Chef

THE NAKED

Words by Luke Harman

LOVE HIM OR HATE HIM, THERE IS ONE THING THAT CAN’T BE DENIED ABOUT JAMIE OLIVER, HE IS A PIONEER. HE HAS SINGLEHANDEDLY REVOLUTIONISED FOOD AND THE WAY WE THINK ABOUT FOOD HERE IN BRITAIN AND IS CURRENTLY ON A MISSION TO EDUCATE OUR TRANSATLANTIC BROTHERS AND SISTERS ABOUT SMART COOKING AND THE DANGERS OF UNHEALTHY EATING.

22  SCENE

Now a household name in the UK, and as a result of his efforts to replicate his success in British schools where he famously exiled the once loved ‘turkey twizzler’, Jamie is fast becoming a sensation in the US with his tough love and eradication programme of all that is bad about lunches in the mainstream American education system. Just recently, on the 15th June, Jamie and his American Food Revolution was instrumental in the removal of flavoured milk from all schools in the state of Los Angeles where the pupils will now only receive wholesome, plain white milk instead of ‘liquid candy’ with their meals - an impressive coup for the Essex-born chef and another achievement to add to an already impressive repertoire. Such esteem that Jamie now seems to command does not appear out of thin air however. Now in his fourteenth year as a television personality Jamie Oliver has grafted his way to the top. He has matured drastically from the over-zealous, albeit charismatic, catchphrase-ridden Naked Chef who burst onto our screens way back in 1997. An overnight success, the Naked Chef turned Jamie into a talismanic modern-day celebrity chef which propelled him on his way to becoming the much-loved campaigner we see today. And not content with being labelled solely as a TV cook, Oliver has expanded his portfolio of work, with almost unwavering success, across a number of food-related sectors these past few years. It all started for Jamie however at his parent’s country inn, The Cricketers, in Clavering, a humble little village in Essex just north of Bishop’s Stortford. Trevor and Sally Oliver, who still run the pub-cum-restaurant today, soon brought Jamie and his sister Anna-Marie into the family business as a means of earning their pocket money. Anna-Marie followed in her mother’s footsteps helping out as a waitress in front of house while Jamie began to enthusiastically shadow his professionally trained father in the kitchen. His fascination for food continued to grow and at 16 Jamie left school and completed his training at Westminster Catering College. After spending some time working in France, followed by a stint at Antonio Carluccio’s Neal Street Restaurant in London, Jamie joined the acclaimed River Café where he worked for three and a half years before eventually being offered his own television show, the aforementioned Naked Chef, after being featured in a documentary about the River Café.

SCENE  23

Since then he has not looked back. With eleven television series under his belt and fourteen books (his 2010 book, Jamie’s 30 Minute Meals, became his first million-selling book in the UK as well as being the fastest-selling nonfiction book since records began), Jamie Oliver has been an ever-present character on British television, bookshelves and high streets with his brand of Italian restaurants for many a year. More recently however we have been forced to share him with the world as he continues to aim high and conquer the globe of culinary sins. He is, to an extent, taken for granted. Following his efforts in opening a training restaurant for young people who were not in full time education or employment, which subsequently became Fifteen, Jamie went on to establish the Jamie Oliver Foundation. The Foundation is a registered charity whose mission is to empower, educate and engage as many people as possible to love and enjoy good food. This means learning how to cook, understanding where food comes from, and recognizing the power it can have on our health, happiness, and even finances. The foundation does this through teaching, training and employment, and also by making good clear information available to as many people as possible. In 2003 Jamie was awarded an MBE for services to the hospitality industry. However, not one to rest on his laurels, Jamie has continued to grow the foundation in order to fulfil his never-ending quest to give back to the industry that made him the icon he has become. Arguably it is in America where Jamie’s achievements are perhaps the most remarkable. As touched upon earlier, Jamie’s American Food Revolution has sought to expel the bad and instil the good in all things

