4 Miles; Every 4 Hours; for 48 Hours! 2 Local Athletes Run 50+ Miles for A Cause by Opal Jessica Bogdan Saratoga TODAY

SARATOGA SPRINGS — A local team ran four-miles every four-hours, for 48 hours straight, until they reached a total of 52 miles. Alexandra Besso and friend Simon Wood joined together to complete the 4x4x48 challenge, designed by David Goggins, a retired Navy Seal, author and motivational speaker. Completed this past weekend, Besso said the experience was one to remember.

“The reason I chose to do this is because I got into triathlon and ultra-running a few years ago and this year was my first big year of really intensely running. I signed up for a 50-mile ultra-marathon over in Vermont. Due to COVID-19 that race and all of my smaller training races were cancelled,” Besso said. “I set a goal for myself of running 50 miles and it was something that was important to me to achieve. I figured if I couldn’t do it through my race in Vermont, I would do it on my own.” See Story pg. 3

Antibody Testing THE WILD Now Available GOES VIRTUAL SARATOGA SPRINGS — Saratoga Hospital offers COVID-19 antibody testing at all outpatient laboratory locations, including Malta Med Emergent Care, Saratoga Hospital Urgent Care – Wilton and Saratoga Hospital Urgent Care – Adirondack. Antibody tests are blood tests that look for proteins that have developed in response to an infection, in this case the new coronavirus. A positive test result means that a patient has had and has recovered from COVID19. Antibodies could offer some protection against future COVID-19 infection by preventing reinfection or helping the immune system fight the virus faster or more effectively. See Story pg. 10

4 Miles; Every 4 Hours; for 48 Hours! 2 Local Athletes Run 50+ Miles for A Cause continued from front page... Besso used the challenge to give back to the Saratoga Community. There are 12 separate runs, broken into four-hour segments, that are completed to make up the 4x4x48. Besso and Wood decided as part of their charity run, they would donate one of those segments to #SaratogaStrong and local businesses. “What better way to not only achieve my own goal, but also do something to help the local community that I love so much,” Besso said. The seventh segment Besso and Wood completed occurred this past Saturday at 12 p.m. The two ran down Broadway, sporting #SaratogaStrong t-shirts, and visited five of their favorite downtown businesses. They then purchased a gift card through the help of SIX Marketing, a fullservice marketing agency.

Another aspect of the charity run was a $520 donation to Wellspring. Spoken Boutique, located at 27 Church St, sponsored $5 for every mile Besso and Wood completed. They each ran a total 51.2 miles during the challenge raising $260. SIX Marketing then matched that donation, bringing the total to $520. The pair plan to keep on giving this weekend, when five Facebook friends of Spoken Boutique will be the winners of a gift card. “I think we will pick five random individuals in the community after they comment on a photo of Simon and I running down Broadway. We’ll ask them how they support their local community and randomly select the people to give away the gift cards to,” Besso said. The gift cards purchased and given away include $75 to Spoken Boutique and $50 each to Kru

Coffee, Max Londons, iRun Local and Impressions of Saratoga. They will post the photo on the Spoken Boutique Facebook page on Saturday and choose winners later next week. Besso added: “part of the motivation for me was setting this David Goggins challenge and doing it on my own. Setting a goal is important and I’m a very competitive person…it was important to me to achieve that goal even if it was more of a nontraditional way.” Besso has completed local races in the past, such as the Hudson Crossing triathlon and Code Blue 5-mile race. One local company that made preparing for this race much easier was Greenfork. Based in Saratoga, Greenfork is a meal prep service that provides nutritious meals for the health conscious in the community by using fresh and local ingredients.

“The community helps each other and everyone helps in their own way…this is just my way.” Alexandra Besso and Simon Wood. Photo provided.

“Greenfork made everything a lot easier, not having to worry about going to the grocery store,” Besso said. Moving forward, Besso and Wood will compete in a 50k run, 32 miles, in the Battlefield sometime in August. “Once I achieve something I’m always looking for another goal that is more difficult, a little more mileage or more intimidating. We’ll see what the future holds. I

would love to complete a 100-miler one day,” Besso said. “Being able to combine my love for participating in the sport of running and the challenge of doing something that seems almost out of reach… being able to accomplish those two things feels amazing. Saratoga has been a wonderful community to me since I’ve been here. The community helps each other and everyone helps in their own way… this is just my way.”

