SCENE IN THE WANSTEAD BECOMES A CATWALK
Judith of Wanstead hosted not one, but two fashion shows for friends and customers new and old, on Monday 24th October. The shop was full to capacity with ladies eagerly awaiting
the collections provided by five models on the shop floor “catwalk”. Judith showcased a range of her stock, starting off with outerwear, then moving through to casual clothing, work suits, knitwear and dresses for all occasions. The climax of the show featured some of the boutique’s drawdroppingly beautiful and ornate evening gowns. Designer’s shown through the event included Marc Cain, Nice, Frank Lyman and Joseph Ribkoff.

A WOMAN who makes the dreams of sick children come true has been nominated as Mum of the Year by her daughter. Avril Mills’ nine-
year-old son Oliver died of leukaemia in 1999. Since then, Avril, who lives in Epping, has devoted her life to making other seriously ill and disabled children and young adults happy by granting their wishes through her charity The Dream Factory. Daughter Emma, 24, is so proud of her mum’s tireless efforts that she has nominated her for Tesco Mum of the Year. Avril will find out if she has won an award at a glittering ceremony in Central London next year.

The Vault worked with the local target ovarian cancer team to put on this night to raise funds raising ÂŁ600 for the charity. The Vault would like to thank everyone who donated and took part. A
t the tender age of sixteen, was when Heston first realised he wanted to be a chef. While holidaying in Province with his family, he fell in love with the place. He recalls in his biography, that it wasn’t just the elegance of the food but the whole multi-sensory experience: it was like an explosion of senses on the mind and body. The fragrance from the lavender growing, the cicadas tweeting, the chefs cooking nearby and the meretricious way in which waiters would decorate the food at the table. It’s this vital nugget of information about his past that rings true in all that he does. Watching back an episode of Heston’s Feasts, it’s clear he has a nostalgic energy coursing through him. Articulate, passionate and enthusiastic, he preoccupies his time experimenting with food and chemistry. He decodes and unriddles the intricacies of food, showing how it can be manipulated to reveal new elements of flavour, texture and smell. He explains, “I want to create food which is delicious...it’s not just about what’s going on in the mouth. Its about context, history, nostalgia, emotion, and the interplay of sight and smell, sound and taste...they all play an important part in appreciation of food”. At forty five, the self-taught chef and father of three teenagers has achieved a series of amazing accolades. In 1995, he launched The Fat Duck in Berkshire, a restaurant which provides a theatrical dining experience for its habitué. After scraping cash together to buy the 450-year old building, the business was like a ‘sixteen year overnight success’. Indeed, the restaurant was never out of the press at the time with its rule-breaking, astonishing and chemistry lesson-like menu. Since then the internationally acclaimed restaurant has gone on to receive impressive awards, essentially AA Rosette’s, the 2005 award for Best Restaurant in the World and,

impressively, three Michelin Stars. He even tried his hand at re-working the menus at Little Chef and British Airways, to critical acclaim. But Heston’s greatest achievement was perhaps his OBE. Awarded to him in 2006, Heston said at the time, “When I was given news of my OBE I was speechless. I believe we are producing some of the best cuisine and gastronomy in the world at the moment, in the UK, and I’m very proud to be British”. One of three restaurants, (The other two being The Hinds Hotel in Berkshire and ‘Dinner’ at the Mandarin Oriental in Hyde Park) The Fat Duck has the kind of decadence that the movie The Cook, The Thief, His Wife and Her Lover brandished. The black comedy sees theatrical characters sat round a table ultimately dining under duress on a human being complete with apple in its mouth on a platter! I’m not saying that Heston would be up for cannibalism (of course not!) but its the decadence and outrageousness that reminds one of the drama. To dine at The Fat Duck, you’re advised to have four hours to plough through the courses, which include every sensory experience that you could imagine - you’d better make the most of it at £180 per person! But this is a once in a life-time experience for any lucky diner, if you can get in. The phones ring red hot on a daily basis and while there are three receptionists to answer the calls of the lucky forty two twice a day, the sophisticated telephone system is able to log the amount of failed calls trying to get through. That number is a staggering 28,000 to 31,000. Imagine if you will, the menu...Over the course of those four delicious hours, your ears will be awash with sounds from the sea while eating oysters, to further transport the senses, while dry ice cream will leave you snorting out icy air through your nostrils, giving you the ultimate in food sensory. The techniques for
the preparation of food read like a chemistry lesson. A technique called micro filtration enables the chef to extract the very finest aromas and tastes from a certain food. It can take days but the taste is superior. Its another world. A playful utopia where you are invited to let your senses go wild and express your desires and achieve taste realisations. In Heston’s Feast; The Charlie and the Chocolate Factory episode had Tim Lovejoy and Ben Shepherd, two of the golden ticket guests at the table, licking wallpaper which housed all the flavours of the entrées. While clear chocolate water was served in Martini glasses, (clear being the operative word), the chocolate had gone through a time consuming filtration process to extract pure water from the cocoa. For dinner was magic mushroom soup whereby Heston had previously gone to Tuscany to locate the now illegal delicacy the magic mushroom. However he found an ancestor of the fungus called the Caesar Mushroom, a non toxic, but incredibly tasty mushroom. After bartering with the locals for a basket of the stuff, he took them back to his laboratory to produce something amazing in keeping with his Wonka style dinner party. It’s all very mad scientist but a total must-watch. It’s hard to imagine that his restaurant was under intense scrutiny two years ago when over 500 diners were taken ill due to a contaminated batch of oysters. Speaking in the Guardian at the time, Heston said, “It (the Fat Duck) was just going up and up. Calls were coming in from Australia with people wanting to get a booking at the restaurant, so it was awful time when that happened, but when we re-opened the response was fantastic”. Blumenthal might have been in the papers recently for the wrong reasons (he recently split from his wife Zanna and entered into a relationship with the notorious American actress come food writer Suzanne Pirret). But his undeniable coltish way with food is inspirational and highly entertaining. I know which cookery book will be on my Christmas wish list this year and I hope that every mouthful of food I try will be an adventure!

