STUART O’KEEFFE ‘THE QUICK SIX FIX’ Savour Kilkenny are thrilled to welcome home Ireland’s own Stuart O’Keeffe, a well-known face on US television and star of Stuart’s Kitchen on TV3. Stuart received a BA in Culinary Arts in Dublin, worked in a restaurant in France, moved to America where he cooked for Hollywood parties, and soon after became a celebrity chef due to the television show Private Chefs of Beverly Hills. After gaining success in the US, Stuart had the chance to come home and show the Irish audience how and what he likes to cook. In his demo at the festival, Stuart will cook

EDWARD & ANNE WHAT’S YOUR BEEF? The infamous dish from Gordon Ramsay’s ‘Hell’s Kitchen’ has to be Beef Wellington, a traditional British dish consisting of a seared filet mignon, smothered in a whole-grain mustard and wrapped in layers of prosciutto, a herbed crepe, duxelles and puff pastry. At Savour 2016 Edward Hayden & Anne Neary will prove that this traditional British dish is much better and even tastier when made using Irish Beef from Dawn Meats and The Premium Butcher. Festival Specials BOOK LAUNCH ‘FISHWIVES’ Mag Kirwan from Goatsbridge Trout has compiled a selection of delicious fish recipes for her new cookbook, Fishwives. The recipes are from women in Ireland and Uganda, all of whom come from diverse backgrounds and professions. Mag’s sister, journalist Miriam Donohoe, has been working with the charity Hospice Africa Uganda in Kampala as a volunteer since January 2016. The mission of the charity is to end pain and suffering faced by thousands. All proceeds from sales of the book will go to Hospice Africa Uganda.

TOUR OF RIVER MILLS Join us on this very special guided walk along the beautiful King’s River and River Nore for a fascinating and enlightening tour of local food mills. ‘THE TABLE’ DESIGN & CRAFTS COUNCIL OF IRELAND EXHIBITION Food has a way of creating connections among people, and our experience can be transformed by all the accessories that are used to enhance this. To celebrate Savour Kilkenny’s 10th anniversary, the Design & Crafts Council of Ireland is proud to present The Table, an exhibition based on a competition inviting craftspeople to respond to the dining experience. The pieces in the show are in a variety of media including wood, pottery, metal, glass, paper, sculpting, printing, digital artwork and digital tools. Work in the exhibition has been carefully
selected for excellence in design and making and creative interpretation of the brief. This exhibition will be officially opened on Thursday 27th October at 5.30pm. All are welcome. THE CRAFT OF EATING WITH AKIKO HIRAI As a special event for Savour Kilkenny, we invite ceramic maker Akiko Hirai to speak about her carefully crafted ware: teabowls, teapots, sake bottles and platters. Akiko creates series of beautiful practical ceramic ware in organic hues, seeking to reflect the beauty that is found in the natural world. Her work is influenced by the ceramic traditions of Japan and Britain: and seems to nod to the sense of ceremony around sharing food held in both cultures. This year, in a special venture with Kilkenny LEADER Partnership and Gill Books, Savour Kilkenny opens its own pop-up café and bookshop on The Parade. The stars of this café will be local young people who have overcome various challenges in their lives. They have undertaken training in hospitality and customer service skills and will be on hand to serve customers delicious cakes, coffees, teas and hot chocolate.
The award winning artisan butchers Grogan and Brown are teaming up with Olivia Goodwillie from Lavistown (and one of the founders of the Savour Kilkenny Festival!) to once again make these wonderful coarse grained sausages, using Olivia’s original recipes - this time with locally produced free range pork.
Stone House Books will be selling their lip-smackingly tempting cookbooks, and the Gill authors will be dropping in to chat and sign their books. EMERGING FOOD PRODUCERS For the last three years Kilkenny LEADER Partnership has brought new producers from throughout County Kilkenny to the festival. This year’s producers are all very recent entrants into the food arena. The festival is an ideal opportunity for new producers to introduce their product to the customer, receive feedback and make contacts and friends in the sector. You will meet the newest producers at their stands next to The Global Kitchen.
CHILDREN & ADULT WORKSHOP GROW YOUR OWN VEGETABLES Nowadays it’s so important to know where our food comes from and where better to start than in your own garden? Join the School of Food’s head gardener John Kelly for a family friendly ‘Grow Your Own Vegetables’ workshop, from seed sowing and transplanting to growing in containers and harvesting. All are welcome to see these different methods explained in a fun and friendly way! This workshop is an ideal introduction to those new to vegetable growing.

