Banana and Coconut Loaf

T

he aroma of homemade bread baking in the oven is enough to compel many people to get in the kitchen and bake. That aroma is even more welcoming when hosting friends and family overnight, as there's nothing quite like waking up to the smell of freshly baked bread coming from the kitchen.

Makes 1 medium loaf 3/4 cup unsweetened shredded coconut 7 tablespoons unsalted butter, softened 1/2 cup packed light brown sugar Grated peel of 1 unwaxed lime 2 extra-large eggs, beaten 3 medium bananas, very ripe (about 1 cup peeled)

Put the coconut in an ovenproof dish and toast in the heated oven for about 3 minutes until a light gold color. Let cool until needed. Put the butter into a large bowl, add the sugar and the grated lime peel. Beat well with a wooden spoon or electric mixer. Gradually beat in the eggs. Using a fork, mash the bananas fairly roughly so they keep a bit of texture. Add to the bowl together with the coconut. Halve the lime and squeeze out the juice, then add 1 tablespoon of

3 tablespoons plain yogurt (not fat-free) 2 cups unbleached all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda A good pinch of sea salt 1 8 x 4 x 21/2-inch loaf pan, greased and base-lined with parchment paper Preheat the oven to 350 F. the juice to the bowl with the yogurt. Mix in gently. Set a strainer over the bowl and sift the flour, baking powder, baking soda, and salt onto the mixture. Mix in well, then scrape the mixture into the prepared pan and smooth the surface. Bake for about 1 hour until golden and a skewer inserted into the center of the loaf comes out clean. Carefully remove from the pan and let cool on a wire rack. Serve thickly sliced. Best eaten within 3 days. Can be frozen for up to 1 month.

Murph Toy Drive at five years BY JOSEPH ABRAHAM

T

he holidays are a great time of year, especially for children. Sullivan County native Josh Murphy started the Murph Toy Drive five years ago. Since then, the drive has brightened the holidays for several local children. The drive benefits the Boys and Girls Clubs of Town of Wallkill’s (BGC-W) Giving Tree program, which provides gifts and enhances Christmas for between 400-500 kids each year. BGC-W serves Northern Orange and Sullivan Counties. An event to benefit the drive will take place at the Villa Roma on Saturday, December 9 from 8 p.m. to 1 a.m. The cost of the event is $35. You must bring a toy (s) to enter. The entry fee and toy (s) will get you three hours (8-11 p.m.) of Premium Top Shelf Open Baring and food. Entertainment will be provided by DJ Joey C., and the Villa Roma will offer a $99 special room rate. Advanced ticket purchases, which enter you into a great selection of raffles, are available at http://tinyurl.com/y9td576a. So far, raffles include: Foursome with cart at Swan Lake Golf and Country Club; Foursome with cart at Tennanah Lake Golf and Tennis Club; Gift certificate to Welsh’s Cabin; Gift certificate to Roche’s Garage; One hour massage at Avani Mind Body Soul; Oil change with FAS Motor Sports; Zumba classes with Nicole Mascara-Mullally; Golf lesson with Swan Lake Golf Pro Bob Menges; Glasses and wine from the Hendrickson family;Three gift cards for Matsons Bar & Grill; Gift basket from Jeff Junction; New York Yankees’ tickets from Gary siegel; Spray tan from Fun With No Sun; Jewelry from Lori Rae Silvers;

Gift card for Peppino’s; Gift card from Callicoon Brewery; and much more! Last year’s event at the Villa Roma collected over 200 toys despite a blizzard the day before. “We had a great time last year and collected lots of toys,” Lori Rivenburgh, Executive Director of BGC-W, said. “His [Murphy] gifts always help. We’re touched someone local does this for us and supports us in a big way.” Applications for Boys and Girls Club members and non-members to become a Giving Tree toy recipient can be found at www.bgcorange.org/newsevents/the-giving-tree.html, BGC-W’s Facebook page and at their office on 60 Creamery Road in Circleville. You can also leave toys for the Murph Toy Drive at Jeff Junction in Jeffersonville. Also, the Giving Tree also has 25 toy drops at local businesses. t’s not exactly the north star, or the star that guided the three wise men to Bethlehem, but this shining symbol high up on Young’s Hill Roadjust outside Liberty has heralded the holiday season for half a century. The star was built by New York State Trooper Richard A. Van Alstyne between 1965 and 1967. Standing 35 feet tall and 24 feet from end to end, it’s a welcome and familiar sight for people traveling through Liberty on Route 17. The star was such an important part of the holiday season in Liberty that for many years Van Alstyne paid the cost of electricity out of his own pocket - usually a few hundred dollars. When Van Alstyne was suffering from Lou Gehrig’s disease in the 1970s, friends and community members stepped in to help. After Van Alstyne passed away, it was the dedication of his neighbor Linda Bult and her friend Barbara Burns that kept his memory shining bright. Bult went so far as to have the electricity meter for the star installed on her property and Burns handled donations to keep the lights on. After Bult passed away in 2009, the Liberty Elks Lodge was extremely generous in continuing to fund the Van Alstyne Star.

The Van Alstyne Star in Liberty turns 50 years old this holiday season. Join in on the Celebration at Liberty High School on Dec. 1.

Now fifty years after Richard Van Alstyne first made Liberty a brighter place, his son, Chris, is keeping the tradition alive. “My dad built the star and I am very proud of this, but I believe the real story is in all the folks that have kept it going for the 40 years after my father's death,” said Chris Van Alstyne. “It's an amazing community effort and a testament to the spirit of Liberty.” The official 50-year celebration will take place at the Liberty High School Cafeteria on Friday, December 1st, starting at 5 p.m., with the star lighting at 6 p.m. There will be light refreshments, a brief presentation on the history of the star and a special visit from Santa Claus himself. Participants are encouraged to bring donations of warm clothing or new, unwrapped toys to be distributed to local families in need this holiday season. For any questions about donations, please contact Troy Johnstone at johnstonetroy@yahoo.com.