With summer (or rather the lack of ) a distant memory and a rather hectic work schedule, I was feeling in need of a serious energy boost. My energy boost came wrapped up and delivered to my door in the form of Oloong, the at home organic spa company. When I called Abi, I wasn’t sure of the treatment I wanted so we had a chat about how I was feeling and what I wanted to achieve and we came to a 2 hour Thai Energy Line Massage with Thai herbal compresses. When Abi arrived she set up my “treatment room” (my front room!). Lit entirely by candles; lemon, cinnamon and clove filled the air along with chilled soothing music and my room was transformed into a haven of calm. I sat on a soft heated futon and was given a cup of Oolong tea to sip while we discussed how I was feeling and any tight areas of my body. I then laid back and was given probably the most amazing massage I’ve ever experienced. Gentle rocking, thumb pressure and stretches opened my body allowing the stagnant energy to flow. A surge of tingling would invade certain areas (which was the release of stagnant energy flowing freely). The piece de resistance were the Thai herbal compresses which were massaged along blocked

I was roused from my relaxed state by the chime of a singing bowl, indicating the end of my treatment. Abi left me alone for a few minutes and then we discussed my treatment over another cup of tea. She worked a lot on my legs and feet, which the latter she called wind gates: areas where we release and take in energy and can get blocked causing illness and pain. It was recommended I follow up with further massages to continue to “work” on my target areas of need. Does it work? YES! I felt chilled out and relaxed the night of my massage and I slept well. He says: “We give our customers what they want – we really listen to the needs of a family and figure out what will work best for them. year from Highams Park to a showroom in Woodford Green and specialise in supplying a stunning collection of bedroom and kitchen furniture, appliances and installations.