Savour Kilkenny is delighted that the inaugural Smallholders Gathering will join the festival this year in an event that brings together smallholders from all over Ireland and the UK. There will be a number of workshops, demonstrations and discussions covering all aspects of living ‘the good life’. If you are considering a move to the country or dream of producing some of your own food, come along and hear from prominent smallholders who have built up a wealth of knowledge the hard way – so you don’t have to! Food blogger, columnist, author and self-proclaimed fermentalist Valerie O’Connor hosts this workshop all about fermenting foods, explaining just what it is and why it’s so good for us, populating our gut with healthy bacteria and boosting our immune systems in a delicious way. Savour Kilkenny is delighted to welcome back queen of the dairy Breda McDonald, one of the formidable mentors on the IFTA Award-winning series of RTÉ’s ICA Bootcamp. Breda (who spent many years as head buttermaker at Glenmore creamery) will deliver a demonstration showcasing the forgotten craft of buttermaking.
Keeping chickens is often the first step on the road to ‘the good life’. This demonstration discusses the things you need to consider when keeping poultry. We’ll also have some birds on show so that you can get up close and learn how to handle them.
A polytunnel is a wonderful addition to a smallholding or garden and can provide you with year-round herbs and vegetables. This demonstration will show you how to keep your polytunnel productive throughout the year.

Are you thinking about keeping bees? Would you like to know what’s involved and how you could get started? Our experienced beekeepers will introduce you to the honeybee and its society, with demonstration hives and beekeeping equipment on display.
Most smallholders move on to keeping some livestock. Poultry? Pigs? Sheep? Cattle? Pedigree breeds or cross breeds? The choices are yours but we will cover the topics you need to consider in order to adhere to the law and to keep your livestock healthy.
Mary and Robert White share their expertise on all aspects of foraging for food. They will explain what foods are out there, the ethics and sustainability of foraging, what is in season, how to look for it and which books you need. The expert duo will bring along samples to show you what to look out for and, after the talk, lead a walk enabling you to experience foraging first hand.
A favourite amongst smallholders, the pig is a marvellous creature. Whether you’re planning on raising pigs to be sold for their meat, or as pets, there are a number of issues to consider first. Our experienced pig owners will discuss everything you need to know to buy, feed and raise healthy pigs.

For many smallholders, selling surplus produce is a necessary way to increase income. For some this goes on to become their main income. We will discuss the issues you should consider when selling directly to the public or local businesses.
For those considering smallscale sheep production, there are many factors involved in being successful. Breed choice, products, target market: all will have an impact on income. We will discuss how to start and keep a flock of healthy sheep. During the demonstration we will look at handling techniques and common treatments.
Are you a smallholder with produce to sell? Are you considering establishing a smallholding and wondering how you can make it pay? Many experienced smallholders who make a living from their holding now realise that the internet and social media are crucial to help them stand out from the crowd.
Alpacas are extremely hardy and possibly the easiest livestock to care for, increasingly popular among smallholders for their wool, as guard animals and as pets. During this demonstration we will discuss what alpacas eat, their general care and housing requirements. We will have alpacas on show so that you can decide whether keeping them is right for you.

JUNIOR MASTERCHEF 2016 Kilkenny Cookery School is running two competitions for children aged 10+ and aged 13+. Savour Youth YOUNG FOOD PRODUCERS INDOOR MARKET This year we’re excited to present the Young Food Producers Market over an extended two-day event at MacDonagh Junction’s Workhouse Square, set within MacDonagh Junction Shopping Centre. Join Kilkenny’s budding culinary kids on this venture – over 120 young foodies (aged 10 to 17) who are taking part this year, selling their home-made produce in this buzzing indoor market. In addition to the market, much-loved local cookbook author Anne Neary will judge a taste competition.
