‘Dickens on the Delaware’ returns to Callicoon T

he annual holiday event “Dickens on the Delaware” will showcase the retail community in the picturesque hamlet of Callicoon-on-the-Delaware just in time for your holiday shopping. This year’s festivities, sponsored in part by the Callicoon Business Association, will take place on Saturday, December 12 from noon to 7 p.m. Retailers, galleries and restaurants will highlight their holiday goods and dazzle town visitors with their holiday spirit. Shopkeepers will be dressed in Victorian garb, with stores, restaurants and the surrounding environs decorated to create the days of yore. Callicoon will be transformed into a winter wonderland with Christmas trees and festive wreaths. Strolling carolers, along with stations set up throughout the town, will encourage visitors to explore all the streets and byways. (See sidebar)

A photo studio, featuring a Victorian Parlor, will provide opportunities for memorable holiday portraits by a professional photographer. Visitors will be able to keep warm at the Hot Chocolate Station, as they enjoy live opera and a performance by the Catskill Dance Company. Performers from the Delaware Valley Opera and NACL Theatre will also be on hand, contributing to the festive air. The Artisan Market will feature local goods and vendors in Harmonie Hall at the Victorian Western Hotel. And Callicoon retailers will all stay open until 7 p.m. to highlight the beauty of the historic town in the evening, while visitors will be able to warm their hands by outdoor fire stations. Wine, eggnog and hot chocolate will help get visitors into the holiday spirit of gift giving. Additional venues will include a Gift Wrapping Station, Mulled Wine and Potato Pancake sta-

lans have been announced for the fun-filled annual Holiday Open House sponsored by Highlights for Children. The Holiday Open House, which is open to the public and has become a tradition for many area families, will be held from 10 a.m. to 4 p.m. on Saturday, Dec. 5, 2015, at the Highlights editorial offices at 803 Church Street in Honesdale. The event features an array of activities, treats, entertainment, and the always-popular craft room where kids can make creations of all kinds with mounds of craft supplies. The entertainment includes music, storytelling, mime, sing-alongs, and more. Face painting and the creation of balloon animals are planned. Children may choose a surprise from the giant grab bag under the Christmas tree, and everyone may register for a free drawing to win special gifts. Also included this year will be the display of entries in the raffle for the Highlights Hidden Pictures®

Milanville General Store collects for wounded at Walter Reed

very holiday season the folks at the Milanville [PA] General Store depend on the generosity of the local community to help a family in need. This past summer, after meeting a Wounded Warrior while visiting Maryland, Vanessa Degori knew right away that she needed to do something. So this year the store will be helping not only one family but many families. The store is currently collecting the items listed below. (Donations are not limited to those listed and no donation is too big or too small.) Collected items will be brought to The Walter Reed National Military Medical Center. Santa will forever be ingrained in the holiday season, serving as an endearing symbol of the season regardless of your religious affiliation. Parents typically go to great lengths to ensure their children enjoy the holiday season. By keeping the magic of Santa alive, parents can add a special touch to the holiday season for their youngsters. Children may become more skeptical of Santa around the time they turn 10, but there are plenty of ways to encourage this spirit to live on year after year. • Read an uplifting story. The holidays are ripe with stories that tug at the heartstrings. Fresh Turkeys • Allow 1 pound of turkey per person. • Buy your turkey only 1 to 2 days before you plan to cook it. • Keep it stored in the refrigerator until you're ready to cook it. Place it on a tray or in a pan to catch any juices that may leak. • Do not buy fresh pre-stuffed turkeys. If not handled properly, any harmful bacteria that may be in the stuffing can multiply very quickly. Frozen Turkeys • Allow 1 pound of turkey per person. • Keep frozen until you're ready to thaw it. • Turkeys can be kept frozen in the freezer indefinitely; however, cook within 1 year for best quality. • See "Thawing Your Turkey" for thawing instructions. Frozen Pre-Stuffed Turkeys USDA recommends only buying frozen pre-stuffed turkeys that display the USDA or State mark of inspection on the packaging. Place it on a tray or in a pan to catch any juices that may leak. A thawed turkey can remain in the refrigerator for 1 to 2 days. If necessary, a turkey that has been properly thawed in the refrigerator may be refrozen. In Cold Water Allow approximately 30 minutes per pound 4 to 12 pounds – 2 to 6 hours 12 to 16 pounds – 6 to 8 hours 16 to 20 pounds – 8 to 10 hours 20 to 24 pounds – 10 to 12 hours Wrap your turkey securely, making sure the water is not able to leak through the wrapping. Submerge your wrapped turkey in cold tap water.