culinary in a nation so fraught with childhood obesity troubles. His success stateside has perhaps fallen under the radar somewhat. Aside from winning an Emmy Award for Outstanding Reality Programme in 2010, Jamie’s American Food Revolution is an ongoing project that aims to save the health of America’s next generation. The campaign promotes the importance of children needing better food at school to ensure better health prospects, as well as endeavouring to keep cooking skills as part of the teaching curriculum. His endless and hectic work schedule is an indication of the measure of the man. Ensuring the wellbeing of the future of his own nation is one thing, but to attempt to alter a long-established way of life in a different country, and as a foreigner, is quite another. Slowly but surely however, he is getting there. The American parents, much as their British predecessors are listening to the message that there are hidden dangers in their children’s food and with the right action they can improve their health and improve their futures. It is a message that will resonate so very loudly with his own children one would imagine. Recently becoming a father for the fourth time to baby Buddy, Jamie and his wife Jools also have three girls, Poppy, Daisy and Petal. With an ever-expanding family of his own to look after it is a wonder as to how Jamie Oliver finds the time to do all that he does. However, with his latest venture, The Big Feastival, taking place on Clapham Common on July 1, 2 & 3 dubbed as a first class extravaganza of food and music, as well as other television projects in the not too distant pipeline, the cheeky-chappy chef is showing no signs of hanging his apron up just yet. Pukka.

NO MORE MUMMY TUMMY WITH HYPOXI Celebrities are constantly photographed looking super svelte in size 6 bodycon dresses just weeks after giving birth while new mums across the land feel their hearts collectively sink. From Miranda Kerr to Victoria Beckham there is no postpartum paunch in sight. Having given birth to my third child just three months ago, I was one of those women who were left not just downhearted, but downright jealous to witness the absence of the wobbly porridge-like tummy that the rest of us new mummies have become oh-so-familiar with. Until that point, I’d felt pleased with myself for losing 1½ st without any help apart from running around after my two elder children. But still aware that I have over 1st to go to get back to my ‘size 10 on a good day’ self, I desperately wanted to find something to help me achieve what the celebrities had done. The answer: a space-age-sounding device called the Hypoxi vacusuit. It’s basically a sealed compression chamber that contains a horizontal or vertical bike. It works by creating a vacuum while you work out, which, if the results are to be believed, sucks the fat from your body. My personal Hypoxi expert, Lucy, holds up a cross between a wetsuit and a corsetstyle bodice and explains I’ll be wearing this while I pedal away horizontally for 30 minutes inside the compression chamber. 34  SCENE

Hypoxi promises inch loss, not specifically weight loss, by using the vacuum therapy to draw fatty acids from your stomach, thighs, bum and hips to ensure you’re burning calories from those parts of the body before anywhere else.

to spur me on for the final six sessions. However, I’m not expecting much, as I don’t feel I’m doing much, so am shocked to learn I’ve lost 2.5cm from my waist, another 2.5cm from my hips and 2cm from each thigh, as well as losing 4lbs.

Lucy warns there may be only a slight change on the scales, but there should be a sizeable shrinking of those target areas, with most women dropping one or two dress sizes during a 12-week course. Better still, the results are said to be permanent.

I count down through my final six sessions and am surprised to find myself feeling glum about them finishing. My final measurement day comes. I’m nervous, not least because I’ve been cheating on weekends, eating dinner at 9pm followed by cheese and wine till midnight. Lucy says I’m allowed to slip up occasionally.

Lucy talks me through the exercise programme (half an hour three times a week for four weeks) before embarking on the diet rules: no alcohol on days you work out, and after that only in moderation; no carbohydrates for four hours after a work out; drinking two or three litres of water every day; and no food after 7pm. After having everything measured and being reassured I was a prime candidate for Hypoxi to work its magic, I don my vacusuit and climb into the machine. I feel proud of myself for going and I’m already looking forward to my next session in a couple of days. Once I’m home, I examine my once-glorious midriff for any sign of change - needless to say I’m disappointed. Undeterred, I keep going back and abide by the nutritional rules. My sixth session comes and Lucy whips out her tape measure. The halfway results are intended

