LUNCH MACKEREL PATE

Ingredients (8 portions)

4 pre-cooked smoked mackerel fillets (available in fish section at all supermarkets). Make sure you go for the plain one not the peppered one 8 spring onions 2 tbsp ‘Total’ Greek yoghurt (keep adding until you get desired texture to your taste) black pepper gluten free bread

Method

1. Take skin o cooked mackerel. 2. Mash in a mixing bowl. 3. Chop spring onions finely and add to bowl. 4. Add lots of black pepper. 5. Spread on 1 slice of gluten free bread, lightly toasted if preferred. 6. Add a sliced tomato and small handful watercress.
