From humble beginnings, in 1979, they started first boarding horses and then moved on to growing produce for a family-owned farm stand that was run by Dominick and Mary with their sons, Paul, Mike, and Tom. Tom Manza, in the early 90s, started growing small trees and shrubs just on a quarter acre on the farm. Fast-forward to today, and that nursery now spans 20 acres. ore than half of the homes in America have pets and many of those pets get to sit alongside us while we celebrate the holidays. Some are more than happy to play with the paper or hop into a box while their human family members rip open their gifts. Some would rather watch the action from a comfortable vantage point. If you want to get your pet in on the holiday cheer why not bring home a special present for your friend? From toys to treats, here are some ideas for what to gift your pets... Treats: You really can’t go wrong with treats, unless you forget to check the ingredients or search for recalls. There are various resources at your fingertip to help slim down to only the safest options. The American Veterinary Medical Association and Dog Food Advisor both provide updated information on their websites for recalled food and treats. Better bowls: If your dog is a fast eater, it can suffer from a variety of health issues. Bloat can occur in any breed but is more common in deep chested dogs and can be fatal. Con-

sider getting your beloved dog a slow feeder bowl. Toys, toys, toys: The playful pet can make a toy out of anything. Some pets are more particular. Climbers for cats: Is there any better gift for cats than something to climb on? The traditional cat tree gets an upgrade as each year passes with the addition of wall-mounted trees, bridges, shelves, and cubbies to stimulate their playful side. GPS tracker: It is said that over 10 million cats and dogs go missing each year. Increase the likelihood that your furry friend will return quickly and safely by investing in a tracking device. The initial cost of gps trackers for pets used to be in the $800 range for a single hunting collar and receiver, but luckily today you can find gps trackers under $100. Most require a monthly service plan to function and those that don’t require one operate more like a microchip, making them useless if someone doesn’t find your pet. Chanukah foods steeped in tradition

C

hanukah, which roughly translates to “dedication” or “induction,” is a Jewish holiday celebrated each year in November and/or December, depending on the Jewish calendar. Although it may not hold the same level of spiritual significance as some other holidays of the religion, Chanukah is a highly anticipated and popular holiday among people who practice Judaism. Two miracles are celebrated on Chanukah. One of them is a victory by a small number of Jews known as the Maccabees, who defeated the Greek army occupying the Holy Land. The other miracle occurred when the Maccabees liberated their Temple from the Greeks. They only discovered a single night’s worth of oil to light the menorah. However, that oil managed to burn for eight days and nights. Chanukah celebrations include various traditions that commemorate these miracles. Many celebrations focus around food and fun. It’s common to find similar foods in Jewish households during the eight days of Chanukah. Here’s a look at some of the more common foods and their significance. • Latkes: Latkes have different names among the sects of Judaism, but they’re essentially fried potato pancakes. Different fried foods, like latkes, are eaten during Chanukah to honor the miracle of the oil that burned for eight days. Other fried foods

include jelly-filled doughnuts called “sufganiyot.” • Loukoumades: These deep-fried puffs dipped in honey or sugar are treats used to represent the cake eaten by the Maccabees. • Dairy: Dairy was not always included in Chanukah traditions, but cheese, blintzes and cheesecakes emerged to symbolize the story of Judith. Legend says Judith was a beautiful woman who saved her village from attacking Babylonians. Judith was able to enter the enemy camp thanks to her beauty, charm and a basket of wine and cheese she brought along. She fed the enemy general, Holofernes, who consumed lots of salty cheese and wine and passed out. Judith killed the general, and the Babylonians left shortly thereafter. • Brisket and tongue: Although these foods are not tied to a particular Chanukah story, they have grown quite popular as traditional Chanukah meals. Beef brisket pairs well with potato latkes, and beef or veal tongue also may be served. • Kugel: Potatoes are often baked, along with other hearty vegetables, into casseroles called “kugels.” • Challah: Challah is a leavened bread traditionally baked and served on the Sabbath and Jewish holidays. The braided white bread is both attractive to look at and tasty to eat. Food plays a big role in many Chanukah tradi-

he fourth annual Callicoon tree lighting was held on Friday, November 29 near the train depot. Hosted by the Callicoon Business Association, the event

brought out a large crowd. People of all ages enjoyed a roaring bonfire, roasting s’mores and keeping warm with hot chocolate. The festive celebration kicked off the holiday season. The town was decorated with wreaths, lights and other holiday decorations. 78978

