the
next year, this had grown to a staggering 12.5 million bottles. Since that peak, the total quantity of Beaujolais entering Japan has fallen, but the country will still guzzle its way though over 6 million bottles (estimated) this year. And by all accounts the 2009 promises to be a good one. France has had a lovely summer, which is certainly more than we had here in Sapporo. But the big question is, what does it taste like? Well, if I’m honest I’m not the biggest fan of such young wines. If I wanted to be mean, I would say that it reminds me of weak red cordial with a mild hint of alcohol. But the fact that it isn’t a heavy wine, most likely suits the Japanese palette, which could go some way to explaining its enduring popularity. Strawberries are often used to describe the fruit characters in the nose. Just chill it down and drink it up!

Restaurant Review: MARU:NI Secreted away in a refurbished house on a busy street, maru:ni opened its doors in November 2007 and in just two years, this charming place has become one of the most reliable French restaurants in town. The first floor is a retail space where European imports are on display. A glass doored wine cellar behind hints at the fact that the restaurant is owned by well-known Maruyama wine shop owner Shohei Imamura. Climbing up the steep stairs to the main dining area on the second floor feels like ascending a rustic cottage in southern France. The upstairs décor at maru:ni however, is modern and stylish and there’s even a cozy attic space on the third floor which has a communal table seating eight. Chef Akihiro Nagao started his kitchen career as a high school senior. Apprenticing
for legendary local Yoshokuya “Chez Minagawa”, his aspiration for French cuisine took him to Paris, and finally to Ville d’Avignon, a beautiful Southern French town where he worked for several years. His approach is down-to-earth. “Novelty fades quickly,” he observes. Continuous improvement and reinvention has been a core spirit in his culinary philosophy. “I would rather perfect the same standard dishes and just add a new twist each time”. This combination of staple cuisine combined with his own innovation means that standard bistro fares are elevated to well crafted set pieces at maru:ni. Signature dishes you might want to try include soupe de poisson, roasted Sangen buta shoulder, duck roast, and fois gras terrine with house made chutney. Very recently I discovered another treasure, beef tongue with red wine sauce. Hearty fromage de tête has many fans here, all of whom appreciate the
delicate and complicated preparatory work, which takes a number of days. For a first time diner here, the course menu is an easy choice. For lunch they have petit lunch(1,500 yen), maru:ni lunch (2,500 yen) and Chef ’s omakase (4,500 yen). For dinner, petit dinner (2,800yen), and several Chef ’s selections (omakase) ranging in price from 3,800 to 8,000 yen for the course menu. As you may expect with a restaurant owned by a local wine aficionado the cellar is particularly well stocked with well over 1,000 labels to choose from. The low end starts in the 2,000 yen range and there are some very good selections for around 4,000 to 5,000 yen per bottle. Many regulars here are wine connoisseurs who frequent Imamura’s “Maruyamaya” wine shop, but wine novices and the cost-conscious can also get assistance in choosing something suitable. The cheerful sommeliere will find you a perfect glass or bottle depending on your mood, preference or budget! Service is proper yet friendly. With soothing soft jazz as in the background the room, decked out in white and brown, has a lively vibe. Restaurant Review: Jacksonville Finest Burgers If your idea of going out to eat means heading for the well-trodden Odori area, it might be worth broadening your horizons a little. About twenty-three blocks further north would be a good place to start. Tucked away on a fairly quiet side street, about two minutes walk from the Namboku Line’s Kita nijūyo jō station, Seiichi Kanada’s burger joint is easy to miss if you’re not looking for it. Which would be a shame, because this little diner is gaining a good reputation amongst both local Japanese and foreign residents; particularly Sapporo’s American population, keen for a taste of ‘back home’. So what does a Japanese guy know about American food? Well quite a lot as it happens. At the age of just fifteen, Seiichi’s parents packed him off overseas to attend American high school. This wasn’t an exchange trip for a few weeks, or months; he literally left Japan to complete his education in the good ole US of A – and what a good thing for us that he did.
