Mini Shrimp Guacamole Sandwich Ingredients

1 teaspoon lime or lemon juice

20 large shrimp, peeled and deveined (or thawed frozen shrimp)

1 tablespoon cornstarch

2 tablespoons Japanese sake

20 mini burger buns

sea salt and black pepper 2 avocado, halved and seeded ½ small purple onion, minced 1 serrano pepper or jalapeno, minced 2 cloves garlic, grated

Strawberry Shortcake Protein Pancakes 6 egg whites 1 cup strawberries (fresh or frozen, chopped) ¼ cup oat bran (or sub oat flour) ¼ cup raw buckwheat flour ½ teaspoon baking soda ½ teaspoon sea salt 1 teaspoon honey (optional) 4-6 fresh fruit (sliced, topping) Nut butter or coconut whipped cream Preparation

1. Add egg whites, chopped strawberries, oat bran, buckwheat flour, baking soda and salt to a blender. Pulse 5-6 times, until ingredients are combined. 2. Spray a frying pan with coconut oil or other cooking spray. The pancakes will spread, so using a smaller pan works well. Cook on low, covered, for 5-7 minutes, until bubbles appear on top of the pancake. Flip over, and cook for another 1-2 minutes. Top with berries, nut butter, or coconut whipped cream.

Preparation 1. Dry shrimp with paper towels. Spread on a large plate without overlapping. Drizzle sake and grind salt and black pepper over top of shrimp evenly. Let it sit at room temperature to marinate for 10 to 15 minutes. 2. While marinating shrimp, prepare the vegetables. Scoop avocado from rind with a spoon and add it to a medium size bowl. Add purple onion, pepper, garlic, lime juice and 1/2 teaspoon salt. Smash and mix well with a potato masher. 3. Add cornstarch to the shrimp and mix well by hand. The shrimp should be evenly coated with a thin, starchy mixture. 4. Heat vegetable oil in a large nonstick skillet over medium heat. When oil is warm, spread shrimp, one by one, without overlapping. Cook until golden brown, 1 to 2 minutes. Flip with a pair of chopsticks (or tongs) to cook the other side, until golden and the shrimp are fully curled, 1 to 2 minutes. Transfer to a plate. If your skillet if necessary, cook the shrimp in two batches. 5. Next, spread the guacamole on the bottom bun, place shrimp on top, garnish with chili flakes and sesame seeds, top with the top bun and pierce with a skewer. 6 Serve warm or cold.

Imagine a hormone that is released when we have a warm interaction with someone, which strengthens our immune system, reduces inflammation, decreases depression and anxiety, and protects against stress. Imagine a nerve that fires when we help someone in need, which produces a surge of good physical feelings, such as tearing up, a rush of joyfulness, elation in your chest, and goosebumps. Believe it or not, humans possess each of these. When God created mankind, He literally hard-wired us for community; to love our neighbors, receive love in return, and to experience the blessings that come from that love!

The world often likes to separate human beings from one another, and in an age of increasing social media connectedness, it is not hard to notice that loneliness is on the rise. But, our loving Creator has provided the remedy for loneliness, and Jesus reminds us of that, “Love your neighbor as yourself.” It seems that all He is really saying is “be who I created you to be.” “… in Christ we, though many, form one body, and each member belongs to all the others.” - Romans 12:5