Washington County Fair Cancels - Summer 2020 GREENWICH — The Washington County Fair announced last week that this year’s events will be cancelled. The fair was scheduled to begin its sixtieth anniversary on Aug. 24 but organizers announced the fair will return next year. A message to the community from the fair organizers: “Our Fair has been celebrating the agriculture industry in our community since 1890. This year the Washington County Fair would have been celebrating 60 years at our Old Schuylerville

Road location. Sixty years of memories have been made by our fair community in the show ring, at the motorsports track, and even at the top of the Ferris Wheel. “After planning for our 60th anniversary, over the last year, we made the emotional and challenging decision to postpone the 2020 Washington County Fair. Our Fair is so special because of the people that visit our grounds year after year; whether you have been visiting us for sixty years or just one, we understand the disappointment you are feeling

about August ending without a Washington County Fair. We ask that over the next few weeks as a year's worth of planning is adjusted that instead of sharing just your frustration with us that you take this time to share with us your memories and the good times you have had at previous Washington County Fairs. “We look forward to welcoming you back to the fairgrounds next year, Aug. 23 to Aug. 29 2021.” See more Summer 2020 Reopenings and Cancellations on page 20.

Antibody Testing Now Available

Week of June 19 – June 25, 2020

NYRA, Saratoga Springs Launch Saratoga Face Mask Campaign to Benefit Franklin Community Center, Shelters Of Saratoga

Photo provided.

Test results could provide helpful information to the broader community. If enough people are tested, antibody status could offer insights on how widespread COVID-19 has been in the region. The tests can also identify potential donors for convalescent plasma therapy, which uses blood and antibodies from those who have recovered from COVID-19 to help patients who have the virus. Over a six-week period, from May 1 to June 13, the state initiated 12,000 randomly conducted antibody tests. The results, which Gov. Andrew Cuomo revealed June 16, show that 13.4 % of those tested across the state had at some point had the virus. In the greater Capital Region specifically, 2.5% of those tested were shown to have at some point had the virus. Tests must be ordered by a healthcare provider. Results are usually reported to patients

by their provider or Saratoga Hospital in three to five days. There is no copay. How to get an antibody test: • A provider order is required for antibody tests at all Saratoga Hospital outpatient lab locations. • Given their extended hours, Malta Med Emergent Care, Urgent Care – Adirondack, and the outpatient lab at Wilton Medical Arts will be the preferred option for many patients. • Patients who do not have an order can come to Urgent Care: Wilton and Urgent Care: Adirondack during normal business hours or Malta Med Emergent Care 24/7 for a screening to determine their eligibility. Those who qualify will be tested. Patients will be charged a copay for the screening but not for the test. All tests are processed by Saratoga Hospital, which meets the latest Food and Drug Administration validation criteria.

The Center serves more than 6,000 people annually through a variety of programs, including a food pantry, afterschool prevention, and safe and affordable housing. “With our resources stretched and funding in jeopardy, the number of people relying on our services continues to skyrocket,” said Franklin Community Center Executive Director Kari Cushing, during a press conference outside the Union Avenue entrance of the Saratoga Race Course on June 15. She said since the start of the pandemic, there has been a large number of people going to the food pantry for the first time in their lives. ‘The funding received from this program will enable us to continue to focus on maintaining the physical and mental wellbeing of the individuals and families we serve by providing them with the basic necessities and services they require to get through these difficult times.” “We’re living through a pandemic and facing uncertain times. Can you imagine not having a home at this time?” said Shelters of Saratoga Executive Director Karen Gregory. ‘We thank NYRA and the City for not forgetting our most vulnerable community members. Their commitment to humanity means the world to us at Shelters of Saratoga.”

City Center Parking Structure Still on Track for Fall 2020 by Thomas Dimopoulos Saratoga TODAY

SARATOGA SPRINGS — Work continues on the development of a multi-story parking garage that will connect conference attendees and others with the Saratoga Springs City Center. Plans call for the lower level of the structure to be completed and available for use during the summer, with all levels of the structure completed by the fall. “The goal is as soon as possible,” City Center Executive Director Ryan McMahon said this week, as a 400 ton crane tended to the business at hand atop the lot where the structure is being developed. The COVID-19 pandemic slightly affected the progress of the development. “We’ll probably open now in early November instead of early

October,” McMahon said. The City Center itself, like most all other venues across the country where large groups of people gather, has canceled events during the pandemic although the good news is that most of those events have been rescheduled to take place at a later time, McMahon said. A handful of previously scheduled events slated to take place during the summer are still being held in the hopeful anticipation that they may be able to take place. The greater Capital Region –a multi-county area that includes Saratoga – this week entered the third phase of Gov. Andrew Cuomo’s four-phase reopening plan. Should infection, hospitalization and death rates due to COVID-19 remain low, the region is slated to enter Phase 4 on July 1. Phase 4 includes arts, entertainment, and recreation.