A user’s guide to safely preparing your Thanksgiving Feast, Complements of the USDA Change the water every 30 minutes. Cook the turkey immediately after it is thawed. Do not refreeze. In the Microwave Oven • Check your owner's manual for the size turkey that will fit in your microwave oven, the minutes per pound and power level to use for thawing. • Remove all outside wrapping. • Place on a microwave-safe dish to catch any juices that may leak. • Cook your turkey immediately. Do not refreeze or refrigerate your turkey after thawing in the microwave oven. REMINDER: Remove the giblets from the turkey cavities after thawing. Cook separately. Roasting Your Turkey • Set your oven temperature no lower than 325 °F. • Place your turkey or turkey breast on a rack in a shallow roasting pan. • For optimum safety, stuffing a turkey is not recommended. For more even cooking, it is recommended you cook your stuffing outside the bird in a casserole. Use a food thermometer to check the internal temperature of the stuffing. The stuffing must reach a safe minimum internal temperature of 165 °F. • If you choose to stuff your turkey, the ingredients can be prepared ahead of time; however, keep wet and dry ingredients separate. Chill all of the wet ingredients (butter/margarine, cooked celery and onions, broth, etc.). Mix wet and dry ingredients just before filling the turkey cavities. Fill the cavities loosely. Cook the turkey immediately. Use a food thermometer to make sure the center of the stuffing reaches a safe minimum internal temperature of 165 °F. • A whole turkey is safe when cooked to a minimum internal temperature of 165 °F as measured with a food thermometer. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast. For reasons of personal preference, consumers may choose to cook turkey to higher temperatures. • If your turkey has a "pop-up" temperature indicator, it is recommended

that you also check the internal temperature of the turkey in the innermost part of the thigh and wing and the thickest part of the breast with a food thermometer. The minimum internal temperature should reach 165 °F for safety. • For quality, let the turkey stand for 20 minutes before carving to allow juices to set. The turkey will carve more easily. • Remove all stuffing from the turkey cavities. Timetables for Turkey Roasting (325 °F oven temperature) Use the timetables below to determine how long to cook your turkey. These times are approximate. Always use a food thermometer to check the internal temperature of your turkey and stuffing. It will allow you to check the internal temperature of the turkey while it is cooking. For turkey breasts, place thermometer in the thickest part. For whole turkeys, place in the thickest part of the inner thigh. Once the thigh has reached 165 °F, check the wing and the thickest part of the breast to ensure the turkey has reached a safe minimum internal temperature of 165 °F throughout the product. • If using an oven cooking bag, follow the manufacturer's guidelines on the package. REMEMBER! Always wash hands, utensils, the sink, and anything else that comes in contact with raw turkey and its juices with soap and water. Storing Your Leftovers • Discard any turkey, stuffing, and gravy left out at room temperature longer than 2 hours; 1 hour in temperatures above 90 °F. • Divide leftovers into smaller portions. Refrigerate or freeze in covered shallow containers for quicker cooling. • Use refrigerated turkey, stuffing, and gravy within 3 to 4 days. • If freezing leftovers, use within 2 to 6 months for best quality. Reheating Your Turkey Cooked turkey may be eaten cold or reheated.

It is safe to cook a turkey from the frozen state. The cooking time will take at least 50 percent longer than recommended for a fully thawed turkey. Remember to remove the giblet packages during the cooking time. Remove carefully with tongs or a fork.

4 egg yolks 1/3 cup sugar, plus 1 tablespoon 1 pint whole milk 1 cup heavy cream

In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine. Place the egg whites in the bowl of a stand mixer and beat to soft peaks.

Social schedules will be full, and men and women everywhere will shuffle to complete their holiday shopping. Grab bags are a staple of this season of giving, and the following are a few dos and don’ts to ensure participation in gift exchanges is fun and friendly for all involved. DO set a gift amount limit. Holiday grab bags are more about having fun and exchanging a little something with friends and family members than walking away with amazing prizes. Establish a spending limit so everyone receives a gift of roughly the same value and no one feels slighted or left out. DON’T exceed the spending limit. Overspending defeats the purpose of the gift exchange. DO make it a game. Tossing gifts in a bag only to have others reach in

BEACH LAKE, PA — A day of Christmas activities and celebration takes place at the Beach Lake United Methodist Church, in Beach Lake, Pa., on Saturday, December 12. A cookie and ornament sale for the youth fellowship will be held from 8:30 a.m. to 2 p.m. Children age 3 to 11 are invited to join in the Kids’ Christmas Fun Day, from 9 to 11 a.m. Fair trade sampling takes place from 8 a.m. to 2 p.m., and continues on Sunday, December 13, from 7 a.m. to 2 p.m. Try some before you buy it!

Check out coffee, tea, hot chocolate, chcoolate bars, baking items, fruit and nut bars, dried fruits, nuts, james, honey and olive oil. Christmas Dinner, will be served from 11:30 a.m. to 12:30 p.m. Join us for a delicious Christmas feast. All events are free and open to everyone.