As an installation fitter, Michael established DBK in 2002 and says since then the business has grown with three teams of fitters and surveyors all with fitting experience. After four gruelling semi-final heats, Frederick cooked his way to the grand final of this prestigious competition and was up amongst eight of the finest UK chefs. An exhilarating live cook-off took place at the Restaurant Show in Earls Court 2 in London on October 11th where the finalists created a three course meal from a mystery basket of ingredients in just two hours. The competition was about pitting the best of the best in the industry and finding one chef worthy to be honoured with this ultimate award. The judges were unanimous in their vote as Frederick won on every course: best starter, main AND desert, seeing off the competition and leading him to be declared National Chef of The Year! It was the Nuovo Head Chef’s menu, style and execution of ingredients that saw the judges declare him the winner. His winning dishes included sauté scallops with crab “Beignet” and roasted breast of duck with braised thigh, flavoured with smoked bacon. To celebrate this fantastic accolade, Nuovo Restaurant hosted an exclusive dinner for friends, family and local businesses in the area on Thursday October 20th at their Queen’s Road location. A champagne reception in the restaurant’s attractive bar area was followed by a three course set menu of Frederick’s design, which showcased his remarkable culinary talents. The tables filled quickly throughout the restaurant with parties of between two and eight keen to sample the Head Chef’s winnerworthy food. My starter of Sweet corn Blini with Rocket and Parma Ham and Red Pepper Sauce was a taste sensation and a work of art on a plate. The sweetness of the blini complemented the sharp bite of the rocket and blended perfectly with the tang of the red pepper sauce. My dinner guest chose the Marinated Salmon on Toast with Cucumber Dressing: Four perfectly presented quenelles of salmon, perched on top of miniature toasts. These were described as being “fresh, light and extremely tasty”. My choice of main course was Herb Crusted Sea bass with Ragout of Cannellini Beans and Artichokes. I tend to prefer my fish plainly grilled, or served simply with lemon and herbs, but this inventive dish was full of flavour; the textures fusing perfectly together and the fish simply melting in my mouth. The other main dish on offer on the evening’s set menu was Roast Lamb with Potato Puree, Spring Onions, Carrots and Rosemary Jus. A hearty and generous dish comprising of faultlessly cooked succulent lamb on a bed of light and fluffy potato – all brought together with the richness of the jus. My guest declared his lamb dish as “spectacular”! On to the dessert, and, whilst I would have been SCENE 57
absolutely satisfied with experiencing just two of Frederick Forster’s dishes, my guest and I simply couldn’t miss out on his creation of Caramelised Pear With Vanilla Biscuit. This simple sounding dish, presented beautifully and looking almost too good to eat, did not disappoint. Warm, sweet pear was married perfectly with the smooth vanilla cream and crunch of biscuit underneath. It is a must for those with a sweet tooth – and it provides one of your “five a day” fruit goodness for those who are a little more health-conscious! Our meal was a triumphant feast and we washed it down with lovely Italian wine, good coffee and of course, a small digestif to finish off with. It was buzzing in Nuovo on the evening of the party, with a packed restaurant of happy diners, all enjoying the fantastic food on offer, listening to the live soulful jazz provided by Ella from the Ritz Hotel, London and drinking in the atmosphere. If it wasn’t already, Frederick Forster’s addition to this popular Queen’s Road eatery has certainly made it a must-visit destination in West Essex. I was invited recently to attend an event with some of my clients who play football in the Premier League. Stacey, its so lovely to talk to you, where are you right now? I’m in the car, finally on my way home! I’m so tired!
I have been a lucky girl and it’s a total pleasure. I’m enjoying every minute doing so many things. It’s hard to remember what life was like before. How do you cope fitting in a working life as well as being a hands-on mum? Its hard being a working mum whatever you do. My life and my way of coping is no different to when I was at college and working in a bar. I wouldn’t have it any other way, I love what I do and stress doesn’t ever come into it. Yes, I get stressed but I have days that I work and days with my son and that’s all I could ask for. I’m very happy! Where did you grow up? In Dagenham, in between Essex and East London...I loved it. I was a normal teenager, not moody, (laughs). I’ve got seven brothers and sisters and we all just got on. I loved school too. Did you always have aspirations of stardom? I always knew I wanted to do any job in the performing arts. I loved singing. I was driven definitely and my parents supported me all the way. I think they would have supported me even if I wasn’t that good. If I had three or four auditions, they’d make it happen. They always believed in me. What does your little boy make of it all? Oh! He doesn’t have a clue! He’s three years old. He sees me on the telly but it’s just like a DVD to him! I’m sure he’d rather me be Peppa Pig or something!
I’ll never forget, Please God no! I’ve been so lucky, I never want to forget. Do you keep in touch with any of the previous contestants from the shows you’ve been on? I still see Shaun Ryder, Gillian McKeith and Sheryl Gascoigne. What is your latest venture? I launched my perfume today at the Crimson Bar at the Soho Hotel. Its called Smile! (Stacey’s perfume comes in a quaint old-fashioned white glass bottle with a baby pink ribbon and is ‘a seductive floral blended with uplifting citrus and spice nuances, and a rich base’). What are your plans for Christmas this year? I’m trying to get everyone to my house this year. I’m waiting for the kitchen to get finished and then I want everyone to come to me. I’ve got a big family and I’d love for us all to be together. I love Christmas!
Where is home for you nowadays? Well not Dagenham anymore. I love Dagenham but I’m just a little bit further out now.
Is the X Factor like a distant memory now? It was only two years ago!
What’s happening for you in 2012? I want my album to be finished, we were going to launch it for Christmas but I want it to be perfect so it could be January. Its a mixture of ballads and upbeat sounds and its very live loungy. It’s cool. We also want to do another series of ‘Sing if you can’ (with Keith Lemon).
How does it feel to have achieved so much at the age of 21? It’s an absolute honour and a privilege.