Local Seniors Enjoy Pop-Up Farmers Market

Photos courtesy of John Rowe.

by Opal Jessica Bogdan Saratoga TODAY

SARATOGA SPRINGS — The residents at Prestwick Chase enjoyed a pop-up farmers market this past week. Mother-daughter team Meghan Barker and Sharon Anderson, co-owners of Clyde O’Scope Farms, hosted the pop-up market. They offered fresh veggies, flowers, free-range eggs, and home made potpies

to residents. Since COVID-19 struck the community this past March, John Rowe, director of marketing at Prestwick, said they have shut down access to the building and asked residents not to leave. To help social distance guidelines, Rowe said his team has done the shopping for each resident. “We’re doing some shopping for them. Some of the fresh vegetables they might not be thinking about or putting it on

their list so now, they can go right outside and grab the fresh produce for themselves,” Rowe said. As the second week hosting the market, Rowe said residents have been overjoyed to be able to purchase and enjoy locally produced items. “Last week we had a limited supply of things and the residents purchased flowers, potatoes, all sorts of vegetables for themselves. The people that ran it were very happy,” Rowe said.

SARATOGA SPRINGS — From diamonds to denim, tchotchkes to chic couture. The Marylou Whitney Collection Auction – which went online for viewing June 17 - offers diverse items from the philanthropic icon who was known as the Queen of Saratoga. The auction benefits the new building that will be the future home of the backstretch medical clinic operated at Saratoga Race Course by Saratoga Hospital and the Backstretch Employee Service Team. Special items include a diamond choker necklace that was a birthday gift to Whitney from her husband John Hendrickson, and her pristine 1985 red Jaguar XJ6. Other featured items include designer evening gowns; couture ensembles and cocktail dresses by Bill Blass, Arnold Scassi, and Chanel; evening purses by Judith Lieber Couture and Chanel; fur coats; hats; vintage dresses; and designer scarves by Hermès and Tiffany. Many very affordable and practical items, such as costume jewelry, casual attire, hats, coats, scarves, memorabilia, and furniture, are also offered.

Hendrickson developed the concept of sharing Whitney’s worldly possessions with others, while helping two charitable entities. He donated approximately 1500 pieces that have been photographed and categorized for the auction. “As I began the difficult task of going through Marylou’s personal items at each of our homes, she seemed to speak to me,” Hendrickson said in a statement. “No one shared her blessings and good fortune more than Marylou. No one was more dedicated to helping charities than Marylou…and so the idea was born. Her spirit of giving will live on—Marylou’s personal items are going for a greater good.” The website, www. MarylouWhitneyCollection.com, debuted Wednesday, June 17 for preview only, via a link to the auction site. The auction action begins Monday, July 27, at midnight, and continues through Saturday, August 1, at 11.59 p.m. - Whitney Day at Saratoga Race Course. SARATOGA SPRINGS — A leader in the supply and servicing of uniform and workwear programs gives back to small business community in support of economy reopening. The UniFirst Corporation is partnering with the Saratoga County Chamber of Commerce to donate 10,000 protective facemasks to local businesses in need, as part of a company-wide

initiative to support the small business community. UniFirst General Manager Keith Plummer partnered with Chamber of Commerce President Todd Shimkus and Chamber of Commerce Vice President of Communications Richard Snyder. As state shutdowns are lifted and the economy begins to reopen, many small business owners, the everyday heroes on the front lines

of the recovery, are struggling to source and provide their staff with the necessary personal protective equipment (PPE) required to meet government guidelines. The donation is part of a company-wide initiative to support business revitalization in UniFirst markets around the country, prioritizing regions where resources are not as readily available.

