Wine isn’t like other drinks. You can serve a good apple juice anywhere from 0 degrees to a lunchboxfriendly 35 and Ribena can even be warmed up, but serve your guests a wine that’s too warm or too cold then you might as well be dishing out canapés on a hubcap. Historic Bromley Charter Market relocates For over 800 years a Charter Market has been held in Bromley. In 1205 King John granted a Royal Charter to hold a weekly Tuesday market in the grounds of Bromley Manor. In 1447 King Henry VI granted a revised charter changing the market day to every Thursday, a tradition which continues today. At some stage the market moved to Market Square. Due to increased road traffic the market relocated in 1933 to the car park in Station Road. Olympic Words by Nicholas Chowdrey

The Whipps Cross University Hospital in Leytonstone delivers thousands of babies every year. One born in 1975 went on to become an internationally renowned footballer and perhaps the most famous man in the world.

16  SCENE

D

avid Robert Joseph Beckham was born on Friday the 2nd of May to local couple Ted and Sandra. Growing up in nearby Chingford, this born and bred East London lad has gone on to become the quintessential English icon, having represented his country on the international stage over a hundred times. He’s played for some of the most famous football clubs in the world and his face and name are recognised across the globe, equally familiar as any of the most renowned corporate brands. So how did this Leytonstone lad do it? Beckham’s love of football was imprinted on him from an early age. Despite amidst a sea of Arsenal and Tottenham fans, his parents were die hard Manchester United fanatics, frequently making the trip up Old Trafford for home matches. Predictably, his parents’ fervour for his future club rubbed off somewhat on young David and it soon became apparent that his life’s goal would be to play for the Manchester team. David’s father especially was a massive influence on his early footballing career, coaching him in his first team, Ridgeway Rovers and drilling him tirelessly in relentless back garden practise sessions. David showed immense skill and promise from the get go, having won the Bobby Charlton Soccer Skills award at only 11 years old. Following this, his talent did not go unnoticed for long and after trials at local club Leyton Orient, as well as Norwich City and Tottenham Hotspur, he eventually signed as a trainee at his beloved Manchester United in 1991. Sir Alex Ferguson saw great things in Beckham and, along with Nicky Butt and the brothers Phil and Gary Neville, he soon became known as one of ‘Fergie’s Fledglings’. Quickly growing in skill and success, his place in the first team was rapidly cemented and at the beginning of the 1997-98 season SCENE  17

he was bestowed the coveted number seven shirt, previously worn by past United legends like Eric Cantona and George Best. Arguably one of United’s best ever players, his career at the club included six Premier League titles, two FA Cups, one European Cup, one Intercontinental Cup and one FA Youth Cup. He was also instrumental in their 1999 success when they became the first and only team to ever win the illusive English treble. During his career at United he also met his wife Victoria Adams - Posh of the Spice Girls at the time. Their star studded coupling, along with the birth of Brooklyn – the first of their 4 children – and subsequent marriage, propelled the pair to international media prominence, creating the ‘Posh and Becks’ brand that continues to dominate the advertising industry today. Unfortunately, it was a combination of this relationship and his subsequent new found fame that eventually led to his much publicised fall out with his former mentor, Sir Alex and he left Manchester for Real Madrid in 2003. Despite joining the Spanish giants in turbulent times for club and player alike, David managed to secure the La Liga title with Real in 2007, departing for American team LA Galaxy at the end of the season. Having been twice loaned to A.C.Milan, David recently became a regular in the Major League Soccer club’s first team and has gone on to help them secure four major titles. With his contract expiring this year, it’s rumoured that Beckham will continue his career at French club, Paris Saint-Germain, but a return to the Premier League has not necessarily been ruled out.