It’s all I can do not to fall over when Lucy tells me that in four weeks I’ve lost another 3cm on my stomach, 4cm on my waist, 4.5cm on my bum and 3cm on my hips. I haven’t lost any more weight, but since starting the course I’ve lost a whopping 10ins from my waist down to my thighs. And, most importantly, I’ve made a serious dent on my post-pregnancy paunch. I’m impressed with the vacusuit. I could have got better results if I’d stuck to the diet religiously, but being a gym virgin I’ve needed my down time. If there’s a chance of looking like Miranda Kerr, slipping on a vacusuit and climbing into that space-age contraption are worth it. FIGHT OR Flight Shaolin Warriors have been around since 476AD, and firearms aside, they are as efficient killing machines as any member of the Marines or SAS forces. Yet unlike Japanese Ninjas, Chinese Shaolin Warriors are as opposed to engaging in combat as Yin is opposed to Yang… although their fighting skills and defensive and offensive abilities are quite comparable. Perhaps unsurprisingly then, Shaolin Warriors also prefer operating under the cover of darkness and don’t like to draw attention to themselves or being called Ninjas!

SHAOLIN ESSENTIAL SELF-DEFENCE SKILLS No 1 Get along with people if you don’t take sides and don’t upset anyone there aren’t that many reasons for people to cross you. No 2 Heighten your state of awareness Meditate. Cut down your internal monologue. Lighten your load! Open your eyes to what is happening around you. Spot trouble coming before it locates you. No 3 Flight Quite simply, get as much distance between you and trouble to render you out of harm’s way! No 4 Kungfu Fighting As a last resort, efficiently inhibit and (if necessary) dispatch the threat

36  SCENE

Shaolin Temple Kungfu is a flight or fight Martial Arts System, with the emphasis on flight. Shaolin Master Shi Heng Xuan believes his fighting forms and weapons mastery are pretty effective forms of self-defence, but for staying out of harm, he values three Shaolin essential Self-Defence Skills over and above his fighting proficiency. Shi Heng Xuan has opened a new Taichi and Shaolin School, The Zen Studio, in Loughton High Road. Epping Forest reminds him of the environs of the Shaolin Temple where he trained 6-8 hours a day, 6 days a week, 50 weeks a year for 15 years. In fact Shaolin means “sparse forest”. Early in the 4th Century AD the slopes of the Song Shan Mountain were newly planted with the now mature forest where the Temple sits. Bullying is perhaps the most predominant reason that individuals seek out instruction at The Zen Studio. Whilst surrounded in a supportive environment, bullied individuals can develop skills that will bolster their senses of self, self-esteem & self boundaries, allowing them to become more assertive in their interactions

with others, and more confident in their ability to defend themselves against the predatory individuals that turn up in all walks of life, not just in the playground.

Shaolin / Chan Buddhists are opposed to suffering. Shaolin Warriors do not get bullied and will not tolerate bullying. They do not respect anyone who perpetrates bullying around them and they have methods for handling the disrespectful behaviour of others. Shaolin Masters each spend at least 10 years in residential Warrior schools, where they learn a lot more beside the beguiling kickass moves that make them legendary. They come from bully-free environments, such that they are highly sensitized to bullying around them, allowing them to see and react to covert bullying long before others. Fortunately they also learn in Warrior school many ways to pre-empt and de-programme bullies. Thus the Masters pass on and step in to ensure that all students can experience and practice Chan and Kungfu in stress free non-tyrannical environments whether in The Zen Studio or outside of it. A range of Shaolin Kungfu, Qigong, Taichi, KickBoxing and Weapons classes, both group and private are now available at The Zen Studio. Find out more at www.thezenstudio.co.uk, visit The Zen Studio at 228b, High Road, Loughton, Essex IG10 1ET or call 0208 508 1837 for more info.

