‘All aboard for November 29 kickoff’
T
Trains on Main pulls into the Manor
he Livingston Manor Chamber of Commerce and the Catskill Art Society will throw a grand opening party for “Trains on Main,” the seventh annual holiday train spectacular, at the CAS Arts Center at 48 Main Street, Livingston Manor on Saturday, November 29 from 1-4 p.m. This nostalgic trip back in time features handmade model trains on view in windows up and down Main Street. To kick off our favorite local tradition, a special Grand Opening party will be held for you to see the miniature trains up close, talk to the model builders, and listen to live music from Paul Lounsbury and Friends! At 1 p.m., model train maker Charlie Irace and speakers from the O&W Museum will gather for a talk at the Laundry King at 65 Main Street, Livingston Manor. They will unveil the historical display of real train artifacts, gear, signage, clothing, and more. Their discussion will bring to life the evolution of train travel and its

impact on Sullivan County life in its heyday. At 2 p.m., the debut of the model
trains at the CAS Arts Center will resound with free candy for kids. At 3 p.m., musician Paul Lounsbury
and Friends will play a special set of songs inspired by the romantic train culture at the Laundry King. All ages are welcome for this rare set celebrating the timeless wonder of trains. Bring the kids and enjoy this spectacular holiday treat! Trains on Main will be on display at the CAS Arts Center, Morgan Outdoors, and other businesses around Livingston Manor throughout December. Visitors can enjoy the show up close or looking in the windows even when closed to experience the magical nostalgia of the season. Gallery hours at the CAS Arts Center are Thursdays–Saturdays from 11 a.m.–6 p.m., Sundays from 11 a.m.-3 p.m., and Mondays from 11 a.m.-6 p.m.. The CAS Arts Center is wheelchair accessible. CAS will be closed on Thursday, December 25 for Christmas break and will remain open through Monday, December 29.

Callicoon Trading on a theme by Dickens
An antique wardrobe is chock full of beautiful scarves and housewares inside Callicoon Trading, located along Upper Main Street in the heart of this riverside town.

he newly opened Callicoon Trading is located on Upper Main Street in a historic 1862 Victorian T building and was inspired by traditional goods vendors that were once a part of the celebrated railroad town. The store is dedicated to beautiful products that honor technique and tradition, including jewelry, ceramics and wood pieces produced by local artisans. Owner Irene Nickolai also creates a line of jewelry including earrings, bracelets and necklaces made from semi-precious stones and beads. Candles, antiques, soap and populate various corners of the bright, airy, uncluttered shop. Prices range from $10 to $900, making Callicoon Trading a place for any gift-seeker. Callicoon Trading is also creating a
platform for fine art – a former art gallery owner in New York City, Irene is proud to show the works of local artists like Eva Drizhal, James Gann, Brandi Merolla, Cara Enteles, Andrea Brown and Gina Kaufman. Friday, November 28 will also feature Honesdale’s Annual Santa Parade. The parade, which kicks off at 6:00 p.m., starts at Main and Fourth Streets, proceeds up Main Street, turns right on tenth Street, and proceeds to Honesdale’s Central Park. Activities in Central Park immediately after the parade and co-
sponsored by our friends at 95.3 DNH & Classic Hits 105.3, will include the lighting of the Star on Irving Cliff, the lighting of the Christmas Tree in the park and Holiday Music, all under Santa’s twinkling eyes. And there will be time for the children to visit with Santa after the festivities.
On Saturday, November 29, craft vendors will dot Main Street near the pavilion. Make sure to look for Santa and his buddies Rudolph and Frosty as you stroll the streets.. They may have a special treat for that good little boy or girl. Beautifully clad Victorian strollers will promenade the historic streets while the joyful voices of the Honesdale High School Chamber Choir offer carols as they stroll down on Main Street from 11:00 a.m. to 1:00 p.m. The Greater Honesdale Partnership will also be offering a FREE holiday shopper’s trolley from 10:00 a.m. to 5:00 p.m. on Saturday. This free trolley will not only offer shoppers and visitors the chance to leave their car parked in one location throughout the day, but will offer a historic tour of the downtown area for their enjoyment. The Stourbridge Model Railroad Club will also host 29 in the Grace an Open House on Saturday, November 28 Episcopal Parish Hall located at 827 Church Street from 11:00