Beckham’s mastery in the art of football is irrefutable. A pioneer in striking the ball, he has drilled himself relentlessly throughout his career, resulting in hundreds of outstanding goals – the most memorable one being a spectacular soaring shot from the halfway line during his time at United. But it hasn’t always been smooth sailing on Beckham’s path to stardom. Despite his prowess as a sportsman, it could be argued that his reputation has burgeoned just as much through his infamy, a certain red card at the 1998 World Cup finals springing to mind. Either way, nobody can deny that Beckham has made the best out of every situation, confirming the old adage that ‘no press is bad press’. In terms of his personal life, David and Victoria are still happily married and now have 3 more children: Romeo, Cruz and their first daughter, Harper. The fact that the couple have maintained their relationship – despite being the victims of various adultery claims and immense media pressure – is testament to their joint and personal resilience. It’s no wonder, then, that they remain one the world’s most celebrated couples. Along with his fame, Beckham’s striking good looks and gentlemanly manner make him the perfect sponsor, so it’s no surprise that the U.K. has adopted him as our front-man for London 2012. His last appearance in International football was way back in 2009, but despite being left out of Roy Hodgson’s Euro 2012 squad, he will be representing Team GB this month in the first united British side to compete at the Olympics since 1960. David Beckham is a true legend of English sport. Here’s wishing him and the rest of the team the greatest success for the Games.

Blackheat h

Blackheath is an affluent suburb of London, England. It is named from the large open public grassland which separates it from Greenwich to the north and Lewisham to the west. The area is predominantly in the London Borough of Lewisham with sections to the north, and east in the Royal Borough of Greenwich. Blackheath, once a modest village, has evolved and grown into an urban centre filled with shops, bars and restaurants to appeal to the growing population. These additions have made Blackheath another town that had small beginnings, but has grown into a main lifestyle and night life location. 20  SCENE

Print?

See yourself in By Maddy McIndoe

Print trends this season have an ethnic edge. Tribal, animal and Aztec influences are awash over everything from suit jackets to bangles. Organic browns, deep reds and earth tones are the most popular colours, although brights have their place too. Washed-out palettes tone down all-over prints on jeans and tailored trousers. Placement prints in bold colours command slouchy t-shirts in neutral base colours. Textured fabrics such as chiffon and crepe manipulate the reflection of light in different forms on surface pattern, and prints come in a range of scales to suit all body shapes. River Island’s bold, directional SS12 collection includes these printed Rihanna Suit Trousers. The colour contrast creates a vertical, striped effect, perfect for lengthening legs. Those brave enough could opt for the matching blazer available too. Printed-silk harem trousers look fresh off the plane from a

far-flung paradise, and abstract animal prints are framed with contrast black edging on blouses. Leopard print has been given a classy makeover by Hobbs in the form of this shirt. The painterly style gives a fresh edge to an old favourite. However, this season, it appears to be snakeskin that has grabbed everyone’s attention. No longer the sole domain of Kat Slater, snakeskin was seen on the London Fashion Week catwalks from Versace to House of Holland. These spray-on skinny jeans are for either the very brave or the very thin. A snakeskin-effect clutch bag is a safer option if, like me, you are not blessed with the legs of Gisele.

T

he summer is only ninetyfour days long. But we’re talking about summer as a state of mind and style — of long sunny days and lost weekends in your favourite off-duty clothes. Of loosening up but not quite letting yourself go in relaxed suits. And of a why-not, what-thehell attitude that compels a grown man to ditch work, throw on khakis and a polo shirt, and hit a par 3 before afternoon cocktails. Here, you’ll find ideas, inspirations, and lots of clothes that will help you upgrade your wardrobe over the coming months. Because even if it’s still cold where you live — even if it’s still snowing where you live — summer is here, and it’s about to get real.

Health and Safety

Risks

Protecting your Business Reducing the Owning a business can be rewarding but also arduous and stressful

We can help identify potential problems and take steps to minimise your risk. In the following areas, legal advice can make a real difference:

What would happen if you were unable to manage your business?

Suppose you were unable to manage the business for any length of time through illness or injury. Who would control the finances as well as your business plan? We can provide some protection for these circumstances.