NOTES Chamber of Commerce from

by Todd Shimkus • for Saratoga TODAY

SARATOGA COUNTY’S LARGEST Ribbon Cutting EVER Todd Shimkus, President of the Saratoga County Chamber of Commerce It’s Friday, June 19, 2020, and we’re about to hold the largest ribbon cutting celebration Saratoga County has ever seen. It will take place today at 11 a.m. We really have no idea how many people will participate. We’ve invited everyone! BUT, this ribbon cutting will feature the same ribbon being cut in more than 2 dozen locations across Saratoga County simultaneously. That’s what makes it the biggest. Normally when we do a ribbon cutting, it is for one business in recognition of an investment they’ve made in our community. It can be for a

new business or an expansion or a relocation or a significant milestone anniversary. Today’s ribbon cutting at multiple locations simultaneously is designed to celebrate the reopening of Saratoga County’s economy. The Chamber and our partners at the Saratoga County Reopening Advisory Board as well as Discover Saratoga, Saratoga County Prosperity Partnership, the Saratoga Springs DBA, the Saratoga Springs City Center and SEDC will all be involved in one place or another. We’ll be in downtown Saratoga Springs as well as the Villages of Ballston Spa, Schuylerville and Mechanicville. We’ll be in the Town of Day and Edinburg to the North and Waterford, Halfmoon and Clifton Park to the South. We’re now in Phase 3 of Saratoga County’s reopening. And while there are still some sectors that remain closed, we simply

cannot wait two more weeks to share the news that Saratoga County is open for business for those who are wondering what is open and what is not. The ribbon we are using features the Stronger Together Saratoga County logo created a month or so ago to celebrate the many collaborations we’ve seen that have helped us get to this point. We’re also providing every City, Town, Village and Hamlet with two Stronger Together signs personalized for their local community to use in the ribbon cutting photos. We’ve created a Saratoga County Ribbon Cutting event on Facebook. There, everyone will be able to see all of the ribbon cutting photos and videos our

staff, partners and volunteers shoot capturing this historic day. This ribbon cutting celebrates the investment of time we’ve all made during New York’s PAUSE as we sheltered at home to put health first while placing our economy in jeopardy. Today is the day where we hopefully can feel the freedom and safely start to return to the businesses we know and love more regularly. We believe every ribbon cutting is the celebration of a dream come true. For us here in Saratoga County as I write this, we dreamed of a day when there was no one in Saratoga Hospital fighting for their life versus COVID-19. That day came a week ago, on Thursday, June 11. That was the day when we decided to break out

the ribbon on June 19. That was the dream come true. Now we cannot let down our guard. As Angelo Calbone, the President of Saratoga Hospital told a group of local leaders the other day, we still must be vigilant. We need to social distance. When we can’t, we need to wear a mask. We need to wash our hands. We need to disinfect surfaces. We need to take special care of our seniors and those with underlying conditions. But if we continue to do this, this countywide ribbon cutting today will go down in history as the day we turned the corner. The day we celebrated the sacrifices so many have made to get here as well as the potential of what we can do together going forward to rebuild our economy.

Local School Celebrates 2020 Seniors by Opal Jessica Bogdan Saratoga TODAY

SARATOGA SPRINGS — Only one of the 31 seniors of the 2020 Saratoga Central Catholic School (SCC) graduating class was asked to put on their cap and gown this past weekend. As the graduates drove through the school to pick up their caps and gowns, graduate Ria Walsh was honored. Her fellow students and teachers beeped their car horns and showed their support through the purple and gold school colors. Faculty and Staff wore their SCC spirit-wear with pom-poms and signs. They also handed out goodie bags, yearbooks, academic and athletic awards and caps and gowns to each senior as they drove up.

“We had them all park their cars in the parking lot while beeping their horns and yelling. Ria was so excited. The students got to support her and she got to see them and have a little celebration as well,” Mary Guarnieri, director of advancement at SCC, said. Last August, Walsh joined the Army National Guard. Her recruiter, SSG Brandon Moseman joined the celebration and honored Walsh with a personal level of achievement. The district has planned a tentative graduation ceremony for Friday, July 10. However, Walsh will leave for basic training on June 30, and SCC still wanted to honor her. Interim Principal Michael Kondratowicz handed the graduate her diploma along with two awards

she earned. Walsh received one award from the Gurtler Brother VFW Post 420 Patriotism award and also received the Knights of Colombus 4th Degree Assembly Patriotism award. Guarnieri said the event was great and the students appreciated it. “It went very well. We had a dunking booth where students could attempt to dunk our Athletic Director Alphonse Lambert,” Guarnieri said. A local DJ, Elaine Gaynor of DJ Smalz, played music for the duration of the event. Along with picking up their caps and gowns, students were welcomed to receive their awards for the school year. Guarnieri said for the ceremony this year, two faculty members recorded a video of the awards in their gym.

NEXT BIG AREA EVENT TO GO VIRTUAL FOR 2020

Photos from past Firecracker4 Road Race. Model photo showcasing this year’s Firecracker4 tee.