Speaking almost no English, he found it tough going at first, but after a brief stint in California, he moved to Jacksonville, Oregon, where a kindly teacher by the name of Larry Smith gave him a home and helped him to settle. It’s clear during his account of his life overseas that Mr. Smith made a crucial contribution to Seiichi’s American experience. Relatively cut-off from his family and friends back home (the modern conveniences of the internet and mobile phones not yet being available) the young student turned to the older man for help. “He was a really nice, really patient guy and he sat down and helped me with the language and culture, and things started to turn around from there”, remembers Kanada. After three years at St. Mary’s High School a few minutes drive from Jacksonville, Kanada graduated and moved to Rocky Mountain College in Billings, Montana, but given the name of his restaurant it’s obvious that his heart still lies back in that small Oregonian city. On his return to Japan, Kanada spent several years in the IT sector, including a stint in Tokyo at a time when there was a “gourmet burger” mini-boom. After
heading back north to Sapporo he couldn’t find the taste he craved and decided after much consideration to set up on his own. And so, “Jacksonville Finest Burgers” was established, and this month celebrates its first anniversary. The menu is simple: five burgers, two sandwiches and a choice of toppings and sides. However, the spartan selection belies the effort that goes into each plate. The burger patties themselves are made from a house blend of classy Japanese Wagyu and good old Aussie beef. 100% meat – no crumbs, no binding, no filler – nothing gets added. The meat is chopped using a hand cutter rather than minced which gives the burger a more substantial, juicier and considerably more enjoyable bite, and is then char-grilled. A plain hamburger is 760 yen, with the cheeseburger, avocado burger, bacon burger and Mexican burger all priced at 890 yen. Extra toppings can be added as per customer requirements. Burger buns are made specially to order, based on JFB’s own recipe, and the sauces, salsas, pickles and other dressings are also made in the kitchen. All meals come with a side of fries; onion rings are also available. Drinks on offer include the standard soft options, plus American Pink Lemonade and Dr. Pepper. Draught beer is courtesy of Sapporo, and bottled beer comes in the form of several American labels including Oregon’s own Henry Weinhard and Boston’s Sam Adams. You might think that it’s not worth the trip to North 24 simply to eat a burger. You’d be wrong. Good, simple, tasty food, well prepared by a friendly, chatty owner in a comfortable little eatery is certainly, for me, one of life’s most enduring pleasures. Inglourious Basterds (coming Nov 20) Quentin Tarantino roars back to form in this fictional tale set in World War II. A teenage Jewish girl, Shosanna Dreyfus (Mélanie Laurent), narrowly escapes with her life after her family is brutally killed by Colonel Hans Landa of the SS. Four years on, under a new identity, she is running a small cinema in Paris when she attracts the attention and affections of German sniper and war hero Frederick Zoller who arranges a prestigious film premiere to be held at her cinema. Meanwhile, a group of Jewish-American soldiers led by Lt. Aldo Raine (Brad Pitt) are parachuted into France in advance of the Normandy landings with a mission to cause widespread havoc and panic amongst the Third Reich forces by brutally slaying and scalping Nazi officers. When they learn that several Nazi leaders, including perhaps Hitler himself will be attending Shosanna’s big night, the opportunity to assassinate the German topbrass and perhaps even end the war early is too good an opportunity to pass up.
Disney’s A Christmas Carol (coming Nov 14) Forrest Gump and Back to the Future director Robert Zemeckis helms Disney’s computeranimated blockbuster for this year’s holiday season. Charles Dickens’ timeless tale is brought back to life with Jim Carrey voicing four different roles (Scrooge, the ghosts of past, present and future) with British actors Gary Oldman as Bob Crachitt and Colin Firth as his nephew Fred. Legendary miser and humbug-merchant Ebeneezer Scrooge looks forward to another Christmas making life miserable for those around him. But, when the ghost of his deceased business partner visits him in the night, he receives a warning about the penalties that lie ahead for him if he continues down the same road. Three ghosts appear to him, and Scrooge sees once an for all the effect his behavior has on others, and perhaps where it might lead him in his own life. If you’re looking for a film to take the family to this year, this one is soaked in Christmas spirit.