LIFE OF MERIDIAN DESIGNS, ENGINEERS AND MANUFACTURES STATE-OFTHE-ART AUDIO AND VIDEO HOME ENTERTAINMENT SYSTEMS. AUDIO EQUIPMENT OF SUCH HIGH QUALITY THAT IF A MICROPHONE CAN DETECT IT, THE SYSTEM CAN REPRODUCE IT. VIDEO COMPONENTS SO ADVANCED THEY OFFER A UNIQUELY REALISTIC CINEMA EXPERIENCE. Meridian designs, engineers and manufactures state-of-theart audio and video home entertainment systems. Audio equipment of such high quality that if a microphone can detect it, the system can reproduce it. Video components so advanced they offer a uniquely realistic cinema experience. With groundbreaking developments in high performance audio and visual technology, Meridian pursues its desire to lose as little as possible from the original source. The result: richer, more detailed reproduction where information is processed beyond the range of the human ear and to the limits of the human eye. Discover Meridian and discover the true meaning of high performance. 40  SCENE

SCENE  41

Music may surround us, available whenever we want, at our fingertips, on demand, in an instant. But does that mean we enjoy it all the more? How often do we really listen closely? Ever since Meridian was founded by Bob Stuart and Allen Boothroyd in 1977, their audio systems have been all about the quality of the listening experience. Enjoying the very best. Appreciating the finest available music for listening pleasure, not mere background noise. At the heart of the Meridian philosophy, and the driving force behind the company’s pursuit of perfection, is the desire to lose as little as possible of the original source material when it is reproduced. Every link in the chain, from recording to reproduction, represents an opportunity for information to be lost and quality to be comprised. By seeking to address this problem, Meridian has invented many unique technologies and set some of the highest benchmarks in performance standards. And while these advances have been the result of some extremely clever technological thinking, what is really important is the experience it enables for the listener and viewer. A richer, deeper, more detailed experience – one you can get lost in. Reproduction so pure you’ll find yourself at the heart of the performance, perceiving undiscovered nuances no matter how subtle. Meridian founders, Bob Stuart and Allen Boothroyd, met in Cambridge in the early 1970s, and it was through a shared love of music that they became friends. But it was their desire to hear so much better the music they loved that inspired them to design and manufacture their own studio equipment and so Meridian was born. They met at a period in time when high-performance audio manufactures were concentrating on producing the best separates they could : turntables, amplifiers or loudspeakers. But what frustrated the Meridian founders was that these individual components were not necessarily being designed to be used together, and how that often resulted in a reduction in sound quality. So the idea was born to focus on making systems. Comprising separates, yes, but separates specifically designed with the other components in mind to form a complete audio pathway, after all what amplifier could be better equipped to communicate with a Meridian loudspeaker than a Meridian amplifier? Founder Bob Stuart is fond of the analogy, “Would you buy your car’s engine from one manufacturer and its suspension and transmission from another?” From their first production model, an active loudspeaker named the M1, to the groundbreaking form and performance of DSP8000 loudspeakers, every piece bearing the Meridian name has evolved from the original determination to hear better music, clearer and with the greater enjoyment.

Summer

FLOWERS FOR THE Words by Judith Richards

T

he warm summer weather sprouts a host of social events that require creative dressing. Function décor creates the magical atmosphere that transports your guests from the local church hall or scout’s hut to another time or place.

Proms are held for leavers at the end of term to reward effort and hard work, and allow students to let off steam. This is the perfect opportunity to get your Florist’s creative juices flowing. Your Florist can assist with the transformation of your school gymnasium or dinner hall into a grand ballroom. Flowers and balloons blended with creative lighting and accessories can make your theme rock. Most modern florists are also trained balloon artists. Ask your florist to combine flowers with balloons to create Hollywood glamour for your prom. Imagine the wow factor of huge balloon bouquets weighted with floral arrangements.

To lend extra glitz to your ball gown add a contemporary funky corsage made with fresh flowers, feathers and loads of bling. A corsage can be worn on the wrist, shoulder, the back or front of your dress, on a handbag, or in the hair. It is advisable to order a corsage well in advance of your prom. Begin staging your venue by drawing the eyes of your guests away from an unsightly entrance with a huge statement piece. You can also use this trick to conceal notice boards or fixtures that are not in keeping with your theme. Utilise all the props you can to accessorise and emphasise your theme. Plan well in advance - you only get one shot. Your venue should be striking, stunning and memorable. Do visit our website www.blushtemples.co.uk