SARATOGA SPRINGS — With the continued realities of social distancing stemming from the worldwide coronavirus pandemic (COVID-19), officials at Saratoga Springs’ Firecreacker4 Road Race today announced that the 14th edition’s in-person events on Saturday, July 4 has been cancelled and a Virtual 4-Mile option offered to those interested. The Firecracker4 is offering three options to the participants who have already registered: 1) Switch to the Virtual 4-Mile 2) Donate their race entry fee to the event’s charity partners (and receive a commemorative 2020 race t-shirt), or 3) defer to the 2021 event at no additional charge. “Over the last 14 years this event has become an Independence Day tradition in the Capital Region and one of the largest 4th of July road races in the US. We understand how much this event means not only to the runners, but also the city of Saratoga Springs and the charities we help support,” said Event Director Patrick Lynskey. “However, our number one priority is always the health and well-being of our community,

including runners, volunteers, sponsors, police, fire and city staff. Even though New York state is starting to open up, it is clear that there are just too many unknows to gather thousands of people in close quarters on July 4th.” Lynskey added: “due to the popularity of the Firecracker4 and generosity of our participants we have been able to donate more than $300,000 to local charities over the years and we hope this year will be no different. As a result, we will offer a Virtual Firecracker4 4-Mile run for those who would like to participate. Our Virtual 4-Mile run is a great way for runners to continue their Independence Day running or walking tradition and accomplish a personal goal, while supporting the event’s local charities — The Veterans Business Council Scholarship Program, Pitney Meadows Community Farm Trails Project, The Streaks Running Club Inc, Racing City Running Club and The Children’s Museum at Saratoga.” Those interested in signing up for the Virtual 4-Mile run can do so online through Sunday, June 7 at midnight. Registration

is $30 and there will be no further price increases. All Virtual 4-Mile participants will receive a 14th annual virtual Firecracker4 soft tech t-shirt, a bib and finisher’s certificate that can be printed out at home, and a commemorative finishers’ medal. These items will be mailed to participants by July 4. Virtual 4-Mile participants will be asked to complete a four-mile run by themselves following CDC and New York state-mandated social distancing guidelines between Sunday, June 28 at 6 a.m. through Saturday, July 11 at 11 p.m. “You can run your four miles anywhere. If you have a four-mile route in your neighborhood, you can run on that course and it will count,” said Lynskey, adding that all participants will receive an email with detailed instructions a few days before the start date. “We will provide links on our website to several local certified fourmile courses that can be used to complete the virtual run, as well as some suggestions for other areas such as the Zim Smith Trail or Corning Preserve that will work. Once participants complete their four-mile run, they will be

asked to submit their times via the link provided to them along with a photo of their watch/GPS/ RaceJoy results. All times must be submitted by Saturday, July 11 at 11 p.m. Results will then be compiled and posted online at firecracker4.com. “The focus of our virtual runs isn't about winning,” added Lynskey. “It’s about staying active, celebrating our strengths and supporting our local community. So, while we will not be gathering en-masse this July 4th at the City Center for that big start down Broadway and post-race party, we can all run or walk four miles wherever we are and help others in the process and that is

something to feel good about.” All participants in the Virtual 4-Mile will be entered to win various giveaways from area merchants and sponsors. Prizes include gift certificates, swag from Michelob Ultra, 30min sessions in the Normatech Recovery Room and foot massage gift certificates courtesy of Fleet Feet Sports, Power Surge protein butters from Power House Athletics and an array of other products or services. “We will be creating packages full of great stuff that runners want, need and will love and will be doing weekly drawings starting in early June. We are enthusiastic about making the best of it and hope people will join us.”

THE WILD GOES VIRTUAL Mini-Series About The Palmertown Range by Opal Jessica Bogdan Saratoga TODAY

PALMERTOWN — The Palmertown Range project announced a new four-part series showcasing the possible benefits of the 20 mile trail system. Saratoga PLAN, preserving land and nature, in partnership with The Saratoga Film Academy and Open Space Institute released the first-part this past Monday, June 15. Each episode in the miniseries will last from three to seven minutes, and takes viewers on a visual and informational journey. Saratoga PLAN Executive Director Maria Trabka said the videos will demonstrate the ways in which an integrated trail system will benefit conservation, recreation and economic development in the Saratoga County region “The Palmertown Range is just an incredible place…it’s sort of a hidden gem that we wanted to feature and let people know about it. As we get to know the range better, we wanted to share that with other people