Take a step back into time as you enjoy watching this beautiful recreation. The newly renovated and expanded Wayne County Historical Society Museum, located at 810 Main Street, right in the center of town, features a full-scale replica of the famous Stourbridge Lion – the first locomotive to run on a track in America. The museum also contains many interesting photographs from days gone by, and is open on Friday from 10:00 a.m. to 4:00 p.m. and Saturday from 10:00 a.m. to 7:00 p.m. They invite you to join them for their annual Open House on Saturday, November 29, beginning at 4:00 p.m. Be sure to pick up this year’s collectible holiday ornament, or one of many other holiday gifts available in their gift shop. The Museum Shop has a wide variety of books on local history, geology, environment, folklore and Native Americans, handmade gift items made by local artisans, historical toys, stationary and even candy. “The Giving Tree” will have Dana Distributors Inc. as a host location this Holiday season. The Giving Tree will put clothing and gifts in the hands of children in need across Orange & Sullivan Counties. As a host site Dana Distributers will display a non-denominational holiday tree, drawn by the Club kids, with ornaments that list a child’s first name, age, and size/hobby information. From November 21 through December 15, donors can sign up, take an ornament and return a gift for the child listed on their ornament. From December 15-19th, the Club staff and volunteers will collect and distribute the gifts to Club kids and other children in need in our Counties.

thnic foods are one of those things which many different groups of people can identify themselves. I believe those traditional meals we prepare; especially at certain times of the year are reminders of grandma and grandpa and the family heritage gifted to us by our ancestors who bravely traveled to America. To those of us with German roots we are all familiar with Sauerbraten, pot roast, and homemade sauerkraut, among many other German dishes. Do you know how many different varieties of sausage that are made in Germany? The number is staggering. And did you know that the potato was not accepted as a table vegetable until the mid 1800s? The Germans simply regarded the potato as livestock feed – interesting, don’t you think? Compared to many of the German families who settled in this region,
ours are relatively newcomers to America. I can’t remember any processed food in our house and everything we ate was virtually made from scratch. I still prefer to cook the good old-fashioned way. My mother had a very heavy accent and if sometime I didn’t understand her attempt to grind out the word in English, I would just respond “ya mom,” but I always knew that when she cooked something special the stories were reminders about her hometown back in Kaulback, Germany. My oldest son Stephan recently visited some family in Kaulback and cooked a dinner that my cousin Magaretha made for him. So I tried it and frankly it was horrible, though it did however look familiar to me, and I got this neat idea for a recipe to share with you folks out there. I don’t remember the actual name for this dish but mom would usually prepare this kind of thick sauerkraut stew in mid winter. So I’ll just Americanize the name with a trans-

lated twist just for fun. Sweet and Sour Stewed Pork with Apple dressing, or as they would say Suss und Sauer across the pond, GeschmorteScheinefleisch mit Apfelmus.
INGREDIENTS:
Fresh Garlic: 8-10 pieces, crushed Bacon: 6-8 strips cut into 2-inch pieces Boneless Pork Chop: 5-6 pieces, the thicker the better. Carrots: 6 sliced on an angle Sweet Potato or Yams: 2 large, cubed Onion: 1 sweet, diced Sauerkraut: 1 can (16 oz.) or fresh Beer: 1 12/16 oz. can, do not use light beer. Red Wine Vinaigrette: 4 tablespoons Apple sauce: Homemade or store bought “chunky,” half jar or 12oz Ginger snap cookies: 6-8 crushed (your choice) DIRECTIONS
Will serve 5-6 people. Make sure to use a large deep skillet with cover Prepare all ingredients prior to cooking. Place bacon pieces on bottom of skillet and add crushed garlic. Cook at medium heat until bacon is just rendered. Slightly stir bacon and garlic with a wood spoon. Place pork on top of bacon and garlic – do not brown meat. Immediately put carrot on top of meat fol-