A LA CARTE & Art

L

oughton’s White Bull Brasserie is fast becoming a place to be seen in during the day - and it’s packed out with the local glitterati of an evening. Unsurprising, considering it’s showcasing a very affordable but exciting lunch menu and an equally diverse a la carte menu both created by head chef and owner Lee Bull. Lee, a former head chef of Le Caprice and Scott’s of Mayfair, has brought his unrivalled reputation to a prominent spot on Loughton’s High Road. But it’s not only the food that has people talking. The rustic oak flooring, bespoke bar and seating areas create a minimalist, yet unique setting for this restaurant-cum-art gallery. The stylish interior has been inspired by the local art movement of two well-known artists, Marty Thornton and Alan Chapman. Few artists could claim to be in the collections of such a distinguished line-up of celebrities as that claimed by Marty. His works are owned by Madonna , Ivana Trump, the legendary Barbara Hulanicki of Biba fame, Lulu, Kate Moss, Naomi Campbell, Joanna Lumley and Debbie Moore of Pineapple Studios, to name but a few. Born in London’s East End, Marty proudly boasts of his Romany background that brings to his work a unique fire and light which is his distinctive hallmark. Coming from a designer background, much of Marty’s career has been involved with interior design, which has taken him to the four corners of the world - branching out from there into bespoke jewellery design and now fine art too. His recent shows include The Brick Lane Art Fair, Chelsea Arts Club, Muse Gallery, Portobello Road, Notting Hill Gate, London and SOLO in New York City. White Bull tells SCENE “When we were deciding on the artists that we wanted to showcase, Marty was

one we knew everyone would love and that’s been exactly the feedback we have received. Customers have been buying the pieces and walking out with them straight off the walls! We do offer a delivery service for those who might be heading somewhere else after dinner!” The only concern they had was that any other art work may be outshone by Marty’s particular style - Pop Art at its most colourful. Then they were introduced to Alan Chapman. An esteemed photographer of celebrities, Alan set out to demonstrate the art of the paparazzo being exactly that - art - as opposed to the general concept of harassing celebrities. Alan’s work is limited edition with a twist - he writes a narrative around the mount describing the unfolding scene as he took the shot. Written from memory, each one differs slightly in some way, making the final piece totally unique. The artist goes to great lengths to work with empathy toward whoever is in front of his camera. If he’s asked not to photograph, he won’t. “We knew as soon as we saw his work that it was exactly what we were looking for” White Bull tells us. “We have found that our customers really enjoy ‘celeb spotting’ and reading the captions of how the shot was captured. His work is being eagerly snapped up by a wide variety of photographic art enthusiasts.” All artwork displayed in the White Bull Brasserie can be bought directly, so not only can you peruse the pieces whilst dining you also have the chance to take a piece home with you. It will also be available to buy at www.bull-lockspics.com For reservations call 020 8508 0806 www. whitebullbrasserie.com 2 Centric Parade, 200 High Road, Loughton, Essex IG10 1DN SCENE  53

Bollywoods Epping, is part of a trio of restaurants, also situated in Chingford and Hertford. As with its sister branches, Bollywoods prides itself on its heritage, friendly and professional customer service and of course the quality of its food. The Indian restaurant on Epping’s High Street features a striking interior of sumptuous red velvet booths on one side, complementing well with the grey velvet seating across the way. Customers can dine in style and comfort – with added privacy in the round booths. Of course, it’s the food that has the customers returning time and time again to this Indian gem. Proprietors Ali

and Mohammed offer the traditional dishes we all know and love, but they regularly update their menu with new and exciting plates. Recent additions include their Monkfish House Special (its ingredients a closely guarded secret!) and a Murgh Hariyali – a new twist on the ever-popular chicken tikka massala. Bollywoods provides entertainment on Friday nights on several dates across the year and also caters for private parties. Look out for Elvis, appearing at the end of July! GREEK Goodness

WHEN THE EDITOR SUGGESTED THE OLIVE TREE THAT’S BEEN OPEN ON NEARBY LOUGHTON HIGH STREET FOR 3 YEARS, WHICH I’D YET TO SAMPLE, I AGREED IN BLIND HOPE AND SILENTLY PRAYED IT WOULDN’T BE YET ANOTHER DISAPPOINTMENT! Words by Rebecca Cheung