and let them know about it. The Adirondacks are just outside our doors,” Trabka said. The videos depict the trail system along with the surrounding community. The goal is to showcase different habitats located in the range, recreational opportunities and the type of economic development that is available in the range. The first film is an overview of the vision for the Palmertown Range, located 20 minutes north of Saratoga Springs. Each subsequent film focuses on one of the key aspects of the plan – conservation, recreation, and economic development. “From protecting water quality to linked trail systems to maple sugaring, the series shows how conservation and various types of land use can be beneficially interwoven,” PLAN’s community engagement manager, Alex Fylypovych said in a press release. Saratoga PLAN received a $500,000 grant this past May from the Sarah B. Foulke Charitable Fund, the largest private cash gift made to the organization. The

grant will go towards the planning and design of roughly 20 miles of trails built in the Southern Palmertown Range. Home to 8,000 acres of protected lands, the project will establish the area as a recreational destination while conserving its natural resources. This project began more than a decade ago and has grown into a collaboration between local and state governmental entities, nonprofits, and academic institution. “Currently we have received funding to design a master trail plan that incorporates trails for

all different types of uses; people using strollers, wheelchairs, horseback riders, snowmobilers, trail runners, hikers, mountain bikers, paddlers…really the whole gamut of trail users,” Trabka said. She added: “There are a number of public lands in the area and there are also a number of private land owners. The landowners said they would be willing to let the public recreate on their properties with a conservation easement on their property.” The videos will premiere on Facebook and YouTube at 9 p.m.

on Monday nights. Following the premieres, videos will be available for regular viewing on Facebook, YouTube and Saratoga PLAN’s website. The release schedule for the next is Monday, June 22, 9 p.m. focusing on recreation potential. The third mini-series will premier June 29, 9 p.m. with economic opportunities. The series will end July 6, 9 p.m. with conservation priorities. Following the series, an informal Q&A session with various partners on the project will take place July 13 at 7 p.m.

The Schuylerville Public Library is a school district library, established in 2013 to serve the towns and villages of Easton, Fort Edward, Greenwich, Northumberland, Saratoga, Schuylerville, Stillwater, Victory and Wilton. Visit www. schuylervillelibrary.sals.edu for more information. Saratoga Springs Public Library plans to begin contactless pickup on June 22; the schedule for that service will be 10 a.m. -6 p.m. Monday-Thursday, and 10 a.m. – 4 p.m. Friday-Saturday. Ike Pulver, Library Director: We anticipate that we will be

able to allow staff back into the building by midweek next week to start that process. At the moment, there are approximately 3,000 items in the library waiting to be checked in and shelved or shipped back to their owning libraries, and about 26,000 items checked out of our library alone. Throughout the SALS and MVLS regions, there are about 271,000 items out. If they all come flooding back in at the same time, we will be overwhelmed, so we ask that you hold on to them for a bit longer. All due dates and overdue fines are still suspended. When we are able to begin contactless pickup, it will be by appointment only, and it is very unlikely that it will be a same day service, given the complexity of our required safety protocols, the size of our building, and the number of requests. Much more information about how that process will work will be coming soon. When we are ready to begin that service, there will be some new rules in place, including social distancing, a requirement to wear a face covering, and a “no-lingering” rule in order to be able to serve as many people as possible as safely as possible. Staff will be routinely cleaning and disinfecting and will be required to maintain their distance from one another.

Summer 2020: Reopenings Reimagined and Cancellations

SARATOGA SPRINGS — Saratoga Casino Hotel announced last week that harness racing will resume on Thursday, June 18, but no spectators are allowed at the track due to state guidelines during the COVID-19 pandemic. Fans can wager remotely on the races through Saratoga Casino Hotel’s online wagering platform, SaratogaBets.com, or on any other New York State approved online waging platform. Following the directive outlined by the New York State Gaming Commission and the New York State Department of Health, Saratoga Casino Hotel

developed new policies and procedures to reduce the risk of a COVID-19 outbreak and ensure the safety of employees, horsemen, and horses. Races will run two days a week, every Thursday and Sunday with a noon post time. The casino remains closed and is awaiting further guidance from the state regarding a reopen date for the entire property. • The Adirondack Balloon Festival, slated to take flight Sept. 17-20, has been grounded. The group plans to return Sept. 23-26, 2021. • The Washington County Fair, which was to take place Aug.

24-30 has been cancelled. Next year’s fair is planned for Aug. 23-29, 2021. •The Lake George Arts Project Summer Music Series and Jazz at the Lake have both been cancelled. The Summer Concert Series was scheduled for Wednesday nights in July and August and Jazz at the Lake was scheduled for September 19-20, both in Shepard Park in Lake George. A “Jazz at the Lake Reimagined program” - a series of hybrid events that combine performances and discussion with the artists is being coordinated. An announcement is anticipated regarding dates and times.