1/2 cup shortening 1 cup sugar 1 egg 3 cups flour 2 tsp. cinnamon 2 tsp. ginger (ground) 1 tsp. ground cloves 1 cup molasses 1 cup buttermilk (or soured milk) 1/2 tsp. salt 2 tsp. baking soda

6 cups flour 3 whole eggs 3/4 cup butter or margarine 1 tbs. vanilla or rum l tsp. salt 3/4 cup milk 2 cups sour cream

Bake 375º in a lasagna pan for about 45 minutes. Top with butter icing using as liquid (cold coffee).

Combine flour and butter and mix as for a pie crust. Add eggs, vanilla or rum, salt, milk and sour cream. Blend well, roll out very thin. Cut indiamond shapes, make cut in the center and pull one end through the slit. Fry in deep oil until golden color. When done, sprinkle with powdered sugar.

Curried Meatballs

Zucchini Casserole

1 lb. Ground Chuck 1 egg 1 tsp. fennel seeds 1 tbsp. oil 1 tsp. cumin seeds 2 medium onions 1 1/2 c. crushed tomatoes Season according to taste with grated fresh ginger root, grated hot green pepper, salt, pepper, clove powder, cinnamon powder, and curry powder.

Cut 1 lb. zucchini into chunks. Add boiling salted water and cook ‘til tender - Drain and mash. Add 1 lb. pork sausage and 1 small onion diced in skillet and cook till browned - Drain excess grease. Add mashed zucchini and 1 cup cracker crumbs, 2 eggs (beaten) and 1 cup grated cheddar cheese. Add salt and pepper to taste. Bake at 350º for 30-35 minutes. Add 1 cup grated mozarella and paprika on top - Bake until cheese melts.

Place meat in a mixing bowl. Add fennel seeds and 1/2 tsp. each of salt, pepper, clove powder, cinnamon powder, curry powder, and grated ginger. Mix thoroughly, then add egg and mix again. Roll into balls and set aside. Heat oil in a pot. Add cumin seeds. When seeds are brown add finely chopped onions and saute until reddish-brown. Add crushed tomatoes and again add ground ginger, salt, pepper, clove powder, cinnamon powder, and curry powder to taste. Simmer until oil comes to top. Back to the meatballs. Add enough water to cover the meatballs and bring to a boil. Add meatballs to sauce mixture and simmer until meatballs are cooked and sauce thickens.) Put 1 tsp. of jam into middle and fold all four corners in. Lightly brush tops with egg white. Bake in 400º oven until golden - (5-7 min.) Venison Cutlets with Mushrooms To serve 6 10 whole juniper berries 5 whole black peppercorns 1 small bay leaf, crumbled 1/2 tsp. salt 1 cup thinly sliced fresh mushrooms 1/2 cup plus 1 tbsp. flour 4 tbsp butter 3/4 cup light cream 6 six-ounce venison cutlets preferably from the leg, cut 1/2 inch thick and pounded slightly

With a mortar and pestle, pulverize the juniper berries, peppercorns, crumbled bay leaf and salt together. Then firmly press the mixture with your fingertips into both sides of the venison cutlets. Dip the cutlets in 1/2 cup of flour and shake off any excess. In a heavy 12-inch skillet, melt the butter over moderate heat. When the foam subsides, add the cutlets (in two batches if they crowd the pan), and cook them for 2 or 3 minutes on each side, regulating the heat so that they color evenly without burning. Don’t overcook - when done, the cutlets should be slightly pink inside. Place the cutlets side by side on a heated platter and cover with foil to keep them warm while you prepare the sauce. Add the sliced mushrooms to the fat remaining in the skillet