Having spent two gloriously long, hot summers and countless holidays on various Greek islands, I do count myself as a bit of an authority on good, Greek food. Ever since my love affair with Hellenic food began, I have been on the hunt for a good local taverna-style restaurant but have found several places sadly lacking in both substance and authenticity. Checking out the menu online, I was impressed, with the dishes on offer – and even more excited to see one of the owners is called Manos – a true Greek name! If anything sent minor alarm bells off, it was the fact that it is billed as ‘Mediterranean’ rather than just Greek, Spanish, Portuguese, but I thought I will just have to go with an open mind and an empty stomach and see what happens. So on Easter Saturday after a day in the gorgeous sunshine, I joined three close friends Larni, Jenni and Hayley for a pre-dinner cider in a Loughton watering hole and then we took a very civilised and leisurely stroll over to The Olive Tree. The glass-fronted doors were wide open with a small terrace area where diners were enjoying their meal al fresco, and the weather was certainly on form for it. We were greeted by the incredibly friendly waiting staff, who walked us to our table and who continued to be helpful, attentive and generally charming throughout the meal – so far, so Greek. 58  SCENE

The restaurant was incredibly busy, every table occupied and the atmosphere was good - groups of friends and family and couples alike seemed to be enjoying their Saturday evening. On arrival our noses were assaulted by an array of delicious smells and the hopes for a great meal were rising. Two of the girls were driving and so opted for the virgin cocktails which both went down well, Larni went for a tropical Pina Colada which was lovely and reminiscent of many a holiday tipple. I chose a Jamaican Mule, which comprised of Morgan’s Spiced Rum, lime, bitters and ginger ale, and was absolutely gorgeous. Refreshing, sharp and with a strong alcohol bite, it was a perfect start to a divine evening. Being out with the vegetarian crew (yes all three of them!) the meze was ruled out, but there were so many nice sounding appetisers, that this wasn’t a problem. Jenni opted for a simple selection of bread with olive tapenade, Larni for an old favourite – tzatsiki with pitta and Hayley and I shared two slightly heavier starters – Mushroom Crostini and Halloumi & Aubergine Stacks. The first of our shared dishes comprised, as the name suggests, lightly grilled ciabatta topped with delicious garlic infused, sautéed wild mushrooms, toasted pine nuts, rocket and shavings of salty parmesan. A simple dish, but executed brilliantly and not a crumb left once we’d got through it. My favourite though was the stacks of creamy, slightly melting halloumi, with herby soft layers of aubergine and slices of plump, juicy beef tomato. Everything was so, so fresh with a small smattering of oregano and I was in my element with it. For a main Jenni – our most sensible, calorie-counting friend - went for a Greek Salad – which did look lovely, and again really fresh, bright and colourful. The presentation was great, and the dish did put us in mind of a Greek taverna. Hayley had the Butternut Squash and Sage Tortellini which had a brandy-based creamy sauce. The dish was presented beautifully with an addition of Sweet Potato Crisps, which gave the dish a sweet, crunchy texture. Hayley enjoyed the meal and claimed it was ‘delicious’ and she made plenty of yummy noises. (Keen to point out here I was offered to try some, but greed for my own enormous main prevented me from fitting anything else in!) Larni had a main of Gemistes, or tomatoes and peppers stuffed with rice, herbs, pistachios and feta. It has to be said that Larni can be a very tough critic when it comes to food – and she fell in love with gemistes in Corfu on a girls’ holiday we went on a few years back. I was hoping these would match up to that standard but need not have worried, they were perfect, and the addition of the Greek cheese to the dish gave it a new, tasty dimension. Finally I chose the Stuffed Pork Souvlaki, with great difficulty, as I was also tempted by the a few of the fish dishes as well as the stiffado, a Greek beef SCENE  59