lowed by sweet potato or yams cubes followed by onions, then sauerkraut, maintaining medium heat. Add beer over contents. Cover and simmer for half hour. Remember do not stir. After the first half hour reduce heat and continue to cook for half hour. Remember you will be about at the halfway point of the cooking time. (1 hour) Using a large spoon gently lift meat to about center of mixture so it is covered on all sides by vegetables. I watched my mother do it this way and it works fine. Now add Vinaigrette and cover, using low heat for half hour. Remember do not stir. The surface should continue to bubble. At the end of the half hour add apple mixture covering entire surface and sprinkle ginger snap crumbs on top. Cook another 20 minutes or until surface bubbles. Remove from heat and let rest for 10 minutes and then serve. Remember, do not stir or it will wind up looking like a massive train wreck. This is a layered dish, so imagine it as a stack of pancakes cooked from the bottom to the top. And for those who are afraid of animal fats – they add flavor to this kind of dish, and the sauerkraut and apple enzymes neutralize most of the fat anyway. Did you ever wonder why apple sauce is served with pork? This is the reason why.

Fresh Turkeys • Allow 1 pound of turkey per person. • Buy your turkey only 1 to 2 days before you plan to cook it. • Keep it stored in the refrigerator until you're ready to cook it. Place it on a tray or in a pan to catch any juices that may leak. • Do not buy fresh pre-stuffed turkeys. If not handled properly, any harmful bacteria that may be in the stuffing can multiply very quickly. Frozen Turkeys • Allow 1 pound of turkey per person. • Keep frozen until you're ready to thaw it. • Turkeys can be kept frozen in the freezer indefinitely; however, cook within 1 year for best quality. • See "Thawing Your Turkey" for thawing instructions. Frozen Pre-Stuffed Turkeys USDA recommends only buying frozen pre-stuffed turkeys that display the USDA or State mark of inspection on the packaging. Follow package directions for proper handling and cooking. Allow 1¼ pounds of turkey per person. Thawing Your Turkey There are three ways to thaw your turkey safely — in the refrigerator, in cold water, or in the microwave oven. In the Refrigerator (40 °F or below) Allow approximately 24 hours for every 4 to 5 pounds 4 to 12 pounds – 1 to 3 days 12 to 16 pounds – 3 to 4 days 16 to 20 pounds – 4 to 5 days 20 to 24 pounds – 5 to 6 days Keep the turkey in its original wrapper. Place it on a tray or in a pan to catch any juices that may leak. A thawed turkey can remain in the refrigerator for 1 to 2 days. If necessary, a turkey that has been properly thawed in the refrigerator may be refrozen. In Cold Water Allow approximately 30 minutes per pound 4 to 12 pounds – 2 to 6 hours 12 to 16 pounds – 6 to 8 hours 16 to 20 pounds – 8 to 10 hours 20 to 24 pounds – 10 to 12 hours Wrap your turkey securely, making sure the water is not able to leak through the wrapping. Submerge your wrapped turkey in cold tap water.

