Inspiration Point

Santa Barbara's proximity to the Santa Ynez Mountain Range provides some great hiking options. The most popular trails are found in the front country, and Inspiration Point, via Jesusita Trail is at the top of our list. At around 2.5 miles round trip, this hike is doable for most hikers and rewards with stunning views of the city and Pacific Ocean. Directions: Take Tunnel Road all the way to the end, where the trail begins on a paved fire road. At the end of the paved road, head straight up the dirt path. WHEN THE DAYS TURN COOL, HEAT THINGS UP WITH THIS VELVETY CURRIED KABOCHA SQUASH (AND WHATEVER VEGGIES ARE IN YOUR FRIDGE) SOUP. FLAVORED WITH RED CURRY PASTE, GINGER, TURMERIC AND MORE WARM-YOU-TO-THE-CORE INGREDIENTS, YOU'LL HAVE THIS RECIPE ON REPEAT ALL SEASON LONG.

Curried Kabocha Squash Soup

VEGGIES FOR ROASTING

3 - 4 cloves of garlic 4 tablespoons fish sauce 1 tablespoon Siracha 1 small bunch of cilantro 1 tablespoon coconut sugar ¼ cup fresh squeezed lime juice 2 scallions, chopped 1 stick of grated lemongrass

TO FINISH OFF

Juice of 1 fresh lime 2 cans coconut milk

TO MAKE THE STOCK

2 tablespoons coconut oil 5 garlic cloves 1 serrano chile (optional) 1 thumb-size nub ginger 1 thumb-size nub fresh turmeric 1 tablespoon kosher salt 2 tablespoons veggie bouillon base 1 tablespoon (or more to taste) red curry paste 12 cups water ½ cup dried red lentils

FOR GARNISHING

Crispy chili oil Pepitas (pumpkin seeds) Fresh cilantro Lime slices CUT ALL VEGETABLES into 2-inch chunks. Toss in olive oil to coat. Divide evenly into two parchment-lined cookie sheets, spreading them into a single layer. Roast at 450 for 35-40 minutes until veggies are tender and golden.

IN A LARGE STOCKPOT, heat coconut oil, grate and saute garlic, ginger, and turmeric for three minutes. Add all other stock ingredients and bring to a boil. Lower the heat, add all the roasted veggies, and cover and simmer for 20 minutes until the lentils are cooked through. Add two cans of coconut milk and lime juice.

USING AN IMMERSION blender or Vitamix, blend the Soup until smooth. Garnish with crispy chili oil, pepitas and fresh cilantro.