stew. I was on tenterhooks as to whether the souvlaki would live up to my high Greek expectations. This is a dish I’ve had more times than I care to remember, a great favourite, and so may seem like a boring choice, but as I mentioned, I’d yet to find anywhere outside of Greece where this was done well. I can honestly say that this souvlaki actually surpassed any other I’ve ever had. The added twist of stuffing the rolled meat with Italian ham was absolutely genius and the flavour explosions were just fantastic. I felt reminiscent of happy times in Greece, but also loved the modern addition and felt the salty meat gave it an extra kick of deliciousness. As well as the usual Greek mixture of herbs, a sharp lemony flavour penetrated the meat and helped keep it nice and juicy. Food heaven for me. Both mine and Larni’s dishes were served with hand cut, chunky, herby, garlicy chips. They were heartily sized and lovely. Mine was also served with pitta and tzatsiki, and I couldn’t resist (yes the greed rears it’s ugly head again) another side of tarramasalata – the delicious fish-roe dip. Unlike so many synthetic pre-packed versions that you can pick up in UK supermarkets, this didn’t have the marshmallow looking bright pink colour, and was just a simple white hue. It was, as with everything else I ordered, mouth-wateringly tasty. Unfortunately for us, as all of the portions were so large and delicious, not one of us could even attempt to order dessert, which was a real shame as the menu looked great. Overall the meal was absolutely a resounding success. Not one of us had any complaints in relation to the food. If we had any gripe at all, it would simply be to reduce the portion size slightly so we could fit in dessert next time! The restaurant was furnished well, and having a peek in the open-plan kitchen on the way to the toilet demonstrated a clean and tidy working environment. We paid around £30 a head for two courses and drinks which we were all very happy with. I can’t remember the last time I was met with such attentive and friendly staff and I would have no qualms about returning to and recommending the restaurant to friends and family. Also since visiting the website after our meal I notice the restaurant offers various musical entertainment so it is definitely worth checking out.

JAGUAR’S RACING THE JAGUAR XKR-S - AN UPRATED VERSION OF THE QUIETLY LEGENDARY XKR. THE XKR-S STILL SPORTS THE 5.0-LITRE SUPERCHARGED V8, BUT POWER IS UP FROM 510BHP TO 542BHP. THERE’S ALSO A BOOST IN TORQUE TO 501LB FT (UP FROM 461LB FT). The hardcore XKR-S gets a new version of Jag’s brilliant adaptive dynamics suspension with uprated dampers, active sports exhaust system, and new aero to reduce lift and assist the massive brakes, which measure 380mm at the front and 376mm at the rear - bigger than a Lamborghini Murcielago’s. It needs them, too, because top speed is 186mph, and it should hit 62mph in 4.2 seconds. Look carefully and you’ll see the XJR-S also has new headlamps. Those will go onto the rest of the XK range soon as part of a mild 2012 facelift.

SCENE  63

Jaguar also tells us the XKR-S will emit less than 300g/km of CO2, which means it’ll be top of its class in the cleanliness stakes. The AJ-V8 Gen III engines are the most advanced and efficient Jaguar has ever produced. They deliver significantly more power and torque than the previous generation of engines: 510PS and 625Nm in the new supercharged XKR and 385PS and 515Nm in the normally aspirated XK models. All models, except the new 174mph (280km/h) XKR with Speed Pack, are electronically limited to a maximum speed of 155mph (250kph), but the 0-60mph sprint for naturally aspirated coupe models is now 5.2 seconds (previously 5.9 seconds), while for the supercharged XKR coupe, 0-60mph is 4.6 seconds (previously 4.9 seconds). In-gear times are equally impressive, with the naturally aspirated XK accelerating from 50-70mph in just 2.5 seconds, while the supercharged XKR completes the same sprint in just 1.9 seconds. The XKR Coupe with new optional Speed Pack allows customers to further strengthen their XKR’s already impressive breadth of capability, by extending the car’s top speed from 155mph (250km/h) to an electronically limited 174mph (280km/h) thanks to a unique engine and transmission recalibration. To ensure the XKR with Speed Pack remains stable at high speeds, the coupe uses a revised front aerodynamic splitter and larger rear spoiler to provide increased balance and a reduction in lift. The XKR’s computerised Active Differential Control also adjusts to reduce steering sensitivity at very high speeds, further improving stability and driver control. Every XKR with the Speed Pack will come with body-coloured side sills and rear diffuser, and a chrome finish to the window surrounds, upper and lower mesh grilles, side Power Vents and boot lid finisher. Red brake callipers with a Jaguar ‘R’ logo sit inside 20-inch Kasuga alloy wheels.