Employment Law

It is advisable for all employers to have a basic understanding of Employment Law. However, when drawing up Contracts of Employment and Disciplinary Procedures, the help of an experienced employment lawyer can ensure regulations have been satisfied and strengthen your position if an issue arises. At Thomas Dunton, our Employment Team can advise on all necessary procedures and draft contracts that will help to avoid problems in the future.

Contracts with Clients or Customers

The Terms and Conditions under which you trade are vital to the protection of your business. They will include your liabilities for the goods and services you provide, how and when payment has to be made and rates of interest for late

payment. Our experienced business team at Thomas Dunton can help to ensure that you trade on the terms you want to.

Business Contracts

Written contracts between your business and your suppliers help everyone to be certain what has been agreed and provide evidence of this if necessary. Through our experience, we can help you prepare for a range of situations that might, sometimes unexpectedly, occur.

Debt Recovery

Most businesses at some stage suffer the problem of late or non payment of debts. Efficient accounting methods and an effective debt recovery plan are essential to the future well being of your business. We can help you with outstanding debts, leaving you to run your business.

Licences, Permissions and Insurance

Special licences are required for the sale of certain products such as alcohol. Failure to acquire these licences or permissions could result in fines or the closure of your business, If you employ staff you are legally required to have Employer’s Liability Insurance and if the public or suppliers visit your premises you will also need Public Liability Insurance. Talk to us about what other insurance cover you may require such as Product Liability Insurance.

All employers should have in place written policies and procedures and risk assessments to address health and safety issues. We can help you avoid breaches which could mean criminal prosecutions as well as civil proceedings. It is certainly advisable to take advice from your solicitor or the local authority.

Your trading name

The name that you trade under is very important as it will create an image of you in the minds of the public. Make sure that a web domain name is available or you may not be able to create a website using your business name. Talk to us about safeguarding your trading name or logo.

Sole trader, Partnership, LLP or a Limited Company? The legal form of your business provides an opportunity to influence how much financial and legal liability you take on and how much tax you pay. We can advise you on the differences between each form. We can then draw up the appropriate paperwork.

Small Business Advice Service

Our new Small Business Advice Service is a “One Stop Shop” designed for small to medium sized businesses. We offer you a free 30 minute “legal health check” meeting with our team of experienced lawyers. They might save your business money, add security and peace of mind, and even make life easier. The Glory of the Grill

British summer time wouldn’t be the same without the odd attempted barbecue or ten. Here are some quick tips on how to get the best out of your grill and throw a sizzling garden party.

O

riginally thought to derive from a native West Indian method of roasting whole goats in a fire pit, today the word barbecue refers just as much to the social gathering as the cooking itself. Everyone loves to capitalise on long, balmy summer evenings by inviting the friends and family round to lounge around in the sun, getting a bit tipsy and burning various bits of meat over a fire. As long as the rain stays away it’s the perfect recipe for an impeccable occasion.

34  SCENE

Any self-respecting carnivore can’t deny that the barbecue has to be the ultimate way to cook a piece of meat. Somewhat of an art form, the key is to achieve a crisp and tasty crust, whilst maintaining a soft, juicy center. Here’s our tip for cooking up the perfect steak that’s sure to impress family and friends alike. 1. Allow the steak to reach room temperature before putting it on the grill. If the meat is cold when it hits the heat then the muscle fibres will tense up, making it rubbery and chewy. 2. Season it before you cook it. Just a bit of salt and pepper would do, but if you really want to get a nice crust, buy as steak spice rub and apply It several hours before cooking. 3. Get the grill as hot as it will go. Steak is best if it’s cooked fast, so make sure the fire is as hot as it can be. Remember to oil the meat so it won’t stick to the griddle. 4. Flip it regularly – every 15 seconds is best to achieve a delicious crust, whilst keeping the middle nice and tender. 5. Get your timings right. For a 2cm thick steak, cook for 3 minutes for rare, 4 for medium and 5 for well done. Be aware that these times will vary depending on the thickness of the cut. 6. Finally, let the meat rest after cooking. 5 minutes will allow the muscle fibres to relax, releasing all those lovely juices. This technique also works for pretty much any meat, but for safety make sure you know how much each cut should be cooked. For example, here’s a simple but delicious recipe for Jalfrezi Chicken skewers. Ingredients (serves 4-6) • 800g boneless chicken thighs • Half a jar of Jalfrezi curry paste