Those who wish to add dining to their virtual gala experience can order handcrafted, curbside pick-up meals for two from catering partner, Nicole’s Restaurant. Two three-course meal packages are available, one vegan, along with a choice of two specialty cocktails. Meals may be picked up on June 20, between 2:30 and 4:30 pm from either Nicole’s at 556 Delaware Avenue in Albany, or the National Museum of Dance at 99 S. Broadway in Saratoga Springs,

which was the originally planned site for the gala. Complete details about the event can be found here: mohawkhumane.org/ gala-animals-2020. The Society’s work is essential and throughout the COVID-19 pause it has continued to care for hundreds of animals and placed over 260 pets in new homes. The Society has also coordinated two large-scale pet food distributions of over 79,000 lbs. to pet owners and other humane organizations. Its Pet Food Pantry is always available for anyone needing assistance.

MLK Saratoga JUNE 30 PANEL: P r e s e n t s Local Immigrants and the Livestream Consequences of COVID-19 Performances for SARATOGA SPRINGS — The experiences of low-income local immigrants during the COVID-19 pandemic will be explored in a live stream panel discussion at 8 p.m. on Tuesday, June 30. Panelists include Alberto Matos, Assistant Chaplain with the New York Race Track Chaplaincy at Saratoga Racecourse, and Joan Odess, Immigrant Services Manager for Saratoga County Economic Opportunity Council (EOC). The moderator will be Terry Diggory, co-coordinator of the Saratoga Immigration Coalition, the event sponsor. The event is hosted by Caffe Lena as part of their community outreach effort. “The goal of the program is to inform the broader community about a particular group of community members who have been specially affected by the COVID-19 pandemic,” Diggory said in a statement. Some are “essential workers” who face greater risk of exposure to the virus. Some have lost jobs in businesses (such as restaurants and hotels) that have been closed under pandemic restrictions. As immigrants, some do not qualify for government assistance

programs that have been created in response to the pandemic. As service providers working directly with local immigrants, Matos and Odess have firsthand knowledge about these situations and the range of assistance that is available. The Saratoga Immigration Coalition is providing direct assistance through an emergency fund supported by donations to a GoFundMe campaign. Community members are invited to send questions to the panel in advance by email:

saratogaimmigration@gmail. com. During the program, questions can also be submitted in a live “chat” feature. Viewers may access the program through the events calendar on the Caffe Lena website (caffelena.org) or directly through the Caffe Lena YouTube channel. Access is free although donations are invited. Half of the proceeds will support the work of Caffe Lena and half will go to the Saratoga Immigration Coalition emergency fund in support of local immigrants.

Fresh Herbs

bring flavor and beauty to food

l i s Ba Green Herb Yogurt Dip

WILTON MALL Wednesdays | 3 - 6 p.m. Saturdays | 9 - 1 p.m.

by Julia Howard for Saratoga TODAY Photos by Pattie Garrett.

A

t the farmers’ market, fragrant herb bouquets and pots spilling with over with leafy herb plants offer market-goers an abundance of culinary exploration. While common herbs do compliment specific foods, there are no rules for what to use them in. Fresh herbs may be mixed and matched to your liking. Common herbs can be put into two categories: woody herbs such as thyme, rosemary, and sage, and soft herbs such as basil, parsley, and cilantro. Woody herbs can be added earlier in the cooking process while soft herbs are commonly added towards the end of the cooking process or as a garnish. Herbs can be easily stored upright in a jar of water or between a damp paper towel in an airtight container in the refrigerator. Here are just some of the common herbs available on Wednesdays and Saturdays at the farmers’ market.

Basil is recognized by its glossy, pointed leaves and sweet-savory flavor. Basil pairs well with tomatoes, strawberries, mozzarella, beef, and shrimp.

Parsley is a mild bitter herb that many use as a garnish for food, but it helps dishes like stews achieve a more balanced flavor. As an added benefit, parsley can aid in digestion.

Cilantro

is a delicate citrusy herb most commonly used fresh at the end of cooking. Cilantro is popular in Asian, Indian, Middle Eastern, and Mexican cuisines.

Mint has a subtly sweet and peppery flavor, and it is used for a variety of culinary and medicinal purposes. Its powerful flavor compliments lamb, feta, mojitos, and even chocolate.