and cook them over moderate heat, stirring frequently, for 3 or 4 minutes. Then stir in 1 tablespoon of flour and cook, stirring constantly, for a minute. Add the cream and cook, stirring until the sauce thickens slightly. Taste for seasoning. Pour the sauce over the cutlets and serve. Cut 1 lb. zucchini into chunks. Peanut Butter Acorns 2 cups confectioner’s sugar 1 1/4 cup chunk peanut butter 1/4 cup softened butter 2 cups Rice Krispies 6 oz. pkg. chocolate chips (melted in double boiler) Mix together first three ingredients. Butter Mints 1/4 cup butter or oleo margarine 2 tbs. water 1/4 tsp. salt 1/2 tsp. peppermint extract 1 1/2- 3 3/4 cups confectionery sugar Food coloring (optional) red or green Combine butter and water. Heat to melt butter. Remove from heat. Add salt and extract. Gradually add sugar until stiff enough to knead. Divide in parts and add color. Mold or form in small rolls to slice. (3 oz.) strawberry jello 1 cup boiling water Whip topping mix as directed on package. Add sugar to cream cheese, blending well; fold in prepared whipped topping. Spread evenly over bottom and sides of crust, mounting high at edge to form a rim. Chill. Drain berries, reserving syrup. Add water to syrup to make 1/2 cup. Dissolve jello in boiling water. Add measured liquid. Chill until thickened. Fold in strawberries and spoon into center. Chill.

1 frying chicken cut up 1/4 cup vegetable oil 1/2 cup vinegar 1 medium onion diced 2 cloves of garlic 2 stalks of celery 1/3 cup sugar In a large skillet add oil, heat over medium flame. Add chicken

and brown on both sides until golden brown on all sides. Remove chicken, place in a dtuch oven. Pour 1/2 cup vinegar over chicken, steam chicken and make sure the chicken is blended with the vinegar. Set aside. Meanwhile in a skillet with drippings left brown onion, celery and garlic. Pour over chicken, add sugar. Cover and simmer about 30 minutes. Serve hot. Salt and pepper to taste. Mix well, add to salad. Toss and refrigerate indefinitely. Serve topped with noodles. Topping: 1 pkg. Ramen noodles (crumbled in package) Fry in 2 tbs. oil until brown. Carefully dry on paper towels. Set aside.

Combine boiling water with cinnamon candies in saucepan; stir over low heat to dissolve candies. Remove from heat, stir in jello. Blend in applesauce. Pour 1/2 mixture into 2 quart mold. Chill until firm. Blend softened cream cheese and mayonnaise, add nuts. Spread over chilled mixture. Pour remaining jello mixture over top. Chill until firm. Oatmeal Chocolate Brownies

(Great-Grandma Brunners Recipe from Germany)

1 c. shortening 3/4 c. granulated sugar 3/4 c. brown sugar 2 eggs 1 tsp. baking soda 1 tbsp. hot tap water 1 1/2 c. flour 2 c. oatmeal 1 tsp. salt 1 tsp. vanila 1 pkg. chocolate chips - 6 oz. pkg. 1-6 oz. pkg. butterscotch chips

1 lb. butter (2 cups) 1/2 lb. sugar (1cup) 1/2 lb. ground almonds (skinned) 4 eggs 1 lb. flour (4 cups) 1/2 tsp. baking powder rind of 1 lemon Mix butter, sugar and eggs. Add almonds, dry ingredients and lemon rind. Chill evernight. Roll 1.4 in. thick and cut in shapes. Brush with beaten egg white. Sprinkle with mixture of 1/2 lb. ground almonds (skinned) and 1/2 lb. (i cup) sugar. Bake 10-12 mins. at 350ºF.

How to make holiday wreaths the easy way There are many different ways to decorate homes and businesses for the holidays. Tall evergreen trees are among the most visible symbols of the holiday season. However, wreaths hung on doors, windows or fences also are ubiquitous this time of year. Wreaths adorn homes primarily during the holidays of Easter and Christmas. Wreaths have also been worn around the head or neck in ceremonial events around the globe for centuries. It is believed the first wreaths date back to ancient Greece and Rome. Members of the GrecoRoman society were known to handmake ring-shaped items using fresh tree leaves, small fruits, flowers, and twigs. Oftentimes these headdresses symbolized a person’s social status. Others suggest wreaths evolved to become a Christian symbol of immortality.

Regardless of how wreaths are viewed, many people like to display wreaths for the holidays. Wreaths can be purchased premade, but making a wreath on your own can make the holidays even more fun. One of the easiest ways to make a wreath is to design it around a circular floral foam form. Gather supplies to make the wreath. For traditional wreaths, supplies will include sprigs of evergreen (real or artificial), ribbon, floral wire, bows, and artificial berries. Working around the foam form, arrange the boughs of evergreen, using the floral wire to wrap or pin into the foam itself. Keep the layers coming until you get the desired coverage.