• 100ml full fat Greek yoghurt (don’t skimp on this, it makes all the difference) • 100ml thick coconut milk • The juice of one lemon Make a marinade by combining the paste, yoghurt and coconut milk – adding seasoning to taste. Cut the chicken thighs into bite size pieces and stir into the mix. It’s best to cover with clingfilm and leave in the fridge overnight, but if you’re pushed for time just a few hours will do. Either way, make sure the chicken is room temperature before it hits the grill. Just before cooking, stir the lemon juice into the mix and skewer the bits of chicken, making sure as much of the marinade stays on as possible. Finally, cook for 4-5 minutes either side depending on the size of the chicken pieces. Barbecuing veg shouldn’t be underestimated either. You can make a tasty vegetarian alternative to the above recipe; just replace the chicken with mushrooms, peppers, aubergines and onions. So that’s the food sorted, but a barbecue wouldn’t be complete without a few summery drinks. A summer cocktail can really transform your bog standard garden party into a summer celebration to remember. If you really want to impress, it’s worth investing in a proper cocktail shaker and spirit measure. Not only does this help you mix a better cocktail, but it also adds some theatre in the process. If you’re making drinks for a lot of people, it’s absolutely essential that you have enough ice. Use as much as you can, whenever possible – this ensures that your cocktails will stay nice and cold in the hot summer sun. Finally, don’t wing it with the recipes, cocktail mixing is a fine art and it’s worth the extra effort to do it properly. Here are a couple of recipes created especially by the SCENE team. Summer Breeze This long drink is deliciously balanced, offering a fresh fruitiness with a zingy kick. It looks fantastic in the glass so why not have some pre-prepared to kick the party off with a bang? Ingredients (serves 2) • 50ml Bombay Sapphire gin • 75ml Passoa passion fruit liqueur • 200ml pressed apple juice (not from concentrate) • The juice of half a medium lemon • Blueberries to garnish Fill the shaker to the brim with cubed ice. Add the gin, Passoa and apple juice, squeezing in the lemon. Attach the lid and shake as hard as you can for 10 seconds. Fill two round based glasses to the brim with cubed ice and pour, garnishing with straws and blueberries to finish. Mandarin Daiquiri This short cocktail requires quite a bit of effort but packs an incredible punch. Make sure the glasses are chilled before serving. Ingredients (serves 2) • 100ml Captain Morgan’s rum • 100ml freshly squeezed mandarin juice • The juice of half a lime • Mandarin peel to garnish Fill two martini glasses with crushed ice to get them chilled. Now all you have to do it set a date, get those invitations sent out and hope the weather holds up. Let’s get grilling.

Get Aggressive with Koenigsegg Agera R

In 1994, Christian von Koenigsegg captivated the automotive world when he penned the original Koenigsegg Competition Coupe (CC). Four car generations later, the Agera is born.

The name Agera means “to take action” in Swedish and is short for the ancient Greek word ageratos (ageless) – two meanings quite suitable for a vehicle that shatters industry benchmarks and lays the foundation for Koenigsegg’s future. A bespoke, 1,140 hp Koenigsegg DOHC bi-turbo V8 propels the newest iteration of the iconic Koenigsegg design into action. Sixty miles per hour passes in a scant three seconds as the Agera races towards a 273 mph speed ceiling. With a list of patents and industry firsts, the Agera as a whole is truly greater than the sum of its parts. It is designed and engineered for trendsetters yearning for perfection, exclusivity, and an uncompromised driving experience. Over 17 years of computational fluid dynamics and real wind tunnel testing evolved the original Koenigsegg CC into the Agera. It features a refined profile and several new features to improve the aerodynamic capability at all speeds. Genetically dissimilar from the rest of the automotive world, the