Dill is a delicate and feathery herb with slender

stems. Dill pairs with salmon, cucumber, and potatoes, and is commonly used in pickling mixtures, dressings, and egg dishes.

Chives have a subtly oniony flavor with hints of

garlic. Recognizable by its grass-like leaves and vibrant green color, chives make the perfect garnish for dishes with eggs or potatoes.

Thyme has small, pale green leaves and pungent

aroma that pairs well with hearty meat like pork and chicken. Thyme holds up well to heat and can be used during the cooking process.

Oregano

is a sweet, slightly peppery member of the mint family. This herb is commonly used in dishes like tomato sauce, yogurt sauce, and kebabs, and is a staple in Italian and Greek cuisine.

Rosemary

has been prized for its sturdy, aromatic sprigs and oil for centuries. Its needlelike leaves can be used for roasted vegetables, goat cheese, and even flavorful bundt cakes.

Sage is known for its fuzzy leaves and savory flavor

Yields: 6 servings

INGREDIENTS: *Ingredients currently available at the farmers’ market

• 1 tablespoon finely chopped fresh dill*

• 2 cups plain Greek yogurt* (or full-fat plain yogurt*)

• 2 cloves garlic, grated

• 3 tablespoons finely chopped fresh mint* • 3 tablespoons finely chopped fresh parsley*

• Zest of 1 lemon plus juice of 1/2 lemon • Kosher salt and freshly ground black pepper

INSTRUCTIONS: 1. Combine the yogurt, mint, parsley, dill, garlic, lemon zest and juice, 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl and mix well; taste to check the seasonings. 2. Cover tightly and refrigerate until ready to serve. NOTES & TIPS: • Storing: You can make this ahead and refrigerate for 3-4 days. Do not freeze. • Variations: Mix and match herbs however you like by adding fresh chives, tarragon, or basil. You can also substitute apple cider vinegar for lime juice. If you want to add some heat to this dip, add a fresh jalapeno. Half the jalapeno, remove the seeds and ribs and chop finely.

with a peppery bite. Fresh sage leaves are commonly used in sausage and gnocchi. Sage can be cooked or fried as a garnish for squash.

• Using this dip: Dip in fresh veggies such as carrots, cucumbers, and cherry tomatoes. If you love making salads, toss your greens in this dressing. Try using as a sauce for kebabs, grilled meat, or poultry. Or use as a topping for grilled vegetables or burrito bowls.

The Saratoga Farmers’ Market is 3-6 p.m. Wednesdays and 9 a.m.-1 p.m. Saturdays at the Wilton Mall. Follow us on Facebook, Twitter, and Instagram.

Hot Fudge Birthday! by John Reardon for Saratoga TODAY

Hello my Foodie Friends ! June 16 was our daughter Aubrey’s birthday. It was also National Fudge Day! How old is Aubrey do you ask? Well, I’m not supposed to say but to me when I look at her, she is still five years old and she still would like more than the wrapping paper for a gift. Aubrey had a request that we use Sundae’s Best Hot Fudge for her Birthday dessert. In the past several months, we have all been sharing a lot of stay “in the house” family time, so her party was small. However, it was with those that made it sweet. Paula and I love to use products from family-owned businesses, especially if they are locally owned. Among our favorites is a wonderful product of Katie and Jeff from Sundae’s Best Hot Fudge Sauce, which is a product of Greenfield’s Greatest Food Company, Inc. They use only the very best ingredients including real chocolate and cocoa. They also use awardwinning NY State (Dake Family Owned) Stewarts® wholesome milk, cream and sweet butter. Sundaes Best Hot Fudge Sauce is great on ice cream, fruit, cake, in recipes or just grab a spoon and dig in. Jeff ’s mom has been making this homemade hot fudge for family, friends and her church congregation for more than forty years...and she still does. Katie and her grandmother have had a Saratoga tradition enjoying hot fudge sundaes from ice cream shops since Katie

was a little girl. They’ve combined mom’s recipe with their love for hot fudge to offer Sundaes Best. Katie, Jeff, Paula, John and Aubrey encourage you to start a Sundae Tradition of your own. You should see the smiles from those that receive Sundaes Best Hot Fudge Sauce as a gift. Did you see our Katie on Good Morning America on Saturday, June 13, 2020? Stop by our family-owned Compliments to the Chef, downtown Saratoga’s neighborhood Kitchen and Cutlery store located on 33 Railroad Place to get some of Sundae’s Best Hot Fudge Sauce. Remember my Foodie Friends: “Life Happens in the Kitchen” especially when that special someone has chocolate to share.

Take Care, John & Paula