RECOGNISED AS ONE OF THE PRINCIPAL COSMETIC DENTISTS ON LIVING TV’S EXTREME MAKEOVER, ASH PARMAR NOW WORKS FROM HIS LUXURIOUS DENTAL PRACTICE IN CHIGWELL. OFFERING THE LATEST TREATMENTS IN BOTH COSMETIC AND ROUTINE DENTISTRY, ASH AND HIS TEAM PRIDE THEMSELVES ON A COMFORTABLE AND PAINLESS EXPERIENCE FOR EACH AND EVERY PATIENT. HERE, SCENE MAGAZINE CATCHES UP WITH WEST ESSEX’S VERY OWN CELEBRITY DENTIST TO FIND OUT MORE... QUICK FIRE What’s your guilty pleasure? Probably food. I’m a strict vegetarian but I really enjoy food and I love to try new things. What’s one thing you couldn’t live without? There are two things – my iPhone and my Apple Macbook Pro laptop.

What would be your last meal? A really nice vegetarian meal cooked by my wife. What’s your favourite toothpaste? Good question. I use Kingfisher toothpaste because its vegan approved but Retardex is also another very good one. What’s your favourite restaurant? Caraway. It’s an Indian restaurant in Gants Hill.

66  SCENE

Tell us a little bit about your dentistry background... Since qualifying in 1991, I have been fortunate to have been personally trained by some of the leading dentists in the world in all areas of dentistry - cosmetic, implants, lasers and more complex problems like wearing down of teeth. I was one of the most featured dentists on the three series of Extreme Makeover UK (on Living TV). I opened “Smile Design By Ash” in January 2011. I also have a teaching academy and train dentists from all over UK and Europe. Wow, quite a CV. What’s unique about Smile Design by Ash? We take a great deal of care, thought and effort in the way we look after our patients. We ensure dentistry is comfortable/painless. We give our patients a hand held buzzer so that they can stop us at any time - this puts the patient in full control. We offer digital headphones so that you can listen to any music album in the world! It’s all about building a pleasant experience instead of being in a place where people hate to come. And the locality of our Practice means that you don’t have to go to Harley Street or even USA to have the best cosmetic dental care. And is it only cosmetic dentistry your practice provides? No, not at all. We aim to cater for everybody. I am very experienced at cosmetic dentistry and offer fillings that can be placed without the need for any drilling or local anesthetic injection (using our laser). My wife Jyoti enjoys providing general dental care for all the family, as well as preventive advice for children. We also offer “6 Month Smiles” and “Inman Aligner” braces. We have a CT Scanner and offer the latest and best in implant dentistry to replace missing teeth. Have you had any celebrity clients? We have but I don’t have permission to reveal their names. I can say however, that because of my experience and our reputation we have been attracting some professional footballers in the local area quite recently!

What do you do to relax? I like to keep fit and I go to the David Lloyd club in Chigwell first thing in the mornings - I either swim or go to the gym. I also enjoy playing golf (about once a fortnight, weather permitting). Spending time with my family, and personal/ spiritual development are also very important to me. What else is important in your life? I am a keen supporter of a charity in India called Food For Life Vrindavan (www.fflvrindavan.org). This charity helps the poorest of the poor by offering free education for children, free food distribution, and medical centres. I feel blessed and grateful for all I have, and aim to give back and help to make a positive difference to other peoples’ lives. What is your proudest moment? My proudest moments have been when I saw the emotional reactions of the people on the day of their “reveal” on Extreme Makeover. The emotions involved in being part of that and helping to transform somebody’s life for the better was amazing and quite literally lifechanging. Do you have any ambitions you’ve yet to fulfil? My ultimate goal professionally is to be recognized as providing a very high level of dental care to people in Essex and London. Personally, I also look forward to traveling more with my family.