A user’s guide to safely preparing your Thanksgiving Feast, Complements of the USDA Change the water every 30 minutes. Cook the turkey immediately after it is thawed. Do not refreeze. In the Microwave Oven • Check your owner's manual for the size turkey that will fit in your microwave oven, the minutes per pound and power level to use for thawing. • Remove all outside wrapping. • Place on a microwave-safe dish to catch any juices that may leak. • Cook your turkey immediately. Do not refreeze or refrigerate your turkey after thawing in the microwave oven. REMINDER: Remove the giblets from the turkey cavities after thawing. Cook separately. Roasting Your Turkey • Set your oven temperature no lower than 325 °F. • Place your turkey or turkey breast on a rack in a shallow roasting pan. • For optimum safety, stuffing a turkey is not recommended. For more even cooking, it is recommended you cook your stuffing outside the bird in a casserole. Use a food thermometer to check the internal temperature of the stuffing. The stuffing must reach a safe minimum internal temperature of 165 °F. • If you choose to stuff your turkey, the ingredients can be prepared ahead of time; however, keep wet and dry ingredients separate. Chill all of the wet ingredients (butter/margarine, cooked celery and onions, broth, etc.). Mix wet and dry ingredients just before filling the turkey cavities. Fill the cavities loosely. Cook the turkey immediately. Use a food thermometer to make sure the center of the stuffing reaches a safe minimum internal temperature of 165 °F. • A whole turkey is safe when cooked to a minimum internal temperature of 165 °F as measured with a food thermometer. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast. For reasons of personal preference, consumers may choose to cook turkey to higher temperatures. • If your turkey has a "pop-up" temperature indicator, it is recommended
that you also check the internal temperature of the turkey in the innermost part of the thigh and wing and the thickest part of the breast with a food thermometer. The minimum internal temperature should reach 165 °F for safety. • For quality, let the turkey stand for 20 minutes before carving to allow juices to set. The turkey will carve more easily. • Remove all stuffing from the turkey cavities. Timetables for Turkey Roasting (325 °F oven temperature) Use the timetables below to determine how long to cook your turkey. These times are approximate. Always use a food thermometer to check the internal temperature of your turkey and stuffing. Unstuffed 4 to 8 pounds (breast) – 1½ to 3¼ hours 8 to 12 pounds – 2¾ to 3 hours 12 to 14 pounds – 3 to 3¾ hours 14 to 18 pounds – 3¾ to 4¼ hours 18 to 20 pounds – 4¼ to 4½ hours 20 to 24 pounds – 4½ to 5 hours Stuffed 4 to 6 pounds (breast) – Not usually applicable 6 to 8 pounds (breast) – 2½ to 3½ hours 8 to 12 pounds – 3 to 3½ hours 12 to 14 pounds – 3½ to 4 hours 14 to 18 pounds – 4 to 4¼ hours 18 to 20 pounds – 4¼ to 4¾ hours 20 to 24 pounds – 4¾ to 5¼ hours

To prevent overbrowning, foil may also be placed over the turkey after it reaches the desired color. • If using an oven-proof food thermometer, place it in the turkey at the start of the cooking cycle. It will allow you to check the internal temperature of the turkey while it is cooking. For turkey breasts, place thermometer in the thickest part. For whole turkeys, place in the thickest part of the inner thigh. Once the thigh has reached 165 °F, check the wing and the thickest part of the breast to ensure the turkey has reached a safe minimum internal temperature of 165 °F throughout the product. • If using an oven cooking bag, follow the manufacturer's guidelines on the package. REMEMBER! Always wash hands, utensils, the sink, and anything else that comes in contact with raw turkey and its juices with soap and water. Storing Your Leftovers • Discard any turkey, stuffing, and gravy left out at room temperature longer than 2 hours; 1 hour in temperatures above 90 °F. • Divide leftovers into smaller portions. Refrigerate or freeze in covered shallow containers for quicker cooling. • Use refrigerated turkey, stuffing, and gravy within 3 to 4 days. • If freezing leftovers, use within 2 to 6 months for best quality. Reheating Your Turkey Cooked turkey may be eaten cold or reheated.
It is safe to cook a turkey from the frozen state. The cooking time will take at least 50 percent longer than recommended for a fully thawed turkey. Remember to remove the giblet packages during the cooking time. Remove carefully with tongs or a fork.
In the Oven • Set the oven temperature no lower than 325 °F. • Reheat turkey to an internal temperature of 165 °F. Use a food thermometer to check the internal temperature. • To keep the turkey moist, add a little broth or water and cover.
Optional Cooking Hints • Tuck wing tips under the shoulders of the bird for more even cooking. This is referred to as "akimbo." • Add ½ cup of water to the bottom of the pan. • If your roasting pan does not have a lid, you may place a tent of heavy-duty aluminum foil over the turkey for the