Agera truly stands out. Patents and countless bespoke programs, methods, and technologies protect it as a unique masterpiece. In a world of cross pollination between vehicle manufacturers, Koenigsegg’s engineers rebel by developing the Agera’s systems internally to preserve technological integrity and superiority. From the bespoke 1,140 hp powerplant to the world’s quickest traction control system, each component is designed and qualified in Ängelholm, Sweden. For those who truly appreciate the dedication of an automotive masterpiece that perfectly combines technology & design into the most exhilarating driving experience available today, the Koenigsegg Agera is their choice. Seven stages of production occur over three months at the production facility in Ängelholm. Just a few pair of hands – belonging to specialized automotive artisans - spend 3000 hours to bring each Agera to life. Meticulous attention to detail ensures that over 4000 custom parts come together in a perfect harmony of high tech and classical

craftsmanship. Over the past 17 years Koenigsegg has become an instantly identifiable icon synonymous with style, performance, and exclusivity. The Agera honors its predecessors and stays true to Swedish functionalist design. By strictly adhering to the minimalistic “less is more” philosophy Christian von Koenigsegg ensured the Agera to be purposefully beautiful. The Agera is the perfect representation of modern advances in aerodynamics merged seamlessly with contemporary aesthetics. The stiffest production car chassis on the planet allows the Agera to be versatile without compromise. Its one-piece carbon fiber roof quickly stows under the bonnet to reveal a roadster. No other Hypercar carries its hardtop while in roadster form. The awe-inspiring, elegantly smooth movement of the Dihedral Synchrohelix doors defies convention. Following Koenigsegg’s functional design mantra, this trademark feature has minimal door swing with a more spacious opening. SCENE  47

Koenigsegg is the only limited volume manufacturer to develop its powertrain in-house. The Agera’s heart is a bi-turbo DOHC 8 cylinder engine producing over one thousand one hundred horsepower. A symphony of innovative technology transfers the tremendous power to the road, yielding the world’s fastest accelerating production car. The Agera R’s colossal 1,140 horsepower and earth moving 1200 Nm (855 lb-ft) of torque launch it to 60 mph in a mere 2.8 seconds. 0 - 200 mph takes 17.68 seconds and 0 – 300 km/h a mere 14.53 seconds, both are world records. Contrary to common sense, no other production engine in the world offers the same power compared to emissions or fuel consumption. Koenigsegg’s highly qualified engineering team relentlessly developed the Agera’s engine for power, drivability, and longevity. Each engine is hand assembled in Ängelholm by a master engine builder to ensure exact tolerances and unprecedented quality. The Agera engine package is the lightest, most compact Hypercar engine in the world. Complete with clutch, flywheel, dry sump system, and Inconel manifold system (with turbos) it weighs less than 200 kg (440 lbs). 48  SCENE

The Agera’s class leading fuel consumption of around 20 mpg and 80 litres (21 gallons) fuel tank provide excellent range. Large air-to-air intercoolers keep the Agera cool even during extended performance driving, and by eliminating the need for water in the intercooling system, saving a significant amount of weight. Koenigsegg’s patent pending response/backpressure reduction system and the latest generation turbocharging technology provide instantaneous turbo response for seamless power delivery. Koenigsegg’s dry sump lubrication system provides a constant supply of oil during high lateral g-force cornering. The Agera’s unique carbon fiber monocoque chassis is designed to achieve maximum stiffness of 65,000 newton meters per degree with or without its roof. It weighs only 70 kg with its integrated fuel tanks. Formula 1 carbon fiber monocoques are constructed with aluminum honeycomb to achieve high stiffness and safety levels. The Agera is the only Hypercar in the world to utilize aluminum honeycomb in its monocoque. The process is extremely difficult and tedious, but being the best is never easy!
