Method For making chenna: Boil the milk in a pan, when milk is boiled, add lemon juice and as soon as you add lemon juice, The curd will start separating from the whey, turn off the heat. Once the milk fat has separated from the whey, drain the whey using a strainer line with cheesecloth, or muslin cloth. Wrap the curds in a muslin cloth, rinse under cold water, and squeeze well and this process takes out the sourness from the lemon, keep it over night or as long as possible. In a bowl, add chenna and knead it to make it as soft and smooth dough. Add flour and continue kneading till all grains disappear. Make a round flat shape with the chenna and keep aside. Heat the water in pan on high heat; add sugar and stir it till sugar melts. When the syrup is boiled, sugar is melted, put each ball one at a time in the syrup and leave some space for the rasmalai to swell and they will double in size. Covered and cook on low flame for 30 min. Now turn off the gas and allow cooling. Take out rasmalai balls in any big bowl along with sugar syrup. After soaking ras malai balls for 45 hours and cooling it down, take it out from sugar syrup. Heat the milk in a pan on medium flame and stir it continuously once it starts to boil. Add saffron and cook it till milk reduces to half. Add sugar and cardamom powder, Mango pulp mix well. Take out the rasmalai from the sugar syrup, press it with hands t strain the water and put these balls into the milk. Garnish with pistachios and cashews. Serve chilled rasmalai.
